esigned as a “multivenue performing art center”, the Istanbul Opera House will be one of the architectural icons of Istanbul and one of Europe’s ostentatious art centers when completed in 2019. Everything You Need to Know About Caviar

L

isa Downs fell in love with caviar as an air chef working for Ansett International. “I was lucky enough to work in first class where we had caviar service from a trolley,” says Downs. “I love the theatre of caviar.” Downs would spoon the caviar onto the plates of lucky travellers with traditional accompaniments such as grated egg, crème fraiche and blinis.

Downs is now the caviar ambassador for Simon Johnson; a role which involves educating consumers, chefs and the food service industry about the precious black pearls. She has developed strong relationships with producers across the world, and recently visited the production facilities of ARS Italicia, learning from “caviar masters” there.

Illegal poaching and overfishing of sturgeon, whose eggs are salted and cured to produce caviar, has pushed many species to the brink of extinction. CITES (the Convention on International Trade in Endangered Species) imposed a ban on the harvesting of wild sturgeon in 2008, thus caviar – which hasn’t existed in abundance in recent times – became even more difficult to find.

And why is caviar so expensive? Downs says the cost of setting up a farm is very high and it’s a long time before any money can be made because many sturgeon species don’t start producing eggs until they are between six and nine years old.

Caviar, while still a scarce commodity, is becoming more readily available now, says Downs. New sturgeon farms have emerged after the 2008 ban, and pre-existing sturgeon farms, such as ARS Italica in northern Italy and Gourmet House in Dubai have increased production to meet demand. 30

Downs notes that a lot of the caviar imported into Australia is pasteurised, meaning it has been heat-treated to kill bacteria and extend the product’s shelf-life. While this is an easier product to import and handle, Downs says that pasteurising caviar causes the outer protein of the egg to harden, thus sealing it from further salt penetration and flavour development. Simon Johnson predominantly imports fresh, unpasteurised caviar without any chemical preservatives (in 2016 it


imported 1.6 tonnes of caviar). While fresh caviar requires more care to handle and store, Downs says “it’s an infinitely better product”. Caviar from Sterling and Calvisius is imported in “Mother tins” weighing 1–1.8 kilos. It is then stored in Simon Johnson’s caviar room in the Sydney warehouse at minus two degrees celsius. At any given point, there is around 100 kilos of caviar in this room. From here, Downs is able to carefully monitor the maturation of the caviar, packing it into smaller tins to order (sized anywhere between 30 and 250 grams, depending on customer needs). At present, Simon Johnson is the only company in Australia licensed to re-pack fresh caviar. When it comes to eating caviar, Downs recommends people have the first taste from the flat part of their hand, between thumb and forefinger – what she refers to as the “anatomical snuff box”. This is because the complex flavours of caviar are best appreciated when it reaches room temperature, just like cheese. “After a couple of minutes, when you can’t feel the caviar sitting there, that means it’s reached blood temperature and you should eat it,” she says. If you don’t want to spend an evening eating caviar off your hand (but why wouldn’t you?), Downs says people should pair it with neutral flavour carriers such as Melba toast, homemade blinis, cultured butter or crème fraiche. And whatever you do, don’t eat it off a metal spoon as this causes an unpleasant chemical reaction between the metal, the caviar and your saliva. A mother of pearl spoon is ideal, but “even a plastic spoon is better than using metal,” she says. Further to this, Downs says, “The rule of thumb with caviar is once you open a tin, it needs to be consumed within three days, but really, you should think of caviar like drinking a bottle of Dom Perignon: you don’t open a bottle, have one glass then put it away for the next day. When you open a bottle of Dom, you drink the whole thing. It’s very much the same with caviar. We encourage customers to buy as much as they will eat on the night.”

For those who would rather eat caviar prepared by Australia’s best chefs, Simon Johnson also supplies top restaurants including Quay, Rockpool and Sepia (in addition to airlines such as Qantas, Qatar Airways and American Airlines). Ben Turner, who is group head chef of Matt Moran Restaurants, put a dish of lobster, French toast, finger lime and Sterling caviar on at Aria when it re-opened in November 2016. The dish was a hit and images of it popped up on the social media feeds of many who dined there. Turner appreciates that caviar is a “super rich and luxurious product”, and because of the expense, trusts Simon Johnson to provide him with “perfect, undisturbed pearls” that have been handled, stored and packed in the right way. And if a tin of caviar ever ended up in his home fridge? “I’d probably do something really understated with it,” says Turner, “like a super white bread sandwich using nice soft bread, cultured butter and caviar.” Having previously undertaken a caviar masterclass with Downs, he’d probably have the first taste off his hand, of course. he Luxury Network members enjoyed a beautiful evening tasting a unique range of single malt Scotch from the Balvenie collection, which was paired with a range of Sisko chocolates. Sisko Chocolate, the leading luxury handmade chocolate company in Australia for weddings, corporate events and gifts, product launches and many more, pride themselves on the quality bespoke service they are renowned for. Having

designed for luxury brands to local clientele, the offerings are as unique and diverse as the chocolate that is sourced from around the world. n collaboration with the fabulous Frankie Walker and team of Black Pineapple; The Luxury Network invited members to enjoy a bespoke Cocktail Masterclass at the exclusive surroundings of historic Northern Club. The evening proved a roaring success, with members walking away with three decadent cocktails added to their repertoire. Welcomed with a glass of champagne and the chance to mingle, members were later enthralled by Walker’s precision and skill during his entertaining demonstration, creating three signature cocktails. Lighting up the room and engaging with guests, the team at Black Pineapple showcased how to mix carefully curated cocktails for the crème de la crème of drinking experiences, dinner parties, or celebrations – just in time for the upcoming party season. Once equipped with insider tips and tricks, it was our members’ turn to try their hands at becoming 86

the next Master of Cocktails. Delighting the senses, members were provided with impressive fresh ingredients at three stations, mixing unique and deliciously developed cocktails. Drawing inspiration from all time classics, Frankie added a modern twist for a drink sure to impress at any party. The Honey Berry Sour station was a favourite during the night, combining unusual flavour pairings (berry puree, lemon, and whiskey among the ingredients list), for a surprisingly refreshing drink – perfect for those balmy summer evenings. Members and guests then enjoyed warmly rich and decadent food from the Northern Club, while sipping on their own creations. Frankie and Black Pineapple certainly educated and inspired us to become better hosts, giving our members exclusive insider tricks and techniques to become master mixologists at any event. It will be

As the sun began to set, the stars came out onto the red carpet in the form of some of the most influential women in the region. The Luxury Network UAE Quarterly B2B

Every quarter The Luxury Network UAE gathers members for a B2B to foster communication, collaboration and introduce its latest members. The location for this quarter’s B2B was the most spectacular and unusual to date. The day began with member’s meeting at the Bulgaria Yacht Club and taking The Heart of Europe yachts to the revolutionary six-island development on the Dubai World Islands. The first stop saw member’s alight at the Floating Seahorse villa, whose bedrooms are all located underwater and the villa itself is afloat but securely anchored to the sea floor. A short pontoon boat ride away found member’s on the private beach to the Sweden Beach Palace, a state of the 92

art 100 million AED 25,000sqft luxury residence replete with its own spa, sauna and snow room. Once the tour of the four-story palace was completed, members gathered in the living room overlooking the infinity pool and sea to begin listening to new member presentations. Looking ahead According to the World Competitiveness Ranking 2018, the UAE ranks first regionally and seventh internationally, ahead of countries including Sweden, Norway, and Canada. The UAE Government considers it to be imperative to move towards a knowledge-based economy. This has been due to several reasons, not limited to: the UAE’s strategic location, strong financial reserves, sovereign wealth funds, promising economic environment, continued government spending, free zones, and foreign direct investment.

Partnering with Singapore Singapore is the largest trading partner of the UAE in ASEAN. Conversely, UAE is the largest trading partner of Singapore in the GCC. Bilateral trade in 2017 amounted to US$ 17 billion. Investment flows between the two countries have also been significant. Some of the leading UAE companies are present in Singapore. They capitalize on the country’s role as a regional business hub for the SouthEast Asian and Asia Pacific Regions. Furthermore, Singapore’s status as a AAA rated country give it an excellent reputation for strong governance, economic management, first class infrastructure, advance financial sector and globalized communication channels. The political stability and strong oversight by regulatory authorities, coupled with various incentives offered by the government for regional hub status are strong pull factors for UAE companies to establish a base in Singapore. Some of the major UAE companies present in the country include Global Foundries, ADNOC, ENOC, Borouge, Al-Futtaim, DNATA, Emirates Airlines, Etihad Air-


ways, Sharaf Group, CEPSA, GEMS, Horizon Terminals and RAK Ceramics. Singapore’s reputation as a leading international financial center has also attracted UAE financial institutions to establish a regional branch in the country, covering the Asia Pacific region. First Abu Dhabi Bank and Emirates NBD have wholesale branch licenses actively involved in financing UAE and regional corporates and trade and investment flows between UAE and the region. Abu Dhabi Commercial Bank has also established a regional representative office in Singapore. Some of Singapore’s major companies have also invested and established operations in the UAE. They leverage the UAE’s diversified economic composition, strong and business-friendly government and the country’s strategic positioning as the regional hub covering GCC, MENA, East Africa and Central Asia. Some of the Singapore companies in the UAE include Capitaland, Ascott, Sembawang Group, ST Group, Surbana Jurong, DP Architects, RSP Architects, Indoguna, Meinhart, Boustead Projects, and GIS Schools. A large number of trading companies

from Singapore have established regional trading operations in Jebel-Ali Free Zone, DAFZA and other free zones in UAE. Financial institutions such as Bank of Singapore and DBS Bank are active in DIFC. Bank of Singapore has recently expanded their operations significantly, focusing on the lucrative market for wealth management. UAE-Singapore Business Council The establishment of the UAESBC was first mooted at seminar to commemorate the launch and signing of the GCC-Singapore FTA. This proposal received further support from government and national business organisations from both countries. Hence, UAESBC was established in early 2018 . Its primary aim is to provide a platform for member companies and individuals to connect amongst themselves, with the UAE embassy, relevant business bodies both in UAE and Singapore, that will also serve to catalyze greater trade and investment flows between the two countries. It is also the intention to capitalize on the important role that the UAE and Singapore can play as regional nodes in China’s Belt and Road Initiative, with reference to

the Maritime Road. Singapore is an established hub for ASEAN and Asia Pacific Region, with strong links to the Indian sub-continent. Whilst on the other hand, the UAE is the established hub for the Middle East, East Africa and Central Asia. Hence there are certainly opportunities for these two pivotal nodes to collaborate in the Belt and Road Initiative. The Patron of the UAESBC are, the UAE Ambassador, His Excellency, Dr Muhamed Omar and Mr Lee Yi Shyan, a Member of Parliament and former Senior Minister of State. The Executive Committee include leading UAE and Singapore companies such as Global Foundries, First Abu Dhabi Bank, Dnata, Borouge, Al-Futtaime Group, ADNOC, ENOC, Emirates NBD and ST Group, Surbana Jurong, DP Architects, Meinhart and others. The council has a programme to organise various activities such as regular breakfast talks, trade missions, workshops, seminars, networking sessions with other chambers and trade associations. Mitchell Fine Art Celebrates George Gittoes 50th Year Exhibition Opening

T

he mythical power of love is the theme behind Sydney Peace Prize Winner George Gittoes latest exhibition. In a complete stylistic shift from his figurative documentation of war, Gittoes revisits an abstract style in his new exhibition. Opening September 19th, ‘Lovers’ explores the mystery of love. For decades George Gittoes work has documented a disturbing and unrelenting trail across multiple platforms of war, genocide and vicious conflict. His figurative paintings are known to be evocative, sometimes disturbing and always frighteningly real as he holds a mirror up to mankind. This year marks the 50th year of his incredible undeviating journey to document and throw a light on what humans are capable of in times of war and conflict. However, you won’t find the maimed or displaced in his latest exhibition. Gittoes reveals that this theme has been the message central to his life’s work – ‘to make love on war’. This series of paintings are not unrelated to his previous works, rather they encapsulate everything that he has forever been trying to convey. Amidst all the pain and suffering, love can survive. These abstract, mystical works are reminiscent of rarely seen Gittoes artworks from the late 1960’s. Gittoes has utilised wood block stamps collected over many years throughout Afghanistan. Some of which have been dated by Peshawar University as being over 1000 years old. The result is a collection of multi-dimensional and highly intricate artworks full of historical content and layers of meaning.
