‘tis the season... Not too long ago we were battling the heat, and now there’s less than two weeks till Christmas Day! I hope you are more prepared than I am, and, even if not, that this season treats you well. If you need some inspiration for gifts, or Christmas itself – this issue offers some ideas from how to keep the children busy to stocking-fillers. Christmas is not the favourite season for everyone, however, and Claire Bugeja responds to a letter saying just that and asking for help. Dini Martinez takes a trip to Morocco with her husband and two young boys and Albert Delia meets the talented seamstress May Vassallo, who has for years been the reliable creator of an array of theatrical clothing for theatre, film and carnival. We meet a talented, young and up-and-coming Maltese fashion designer Sarah Caruana Dingli and the fairly new-on-thescene band The Crowns, and get stuck in to some delicious jams and salad by First’s new contributor, Ingrid Mercieca. The First team and I look forward to sharing the New Year with you, when the one and only Colin Fitz will be kindly stepping in as the coordinator while I get to know my newly-born daughter. All those who know Justine Pergola will be familiar with both her sense of fun and her generous sense of humour, as well as her appreciation for beautiful things. Her home, Palazzo Parisio, is testament to that, as demonstrated by her design of the restaurant, café and shop (all soon to be redesigned) and the development of a luxury guest house in the grounds. The big love in her life is Romeo, her loyal Labrador, and she continues to scour the world for inspiration… My favourite space in my house is my cosy living room in the winter where I watch endless movies and my roof terrace in summer, where it’s quiet and peaceful.

ucked away in Old Mint Street in Valletta you can find a little house bursting at the seams with costumes and clothing depicting fashion trends spanning over millennia. As the photographer and I walked into the shop on a cool November evening, a large ginger cat sat eagerly waiting on the stairs opposite the front door, ready to lead us to where May Vassallo was expecting us. It became apparent that ‘Ximi’, the cat, was expecting to be repaid for heralding the way with plenty of petting. I also had to come to terms with the fact that Ximi would also have to be an integral part of this interview – with pen and paper in one hand and the other dedicated towards satisfying this cat’s insatiable appetite for affection.» 11


«May Vassallo, who is now in her seventies, is a national authority when it comes to dressing people up in the attire of times gone by. A seamstress herself, coming from a long line of tailors, May has spent practically her entire life surrounded by drapery and

fabric. However, after a few minutes of talking it becomes clear that she is much more than just a person who threads a needle: she is something of a cultural all-rounder and no stranger to singing and acting. She was also professionally trained as a pianist

in Rome in the 1960s and professes to love music as much as fashion – with opera her favourite, being a contralto herself. I tell her that with sewing and playing the piano she must have particularly slender fingers, she laughs and tells that they aren’t – but judging by the quality of her work, they certainly are nimble. Despite a background of sewing going back generations, May was never intended for the life of a seamstress, since it was considered more of a man’s job in her family. In fact, having returned from Rome in the 1980s, May started her own business selling the clothes she herself imported, as well as being one of the first people to start organising fashion shows on the island. When I asked what it was like being a female entrepreneur over 30 years ago, she tells me that by that time, the idea of a woman opening and running a business was already becoming quite entrenched locally.

some of the most popular. May tells me that, right now, all her vintage army and police costumes are being used in filming. Her father used to make uniforms for army officers during the Second World War himself and the costumes currently being used on set cannot get any closer to the actual originals. She remembers that her first-ever job at the age of seven was washing, on the roof, the large quantities of khaki fabric her father used for military clothing. Carnival is certainly the time of the year when business booms, especially from those renting Venetian costumes before going to Venice. May tells me, with a smile, that she enjoys sewing these costumes most of all. Business throughout the rest of the year is also quite good and there’s always some activity or another that will require particularly specific costumes. Ximi the cat jumps onto the ironing board next to me and curls up in front of May. I am told this is his favourite spot whenever there is sewing to be done – May can spend hours there. Although she loves sewing and being surrounded by the festival of colours, textiles and fabrics that are her costumes, she tells me that some day she will have to stop – as she points to the Father Christmas costume on which she was working that morning. When I ask her what advice she would give to young women wanting to start their own business, she immediately stresses the need for people to have a deep sense of responsibility for whatever they are creating. Being meticulous and working hard is the only way to succeed. She points out the amount of research that goes into ensuring that every one of her period costumes is as close as possible to the original, saying that is the only way you can avoid criticism. As I prepare to leave, May shows me the rest of the costumes in her collection, all organised by genre on rails as high as the ceiling and each item telling a story. Ximi wakes up and tries to coax one last cuddle from me before showing me the door.

May then began the slow transition of working for the Manoel Theatre originally entrusted with organising the theatre’s scores and sheet music until she became the theatre’s full-time wardrobe mistress in the 1990s. It was after her stint at the National Theatre that May settled into her current niche as costume purveyor to the country and has slowly, over the decades, compiled a compendium of clothes and costumes that number in the region of around 10,000 pieces. She makes many of the costumes herself and there are a few categories where she justifiably claims that she has some of the most comprehensive collections on the island – ecclesiastical vestments being one example. May’s shop houses an impressive collection of 16th and 17th-century ensembles, each one meticulously researched and, whenever possible, different from each other. To May, each costume is a project in its own right. She believes that it is the way she gives each piece of clothing its own individual character 13

We all know the traditions that make Christmas special but do you know how Christmas is celebrated around the world. Read on for some Yuletide surprises... Words by Sophie Macken Âť

St Nicholas

St Nicholas was the basis for Father Christmas or Santa Claus, eagerly awaited by every child as the jolly bringer of presents. In Greece however, he is the patron saint of sailors and according to Greek tradition, his clothes are drenched with seawater and his face drips with sweat because he has been working hard against the waves to reach sinking ships and rescue them from the angry sea. Greek ships never leave port without some sort of St. Nicholas icon on board.

Santa’s Elves

Like other Scandinavian countries, Norway has its gift-bearing little gnome or elf. Known as Julebukk or “Christmas buck,” he appears as a goat-like creature. Julebukk harkens back to Viking times when pagans worshipped Thor and his goat. During pagan celebrations a person dressed in a goatskin, carrying a goat head, would burst in upon the party and during the course of evening would “die” and return to life.

Krampus Night is celebrated on December 5th, the eve of St. Nicholas Day in Austria and other parts of Europe. As a tool to encourage good behaviour in children, Santa serves as the carrot, and Krampus is the stick: Krampus is the evil anti-Santa! People dress as Krampus and roam the streets looking for someone to beat with a stick. Since it is also a night for drinking, the beatings probably don’t hurt too much. 16

The Mari Lwyd is the strangest and most ancient of a number of customs with which people in Glamorgan and Gwent in Wales use to mark the passing of the darkest days of midwinter. Even before Christianity, people held winter festivals and celebrations to brighten those dark months and look forward to spring as a time of renewal and new life. In its purest form, the tradition involves the arrival of a horse’s head and its party at the door of the house or pub on New Year's Day, where they sing several introductory verses. Then comes a battle of wits (known as pwnco) in which the people inside the door and the Mari party outside exchange challenges and insults in rhyme. At the end of the battle, which can be as long as the creativity of the two parties holds out, the Mari party enters with another song.

A different type of Yule log

If you live in Catalonia, Spain, you might buy a Caga Tió or ‘Pooping Log’ at Christmas. The log is hollowed out, with legs and a face added. He is ‘fed’ every day from December 8th with Christmas sweets and treats. On Christmas Eve or Christmas Day, he’s put in the fireplace and beaten with sticks until he poops out small candies, fruits, and nuts. When he is through, the final object dropped is a salt herring, a garlic bulb, or an onion.

BEATEN TRACK ROCCO’S NORTH If you are the kind of person for whom reliable internet connection, punctual breakfast and hassle-free travelling is of paramount importance for an enjoyable holiday, Morocco – away from its five-star resort clubs – is not for you… By Dini Martinez

If

however, you have always wondered what it would be like to live in a fairy-tale land with crenulated horseshoe arches and mosaic-coated courtyards; if an explosion of colours, shapes, forms and scents at fresh produce and artisan markets makes your heart beat faster; and if you fancy experiencing a culture which feels completely different to yours without having to travel too far, then this magical and most diverse country is, for sure, right up your street. From Spain, we catch the one-and-a-half hour ferry from Algeciras to Tangier Med. The ride is not as fast as the half-hour Ceuta-Tangier City connection, but substantially cheaper. It is important, though, to know that Tangier Med is a good 50 km north of Tangier City. Since the former is nothing but a big and ugly commercial shipping port, we head straight east upon arrival.

Our good week

foreign tourists, it has maintained much of its traditional charm. Our riad, run by Delia and her Tetouan family, is the height of friendliness and, in hindsight, by far the most professionally-run and fairly-priced accommodation in Northern Morocco. A riad is a historic residence built around a courtyard with a fountain and is habitually tucked away in the middle of a medina. The medina is the old city centre, surrounded by a wall and mostly painted in white or blue. It is jam-packed with a maze of streets, arches, mosques, public fountains and interconnected houses threatening to crumble with the next breeze. The streets are often so narrow that sometimes you are obliged to walk in a single row. Everywhere you can find tiny hole-in-the-wall workshops and shops, making and selling anything from delicious fresh French sweets, local arts and crafts, costumes and pottery, to dyed leather items which a mere moment ago were still attached to living sheep. Respecting Muslim culture, we all cover our elbows and knees. Local women also cover their hair, but very few wear the full niqab, which covers the whole face and every bit of skin apart from the eyes. Most of them smile at me and comb their fingers through our kids’ blond hair as they pass. The men look at me curiously but are not imposing or annoying, especially not when I’m strolling by my husband’s side. I hear different stories from solo female travellers. Local women seem free, open-minded and joyous, but are never seen sipping mint tea with their male counterparts in tea houses, coffee shops or restaurants. During our trip we come to better understand that Morocco is a country of paradox and transformation. Widespread education is becoming more and more available and women’s rights have come a long way over the past decade, but there is still a long way to go on the path to equality.»

The Riff Mountains are renowned for being the site of one of the world’s largest producers of cannabis. However, they have much more to offer, unless police encounters are part of your dream holidays. The first stop during our two week family vacation is Tetouan, at the foot of the mountains. Here is the summer residence of popular King Mohamed VI and, due to the small number of

«In our next riad – in backpackers’ haven Chefchaouen – we learn that one of the staff used to live on the street. As a single, uneducated mother from the countryside, life is not, and probably never will be, easy for her. Like her, most of the Moroccan staff we encounter are friendly, but innocently yet utterly unprofessional. Without the presence of a Spanish, French or Italian owner, hotels of every kind are viewed by local staff as their homes, and paying guests more as a nuisance than the obvious source of their small, but at least steady, income. Breakfast is regularly served one to two hours after the agreed time and the staff attend to guests from their bedrooms, wearing pyjamas and with mobile and messenger on hand, as was the case in Dar Gabriel in Chefchaouen’s medina. Travelling while starting the day with hungry kids is never a pleasant experience. However, come the rest of the day, the cheap food prices in restaurants and street stands (watch out for hygiene!) is enjoyable. The average family meal out, with entrée and dessert in a local restaurant, costs on average €12 and the one-and-a-half hour taxi ride from Tetouan to Chefchaouen, €30. »

«Hostel accommodation can easily be found for under €10 per night. Mid-range accommodation in riads or mountain lodges cost us between €35 and €55 a night for a family room with four beds. Five-star accommodation starts at €90 for a double room. After being saturated by too many over-enthusiastic vendors in Chefchaouen’s tourist extravaganza, we escape to the silence of Talassemtane, the nearby national park. Four days slip by as we watch amusing Berber monkeys jumping from tree top to tree top, dip our feet in ice-cold mountain water, fresh springs and rapids, and stop for home-made tajines at gites run by local grannies, taking in stunning scenery and recovering from waterfall hikes. From there it goes down-hill in every sense.

Our bad week

Having committed the mistake of not renting a car, we rely on locals who take advantage of our slightly inflexible situation with luggage and toddlers. The simple excuse is: “It’s Africa, mam!” So we end up in Oued Laou, a completely empty fishing village. In summer, it apparently plays host to thousands of local tourists craving a bourkini splash in the blue Mediterranean Sea. Out of season, however, it feels like a ghost town where it is next to impossible to find even a simple bite to eat in the evening, let alone internet connection or a bus. The next morning we flee hastily, only waving goodbye to a swarm of dolphins jumping around the numerous fish farms. Convincing a local to drive us to Tangier does not take much persuasion, given that the €60 for the 100 km, two-hour taxi ride earns him just under the average weekly income.

TRAVELLING WHILE STARTING THE DAY WITH HUNGRY KIDS IS NEVER A PLEASANT EXPERIENCE. HOWEVER, COME THE REST OF THE DAY, THE CHEAP FOOD PRICES IN RESTAURANTS AND STREET STANDS (WATCH OUT FOR HYGIENE!) IS ENJOYABLE. The first impression of Tangier is of an obnoxious port city: piercing stares and annoyingly persistent hassling by local men trying to charge for every bit of fake advice they aim to give; street kids sniffing glue and begging for our dinner left-overs in a street restaurant and a breath-taking orchestra of smells, sounds, colours and the hustle-bustle of Tangier by night. It doesn’t help that, after two weeks of constantly trying to cover up without melting away from the stinking heat, I’m desperately craving the little daily freedoms of Western culture we tend to take for granted: no religious dress-code; a general respect for personal space, holding hands in public and a right to fair and equal prices for everyone. Nevertheless, the next morning, despite the sometimes challenging digestion of my first impressions of Africa, I thoroughly enjoy the pink sunrise reflecting Tangier’s skyline on a pink and orange Atlantic as our ferry starts slipping away from the quay, bringing us back to Europe. 22

ince her first photographs in the late ’70s, Bettina Rheims has defied the predictable. From her series on Pigalle strippers (1980) to her cycle on the life of Jesus in I.N.R.I. (1998), from Chanel commercials to Gender Studies (2011), her work has shaken up traditional iconography and pushed restlessly at the breaking point between two great human preoccupations: beauty and imperfection. MY PASSION FOR COLOUR AND TEXTILES LED ME DOWN THE PATH TO FASHION, WHERE MY INTEREST IN HANDMADE LACE DEVELOPED.

My grandmother inspired me to go into fashion – she taught me all the sewing basics and would patiently sit with me and help me with anything until I got it right and achieved what I wanted.

My love for fashion developed during my time studying at Malta College of Art, Science and Technology, where I obtained a higher national foundation diploma in Art and Design. I was able to combine my interest in fashion with my studies. In addition, I continued to study fashion by attending Manchester Metropolitan University (MMU) from where I graduated with a BA(Hons) degree. During my time there I further developed my skills and knowledge in the field. I was also able to showcase my work on several runways and fashion shows in Manchester and London, with companies such as DKNY and Old Navy. I also carried out some freelance work, as I was commissioned by Tony and Guy for one of their hair shows.

Where did you study fashion design?

What led you to start your own fashion line?

Where were you brought up and did it have an effect on your outlook on fashion?

I was born in the UK and grew up in Malta. I have lived in several places and travelled a lot, which I feel has allowed me to avoid falling into any single style or mould. It has allowed me to develop my own style more easily. I’m currently staying in Australia, on Hamilton Island. It is a beautiful tropical island full of wildlife, and I plan to travel around for a few more months.

Who inspired you to study fashion design?

Art has always been a great love of mine. Having been brought up in an artistic family, my interest was sparked at a young age. My passion for colour and textiles led me down the path to fashion, where my interest in handmade lace developed.

I left London and returned to Malta when my grandmother, who lived here, became ill. Soon after I arrived, I was asked to do participate in Malta Fashion Week 2015. This led to me creating my own online website. » 33

It all started with Adrian Mizzi asking me to do Fashion Week. After that it’s been crazy: things just seem to happen and fall into place. I’m not going to lie, there’s been a lot of stress and often a love-hate relationship, but in the end it’s always worth it.

Tell us about your last collection

It is based on Alice in Wonderland – a theme which is a personal favourite, being very colourful and using elaborate fabrics. My collection also uses hand-made Maltese lace that I have made myself. Created for Fashion Week, it’s a very ‘showy’ collection that is intended to stand out and be remembered.

You have also designed wedding dresses coming along?

A friend was getting married and asked me to design and make her bridesmaids’ dresses. From there I was asked to do a couple of wedding dresses. I would like to expand with a wedding line, although right now my main focus is my online shop.

How would you describe your fashion label?

It’s a fun yet elegant line, locally produced and targeted at those in their twenties. There is only a small selection available, so ultimately, they are unique.

How was your latest experience/event in Malta?

My last experience in Malta was on Venere. I thoroughly enjoyed it, as I love working as part of a team with local talent. I was lucky enough to be on two different shows so I got the chance to work with several people.

Who and what inspires you?

Everything inspires me really, which is why I’m always up for new things and going to different places. Colour is something that is very important to me and that’s why it’s always played an important part in my collections. I follow both Alexander McQueen and Holly Fulton religiously as I admire their style. Lately, I have also really enjoyed seeing the collections that Temperley London has been showcasing.

What plans and events do you have lined up for 2016 and beyond2?

I’m currently working on a new collection and have a few photo shoots planned. I would like my website to grow and to continue working with local talent.

I am still trying to find the right English word to describe the glasses. In short, they are absolutely awesome! Hello, December! It’s time to start the dreaded scavenger hunt that is Christmas shopping. Couple that with the pressure to look good at our social events, and the stress increases tenfold. But it doesn’t have to, not if you follow our instructions carefully. So gather around the fire, children, and listen…

ith any sort of festivity comes a looming cloud of uncertainty and panic. The culmination, however, arrives at the end of the year (historically in December, but now as early as late October), when the dust on the Michael Bublé CDs is wiped off and money becomes tighter than Scrooge’s fist. It’s also a time to meet long-lost friends and rarely-seen relatives, to cherish each other’s presence and show love to our – No. Sorry. It’s not. It’s the season for crippling anxiety and last-minute stress. #FirstWorldProblems. Time, in life in general and especially at Christmas, is your worst enemy. Leaving things to last minute is as bad an idea as a plateful of Brussels sprouts. The consequences the following day will be terrifying. So if you’re reading this and you haven’t even attempted to 60

draw up a list of potential gift recipients; if your calendar is full of work dos and family gatherings and friendly rendezvous – it’s time to RSVP to your duties. One thing needs to be made clear before we proceed. Socks are an absolute no-go. Unless they are explicitly requested, they should be avoided like the plague. Nothing spells “lazy” like a pair of socks to which you’re expected to react like they were an allexpenses-paid holiday to Cancún. If your budget is small (and that’s OK!), try dressing the northern regions of the body instead, ie gloves or a reversible scarf, as pictured – double the wear for half the price! Another great gift idea, as well as a great investment for oneself, come the party season, is a turtleneck jumper, either in a thin fabric that can be layered under a jacket or blazer, depending on the occasion, or a chunkier version for Christmas dinners and cosy get-togethers. Speaking of blazers, formal wear reaches the pinnacle of Yuletide importance, so a jacquard pattern, or shiny velvet, is a great option for New Year’s Eve, plus, they both look great in photographs! If you really need to hog the flash, bust out the bling in the form of a gold watch, which might seem like a splurge when the card gets swiped, but can be an investment if worn throughout the New Year. All that’s left to do is kick up your heels and swig that steaming cup of mulled wine. Happy holidays!

ENTERTAINING THE KIDS AT CHRISTMAS Keeping the children busy during the Christmas holidays can be a task in itself, besides having the Christmas cards to write, food to order and prepare and decorations to set up, but, it is the season to be jolly, and there are ways of getting the kids stuck in and enjoying themselves too, for a festive season to remember! Here are some ideas.By Lily Agius.

Deep breath, if they’re very young it may be messy and a challenge, but there are some simple and fun recipes to make with your little one(s): lemon cupcakes showered in silver and red sprinkles, and chocolate covered rice-crispies or marshmallow and cornflakes will satisfy their (and your) sweet tooth, and undoubtedly give them energy to do something else – that you just can’t wait to get on with, can you?

Tire them out

Take them for a walk in the countryside – Buskett gardens or Mizieb perhaps – or if it’s a sunny day attempt to run on the sand a beach for some fresh sea air and a hot chocolate – wrap up but let them run free, perhaps with a football. If nature isn’t on the agenda and they are old enough why not go bowling, or perhaps a wildlife park, or zoo like at The Presidents Palace before a trot around San Anton Gardens, or a bouncy castle and ball pit will do the trick?

Decorate the house

For most children there is nothing more fun and satisfying than cutting up a string of stars, drawing scenes for Christmas cards, or creating Christmas tree baubles. Get in the mood – switch on some Christmas music and fairy lights and lay out the table with various coloured pens, a ruler, card paper and anything you find at the stationers to make some personal touches to your Christmas home décor. This may take some time to do some online research for the ones that are most appropriate for your child(ren) to do. 66

Have some more children

No you don’t need to keep them, instead invite over some of your child’s friends and perhaps their parents too to keep you company and help out with some home activities.

Story telling

Children are blessed with imagination and love a good giggle, so why not spend some time writing a story between you? The easiest way can be to start of with a sentence yourself, and ask your child(ren) to continue with a paragraph, going back and forth

Ultimately

Christmas is a time to wind down, and let go of work duties and worries, which means there are a multitude of films to watch appropriate for all ages that adults can enjoy too – even if you have seen them a thousand times!

Then, at the other end, there are those who choose to isolate themselves completely, focusing exclusively on the negative and becoming increasingly antisocial, with adverse consequences even on those who care for and love them. Both behaviours are a clear act of resistance towards facing and resolving if not the actual issue itself, at least one’s perspective towards it. Undoubtedly, it is never easy, but for your own wellbeing, as well as the serenity of those around you, you have found the courage to reach out for help by writing this letter. Well, as a life coach I hereby lend you a hand and help to usher you to a place of acceptance and, possibly, resolution. You will get to a point from where you can then continue your life enriched by what you have learned during the process and treasuring any memories made before, and along, the way. Christmas is now only a week or so away, so work on making it a little different this year, a little less melancholic. Make some time for yourself where you can be truly alone. Light up your Christmas tree, switch on some relaxing music, close your eyes and recall a typical Christmas with your father. You

Dear Claire

On 20 December eight years ago, I lost my dad unexpectedly. Since then this month has been associated with his loss and I’m unable to share in any of the festive spirit. It is so ironic that this used to be my father’s favourite month and he used to make such a big deal – decorating and celebrating with all the family. I, on the other hand, would much rather it didn’t exist. At times I am compelled to participate in certain events but inside I have darkness and sadness and most often ruin the fun of those around me.

he festive ambience all around us during these weeks is often in sharp contrast to the sadness, loneliness and darkness that a number of individuals bear in their hearts, especially at this time. Hearts can be burdened with pain due to illness,

financial difficulties and family problems or, as in your case, loss. Each individual deals with such issues in his or her own way and at his or her own pace. At one end of the spectrum you find those who attempt to forget their troubles by drowning their emotions in excessive entertainment, alcohol and even drugs, disassociating themselves from the

mentioned that he loved Christmas, so keep a pen and paper handy and jot down any particular little rituals he may have had. Then reproduce these ceremonies in memory of your dad with your friends and family. Let’s say, for instance, that if you used to go to Christmas Midnight Mass together every year, you should do so again this year. You could even ask the celebrant to offer that Mass for the repose of his soul. Bring out your childhood photo albums and go through them with your kids and relate any anecdotes they may be associated with. Put up a picture bauble on your tree with his photo in a prominent place. I’m sure your father would never have wanted to ruin the Christmas spirit in the family: he actually made an effort to create memories that could then be carried on from one generation to the next. No one is expecting you not to miss your father, but rather than dwelling on his death, celebrate his life. Celebrate his joy and passion for this festive season; carry him in your heart wherever you go. Speak about all the things he taught you and your brothers and sisters, if you have any. Rather than trying to erase the past for fear of the pain, use it, share it and build on it. It will take a little effort to get started, because, for you, these last eight years have been heavy and dark. But it is time to start walking down the road to healing and change. This Christmas, introduce a note of enthusiasm and excitement for a new beginning. When the festivities are over, take stock of your new situation. Evaluate your efforts, actions and, above all, the feelings you experienced on a personal level. Initiate a discussion with your closest family and find out if they noticed a difference and how they feel about your new attitude. Be open to – and accept –their compliments, their views and even any suggestions. All this information will equip you with the necessary strength and encouragement to persevere.

La Scolca Gavi dei Gavi, Piemonte, Italy: This prestigious “Gavi dei Gavi”® produced by La Scolca is obtained with the utmost respect for nature, from pruning to harvesting. With a strict and rigorous selection conducted with the utmost care, cluster by cluster, in vineyards over sixty years of age, La Scolca seeks “unique” grapes for their top wine. In the winery, under watchful guidance of Giorgio Soldati, a master expert, La Scolca applies the ancient rules of vinification, refined over eighty years of family tradition, to produce a wine that is widely recognised as the leading Gavi wine. Vines are located on the hills surrounding the Villa La Scolca. Soils are of volcanic origin, composed of calcareous-clay with veins of chalky limestone similar to that found in Champagne and Chablis, giving a characteristic flinty character. Pale straw in colour with delicate greenish highlights, it has intense lemon citrus fruit with floral and flinty notes on the nose, comparable to the best wines from Chablis. Medium bodied, with apple and more citrus fruit on the palate as well as notes of almonds and hazelnuts. The finish is crisp, refreshing and long.

Montes Cabernet Sauvignon Carmenère, Limited Selection, Apalta Valley, Chile:

From the Montes estate in the Apalta Valley in Chile, Aurelio Montes – highly acclaimed “international winemaker of the year” – considered releasing a pure Carmenère wine, but after considering many different blends, decided that this blend of 70% Cabernet Sauvignon and 30% Carmenère brought forward the best of both varieties. The wine is aged in American oak with only one soft filtering producing a beautiful, intense ruby-red colour, with an elegant aroma of chocolate, cigar box and coffee, plus touches of vanilla and butterscotch. It is medium-bodied, soft and generous, with a long aftertaste. Decanting is recommended at least 30 minutes before serving. It can be cellared for up to five years or enjoyed now.

Chateau Montlabert, St Emilion Grand Cru, France: Chateau Montlabert is located outside the village of St. Emilion, close to Chateau Figeac, and it is one of the more picturesque chateaux and grounds in St. Emilion. The property was built in the 1700’s and is now owned by the Castel group, which also counts Chateau Beychevelle as part of its prestigious holdings. They announced they were going to make the best wine possible starting with the 2010 vintage and they employed Hubert de Bouard of Chateau Angelus as their consultant. The right bank of Chateau Montlabert is planted to 80% Merlot and 20% Cabernet Franc to a vine density of 5,600 vines per hectare. On average, the vines are 25 years of age. The terroir is sand with clay, gravel and limestone soils. To produce the wine of Chateau Montlabert, the wine is vinified in small, temperature controlled, stainless steel tanks. Malolactic fermentation takes place in the barrel, 50% of which are new French oak barrels for an average of 14 months. Production of Chateau Montlabert is 3,000 cases per year and it is definitely a rising star.

Pommery Brut Royal, Champagne, France:

This fine champagne is a blend of 40 carefully selected crus from the Champagne region. It is made up of three grape varieties: Pinot Noir, Pinot Meunier, and about one-third Chardonnay. This subtle blend is aged in the Pommery cellars for about three years in order to develop its full aroma. Fresh and vivacious, with a supple, fruity finish, it’s light yet wellstructured and full of charm, elegance and vibrancy. Pale yellow with light green accents, it is vivacious and cheerful, fresh, easy, fine, delicate, and open. It has notes of citrus and white flowers combined with small berry notes. The wine is round, ample and delicate and it never gets tiresome to the palate. Pairing Champagne is quite easy since it matches almost anything. Mild or strong cheese, appetizers, shrimp – seafood in general. It is also excellent with Asian food – pairing perfectly with sushi. Pommery Champagne is also a wonderful match with dessert or fruits. The Pommery Pop offers all the refined taste of Pommery Champagne in a small bottle with the traditional Champagne cork top making it “pop” when opened. One of a kind!

Raiza Crianza, Rioja, Spain: This wine is made from a selection of La Rioja’s finest Tempranillo grapes. The harvest is carried out by hand in the second half of September and a wine making process of controlled fermentation at 26oC and subsequent ageing in American and French oak barrels for 12 months followed by bottle ageing for a minimum of six months. The wine is garnet red in colour with translucent, mediumhigh depth and ruby edges. Its aroma evokes jammy red and dark berry fruits. It is well balanced with the balsamic, vanilla and toasted notes coming from the wood. On the palate it displays its complexity, with good structure and balance, the predominant flavours being jammy red fruit, with café crème and cocoa notes. A truly excellent wine at remarkably good value.

Marabino Noto, Sicily: Noto is unquestionably the capital of Sicilian Baroque. Referred to as “the stone flower”, it was entirely rebuilt after the earthquake in 1693. Today the town represents the emblem of wealth and magnificence of the baroque period in Sicily. Just outside Noto lies the Marabino winery which uses organic methods to produce its wines. It also offers a beautiful 4 star Relais hotel with 8 rooms and an exceptional restaurant for guests looking for a culinary retreat. The wine is deep ruby red in colour and on the nose it is full of red fruits, floral and captivatingly spicy. The taste is intense with soft tannins and the wine is perfectly matched with braised meats and chargrilled tuna. 71


Amrut Inidan Single Malt: Perhaps India isn’t the first place that comes to mind when you think about good quality whisky, but Amrut is out with a vengeance to break the old world concept of whisky. The distillery was established in 1948 but the real revolution began a few years ago, when the family decided to start exporting their great nectar to the world. The basic single malt is aged in a variety of barrels that give off a taste of apricots and caramel. This whisky is ideal for the person who loves to experiment, and isn’t afraid to try something new, or as a surprise to the whisky snob. It is available in limited quantities and is found in The Wine Boutique Franks.

Glenmoarangie 12 Sherry cask Single Malt: Glenmorangie is one of the leading names in the Single malt industry and this is due to their pioneering attitude towards making whisky. They were the first company to experiment with different wood finishes, leading to an increase in the quality of wood used with the result of whiskies with much more complex aromas and flavours. This particular whisky is first aged in bourbon casks and is then left to mature in a sherry cask for the final two years, giving notes of fruitcake and vanilla. It is ideal for both the beginner and the well-versed whisky drinker and is available from The Wine Boutique Franks.

Nikka Coffey Grain: Japanese whisky has been getting a lot of hype recently and it’s really no surprise since, the quality is top-notch. The Nikka Coffey grain is a different style of whisky to your usual blend or single malt. It is made using a column still which was invented by Aeneas Coffey, hence the name ‘Coffey grain’, which should not be confused with the hot beverage. This whisky offers the drinker a sweeter whisky and can easily be enjoyed at any time of the day. It is an ideal introduction to whisky for those starting out on the whisky trail as well as those who enjoy trying something a bit different.

Benromach 10 Single Malt: Benromach is the smallest distillery in the Speyside region and this gives it the ability to be very flexible in its approach to making whisky. Kilchoman Guze cask finish, Single Malt: Kilchoman is the only familyowned distillery on the Isle of Islay and was established in 2005. The idea of this whisky came about when the writer – Andrew Abela from The Wine Boutique Franks –was working with them. The idea dawned on him to create a whisky with a Maltese flavour and instantly Marsovin’s sweet Guze passito wine came to mind. Fast forward to today and the result is 250 bottles of this fantastic, limited edition, single malt that is available exclusively from The Wine Boutique Franks and The Master Cellars. This whisky is ideal for collectors and connoisseurs of smoky and peaty single malts. Notes of raisins and smoke give the palate a long-lasting finish.

Springbank 10 Single Malt: Springbank distillery is located in the somewhat remote whisky-producing town of Campbeltown, which was once the Mecca of whisky production. From an original 20 distilleries, only three have survived and Springbank is the most famous, since it still produces its whisky the old-fashioned way. In fact you could say that they are the most traditional whisky producer in Scotland. The distillery was established in 1828 by the Mitchell family and, nearly 200 years, on it is still owned by them. Ingrid Mercieca’s love of cooking has fuelled her ambition to start her own catering company, after many years of running her own successful pharmacy. First is pleased to present two of her recipes in this issue – that are without any of her top secret ingredients – which we can try at home: Sweet Chilli Jam and Butternut Squash and Barley Salad.

Sweet Chilli Jam

Ingredients: 8 red peppers, deseeded and roughly chopped 10 red chillies, roughly chopped 2cm of fresh root ginger, peeled and roughly chopped 8 garlic cloves, peeled and minced 400g of tomato pulp (fresh or canned) 750g golden caster sugar 250ml red wine vinegar

Method: If using fresh tomatoes, start by blanching them in hot water to loosen the skins and immediately transfer to a bowl of cold water. Peel, remove the seeds and chop into small pieces. Put in a thick-bottomed pan with all the other ingredients and bring to the boil. Simmer gently for three or four hours until the mixture has thickened. The jam is ready when it coats the back of a wooden spoon, or a small amount poured onto a cold plate sets in a few minutes. The jam is best enjoyed with mature cheese, as a salad dressing and as a dipping sauce.


Butternut Squash and Barley Salad (Serves 6)

Ingredients: One large onion One medium-sized butternut squash 1.5 cups barley (raw) 2 tsp Pumpkin seeds 200g of feta cheese 1tsp each of cinnamon, cumin and coriander 4 tbsp olive oil Chopped parsley Pepper and salt

Method: Start off by boiling the barley until it is cooked ‘al dente’, which usually takes 20-30 minutes of constant boiling. Peel and chop the squash and onion and put in zip-lock bag. Add the cinnamon, cumin, coriander pepper and salt to taste and three tablespoons of oil. Zip the bag up and rub the dressing into the squash and onion evenly. This ensures proper distribution of the spices. Place the onion and squash in a pan and cook over medium heat until tender and well-browned. In the meantime, drain and cool the barley. Chop the parsley and cut the feta cheese into even cubes. When all the separate ingredients have cooled down, assemble the salad by mixing gently to avoid breaking up the squash and feta too much. Drizzle with the last tablespoon of oil and chopped parsley and serve at room temperature. This month’s chef, Ingrid Mercieca, offers catering services and individual orders for all occasions. T THERE IS A BIG DEMAND FOR LONG LETS FROM PEOPLE LIVING HERE, AS WELL AS THOSE HERE FOR A SHORTER PERIOD

he property market is booming and there is a huge demand for property, especially property to rent. While this is naturally a positive, the Maltese need to be careful to harness these successful prospects with care, to ensure that quality is given the utmost attention because, as they say, the devil is in the detail. I meet Douglas Salt, company director and regional manager of the Frank Salt Real Estate St Julian’s and Spinola branches, who makes some wise observations and offers some sagacious advice on how Malta should successfully manage its property scenario. “The property market is active across all strata of society,” says Mr Salt, as he sits in the attractive boardroom of the Frank Salt offices. As a result of the tax waiver scheme, many first-time buyers entered the market. This had a positive domino effect as, more often than not, first-time buyers purchase secondhand property, which means that those from whom they are buying are also on the market to buy another property for themselves.

One can speak equally positively for the rental market, which is booming as a result of the massive number of foreigners who are looking to relocate or retire to Malta for a number of reasons: Malta’s super weather being one of its star attractions. However, while the scenario is positive for landlords, some tenants are suffering: demand is far outweighing supply and landlords are not so willing to retain tenants who rent from one year to the next as they were previously. “I can’t say the rental market is coping,” remarks Mr Salt, adding that demand has shot up for both long and short-term lets. “There is a big demand for long lets from people living here, as well as those here for a shorter period.” Pull factors such as an increase in the number of low-cost airlines mean the demand for short lets has increased tremendously. Mr Salt speaks with the confidence and reassurance of someone experienced in his field and I question him further in the hope of getting a better feel for the property market myself. He advises that “if people are willing to go into short lets, there is a lot of money to be made there”. I ask him whether it makes more sense to invest in stocks and shares or property. Mr Salt said that, while stocks and shares can be more quickly disposed of, at the present time they cannot compete with the high interest rates that can be earned from property. In addition, property has the appreciation of the property itself. “You are looking at not just the return on investment,

but the annual growth rate of about six per cent. This means that, when you add the two together, it makes more sense to invest in property, considering that demand is so high.” He adds that the current visa and passport schemes are going to fuel the demand for rental property. The operative word, however is quality. “Standards are something people are looking for,” stresses Mr Salt. “The property has to be modern, look smart, well-maintained, with good mattresses, good pillows...” The list goes on. An operative word in our discussion about property is ‘quality’. Mr Salt says that we also still need to improve our product tremendously. While he acknowledges the work that the Malta Developers’ Association is doing to educate its members, he notes that a lot still needs to be done, as foreigners are sensitive to factors such as noise, heat and cold insulation and properties being energy-efficient. “If you can’t accommodate the client’s wish-list, it can affect their interest in investing and they might even reconsider the relocation itself. We are becoming victims of our own success at the moment,” he observes. We speak about what kind of demand there is. While there are still first-time buyers looking for two to threebedroom properties, one to two-bedroom properties are probably in demand, currently, says Mr Salt. Discussing the preferred areas, he notes that while the Sliema and St Julian’s areas used to be the target for rental

TO MEET THE CURRENT DEMAND, PEOPLE NEED TO LOOK AT WHAT PROPERTY THEY HAVE AND THEN FURNISH IT AND RENT IT OUT, RATHER THAN GET BOGGED DOWN WITH SQUABBLES investment, today owners get good returns in many peripheral areas not previously considered – such as San Gwann, Swieqi, Ibrag, Attard and Marsascala. “Our busiest rental agent is in the south,” he says. To meet the current demand, people need to look at what property they have and then furnish it and rent it out, rather than get bogged down with squabbles, notes Mr Salt. “We should be encouraging foreigners to rent in village properties and farmhouses,” he says. The issue, he says, is that foreigners have views that are very different to those of the Maltese, and they want to either walk or cycle to work, which is why they are not considering such areas. We discuss Frank Salt Real Estate’s positioning and market share. There are no definite studies of the local situation, but Mr Salt likes to think that “our market share is one of the highest among estate agents. Certainly, we are

leaders in real estate.” Frank Salt has been around for 46 years and, in Mr Salt’s words, there isn’t an idea in real estate that wasn’t started by Frank Salt Real Estate. “A lot of the ideas you see on the market – such as property magazines, branches and overseas exhibitions, were started by Frank Salt.” The company was the first to computerise its offices and the first to

set up its own training academy to make sure their consultants are trained before they go into the field. This is Frank Salt’s secret to success: a well-trained and loyal staff. “They are a cut above the rest, and we are grateful for that,” comments Mr Salt. He notes that Frank Salt believes in the local property market. “Our philosophy is to expand slowly, in a sustainable manner, while still producing a quality product that someone spending a lot of money deserves.” Looking back on 2015, Mr Salt says this year has been phenomenal. The company is now half-way through its five-year plan and, with its projections being met, next year they will be able to capture more market share and outdo this year’s performance. Looking to the future, Mr Salt does not see any reason for a slow-down. “Property prices are going up, but you need to be sensible because if you out-price the market, you will slow it down,” he notes.

GOZO’S WASTE TREATMENT OVERHAUL

Following the successful inauguration of the Tal-Kus waste transfer and materials recovery facility in Xewkija, Wasteserv CEO Tonio Montebello explains how this new facility will transform waste management in Gozo.

F

ollowing months of planning and construction work, the Tal-Kus waste transfer and materials recovery facility was officially inaugurated by the Minister for Sustainable Development, the Environment and Climate Change, Leo Brincat, on 4 December, signalling a new era in waste management in Gozo. This facility was developed for the reception of waste originating in Gozo and Comino, which will now be sorted, processed and temporarily stored before being transferred to Malta or exported overseas. The facility will undoubtedly improve the current waste management practices in Gozo and Comino and help achieve a range of benefits, including a reduction in landfill waste disposal and better air quality. Wasteserv CEO Tonio Montebello explains how this facility will work.

Was there a need for Wasteserv to organise waste management in Gozo?

Definitely, and this facility will achieve exactly that. It will have a very positive environmental impact, while also creating a number of green jobs for Gozitans.

How was waste managed in Gozo and Comino before this facility was opened?

Waste was previously dumped at the Qortin landfill, but this was closed in 2004. Subsequently, waste continued to be received at Qortin and was then transported to Malta. Some manual sorting of the recyclables took place in the open air on site, while the remaining sorting took place in Malta.

Can you explain the function of the Gozo waste transfer and material recovery facility project?

This project covers the setting-up of a modern pretreatment waste plant in secure and controlled conditions. Three different processes will now be carried out here, namely the sorting and baling of recyclable materials, the compacting of solid municipal waste to reduce volume and the shredding of bulky waste, as well as the recovery of recyclable waste whenever possible. All three processes will now take place in Gozo and waste will then be exported or sent to Malta for further treatment.

What are the main objectives of this facility?

In common with all Wasteserv’s facilities, this new facility will be tied to the company’s vision: to create resources from waste. As a result, Wasteserv expects to recover over 2,900 tonnes of recyclable material from TalKus every year. There will also be other benefits, including a reduction of 15,000 cubic metres of landfill waste per year and a reduction of 20,000km-worth of transport coverage annually, leading to a reduction of 900kg of carbon dioxide per year, as well as lower transportation costs between Gozo and Malta. There will also be a reduction in environmental risks compared to previous open-air conditions and also, and very importantly, improved working conditions for our staff.

What separation processes are in place at this new facility?

The new material recovery facility will operate very much like the Sant’ Antnin waste treatment plant. Primarily, it will sort waste into categories such as paper, cardboard, metal, aluminium and different types of plastic. Much of this sorting will be done manually, apart from the sorting of metal, which will be carried out using magnets and eddy-current separation. Once all of the sorting has been carried out, each material is baled and prepared for export.

THE PLANT WAS DESIGNED IN SUCH A WAY AS TO ENSURE THE LEAST POSSIBLE IMPACT ON THE AREA’S SURROUNDINGS What processes are in place for non-recyclables and what happens to this waste after it is processed in Gozo?

Primarily, municipal solid waste is compacted in hermetically-sealed containers, while bulky waste – such as mattresses and wood – is shredded. In addition, and whenever possible, recyclables will also be recovered. All this waste is then transported to Malta for either further treatment or disposal into landfill.

This facility will have a minimal impact on the surrounding environment. How did Wasteserv successfully achieve this?

The new plant is situated in an old, disused quarry that had long been abandoned and was an eyesore in such a pristine area. The plant was designed in such a way as to ensure the least possible impact on the area’s surroundings. The plant’s roof, which is level with the surrounding ground level, has been specially engineered to weather and blend in with the surrounding topography. Beyond this, the site is adjacent to the local civic amenity site, which has been in operation since 2009, which means that the existing facility has now been strengthened and complemented by this new phase.

How was this project financed?

In total, and upon completion, this project cost €10 million, which was co-financed with 85 per cent EU funding and 15 per cent local funding. This amount covered the cost of construction and the machinery and tools required to successfully launch the facility into operation. 83

Meet The Crowns – who have just released a song for Christmas

How did you all meet and decide to form a band?

It all started five years ago. Our vocalist Victorio and guitarist Gianluca had met a few months earlier in a band that eventually broke up. Gianluca, Chris our bassist and Luke our drummer were already collaborating on another small project but Gianluca and Victorio were interested in working together again. So when Gianluca got a call from Victorio about forming a band he agreed, and quickly asked Chris and Luke to join them. This was the original line-up of The Crowns and it was when we were recording our first couple of singles that we decided our sound needed a keyboard player, so we brought in keyboardist Jean-Paul, who has known Gianluca and Chris since primary school.

What have been the toughest and also the most exhilarating moments so far?

We’ve had our good share of great moments and challenges, but the production of our debut album must have been responsible for some of the toughest and exhilarating moments simultaneously! Writing an album requires a lot of input, preparation and team work. As was to be expected with five people coming up with different 86

But the end result of an original piece of writing always gives us a feeling of exhilaration!

How often do you jam together and do you keep to a strict schedule? It depends if we have an upcoming gig! But we generally try to keep a regular and strict schedule of two rehearsals a week. Those who come late are fined – it really works! When we’re rehearsing we mostly jam and prepare for any upcoming gigs or private performances. And we’re continually writing new

material at every opportunity we get as well, as this is one of the most important objectives for us as a band.

Who do you listen to when alone in the car or at home?

Victorio: I listen to any type of music, it depends on my mood. Chris: All types of music, it depends what inspires me at the time. Gianluca: Anything, as long as it fits my mood. Luke: Many genres, depending on my mood, but I tend to prefer listening to Indie genre music, 90s and 2000s music. Jean-Paul: Alternative rock and indie pop.

Are you inspired by any current bands or artists? As a band, we’re inspired by many artists, including The Killers, Kings of Leon, Coldplay, Arctic Monkeys, U2 and Queen, to name a few. Victorio: Bruno Mars Gianluca: A current artist I’m really interested in at the moment is a localone –Joe Roscoe. He’s sounding super fresh! Luke: for the last six months or so my personal favourites have been 2 Door Cinema Club. Jean-Paul: Chvrches Chris: Gorillaz

Do you have any gigs to look out for?

We can proudly say that we are going to perform at the national New Year’s Eve celebrations in Valletta.

Tell us about your latest Christmas song.

We’ve had this idea at the back of our minds for quite some time. A couple of years back, Victorio said he’d like to write a Christmas song but it was never a priority for us. This year, however, we spent considerable time focusing on original stuff and during one of our jamming sessions Jean-Paul came up with a riff that struck the right chord with Victorio and brought back the whole idea of producing a Christmas song. So we set our minds to it. We feel that the song sits right with any other Christmas tune, but at the same time we’ve retained our sound and tried to keep it as fresh as possible – even the theme of the lyrics. We tried to strike the right balance between the emotions brought about by Christmas festivities while at the same time questioning how genuine these feelings actually are.
