It's beginning to look a lot like Christmas, and I'm not mad about it. I am a huge fan of the holidays. Time with family, good food, and watching all the Christmas movies with some hot chocolate are the top things on my to-do list. i love spending time finding everyone the perfect gift, and then wrapping it perfectly. I get excited to watch my family open their gifts. I love that each year I get to start new traditions with my growing family. I am setting big goals for the new year, and a lot of them involve Sunshine. Since recently becoming a stay-at-home (which i love so much) I have a lot more time to devote to this project. I am excited to spend more time here and making my visions come to life. This has been a fun and challenge 6 months as editor and I cannot wait to see what the new year brings. I hope everyone has a happy holiday full of good vibes and lots of pie. Merry Christmas, see you in 2016. 11

Happy Holiday Season! I hope this note finds you warm, fuzzy, and with most of your Christmas presents wrapped and under the tree. We are spending lots of nights gathered around the twinkling tree with a cheese, caramel, and plain popcorn tin talking about how fast this year swept past us. As a mom, I have learned to accept the truth that days are long and years are short. In addition to making a million more memories with my family and expanding my business endeavors in the new year, I have got a long list of personal resolutions. Do you make resolutions for the new year? A few highlights from my list are to start wearing red lip color (i am addicted to nude gloss), train to run a race, and to read more books. Five years ago, five women were preparing for their senior year of college, trying to figure out what they were going to do next. It started with one of them taking a life changing trip to Uganda and has blossomed into an amazing organization "using fashion and design to empower women to rise above poverty." We had the opportunity to chat with one of the founders, Alli, and learn more about 31 Bits and the difference they are making with compassion and a whole lot of paper.

Describe your business. Our model is to empower people through the fashion industry. We work with our beneficiaries in Uganda to create fashionable, quality products. They earn an income enabling them to provide for their families. We care for them holistically through counseling, health education, finance training and business mentorships. After five years in our program, our beneficiaries are ready to graduate. A graduated beneficiary has her own business and is educated, healthy, and confident. Everything we do at 31 Bits is funded through product sales, so every time you make a 31 Bits purchase, you have a direct impact on women's lives in Uganda!

How did you get started? We started 31 Bits when we were juniors in college. Kallie traveled to Uganda and met women that were making incredible jewelry out of recycled posters, with no way to sell them. Kallie came back to school with a box of jewelry and an idea - and slowly but surely, 31 Bits was born! We started with 6 women, and now have more than 170 in our program!


What's behind the name? The "31" comes from Proverbs 31, where it describes a diligent woman providing and caring for her family. The "bits" comes from what the beads are made out of... bits of paper!

What do you love about your work? Everything! From the work that we're doing in Uganda to seeing our jewelry in fashion magazines... every bit of it is rewarding!

Describe your work space/office. We have a hip, industrial warehouse in Costa Mesa where we operate out of. It's a blast! We throw a lot of parties, host creative workshops, and have a storefront where we sell our latest designs.

What Keeps you inspired? The ladies in Uganda. Every day we hear new stories about how they're learning, growing, and thriving. Seeing them live empowered and dreaming for their futures is the ultimate inspiration!

Describe your latest collection. We just launched The Refined Collection, which we are especially excited about! This is the first time we've incorporated 14 karat gold-filled chain. It's dainty, feminine, and very chic. Perfect for the holiday season!

How do you spend your days off? I love to travel and explore new places. Days off usually consist of adventuring somewhere new - even if that means trying a new restaurant or hike close to home!


What is the best advice you have ever been given? Don't Compare.

Favorite Christmas song. Where are you Christmas by Faith Hill - I can't help but sing along at the top of my lungs! (My poor husband.)

Best Christmas present you ever received. This year for Christmas, my husbands grandma is taking the whole family to Maui! That's hands down one of the best Christmas gifts I've ever gotten!

Describe your business. Melt Ice Creams is a local ice cream shop in Fort Worth. We serve fun and innovative flavors that rotate regularly. We have a strong team that loves to serve our customers. They are happy to come to work, happy to serve., and it makes me happy just thinking about it. Motor Sisters is an extension of the MELT brand launching this December in the Dallas Truck Yard. We will be serving fun and funky soft serve cones, cups, and milkshakes. The brand was inspired by Rosie the Riveter. And the menu is named after inspiring women from history.

How did you get started? After working as a business owner for a number of years in the photography world I was itching for a career change. I actually wrote a handful of really bad business plans before I came up with the idea of ice cream. I looked for something that was missing in my neighborhood, something we didn’t but didn’t have yet, and then I went out and created that. And that’s what I love doing, creating.

What’s behind the name? I came up with it while driving around the South interviewing employees and managers about the ice cream world. Someone said to me they loved watching the weight of the day MELT off their customers when they ate ice cream. Our mission was and is to make a difference locally and globally. Our mission statement embodies that. We believe treats can change your day and your day can change the world.

What do you love about your work? I love working to create something bigger than myself. A place where people can feel feel empowered and happy, a place where customers can celebrate birthdays, job promotions, or just a treat to make their day better. I also love learning to be a better business owner, leader and entrepreneur.

What is the most challenging part of your work? I don’t come from the restaurant industry so I have had learn a lot of hard lessons about equipment, employee management and just the everyday struggle of the food and bev industry. So I would probably say finding a balance with time and stress. I run regularly to manage my stress (it’s the only thing that helps:). The other challenging part is, no one has a map for you when you are a business owner. You just jump in and make decisions and sometimes those decisions are wrong, but you get back up and dust it off or tweak it and then you keep going. But I think the most challenging part of the food and bev industry is there are so many variables that make up a customer's experience. If one variable is off it affects their whole experience. Did you want three things? I gave you three.

Describe your workspace/office. Ha...depends on the day. Storage closet at MELT, table at MELT, my bed for late nights, Avoca, a coffee shop down the street, a desk I have at my house, Brewed for mid-morning meetings or a co-working space down the street from MELT...then there’s Dallas for Motor Sisters. December is going to be so sweet!

MELT is a craft ice cream shop that makes American classic ice cream using fresh and seasonal fruit for made-from-scratch sauces and compotes. In 2014, photographer Kari CroweSeher traded in her camera for an ice cream spade to create MELT. Kari continues to push the envelope of creativity to produce unique, creamy concoctions like no other, anywhere.


What keeps you inspired? Being able to learn from others, whether that’s books or other restaurants or people smarter than me that have been in this industry longer. I’m not afraid to ask lots questions, we are always moving forward to get better, learn more, to grow. I’m also inspired by my employees who really get what we are all about, who push themselves to make our company better. We have a great team and an incredible culinary team that executes our menu and develops new flavors.

What are your most popular flavors? Chocolate and Vanilla :)

Favorite Flavor? I loved our Coconut Curry flavor we had a while back.

Any special flavors for the holidays? Yes our Christmas menu is out and it’s killer!

How do you spend your days off? What days off? We don’t take many days off especially with launching a new business, but I try and save Sundays for rest. I watercolor to turn my mind off, love going to the museum (I love how quiet art museums are), and we usually have big family meals with close friends, which most consists these days of them cooking for us and us showing up with pints of ice cream. Those are all my top favorites for a day off. Unless I’m traveling and then it's’ definitely exploring!

What’s the best piece of advice you have ever been given? Don’t buy used refrigeration equipment. Ha jk well not really but other than that it’s, “ Be hungry, be humble and hustle”.

Favorite Christmas song? Baby it’s Cold Outside, I adore the A very She and Him Christmas album, it’s on repeat starting...yesterday.

Best Christmas present you ever received? That’s a hard one, I love presents. Probably a family cook book my mom made for me, it has stories paired with all our family’s favorite recipes.

Sweet Potatoe and Kale Gratin Ingredients: 3 lbs organic sweet potatoes (2 large) 1 bunch organic kale (ribs and stems removed and cut into large pieces) 1/4 cup organic fresh sage leaves, packed 1 1/2 cups local raw cheese (I did a combination of parmesan, colby and cheddar) 1/2 cup almond flour 1 cup local raw heavy cream 2 TBSP ghee 1 TBSP minced garlic 1 tsp salt 1 tsp pepper Instructions: 1.Preheat oven to 400. 2.Peel and chop sweet potatoes in half circle pieces (for easy layering). 3.Heat up 1 TBSP ghee on the skillet and saute kale with garlic until soft. 4.Grease baking pan with 1 TBSP ghee and begin layering- first sweet potatoes, then some kale, last cheese with a ½ tsp of each salt and pepper. Repeat once and end with a layer of sweet potatoes, then cheese (use one cup of the cheese in the layering). 5.Pour heavy cream over the dish and cover with tin foil. 6.Place in oven for 40 min. 7.While baking combine almond flour, sage, ½ cup cheese, ½ tsp of each salt and pepper in a food processor. 8.Once the 40 min are up turn on broiler. Take out dish and sprinkle almond flour bread crumbs on top and broil for 5 min. 9.Remove from oven and ENJOY hot.

White Chocolate Cranberry S’more Bites Ingredients: ½ cup fresh cranberries 2 Tablespoons water ½ cup white chocolate chips ¼ cup heavy cream ½ tablespoon unsalted butter ¼ cup mini marshmallows + 24 mini marshmallows 6 Graham cracker sheets

Instructions: 1. Add 2 Tablespoons of water to a small saucepan along with the fresh cranberries. Set heat to medium and simmer until cranberries burst. Remove from heat and puree in a food processor until smooth. 2. Place white chocolate chips in a small heatproof bowl. 3. Heat heavy cream in a small saucepan just until it starts to simmer. Po heated cream over the white chocolate chips and let sit for 2-3 minutes Whisk until smooth. It will be thick. 4. In a small saucepan, add the butter and melt over medium heat. Onc melted, add ¼ cup mini marshmallows and stir until marshmallows are completely melted and smooth. Add in the cranberry puree and stir unt combined and smooth. Set aside. 5. Cut the graham cracker sheets so that you have 48 small square piec (cut each sheet in half and then each half into four squares). Each sheet will provide 8 squares. 6. Turn on broiler. 7. Take half (24) of the crackers, spread ~1 tsp of white chocolate ganache on each cracker, and then place a bit of the cranberry sauce on top. 8. Take the other half (24) of the crackers and place onto a baking shee Place one mini marshmallow on each cracker. Place under broiler until marshmallows are golden brown and toasted. This will happen quickly under the broiler so watch the marshmallows closely! 9. As soon as the marshmallows are toasted, remove the pan from the oven and immediately place the other half of the crackers with the whit chocolate/cranberry puree on top of the toasted marshmallows. 10. Serve immediately although they taste perfectly good after they’ve been sitting for a little while, also.

Drew Holcomb

Drew Holcomb and the nieghbors is an American rock band. A "mellow" American rock band. We had the oppotunity to talk to Drew Holcomb over a cup of coffee. We were eagar to learn more about Drew and his musical journey...little did we know we would leave with nuggets of wisdom. The passion for his music, family, and life in general is inspiring. And his music is good for the soul.

How did you get started in music? I was a college student in Knoxville, I played guitar for years and was a big music fan. I went to study abroad in Scotland, and while I was there I had a lot of free time cause I didn't know anybody. I started writing songs and when I got back to Knoxville for my senior year, I started playing them for people and they were like, "these are good, you should do something with these." When I graduated I got a job at a studio in Memphis and started playing bar gigs playing cover songs for 3 hours on weekends and working in the studio. That is when I started working on my first EP. That was in 2003-04, and I never looked back.

What is your biggest accomplishment? We sold out the Ryman Auditorium in Nashville. It is a 2500 seat theater that is probably the best venue in the country. I have personaly seen about 30-something shows there. Emmylou Harris, Ellie saw Coldpay [when they were first getting started], Bob Dylan, David Gray, Ray Lamontagne, Patty Griffin, and the list goes on and on. To be able to sell out that venue in advance...Literally after the night was over I was like, "OK, you can retire from music, it's not going to get any better.It's all down hill from here." Handsdown, the highlight of my career.

What keeps you inspired?

Lots of things. Recently, watching our kids discover the world. I love reading so a good writing is very inspiring, a good movie. Probably the most inspiring thing for me is when I get to have a very thoughtful and vunerable conversation with an old friend. It doesn't have to be serious, it can be fun and light hearted. Sitting in your backyard around the fire drinking a beer or a glass of wine, smoking a cigar just talking about what is really going on. That is where the real marrow of life comes from. It is What was the first song you wrote about? where a lot of my songs are birthed. And then observing the world around you, the conversations Oddly enough, the first song I wrote was when I was a sophmore [before all that] in college, when I you have and the people you meet...all of these things can inspire you to create. first fell for Ellie (his wife).

What is the biggest challenge?

Do you write all of your songs?

Well it has changed, now for us the biggest challenge is being away from home. We really love our families and it is not easy being away from them. Practically speaking, it is kind of like being a pilot. When you're gone, you're gone for 10-12 days and when you're home, you're fully present. If I am home on a Monday or Tuesday, I am not a work. I am at home or taking my daughter to the zoo or the park or whatever. That's the hardest part about touring.

I write alone for the most part. I will write a song and come play it for the band and kind of let them help me arrange it...make some changes. Lyrically, I don't invite anyone else into the process except for Ellie. Even then if I disagree with her, I will try to keep my own lyrics. We've written a lot of stuff together, but not recently. So I will write alone, then share it with the band. One of the cool things about songs is playing them live, they take on a new life. They kind of evolve, and that is fun too. The crowd kind of tells you what they want and you learn from that.

Do you prefer recording or playing live? They are so different. Recording is like being the chef, and playing live is like getting to eat at a nice different restaraunt every night. You get different crowds and a different feel. Every night has a different feel and different audience, so it is a different experience. When you are recording, you are trying to do your best to get as close to capturing the essence of the song as you can. And when you are recording a song it is usually kind of new, so that is exciting. It is like watching something come to exist.

And third, you didn't ask for a third but man comparison is the thief of joy. That is the hardest part (being patient): No one dreams of being a road builder, but the world would stop with out them. I don't think everyone is meant to make a living doing what they love. I think that is kind of a false notion, not that you can't try. If it doesn't happen, that doesn't mean you are a failure. It's just hard to make a living doing something you love. The people who get to do it are the minority, and I am very aware of that.

How would you describe your music to someone who I think that is the fault in our generation, "we all want to do what we love" and we feel like we are has never heard it before? Americana, singer/song writer music. It is so hard in today's musical landscape because genres are so fluid. Obviously what we do is not hip-hop, but it is not EDM. It's just American rock-and-roll music. Mellow American rock-and-oll music.

The best advice you have ever been given? My dad told me one time, when I was trying to date Ellie that "Love doesn't have ultimatums." I was trying to convince her to date me and I wanted to tell her she had to say yes or no. He said, "Son, love doesn't have ultimatums, you have to wait it out if you really want to be with her. " Pretty good advice.

What is a "token of advice" you would give someone who is trying to follow their dreams? I would give 2 pieces of advice: One, anything that you want to do that is like a dream kind of, pursuit of a career, will take twice as long as you think it is going to take. And if you do not have the patience for that, then maybe that is not the thing for you to do. Second thing I would say is something I heard on Conan when he got kicked off the tonight show. He said, "I hate cynicism. What I want to tell you people is, 'Life will never turn out the way you think you want it to, but if you work hard and you are kind, amazing things will happen to you.'" That is really great advice. So not thinking so much about the goal, but enjoying the process of getting there which is really hard to do.

And you want to do what you love in your own way. For instance, between 1950 and the year 2010 there were like 10,000 non-profits created...in a 60 year span. In the last 5 years that same amount has been created.


So people want to do good, but they think they know how to do it better than everybody in the older generations. So it creates all this overlap. People want to save the world, but they want to do it on their own terms. There are worse things than that, but it will be a lot of learning curve and growing pains along the way. Sorry, I am not trying to be y'alls counselor...I have a lot of opinions.

What is the biggest difference in opening and headlining?

More time to enjoy and play your record. And when you are headlining you get the general sense that everyone in the audience is there for you or has some general knowledge and emotion towards your music and you. When you are opening there is a lot of people who don't know What's next? who you are, so there is a lot first impression We are just trying to enjoy the tour right now. The anxiety. You just have to be confident in what record is only 7 months old, so it is still really fresh you do. I always say, "If you like our music our for us. And because of the Compadres Tour (with record is available, and if you don't have a great life." I learned a long time ago, you can't make Needtobreathe), which was a great tour but we fans with every single group. only had 35 minutes and we didn't really get to dive into the "meat" of the record live, we are just starting back up to headlining shows [we will do it all again next spring]. We are taking the night and getting to enjoy it as the headliner, which is really fun. I'll start writing again soon, then recording at some point in the relativlely near future. But right now we are enjoying this record and getting to play these songs live.
