ou may have noticed that in the last issue I was whining about my ailments – in particular a skin rash. Most editors in their initial salutation tend to talk about the weather and the wonderful topics about to unfold as you peel back the pages of their magazine. Let’s face it folks, we live in Al Ain where there are two types of weather systems during this time of year: hot and freakin’ melting HOT! If anything other than this should occur, I will be sure to mention it. As far as what’s going on in this issue is concerned, there’s the front cover and a table of contents to clue you in.
Now that we’ve cleared that up, I can go back to whining and talking about the most important thing at hand which is you, the reader. After last issue’s skin rash rant, an unbelievably wonderful thing happened. I received a call from the marketing department of Al Noor Hospital where a very sympathetic woman not only shared her concern for my health but arranged an appointment for me to visit a dermatologist at her hospital. Needless to say, I was completely humbled not to mention blown away! Not only was someone reading my letter, they actually stepped up to the plate to help out! I don’t believe that there is anything more heartwarming than the validation and compassion received from another human being in ones time of despair. To cap things off, that very same evening, I was approached by a gentleman in our compound who congratulated me on keeping my Director’s Note so refreshingly personal and connective.

ENVIRONMENTAL FRIENDLY SHOPPING
Indian express! Photo By: Mubash Muhammad Basheer, Al Ain
Do you opt for paper or plastic bags while shopping at the grocery store? Well, neither is a good choice. Did you know that 12 million barrels of oil were used to make 88.5 billion plastic bags and it takes four times more energy to make paper bags? The best way to help and protect our environment is to use reusable shopping bags made out of sack, cotton, nylon or durable mesh-like plastic. So be sure to place a few reusable shopping bags in your car so you have them conveniently ready for your next shopping trip.
Wacky MONKEY World BUSINESS
A woman from Kuwait has had her mobile phone stolen by a monkey. The woman, who has not been named, was on Umrah with her family in Saudi Arabia when her phone was snatched by the primate, reports Emirates 24/7. She was filming a video on the phone in the surrounding hills of Taif when the monkey emerged unexpectedly. The animal then grabbed the phone and ran before dropping and breaking it into several pieces. "I lost all records in the phone after it was damaged," the woman said. While such a case in Saudi Arabia might be considered an isolated incident, monkey-perpetrated crimes in other parts of the world can be all too common.
CAREER GUIDANCE
Are you applying for university in the USA? Understanding Early Decision (ED) and Early Action (EA) programmes can be one of the more confusing aspects of the application process. Restricted early application plans are ONLY beneficial if you have thought through your college options really carefully. You need a clear preference for one institution, and you must be extremely confident that you can meet all of their entrance criteria. Don’t just consider whether the college is a strong academic match; think about location, social or cultural aspects. 8

For students who are confident that there is one clear choice for them, successful ED applications save the time and expense of submitting multiple applications. However, if you are reliant on scholarships, ED does not give you as much opportunity to compare financial aid offers. EARLY DECISION CANDIDATES • Apply by 1st November • Receive an admission decision from the college early, usually in mid-December • MUST attend that college if they are accepted and the financial aid offer is acceptable • May still (and should be prepared to) apply to other colleges under regular admission plans

EARLY ACTION CANDIDATES • Apply by 15 November (dates vary, some are December) • Receive an admission decision from the college early in the year, usually January or February • DO NOT have to commit to that university if they are accepted – can decide by May 1. REMINDER: THE COMMON DEADLINE FOR EARLY DECISION IS 1ST NOVEMBER (EARLIER FOR SCHOOLS LIKE DUKE OR MIT). Brighten up your child’s future with Brighton College Many parents see the senior years at school as a time when the very best teaching is paramount to their child’s success. They believe that an outstanding classroom teacher in the crucial senior years can get their child the best GCSE and A Level results. However, academic success in Senior School and University begins in the Junior School. The academic rigor and creativity of the Brighton College Early Years and Key Stage 1 curriculum sets the foundation on which future learning will be developed. This is achieved by having outstanding, highly skilled practitioners who have taught in the very best schools in the UK and abroad. Learning to enjoy reading for reading’s sake, developing an intellectual curiosity, becoming numerate beyond their years and having an appreciation of the arts will lead to a more academically successful pupil in later years. Skills that are taught for the first time in the Junior School will be developed throughout the pupil’s time at the College. These very skills will lead to academic success in the future and the opportunity for a child to pursue a highly valued career. Numeracy and the ability to reason, observe and record information taught in Year 1 is actually developing the core skills needed for a graduate attempting to gain entry to medical school in 20 years’ time!

Date Palm THE TREE OF LIFE
Y
ou may be familiar with dates and might even know a thing or two about their nutritional value, but did you know that the date palm is the oldest fruit bearing tree on earth?
And do you know that the date palm is also a source of natural medicine and provided building materials for the Bedouins that inhabited many regions of the desert? The palm tree trunks supported the roofs of the lovely mud brick castles and towers. The ribs of the palm leaves were used to weave the walls of the huts or to provide the floating bulk of the interesting small fishing boats, called shasha. The garghour or domed fishing traps were also made from these palm leaf ribs before the advent of nylon and plastic. Dried palm leaves were tied together to make

barusti, which was (and is), used for a multitude of purposes: shades, roofs, separating walls, and enclosures. The fiber on the tree trunk was collected and used to make rope or to weave baskets, mats and the typical pyramid-shaped covers that protect food from flies. This tree of life was even mentioned in several Christian and Islamic writings and was an important part of many religious ceremonies. It was even considered sacred by the early civilizations of the Babylonians and Phoenicians. Dates are rich in Vitamin A and C, fiber, calcium, iron, phosphorous, sulfur, potassium, copper, magnesium and manganese. They are high in sugar and due to their rich nutrient content, are used to restore health to the anemic and frail. Muslims believed that Mary was asked by an angel to eat dates to give her strength and lessen the pain of childbirth when she gave birth to baby Jesus. Dates have been the staple food of the Bedouins for centuries and medical records showed low occurrences of many fatal diseases including cancer and heart disease among them. The Bedouins and others from Middle Eastern and Northern African countries also used date palms as a natural source of medicine to provide relief from the following ailments:
feature • Sore throat • Colds • Fever • Bronchial asthma by mixing dates with fenugreek • Use as astringent for intestinal problems • Counteracting alcohol intoxication • Used as an aphrodisiac by mixing dates with milk and cinnamon • Relief from poisonous bites by applying date paste to the affected area FACTS ABOUT PALM TREES IN THE UNITED ARAB EMIRATES •

A study conductecd by The Dubai Chamber of Commerce and Industry, disclosed that there are around 40 million palm trees in the UAE (placing the UAE fourth internationally for the number of palm trees) and that 40% percent of these are in Al Ain city. Palm trees cover 30% of the land allocated for fruit farming in the UAE Palm trees are given a great deal of attention in the UAE in both official and traditional aspects. Currently there are 10 private and government date factories across the nation. There are over 10 million palm trees in the city of Al Ain and this number is rapidly increasing.
In the UAE, seedlings are planted during two main seasons; spring (March-May), and fall (August-October), and experts
Other Medicinal Uses GUM FROM THE DATE TRUNK USED TO: Treat diarrhea, Genitourinary ailments THE DATE TREE ROOTS USED TO: Treat toothache DATE SEEDS ARE GROUNDED INTO PASTE TO TREAT: Ague (having both chills and fevers common with malaria), Skin allergy claim that the best season for planting the seedlings is in the autumn. The ripening of dates is distributed over a long season, starting in late May and lasting till late October, giving us almost five months to receive the full benefits from palm trees. Not many trees can claim to be as resource rich as date palms and the Bedouins exploited and used every part of the tree for centuries. w We tend to take these majestic gifts of nature for granted living in Al Ain, but perhaps after having read this article, you will look at the date palm with a newly acquired respect for all that they have and continue to give in the form of beauty and sustenance.

ried: Aromatic AntiFatigue Moor Mud Available at: Tips & Toes Description: This unique holistic, healing black magma dates over 40000 years. As warm aromatic Moor Mud is generously applied to the entire body, sore muscles, aches and pains are alleviated.
It is renowned for relieving pain from rheumatism arthritis helping to control cramps and boosts the body's immune System. This superb mud, offers a gentle thermal action which stimulates and invigorates the body bringing about a state of deep relaxation and well being. Review: Most people who've just completed a long-distance endurance event will know the agonizing pain that accompanies each step for days afterwards. As a reasonably keen athlete, I too suffered from this affliction. I usually just suffer in silence, with the occasional wince whenever I'm forced to navigate a staircase; however, after several rigorous work outs in determination to lose my pregnancy weight, I decided to place my recovery in someone else's hands. After a recommendation from a friend, I booked myself an Aromatic Anti-Fatigue Moor Mud Wrap at Tips & Toes. The treatment involved 16

being slathered in moor mud - a dark, peaty product that is prized for its revitalizing properties - then wrapped up in cellophane. Finally, you just lie there in this cocoon and let the mud work its wonders. After showering off the grime, I felt totally calm and re-energized. And best of all, the pain in my legs was completely subdued, transforming my gait from a pronounced hobble to a mild limp. I'm now a regular for this procedure at Tips and Toes and if you haven't expereinced it yourself, then let me say that this is one type of "mud slinging" you will really enjoy! Just AED250 for 45 minutes at Tips & Toes, 03 764 0511 you can experience this amazing treatment too. And while you’re there check out the other great services they offer!
7 stuff for men
Ways to look great (every day)
ELIMINATE WRINKLES The kind on your shirt, not your face, because nothing says, “I don’t care about how I look” quite like a frumpy button-down. Commit to a cleaner, more professional look, it’s easier than you think. For a quick solution, put aluminum foil under the ironing board cover. The foil reflects the heat back, which eliminates creases faster. ACCESSORIZE SMARTLY So many men's personal styles are evolutionary, not revolutionary. Don't be afraid to stir things up. Your style will never progress if you're not open to experimenting with accessories. As you boost your confidence, you may even develop a signature style that others will notice. FIGHT DRY SKIN Living in Al Ain can leave your skin dry and harsh, causing it to look dull and lifeless, while feeling tight and rigid. To help fight dry skin, after showering, make sure to pat, not scrub, yourself dry. Use a cream afterwards, which has more oil and less water than lotion. Slather up directly after the shower, when the water hasn’t evaporated off the skin which will allow the cream to lock in the extra moisture. WHITEN YOUR TEETH When picking an at-home whitener, use common sense and don't be fooled by false whitening claims. Simply put: Stronger bleach concentrations work faster. If you want a complete overhaul from a home kit, look for a carbamide peroxide concentration of at least 10 percent. But you can't just suck a strip and forget it. Use whitening toothpaste to keep the shine from fading, and a whitening floss (the plaque-heavy areas between your teeth soak up colors). Plus watch the coffee, juice, and wine; they're oral-bling killers. CLEAN YOUR NAILS Extend a clean, professional-looking hand on your first big meeting of the year. An easy, home remedy you can try is to easily eliminate discoloration with whitening toothpaste. The same ingredients and abrasives that brighten your teeth will brighten your nails. Rub a small amount on the top of each digit and leave it on for 1 minute. FIND THE RIGHT JEANS When buying jeans, keep two things in mind: fit and versatility. Invest in a pair of dark jeans that you can wear to work and on the weekends. You can dress them up with a blazer, or down with a T-shirt and leather jacket. But don’t neglect fit; guys have a tendency to go too big. Keep in mind that they’re going to stretch when you wash them. GET THE RIGHT SHOES You don’t need different kicks for every outfit, but you should have more than one dress pair, one gym pair, and one casual pair. Don’t limit yourself to black; shoes are an easy place to be creative. Try finding a great monk strap that you can wear with a suit or dark jeans. Cognac and burgundy colored shoes also offer tremendous versatility; which look great with a navy or gray suit.

passion for fashion
W By Mehak Alam
hat do you get when you cross a successful Emirati business woman, a devout wife, a hands-on mother, a shopaholic and a fashionisita? Muna Shaiban Ghanem Al Muhairi of course!
With no formal education in fashion, Muna Al Muhairi has shown creativity, innovation and success in the fashion industry. Born and raised in Dubai, Muna had a passion for fashion from a very young age, and started her own fashion design business while still living in her parent’s home. After she got married, she moved to Al Ain, started a family and became the Procurement Manager at the UAE University. Five healthy children later and still continuing to work full-time at the UAEU, Muna decided to fulfill her fashion dream and ventured into the fashion circuit. In 2009 she launched her very own shaila and abaya line and opened a boutique in Al Ain called Pinky. Then three short years later she opened her second business, Pink Nail Art Studio in the Garden City. “My journey may sound stressful and difficult, but when you are passionate about something, things just fall into place,” explained Muna who is so fanatical about the color pink (as apparent by the names of her businesses) that she designed her office using multiple shades of the color. Moreover, the fashionisita’s obsession with fashion and business is so intense that once she sustained the balance of maintaining two businesses plus a full time job, she launched her third business venture. Al Kahila, her latest development, is an online business (alkahila.ae) which specializes in a range of hand bags, abayas and casual clothing.

Al Kahila is a reflection of the rich and colorful Emirati culture. Inspired by the winning horse breed Kahila, from the ancient Arab World, Al Kahila products are unique in their own way. In addition to being the only custom-made handbags, accessories and clothing line for both men and women in the UAE, Al Kahila is an emblem of patriotism. “Nothing but the beautiful Kahila horse came to me as a symbol when we were planning the theme for my online fashion store. What better than endorsing our own culture and tradition”, shared Muna while talking about the dream-come-true launch of Al Kahila at the 2013 Dubai World Cup. “Sharing the VIP podium with Emirates Airlines, National Bank of Abu Dhabi (NBD) and Longines, was simply amazing.” Although she gained positive feedback for both her brand and her products, Muna believes that she has a long way to go in building a strong name for her brand in the UAE fashion industry. “Before venturing out to fashion market, I would like to know what people think of my brand and then plan ahead”, stated Muna who is making great use of her 15 years of professional experience and putting Al Khalia in the same league with other international brands. Al Kahila designs are special because of their chic and unique look. Muna showcases her own designs by wearing them and whenever she receives positive feedback on a certain piece; she modifies it to perfection prior to debuting it on the market. Her fashion inspiration comes from travelling and through life experiences. She is artistic, creative, imaginative, innovative and fearless. Plus, she is very personable and detail oriented when it comes to designing something unique for her clients.
“One satisfied customer means you have done your job well and it is a guarantee that there are more to come,” she explained. Muna’s journey may sound like it was easy, but like many other success stories, her's was full of trials and tribulations. She encountered many obstacles, failures and downfalls along the way and admits that a lot of her setbacks were caused by blindly trusting others and spending money with both hands at the start of her career. “I am more focused and serious now, I know what to do with money and business,” she concluded. Muna is a dedicated and passionate individual who demonstrates a great talent for creating beautiful masterpieces. She is currently busy preparing for her next fashion show being held at The Dubai Mall fashion arena, opening her first Al Kahila Fashion store and starting her new career with Abu Dhabi Tourism & Culture Authority (TCA). There isn’t a doubt that Muna Shaiban Ghanem Al Muhairi is destined for great things. We asked this determined entrepreneur to share some words of wisdom and to encourage our readers to never give up on their dreams!

THREE RULES OF WORK
A
lbert Einstein said, that there are “Three rules of work: out of clutter find simplicity, from discord find harmony, and in the middle of difficulty lays opportunity.” My closets are full of boxes of school supplies, toys, games, children’s furniture, and reams of paper that contain graphic organizers and other non-worksheet sundries. My school bags need some sorting through from the last school year. I am starting at a new school and my transfer papers don’t come in until the day school starts. Dr. Einstein’s advice is well-timed. While the time has seemingly lingered after a whirlwind vacation, it is now a shift to turn to work mode. One of my favorite ways of turning summer tides to fall faces is diving into and losing myself in the organizing and re-decorating of a new classroom. So with this come out the little sticker charts for jobs well done in the classroom, binders with ready-made plastic sheets to slip in the ever-changing schedules, and daily thoughts on lessons learned; especially for

me, as I navigate through the first few days of school with my new charges. With work on my mind, I decide to take a jump into delegating my authority. As cleaners, classroom designers, camera crew, newsletter editors, and student teachers, we are all going to have a busy time this coming fall. We will have the on-going work of picking up centers, arriving on time to circle lessons, and general housekeeping duties, but all-in-all there is quite a lot going on in Grade One this year. Making the transition to first grade from kindergarten is a joint effort with my students but I have a feeling that we are going to do just fine. As a worker among workers, I will be leaning on as well as being leaned on in the months ahead, I envision. In my experience, people in any occupation who do their best, make their work interesting by relishing in the satisfaction of a job well done rather than waiting for applause; because it may never come. But that doesn’t keep me from working. So, I would like to add three of my personal thoughts with humility to the great Dr. Einstein’s, “Out of hopelessness, find a tiny grain of faith, out of opposition find commonality, and out of insanity, laugh a lot.” Best of luck beginning a new school year to all of the educators who are the most unsung heroes I have ever known. It is in them that I find the sense that everything is going to be what it will be; which means it will be stellar.

Your business email address matters more than you think
F
Make the right first impression about you and your business
irst let me start by saying that there is nothing wrong with using free e-mail accounts. In fact they are terrific for many reasons and I have several accounts myself that I find very useful. Like anything else, used properly, free e-mail accounts are highly recommended.
All too often, I see CEOs with company websites using their own personal e-mail addresses to conduct business. Usually this is a result of ignorance or a lack of experience. When you use your joeshmoe@hotmail.com address for company business it: Undermines the company image Defeats development of brand identity Communicates smallness Looks unprofessional
If you already have a registered domain name for your business you should definitely be using e-mail accounts from your own domain web hosting account such as info@yourbusiness.com. Why? Because it promotes a positive image of your company and profession. When you think about it, doesn’t info@microsoft. com seem much more professional than bill.gates@yahoo.com? Absolutely. 24

I see a lot of company’s using Gmail, Yahoo or Hotmail accounts for business, even though they own their own website domain. Did you know that if you have a website, you can get a free email address with your domain name? It looks like yourname@yourdomain.com, which will give your business a much more professional look. You can get your email address from your web host. That’s the company you pay to host your website. Log in to your account and look for the email offering. Each web host will have this information in a slightly different place. If you can’t find it (or they seem to charge for it), call technical support and ask for the free email account that comes with your web hosting. Visible Logic, a Maine-based branding agency, recently completed an in-depth survey to prove that your email address says a lot about you and your company. The results were overwhelming. 70% of people think it matters, and a non-branded email address looks unprofessional. Name@yourcompany.com is essentially the gold standard of what people consider professional with more than 90% ranking this type of email address as “most professional.” No other type of email address garnered anywhere near that type of positive response. Some commenters described people who use non-domain level addresses as “lazy,” “cheap” and otherwise uncommitted enough to their business to be taken seriously? Why put yourself in a position where you have to overcome these extremely poor brand perceptions? You never get a second chance to make a good first impression, and it’s amazing how quickly people form opinions about you and your business just from the email address on your business card. If you’re one of the 30% who thinks it doesn’t matter? It does. Don’t take the risk of creating a negative perception of you and your business with something that is so easy to fix. Domain level, branded email, based on your name and those of your employees, create an immediate and favorable impression. Does anybody really want to do business with whoknowsyou@ hotmail.com? Survey says... No. So if you’re still using a free web-based email account for business, get professional! Get an email address that uses your domain name and start using it for your business today!

Box Appeal is Back in Al Ain
T
he Source, in association with Gulf News Broadcasting, Radisson Blue and Park Inn by Radisson Hotels, will be taking part in this year’s Box Appeal, acting as the official Al Ain Coordinator.
The Box Appeal asks people to give to those who need it most, by filling a provided box with a ‘shopping list’ of everyday items. Taking part is easy; participants pick up a box, free of charge, from any participating location in Al Ain, including The Source Towers, and return it filled with the pre-determined selection of household items. The boxes are then distributed to laborers throughout the country. It’s a small box but it makes a big difference! Creators of The Box Appeal, Radisson Blu and Park Inn by Radisson hotels, are setting their sights on beating last year’s total donation figure, through the introduction of new regions to the campaign. The Box Appeal will now include the Middle Eastern regions of Jordan and Lebanon – which join the UAE, Egypt, Bahrain, Qatar and Oman. In total, 15 Radisson Blu, Radisson Royal, and Park Inn by Radisson hotels will be encouraging the public across MENA, to get involved in supporting humanitarian charities. The charities working in conjunction with The Box Appeal 2013 campaign include; Red Crescent and UAE Red Crescent, I Love Qatar (Doha), Teach a Child (Beirut), I- Care initiative (Oman). Gulf News Broadcasting has also pledged its support for another year, across the radio stations; Radio 1, Radio 2, Hayat, Josh.

Last year, we collected over 300 boxes and this year we’re hoping to exceed that number....and that’s where the people of Al Ain come in. The Source team believes in Al Ain and is confident that the people of this amazing city want to help the country’s laborers just as much as the people in Abu Dhabi and Dubai. We’ve taken on the task of being the city’s official partner for the appeal, sourced the necessary boxes and recruited help from businesses across the city to insure that this year’s drive is the best ever. So simply collect an empty box from The Source offices, Lulu Al Kuwaitat, Al Ain Mall, Jimi Mall or Abela, take the shopping list on this page and spend around AED100 to fill up the box. Then, drop your box off at any of the pickup locations before October 31st and we’ll take care of the res t. We’ll be keeping an eye on donations across the city and featuring the appeal in the magazine, as well as checking out which schools are taking part. Teachers and students, we urge you to get involved and become a part of this wonderful cause. So take the magazine to school and start making a difference! Let’s see what the people of Al Ain are all about….we believe in you so let’s work together to give back to those responsible for building this magnificent country! ANYONE UP FOR A CUP OF
GAHWA?
H
By Mehak Alam
ospitality runs deep in the UAE culture and Emiratis are known for their hospitable nature when receiving guests and socializing with friends and relatives.
During my two decades in the UAE, I have had the great fortune and pleasure of befriending many Emiratis who have invited me into their homes on several occasions. And I must admit, regardless of the occasion, or the number of times I visited, their impeccable hospitality overwhelmed as they embraced me with the same warm welcome and love I received on my first visit. So you may be asking yourself, what makes the visit so special? Well aside from the incredible amounts of food served, they have a special way of serving coffee. I agree that coffee and the way it is served may not be a hot topic of discussion in other parts of the world, but in this country it is really worth talking about. Authentic Arabic coffee called Gahwa in the Arabic language, is prepared by roasting and grinding fresh Arabian beans and then adding a pinch of saffron, cardamom cloves and cinnamon to the blend. 28
The Source
Gahwa is served from a specially designed coffee pot with a long spout, called Dallah and small coffee cups called Fenjan. Traditionally, the coffee cups are only filled half way, but refills are a huge part of the ritual. The theory holds that it’s easier to drink from a cup that isn’t completely filled to the brim and a smaller portion also speeds up the cooling process. Gahwa is typically served unsweetened, alongside a bowl of sweet, mushy dates and prior to popping a date into your mouth; make sure to rinse it off in the water bowl kept next to the Dallah. The dates have been washed prior to being placed in the bowl but it is Emirati tradition to dip before eating. The combination of dates and coffee provide your taste buds with a sensational bitter-sweet experience. The host usually tastes the coffee first, to ensure that it is perfect. If it is a special visit, then the guest of honor will always be served the first cup, and at causal gatherings, age generally takes precedence. The ritual of Gahwa consumption in this country is an art form and if you are offered a cup, you should politely accept; refusing may hurt your host’s feelings. If you are up for a second or third refill, simply lift your cup up when offered, and to indicate to your host that you have had enough, wiggle the cup from side to side before turning it upside down. Serving coffee in this manner is an indication that a guest is welcomed and honored and comes from Bedouin generosity and hospitality. So during your stay in the UAE, if you have the opportunity of visiting an Emirati household, be sure to remember these simple rules of etiquette!

ATKINS Diet Review
O
ne of the all time famous, yet controversial diets known around the globe is the Atkins Diet. It promises to not only reduce weight without hunger in a lowcarbohydrate diet, but also improve cardio health and memory function among other wellness benefits.
Drastically restricting carbohydrates to a mere fraction of that found in the typical diet causes the body to go into a state of ketosis, which means it burns its own fat for fuel. A person in ketosis is getting energy from ketones; little carbon fragments that are the fuel created by the breakdown of fat stores. When the body is in ketosis, you tend to feel less hungry, and thus you're likely to eat less than you might otherwise. As a result, your body changes from a carbohydrate-burning engine into a fat-burning engine. So instead of relying on the carbohydraterich items you might typically consume for energy, and leaving your fat stores just where they were before, your fat stores become a primary energy source. The purported result: weight loss. In slightly more detail, consider what happens when you eat a highcarbohydrate meal. Sugar from the carbohydrate quickly enters the bloodstream. To keep the blood sugar from rising too high, the body secretes insulin. Insulin allows the extra sugar to be stored in the liver and muscle as glycogen, but these stores are rapidly filled to capacity. The insulin then converts
30
The Source
According to the Atkins theory, if the body keeps on making "too much" insulin, as it tries to deal with the "excess" sugar, it may become less responsive to insulin and eventually may develop the metabolic disorder diabetes. The Atkins theory states that this should properly be called "unstable blood sugar" since the blood sugar level rises and then drops quickly. For most people, the carb consumption must be no more than 40 grams a day for this biochemical mechanism to occur. Although exercise isn't stressed, the Atkins theory holds that some people will need to add physical activity for ketosis to kick in. People are urged to supplement with vitamins, since they won't be getting them from sources such as vegetables and fruits. The plan allows you to eat foods that many dieters have only dreamed about. The diet is said to work even if other diets have left you feeling depressed and deprived. On the other hand, carbs are restricted (about 20 grams of net carbs per day in the first two weeks, which translates to three cups of loosely packed salad or two cups of salad with two-thirds cup of certain cooked vegetables each day.) There are no exceptions to these rules during the first two weeks because low-carb consumption (no fruits and only a few leafy green vegetables) is supposed to jump-start the weight-loss biochemical activity of the diet. You're not counting calories (in fact, you may be eating more calories than you were before). Later, the carb allowance is increased in the form of fiberrich foods, but you do not return to eating refined sugar, milk, white rice, white bread, white potatoes or pasta made with the dreaded white flour. Those remain on a lifelong list of forbidden pleasures. The diet does allow for adding fruits, vegetables, and whole-grain foods after the two-week induction period. Then, over time, the transition from weight loss to weight maintenance is made by gradually increasing carbs so long as gradual weight loss is maintained. Exercise in all phases as part of a healthy lifestyle is now emphasized more than when the diet was first introduced. The Atkins Diet says that its eating plan can prevent or improve serious health conditions, such as metabolic syndrome, diabetes, high blood pressure and cardiovascular disease. When the diet was initially introduced it did face a lot of criticism however, it has changed and improved over the years. It now promotes more lean protein, fruits, nuts, legumes, and in some cases, whole grains and healthy fats.

ORLANDO

The unbeatable family vacation
Florida lives up to its “Sunshine State” moniker, with golden, sun-kissed beaches, juicy oranges, unique wildlife and exciting theme parks By Marianne Makdisi
t’s a long way from the UAE, especially with small children, but if you’re thinking about Florida as a US destination, the mileage is quickly converted to precious, fun-filled memories of what must surely be the ultimate family vacation. This summer, we took the plunge, and headed to a rental property near Daytona Beach, a town synonymous with stock-car racing and motorcycles; wide, drivable beaches; and arcades. There was a honky-tonk vibe when we lived in Daytona Beach a decade ago, and I was happy to discover there still is.
From here, we set about rediscovering central Florida, which, with two kids now in tow, meant braving Orlando’s parks, in the heat. But hot weather is relative; compared to summer in the desert, the weather was almost pleasant, with several muchwelcomed thunderstorms thrown in to cool things off. (The area isn’t called Lightning Alley for nothing.) Of all the many child-friendly, wallet-emptying attractions that 32
The Source
Orlando has to offer, there was one in particular that my sons really wanted to visit. And you might be surprised to hear it wasn’t Disney. They had their hearts set on Titanic: The Experience, in which you become a passenger on the most famous ship ever to set sail. It’s a blockbuster exhibition, with authentic artifacts reclaimed from Titanic, a scale replica of the famous staircase, a recreation of the cold deck in the ink-black night, and informative storytellers in period costume. Moving and thought-provoking, the guided tour is a must. HIGH THRILLS Another highlight, for my oldest son in particular, was SeaWorld, because that’s where he experienced his first white-knuckle rollercoaster, the Kraken. All was going well, until the floorless sea serpent coaster was unleashed and my son decided he wanted to get off. “You can’t,” I exclaimed, imagining the scene I’d have to create to stop the ride mid-roll. “It’s very gentle,” I lied. The ride gathered speed and we hurtled round, plummeting down a 144-foot drop, through two loops, a dive loop, a zero-G roll, a cobra roll and a corkscrew. “You okay?” I asked as we got off, clutching each other’s hand and wondering which way was up.
my world
the exhibit opened and we walked right up to the iconic, black-andwhite spacecraft. “Yes, it’s real,” my husband confirmed, and it was as much as I could do to not start clapping. WALK ON THE WILD SIDE Beyond the theme parks, Florida is a wildly natural place and we were determined our boys would experience all the beauty the state has to offer. The alligator farms, citrus groves and swampland populated with abundant wildlife are all unforgettable natural attractions and you can’t go far without coming across a picturesque lake, or springs dotted with moss-laden cypress trees.
Cape Canaveral’s Kennedy Space Centre “Yesssss!” he replied, eyes shining. Now hooked on adrenalinefuelled rollercoasters. (Keep in mind that rides like this are height restricted and not suitable for guests under 54 inches.) Of course, you can’t bring children to Florida and not take them to Disneyland, so we introduced them to the delights of Animal Kingdom, the largest of the four main Disney theme parks. (There’s also Magic Kingdom, Epcot, Disney’s Hollywood Studios, Blizzard Beach and Typhoon Lagoon.) Set across a sprawling 500 acres of lush landscape, Animal Kingdom is our favourite park and home to more than 1,700 animals. There may not be a ton of rides, but you can go on safari across the African savanna in an open-air vehicle and career through the Himalayas on a speeding train (watch out for the Yeti). SPACE CENTRE Even with all this excitement, my most memorable moment of the entire holiday took place at Cape Canaveral’s Kennedy Space Centre, where you can relive man’s incredible adventures in space and experience America’s famed working space launch complex firsthand. Newly opened this year is the $100m Space Shuttle Atlantis exhibit. Presented as though it’s in mid-flight, the Atlantis shuttle still bears all its scuffs, scorch marks and space dust from her last mission. “Is it real?” I gasped, eyes wide as the doors to
Blue Spring State Park near DeLand is well worth a visit, offers lots of activities and in winter becomes a refuge for the endangered manatee (huge, aquatic marine mammals that congregate in the warm water). Remarkably, there’s even a pristine wildlife refuge right by the rockets at Cape Canaveral. Some 500 different species exist here, including sea turtles who clamber onto the shore to lay eggs almost in the shadow of the launch pads. Spotting an alligator while being bussed round the space centre was a highlight of my boys’ day – and was upstaged only by the black-spotted snake and giant spider’s web we encountered on a walk in the woods.

book
review Haunting Fantasy-Some Kind of Fairy Tale by Graham Joyce, is a story about a young girl, named Tara Martin, who vanishes from her small town in the English countryside and then returns two decades later, not looking a day older. This incredible novel is about what it means to tell stories, what it means to believe in stories, and what it means to believe in anything. A meditation on loss, family, time, faith, reason, and the nature of storytelling that somehow also manages to be a riveting story itself.

Book Review Bluebird, is an aptly wordless tale of a boy and a bird. The story revolves around a young boy who is bullied, and while the teacher is oblivious, a bluebird sees all. He sings a merry tune. He plays fly-and-seek. He befriends the boy, and then he finds the boy new friends. All this plays out in a New York City landscape of melancholy grays and sky blue, and an unexpected, but welcome, flutter of violet. A rainbow of colors descends in the final pages for an enchanted, bittersweet ending.

Story Time Paid in full with one glass of milk One day, Ahmed who was selling goods from door to door to pay his way through school, found he had only one thin dime left, and he was hungry. He decided he would ask for a meal at the next house. However, he lost his nerve when a lovely young woman opened the door. Instead of a meal he asked for a drink of water. She thought he looked hungry and brought him a large glass of milk. He drank it slowly, and then asked, “How much do I owe you?” “You don’t owe me anything,” she replied. “Mother has taught us never to accept pay for a kindness.” He said, “Then I thank you from my heart.” As Ahmed left the house, he not only felt stronger physically, but his faith in Allah and man was strong also. He had been ready to give up and quit. Year’s later that young woman became critically ill. The local doctors were baffled. They finally sent her to the big city, where they called in specialists to study her rare disease. Dr. Ahmed was called in for the consultation. When he heard the name of the town she came from, a strange light filled his eyes. Immediately he rose and went down the hall of the hospital to her room.Dressed in his doctor’s gown he went in to see her. He recognized her at once. He went back to the consultation room determined to do his best to save her life. From that day on he gave special attention to her case. After a long struggle, the battle was won. Dr. Ahmed requested the business office to pass the final bill to him for approval. He looked at it, then wrote something on the edge and the bill was sent to her room. She feared opening it, for she was sure it would take the rest of her life to pay for it all. Finally she looked, and something caught her attention on the side of the bill. She began to read the following words, “Paid in full with one glass of milk.”
