THE ARGYLE THEATRE

BRINGING BROADWAY TO BABYLON GET READY TO DISCOVER THE NEW ARGYLE THEATRE, A LIVE THEATRICAL VENUE IN BABYLON! he theatre at 34 West Main Street in Babylon Village has been transformed into a glorious single theatre space, complete with orchestra pit, balcony, state-ofthe-art lighting, sound and rigging systems. This 500seat venue is Long Island’s newest year-round professional Equity theatre, bringing new light and color to the charming streets of Babylon Village and poised to become a major destination for local residents, fellow Islanders, and out-oftowners alike. The theatre will produce six major, Broadway caliber productions each year. Each show will have at least a six-week run, offering an opportunity for Long Islander’s to experience live, professional theatre in their own backyard by giving them a convenient and comparable alternative to traveling into the city. The actors portraying the characters in these shows are the cream of the crop, having been seen both on-and-off Broadway, in national tours, and even on television. But the talent isn’t the only reputable thing about these productions. Broadway veterans, such as Artistic Director, Evan Pappas, have come on board bringing a trained eye to this project making these shows worth every dollar. Each production is built from scratch, and features a live orchestra and magical sets created uniquely for the Argyle stage, culminating in a breath-taking experience for audiences. The Argyle opened its 2018-19 Season with Guys & Dolls, sponsored by Forerunner Technologies, Inc. Under the direction of Evan Pappas, this classic Broadway musical by Loesser, Swerling, and Burrows builds high-stakes tension and love between the big city gamblers and colorful characters created by New York writer Damon Runyon. The show received glowing reviews as audiences left each night with tapping toes and broad smiles on their faces. From Guys & Dolls in old New York, the Argyle takes its patrons down to Baltimore just a decade later with the Tony Award Winning Musical Hairspray. Sponsored by the Post Office Café, this smash-hit, family-fun celebration of 60's music and dance is bound to entertain all summer long. From the 60’s, the stage goes back in time, past the second star to the right, and straight on ‘til morning with Peter and the Starcatcher, a heartfelt exploration of JM Barrie’s beloved Peter Pan characters and their journey to Neverland. From there, a short skip in both time and geography finds the theatre transformed into a grand cathedral in Paris with the dynamic Disney version, complete with sweeping score, of the originally tragic tale about Victor Hugo’s Hunchback of Notre Dame. From Paris, the Argyle travels east through Europe for Spring Awakening, providing a glimpse into the angst and exploration of adolescent internal conflict in a

German Catholic school, while set to a score of memorable rock songs guaranteed to resurface relatable feelings from one’s youth. Finally, the team loops back around to old New York and the streets of Broadway with a production of Mel Brooks’ hilarious first stage musical, The Producers. “A lot of thought and care went into the planning of this season,” says Argyle Theatre owner and producer, Dylan Perlman. “We wanted to create a season that would appeal to audiences of all ages and preferences, while selecting shows that inspired, moved and provoked thought and discussion after each performance.” “A seminal goal for the theatre is to not only have its Mainstage “Broadway" season, but to offer a diverse lineup so there’s a little something for everyone,” states Director of Sales, Marty Rubin. Intermittently throughout the season, The Argyle will be host to acclaimed tribute bands, such as A Tribute to Donna Summer, which sold out on opening night back in April. June performances from tribute bands included The Fast Lane: A Tribute to The Eagles, and Dancing Dream: An ABBA Tribute. Also in June was a special treat for fans of all ages…they had the opportunity to learn about the life of former Yankee Bat Boy, Ray Negron. Ray took his audience on an intimate trip that spanned over 40 years inside the world of the legendary NY Yankees. A Long Island Comedy Series has also been scheduled, with upcoming dates planned for July 7th and September 8th. “Tribute bands, concerts, comedy, touring acts and film festivals will be popping up throughout the year. Our special events calendar is constantly updating, so it’s important for people to keep checking our website and Facebook page so they don’t miss out on a great show!” added Trisha Viola, Director of Advertising & Sponsorship Sales, at the theatre. Engaging with the community and offering opportunities to get involved with the theatre was something the owners felt strongly about. Business partner and father to Dylan, Mark Perlman explains “A big part of this, for me, was the chance to give back to the community that has been so amazingly supportive during this process. We will be implementing an educational theatre program to offer children the opportunity to cultivate an appreciation for theatre arts and develop skills they can use for a lifetime." The Argyle will host a Summer Intensive program for children ages 7-15 from July 16th - August 24th, and after-school classes beginning this fall, as well as a Children’s Theatre program on weekend mornings and Educational Repertory Theatre for school and camp field trips during the week.

Dear Readers, WELCOME TO OUR SUMMER ISSUE! Summer is finally in full swing and it’s time to play and enjoy all that our island has to offer! As our readers expect, our magazine is filled with timely and inspiring stories, events, and fun things to do all summer long. With Father’s Day just passed, we’d like to shine the spotlight on our LI men just a little longer and, with this summer issue, give the guys a round of applause. With that, we couldn’t be more thrilled to have The Argyle Theatre grace our front cover and offer father and son duo, Mark and Dylan Perlman, a standing ovation for their vision and outstanding restoration of this 95 year old theatre. They truly have brought Broadway to Babylon with this state-of-theart theatre, amazingly talented professionals, and high-caliber productions. We wish them continued success! We had fun getting to know some of our favorite local music men (and women) who keep us entertained at many of our terrific Great South Bay area restaurants and venues. We hope you enjoy reading about them as much as we enjoyed writing about them. We’ve included their playdates for the summer season, so hold on to this issue to keep tabs on your favorite bands! We take pride in trying to have something for everyone inside - this is your community magazine and we love connecting with you. We have nicknamed this issue “The Man-uel” as we kept the fellas in mind throughout the magazine, from the articles to the essentials. As always, we’ve got all the local summer events, farmers markets, fireworks and more. For those of you who, like us, can’t wait to pick that first ripe tomato off the vine, check out our easy and delicious tomato recipes, sure to be a hit at any summertime gathering. Whether it’s a happy hour gig as a solo act, or as a key member of the popular J Haus Band, crowds across Long Island and beyond know they always have a great night when Bobby Digital is on stage. Recently Bobby has performed gigs with his amazingly talented wife, Devin Raye. The two offer a magical musical experience, mixing sultry solos with rocking duets.

TYPE OF MUSIC: We play all types of music from classic rock & roll to disco to (popular) standards as we play all types of functions…bars, clubs, weddings, etc.

TYPE OF MUSIC: It depends on who I am playing with, and for what gig. Some nights it’s a lot of Allman Brothers and Grateful Dead, and then a few hours later I am playing a brunch gig with my wife, Devin, and she’s singing Etta James. HOW THEY MET: We all met at Declan Quinn’s. J Haus was already playing as a band and I would go see them there after my gigs. Occasionally I would get up and jam with them for a song or two. Eventually I snuck my way into the band and now, almost 10 years later, we are playing like 50 gigs a year together. STORY BEHIND THE NAME: It was very funny…back when we formed the band and performed for fun people would scream out songs they wanted to hear, like “Free Bird”, so with that we laughed and started calling ourselves ”The No Request Band”. HOW THEY MET: My brother Peter and I grew up playing music together. I met George in high school, and we met the others along the way, mostly from business contacts as we all work in finance. FONDEST MUSICAL MEMORY: In high school, my brother and I had a band that played on my parents back porch, hence “The Porch Band”. We had t-shirts made and all. UPCOMING LOCAL GIGS: We will be playing mostly at Surf’s Out in Kismet; Lily Flanagan’s in Babylon; and the Salt Shack Seaside Grill (formerly the Beach Hut) at Cedar Beach. Tradewinds is all over the musical map performing all genres of music from the swing era and Sinatra to today’s music with Bruno Mars and Lady Gaga.

TYPE OF MUSIC: Every type of music from Willie Nelson to Elvis Costello. I enjoy bringing back the oldies and classics, as well as keeping up with the current popular music.

My decision to start the band back in 2001 came from the thought that, at the time, there were a lot of tribute bands, but not many bands that could play it all and please a mixed crowd of 20 somethings to 60 somethings. IN THE BAND: Myself (Pete Stumme), on tenor and alto sax; we have a baritone sax; 2 trumpets; guitar; bass; drums; keyboards; and 1 male and 2 female singers. 11 of us total. HOW THEY MET: I met most of the members of the band in college, and a few members have grown up on the south shore of Long Island. One of the trumpet players has been with me on this journey since day one. FIRST PERFORMANCE: Our first performance was to be at a local school doing a live “music through the decades” assembly, but my mom passed away and it put the band on hold. We did get together for the assembly and performed in honor of my mother. Now, no matter where we play, I feel close to her knowing that she was the one who really pushed me to learn an instrument and be involved with music from a young age. STORY BEHIND THE NAME: My name, Jonny Ray, was given to me by a fellow bandmate in Sweetwater. The original Johnnie Ray was a very talented singer back in the 50’s. It had a nice ring to it and just stuck. FIRST PERFORMANCE: My first live audience was back in 1971. I was in 6th grade and some friends and I formed a band called The American Revolution. We played at the spring concert. We felt like The Beatles. Doesn’t take much when your 11 years old. FORMAL INSTRUCTION: I had formal training by various teachers up until I graduated high school. After high school, I went to Berklee College of Music in Boston from 1977–1979.

When I’m not wearing my musician’s hat, I am a carpenter. ORIGINAL MATERIAL: I’ve written and recorded a bunch of songs throughout my career. Some are rock, country, and ballads; others are solo guitar performances of re-harmonizations of church hymns, and other jazz standards. Brotherly Love By Mary White Wood

Growing up the only girl with four older brothers had its perks. There was the standard stuff, like having your own bedroom while the boys were crammed into a single room with two sets of bunkbeds. With every cent squeezed out of their hand-me-downs, Mom and I always had matching new dresses she made on her "Singer". On the flip side, I spent way too much time at little league fields, track meets, and hockey games "just watching" because girls’ sports had not yet evolved. As long as there was a candy necklace in the deal for me, all was good. My mom was a teacher and treasured the summers off. Our daily destination: Robert Moses. I was in the ocean before I could walk. One of my brothers was always willing to put me on his shoulders and go out to jump over waves, or throw the skim board for me, or turn the wire garbage can upside down in the sand to create a little jail cell for me. If I was tired, a brother would carry me. They were my protectors, my playmates, mentors, and friends. Back then, our bikes gave us wings and independence. Mom's taxi was only for the beach and church. Everywhere else we rode and loved it. I remember riding home with a friend one summer evening and, as we got closer to my neighborhood, heard music getting louder and saw cars parked everywhere. There was a party going on…and it was at my house! Brother #2, a talented guitar player, and his high school band were jamming in the basement. They rocked. Every room was stuffed with teenagers. Upon entering the house, I was offered the deal from Brothers #1 & 3: if you promise not to tell Mom and Pop about the party, you can have a beer. I chose the beer. I loved my parents dearly, but my alliance was with this band of four young men who had raised me, taught me, loved me. I am forever indebted.

By the time I reached driving age my parents were finished with teaching kids how to drive. "That's what your brothers are for". The task was assigned to the brother who had bought himself a Pinto, basically because everyone else was sharing one car and it no longer had reverse. Off we went to the beach parking lot for my lessons. As it had recently snowed, half the lesson was dedicated to doing donuts. Perhaps that's why I drive a Mini Cooper now. As my brothers and I navigated through our twenties, three of us ended up working in the same nightclub as part of our job/college/whatever lineup. My protectors were extremely effective at squashing any unwanted attention directed my way, "That's my little sister, by the way". I met my husband at that gig. I knew he was a keeper when our ‘hanging out’ was uncontested by the Brothers. Of all the gifts I received from this family structure, one surprised me. Historically, I have found myself intimidated by folks who may have power above me. However, as a successful

executive VP in a boardroom surrounded by male executives two levels higher, why was I so at ease? It was my childhood dinner table: all men (plus Mom) collaborating, teaching, challenging, telling stories. I was perfectly comfortable in that boardroom… it felt like home. Collaboration with the Brothers was key to working through our parents demise via Alzheimer’s. All brothers stepped up and contributed, despite their own challenges as well as geography. Enough said. They're in heaven now. Though we rarely get together, texting has brought us closer. We have a string going for the past several years and we share highs, lows, and dumb stuff. I love the feeling of connectedness. Growing up, when we argued as kids, Mom would say, "Be kind to each other. You won't always have us, but you'll always have each other". Those that have the good fortune to live on the South Shore with close proximity to the bay and ocean must be on good terms with the Universe. We’re blessed and get to bask in all the glorious scenery on a regular basis. It never gets old. Friends who moved away tell me how they long for the coastal living of their youth. It weaves itself into our DNA. Apparently, we have a biological imperative to return to the sea. I read it on Facebook, so it has to be true. Like you, I love the beach! But, I have issues with the sand, saltwater, and sun. Stay with me. According to 23 and Me, I would fare better in colder climates, Riverdancing, or counting out reps, "eins, zwei, drei, vier". And, the origin of the name, Niland…Nigh Land, explains why I tear up whenever I hear bagpipes. So, I’m genetically unsuited for sitting on the beach no matter how much sunblock I apply. But here’s the rub…I live in Ocean Beach six months out of the year. Unless I want to spend summer afternoons alone, trying to stall the aging process by dialing down the AC to 65, I’m going to have to man up while applying lipstick with a respectable SPF and head south. There once was a time I loved sitting on the beach all day. High School besties and I would cross the bay on the behemoth ferry, The Fire Island Queen, every chance we got. She may have ruled the Great South Bay, but for teen-aged ladies-in-waiting it seemed like an eternity to get to the New World, aka Atlantique. Once we hit dry land, we talked about catching some waves, although none of us actually owned a surfboard. As wannabe-surfer-girls it was important to look the part, so we needed to start the process in April: STEP 1 Take the Beatles White

album, and cover it with aluminum foil. STEP 2 Pour iodine into the bottle of baby oil. Scrub hands and carpet after. STEP 3 Grab the tablecloth off the dining room table, or your little brother’s smelly blanket, and find a friend with benefits… and a rooftop that wasn’t too steep. STEP 4 Chip in with friends for a bottle of Sun-In. Convince darkhaired friends who didn’t want to pony up that Sun-In worked on all hair colors. Avoid eye contact with them in the hallway the next school day. STEP 5 Slowly roast to medium rare. Then, apply QT (Quick Tan). Try to ignore the spots that were missed and pretend that orange feet are the new tan.

STEP 6 Cozy up to anyone with a

car or (gasp!) hitchhike to Trudi’s in Bay Shore for the perfect string bikini, Puka shell necklace, macramé anklet, peasant blouse and anything tie-dyed or batik. Dab patchouli or musk oil on wrists. STEP 7 Pack a beach bag with no water, no hat, no sunglasses, a bottle of Coppertone Lotion SPF 4 and a bottle of Boones Farm apple wine. Head to the beach….any beach. STEP 8 Return home cranky and hungry. Apply generous amounts of Noxzema to burnt body parts. Ignore parents’ warnings about wrinkles; they only happen to old people. STEP 9 Thirty years later, pay big bucks to a dermatologist to not look like a surfer girl who used baby oil and iodine to get "tan".

Attempts at humor aside, like you, I love living on the South Shore. The aquatic beauty feeds my soul and this summer I might actually go in the water if I can get the movie, Jaws, out of my head. I hear that music every time I dip my toes in the ocean. In the meantime, if you find yourself in Ocean Beach this summer, chances are you’ll see me sitting by the dock of the bay while thanking the Universe for her generosity…but only before 10 am, and most likely after 5 pm.

A MAN'S PERSPECTIVE By Carmine Buquicchio

The Mondays at Racine Cancer Care Program provides free salon & spa services to men and women diagnosed with cancer in attempt to reduce the stress, anxiety, and side effects of cancer treatments. This program has helped hundreds of people each year face the challenge of healing with a gentle, modern, and compassionate approach. Because women typically visit salons more than men, we wanted to encourage men who are battling cancer to take advantage of this wonderful program as well. We hope the following story inspires other men to spend some time at Racine. After being diagnosed with Stage 1 Large B Cell Lymphoma in March of 2018, I contacted my friends at Mondays at Racine. I’ve been friends with Rachel, Cynthia, Karla, and their entire extended, loving family since 1980. I knew about their salon; but only after their 2012 Academy Award Nomination for Best Short Film Documentary did I understand exactly what they do for cancer patients. I considered myself to be in decent shape for 56 years old. I’d CrossFitted for 7 years and seen a nutritionist for 22 years. I eat right and take supplements. I don’t drink alcohol, and I don’t smoke. I’m rather boring! Hearing I had Lymphoma was definitely not on my radar. It took a week to process; another week to tell my family and friends. When I first met with Rachel, she held me in her arms as

I cried, numb, scared, and dumbfounded. I was trying to be brave on the outside, yet, I was frightened inside. My friends at Racine looked into my eyes and somehow read my fearful thoughts. I didn’t have the strength or the words to speak. They outlined a course of action for me, something they have navigated for so many brave women over the years. They said they would be there for me, and would walk through this with me. Their sincerity and compassion reverberated in my spirit… I knew I was in the right place. At the time of being diagnosed, my hair was the longest it had been since high school. I knew the inevitable was approaching, but I wanted to avoid it as long as possible. Truth is, I was in denial that it would fall out. About two weeks after my first chemo treatment, I began to lose my

hair. I have never seen myself bald and, being in sales, I didn’t want to be seen in public like that. I was horrified at the thought of losing my hair, not so much from vanity, but mostly because of the trauma and circumstances that caused it. When I arrived at Maia Salon in Smithtown (an extension of Mondays at Racine), I sat in my car, paralyzed, until I mustered the courage to walk inside. I had every intention of running in and running out as fast as I could. I wasn’t sure what to expect… perhaps loud music, hair dryers screaming, TV‘s blaring, lots of commotion. What I found was an immediate refuge; a safe, friendly environment where volunteers lovingly provided services to cancer patients like myself. Somehow there was a serene peace about it. I sensed these people could not fake doing this; everyone had to be on the same page or the program wouldn’t work. I was immediately greeted with a great big smile and hug from Cynthia. Initially feeling awkward and thinking to myself, “This is for women….not men, why am I here?” it wasn’t long before my thinking transitioned. I sat with the women, and we made each other laugh. There was a buffet of delicious catered food that I thoroughly enjoyed...especially the chocolate mousse. I loved the attention from the staff, and I knew I had it a lot easier than most of the brave women here who were going through hell. But, as my time came to get my head shaved, I began to cry. It was getting real. Cynthia held my hand while Jolie shaved my hair down to the shortest I’ve ever had it. I looked military…I actually liked it! I didn’t have the strength to shave it all off- not just yet. It was very hard; very emotional. I kept thinking if I had walked into just any barber on the street to get my head shaved, or had to explain why I needed it so short, to a group of unsuspecting, possibly insensitive barbers, I would have felt totally violated.

The food, the fellowship, and the haircut was just the beginning. Much to my delight, I was also treated to a massage from Francesca. My over-stressed, emotionally drained body and overactive mind were able to wind down a few notches and breathe. I returned the following week, this time to Mondays at Racine in Islip. Met with the same warm, welcoming atmosphere I experienced at Maia, I enjoyed a wonderful pedicure from Tasha. It would have been traumatizing had I not discovered the Cancer Care Program at Mondays at Racine. It felt like a little bit of heaven being catered to by such a compassionate staff, and it was so nice to be the center of attention for a few hours. When there, I had actually forgotten that I even had cancer, which is a very surreal feeling ever since being diagnosed. For both men and women to have this wonderful escape for a little indulgence, while facing the challenges of cancer, is an enormous collaboration of lifting spirits and instilling hope to all who have the honor of being part of it. I was so blessed to have experienced Mondays at Racine first hand. It is something that cannot be understood until you actually participate in the program as a cancer patient. I feel like I’ve gained a new family and forged friendships that will last a lifetime. It is invaluable to know that I have a safe haven where I am not alone. Although I am done with treatments, I will continue to go to Racine… and I look forward to getting back to CrossFit soon!

Men & Emotions by Anthony Cerabino, B.M., LMT, M.S., L.Ac

Are men allowed to express their emotions? Is crying a “manly” thing to do? Is a man weak if he expresses any form of emotions? Why do men have to be so brave all the time and hold their emotions in? Where did men learn this behavior of repressing our emotions so we can be “strong”? It sounds like the “chicken-pecking-hierarchysyndrome”. Men are plagued with the belief that weakness is showing and expressing vulnerability. Are men weak because we express our emotions? The “big-boysdon’t-cry-syndrome” is a societal problem that still exists. Repressed sadness can and will lead to depression and frustration that will lead to anger. Many years ago, I had an experience baby-sitting my 5 year old nephew. At one point I

noticed that something had upset him and he started to cry. I asked him what was wrong and he just kept crying. He cried for a good 5 minutes. I encouraged him to do so. I knew that this was going to be a very cathartic experience for him and he would get much relief from shedding these tears of discomfort that his mom would not let him do regularly because of the “big-boys-don’t crysyndrome.” I know as a medical practitioner/body worker for the past 24 years that people will “cry themselves well”. People just want to be heard and loved. We are emotional beings. “The Issue is in the Tissue” is another common phrase that is expressed amongst body workers such as Massage Therapists, Reiki Practitioners and Acupuncturist. Emotions get trapped in our cellular memory

and need to be expressed. Selfexpression is paramount for ‘Thriving to Live’ and NOT to live the Survival-Living-Mentality. We are called human being for a reason. We are the only species on the planet that has the ability to reflect and redirect our emotions if necessary. We have this amazing ability to ‘respond and not react’. We have the ability to emote our feelings which is essential for the survival of our mental, spiritual, physical and emotional health. So men, get real and stop putting on a front if your emotions are hurt. Express yourself. Talk about your feelings. Strength is in vulnerability. Strength is in reaching out for help when needed. We are here to commune with one another and share all the good as well as the tough times.

SOMETHING TO BE SAID ABOUT THE COLOR RED…

Celebrate Summer With Our Best In-Season Tomato Recipes Roasted Tomato Salsa Roasted tomatoes, garlic, onion and jalapeno are blended with cilantro and cumin to create one of the tastiest and easiest Mexican-inspired recipes you'll ever try. INGREDIENTS

• 2 pounds roma tomatoes, halved lengthwise • 6 unpeeled garlic cloves • 1 large white onion, peeled, halved and cut into ½ inch slices • 1 large handful fresh cilantro leaves

• 1 jalapeno pepper, stemmed and halved (discard the seeds to reduce the heat if you like) • 1 tablespoon freshly squeezed lime juice • 2 teaspoons Kosher salt • 1/2 teaspoon ground cumin

DIRECTIONS

Preheat broiler to high. Arrange the tomatoes (skin side up), garlic cloves (unpeeled!), onion and jalapeno (skin side up) in an even layer on a large baking sheet. Broil for 6-8 minutes, or until the tomatoes and jalapenos have blistered and blackened pretty thoroughly on top. Remove pan from the oven, and peel and discard the skin from the garlic cloves. Let the vegetables cool, then add to food processor or blender with remaining ingredients and purée until smooth, or slightly chunky if preferred. Taste, and season with extra salt or lime juice if needed. Perfect to serve with tortilla chips, or use as a condiment on fish, eggs, burgers, or sandwiches.

Grilled Salmon and Potatoes with Quick Tomato Chutney YIELD: 2 SERVINGS. INGREDIENTS

• ½ lb baby yukon gold potatoes (about 4-5)

• 1 clove garlic, minced

• 1 tsp olive oil

• pinch red pepper flakes

• ½ tsp cumin

• salt and pepper, to season • ¼ red onion, diced • ½ pint assorted cherry tomatoes, halved

• 1 Tbsp brown sugar • 2 Tbsp cider vinegar • (2) 6 ounce salmon fillets

DIRECTIONS

Halve/quarter potatoes (depending on size). Place on a microwavable plate and cover with plastic wrap. Microwave on high 4-5 minutes. Allow them to cool slightly. Coat potatoes with 1 teaspoon olive oil, and season with salt and pepper. Thread potatoes onto two skewers. Heat a teaspoon of oil in a pan over medium-high heat, swirling to coat. Add onions, season with salt and pepper, and cook until softened and just starting to brown. Add tomatoes, garlic, cumin and red pepper flakes, cooking until the tomatoes begin to release their juices. Stir in the brown sugar, then vinegar, scraping up the brown bits in the pan. Simmer until a thick, chunky sauce has formed. Check seasoning and set aside until ready to serve. Season salmon with salt and pepper. Place fish and potatoes, cut sides down, on grill rack lined with foil). Cover and grill potatoes 6 minutes without turning. Grill fish 7-9 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve fish with potatoes; top with tomato chutney.

Summer Tomatoes & Basil Local home chef Maggie Grello shares her tips. INGREDIENTS

• 1 large, salted fresh mozzarella sliced right before eating (we use Frank & Maria’s, Pastosa, and Gemelli’s) • 4 large ripe or 8 Campari or your favorite tomatoes, sliced

• 20 fresh basil leaves or 1 tspn. pesto • Extra virgin olive oil (EVOO) • 1 crusty loaf of seeded Italian bread or semolina bread, sliced thin • Salt & pepper

Having been raised on fresh mozzarella, I’ve learned much about the complexities of serving this “simple” dish. Here are my TIPS: 1. Once you purchase your fresh mozzarella, DO NOT REFRIGERATE! If you wish, leave the wrapped cheese in a bowl of room temperature water on the counter. (Refrigeration changes the texture forever!) 2. Cut it over a plate and allow the milky juices to stay on the plate. This liquid mixes with EVOO and tomato juices to form a wonderful nectar of the Italians – dip your bread! 3. Avoid vinegar as it overpowers the delicate flavor of the cheese. 4. Chiffonade/thinly slice the basil leaves on top; drizzle EVOO, sprinkle with a dash of salt and a few twists of black pepper. Serves 6-8. 5. Serve atop a slice of bread or alongside…as you wish!
