H

ere I am, basking in the morning sun on the patio of our sumptuous beachfront suite, mustering the necessary energy to pen a Directors Note signifying the end of a glorious 15 day stay in Hoi An, Vietnam. Parting is such sweet sorrow and as glistening beads of sweat converge, becoming salty rivers flowing over a bronzed anatomy, the temptation to slide into the beckoning pool becomes overwhelming and I succumb to a blissful submerging.

I noticed a post on Facebook the other day that struck a nerve and got me thinking about how most of us allow life’s daily distractions to drag us into an avoidable abyss. And from the depth of this hole echo the sounds of perpetual grief, easily avoided by simple yet infrequently elected life choices. This was the post: A patient consults with a doctor and explains that they don’t feel well and are uncertain of the cause of this state of being. The doctor responds with these instructions: “I want you to meditate for 20 minutes twice a day, exercise for at least 30 minutes a day, avoid processed foods, eat plenty of organic fruit and vegetables, spend more time in nature and less indoors, stop worrying about things you can’t control and ditch your T.V. Come back in 3 weeks and let’s see if you feel any different! A brilliant diagnosis followed by a prescription that may, for most of us, be incredibly hard to swallow in spite of the obvious cure sure to ensue. By this time tomorrow I will be back in Al Ain and my time in Hoi An will be etched in the archives of idyllic memories. But as the glimpses of paradise wash over me from time to time, they will remind me of a recipe for healthy living that should become a staple diet for every soul.

The Internet Is Going Crazy over “Sea Bunnies”, Marine Snails with Cute Rabbit Ears

Slugs are not what you’d normally call “cute” creatures, but the Jorunna Parva species is an exception. These marine slugs bear a striking resemblance to small rabbits, which has recently earned them the nickname ‘sea bunnies’.

Jorunna parva slugs were discovered by Japanese malacologist Kikutaro Baba in 1938, but the rest of the world has only become aware of their irresistible cuteness last year, when footage from a Japanese diving school was released online. The clip,

featuring parva off the coast of Japan, has gone viral on the internet and people all over the world are going ga-ga over the adorable underwater creatures.

UAEU accepts students on the Foundation Year Accelerated Program The United Arab Emirates University (UAEU) accepted new students to the Foundation Year Accelerated Program. Ms. Amenah Al Balushi, Director of the Admissions Department, welcomed the students to UAEU and wished them well in their studies. She described the program, which is part of UAEU’s plan to reduce the number of students enrolling in the Foundation Year. The program includes foundational courses in Arabic and Mathematics. Students will be tested in these courses and then evaluated to decide whether or not they need to enroll. Students in this program have achieved high marks in the CEPA exam; exceeding 180, with at least 500 in TOEFL or a band 5 in IELTS. Passing the program requires taking two exams: the first is Mathematics, which is divided into two tests. The first test is in algebra and the second test is in trigonometry. Students should obtain at least 60% in algebra and 50% in trigonometry. A pass in the Arabic language exam requires 60%. Students who passed the tests will be exempt from the Foundation Program, and will join their specializations directly. Students who did not pass attended the Foundation Year Accelerated Program, which ran for three weeks from July 26th to August 13th.

Online entry permits to the UAE for GCC residents

Dubai: GCC residents can now apply for their entry visas to the UAE through an online portal called ‘Fawri’, the Ministry of Interior announced on Saturday. The Fawri service aims to expedite passenger movement across the UAE’s entry points and streamline the visa process for passengers before they arrive in the country. The service, which is accessible through the ministry’s website www.moi.gov.ae and smart app, allows those residing in other GCC countries and those accompanying them, such as domestic helpers, to get their UAE entry permits (visas) via the various ports across the country. Other countries forming the GCC include Bahrain, Kuwait, Oman, Qatar and Saudi Arabia.

Major General Khalifa Hareb Al Khaili, assistant undersecretary of the ministry for Naturalisation, Residency and Ports, said the new service aims to ultimately save time and effort for travellers. “This step is in line with the vision of the Government aimed at upgrading services provided to the public and empowering the concept of fast, high-quality services,” Maj Gen Al Khaili said.

In May, the General Directorate of Residency and Foreigners Affairs in Dubai (GDRFA) launched a similar service specific to travellers coming to the UAE through Dubai.

Lieutenant Colonel Faisal Mohammad Al Shimmari, CEO of the Smart Government Programme at the ministry, said: “The ministry seeks to live up to its slogan ‘Our Services Within your Reach ... Your Satisfaction is our Aim’ by providing electronic and smart services in secure, quick and accurate steps. The service is also in line with the UAE’s National Agenda for the coming years,” he said. Lt Col Al Shimmari called on the public to submit proposals that would enhance the ministry’s services to mobile@moi.gov.ae. “The ministry has allocated the phone number 800500 to receive the public’s inquiries and to facilitate the completion of transactions,” Lt Col Al Shimmari said.

EAD to meet farmers and discuss sustainable groundwater use at the 2015 Liwa Date Festival * Palm tree irrigation consumes around 1/3 of the groundwater typically used for irrigation * EAD using the Khub Al Dhas forest as a sample case study to demonstrates EAD’s activities aimed at more efficient water activities The Environment Agency – Abu Dhabi (EAD) is using its participation at the Liwa Date Festival as an opportunity to hold regular forums with palm farm owners on their groundwater usage and to provide them with ways to make their irrigation systems more efficient, and environmentally sustainable.

Sixty two percent of the annual total demand for water in the Emirate of Abu Dhabi is for groundwater, which is being used mainly in agriculture, forestry and for landscape irrigation. EAD had previously announced that it aims to reduce the use of groundwater by 80% in forestry by 2030 due to the ongoing deterioration of irrigation water - from both a quality and quantity perspectives – and which is one of the major challenges being faced by the Emirate today. HE Razan Khalifa Al Mubarak, Secretary General Environment Agency – Abu Dhabi, said: “Safeguarding the Emirate of Abu Dhabi’s groundwater resources is one of our priority areas, and so it is our responsibility, as well as that of our partners, to work together to protect our water resources. Without farmers’ support, groundwater depletion will continue to lead to irreversible deterioration of groundwater quality, which in turn, will impact the farmers’ livelihood. It is through

initiatives like the Majlis at the Liwa Date Festival that we can encourage positive behavioural changes that will conserve and protect this dwindling supply of this precious resource, and protect farmers’ means of living.” While at the festival, EAD is showcasing the Khub Al Dhas forest as a study site that saw EAD’ make its water usage more efficient by using recycled water, as opposed to depending solely on groundwater. Located near Madinat Zayed in Al Gharbiya, EAD opened an experimental demonstration site where it studied the water requirements of Al Ghaf trees using technology that measures ‘sap flow’. These model studies, along with similar studies on palm trees at the International Centre for Biosaline Agriculture, aim to establish new benchmarks for forestry and agriculture management in Abu Dhabi. Today, EAD manages 73 date palm farms in different locations across the Emirate - 55 of which

are in the Western region – and these contain 361,584 palm trees. Mansoor Khamees Al Tamimi, Groundwater Scientist at EAD said: “Palm irrigation consumes around 1/3 of the groundwater used for irrigation, with each palm tree needing 40 gal of water per day depending on the season, soil type and tree size. We’re looking to use the Liwa Date Festival to provide farmers with necessary technical support, offer innovative solutions and ideas, and to promote the use of recycled water as an alternative of groundwater and plant native species instead of the non-native species that require a lot more water. Our presence there will also allow for people to report any violation or illegal activity being witnessed.” Al Tamimi added: “By being at the Liwa Date Festival, we aim to promote the sustainable use of groundwater among the date farmers by showcasing the best ways to make date forests more efficient in terms of water.”

HOW TO TALK TO LITTLE GIRLS ABC news reported that nearly half of all three-to six-year-old girls worry about being fat. Fifteen to eighteen percent of girls under twelve now wear mascara, eyeliner and lipstick regularly; eating disorders are up and self-esteem is down; and twenty-five percent of young American women would rather win America’s next top model than the Nobel Peace Prize. Even bright, successful college women say they’d rather be hot than smart. A Miami mom just died from cosmetic surgery, leaving behind two teenagers. This keeps happening, and it breaks my heart.

eaching girls that their appearance is the first thing you notice tells them that looks are more important than anything. It sets them up for dieting at age 5 and foundation at age 11 and cosmetic surgery at 17 and Botox at 23. As our cultural imperative for girls to be hot 24/7 has become the new normal, American women have become increasingly unhappy. What’s missing? A life of meaning, a life of ideas and reading books and being valued for our thoughts and accomplishments. That’s why I force myself to talk to little girls as follows. “Hey Maya, what are you reading?” I asked; a twinkle in my eyes. “I LOVE books,” I said. “Do you?” “YES,” she said. “And I can read them all by myself now!” “Wow, amazing!” What’s your favorite book?” I asked. “I’ll go get it! Can I read it to you?” Purplicious was Maya’s pick and a new one to me, as Maya snuggled next to me on the sofa and proudly read aloud every word, about our heroine who loves pink but is tormented by a group of girls at school who only wear black. Alas, it was about girls and what they wore, and how their wardrobe choices defined their identities. But after Maya closed the final page, I steered the conversation to the deeper issues in the book: mean girls and peer pressure and not going along with the group. I told her my

favorite color in the world is green, because I love nature, and she was down with that. Not once did we discuss clothes or hair or bodies or who was pretty. It’s surprising how hard it is to stay away from those topics with little girls, but I’m stubborn. I told her that I’d just written a book, and that I hoped she’d write one too one day. She was fairly psyched about that idea. So, one tiny bit of opposition to a culture that sends all the wrong messages to our girls, one tiny nudge towards valuing female brains, one brief moment of intentional role modeling; will my few minutes with Maya change our multibillion dollar beauty industry, reality shows that demean women, our celebrity-manic culture? No. But I did change Maya’s perspective for at least that evening. Try this the next time you meet a little girl. She may be surprised and unsure at first, because few ask her about her mind, but be patient and stick with it. Ask her what she’s reading. What does she like and dislike, and why? There are no wrong answers. You’re just generating an intelligent conversation that respects her brain. For older girls, ask her about current events issues: pollution, wars and school budgets slashed. What bothers her out there in the world? How would she fix it if she had a magic wand? You may get some intriguing answers. Tell her about your ideas and accomplishments and your favorite books. Model for her what a thinking woman says and does. Here’s to changing the world, one little girl at a time!

Does Size Matter in the UAE?

The engine is a vital component of a car. What your heart does for your body, an engine does for your vehicle. But do large-size engines make for a better heart? Carmudi, searched far and wide to present global engine size preferences.

Owners of electric vehicles share one thing in common: range anxiety. While a full charge should be enough for city commuting, it can nevertheless be daunting to drive to places where no charge stations are nearby. Some may prefer to be able to charge their vehicles at home, which would require them to install an expensive charge station. Batteries, although they last long, can be expensive to replace when the time comes. Recharge time is also problematic, as it can take anywhere between 4-20 hours to get a full recharge depending on the model and charging station. There also isn’t a lot of choice when it comes to electric cars. So is this the new trend to take the country by storm? While it might not be an instantaneous shift, the discussion has definitely started. With electric vehicle charging stations opening up around Dubai and talks underway for privileges for eco-friendly car drivers, the pros might very well soon outweigh the cons.

This article is dedicated to all of the kids out there who think the orange juice they drink at breakfast, the cookies they eat after lunch, the candy they trade at school and the Gatorade they chug after practice are no big deal. And also to their parents, who believe the same thing: that daily intake of sugar is harmless and just a function of childhood. What is sugar? Sugar is a sweet substance that comes from plants, mostly sugar cane and sugar beets. It is one big carbohydrate called sucrose made up of two smaller carbohydrates called fructose and glucose. Sugar has absolutely no nutritional value – no protein, vitamins, minerals or fiber. Why do I like it so much? Sugar has been shown to have an effect similar to an addictive drug, triggering you to want and need more, and making it hard to give up. Sugar was brought to Europe in the 1100s as a precious drug, known for its “tremendous addictive potential,” and was called “crack” during that time in France. Studies have also shown that overconsumption of sugar can alter your taste buds so you begin craving sweeter and sweeter foods leaving the more natural sweetness of fruits or whole foods less flavorful. What actually happens to my body when I eat sugar? When you consume sugar, it enters your blood rapidly because there aren’t any nutrients or fiber to slow it down. This causes the sugar or glucose levels in your blood rise. To process the sugar, your pancreas releases a hormone called insulin. Insulin allows the glucose to leave your blood and enter your cells, providing a rush of energy. If you eat a lot of sugar, the insulin works overtime to force the glucose out and your blood sugar down, dropping it too low, which makes the brain react. This reaction causes you to feel tired and grumpy or agitated and anxious, and leaves you craving more sugar. What short-term health effects does it have? Sugar provides a burst of energy that might be fun for a minute but usually doesn’t last too long. This burst of energy can make you feel hyper and unable to focus.

cover story When the insulin does its job and lowers the blood sugar levels, you might be left feeling cranky, irritable and moody, and less able to concentrate and learn. Sugar can even give you a headache or make you feel sick. Sugar has also been shown to suppress our immune system by lowering the ability of our white blood cells to engulf bacteria, which can lead to more colds, flus and other sicknesses. What long-term effects does it have? Eating too much sugar can make you feel full so you don’t eat enough healthy foods thus missing important nutrients such as protein, vitamins and minerals. Refined sugar has been linked to the following diseases and health complications: •

Obesity and Type 2 diabetes

Heart disease and high blood pressure

Cancer

Depression

Allergies

ADD/ADHD

Asthma

Arthritis

How does sugar make me fat? If you eat more sugar than your body can use in a day, it stores the sugar it doesn’t need in the liver or converts it to fat. When you do this regularly, you damage your liver and build up fat. Will a little sugar hurt me? No. Make it a sometimes food (Unless you have diabetes or an issue with your blood sugar). The American Heart Association recommends no more than 3 teaspoons (12 grams) of added sugar per day for kids. The recommended daily allowance can be easily exceeded with just one bowl of cereal!

Added sugar is in 74 percent of packaged foods, according to a study published in 2012 by the Academy of Nutrition and Dietetics. The FDA maintains a list of more than 3,000 food additives that are put into our processed foods. Sugar is the second most common behind salt.

I recommend that parents and their kids watch the film “Fed Up” together and join the filmmakers’ challenge to give up sugar for 10 days and see how they feel.

Doesn’t fruit have sugar? Unless you have diabetes, it is difficult to absorb too much sugar from eating whole fruit because whole fruit has fiber. Fiber slows down the digestive process by releasing sugar into the bloodstream at

Six ways to help your kids make a smooth transition

S

witching from holidays to a structured school day can be challenging for children as well as parents. Over the holidays we all experience that welcome loss of routine with late nights, sleepovers, and dinners out with friends or trips away. So here are some helpful tips

2. Encourage a good breakfast. Often when we are rushed in the morning we skip breakfast or reach for an overly sweetened commercial cereal. Breakfast is the most important meal of the day because it boosts energy levels and metabolism, which sets kids up to concentrate better and be more interested in learning. Many children who skip breakfast are actually heavier than those who don’t, partially because they may make poorer food choices later in the day because they are hungry. An egg, a low sugar cereal with fruit and yoghurt or whole meal toast are good options. A fruit smoothie is great for those who don’t like to eat much.

1. Get your kids back into their routine with set bed times. Generally, school aged children between six and 12 years need nine to 11 hours of sleep, aiming for bed between 7.30 and 9pm. Children over 12 years need eight to 10 hours of sleep, aiming for bed between 9 and 10pm. These time frames will ensure kids can concentrate and cope with their day without meltdowns or mood swings. To help them fall asleep more quickly and have more restful sleep, it is best not to allow use of electronic devices, watching TV or any other stimulating activities an hour before bed.

3. Don’t schedule too many activities. We often get seduced into signing our kids up for every activity they ask for – swimming, gym, dancing, cricket, music lessons – only to find they are ratty and exhausted by the end of the week. This is especially true for little preps, who should probably do none or only one activity in the first term. Of course it depends on the child’s energy level but more than four activities in one week is usually too much and two to three is probably ideal.

4. Aim for the NUDE lunch! Nude foods are foods without excess packaging, and they have two great benefits: they reduce the amount of litter your child must find a bin for, and they are often healthier than their processed alternatives. We know that foods high in sugar and fat tend to give kids an immediate energy boost that is not sustained and can often leave them irritable and teary later in the day, not to mention the additional calories they don’t need. Try to avoid juice and cordial, sweet biscuits, packaged chips and lollies. Instead, go for cut fruit, rice crackers with a small container of dip, cut veggie sticks or frozen yoghurt sticks (great when it’s hot!). Wraps are good alternatives to sandwiches and can be filled with delicious ingredients like roast chicken or tuna, mayonnaise and grated cheese.

5. Encourage your kids to drink lots of water. Kids in my general Paediatric clinic often complain of headaches and the first thing I always ask is how much water they drink during the day. Aim for kids to have a full drink bottle (approximately 600mls) by the time you pick them up, especially when it’s hot, 6. Apply and reapply sunscreen. Most kids have to wear hats at recess and lunchtime, but they can still get sunburnt, especially on their arms and legs. Remember to apply sunscreen in the morning and pack extra sunscreen in their bags. There may be no marker of modern civilization quite like the shoe: not only does it make clopping around our cemented world significantly more tolerable (and less dangerous), but it also serves as an indicator of our sensibilities, our profession, our sense of style. You can tell a lot by the shoes people wear from the type of work they do to their income levels, even their political standings. And there’s something else shoes can tell us: whether or not we’re at risk of serious health issues.

recent study out of the University of Houston found that 39 percent of shoe soles sampled were contaminated with the bacteria C. diff (Clostridium difficile), a public health threat that is now resistant to a number of antibiotics. C. difficile is a bacterial infection that causes severe diarrhea and in some cases, death. Kids that have recently taken antibiotics are getting it much more frequently. According to new research from the CDC, 71 percent of C. diff cases in children ages 1-17 were associated with their community healthcare provider or family doctor, compared to adults, where two-thirds were associated with hospital stays. Beyond the C. diff risk, there are all kinds of bacteria that could be sneaking into your home via your shoe: most public restroom floors contain about 2 million bacteria per square inch (the average toilet seat: only about 50 per square inch). Not exactly guests you want traipsing around your living room, especially if you have young children who spend a lot of time at floor level.

While it’s not quite as common in the West, most cultures around the world request that you leave your shoes at the door—not only does it keep those harmful germs out, but it’s also a sign of respect for the home, which should be considered a sanctuary away from the outside world. TOP 4 ‘GERMIEST’ SURFACES: 1. Grocery cart handles. 70 to 80 percent of carts tested across the country were contaminated with E. coli, which are bacteria associated with serious diarrhea and stomach cramps. Yet there can be much on those cart handles,

71 percent of gas pump handles tested revealed high levels of contamination. This determination was based on a reading of 300 or higher of ATP (adenosine triphosphate), a substance found in all animal, vegetable, yeast, mold, and bacteria cells. ATP levels are the standard by which hygienists measure contamination, and readings greater than 300 are deemed to carry a high risk of infection. 3. Escalator rails. When you think about it, escalators are everywhere: malls, airports, train stations, department stores; basically, areas where literally millions of people can unknowingly share their germs. A study found 43 percent of escalator rails were highly contaminated. 4. ATM machine buttons. ATM machines are known to be heavily contaminated with bacteria, to the same level as nearby public toilets.

Busy is a Sickness!

I'm busy. I don't know about you, but anytime I am asked, "How's it going?� I never just say "fine" anymore. Instead, my stock response is always some degree of frazzled. The scale ranges from "busy" to "crazy busy" to "insanely busy". The good news is my answer is usually met with sympathetic response, which is as reassuring as it is depressing. "Tell me about it! We are, too!" "I know! Isn't it insane?" "There's never enough time in the day, is there?" But something changed about a month ago. I bumped into a friend at the gym. Instead of sympathizing when I said I was "crazy busy," he simply asked, "Really; so what do you have going on today?"

had to stop and think for a moment. No one has ever asked me to "describe my busy." So I conducted a mental review of our calendar before explaining that I had a band rehearsal in the morning, followed by my son’s basketball game, my daughter’s birthday party and a date night that evening.

His response was "sounds like a full day; have fun!" At first, I was a bit resentful. He obviously misunderstood me. I wanted to remind him how horrible all of this was. I wanted to explain how driving from place to place in my comfortable SUV was a huge pain. Didn't you hear me? I am busy! Here's the thing. I wear busyness like a badge of honour. Only there's no honour to be had. Busy is a sickness! The majority of Americans recognize that their stress exceeds levels necessary to maintain good health. The most frequent reason cited is being too busy. It's a vicious cycle and apparently an epidemic. Dr. Michael Marmot, a British epidemiologist, has studied stress and its effects, and found the root causes to be two types of busyness. Though he doesn't give them official names, he describes the most damaging as busyness without control, which primarily affects the poor. Their economic reality simply does not allow for downtime. They have to work two to three jobs to keep the families afloat. The second type of busyness also results in health problems, but it is a sickness we bring on ourselves.

"Do you like being tardy?! Because that's what you'll be if you don't hurry up and brush your teeth!" The funny thing is, whether I prod or not, we always seem to get to school at the same time every day; before the bell. And if we're late nothing bad really happens, but there is still that voice in my head telling me a couple of tardies today is a slippery slope that eventually leads to 5-10 years in Federal Prison. Ridiculous After my conversation with my friend, I began to notice how much of my rushing was an overreaction. Most of the time, I manufacture urgency in hopes that it will create urgency in others. Instead, it only creates anxiety, resentment and spite, which is absolutely counter-productive. And even in the cases where the urgency is real, it's often due to a packed schedule I created. So why do reasonable adults insist on creating stress? We are afraid of ourselves. We are what we do. Our careers and what we produce more often than not define us and if I am not busy doing something, I am somehow less than, not worthy or at least worth less than those who are producing something. Now, before you start to think this is just one person's opinion, consider a recent study published in the journal Science. In one experiment, participants were left alone in a room for up to 15 minutes. When asked whether they liked the alone time, over half reported disliking it. In subsequent studies, participants were given an electric shock, and then asked if they would pay money to avoid being shocked again. Not surprisingly, most said they would trade money to avoid pain. However, when these same people were left alone in a room for 15 minutes, nearly half chose to self-administer an electric shock rather than sit alone with their thoughts.

Ever since my conversation a month ago, I realized that my busyness is this second type; busyness we control. In fact, many times I create rush and worry when none exists.

Think about what this means. Just being is so painful that we are willing to hurt ourselves to avoid it. It's time I let my busyness rest in peace.

"If you don't finish your waffles in the next 90 seconds, we're going to be late!"

My hope is that I stop defining myself by doing and start defining myself by being. That I stop measuring time by the clock on the wall, and start measuring it by the experiences I share with those around me. And that I stop seeing my life as "busy," and instead, see it for what it truly is – full and blessed!

rice paper 6 sheets, about 22cm Filling pork belly 150g king prawns 18, shelled and deveined rice vermicelli 30g lettuce leaves 6 coriander sprigs 12, stalk on, chopped garden or hot mint leaves 18, chopped cockscomb mint sprigs 3 (available from Asian supermarkets) shiso/perilla leaves 18 garlic chives 6, halved and head removed Dipping sauce cooking oil 1 tbsp garlic clove 1, chopped hoisin sauce 2 tbsp white wine vinegar or cider vinegar ½ tbsp sugar 1 tsp Sriracha chilli sauce ½ tbsp roasted salted peanuts 2 tbsp, crushed

METHOD: 1. Bring a saucepan of water and a few pinches of salt to boil; Add pork, cover with lid and cook for 15 minutes or until juices run clear when pricked with knife; Allow to cool, then cut off skin and very thinly slice the meat. Put the prawns and a pinch of salt in a saucepan of boiling water and poach for 2 minutes, or until opaque. Drain cool. 2. Put the rice vermicelli, a pinch of salt and a dash of vinegar in a bowl or pan of boiling water, cover and cook for 5–10 minutes or until soft. Drain and rinse with hot water. 3. Once the pork, prawns and vermicelli are ready add to remaining filling ingredients in their own individual bowls. Pour some warm water into a tray deep and large enough to submerge the rice paper sheets. Use a plastic board to make the rolls. 4. Dip a sheet of rice paper into the water and take it out as soon as it is moist

all over – do not let it sit in the water. Lay the sheet on the plastic board. Line up a couple of pork slices, 3 prawns, 1 lettuce leaf, and one-sixth of the vermicelli and herbs. Fold the 2 sides inward over the filling, as if making an envelope. 5. Now fold the bottom corner over the filling. Put 3–4 pieces of garlic chives along the roll with the tips sticking out of one end of the roll. Start to roll up the package tightly, pushing it forward and tucking in the filling in a neat cylinder as you roll it towards the far side of the sheet.

DIPPING SAUCE 1. Heat the oil in a saucepan over medium heat. Fry the garlic until it browns slightly. Add the hoisin sauce, vinegar, sugar, chili sauce and 1 tbsp water and bring to a gentle boil. Pour into dipping bowls and sprinkle the peanuts on top. Serve with the rolls for dipping.
