On the occasion of National Day and in appreciation of the country that has welcomed us and provided a lifestyle that we are extremely grateful for, my son Joshua and I wrote a song called ‘Children of The UAE’, that we will be performing at the Brighton College National Day Celebrations on Monday December 1st. We are extremely proud and excited to be sharing our song and I would like to present it to our readers in this issue of The Source. Children everywhere are the single most important resource we have. They need and deserve all the encouragement and nurturing we have to offer, in hopes of establishing the brightest possible future for our planet.

ASK THE TEACHER Dear Sarah, Every day I do my best as a responsible parent to pack my daughter a lunch consisting of wholesome and nutritious food, and every day she returns home from school with her lunch barely touched. I do, however, find plenty of poor diet choice evidence in the form of junk food wrappers in her lunch box that she repeatedly receives from friends. I am very annoyed by this and wonder if it is a good idea to approach the school in hopes that they will see fit to set some guidelines as to the food students may or may not bring to school? It is always comm endable to hear of parental commitment to wholesome and nutritious food for their children. With childhood obesity and diabetes becoming increasingly common challenges facing our society, schools also need to act responsibly to ensure that the children in their care are fit and healthy. Of course, it is entirely reasonable that you, as a parent, are enabled to have control over what your young child eats at school. Having said that, 'policing' children's lunch boxes has already fuelled an international debate in the media; what happens if a parent tries to exercise their 'right' to provide less than nutritious food for their children? To what extent does a school have the right to intervene and stop a child eating food given to them by their own parents? Clearly, there needs to be a balance struck here. At Brighton College, we offer organic, non-processed food for the children, if

We take many opportunities in the school calendar to promote healthy eating and, if parents choose to provide packed lunches, then we do ask them to pack healthy food and not to encourage biscuits, cakes, chocolate or fizzy drinks. If parents are giving slightly less healthy packed lunches, then we do advise them how they can improve the nutritional value of the food that they provide. We also discourage children from sharing their own lunchbox with one another, understanding that there are children in the school who have allergies and specific dietary requirements, as well as respecting parents' wishes that their child eats the actual food that they have prepared for them. You are justifiably annoyed and it is worth approaching the school to ask for more support in this matter - for the sake of your child's health. Good luck! This Isn't Your Typical Apple Store

Just for a day, an "Apple Store" showed off neither phones nor computers but actual Apples. To celebrate its 1,000th anniversary last month, London's Borough Market turned a section of its indoor shopping hall into a display of 1,000 different apple varieties. The exhibition also marked the market's “Apple Day," a festival honoring the end of the harvest. It was up for just one day, on October 26.

The display, called a "Real Apple Store," was built in the style of an Apple retail store, including a glass storefront with a familiarlooking white logo: Inside were long, rectangular tables with rows of products -- in this case, apples. “This country’s love affair with the apple is no secret -- we have been eating apples

for centuries," David Matchett, market development manager at Borough Market, wrote in a statement. "However, there are some varieties under threat and we risk losing the diversity of this delicious fruit."

There was a special display for one of the world's oldest-known apple varieties, Court Pendu Plat. Every apple variety displayed had a placard about its history and flavor, including obscure varieties such as the aptly named Knobby Russet.

The newly opened healthy-fast-casual-global brand, FRESH Healthy Café, located on the first floor of Bawadi Mall, partnered with the community’s longest trusted healthcare provider, Oasis Hospital, to highlight prevention and education as part of the National Diabetes Awareness Month campaign. Ms. Traci Jackson, Head of Nutrition Services was on site at Fresh on November 20th, to provide a free lecture and consultation regarding Diabetes and healthy eating. Tawam Hospital Celebrates World Diabetes Day 2014

Danat Al Ain Resort hosted its annual corporate party on the 20th of November, 2014 at its spacious landscaped garden in the alfresco setting. Danat becomes first Al Ain hotel to receive Welcome Chinese Bronze Certification Tawam Hospital, in affiliation with Johns Hopkins Medicine and part of the SEHA healthcare system, held ‘Diabetes Awareness Day’ on November 22 as part of this year’s World Diabetes Day celebrations themed: “Diabetes: Protect Our Future”. This year’s World Diabetes Day activities at Tawam were designed to help residents, patients and their families learn how to make informed eating choices and discover how healthy eating can protect our collective futures and prevent diabetes. The Danat Al Ain Resort announced today that it had received the Bronze Certificate for Welcome Chinese standard from China Tourism Academy (CTA). Welcome Chinese Certification is the new hospitality Standard specifically dedicated for Chinese travelers. This certification guarantees that the Danat Al Ain Resort complies with the hospitality standards set by CTA and ensures uniformity in the quality of service. To qualify for a Bronze Certification, a hotel must broadcast Chinese television channels. Broadcasting these channels gives the guests the opportunity to always be informed about what is happening back home while enjoying familiar programs from home. wo days before the deadline of a flag design competition, a 19 year old teenager s t u m b l e d upon the advertisement in Al Ittihad newspaper s e e k i n g submissions for a national flag. Armed with rolls of colourful paper, a photo album and some measuring tools, he busied himself with the task of creating history. Abdullah Mohammad Al Maainah’s

final design was one of the very few designs from 1,030 entries chosen to be considered, and little did the young Emirati from Dubai know, that his creation was soon to become the symbol of his beloved nation. Soon after the deadline, local news papers published the few nominated designs but since the photos appeared in black and white only, Mr. Al Maainah did not recognize the colours identifying his design. When the Emirates unified on December 2, 1971, his winning flag was raised at the palace in the capital and the Union House in Dubai. In a country engrossed with the task of establishing itself, no one took the time to contact the winner and it wasn’t until several months later that he received official notice of his winning entry. Without any major ceremony, the boy was simply thanked and awarded 4,000 Riyals, since the UAE Dirham had not yet been born. No amount of money could have compared to the pride and satisfaction he felt on the day he finally realized he had won. They had raised the flag at Mushrif Palace and Mr. Al Maainah stood on his toes behind the fence, waiting for a breeze to lift the flag and reveal its identity. The breeze finally came and along with it, an indescribable moment of elation that would stay with the boy for the rest of his life! Now in his early 60’s, Mr. Al Maainah is the UAE Ambassador to Chile and on all his worldly travels, the flag never leaves his side. Being photographed with it, never fails to instill a great sense of pride and honour.

The flag displays three equal horizontal bands of green, white and black, respectively from the top downwards, while

the vertical strip of red is next to the mast. Al Maainah’s intention was to have the four colours represent Arabian unity, the theme of which appears in two stanzas of an Arabic poem by Safiul Din Al Holi. The poet described deeds of benevolence, goodness and kindness and wrote about the hardfought historical battles of the land. White represented benign deeds and intentions, while black stood for the vigour of many battles. Green represented the vast green lands and red depicted the gallant blood stained swords. Al Maainah, however, admitted that meanings change over time and his reasons for choosing the colours stemmed more from a local perspective. For him, black represents the oil that was instrumental in transforming this country; green for the fertile gardens and since white and red were already present in separate Emirate flags, he simply included them as a symbol of the expansion to a unified entity. We have seen the flag of this Nation, that is the home of so many proud and grateful people everywhere we travel in the UAE, but I am certain that many of us did not know the details of its birth – now we know!

t was that time of the year again, when the testosterone in every automotive junkie goes into overdrive, especially if that driving machine addiction involves the all too popular off-road, all American, dune bashing Jeep!

Western Motors, Fiat Chrysler, authorized distributor in the Emirate of Abu Dhabi and automotive member of the Al Fahim Group, held its annual Jeep Jamboree family day, at the Al Badeya Eyes camp on the weekend. An impressive crowd of over 218 Jeeps with nearly 500 participants from different parts of the UAE, as well as members from Fiat Chrysler Middle East, enjoyed the most eagerly awaited event by every Jeep owner. Additionally, other Jeep owners from across the Gulf Cooperation Council (GCC) also joined, having heard of the exciting happenings every year.

In spite of having been invited, I somehow failed to mark the date on my calendar last year and missed the action. That was not about to happen this year and just to make sure I was on the roster, I packed my gear, drove down to the Eastern Motors show room in Al Ain and slept in my faithful Astro Van the night before the event, to insure first ops on the object of my affection – the highly coveted Wrangler! My efforts paid off; being one of the first to arrive scored me a ‘black beauty’, long wheel base, 4 door Wrangler, suitable for the 2 adult and 2 child passengers ready to embark on the desert adventure. Ok, I didn’t really camp out, but I would have, had it not been for the all too kind team at Eastern Motors, who had pre-booked the jeep for me and insured that every small detail, including breakfast, was taken care of, leaving only the task of enjoying an adventure packed day with my 3 other passengers – and enjoy we did! The Al Ain chapter departed at 9:00 am and headed to meet up with the other enthusiasts at the Badeya Eyes Camp, where we congregated for a pre dune assault tire deflation and safety briefing, to ensure maximum enjoyment without unnecessary injuries to either vehicle or passengers. After 14

a brief refreshment pit stop, we were ready to hit the dunes and once again, just as I had remembered, it was an awe inspiring sight of all things jeep; “Jeeps to the left and Jeeps to the right, not a Land Cruiser or Patrol in sight!” I used that line in my article two years ago and it just doesn’t get old! Off we went convoy style, split into groups that best suited each pilots driving expertise and led by expert marshals from the popular Abu Dhabi 4x4 Club. Although the rule was to stay in convoy style during our trek, every now and then, a member of our group got stuck in the sand, which opened up an opportunity for some individual showboating as we waited for the marshals to free the unfortunate vehicle. On one such occasion, I couldn’t resist the opportunity of pushing my wrangler to its dune climbing limits and as I ferociously careened through the dunes, a glance in the rearview mirror alerted me to the grisly, Shrek-like green colour of my 5 year old son’s face. Oh no, daddies driving skills had proven to be a trifle too harsh for the tender belly of his offspring, and the mornings breakfast delights were now threatening to reappear all over the interior of our brand

new Wrangler! After some fresh air and a few slurps of water, the crisis situation had been averted and we were ready to continue the trek – albeit at a much calmer pace. In retrospect, I almost wish Jonah, my son, had unleashed the contents of his belly all over the back seat, as it may have been an ideal way of gaining ownership of that beautiful Jeep. It is near impossible to wash that particular stench out of a new car and I would have gladly driven it with the top off had they reluctantly handed over the keys!


special feature Back at camp, the party of satiated dune bashers congregated for continued fun and games. Kids challenged one another in a tug-of-war, romped on the jumping castle, enjoyed camel riding and face painting, among a multitude of other exciting activities. The ladies corner offered beautiful henna drawings, while delicious meals were served by Emirates Dalma Food Catering, another sister company and the catering arm of the Al Fahim Group. All guests were given fabulous prizes from the main sponsors of the event: Safar Travel & Tourism in collaboration with Etihad Airlines, Central Motors & Equipment, Michelin, Color Back, Abu Dhabi 4x4, V-Cool, ADRC (Pepsi), OBS Auto, and International Automobile Touring Club (IATC). As I drove back to Al Ain, with the sun setting on the horizon and two exhausted kids sleeping peacefully in the back seat of our sweet ride, I reflected on a day well spent thanks to our friends at Eastern and Western Motors. The Jeep Jamboree is a yearly event and if you haven’t already participated, be sure to get in on the fun next year – oh, and don’t forget; you will need a Jeep, and there’s a place right here in Al Ain that can help!

Ancient Rituals in New World Elegance

E

ver since moving to the UAE, I have wanted to experience the ancient Middle Eastern hammam bath ritual, which is said to improve blood circulation, reduce the appearance of cellulite and leave skin feeling silky soft. However, after doing some research on Youtube, I became a little apprehensive. Stout bath attendants scouring my limbs until they are raw as I lie on a bed of stone, hardly seemed relaxing. Nevertheless, when I was invited to the opulent Zen the Spa at Rotana Al Ain, my curiosity got the best of me and I booked the 60 minute Zen Hammam. If I was going to try this treatment, Zen would be the place for it. I was greeted by the soothing sound of water flowing from the fountains, soft meditative music and smiling receptionists, who promptly gave me a tour of the luxurious facility. Though they were fully booked that afternoon, there was no hustle bustle to upset the serenity of the place. The spa provides services for men and women while preserving complete privacy by way of partitions and separate entrances. It boasts several beautifully appointed treatment rooms as well as a suite to accommodate couples. Treatments include a variety of facials, massages, and body treatments, using high end Aromatherapy products. Chocolate marble corridors lead to separate male and female relaxation rooms adorned with shimmering curtains and comfortable chaise lounges to settle back on while you sip tea or juice before or after a spa treatment. She is the mother of two and teaches English at The Abu Dhabi Polytechnic University. I

don’t “hit” the gym or press the iron. Instead, once or twice a week, I sweat it out on the tennis court for a few hours. Every time I walk into my local gym, I felt like an idiot. There are people stepping up on stools or running on the spot and it makes me feel like I should be working out at home. The frightening padded machines have more extensions than I body parts. I decided to end my fear of the gym and talk with a few professionals. I wanted to know where I should begin and what I should know. THE LOCAL GYM Osama Mohammad is my local gym manager and also a personal trainer with a degree in nutrition and a bachelor's degree in physical education. As a beginner, I was encouraged to consider stretching exercises and cardio training on the treadmill, steps, or stationary bike for 10mins a day. Before using any machines or weights, I learned it was best to train using my body as a weight by doing push-ups, sit ups, or step exercises. After a few weeks, I would begin with the machine weights before free weights. This would help me learn the balance of weights and the safety of lifting. He encouraged me to lift weights that weighed half my body weight. I’m 74 kilograms so I should start by lifting 37 kilograms, using machines for my chest. After 2-3 weeks Osama encouraged me to move to free weights. THE MEGA GYM I met fitness coach Ken Tejada who had 18

the right questions to ask before moving forward. Why do I want to go to the gym? What is my medical history? What is my current body assessment – water weight, body fat, muscle?

Ken Tejada 20 years experience as a professional trainer. Now he is a fitness manager and program developer for a gym called Fitness 360, located at Al Foah mall. He talked me through the critical health process they require before picking up a weight or taking a fitness class. Ken helped me understand

Fitness 360 has questionnaires and devices to measure health. Whether I was working on core training for balance and posture, or I wanted to look like Schwarzenegger, I learned it was important to understand my body first. After the assessment, people are assigned a supervisor to guide them on the track of bulking up, slimming down, or toning up. The benefit of these mega gyms is that they offer all the latest equipment and hire personal trainers verses a local gym, that may not have the supervision necessary for beginners. I asked a lot of questions and received good answers and supervision which is necessary for a beginner. I would encourage you to find a partner or an experienced supervisor to be a part of your new routine. Take small steps along the way and don’t push your body too hard.

fter 3 years of living in the UAE, we have found no shortages of dining options and whatever ethnic cuisine may tickle your fancy, the choices are endless. But if you are looking for an authentic Emirati meal, then short of being invited into a local home for dinner, you may find it a little more difficult to satisfy your appetite. Last week, my colleague and I, happened upon one of Al Ain’s best kept secrets at the Souq Al Quattara. We met a delightful Emirati Woman, who not only welcomed us in a most hospitable fashion, but also served us some incredibly satisfying and delicious home-style local cuisine. We sat with Um Hazza Al Nuaimi on a beautiful Saturday afternoon and discovered some interesting facts about her traditional meals. She is the mother of 9 children, originally from Al Ain, and busies herself daily to help support her family in the best way she knows – her passion for cooking!

How long have you been preparing traditional meals for the public to enjoy? “It all began from home 4 years ago.” How did you end up at this market? “Cooking has always been a personal passion and 4 years ago, through the encouragement of friends, I began a small catering business at home. But when it became too busy to handle, I was fortunate enough to secure this spot at the market and have been here for the past 2 years.” Who taught you how to cook? “As is the case with most women, I learned to cook from my mother but I also continued to hone my skills on my own. I was always in search of the perfect recipe and would practice until I mastered each new dish.” Have you ever participated in culinary competitions and festivals? “Yes, I participated in many popular festivals like the Khatam al Shukla Heritage Festival and in fact, it was the very first festival I attended. I also participated in many school and university festivals, as well as at the Al Ain Municipality and Hili fun city. I was honoured to compete at the Dubai World Hospitality Championship for two consecutive years, and this year, I took home the silver medal."

Which traditional dishes are the most popular among your customers? “I only prepare dishes I know the people love and they include: Al Haress, Al Kabess, Almrkoqha , Albalalait , Alqemat, Al roqak, Aljbab as well as a few others.” How did you manage to secure a spot at The Al Quattara Souq? “First of all I must thank God for my blessings and I also owe a great deal of my success to Mr. Saeed Al Kaabi, head of traditional crafts and products at the Abu Dhabi Authority for Tourism and Culture. Mr Al Kaabi was a huge support through the years and I would also like to include Mrs. Muna Al Muhairi, on my list of people that I am grateful for having in my life.” Who helps you with the preparation of food? “My daughters do not cook but they help with the ingredient preparation and are a huge help in dealing with the customers when things get busy.” Is there anything else you would like to share with our readers? “On the occasion of National day, I wish to thank His Highness Sheikh Khalifa bin Zayed Al Nahyan, and all the rulers, citizens and residents of my beloved land for working together to make it a place I am very proud to live!”

f you snore regularly, you are losing out on quantity and quality of sleep, straining relationships, suffering from daytime fatigue and increasing your health risks. Record how you snore in a sleep diary; your sleep partner can help you with this. Note the different ways you sleep and snore. Sleep positions reveal a lot, and figuring out how you snore can reveal why you snore. Closed-mouth snoring may indicate a problem with your tongue while open-mouth

LIFESTYLE CHANGES TO STOP SNORING • Lose weight: This can reduce fatty tissue in the back of the throat and decrease or even stop snoring. • Exercise: Working out to tone your arms, legs, and abs, leads to toning the muscles in your throat, which in turn can lead to less snoring. • Quit smoking: Smoking blocks airways by irritating the membranes in the nose and throat. • Avoid sleeping pills and sedatives: These relax the muscles in the throat and interfere with breathing. Talk to your doctor about any prescription medications you’re taking. • BEDTIME REMEDIES TO HELP YOU STOP SNORING • Establish regular sleep patterns: Create a bedtime ritual with your partner and stick to it. Hitting the sack in a routine way together can help you sleep better and often minimize snoring. • Clear nasal passages. A stuffy nose leads to snoring. You can clear your nose naturally with a Neti pot or using nasal decongestants or nasal strips to help you breathe more easily. • Keep bedroom air moist with a humidifier. Dry air can irritate membranes in the nose and throat.

There are specially designed pillows available to help prevent snoring by making sure your neck muscles are not cramped. Avoid caffeine and heavy meals within two hours of going to bed, especially dairy products and soymilk. Sleep on your side. Avoid sleeping on your back, as gravity makes it more likely for your tongue and soft tissues to drop and obstruct your airway.

• THROAT EXERCISES Do these for 30 minutes a day, gradually increasing the number of sets you do without overdoing it. • • • •

Repeat each vowel out loud for three minutes a few times a day Place the tip of your tongue behind your top front teeth. Slide your tongue backwards for 3 minutes a day. Close your mouth and purse your lips. Hold for 30 seconds. With mouth open, move jaw to the right and hold for 30 seconds. Repeat on left side.

UAE History

T

he UAE’s rich history is rooted in trade and tied to Islam, which came to the region in AD 630. Its location between Europe and the Far East attracted merchants from India and China and was prized by Europeans, in particular the Portuguese, the Dutch and the British.

While Europeans sought control of the coasts, inland, the ancestors of the Bedouin made the sandy deserts of Abu Dhabi and Dubai their home. The town of Abu Dhabi became an important center. In the 19th century, the British signed a series of agreements with the individual emirates that resulted in the area becoming known as “The Trucial States.” They agreed not to have dealings with any territory except the United Kingdom and not to enter into relationships with any other foreign government without the UK’s consent. In return, the British promised to protect the coast from all aggression by sea and to help in case of land attack. The pearling industry thrived in 19th and early 20th centuries, providing income and employment to the people of the Gulf. Many inhabitants were semi-nomadic, pearling in

the summer and tending date gardens in the winter. But the economic depression in the late 1920s and early 1930s, coupled with the Japanese invention of the cultured pearl, irreparably damaged the industry. In the early 1930s the first oil company teams conducted geological surveys. In 1962, the first cargo of crude was exported from Abu Dhabi. With oil revenues growing year by year, His Highness (H.H.) Sheikh Zayed bin Sultan Al Nahyan was chosen as Ruler of Abu Dhabi in 1966. He undertook a massive program of construction of schools, housing, hospitals and roads. One of Sheikh Zayed’s early steps was to increase contributions to the Trucial States Development Fund. Abu Dhabi soon became its largest donor. In the meantime, H.H. Sheikh Rashid bin Saeed Al Maktoum, de facto Ruler of Dubai since 1939, developed shipping to replace pearling revenues. When Dubai’s oil exports started in 1969, Sheikh Rashid was able to use oil revenues to improve the quality of life of his people. At the beginning of 1968, when the British announced their intention to withdraw from the Arabian Gulf, Sheikh Zayed acted rapidly to establish closer ties with the emirates. With Sheikh Rashid, Sheikh Zayed called for a federation that would include not only the seven Emirates that together made up the Trucial States, but also Qatar and Bahrain.

Agreement was reached between the rulers of six of the Emirates (Abu Dhabi, Dubai, Sharjah, Umm al-Quwain, Fujairah and Ajman), and the Federation to be known as the United Arab Emirates was formally established on December 2, 1971. The seventh Emirate, Ra’s Al-Khaimah, acceded to the new Federation the following year. Since then, the seven Emirates have forged a distinct national identity. The UAE’s political system combines traditional and modern and enabled the country to develop a modern administrative structure while ensuring that traditions of the past are maintained, adapted and preserved. In 2004, H.H. Sheikh Khalifa bin Zayed Al Nahyan became president and has since continued to strive towards an ambitious vision for the UAE. Four-fifths of the UAE is desert but has contrasting landscapes — from the towering red dunes of the Liwa to the rich palm-filled oases of Al Ain, from the precipitous Hajar Mountains to the more fertile stretches of its coastal plains. Though small in size

(comparable to the state of Maine), the UAE has become an important player in regional and international affairs. GLOBALIZED AND OPEN In less than four decades, the nation has transformed from a tribal culture reliant on agriculture and fishing to an entrepreneurial success story with world-class infrastructure. The leadership has improved education (effectively eliminating illiteracy), advanced health care and embraced change as the UAE modernizes, consistent with its history and cultural values. The UAE is also strengthening institutions of government to ensure a transparent legal system with full regard for the quality of life of all citizens and residents. Four members of the Federal Cabinet are women.

The UAE is a member and participates in many international organizations, e.g. the United Nations (UN), the World Trade Organization (WTO), the Arab League, the Gulf Cooperation Council (GCC), the Arab Bank for Economic Development in Africa (ABEDA), the Arab Fund for Economic and Social Development (AFESD), the Food and Agriculture Organization (FAO), the Group of 77 (G-77), the International Atomic Energy Agency (IAEA), the International Bank for Reconstruction and Development (IBRD), the Organization of the Petroleum Exporting Countries (OPEC), the United Nations Educational, Scientific and Cultural Organization (UNESCO). Today the UAE is a strong, vibrant and modern nation that is open to the world.

Your favorite Cake Recipe

Your favorite Buttercream Icing Recipe

*Available at Tavola DIRECTIONS: •

Mix your cake mix and then add the red food coloring until the desired color is obtained.

Bake the cake in a single layer 9” cake pan (it will be tall when baked)

Allow the cake to cool overnight in the refrigerator.

Carefully trim the edges, top and bottom off of the cake and discard (you only want the lovely soft inside of the cake).

Place the cake in the food processor to create cake crumbs.

Mix the cake crumbs with ¼ cup of buttercream icing and increase by 1 tablespoon until the consistency is like playdoh.
