Will Distance Learning Become the ‘New Normal’?

Andrew Thomas B.Ed (Hons) M.Phil NPQH Principal Al Ain English Speaking School For some children, we are now in week 10 of distance learning and there is talk that distance learning may continue for some time into the near future. Various different models have been touted, whereby children may go back to school in the new academic term with 70% in a real class, and 30% in a virtual one, but regardless of percentage splits, could distance learning become the new normal for our students, teachers and parents?

gins. Students are normally given some instruction on the board, a few questions may be asked, and then the students will be given time to answer questions or complete a task. Children in the Primary school will be set differentiated work through the ‘Chilli Challenge,’ where a student who completes the ‘Mild’ work, will then go on to challenge themselves with the ‘Spicy’ one. Students in secondary will also be given differentiated tasks to complete also in a similar manner.

At Al Ain English Speaking school, our own research is telling us that teachers are working longer hours; children are working longer hours; and when we are dealing with younger children, parents are working longer hours to support them too.

You can almost guarantee that during that lesson, a student or two will require the toilet pass, and we have a few more minutes wasted of learning.

“How can this be?”, I hear many people asking me. Surely, apart from parents supporting their children; trying to run a household, and complete their own work, how are children and teachers working longer hours, and more importantly for myself as a Principal, what effects are these having on the school community?

Students will now be working at their own pace. The gifted and talented students will eat the work up and require another challenge, whilst the majority of the other children will make an attempt to complete the work that has been set. There are, of course, those students who struggle, and will need the support of the teacher, and there are students that will also become easily distracted and go off topic, wasting vital seconds that they will never get back.

To answer this, we must understand how a classroom runs, and I mean a real day to day classroom, not one from utopia, but a real time everyday class, where there is a lot of non-learning time, all governed by routines and bells.

As the lesson comes to an end, the packing away of materials, books, pencils etc occurs, where you can probably take at least another minute off the learning which is increased with age and then we have the transition to the next lesson, where the Primary students look to reset the books and materials on the desk for the next topic, and the secondary students walk to their next class. Time is ticking into the next lesson already, but this is reality and has been so for decades.

The ‘top runners’ for non-learning time, include the start and end of a lesson, where children may line up, walk in and then search the depths of their bags for a pencil, protractor, calculator, or whatever implement they need to start the lesson. It’s amazing how big and cavernous those bags can be at times when it comes to the searching of a pen! Naturally there is, at times a need to borrow one from the teacher, or a need to sharpen a pencil, which all takes precious minutes from a lesson. Once settled, the lesson may start, but again, at times, the teacher may need to manage a pupil or two who has become distracted with another. The lesson then beThe Source

With the virtual classroom, and using platforms such as Google Classrooms, there is no clock! Yes, there is to make a ‘live’ online lesson, but once the work is set, all of it is due to be turned in. So, whereas a student may have been set 20 questions of Maths 10


(for example), but in the class, only completes 15, they now have time to complete all the work set and take the extended work as well. For the conscientious student, if an essay has been set, they will go way beyond the time set to complete it, trying to ensure the best grade ever. Likewise, students now have the Internet easily accessible at their fingertips to do additional research into topics and areas that they may need help with, to ensure they get the answer right, and to turn in the best work possible, so we do see children working longer per class as a result. There have been no interruptions; a comfort break can be taken or even a glass of water fetched, but the lesson remains live until all the work is completed. “Perfect!” I hear some of you say, knowing that your child is working harder perhaps, but is it, when I see the long timestamps of when your children have logged in and the very late times when they have turned work in? Children have changed from active learners in the classroom to passive learners in their bedrooms!

Oh, I haven’t mentioned the increase in e-mails that they also need to field from parents too and the need to arrange live conference calls at times convenient to them also. This is all additional demanding work whilst trying to prepare the next lesson. I don’t have to tell you what this means if they have children whom they are trying to home-school and feeling guilty for putting the education of your children above their own. So, will this become the new normal? Naturally it is all an unknown right now, but what I do think is that what was normal schooling, can clearly not be done or maintained via a computer chip and screen, and likewise, normal schooling may not be able to function with COVID-19. We must not neglect the holistic education that we provide as educators and as establishments, where we encourage, develop and nurture social skills and friendships; communication and conversation; handwriting and spelling. And what is becoming of student’s health and wellbeing, their general levels of fitness as most adopt a sedentary position behind a screen staring at the same walls each day? No person is an island, and this goes just as much for the teachers and parents too.

For the teacher who would have managed this class, they would have been walking behind every child, checking on their work, supporting their learning, and as they go, marking it too with what is known as ‘Live Marking’. The tick or cross is put next to the answer, and maybe the odd correction to support the student’s spelling, Maths or understanding, dependent on the topic, but more importantly, they would be giving essential verbal feedback and instruction on how to improve or gain a better grade. Likewise, children that were showing quick progress in an area, may be told to leave the rest of that ‘Mild’ challenge and go straight to the ‘Hot’ one. With distance learning, the student may now have worked through all the questions, but may have gone off on a tangent too, requiring the teacher to give much more feedback after the lesson, or now set up a live conference call to support the child further. This now eating into their time to prepare the next one!

Even though months have passed, this is still very new to us all, and it will be interesting to see what the very first evaluations and inspections of distance learning that are being conducted right now in the UAE will tell us. If this is the new normal, we will need to adapt further, not just teachers, but students and parents alike. After what may be a period of reluctance by us all, acceptance may allow us to tolerate a different mode and pedagogy that may not ever replace the ‘traditional’ teaching, but one that will become the best fit in a continuous and unprecedented set of circumstances.

More importantly, students can ask teachers questions in a lesson, if they don’t understand. The question is instantly resolved and may even become a point of interest in the lesson too. Additionally, the question may be the same that several children have, but an electronic communication, or e-mail is not required for the teacher to field hours or days later after the lesson has been set. Teachers are now being required to mark work from children as soon as possible and at different times of the day and week. Deadlines are made flexible to support the children with busy home lives; working parents; or where there is more than one child in the home that requires support from the parent. Teachers need to reply quickly to e-mails

As the clock continues to tick for all of us, I can assure you all that schools like us are looking to evolve and reimagine the learning, as we understand that replication via the internet is simply not sustainable. Emirates resumes passenger flights to 9 destinations, including connections between UK and Australia Emirates has announced its plan to operate scheduled flight services from 21 May to nine destinations: London Heathrow Frankfurt, Paris, Milan, Madrid, Chicago, Toronto, Sydney and Melbourne.* The airline will also offer connections in Dubai for customers travelling between the UK and Australia. Travellers will only be accepted on these flights if they comply with the eligibility and entry criteria requirements of their destination countries. This includes an approval from the Federal Authority for Identify and Citizenship (ICA) for UAE residents who wish to return to Dubai. Adel Al Redha, Emirates’ Chief Operating Officer said: “We are pleased to resume scheduled passenger services to these destinations, providing more options for customers to travel from the UAE to these cities, and also between the UK and Australia. We are working closely with the authorities to plan the resumption of operations to additional destinations. We have implemented additional measures at the airport in coordination with the relevant authorities in respect to social distancing and sanitization. The safety and wellbeing of our employees, customers and communities, remain our top priority.” Repatriation flights In addition to the scheduled services, Emirates will also continue to work closely with embassies and consulates to facilitate repatriation flights for visitors and residents wishing to return home. This week, the airline plans to operate flights from Dubai to Tokyo Narita (15 May), Conakry (16 May), and Dakar (16 May).* Health and safety on Emirates The safety and wellbeing of passengers and employees is Emirates’ top priority. In preparation for the resumption of flight services, the airline has already enhanced various precautionary measures throughout the customer journey.

At Dubai International airport, customers and employees will have their temperatures checked via thermal scanners. Protective barriers have been installed at check-in counters to provide additional safety during interaction. Gloves and masks are mandatory for all customers and employees at the airport. In addition, Emirates’ cabin crew, boarding agents and ground staff who interact directly with travellers will don personal protective equipment (PPE) including a protective disposable gown and safety visor. Social distancing protocols will also be implemented. At this airport, this includes physical indicators being placed on the ground and at waiting areas in the airport to ensure travellers maintain a safe distance. For health and safety reasons and to minimise interaction on-board, Emirates will offer a modified in-flight service that focuses on reducing contact and infection risk. Magazines and print reading material will not be available during this time. Cabin baggage have to be checked-in, and customers can only bring essential items such as a laptop, handbag, briefcase or baby items on board. Emirates has initiated a stringent safety programme to ensure aircraft cabins remain clean and sanitary. The airline’s modern aircraft cabins have been fitted with advanced HEPA air filters which remove 99.97% of viruses and eliminate dust, allergens and germs from cabin air for a healthier and safer on-board environment. After its journey and on landing in Dubai, each aircraft will go through enhanced cleaning and disinfection processes to ensure safety and proper sanitation.

Environment Agency – Abu Dhabi highlights its most prominent achievements in 2019 Annual Report challenges of providing real environmental security, as well as outlining our efforts to protect biological diversity and the environment. These priorities stem from the UAE’s keenness to conserve nature.

The Environment Agency – Abu Dhabi (EAD) today released a new digital version of their 2019 Annual Report, highlighting their key achievements to preserve the environment and biodiversity, combat climate change and work towards a sustainable future.

“We will strive to protect the progress and achievements of this country over the past few years in order to achieve truly sustainable development within economic, social and environmental dimensions.”

In 2019, EAD celebrated its 25th anniversary and the report looks back at the prominent initiatives and projects undertaken across several environmental sectors to improve the quality of land, air and the marine environment in Abu Dhabi. Heading into 2020, EAD has developed a national strategy to propel environmental efforts forward in the next 50 years.

One of the many achievements highlighted in the report includes EAD’S contribution to protecting the wildlife and natural heritage of Abu Dhabi. This includes monitoring the Arabian Oryx population in Abu Dhabi that has now reached 5,000, now the largest herd in the world, and protecting the dolphins that live in Abu Dhabi waters, including the Indian Ocean humpback dolphin of which the capital is known for having the highest number in the world. In 2019, EAD has also closely observed the number of dugongs in Abu Dhabi, with numbers reaching more than 3,000 - making it the largest population in the world. The same year, EAD collected reference samples of invertebrates that led to the con-

servation of 2,457 species, of which 100 species were not previously known in the UAE.

Abu Dhabi’s water and its sediments. In 2019, 18,000 groundwater wells were assessed across Abu Dhabi resulting in the launch of the Abu Dhabi Ground Water Atlas to improve the efficiency of groundwater use.

Another major highlight of the year was increasing the number of reserves that are managed through the Sheikh Zayed Protected Areas Network to include 19 land and marine wildlife reserves, that now cover 31 % of Abu Dhabi.

The agency has also played a transformative role in increasing environmental awareness among members of the public and targeted more students and teachers in 2019, with EAD reaching more than 85 % of students (around 1.8 million) in government and private schools based in Abu Dhabi.

In 2019, EAD and the Ministry of Climate Change and Environment launched the UAE National Framework for Sustainable Fisheries (2019-2030), which is the UAE’s first-ever national recovery plan for fisheries. In addition, two important commercial fishing methods were banned in the Emirate of Abu Dhabi – namely gargoor and ghazal.

Her Excellency, Dr. Shaikha al Dhaheri, Secretary General of EAD, concluded: “We will continue to work for more success and progress in 2020 with the implementation of our government’s vision to achieve a balance between economic and social growth and environmental protection. As always, the agency will work towards ensuring the sustainability of our natural resources and the continuity of a better life for future generations.”

As a regulatory authority and policy decision-maker, by the end of 2019, EAD had reviewed more than 2,000 impact assessment studies, 4,800 environmental compliance inspections and issued more than 2,500 environmental licenses for industrial, commercial and development projects and facilities.

EAD’s conservation efforts have also extended beyond the borders of the UAE. Another recognised partnership was the successful resettlement of Scimitar-horned Oryx in Chad and in 2019, EAD also expanded their reintroduction efforts to include the Addax and Dama Gazelle.

To enhance air quality efforts, EAD has continued to monitor 20 fixed and two mobile stations that compose the Abu Dhabi’s comprehensive air quality monitoring network. Abu Dhabi’s extensive network of marine water monitoring sites were strengthened, assessing the state and quality of

Despite dogs having a lower susceptibility to contracting the virus, he said that owners shouldn’t take a chance, and should disinfect their animals and surfaces with safe substances. “Cats can be infected even if they walk on a surface that carries COVID-19,” he said, adding that the virus stays in animals from between eight to 10 days.

Speaking in a virtual seminar organised by Dubai Police’s K9 Department recently Dr Ulrich Wernery, scientific director of Dubai’s Central Veterinary Research Laboratory (CVRL) said, “Recent studies showed that cats can catch coronavirus and are able to infect each other with it.

“As cats lick themselves, people should disinfect the surfaces, clean their pets and use safe disinfectant sprays. Always keep pets away from other pets as a precaution to stop the transmission of the virus,” he added.

“If a person is infected then it’s better to stay away from their pets,” he said.

Dr. Sandhya Shenoy, Specialist of Internal Medicine at Prime Medical Centre in Dubai, said that there are reports of pet cats, dogs and even a tiger in a New York Zoo testing positive for COVID-19 after contracting it from their carer.

“Cats are highly susceptible to the virus unlike dogs, therefore pet owners shouldn’t kiss their animals or put the pets very close to them as precautionary measure.”

“But there’s no evidence to suggest cats and other pets could spread COVID-19 to humans,” she said. “The spread is

from human to human.”

“The current spread of COVID-19 is human to human transmission and to date there is no evidence that companion animals play a significant role in spreading the disease.”

As a result of this she said no one should abandon or harm their pets out of fear of contracting coronavirus.

Despite this, Dr Proscevicius said, “You should wash your hands before and after being around or handling animals, avoid kissing, being licked, or sharing food,” he added.

“In fact the infected owner spreads it to the cat, and pets are side victims to the virus they do not propagate it.”

“When possible, people who are infected should avoid close contact with their pets and have another member of their household care for their animals.”

Vet, Dr Rokas Proscevicius of Modern Veterinary Clinic Dubai, agreed. “Cats have a feline form of coronavirus that is highly contagious to cats, called feline infectious peritonitis,” he said.

Major Salah Al Mazroui, director of the K9 Department at Dubai Police, said they have precautionary measures in place to prevent the spread of coronavirus by conducting thermal screening everyday on their staff, while disinfecting kennels and surrounding surfaces regularly.

“It causes severe and at times fatal illness but is absolutely not related to human coronavirus as those viruses are of different strain meaning they are connected only by name. “Most viruses are host specific, meaning if it is specific to cats like feline coronavirus, its main target is the cat.

“We made 40 isolation yards for animals at K9 in case we detect any infection of the virus among the dogs. We conduct tests for all trainees as precautiinay measure,” he added.

“Experimentally it has been shown to be able to infect dogs. But even in this case the virus is still absolutely different from COVID-19, the human virus, in terms of who it attacks and how it causes illness.”

What should I do if I have pets? • Wash your hands after handling animals, their food, waste, or supplies.

Dr Proscevicius added that there is limited data in terms of COVID-19 positive cases transmitting the disease to their pets but there are well documented cases of this happening.

• Practice good pet hygiene and clean up after pets properly. • Disinfect your pet and their places with safe materials

“All reported cases did not develop significant illness but most common clinical signs were sneezing, coughing, ocular discharge. One cat had gastrointestinal signs as well,” he said.

Continued air quality improvement in Abu Dhabi, with 62 percent reduction in nitrogen dioxide during the past 8 weeks

as nitrogen dioxide (NO2) had decreased further with a 62 percent reduction after a period of eight weeks, in comparison to a 50 percent decrease after six weeks. There was also positive figures in the levels of volatile organic compounds (VOCs) and carbon monoxide (CO) in the air. Examples of neighbourhoods that were observed within the vicinity of Abu Dhabi included: Hamdan Street which revealed a 57 percent reduction of NO2, Al Maqta with 78 percent and Khalifa City A with a total of 70 percent.

The Environment Agency - Abu Dhabi (EAD) announced there has been a continued improvement of air quality in Abu Dhabi due to government efforts to control human and traffic movement in the capital, as part of the precautionary measures undertaken to combat Covid-19.

BURPEES Are your ready for a full body workout? Burpees may look simple and straight-forward from afar but try doing a burpee for 30-seconds and you will find out how powerful this exercise is. Burpees work a wide range of muscles which boosts your cardiovascular fitness while improving strength and mobility. TIP: There are two steps to a classic burpee - a pushup followed by a leap in the air, or if you are up for a challenge, try throwing in a couple more press-ups to ramp up the difficulty. WALKING LUNGES This is another great exercise to work your glutes, hamstrings, and quads. The secret to doing lunges correctly is control. Step one leg forward and bend your knee to a 90-degree angle by lowering your hip. Make sure your knees and ankles are aligned. Gently lower your back knee without touching the ground and then press the heels of your forward foot to the ground and walk forward stepping into a lunge. With three sets of 20, your thighs will feel the workout. MOUNTAIN CLIMBERS Mountain climbers work your upper and lower body. 5 ways to get help in the UAE for your

Mental Health

‘Taaluf’ provides guidance and advice, in hopes of creating a space for positive mental health and behavioural practice during this pandemic.

As the coronavirus outbreak continues to destabilise people’s familiar way of living around the world, mental health and psychological well-being becomes more and more vulnerable. Many initiatives have been set up in the UAE to help you cope with any internal struggles you are having as a result of the COVID-19, in addition to those whose pre-existing mental conditions have been exacerbated by the pandemic.

2. Book a telehealth or video appointment with a psychologist at these clinics Several hospitals and mental health clinics are now offering the option to set up a secure video appointment with psychologists and psychiatrists.

We take a look at some of the ways you can reach out and get help, as well as the informational initiatives that have been set up to answer some of your general questions about how to deal with changes to your psychological well-being.

Gulf News called two clinics and found that the process is fairly straightforward. Both require you to set up an appointment, either by phone or online, with one of their available doctors. You will be registered in their system and you will then receive a secure payment link on the email you registered under.

1. Call the ‘Taaluf’ hotline in the UAE to get counselling

Once the payment is complete, your appointment is confirmed.

Taaluf is a new interactive initiative that provides family counselling for all community members, via four different channels. It was launched on March 31 to mitigate the psychological and mental health impacts of Covid-19, particularly as it pertains to quarantine and social distancing.

You will receive an invitation link to a video meeting, through applications such as Zoom (used by Camali Clinic) or Cisco Webex (used by German Neuroscience Centre).

The first channel is a hotline, available 9am until 9pm daily except for Fridays and Saturdays. You can call 800623.

Usually, the appointments will last between 50-60 minutes, but follow-ups can be shorter. Your prescription, should it be needed, will also be created electronically. They will require a copy of your ID, or your passport, and the original ID document will be needed to pick up your prescription from the pharmacy, or to have it delivered if that is an option.

The second option is ‘Taaluf’ video calls, offered via WhatsApp, with appointment bookings available through the Ministry of Community Development (MoCD) website. In addition, you can submit your enquiries in a written form through the MoCD website.

Here are some of the clinics and hospitals you can avail telehealth services: Lighthouse Arabia; American Centre for Psychiatry and Neurology; Prime Hospital; German Neuroscience Centre and Camali Clinic.

The fourth and final channel is ‘Taaluf’ Live, which is a continuous weekly live streaming service through the MoCD’s Instagram account (@mocduae) to discuss relevant topics of interest.

World recessions can result in you doing the job of two people; recognize that change against your career goals to ascertain if this is the push you needed to move out into a new reality. Tough times can bring sickness and hardship into the home life, placing unexpected demands and duties in your domain; recognize that as a subtle nudge to find a new and flexible approach to work-life balance.

Tough times, when combined with process-based approach allow continuous career shifts and tweaks, placing you at the center of choice. Step 4: Surround yourself with growth Know that you become what you are surrounded with. Surround yourself with growth and that’s what you’ll drive, attract and create. Expand your receptors; slow down, look at, listen to and feel with those who are genuinely happy and aligned in their career. Agitate every input of your career in order to create growth and change; approach this task with curiosity and watch what emerges. How great it is that you have time for this right now.

Tough times take us out of our career comfort zone to a place ‘on the edge’ where urgency, focus and precision reside. Facing tough times from the edge will have you stripped of distractions such as spare hours, an attitude of invincibility and a lack of focus. When you are in this raw and vulnerable state during tough times, robust change can occur. The world of work can become your oyster. Oysters do cultivate pearls. It is now every individual and every family’s responsibility. Any irresponsible behaviour should be abandoned.”

“The condition of people with chronic diseases and the elderly could worsen, just because a few people did not adhere to the social distancing rules and other preventive measures and ignored the most important principles of prevention, maintaining a safe distance and avoiding gatherings,” she added.

UAE visa violators now exempt from fines There is a three-month grace period after May 18 Visa violators will now be exempt from fines, the UAE government said on Wednesday. The order – which comes from UAE President Sheikh Khalifa bin Zayed Al Nahyan – stipulates that those with entry or residency permits that expired before March 1 will not have to pay any fines. In a statement to the media on Wednesday, Brigadier Khamis Al Kaabi, a spokesman for the Federal Authority for Identify and Citizenship, said that the order includes full waivers for individuals with expired residency or residency permits who are will to leave during a three month grace period after May 18.

World’s top tower runners sign up for Virtual Charity Climb to the Top of Burj Khalifa Asia No 1 Wai Ching and Irishwoman Gretta Beckett will take part in Friday’s Dubai Sports Council-supported virtual climb, which will raise money for children Soh Wai Ching and Gretta Beckett, two of the world’s top elite tower runners, will lead the charge as runners from around the world take part in Gulf for Good’s Virtual Charity Climb to the Top of Burj Khalifa on Friday, May 15. The Tourism Authority of Thailand (TAT), in collaboration with the public and private sector partners, is introducing an ‘Amazing Thailand Safety and Health Administration: SHA’ certification aimed at elevating the country’s tourism industry standards and developing confidence among tourists, including visitors from the Middle East. The project is part of TAT’s efforts to mitigate the impacts of the Coronavirus Disease 2019 (COVID-19) crisis and accelerate recovery in the travel and tourism sector. The Amazing Thailand SHA certification is to prepare Thai tourism operators to be ready for the return of tourism post COVID-19. “Thailand welcomes over 39 Million visitors annually, of which over 500,000 come from the MENA region, and their wellbeing is of utmost importance,” said is Pichaya Saisaengchan, Director of the Tourism Authority of Thailand for Dubai and the Middle East. “As the pandemic has currently halted the travel, we have taken this time to prepare ourselves for when restrictions are lifted. Among the achievements that the world presents on Endangered Species Day, which falls on May 15, the Al Ain Zoo is celebrating its success in preserving wildlife and its role in presenting the UAE as a global supporter of nature conservation and biological diversity. During its 52 years, the Al Ain Zoo has made great efforts that started with the conservation of the Arabian oryx in 1968, under the guidance of Sheikh Zayed bin Sultan Al Nahyan, may God have mercy on him, the first environmental leader in UAE in preserving wildlife. The zoo has now become a safe home for a 4,000 animals, 30% of which are threatened with extinction. Breeding programs not only increase their numbers but also preserve their genetic origins and diversity. The zoo’s efforts continue in breeding and caring for rare endangered species with a high risk of extinction, such as dama gazelleAddax, Arabian oryx,, Arabian sand cats, Scimitar-horned oryx and Arabian tahrs. Al Ain Zoo is the largest in the Middle East, a global center for research to protect and breed endangered animals, in cooperation with international partnerships and institutions such as the Word Association of Zoos and Aquariums (WAZA), the European Association of Zoos and Aquariums (EAZA), the International Union for Conservation of Nature (IUCN), the Species Survival Commission (SSC), the Royal Zoological Society of Scotland, the Lewa Wildlife Conservancy – Kenya, the Sahara Conservation Fund, and Marwell Zoo. The zoo’s efforts extend to many fields, such as education and cultural awareness, through conservation festivals, student camps, university student training, scholarships, and school visits to the zoo, which reaches more than 40,000 annually. Continuing the Zoo achievements and accomplishments, Al Ain Zoo has recently adopted the application of artificial intelligence in the identification of animals. It also received a WAZA letter of excellence and importance for its distinguished efforts to protect its animals during the COVID-19 crisis.

Soft Nutella and banana cake INGREDIENTS:

INSTRUCTIONS:

200 g Nutella

Put the Nutella, flour, eggs and melted butter into a bowl.

80 g dark chocolate, previously crushed

Whisk together.

Put into 4 cups or a 4 cm-diameter mould.

In each mould, incorporate 3 to 4 slices of banana and 1 soup spoon of crushed dark chocolate.

Bake in an oven pre-heated to 160°C for 12 to 14 minutes.

You can serve with a scoop of ice cream and whipped cream!

1 banana, sliced

100 g flour

1 egg

1 egg yolk

20 g softened butter

Marcel’s roast chicken

INGREDIENTS:

INSTRUCTIONS:

Rub the ½ lemon all over the inside and outside of the chicken.

Put the butter, thyme, garlic, lemon juice, 4-spice mix and salt in a bowl and mix.

1 free-range chicken 1.2 kg

½ lemon

125 g softened butter

Incorporate the spicy butter mix under the chicken skin and inside the chicken.

2 garlic cloves, peeled and finely chopped

Pre-heat the oven to 200°C.

Leaves of 3 sprigs of fresh thyme

Put in a roasting tray and cook in the oven for 15 minutes.

Lower the temperature to 170°C and baste the chicken with the cooking juice every 10 minutes until the end of the cooking time: 1 hour 20.

Preferably serve with potato purée or small new potatoes and a few green asparagus cooked in salted water.
