The List Magazine is a community life style magazine of the Great South Bay area. It is published six times a year. Most of our distribution is mailed from Babylon to Great River, south of Montauk Highway and all of Brightwaters. In addition, our magazines are available for pick up in shops along Montauk highway and in our coastal towns.
Our Better Living theme continues in this issue, and you’ll find a wonderful mixture of humor, heartfelt moments, and all-things-spring inside. We shine the spotlight on ‘kindness’, a relatable characteristic that most women can tap into, which made it a natural fit alongside our tribute to women. Our spring cover shot is from the very talented photographer, Vicki Jauron, who just recently moved away from Long Island with her husband to be closer to their daughter. I have had the pleasure of knowing Vicki from Babylon and Beyond Photography since I began publishing The LIST Magazine back in 2013. Many of Vicki’s photographs have graced our cover, but her real love is Long Island Wildlife Photography. We will greatly miss her, but will always enjoy having a piece of her through her photography. May the warmth and blossoms of spring fill you all with a happy heart and help inspire you to be kind and live better!

T U R N S U P T H E H E AT AT M O LTO V I N O Since 2013, Molto Vino has been serving up an authentic taste of Italy. Well known for their huge platters of Italian cured meats and cheese boards, their famed wood fired personal pizzas, and delicious wines (over 100 varieties of available by the glass), lately, it’s this quaint wine and cheese osteria’s talented new chef that’s got people talking. Since coming on board last year, loyal patrons have fallen head over heels for Executive Chef Brittany Middlemiss’ manner of cooking, which is known in the culinary world as ‘peasant food’ style. This type of cooking often involves skilled preparation by knowledgeable cooks using inventiveness and expertise passed down from earlier generations. We recently spent an evening dining at Molto Vino with friends. Everything is fresh and made as it’s ordered. Most of the food is served to share, so we were able to sample several of the menu items. The pasta dishes were truly outstanding. We were so impressed with the excellence of the food, and intrigued by the young chef who was preparing it. We had to meet Chef Brittany…and so we did.
T H E L I S T : What are your
earliest memories of enjoying cooking, and was there someone who inspired you?
C H E F B R I T TA N Y : My earliest
memories of enjoying cooking were in my grandma’s house - helping her prepare dinner every day for my grandfather. We would roll out dough together with her marble rolling pin to make focaccia breads, or ravioli, etc. I’m inspired to cook by my grandmother because she is a true woman of the kitchen. She cooks ‘peasant food’ and can create something amazing from nothing. She has always grown her own fruits and vegetables, which was a big influence growing up because most kids didn’t grow up eating the food I did. I would show up to school with a frittata wrapped in tinfoil!
T H E L I S T : When did you
decide to become a chef?
C H E F B R I T TA N Y : I decided to
become a chef after graduating from business school down in Florida. I returned home to NY after college with no plan. I woke up one morning and said to myself ‘I’m going to culinary
school because food is my only passion’ and I needed to feel like I had a purpose.
T H E L I S T : Do you have any
formal training? What was your greatest learning experience?
C H E F B R I T TA N Y : I do have
formal training, I attended the Institute of Culinary Education in NYC. My greatest learning experience was culinary school. I definitely knew flavor prior to school, however, learning knife skills, how to move around a professional kitchen, and little secrets from chefs that have worked at top restaurants in Manhattan was a valuable privilege. A few years ago I had a wonderful opportunity to travel around the Amalfi Coast in southern Italy. I spent time in Positano and Capri, which is where Max (Massimiliano Garguilo, owner of Molto Vino) hails from. I had an amazing experience while I was there. I did a cooking class with “Mama Agata”, where I learned how to make Eggplant Melanzane (Eggplant Parmigiana) in her home kitchen! We cooked all
day using ingredients from her garden, then sat at a beautiful table overlooking the sea. Truly an incredible day where my love for cooking became even more apparent. I make this eggplant at Molto Vino now…it’s my specialty! This is something me and Max bond over since he is from that region of Italy.
T H E L I S T : Tell us what brought you to Molto Vino.
C H E F B R I T TA N Y : I got my first
taste of working in the field when I started at Molto Vino as part of an externship that I had to complete for school. I loved it there so much I decided to stay on after I graduated, which is what led me to become the head chef. I love the culture and the vibe of the place. It was also perfect timing for Max and I; he was looking for someone to help the place grow, and I was looking for a platform to share my food. My favorite part about being the chef at Molto Vino is the chance to create a different dish every day. My favorites are the Eggplant Parmigiana and Crab Cakes, oh and of course the white pizza with black olives and truffle oil. We’re a small establishment, so
we are able to personalize the dish to satisfy the customer. If someone wants a dish of spaghetti carbonara - no problem we’ll run out and get eggs! We plan on introducing a new menu very soon, incorporating seafood and also Piadinas, which are Italian flatbread sandwiches from the Romagna region of Italy filled with various meats and vegetables. Between the staff being from Italy and the food being simple and authentic, you experience a little piece of Italy in Babylon.
T H E L I S T : Can you share any of your cooking secrets?
C H E F B R I T TA N Y : Sure! Always
start with a good base of ingredients…meaning a good sea salt, fresh black pepper, quality olive oil and fresh herbs. With this, it will be hard to mess up. Another secret is to save your pasta cooking water - this is liquid gold when creating a luscious sauce for pasta dishes. I don’t measure the salt I add to the cooking water – I add salt to it until it tastes like the sea. And always taste what you’re cooking!

Often something good comes from something bad. Last April, a disastrous fire at South Shore Paddleboards changed shop owner, Karen Marvin’s, life. The outpouring of support was overwhelming, bringing light to a time of sadness. She shared her thoughts with us… “The morning of April 19th, 2018, changed my life forever…not only from the devastation the
fire had brought to my shop, but for all the comfort and support I experienced from so many people in my community. From my hometown in Babylon, to the countries across the sea, I was completely humbled by what was transpiring; it wasn't the fire anymore… it was the outpouring of love and kindness. The support never faded. It was then that I realized this paddle community wasn't only connected locally,

next to her said "I know what would help! I can put one of my shoes at each end!", and fixed the problem. They were both so happy after this "little" encounter. The first student was instantly pleased and said “thank you”, while the second student was happy that she could help. Once they were settled and before starting class, I took time to honor each of them for displaying kindness. When we nourish these seeds of kindness in our little ones, it allows them to flourish in life on and off the mat. It's times like this where I find myself in awe of the kindness in each of our hearts that comes so naturally when we lead from the heart."

Doing Good Lessing’s Hospitality Group always strives to “Do Good.” Whether it’s preserving the environment or giving back to the local community, Lessing’s is committed to taking care of families, friends, and the place we all call home - our planet.
In honor of Earth Day in April, the sixth generation, family-owned and operated food service and hospitality business launched a “Do Good” initiative in partnership with Island Harvest Food Bank (www.islandharvest.org), the largest hunger relief organization on Long Island. Lessing’s partnership with Island Harvest began two years ago during the month of December with the company’s "Spread the Cheer" campaign, wherein Lessing’s Hospitality Group donated 10% of all sales from ‘Local Cheer’, the group’s private label seasonal brew, brewed by Blue Point Brewing Co., directly to Island Harvest Food Bank. Wanting to hand deliver the check from funds raised, the team visited the Island Harvest facilities where they learned the extensive reach Island Harvest has, and how much they do for the Long Island community. The Lessing’s team was immediately inspired by their efforts upon learning how valuable Island Harvest services are for those struggling with hunger and food insecurity. As a result, Lessing’s committed to giving back to Island Harvest Food Bank with the launch of the "Do Good" initiative on April 9th. The "Do Good" initiative kicked-off with a special PlantA-Garden event at Island Harvest Food Bank’s 1.8-acre “Giving Garden” in Brentwood. The Lessing’s team spent the afternoon in the fields, tilling the soil, and planting onions, potatoes, swiss chard, rutabagas and radishes for this year’s crop which will provide healthy, fresh produce to help support the 300,000 Long Islanders struggling with hunger and food insecurity. April 9th also marked the launch of Lessing’s social media campaign seeking donations to Island Harvest Food Bank. Supporters were encouraged to donate to Island Harvest Food Bank through the social media fundraiser “Lessing’s in Partnership with Island Harvest Food Bank” found on the Lessing’s Hospitality Facebook page (www.facebook.com/Lessingshospitality). The campaign culminated on Earth Day, April 22nd, when, for up to $5,000, Lessing’s Hospitality Group matched 100% of the donations made on Earth Day to Island Harvest Food Bank. “We’re grateful for Lessing’s Hospitality Group’s caring and generosity and pitching in at our Giving Garden in Brentwood,” said Randi Shubin Dresner, president & CEO, Island Harvest Food Bank. “Valued partnerships, like the one we enjoy with Lessing’s, is helping us address the chronic problem of hunger and food insecurity in our communities by providing those in need with fresh, nutritious,

locally grown produce.” Lessing’s “Do Good” commitment continues throughout the year with the company’s mission to reduce plastic consumption and help keep the oceans and lands clean. In 2018, the group joined the international movement, #SkipTheStraw, and went “strawless” at all ten of the group’s restaurants. The restaurants now offer 100% renewable and compostable straws and biodegradable beverage stirrers, and are only served upon request by guests. Coinciding with the #SkipTheStraw Campaign, all restaurants offer a specialty cocktail made with Naked Turtle Rum, a brand committed to saving sea turtles. As well, the restaurants have converted all takeout containers to 100% renewable and bio-degradable Greenware. The group’s “Do Good” vow to protect the environment extends to the local beaches as well with their annual “Save the Beaches” beach cleanup, where Lessing’s team members, family, friends and community members clean up trash every September at Gilgo Beach in Babylon. The team collected over 400 pounds of garbage at the “Save the Beaches” event in 2018. Finally, Lessing’s participates in the nationwide campaign, “The Crayon Initiative” (thecrayoninitiative.org), collecting and recycling used

and unwanted crayons, reducing the 60 million crayons discarded each year to help preserve the environment and enrich the lives of hospitalized children through art and imagination. “We are grateful to live on Long Island and call it our home. The Truth About Lying BY ANNIE NILAND
Honesty is overrated. Lying can be a not-so-random act of kindness. I could share boatloads of instances where bending the truth and massaging the facts is noble, but I’m late for church (lie) so I’ll just share a good one (truth). The following scenario actually happened (lie). Ok, it’s hypothetical (truth), but serves as a how-to on carefully manipulating words to avoid straight up lying. I learned it from politicians and bright kids who could talk their way out of negative consequences even when they were caught with both hands in the cookie jar. It’s a useful hack. I get to practice on my husband daily. Don’t tell him. THE SCENARIO: Your salt of the earth best friend is extremely raw after an ugly divorce. Her husband of 25 years left her for a newer model with big headlights. To even the playing field, even though it’s game over, she goes to a body shop to get rebuilt. Details, like credentials, take a back seat to the free add-ons thrown in to make a sale. Less is more isn’t part of her vocabulary. You don’t hear from her for a while, so you give her a call hoping to take her to lunch to lift her spirits. You’re prepared to counsel, soothe, and give her your undivided attention while multi-tasking. She picks up the phone and squeals with unbridled joy, “Guess what I did? Wait until you see the
new me! I got work done, and it was cheap!” Her parting comment of “you won’t recognize me” makes you risk a speeding ticket to get to her house for what she called “the unveiling.” On arrival, an over-the-top Barbie version of your bestie answers the door. What happened to the adorable brunette who never wore makeup except to her daughter’s wedding? Kitten heels? She lives in Birkenstocks! You take your knuckles out of your mouth and apply your best poker face, but your eyebrows have a mind of their own and head north. She pulls you inside and turns full circle to showcase the purchases…all of them. You take a deep breath through clamped teeth and wait to exhale, then, buy time by coughing. She strikes a voilà pose and chirps, “Sooooo, what do you think of the new meeeee?” Before you can muster up a response that won’t crush her, she follows with, “I’m so proud of myself! After years of feeling inadequate, I took a leap of faith and reinvented myself. I’ve never felt more beautiful and confident in my life.” Mic drop. Lying is good. Lying is kind. Like I said, honesty is overrated.
Here are some samples of carefully crafted responses that apply to the scenario mentioned. They promise to avoid blowups when tip-toeing through emotional mine fields. With practice, you can train your lips to offer comments that tease the truth. Brutally honest is aptly named. Remember the sting when you were on the receiving end? Sometimes it’s ok to be almost authentic (insert smile). RECAP: “Sooooo, what do you think of the new meeeeeee?” Lips say: “Oh man, you are a new woman!” Brain whispers: “Oh boy…what happened to my gurrrl?” Lips say: “I can’t believe my eyes!” Brain wails: “I can’t believe her new eyes!” Lips say: “I’m thrilled that you’re so happy!” Brain whispers: “Will she be able to unsmile?” Lips say: “I’m stunned!” Brain says: “Yup, completely stunned.” Lips say: “I have to get this Doctor’s name!” Brain says: “So I can warn others!” You have a slip of forked tongue and ask her if it hurts. Walk it back as fast as you can. Hug her. Lather her in praise for her generosity, sense of humor, and adventurous spirit. Mention her loving heart and beautiful soul. There won’t be a need to lie. Truth!

Three Skincare “Swaps” TO M A K E T H I S S U M M E R

Maintaining a good skin care routine during the summer has always been difficult for many people, but it’s definitely not a time to stop everything. The changing of the seasons plays a large role in affecting how our skin performs throughout the years. Some skin care treatments we do in the fall and winter are not recommended during the summer months. Here is a guide to help clarify what you should stop, and what you should substitute. Summer can still be a time to not only maintain healthy skin, but improve it as well. The first thing to stop is laser treatments, such as photofacials, or IPL’s. These lasers target melanin and can make tanned skin vulnerable to undesirable changes, as well as make skin more sensitive to sun exposure, resulting in the development of irregular pigmentation during the postlaser healing process. In order to avoid any complications with these lasers, avoiding the sun weeks before and after each procedure is necessary, which is nearly impossible in the summer months. That said, an easy “swap” that we offer at The Aesthetic Room is Vivace RF Microneedling. This is the most advanced microneedling procedure that combines microneedling, radiofrequency, and light therapy to help tighten skin, reduce fine lines and wrinkles, diminish acne scars, even out pigmentation, and decrease pore size and stretch marks. The Vivace has insulated tips, which makes it safe to use on darker skin tones and tanned skin during the summer months. In addition, the RF energy is released at the lowest poles of the needles, limiting thermal injury to only the dermal layer of the skin. Targeting beneath the skin results in optimal stimulation of collagen and elastin while remaining safe to use in the summer. Unlike lasers, where
you need to avoid sun for weeks before and after, we ask that you avoid the sun for 72 hours post procedure, and of course wear sunscreen and a hat! The downtime from the Vivace is minimal; slight redness may occur for a few hours post procedure. You can easily have this procedure done on a Monday, continue to work all week, and be back at the beach by the weekend. Swap-out number two is having a Hydrafacial instead of a chemical peel. A Hydrafacial is a great way to combat dry and damaged skin in the summer months. Chemical peels leave your skin more vulnerable to harmful rays during the healing period of a week or more. Our Hydrafacial cleanses, extracts impurities, hydrates, infuses, and protects your skin. We also offer add-on serums that specifically target dark spots, fine lines and wrinkles, and even acne. A Hydrafacial does exfoliate the skin, so, as always, sunscreen and a hat are a must after the procedure. Swap-out number three is replacing your beloved retinol with Skinceuticals Retexturing Activator. Retinols are great for reducing fine lines and improving uneven skin tone, but they leave your skin sensitive to the sun. It is recommended to stop retinol products 4 days prior to sun exposure, and for several days after, making this

Replacing your retinol with the Retexturing Activator twice a day is a great option because it increases cell turnover and exfoliates the skin while also providing extra hydration. Now for the summertime non-negotiables! Products that you should be using all year, but especially during the summer months. The first is CE Ferulic by Skinceuticals. CE Ferulic is a powerful antioxidant serum combining vitamins C & E with ferulic acid to provide significant protection from cancer causing UV rays. While keeping your skin safe from the harmful sun and environment, it also builds collagen to help reduce those unwanted fine lines and wrinkles. When combined with sunscreen, this provides the utmost protection from the sun. Lastly, and most importantly, summer skin care requires sunscreen! Sunscreen is a must during
the entire year, but especially the summer months. The best sunscreens are those with at least 30 SPF, and that block both UVA and UVB rays. Zinc oxide and titanium oxide are also key ingredients to look for in sunscreens because they provide physical barriers to the sun. Our favorite is Alastin’s HydraTint Pro Mineral Broad Spectrum sunscreen with an SPF of 36. Summer is the time of year to enjoy yourself outdoors, and with these few swaps you can continue to protect and nourish skin throughout the sun-intense months. Fine lines, wrinkles, sun damage, and dry skin do not have to be a part of your summer face; by utilizing these summer-swaps and continuing regular staples, such as botox and fillers, you can stay looking your best all summer!
Try Cycle Evolution. What is Cycle Evolution?

How do your cycle bikes differ from stationary bikes?
Movement. On a regular Spin bike, only your legs move, but on the RealRyder, doing “turns” are now a part of the routine. Turns utilize the entire upper body, with one hand pushing on the handles while the other pulls on them, fully engaging the obliques for stabilization. Riding a RealRyder bike definitely requires balance, coordination, and core engagement, making this more of a unique “riding experience”.
What is the benefit of training on a RealRyder bike verses a stationary Spin bike?
The motion of the bike actually reduces the shearing forces on the knee joint, as opposed to having a bike frame that is solid and unmoving while your body moves side to side on top of it. This bike movement reduces the chance for injury or discomfort.
Who are your members?
Our members are a healthy mix of seasoned athletes, local young professionals, and 40, 50, and 60 year-olds just looking to get back into shape and have some fun. Some just come for the love of the ride.

Yes, but a quick one. One thing is certain: you can't cheat. The bike tells on you. You have to master being out of the saddle before taking yourself into a turn. We usually find it takes about 3 - 4 classes and then people have that “aha moment” when they can take a turn more easily. My advice to someone new to a RealRyder Cycling class, or any other exercise modality for that matter, is this: don’t be intimidated. It’s human nature, if we’re not good at something, we tell ourselves not to try it. Why not experience something new? Everything takes a little practice and patience, but you can get to where you want to be with focus and commitment.
Do you offer any other form of training?
Absolutely! We offer Sculpting, TRX, Kettlebell, Pilates, and Barre classes. We also have a Life Coach on staff for those looking to take their health and wellness goals to the next level. Alzheimer’s; it broke my heart. It stole my parents. They call it the long slow goodbye. I watched a woman with a master’s degree who raised five kids go insane and physically deteriorate over 15 years. I watched a loving husband care for her for a decade before succumbing to the same disease. But it taught me so much. It taught me that life isn’t transactional. My Mom was the sweetest thing, with her dimples and twinkling eyes. She taught second grade for 30 years in a poor school district and led the bell choir at church. She sang and whistled while she did chores, played games with us, and loaded as many of our friends as we could fit in the car for our daily summer beach trips. She never put her own needs before others’. Honestly, I don’t think I ever saw her squash a bug. She was the last person on the planet to deserve a degenerative disease. And yet… I had a long time to try to come to grips with what was happening to her. After the first few years, I decided to get a pair of kittens “to make me laugh”. Life was extraordinarily heavy, and if I was going to survive, I knew I needed to lighten up. They helped a lot.
My mother had always demonstrated the art of cultivating joy. She showed me: if you have the blues, sing. If you’re lonely, go find someone lonelier to cheer up. If you’re getting fat, play more tennis or take more hikes. And if all else fails, take a ride to the beach and just appreciate the majesty. I managed a team at work, and I noticed I got into the habit of saying “have some fun”. Friday afternoons when I wished them a great weekend I’d say “have some fun”. If someone was off to make a critical presentation to key stakeholders I’d say “have some fun”. I was feeling the pressure of life being temporal, and damn it, I was determined every day to have some fun. Mom would have. I was in that fragile state, keeping it together, when a job change meant that I now had to exit Penn Station in the morning past a group of newspaper hawkers who literally yell at the hundreds of folks in the stairway every day. I cast my eyes to the ground as I passed and silently prayed ‘please don’t yell at me; I just can’t start the day that way’. One day my eyes lifted to connect with a hawker, and as I passed,
she said quietly, “Good morning darling”. And so it was for years. If I had travelled, she asked how I’d been. If it was Friday, she wished me a nice weekend, but always in a sweet, gentle voice, seemingly reserved for me alone. Her eyes shone with love and light. It was what I needed to start the day. I started to notice that people with twinkling eyes were everywhere. I just needed to look for them. It didn’t matter if they were from opposing political parties or different generations or sexual preferences or ethnicities, folks were out there reflecting light. Socio-economic barriers could be dissolved with a smile, or a kind word. My mother’s life force was waning, and yet, her joy and energy surrounded me. People say to me, ‘you always seem so happy’. Since life isn’t transactional, I don’t look for fault or blame when something goes wrong. I accept, and learn, and move on. Dwelling on challenges robs energy, and I won’t have that. Damn it, I’m going to have fun. In the supermarket parking lot, I jump up and ride the cart. At the bank, I smile and strike up a conversation with the old person waiting in line. If a child dances nearby me, I’ll crouch to their level and imitate their dance steps. I’ll look you in the eye; I’m curious to see if you have that easy smile…and twinkle. Because I live in the light. And I love where I live.
