Letter from the Editor
I
don’t know about you, but this week I’m feeling a certain sense of pride as the UAE, the country that I have called home for almost five years now, gears up to celebrate 41st National Day. All over the city, there’s a sea of black, red, green and white whether it’s plastered on cars, dangling from lampposts, draping from villa’s or adorning the city’s bridges. The whole place looks like something out of a fairy-tale with twinkling lights draped around trees, flags and streamers trailing from cars and a real party atmosphere! In keeping with National Day festivities, we capture the Spirit of the City by taking a look at some memorable Al Ain moments from years gone by and chatting to residents about what National Day means to them. We also speak to Jassim Al Bastaki, an Emirati entrepreneur who has developed his business over the past few years using something central to Emirati heritage – camel milk. With the weather cooling down just in time for the celebrations, we take a look at Al Ain Zoo’s winter safaris where you can send the kids for a funfilled educational experience. As always, we have the latest news and sports from around the city as well as whole lot more to keep you entertained. GOOD NEWS FOR MOTORISTS Drivers can now pay their traffic fines in monthly installments! A new system, effective from last week for a limited period of time, means motorists can pay 50 per cent of their total fines up front, and then take advantage of paying the remainder in monthly installments! Unfortunately those with only one violation or driving company cars cannot make use of the new system.
Motorists have also found themselves having their licenses revoked after reaching the maximum 24 black points thanks to careless driving in the city.

The evening kicked-off with a 45 minute run around the Hilton Hotel followed by an after-party honoring runners and everyone who has been associated with the community group over the years. The members were awarded certificates and gift hampers.

HCT HOST CITY’S Principals & Counselors
Al Ain’s Higher Colleges of Technology (HCT) Men’s Campus held its annual Principals’ and Counselors’ Day last week for local secondary and private schools across the city. The aim of the initiative is to provide principals and counselors with information about HCT College programs, admission requirements and state-of the art-facilities. Mr. Tim Smith, Director of Al Ain Colleges,
explained their broader vision for prospective students, “We give them a great experience, an experience we know that make them valuable members of the workforce and the community.”

HAPPY National Day!
Holidays have been announced for the 41st National Day with the public sector enjoying a 4-day weekend (30Nov-3Dec) while the private sector can look forward to a 3-day holiday (30 Nov-2 Dec).
Ms. Debbie McGuire, a proud Brownies Troop Leader, explained “We are at the zoo following a culmination of over a year’s project that the Brownies did. They started off on a Brownies Quest and [it] culminated in a community project on endangered animals, specifically the Arabian Leopard at Al Ain Zoo.” The Brownies raised money by doing chores at home in exchange for their parents donating to the cause. Brownie Laila Hassan excitedly said “We made our bed; we did chores for our parents and they gave us money for that to give to Hector.” The girls were presented with a Certificate of Recognition from Al Ain Zoo and the project looks set to be continued by subsequent groups of Brownies.

Al Ain’s First Gold Dispensing ATM Al Ain Mall last week introduced the city’s first ever solid gold bar vending machine. The Gold To Go machine, itself coated in 24-carat gold, dispenses one, five and 10 gram gold bars as well as bigger, one ounce bars. It also dispenses six gold coins, of varying weights, engraved with with symbols of gold-producing nations such as Canada, South Africa or Australia engraved on.

Al Ain 7’s : A Great Day for UAE Rugby Al Ain Ambler’s Rugby club hosted their annual 7’s tournament last week with teams travelling from across the emirates to compete in the event which served as a trial for this week’s Dubai Rugby 7’s. The Jebel Ali Dragons stormed to victory beating the Hurricanes 31-0 in the cup final. The Dubai Wasps also put in a resounding effort and picked up ‘The Plate’ for their performance.

In the women’s group, it was Dubai Hurricanes who took home the title with an impressive win Abu Dhabi Quins. One of the highlights of the day was the Under-16’s game between Al Ain Amblers and the all-Emirati team, Al Ain Amblers Wolves, who have only been playing ruby for two months. Although the Amblers took the victory, the Wolves put up a good fight and were highly commended for their effort.
His Excellency Mohammad Rashid Al Nasseri, General Manager of the club, was on hand to present the winning players with their silverware before an evening of dancing kicked off with entertainment provided by local rock band Desert Groove.
UAE Shine in GCC Shooting
The UAE shone at the 12th GCC Shooting Championship held at Al Ain Equestrian, Shooting and Golf Club last week. Yasmin Tahlak took gold in the women’s 10m air rifle juniors competition with a UAE record breaking score of 394. Mohammed Al Shamsi won gold in the 25m standard pistol shooting with a score of 561. In the team event, the UAE came in second place, just behind Saudi Arabia while in the male junior trap they scooped the bronze medal. The final day of shooting added to the impressive haul of medals collected throughout the tournament by the UAE squad.

Endurance Victory for Team ATR1 Team ATR 1 crossed the finish line first in last week’s 6 hour endurance race at Al Ain Raceway. With 13 teams competing, the atmosphere was electric as the karts set off and an early 3-way tussle between UAE Arrow Racing 1 and 2 and DXP Racing kept the crowd wholly entertained for the first 80 minutes. Team ATR1 made a tactical early stop 35 minutes prior to the other teams, a move that proved to be inspired. DXP Racing chased hard after ATR1 with Sam Zian whizzing round the track and setting a record lap time of 1:23.753. Yet, Hussain Umid Ali wasn’t to be caught and crossed the finish line after 249 laps to bring victory for ATR1. Captain Dan Price gushed, “This is just incredible…we made a brave choice to pit so early but it paid off.” With DXP in second place it was left to UAE Arrow Racing Team 2 to scoop the third spot. The beloved father and leader of the UAE once said, “He who does not know his past cannot make the best of his present and future, for it is from the past that we learn.” In light of the country’s 41st National Day, we take a look back at some of the most memorable moments from Al Ain’s past 41 years. 2ND DECEMBER 1971 The United Arab Emirates is born with Al Ain’s previous leader His Highness Sheikh Zayed bin Sultan Al Nahyan as President. 1971
Although the first school in Al Ain, Al Nehyania Model Primary School, was inaugurated by Sheikh Zayed in 1959, a dramatic increase now takes place in the development of education in the city with free education, books, transportation and education for both boys and girls.

The first Arabian oryx breeds in captivity at Al Ain Zoo.
1973
The UAE launches a single currency to be known as the Dirham.
1976

ou know those times when you go upstairs to get something and by the time you get there you’ve totally forgotten what you wanted? New research has shown that having a stressful day job could be causing your brain to get smaller, thanks to the added pressure in your daily 9-5. Here comes the science bit…
Hit the Gym! Not only does it help you keep your ‘guns’, it also helps to increase certain elements that can encourage cell regeneration, boosting your brain power and stopping shrinkage!
Researchers analyzed brain tissue of deceased subjects and discovered that those who’d had stressful lives or faced depression had fewer ‘brain communication’ genes than those that didn’t. ubai is currently one of the hottest business epicenters for entrepreneurs looking to sow their innovative ideas and reap the flavors of success. As established businesses expand, new ones begin to open and the signs of the economic downturn are slowly but surely becoming a thing of the past. One entrepreneur, busy carving a niche for himself in Dubai’s thriving coffee scene, is Cafe2Go’s Director General Jassim Al Bastaki. Cafe2Go is a delightful little spot, nestled in the busy Murooj Rotana complex opposite Dubai Mall offering a comfortably quaint, quiet atmosphere and some delicious, high quality beverages. What makes it different than many of the other coffee shops out there is the extensive use of camel milk. Camels have always been an important part of Emirati tradition and Jassim felt that the UAE’s love for coffee could easily be combined with its love for camels to effectively produce and sell delicious, wholesome camel milkbased coffee.
Four years ago, this ambitious man commenced the long journey of trying to get his idea off the ground, approaching international franchisers in a bid to persuade them to collaborate with him. He received rejection after rejection, no-one wanted to invest the high financial capital he required when the economy was shaky. Thus, having a business brain himself - Jassim holds a degree in International Hotel Management- Al Bastaki decided to overcome these setbacks by launching his own trade name and café franchise. Since then, his never looked back. Mr. Al Bastaki was keen to use his company to highlight the heritage and culture of his country while establishing its place in the modern world and a coffee shop serving camelccino’s seemed an ideal way in which to do so! Not only does camel milk offer bounteous

health benefits, it’s locally produced making it very economical, “We have our own major product; it’s healthy, traditional and financialfriendly,” he explains further. Launching a business from scratch presented quite a few obstacles not least of which was the cultural thinking of relying on familiar names and brands rather than trying something new. “The majority of people prefer trade-names coming from outside. They don’t want to try new things and hear new names.” Yet, determined as ever, Jassim worked tirelessly and has now successfully established Cafe2Go in Dubai’s coffee market. Having a background in business, Jassim realized his challenge wasn’t an easy one and that a lot of hard work and determination would be required. Now, with things “rolling smoothly” he can start to take his foot off the pedal a little. One advantage that Cafe2Go has over other coffee shops are the health benefits contained in their beverages. “Health benefits of our product compensated to what our competitors had” Jassim explains but “we struggled a lot in finding the perfect coffee blend for camel milk to taste better.” After a lot of experimentation, we “now have our own secret recipe.” The whole team work to create the signature drinks on a daily basis and Al Bastaki says “It’s not an easy product to handle but here at Cafe2Go we now know how to handle it!” Jassim ensures that he plays an integral role in the daily working of the business and advises, “If you’re not going to involve yourself in a business, do not start one.” He keeps a close eye on every aspect of his business, making sure that he invests quality time, money and knowledge before offering products to his customers, “No new product is offered to clients until I personally test it, at least three times, then get my close friend’s opinions and feedback. Only then does it get launched.”
This hands-on involvement has certainly been fruitful and the company now boasts their flagship café, another walk-in branch on Sheikh Zayed Road, a van that delivers throughout the city and is in the process of introducing a new drive-through café. The company is also in the final planning of a Camellos outlet which will offer the usual camel-milk based coffee, tea, milkshakes and smoothies, as well as camel milk cheese sandwiches, camel-meat fajitas and camel milk based gelato. In the future, Jassim hopes to bring the venture to the Garden City commenting on the “big buying power of the city thanks to the culture of the people there.” Despite having his hands full expanding and
developing his venture, Jassim makes sure he takes time out of his busy schedule to spend quality time with his family. Whether it’s visiting the family farm, horse riding with his brothers or taking his three children on a family day out, he ensures downtime with his loved ones plays a huge role in his life. The soft-spoken, composed and determined Jassim Al Bastaki is certainly a figure of inspiration and we were lucky enough to hear some of his secrets for success…

f all the items in my classroom, I think that the whiteboard has got to be the most essential. I can’t imagine my room without it! It plays a role of some sort in nearly every lesson I teach. An incredible invention indeed! But have you ever thought about the history of classroom boards? I was pondering this myself so did a bit of snooping around on the internet and can now tell you a bit more about the humble boards historical legacy.

BLACKBOARD- The blackboard, or chalkboard, is said to have been invented by a high school headmaster in Scotland, named James Pillans, possibly around the very late 1700s. Although the exact date that Pillans began using the blackboard is still a mystery, it is known that he used it to teach geography. Smart guy!
Blackboards have enabled teachers to share ideas with large amounts of students at one time, as opposed to a single student at a time. There is no doubt as to why they became a revolutionary item. The only drawback is that some teachers and children are allergic to the chalk that is used to write on it. Likewise, this same chalk dust causes havoc with computers, thus a cleaner solution was needed. Welcome the whiteboard!

WHITEBOARD- Although the whiteboard, or erase-board, first appeared in the market in the 1960s, its acceptance and evolution was a bit slow. It didn’t become an educational hot item until the 1990s. Granted, the whiteboard’s true origin is debatable, but no one can dispute its worth in today’s classrooms. It is easier to clean, and the uses vary only as much as the teacher’s imagination!
But wait, there’s more! The board just got smarter! Now let’s welcome the Smart Board.

SMART BOARD- The SMART Board was introduced by Smart Technologies in 1991, giving us the perfect blend of ‘computer and board’. This innovative tool is an interactive board that allows the user to maneuver around a software application by simply touching the projected image on a big screen.
Needless to say, as all technologies have advanced, so has the means of education. For example, online students have reached a remarkably high number, and as a result, this online-necessity has brought us the Blackboard Learning System.

Sabbatical Program For Emirati Teachers

Abu Dhabi Education Council (ADEC) in collaboration with UAE University (UAEU), Zayed University (ZU) and Higher Colleges of Technology (HCT) has launched the New School Model Sabbatical Program for Emirati teachers. Global Education Management Systems (GEMS) and Centre for British Teachers (CfBT) have spent the past seven weeks with 152 teachers in an orientation program covering core elements of ADEC’s New School Model. This will be followed by a year-long professional development program designed to retrain these teachers so that they can resume teaching with new skills and knowledge. Participants will be awarded a postgraduate diploma on completion of the program. HE Dr. Mugheer Khamis Al Khaili, ADEC’s Director General, commented “I am pleased that esteemed UAE higher education institutions such as ZU, HCT and UAEU have joined as a consortium that will draw upon their collective experience and expertise to design, develop and put into operation a program that will result in a formal postgraduate qualification.” The Sabbatical Program is part of ADEC’s strategy to provide Emirati teachers with professional development programs that meet the highest international standards.
Schools Come Together for National Day
Abu Dhabi Education Council (ADEC) hosted an open day event at Al Forsan International Sports Resort on November 27th to commemorate UAE’s 41st National Day. The event was organized under the theme ‘Educated Generations Celebrating the Union’, and saw students from both public and private schools taking part in art, poetry, science and sporting activities as well as a number of cultural and heritage performances and a military performance from Al Bayariq students. Numerous organizations including Emirates Foundation for Youth Development, the Department of Municipal Affairs, Abu Dhabi Municipality, the Ministry of Culture, Youth and Society Development, the Environment Authority-Abu Dhabi, Emirates Heritage Club, Abu Dhabi Sports Council, Health Authority Abu Dhabi, the General Directorate of Abu Dhabi Police, the General Directorate of Civil Defense and Abu Dhabi Tourism Authority also participated in the event. HE Dr. Mugheer Khamis Al Khaili, ADEC’s Director General, said that the open day brought together a large group of public and private schools to show and express their love and loyalty for the UAE’s leadership. the festive season just around the corner you’re probably going to have a lot of partying to do! With everyone from Katy Perry to Cheryl Cole having their own ‘falsies’ on the market it seems like fake is the new fashion! Never worn them before? They can be a trifle tricky the first time you try to wear them so follow our step-by-step guide for stunning peepers sure to set off any festive outfit!
1. Check the fit! Before you go buying them, make sure you get a size that fits your eye. Measure the false lashes against your upper lash line, starting from the outer edge. If it’s too short, you need to find a longer pair. 2. Cut the lash. Chances are, most lashes aren’t going to be a perfect fit for your eye, after all everyone is different. As long as the lash is long enough you can pick up a pair of nail scissors and carefully trim off the excess from the outer edge (not the narrow inner end!) 3. Get the glue, steady your hand and place a thin layer across the lash band. Apply a little bit extra to the corners for extra staying power.

4. Blow gently on the lash for about 10 to 20 seconds so that it becomes a little tacky. 5. Grab your tweezers and use them to carefully place the false eyelash onto your own lash line leaving as small a gap as possible. If you don’t have a steady hand, this would be a good time to ask a friend to help. 6. Press firmly on both corners for about 30 seconds to give the glue time to set. That’s it! You’re almost done! Finally, if there are any gaps between the false lashes and your own, simply use a black eye liner to fill them in, making your new ‘falsies’ seem oh-so-natural!

Sago Ingredients 250 grams of sago seeds washed and refined | 3/4 cups sugar | 1 tbsp clarified butter | 1 liter water | 1 tbsp saffron threads | 1 tbsp cardamom | mixed nuts for garnishing Method: • Cook sugar over a low-medium heat until it turns brown. Add water and keep stirring until the sugar dissolves completely. • Add saffron threads and stir mixture over a low-medium heat. • Stir in clarified butter and sago seeds and cook on a medium heat for 15-20 minutes or until the seeds dissolve. • Mix in the cardamom and cook for 2-3 minutes. Remove from heat and cover. • Garnish with nuts and serve.
Regag Bread Ingredients 5 cups white flour | 5 cups brown flour | 1 tbsp salt | 5 cups of water | Stuffing: eggs, cheese or zatar (optional) Method • Mix all ingredients together to create a thin batter. • Heat a crêpe pan or flat griddle to medium heat. Take 2 cups of the batter and spread on the pan using a wooden spatula in a circular motion. • Add zatar, cheese or eggs to one side and flip the other side over the filling. Cook on both sides until brown. • Serve with tea.

10am - The team arrive at the park feeling slightly apprehensive but happy to have a day away from their desks and a chance to de-stress. 10:15 - After a warm welcome, we’re ushered to a meeting room where we watch a short video that gives us a full safety briefing for our day ahead. 10:30 - Lifejackets and helmets on and into the rafts we go! 10:50 - Both rafts successfully pass the training and make their way to the bigger, faster and altogether scarier runs. 11am - Raft Number 2 darts ahead of Raft Number 1 to go into the lead. 11:25 - With some encouragement from instructor Dan, Raft Number 1 gets back in front and the team clock up a great time in their next lap 11:40 - Raft Number 2 capsizes and all team members are thrown into the river! 11:50 - With some great teamwork, and a little help from instructor Yuba, all team members are back on board. Except Farid! 11:52 - Farid drifts further from the raft. 11:55 - Farid’s tiredness sees him flailing around in the water rather than attempting to get back on board. Good job he’s wearing a lifejacket! 12pm - Raft Number 1 are off again, soaked through but demonstrating great teamwork. 12:05 - Yuba finally gets a drenched Farid back on board and Raft Number 2 set off on their final round of the rapids. 12:30 - The whole team clamber out of their rafts, soaked to the skin but smiling ear to ear. Family Fun at Al Ain Zoo’s Winter Safaris
N
ow that winter is here, why not head down to Al Ain Zoo where the kids can take part in an exciting and educational winter safari, organised by the Zoo’s Education Centre.
The falling temperatures see the animals become increasingly active, creating an ideal, stimulating setting in which kids can learn more about some fascinating creatures. Kicking off on 16 December, children will get the chance to handle reptiles, feed giraffe, take part in animal enrichment activities, gardening, arts and crafts using recycled materials, races, team building and even a craft-camp! Kids will also get a behind-the-scenes tour of the Zoo with talks from some of the animals’ closest human companions – their keepers!

In a bid to help kids understand more about what goes on in the animal kingdom, Muna Al Dhaheri, Acting Chief Officer of Conservation & Education at the Zoo, explained, “Al Ain Zoo is committed not only to wildlife protection and conservation, but one of our primary objectives is also to educate the community – and younger generations in particular – about the importance of these efforts. The Winter Safaris present an opportunity for us to engage the UAE community with entertaining and educational activities in the inspiring setting of the zoo.” The Winter Safaris run from 8am to 1pm and are open to kids aged 7 to 12 years. The first safari will take place from 16 to 20 December and the second from 23 to 27 December. Participation costs AED250 per child, this includes a special Al Ain Zoo goody bag as well as drinks and snacks all week. Each Winter Safari session concludes with an awards ceremony where parents are invited to watch kids receive their certificates and view their children’s work. T
hey say when in Rome, do as the Romans; so it follows that when in Amsterdam, do as the Dutch do; grab your bicycle and get cycling!
That’s exactly what we did on our European adventure, driving from our base in Switzerland to Amsterdam, bicycles mounted on the roof of our trusty car. Arriving in the ‘Venice of the north’, so called thanks to its countless crisscrossing canals, we donned our helmets and got pedaling. Initially, the sight of hundreds of bicycles whizzing by was slightly mind boggling. While it’s impossible to know exactly how many bikes there are, city authorities put the number at well over 600000! Shiny racing bikes, battered old bikes, tandems, ouma fietse aka (old ladies bicycles), three wheelers and bikes with buggies in tow holding sleeping babies; the variety was simply endless! As well as a mass of canals, the city boasts some truly impressive architecture and over 1500 bridges. It’s not a big city; in fact all of the main tourist attractions are easily reachable by bike, so it’s fairly simple to navigate around. I’d recommend the Van Gogh Museum, boasting over 700 works and child-friendly exhibits, for a fantastic family venture. The Rijksmuseum, which holds the country’s largest collection of art and artefacts, including 40 Rembrandts and four Vermeers, was another of my favourites. Another fascinating family experience is the Artis Royal Zoo. One of the best kept secrets of Amsterdam and located right in the heart of the city; it was the first zoo in the Netherlands and, with its gardens, museums and library, soon became a vibrant center of social life. An absolute must see is the Butterfly Pavilion, covering a thousand square meters making it the largest in the country, it houses thousands of butterflies that are a joy to watch flittering through the air, settling briefly on flowers before taking to the air again as you wander freely through their world. Whether you prefer culture and history, the great outdoors, or just the relaxing charm of an old European city, Amsterdam by bicycle has something for everyone.
amazing were the three storey parking garages all over the city, exclusively for bicycles! Once we got into it, cycling around Amsterdam was the easiest thing in the world. There are dedicated cycling lanes on all roads, as wide as the car lanes and, while we did have one or two close shaves with speeding cyclists, this amused us more than anything else as it’s a bit less serious than the careless motorists we usually have to avoid back home! Bicycle bays are located all over the city, so it was super easy to park up and walk around. Bicycle theft is a bit of a problem and residents often spend more on their locks than the bikes themselves! It was fascinating to see the number of abandoned bicycles all over the city, some so long forgotten that plants had intertwined their branches through their spokes, making them
