Tips for eating out with a FOOD Sensitivity

I recently began a 4 week Gut program that involves cutting out dairy and gluten. I quickly realized how careful and vigilant you must be while eating out with a food allergy or sensitivity. Here are some tips: 1. When eating out with friends, choose the restaurant yourself so you know that they are accommodating.

2. Scan the menu online before going to the restaurant.

3. Ask a lot of questions to the staff and make them aware of your allergies.

4. Do your research! Knowing the ins and outs of your food sensitivities is important in communicating well with staff.

Grilled Fish Tacos INGREDIENTS

Fish 1 pound cod or your favorite white fish 2-3 teaspoons chili powder, enough to coat the fish (try Aw Shucks seasoning or Tajin) Salt to taste

Season your fish. Preheat your grill to 400 degrees.

While the grill is heating, mix the sour cream, mayonnaise, lime juice, and hot sauce in a large bowl. Refrigerate the mixture while cooking to allow the flavors to blend.

Grill your fish, 6-8 minutes per side depending on thickness and preferred doneness.

After the fish has finished cooking, lay a couple of corn tortillas on the grill until they start to get some char marks.

Load up with your fish and favorite toppings. Enjoy!

Negroni

Ingredients: The Negroni is a drink with many legends.

1 oz or 30 ml of Gin 1 oz or 30 ml of Campari In the 1860's at Caffe Comparino in 1 oz or 30 ml of Sweet Vermouth Milan Italy, one of the most iconic cocktail aperitifs was born. Believed to stimulate your appetite before a meal, the Negroni is the perfect drink for a foodie looking to make the best of a good dinner.

Stir Garnish with an Orange Peel

It's also said the Negroni comes from Caffe Casoni, in the City of Dreams, Florence Italy. Crafted for Count Camillo Negroni. He asked his bartender friend, Forsco Scarselli, to make a better version of his favorite drink, the Americano.

Trading the soda water for gin, and the lemon for orange and the Negroni establishes its way into cocktail history.

Our Top 5 Spring Walking Trails Trexler Nature Preserve Trexler Nature Preserve, in Lehigh Valley, Pa, formerly known as The Trexler-Lehigh County Game Preserve, is an 1,108-acre public park that is a focal point for land conservation efforts within Lehigh County.

Lehigh Parkway There are options galore along the Lehigh Parkway path in the Little Lehigh Parkway, Allentown. With four bridges (one of them covered) crossing the Little Lehigh Creek, there are as many loops of pathway as you please.

Ironton Rail Trail There’s lots for history buffs to love as they stretch their legs on the Ironton Rail-Trail, an easy multi-use trail that follows the route of the Ironton Railroad in Coplay and Hokendauqua.

Saucon Rail Trail This trail never feels crowded, and there’s much to see along the way: wildlife, rock formations, the meandering Saucon Creek and the backyards of some beautiful homes. With so many trees, the trail stays nice and shaded when the weather warms up.

The D&L Trail Nowhere is this more noticeable than at Lehigh Gap, a dramatic landscape where the Lehigh River breaks through Blue Mountain, and the D&L Trail meets the Appalachian Trail.

May 5th is Cinco de Mayo, a Mexican holiday celebrating Mexico's victory over France at the Battle of Puebla in 1862 during the Franco-Mexican War. While a minor Holiday in Mexico, the United States has taken it as an opportunity to celebrate Mexican culture and heritage, and a chance to throw large rambunctious parties.

A popular misconception is that Cinco de Mayo, also referred to as Battle of Puebla Day, is a celebration for Mexican independence, which it is not. It is a commemoration of a single battle.

Benito Juarez was elected President of Mexico in 1861. The country was having trouble financially, causing the new president to default on loans owed to European governments.

Because of this, France, Britain and Spain sent naval forces to demand their payment. Britain and Spain came to a compromise but Napoleon III (nephew of Napoléon Bonaparte) took this as his opportunity to build an empire in Mexico.

6,000 French Troops attacked the small town of Puebla de Los Angeles. Victory was all but certain. President Juarez gathered a small group of 2,000 loyal men, many of indigenous Mexican ancestry.

The attack began May 5th, 1862, and lasted until daybreak. When the dust had settled the French were in retreat losing nearly 500 soldiers. The under maned poorly supplied Mexican fighters only lost 100 men, and took the victory.

Planting season is FINALLY upon us! So let’s start the season strong by demystifying heirloom tomatoes.

Tomato Girl

Most of us have heard the word heirloom, usually in terms of a prized possession passed down through generations. However, in the gardening world, there are a few components to what constitutes an heirloom tomato plant.

Most importantly, heirloom seeds MUST be open-pollinated. Open-pollinated varieties produce seeds that are true-to-type, which means you can save and then replant them to grow the same type of tomato. With that said, whenever you eat one of those peak-of-season, perfectly juicy, mouthwatering, and delicious heirloom tomatoes straight from the garden, be sure to save the seeds and share them with family and friends. You’ll be able to grow them for years to come!

In that sense, heirlooms are true to their namesake — a treasure to be passed down through generations of family and friends. As long as they have been grown without any crossbreeding for over 40 years, a tomato plant can be considered an heirloom.

Another factor in what identifies an heirloom: they are usually accompanied by a story of how the variety came to be.

A favorite among tomato growers is the story of the Mortgage Lifter.

Legend has it that in the 1930s, “Radiator Charlie” an amateur tomato breeder (and radiator repairman by trade) cross-pollinated some of his favorite tomatoes and grew the ‘Mortgage Lifter’.

Once he stabilized his new variety, the result was so delicious and so prolific that people would drive up to 200 miles for his plants!
