We may not notice an overly abundant ageing demographic in Al Ain, since this is a very young city, but many western expats come from urban centers ripe with baby boomers that are now in their 60’s and adding to an ever increasing older global population. Where did the time go? I hate to admit it but I am no longer a young buck. Horsing around with my children and attempting to keep up while running with my fit wife on occasion, is a reminder of age creeping up on me! But then again, I am still plugging away at the Fitness 360 “just lose it” challenge and by the end of October, I should have the stamina of a teenager again – and maybe not! Let’s get back to the old people. We have all encountered those sweet, wise and peaceful seniors, whose calming auras make them an inspiration. And let’s be honest, there are also the gnarly ones that can turn moments into nightmares with a single encounter. How do we prevent ourselves from steering in the direction of old and miserable? My lovely, young and vibrant wife, Kaarin and I – just in case she’s reading this - were discussing the topic of ageing recently and her take was simply, I don’t want to get old! My response was a very sobering, prepare yourself honey, because whether one wants to or not, it is going to happen. I believe that we can all evade any ageing associated misery, by striving to live full lives with as few regrets as possible. Regrets are key here, and the root of much geriatric misery. Many years ago, when I was still a young man, I wrote a poem touching on the philosophy of growing old gracefully that I would like to share with our readers.

The Old Man and the Mirror An image in glass paints a picture With reluctance I greet it at times Though it speaks, it is speechless Foreign yet so related This familiar pantomime I followed this image through the years And as emotions of living did drown me No traces were seen of his tears Fear not the changes that life brings Rather welcome them without delay Growth and maturity cannot be achieved By tossing life’s challenges away

ASK THE TEACHER

Dear Sarah, Since the beginning of this school year, my son has been very withdrawn and unwilling to go to school. After continuous questioning as to the reasons for this sudden dislike for school, we finally discovered that he is being bullied by a couple of older boys. We now know who these boys are and my husband and I are furious to the point of wanting to take the matter into our own hands. Should we approach the boys or let the head of the school handle the situation? Dear Parent, The idea of finding out that your child is being bullied is enough to fill any parent with dread. This can manifest itself in a range of different emotions, varying from fury, as you clearly feel, to utter powerlessness.

Whilst it is completely understandable that you feel upset, taking things into your own hands by talking to the boys directly could end up making matters a lot worse for your child. It is far better to approach the Head of School with your concerns as soon as you possibly can. As the guardian of the school community, he or she will be far better placed than any parent to have a positive impact. An outstanding school will have a strong pastoral ethos, so that all pupils have a very clear understanding of what is acceptable and unacceptable behaviour - what is kind and what is cruel. The best schools also have an anti-bullying policy

that requires each and every member of staff to be vigilant in looking for the signs of bullying. In such a school, you can be confident that a complaint from a parent about bullying will be dealt with strongly, sensitively and swiftly. Combatting bullying is not simply about punishing wrongdoing. At Brighton College, we intervene immediately to break the power construct between the bully and victim, and seek to develop the language of assertiveness in all of our pupils, which is about displaying strength through kindness rather than aggression towards others. In short, bullying is insidious and must be dismantled with care, not met with fury. I wish you every success in working with your child's school to put an end to this unpleasant experience. Sarah The Source’s very own “Ask the Teacher” columnist, Sarah Wood, comes to us from Al Ain’s prestigious Brighton College, armed with a passion for bringing out the very best in the children she teaches. Sarah will be on hand in every issue of The Source to offer her professional advice on early childhood education best practices. Send your questions to asktheteacher@thesourceuae.com and see them answered here!

Goldfish Goes Under the Knife for Tumor Treatment

When a 10-year-old goldfish named George developed a tumor, its owners did something many would consider a bit extreme: they decided to have it operated on. The goldfish underwent a surgery last week to remove a tumor protruding from the fish’s head. The surgery was conducted by Dr. Tristan Rich, head of the exotic and wildlife veterinary team at Lort Smith Animal Hospital in Melbourne, Australia. To prepare for the surgery, Rich had George swim around in a bucket of water laced with anesthetic to knock him out, the hospital explained in a Facebook post. Once George was asleep, the doctor

AND THE

inserted a tube into the fish’s mouth to wash a lower dosage of anesthetic water over its gills. Rich removed the tumor and sealed the wound with four stitches. At the end of the surgery, George was given painkillers and put into a “recovery unit”: a bucket of regular water where he started swimming around soon afterward.“The surgery went swimmingly and George has now returned home with his loving owner,” the hospital wrote on Facebook.

Fake iPhones swarm the markets Phone fans in the UAE are being urged to be wary of counterfeit gadgets that are being sold in the markets. The Telecommunication Regulatory Authority (TRA) issued a series of advisories on Tuesday, cautioning consumers against falling prey to fraudsters selling fake iPhones. Cheap imitations of Apple’s latest offerings – iPhone 6 and 6 Plus – have hit the market, with many consumers complaining of being duped. TRA said in a statement that its officials conducted an investigation into reports of illegal and counterfeit iPhone 6 handsets on sale in the UAE. “As a result of the investigation, a series of counterfeit iPhone 6 handsets have been confiscated from various locations across the UAE. Based on the investigation, the TRA has issued a series of recommendations to the public to generate awareness of the trade of such illegal devices and to prevent their purchase,” a TRA official said in a statement. With the demand for the new iPhones reaching a frenzy, the fraudsters selling fake iPhones are having a field day. News Courtesy www.gulfnews.com

African Wild Dogs are also listed as Endangered under the (IUCN) Red List, with an estimated 3000-5000 free-ranging wild dogs remaining in Africa. Do you use iOS and still love apps from google and Microsoft? Porsche Design P’9983 Smartphone from BlackBerry Porsche Design and BlackBerry Limited have announced the new Porsche Design P’9983 smartphone from BlackBerry. The device integrates premium quality materials such as sapphire glass for the camera lens, forged stainless steel for the Porsche Design floating logo and chassis, and a special glass-weave technology for the back door. Furthermore, Porsche Design has collaborated with BlackBerry for the first QWERTY version with BlackBerry 10 with specially crafted glasslike keys with the durability of rigid synthetic material, and a special 3D effect with silver font characters. Blackberry Passport

Another Blackberry device recently launched is the BlackBerry Passport which is a pure productivity machine, and emblematic of the company's professional, business-focused mindset. It's packing powerful hardware, a slew of clever features, and a great foundation in BlackBerry OS 10.3, which is poised to give iOS and Android a run for their money -- if there are enough apps. The shape of the Passport could be a major flaw. The squat, square chassis makes the device great for reading and editing documents but it makes for a cumbersome user experience. The 4.5-inch BlackBerry Passport is about the same size and shape as a US passport. With a 13 megapixel camera, and 2 megapixel front cam, this 6.9 ounce phone is light, but still feels solid.

Universal wifi range extender TP-LINK’s TL-WA850RE is designed to conveniently extend the coverage and improve the signal strength of an existing wireless network to eliminate “dead zones”. With 300Mbps wireless N speeds, Range Extender button, miniature size and wall mounting design, extending a wireless network has never been easier. What’s more, its Ethernet port allows the TLWA850RE to act as a wireless adapter to turn a wired device into a wireless one.

But it's also 3.5 inches wide, which makes it wider than phablets like the 5.7-inch Samsung Galaxy Note 3 and the 5.5-inch iPhone 6 Plus -- both of which offer larger displays. If you are a hard-core BlackBerry devotee or can't do without a physical keyboard, this is the phone for you. 300Mbps Range Extender The TL-WA850RE is designed to conveniently extend the coverage and improve the signal strength of an existing wireless network to eliminate “dead zones”, help users maintain an existing wireless network and vastly improve the network’s coverage. With 300Mbps wireless 802.11n speeds, it is ideal for smooth HD video, music streaming and online gaming. For more information visit: http://www. uaegadgets.com/

WHAT IS

Eid al-Adha?

A

t the end of the Hajj (annual pilgrimage to Mecca), Muslims throughout the world celebrate the holiday of Eid al-Adha (Festival of Sacrifice). In 2014, Eid al-Adha will begin on or around October 4th, and will last for three days.

down his own life or the lives of those dear to him in order to submit to God.

What does Eid alAdha commemorate? During the Hajj, Muslims remember and commemorate the trials and triumphs of the Prophet Abraham The Qur'an describes Abraham as follows:

Allah has given us power over animals and allowed us to eat meat, but only if we pronounce His name at the solemn act of taking life. Muslims slaughter animals in the same way throughout the year. By saying the name of Allah at the time of slaughter, we are reminded that life is sacred.

"Surely Abraham was an example, obedient to Allah, by nature upright, and he was not of the polytheists. He was grateful for our bounties. We chose him and guided him unto a right path. We gave him good in this world, and in the next he will most surely be among the righteous." (Qur'an 16:120-121) One of Abraham's main trials was to face the command of Allah to kill his only son. Upon hearing this command, he prepared to submit to Allah's will. When he was all prepared to do it, Allah revealed to him that his "sacrifice" had already been fulfilled. He had shown that his love for his Lord superceded all others that he would lay 14

The Source

Why do Muslims sacrifice an animal on this day? During the celebration of Eid al-Adha, Muslims commemorate and remember Abraham's trials, by themselves slaughtering an animal such as a sheep, camel, or goat. This action is very often misunderstood by those outside the faith.

The meat from the sacrifice of Eid al-Adha is mostly given away to others. One-third is eaten by immediate family and relatives, one-third is given away to friends, and one-third is donated to the poor. The act symbolizes our willingness to give up things that are of benefit to us or close to our hearts, in order to follow Allah's commands. It also symbolizes our willingness to give up some of our own bounties, in order to strengthen ties of friendship and help those who are in need. We recognize that all blessings come from Allah, and we should open our hearts and share with others.

It is very important to understand that the sacrifice itself, as practiced by Muslims, has nothing to do with atoning for our sins or using the blood to wash ourselves from sin. This is a misunderstanding by those of previous generations: "It is neither their meat nor their blood that reaches Allah; it is your piety that reaches Him." (Qur'an 22:37) The symbolism is in the attitude - a willingness to make sacrifices in our lives in order to stay on the Straight Path. Each of us makes small sacrifices, giving up things that are fun or important to us. A true Muslim, one who submits his or herself completely to the Lord, is willing to follow Allah's commands completely and obediently. It is this strength of heart, purity in faith, and willing obedience that our Lord desires from us. What else do Muslims do to celebrate the holiday? On the first morning of Eid al-Adha, Muslims around the world attend morning prayers at their local mosques. Prayers are followed by visits with family and friends, and the exchange of greetings and gifts. At some point, members of the family will visit a local farm or otherwise will make arrangements for the slaughter of an animal. The meat is distributed during the days of the holiday or shortly thereafter.

Look like theKardashians! Or Paint it like Demi Lovato

W

ith Eid around the corner and the festive season kicking off, its time to stock up on makeup essentials for creating the perfect cat eye, smokey eye, and that ‘Oh so dramatic’ evening look; just like your favourite celebrities. Here are some reviews of the latest products to hit the market. If you love staying bang on with the trends, then you know that this season eyes were the make-up focus on the Runways of New York, Milan and London. From liquid latex applied to the lids at Dior, to extra-long false lashes at Rochas and Gucci, make-up artists turned their attention to eye make-up while creating this season's catwalk beauty looks. We reviewed products from the Kardashian Beauty line and The New Black. If you like to keep up with the Kardashians or are inspired by Demi Lovato, then try these to create their signature looks. Deeply Felt (Precision Eyeliner) – AED 85

Tip

This one is easy to apply, even for those who aren't the best at applying eyeliner (like me). It tends to last all day and does not smudge. The colour is a very

deep black but has a bit of a matte effect when it dries out. The tip is smooth but some may find it a little delicate to use. The tip is fine and ideal for creating thin lines. Double Up (Double ended Eye Stick) eye shadow – AED 85 I have this product in Champagne/ Chocolate which is highly pigmented and has metallic undertones. What I liked about this stick is that it’s convenient to carry and apply. The shadows are creamy enough and don’t require a primer, but I always recommend using a moisturizer before applying makeup. They don’t smudge and are great for smokey eyes. The only con is that the darker colour doesn’t blend easily, leaving behind specs of glitter and can stain the skin, so make sure to have remover on hand, especially if you are in a hurry. They dry fast so work on one eye at a time; don’t leave the blending for later. Bardot Lashes (False eyelash set) - AED 50 These lashes are impressive for creating the cat eye look. The lashes come with a tiny bottle of lash glue. The good thing about these lashes is that they can be reused. Make sure you apply eye shadow before putting on the lashes and use the glue only on the lash line.

The New black - The Innovations in Color collection – inspired by Demi Lovato – AED 150 Purple is definitely trending the counters of makeup stores worldwide, so why not paint your nails with it. The collection inspired by Demi Lovato comes in a set of five and has everything you need for a glittering holiday nail art. The set includes shades of violet, along with metallic foil polish and clear crystal rhinestone studs. You can scan a QR code directly off the box to see demo videos online. All the products are available at Virgin Megastore outlets. And if you want to win some of these products make sure you pick up the next two issues of The Source!

stuff for men

Jeff Skinner

Are you reading this?

There is a great deal of difference between an eager man who wants to read a book and the tired man who wants a book to read – G.K. Chesterton

I

know I have arrived in the 21st century when I haven’t picked up a book in two years. Instead, with the flick of my finger, I’ve been able to read twenty or thirty books. Everywhere I go I have my iPad mini with me and it stores my completed books and soon to be opened books, all sorted in a colorful digital folder. The Eid celebration provides an opportunity for many people to reflect on an

important sacrifice and offers others a few days to catch their breath and relax. What better way to chill out than to grab a digital book and hang out in the shade. Books give us a chance to escape the mundane, learn a skill or reflect on life as it is or as it was. My current favorite book is from the co-founder of Pixar Animation Studios, Ed Catmull, called Creativity Inc. It’s a book about creative leadership. With research and the counsel of wise friends, I asked a few men an important question that I would like you to consider as well. What is at least one book all men should read within their life time? I’m not endorsing any of these books, rather simply offering a few topics of history, politics and adventure. This is a man’s list that will make you grunt, crush a can with your head, and go find your woman. The Alchemist – Paulo Coelo (Guinness World Record for most translated book by a living author) Count of Monte Cristo – Alexandre Dumas (Up to 30 adaption’s for TV and Film)

The Autobiography of Malcolm X – Alex Haley (Listed as a top ten most influential book in American’s 20th century) The Old Man and the Sea – Ernest Hemingway (Awarded the Pulitzer Prize for fiction in 1953) Two Cheers for Democracy – E.M. Foster (Influential collection of essays) I am including two books that are critical for the life expectancy of men. One is regarding relationships and marriage. Love & Respect: The Love She Most Desires; The Respect He Desperately Needs. Recommended by a friend, this is an influence from a Biblical perspective. Whether you agree with the Bible or not, there is great wisdom to be taken from this book. This next book is not a self-help book but rather a check-up. Are you unwilling to say no to others or always accommodating other’s needs? Either one of these can bring havoc to one’s life. Read Boundaries: When to say Yes, When to say No; to take control of your life. There is another version as well called Boundaries with Kids that changed my perspective on raising kids. Now I am ready to search the iBooks store and download anyone of these. Do your research, sit back and enjoy the holiday.

R.I.P. Clooney's bachelorhood George Clooney married Amal Alamuddin in a private symbolic ceremony at the Aman Canal Grande luxury resort in Venice, Italy on Saturday evening in front of family members and friends, his rep confirmed to E! News. They were married by Walter Veltroni, former mayor of Rome. The Oscar winner and his lawyer bride are expected to continue the celebration throughout the weekend and then file the paperwork that will make their union official on Monday. Crowds of fans gathered outside the area and screamed with excitement as many of their some 100 guests, which included celebrity friends such as Matt Damon and Bill Murray, traveled to the wedding via taxi boats. Clooney and his bride had arrived

in Venice on Friday and the two lovebirds then headed out for respective evenings of pre-partying. Amal enjoyed ladies night with her mom Baria, sister Tala and other female pals, while Clooney had dinner and drinks with a group of gents. Amal was spotted upon arrival in Italy from London on Thursday, flying into town with her mother, who has also accompanied her daughter on a number of prenuptial errands—including a perhaps very telling and lengthy stop at Alexander McQueen earlier this month. Clooney popped the big question in April after a whirlwind seven-month courtship, presenting Amal with a 7-carat emerald-cut diamond ring set in platinum, which was estimated to have cost $750,000.

Will you live longer lives than your children Childhood Obesity – a modern epidemic

“Because of the increasing rates of obesity, unhealthy eating habits and physical inactivity, we may see the first generation that will be less healthy and have a shorter life expectancy than their parents."-Surgeon General, Richard Carmona

T

he prevalence of obesity in children today has reached epidemic proportions and is with good reason now the No. 1 health concern among parents in the United States, topping drug abuse and smoking. Among children today, obesity is causing a broad range of health problems that previously weren’t seen until adulthood. These include high blood pressure, type 2 diabetes and elevated blood cholesterol levels. There are also psychological effects: Obese children are more prone to low self-esteem, negative body image and depression. How do you prevent overweight in children?

Reaching and maintaining an appropriate body weight is important. The healthiest way to change weight is gradually. That's why recommendations that focus on small but permanent changes in eating and physical activity may work better than a series of short-term changes that can't be sustained. The importance of continuing these lifestyle changes well past the initial treatment period should be emphasized to the entire family.

Balancing calories: Help Kids Develop Healthy Eating Habits Offer your kids nutritious meals and snacks with an appropriate number of calories. You can help them develop healthy eating habits by making favorite dishes healthier and by reducing calorie-rich temptations. 1. Encourage healthy eating habits. Small changes can lead to a recipe for success! • Provide plenty of vegetables, fruits and whole-grain products. • Include low-fat or non-fat milk or dairy products. • Choose lean meats, poultry, fish, lentils and beans for protein. • Serve reasonably sized portions. • Encourage your family to drink lots of water. • Limit sugar-sweetened beverages, sugar, sodium and saturated fat.

low-fat and low-sugar treats that are 100 calories or less: • A medium-size apple • A medium-size banana • 1 cup blueberries • 1 cup grapes • 1 cup carrots, broccoli, or bell peppers with 2 tbsp. hummus 1. Help your kids understand the benefits of being physically active. Teach them that physical activity has great health benefits like: • Strengthening bone • Decreasing blood pressure • Reducing stress and anxiety • Increasing self-esteem • Helping with weight management

2. Make favorite dishes healthier. Some of your favourite recipes can be healthier with a few changes. You can also try some new healthy dishes that might just become favourites too!

2. Help kids stay active. Start adding some of these physical activities to your own daily routine and encourage your child to join you. • Brisk walking • Playing tag • Jumping rope • Playing soccer • Swimming • Dancing

3. Remove calorie-rich temptations. Treats are OK in moderation, but limiting high-fat and high-sugar or salty snacks can also help your children develop healthy eating habits. Here are examples of easy-to-prepare,

3. Reduce sedentary time. Although quiet time for reading and homework is fine, limit “screen time” (TV, video games, Internet) to no more than two hours a day. The importance of continuing these lifestyle changes throughout your lives should be emphasized to the entire family. The healthiest way to change weight is gradually.

HOW TO MANAGE YOUR

INDIGESTION

I

ndigestion which is also called dyspepsia or an upset stomach is something people describe as discomfort in the upper abdomen. In itself, it is not a disease but a symptom of something the person is experiencing. This can include the feeling of abdominal pain soon after eating. It is usually a symptom of another digestive disease. Most indigestion cases can be treated through changes in lifestyle and medication.

Indigestion manifests as one or more of the following symptoms: •

Feeling full too early in a meal and not being able to finish eating

Feeling uncomfortably full after a meal; a sensation that lasts longer than usual

Discomfort in the upper abdomen that feels like mild to severe pain in the area between your sternum and navel

less. When indigestion is caused by an underlying condition; that condition can also have its own complications.

Bloating in the abdomen which feels like your stomach is too tight Rarely nausea, vomiting and belching

Mild indigestion can often be helped with lifestyle changes such as:

Sometimes people with indigestion also experience heartburn, but these are two different conditions. Heartburn is a pain or burning sensation in the center of the chest that may appear to go to your neck or back after you eat a meal. Indigestion has many possible causes. Indigestion with no obvious cause is known as functional dyspepsia or nonulcer stomach pain. Indigestion can be caused by the presence of digestive conditions such as gastritis, peptic ulcers, gallstones, constipation etc.

Dear Reader, Thanks for your question. I know many readers out there would like to quit smoking as well. 24

Often, indigestion is related to lifestyle and may be triggered by food, drink or medication.

Although indigestion doesn't usually have serious complications, it can affect your quality of life by making you feel uncomfortable and causing you to eat

With their strong Emirati heritage, the Al Ain Dairy is proud to be the premier supplier of high quality camel milk products in the UAE and soon abroad with export plans on the horizon. We sat down with CEO, Abdullah Saif Al Darmaki, to learn more about the astounding health benefits associated with camel milk products and to gain some insight on Al Ain Dairy’s plans for a global presence.

We all know camel milk is a vitamin rich food, but research is continually surfacing that touts some incredible disease fighting benefits of camel milk. Can you share some of those with us? “Yes, more research and information are becoming available around the world that point to camel milk as a facilitator in the healing of Diabetes, autoimmune diseases and autism, just to name a few, along with a laundry list of health benefits in addition to providing essential vitamins and minerals. It has been described by the United Nations as “Insulin for the Future”; the lactoferrin

and high presence of insulin type proteins and other nutrients contained in camel milk are known to have anti diabetic actions that positively affect the immune system. Camel milk contains tiny immunoglobulins that are significantly smaller than human antibodies which can penetrate and repair tissues and organs, resulting in viral and bacterial fighting abilities. This aids with autoimmune conditions such as Crohn’s Disease and multiple sclerosis. There is also growing speculation through independent studies that camel milk aids in the recovery of autistic children. Although no mainstream research has concluded a “cure,” many families have seen positive results in the development of their autistic children once camel milk is introduced into their diet. As a camel milk industry leader, we strive to be active participants in providing information to our customers on how our products can lead to a better quality of life.” Regular camel milk is said to be an acquired taste, do you have other options besides plain camel milk? “Our customers enjoy the unique taste of camel milk through our Camelait brand, but we understand it may take time to get used to, so we have developed additional

Camelait flavors that appeal to all tastebuds - including date, saffron strawberry, chocolate and cardamom flavors. We also have camel milk laban, and you will soon be seeing camel milk ice cream on the supermarket shelves. We have been anticipating camel milk ice cream; when can we expect that on the market? “We believe the 100% fresh camel milk ice cream is our most anticipated product launch to date and are striving to have it on the shelves later this year. It will be available in 2 sizes: 1litre tubs and 125 ml cups in 6 delicious favors: date, saffron, carmel, chocolate, diet vanilla and cardamom. These base flavors will be enhanced with a variety of decadent sauce ripples and mixed-in nuts. Consumers will notice a difference in the consistency of this luxury ice cream as it will be much creamier and richer than regular ice cream with the ability to satisfy even the most discerning sweet tooth.” What other new products are coming to market soon? “Another unique product you will see very soon is our powdered camel milk. There will be 2 packages available: a 400g pouch and a multi-pack with 25g individual pouches, ideal for a single serving of milk

As a camel milk industry leader, we strive to be active participants in providing information to our customers on how our products can lead to a better quality of life.”

or to mix in a cup of coffee. These packs will also be ideal for exporting.” You mentioned exporting – what are your exporting plans for camel milk products around the globe and how do you intend to accomplish this? “The domestic market for camel milk products is very successful and due to their tremendous health benefits, we feel momentum building abroad. With the successful launch of our Tetra Pak packaging earlier this year, we have gained approval from the Abu Dhabi Food Control Authority for extended shelf life on Camelait, fresh camel milk – this will give us the opportunity to export camel milk in its liquid form. We are also in the process of determining feasible options for exporting powdered camel milk as well. It is a lengthy, in-depth process that will take time to finalize, but we realize the international market potential and need to take advantage of this. We are honored to have the opportunity to showcase our UAE pride in exporting 100% Emirati products throughout the world. We see this as a means to not only introduce a product that we have known and enjoyed for centuries, but to also educate the international consumer on the inherent health benefits these products possess.”

CHILI CON CARNE INGREDIENTS • 1 large red onion, finely chopped • 2 tbsp. olive oil • 1 carrot, quartered lengthways and chopped • 2 garlic cloves, crushed • 1 tsp chili powder • ¾ tsp smoked sweet paprika • ½ tsp dried oregano • 500g/1lb 2oz best-quality beef mince • 2 tbsp. tomato purée • 1 x 400g Boiled kidney beans, drained and rinsed • 1 red or green pepper, seeds removed and roughly chopped • 1 x 400g/ best-quality chopped tomatoes • 500-750ml/18-22fl oz beef stock • sea salt and black pepper • 2 squares 70% dark chocolate, grated • small bunch coriander, chopped

TO SERVE • cooked rice • fresh coriander, roughly chopped • soured cream PREPARATION METHOD • Heat a large casserole or heavy-based pan over a medium heat. Add a glug of oil and once hot add the onion. Cook for a minute and add the carrots. Cook for 5-7 minutes, or until the onions are softened and translucent. Add the garlic and cook for a further 2-3 minutes. • Add the spices and the oregano and cook for two minutes, or until aromatic. Add the beef, breaking it up as it fries into small pieces. Cook for 3-4 minutes, or until brown all over and broken down into small pieces. Stir in the tomato purée and cook for two minutes.

Stir in the kidney beans and chopped pepper, stirring over the heat for 3-4 minutes to soften the pepper a little, then add the tomatoes and enough beef stock to slightly more than cover the meat. Stir everything round, scraping the bottom of the pan with a wooden spoon to unstick any bits from the bottom, and season with salt and pepper. Bring to a rapid simmer, reduce the heat to a gentle simmer and cook for 1½-2 hours, or until thickened and rich. If at any point the liquid level looks low then add a little hot water or any remaining stock. Before serving, add the grated squares of chocolate and stir through the hot chili con carne to melt. Taste and season with salt and pepper as necessary. Serve with rice and garnish the chili with coriander and soured cream.

TEX MEX NIGHT AT ZEST I must have some Mexican blood somewhere in my lineage, because when we were invited back to Zest at the Al Ain Rotana to review their Tex Mex night, I jumped at the opportunity. Executive Chef Louay and his culinary team were kind enough to share this delicious chili con carne recipe with our readers and as much as I love to cook, I cannot stress enough, the amazing experience of enjoying an evening of Tex Mex at one of my favourite dining spots in Al Ain. So if you are new in town and have not already experienced Tex Mex night at Zest, then head down to the Al Ain Rotana every Saturday night for a real treat! And remember, the chef and his crew are on hand every day of the week with a variety of theme nights to inspire every palate!

Redefining the

Scenic Route

Perched high above the Shenandoah Valley, in America’s dreamy Blue Ridge Mountains, Skyline Drive offers impressive views at every bend, with plenty of outdoorsy activities along the way By: Marianne Makdisi

my world

I

f there’s one thing my younger son is scared of it’s bears. So a little teasing went on this summer, when we visited Virginia’s Shenandoah National Park for the muchneeded relaxing part of our US trip. And, quite honestly, I could have moved into the mountain cabin we rented and embarked on a new career as a park ranger, wandering around the forests and hollows of the vast, almost whimsical park. According to local lore, Shenandoah was named for a Native American word meaning ‘Daughter of the Stars.’ Whether or not this is true, there’s no doubt it’s one of the prettiest places in the US. Shenandoah National Park’s scenic roadway, Skyline Drive, follows the crest of the Blue Ridge Mountains for 105 miles, and it was this main artery that we intended to drive. Slowly. The speed limit is 35 mph, and people stick to it. Shaking off our UAE driving habits, we rolled down the windows, felt the breeze and experienced every curve and turn of this spectacular drive. Along the route, there are 75 overlooks offering stunning views of the Shenandoah Valley to the west or the rolling hills of the Piedmont to the east. Each stop is a visual feast, and beckons you to park. Mountaintops have always appealed to me, and to see as far as the eye allows (not to mention witness rock climbers bravely hanging off the cliff-edges) is an aweinspiring and humbling experience all at once.

regularly cross Skyline Drive in their daily travels (hence the low speed limit). We were also told to look out for white-tailed deer fawns and bear cubs, which can be spotted in summer as they investigate their leafy environment. Although much to my son’s relief, the bears stayed away.

once, it would probably take about three hours on a clear day; we covered most of the route over our two-day stay and knew exactly where we were at all times, thanks to the mileposts, which help you locate facilities, lodging, campgrounds and trailheads.

If we’re lucky enough to visit again, I’d choose autumn, to see the brilliant fall leaves. Virginia’s mountains turn a kaleidoscope of colours as crisp fall days creep in from the west, and migratory birds fly southwards down the ridge. Or maybe I’d pick winter, to see the frozen sculptures created by tumbling waterfalls.

Entry onto Skyline Drive is $15, and the ticket is good for seven days. During the working week, it’s peaceful and uncrowded, although I did notice that at the weekend, the park filled up considerably (it’s easily accessible from Washington DC).

ROAD TO THE TOP Skyline Drive was built by President Franklin Roosevelt's three million-strong ‘Tree Army’ of unemployed young men during the Great Depression of the 1930s. From the beginning, park planners – capitalising on the new popularity of motor cars – called for Shenandoah’s greatest single feature to be a sky-line drive on which motorists could enjoy a leisurely drive through the Blue Ridge. Today, it’s traversed by RVs, camping trailers, horse trailers and daytrippers, as well as holidaymakers such as ourselves looking for easy hiking trails to do with our boys (there are more than 500 miles of trails to choose from in total). If you drove the whole of Skyline Drive at

Other than a couple of short hikes, we unfortunately didn’t have time to partake in any fishing, horseback riding or canoeing, but we did spend a day at the town of Luray, famous for its world-class caverns. Containing amazing natural formations, such as the ‘Throne Room’, ‘Giant’s Hall’, and ‘Fried Eggs’, the caverns are breathtaking. After all those fabulous bird’s-eye views, I highly recommend going underground – not least because you hear the sound of a ‘Stalacpipe Organ’, hyped as the biggest musical instrument in the world. Beat that Dubai! Marianne Makdisi is the author of the blog Circles in the Sand, about expat life in the UAE. Do visit at dubaiunveiled.com

The park deliberately leaves the roadsides unmowed so wildflowers put on a show all year long. June's display of azaleas is said to be spectacular, and the cardinal flower, black-eyed Susan and goldenrod keep the colour blooming right into autumn. We visited in summer, when the ridge wears its mantle of deep greens. Birds were nesting, and we kept our eyes open for the resident wildlife, including deer, black bear, wild turkey and a host of other woodland animals that call Shenandoah home and The Source
