Leading the interior design of the iconic Delano Dubai in collaboration with Ennismore’s in-house design team, ELASTIC reimagined Delano’s legendary style embracing modernity while staying true to the brand’s core ethos. We intended to merge the timelessness of Delano’s design language with the dynamic energy of Dubai encapsulating that same iconic vibe in the new Delano Dubai and bringing its essence to life once again. The veiled arrival at Delano Dubai serves as a signature design feature, immediately setting the tone for the guest experience. ELASTIC designed an iconic arrival experience inspired by Miami’s whimsical hedge and redefined it with sleek green panels that evoke a sense of mystery and intrigue. At the entrance, guests are welcomed by an inviting courtyard where a captivating lounge area seamlessly blurs the lines between indoors and outdoors. The overall design has mindfully infused elements of surprise and discovery, creating a space where guests encounter the unexpected at every turn.
ELASTIC re-envisioned the Rose Bar, paying tribute to the original Miami Beach landmark. Inspired by the original Rose Bar, the interior design team conceived the entire venue as an immersive, jewelbox experience. The mirrors, delicately outlined in
petal shapes, subtly reinforce the rose motif while creating a dynamic, playful ambiance that invites both curiosity and interaction. The bar’s flowing contours and the floral-inspired lounge banquettes further enhance the intimate seating arrangements. The inclusion of infinite dance floor tiles and discomotif furniture is a nod to the original creator of the Bar, Ian Schrager, which adds a touch of nostalgic glamour. With rose-hued marble, warm wood tones, tufted velvet banquettes, and an intimate nook the design and palette were inspired by the original Delano Miami Rose Bar, preserving the iconic identity, but elevating it into a modern, exclusive, and vibrant destination. The journey even begins at the exterior, where lush rose plantings engage the senses and set the stage for a memorable arrival experience.
Inside, what was once a transitional corridor has been reconceived as an unexpected continuation of the bar’s immersive ambiance. The interiors of the suites and guestrooms were revamped to reflect a palette dominated by elegant pure whites celebrating the iconic crispness of the signature “Delano White”. This purity is gracefully softened by rich textures, natural materials, and an abundance of natural light. Artistic and eclectic furnishings emerge against the backdrop of white, infusing vibrant hues that transform the ambiance from bustling to brilliantly serene.
ELASTIC’s design for Tutto Passa Restaurant captures the enchanting spirit of the Amalfi Coast with its expansive alfresco dining terrace, set by the pool and mindfully built around the natural beauty of the surrounding trees. A signature ceiling fabric feature, in a soft yellow hue inspired by Amalfi sunsets, gently drapes overhead, softening the space and adding warmth throughout. Traditional elements, such as a built-in oven, contribute to the authentic dining experience while a stunning wine tunnel connecting Tutto Passa and the Rose Bar, bridges day and night. The wine tunnel acts as a “secret” speakeasy-style secondary entrance to the Rose Bar or serves as an exclusive private dining room. Designed as a versatile all-day dining space, it effortlessly transitions from
daytime casual elegance to a sophisticated evening ambiance, opening seamlessly onto a garden terrace that merges the indoors with the outdoors.
At the Delano pool, ELASTIC completely transformed an underutilized terrace into a vibrant and distinctive destination, imbuing it with character and purpose. Custom-designed, luxurious outdoor furniture crafted from natural materials and textures complements a palette of fresh, crisp neutrals enriched with timeless brand-inspired patterns. To enhance the guest experience, we mindfully curated diverse seating arrangements that cater to various needs, from casual lounging to elevated dining in a relaxed yet sophisticated setting. Each seating vignette is strategically anchored around the central pool, offering guests stunning views and dynamic vantage points from every angle. Recognizing the brand’s commitment to exclusivity, we incorporated a range of seating options, including private cabanas designed to cater to VIP clientele. Playful design elements and thoughtfully created zones further enliven the space, ensuring an engaging atmosphere that feels both inviting and memorable.

Atelier Zébulon Perron, a firm renowned for its distinct interior design services for the commercial sector, proudly introduces Hav & Mar, a multicultural culinary destination located in the Starrett-Lehigh building in New York City’s renowned arts district of Chelsea. Hav & Mar marks the second collaboration between Atelier Zébulon Perron and Marcus Samuelsson, the Ethiopian-born, Swedish-raised world-renowned chef who has honed his skills in New York City’s eclectic culinary scene.
With a diverse African, Scandinavian, and American background, Samuelsson envisioned a restaurant that would strike a beautiful balance between all of his cultural influences. ‘Hav’ means ‘Sea’ in Swedish, and ‘Mar’ means ‘Honey’ in Ethiopia’s Amharic language, and Hav & Mar has delivered on its promise of a globally-inspired menu of festive and flavorful creations since opening its doors in late 2022.
“Diversity and a meeting of cultures is a theme that permeates Hav & Mar,” says Zébulon Perron, founder and lead designer of the firm that bears his name. “That theme extends to the mermaid motif created by artist Derek Adams as the restaurant’s logo, and to the prominence of women of color at the helm.”
Having previously collaborated with Atelier Zébulon Perron on the design of the high-end Marcus Restaurant at the Four Seasons Hotel in Montreal, Samuelsson called upon the firm once again to help design his latest culinary vision. Each new Samuelsson project is driven by a new concept, and Hav & Mar is a continuation of that trend. The restaurant is a culmination of Samuelsson’s life’s work, and the design challenge presented to Atelier Zébulon Perron focused on the creation of an ambiance that promotes social interactions that transcend the typical restaurant experience.
Atelier Zébulon Perron has gained notoriety for its creative approach to designing spectacular spaces within unusual floorplans, and the previous experience of Marcus Restaurant had instilled the collaborative relationship with mutual appreciation for that ability. Hav & Mar once again called upon the firm’s creative thinking to address Samuelsson’s newest vision.
“From the beginning, the approach was centered on the concept of socializing and bringing people together,” explains Perron. “We wanted to articulate the space in ways that would promote and facilitate that, and the planning and design process focused on a strategic layout to ensure smooth and fluid circulation paths conducive to Marcus’s vision.”
In approaching what was previously an industrial space, Atelier Zébulon Perron began its intervention with an injection of warmth, choosing plywood as a material base for Hav & Mar’s unique character. With a multitude of possibilities, plywood became an important material throughout the design, applied to walls and boundaries, and used to build assemblies for harnessing lighting fixtures. Plywood was also used for the unique framework of Hav & Mar’s private booth enclosure.
Materials for the design included ‘elevated’ choices, but the project embraced a high-end ceiling to ensure a balanced and inclusive product where people from all walks of life would come and feel comfortable. Hav & Mar’s interior includes customized furnishings designed by Atelier Zébulon Perron, as well as some down-to-earth vintage elements, and decorative lighting designed in collaboration with Lambert & Fils.
Every piece contributes to the narrative of an international, multicultural life that is referenced in Hav & Mar’s earthy tones of browns and honey, contrasting with light marbles, including a teal bar top. Plush velvets, rich walnut, and other hardwoods juxtapose with raw stucco and concrete, paying tribute to the building’s industrial roots.
Hav & Mar’s open kitchen concept further contributes to the concept of flow and interaction, with the main bar prominently positioned directly in front of it. To further maximize floorplan efficiency, Atelier Zébulon Perron created a private booth as an articulated subspace just off of the bar and kitchen area, essentially converting what might otherwise be the worst seat in the house into one of the most coveted seating options.
Hav & Mar’s main bar has a special presence, denoted by a large, sea-creature-esque lighting fixture positioned directly above it. Incongruous and curious, the fixture also serves a functional purpose by acting as a canopy that grounds the area to a human scale. The overall design plays with verticality, with a variety of strategically placed elements emerging from the ceiling, floor, and walls. Each of those elements is creatively illuminated by custom-designed lighting fixtures that serve as both sculptural elements and backlights of an eclectic mix of glowing spaces.
“You can create the most beautiful spaces imaginable, but creative lighting is essential to infusing ambiance into those spaces,” concludes Zébulon Perron. “With so many unique spaces and design elements to absorb at Hav & Mar, original lighting is one of the areas where we were really able to express ourselves.”

Health and Well-Being: Designing spaces that promote physical and mental well-being, considering natural light, air quality, and biophilic elements.
Sustainable Design Solutions: Creating buildings and spaces that minimize environmental impact through the use of sustainable materials, energy-efficient systems, and innovative technologies.
Kansas Restaurant, by Carla Bechelli Arquitectos, stands out for its design, which seeks to integrate and blend seamlessly with its location, projecting its large eaves that extend to embrace the surrounding environment. It is a project consciously inserted with the intention of organically connecting with its landscape, characterized by lush nature and the constant presence of rivers and canals.
Natural materials, the presence of water, and careful landscaping evoke a natural setting expressed in every design decision. Exposed concrete is presented in its purest form, highlighting the lines of the formwork. Stone walls play with planes of different heights and depths, and large glass surfaces provide transparency and poetry in the indoor-outdoor relationship, with water features experienced in every corner.
The project offers a variety of spaces and experiences for its users. The reception area, with an omnipresent wine cellar and a view of the water fountain under the
large eave, leads to the bar. Above the bar, a wine glass rack serves as a sculptural focal point for this area, from where the open kitchen can be seen, allowing guests to experience the food preparation process. The indoor water feature area is highlighted by its organic arrangement of hanging lights, surrounded by tables enjoying the murmur of water.
A private event room connects through a wide carpentry that can open completely to integrate with the main hall, featuring an exterior expansion that ends in a water rill with trees. Additionally, the main hall’s outdoor gallery is arranged with tables around a bar and along the edge of a reflecting pool, surrounded by a landscape that embraces the building.
Nature, landscape, and natural light are essential parts of the experience of this project. Three patios with trees and water features, each unique and distinctive, are incorporated as transitions from exterior to interior at different points, drawing the magic of nature inside the project.
“We seek for architecture that embodies the essence of its location and the spirit of its inhabitants, creating a timeless presence, leaving a lasting impression, and deeply moving those who inhabit it,” explains Carla Bechelli.

Thematic transitions and inviting ambiances highlight Atelier Zébulon Perron’s design of Hilton Doubletree F&B spaces.
Atelier Zébulon Perron, a firm renowned for its distinct interior design services for the commercial sector, is proud to introduce a 10,000 sq. ft. construction project for the Hilton Doubletree Hotel. Located in Complexe Desjardins, a mixed-use office, hotel, and shopping complex in downtown Montreal’s thriving Quartier des spectacles, the project mandate consists of multiple elements, including conversion of an existing breakfast space into a multi-functional room, the creation of a new VIP lounge area for preferred guests, and the design and construction of a brandnew bar, restaurant, and dining room.
“In designing hospitality spaces, our focus always begins with creating atmosphere and facilitating social interaction, or what we refer to as the ‘social ergonomics’,” says Zébulon Perron, founder and lead designer of the award-winning firm. “Space layout is the key to a successful project, and we have designed a connected environment for this project that is conducive to gathering, mingling, and circulating.”
The core of the project is an expansive breakfast area, which serves as a first foray of guests outside of their hotel rooms. The firm focused on creating a luminous and multi-functional space that would extend beyond the purposes of a breakfast buffet to also serve as a breakout space for the hotel’s adjoining meeting rooms. Soft colours, high-quality walnut, white oak, marbles, velvets, and dichroic steel infuse a sense of lightness and conviviality into clean design gestures that accommodate movement and the functional aspects of the space.
“Right from the planning stage, those elements are important in terms of creating the ambiance of a space,” explains Perron. “It’s essential to create a sense of comfort and intimacy that brings it all together on a human scale.”
In approaching that endeavour, and upon inspecting the premises, the architects discovered an existing skylight above the space that had long been sealed. They reopened the ceiling to expose the skylight, thereby infusing natural light into the space. The skylight became the central component of the entire
project, and the firm went to great lengths to source and plant a large tree directly into the space itself. A crane was required to insert the tree through the skylight, and the successful endeavour created an axis in the breakfast space around which everything else in the project would be articulated. Concentric rings on the ceiling emanate from the central opening like ripples of water, and custom-designed lighting fixtures and hanging plants further contribute to a bright and contemporary ambiance.
To facilitate transitions of the space from a breakfast area by morning to other functions throughout the day, the firm positioned the breakfast service area between two monoliths, essentially removing it as a visual element of the main room. Adjacent to the main space, a new VIP room was created to provide
comfort and light F&B services to the hotel’s preferred guest program members, which is articulated by a glazed glass partition that maintains the permeation of natural light, yet assures the privacy of the room. The firm also leveraged the natural elements offered by an adjoining outdoor terrace to draw additional light into the room, as well as to create a sense of transition between the landscaping of the terrace and the hanging plants and anchoring tree of the breakfast area.
Transitioning to the restaurant, Bivouac offers a contemporary Quebecoise culinary experience featuring a terroir-themed menu and locallyprocured cheeses and wines. The client was set on creating a concept for the bar and restaurant area evocative of ‘glamping’, or glamorous camping, defined by references to Canadian wilderness landscapes and activities. Rather than taking a literal heritage approach to the idea, Atelier Zébulon Perron endeavoured to assuage the Canadiana theme within the contemporary context of a large downtown hotel.
“While infusing subtle references to the glamping and Canadiana themes, we focused on developing sophisticated and contemporary spaces,” says Perron.
“We came up with a variety of solutions that address the full spectrum of those circumstances.”
In translating the concept to the setting of a new restaurant and dining room, one of the first elements introduced was an abundance of neatly arranged, upward-facing canoe paddles, aligned to frame the external perimeters of the space and to serve as a gateway between the breakfast area and the new restaurant. The theme is further conveyed throughout the space through various design elements that include an intricate mosaic tile pattern surrounding the bar, backrests upholstered and cinched with leather straps that are reminiscent of harnessed picnic blankets, and totem-shaped light fixtures emitting lantern-like glows from beneath canvas shades offering a subtle nod to tent material.
Located on the 4th floor, the area can be accessed from either the reception area of the hotel lobby, or via the adjacent meeting rooms, with direct access to the bar and restaurant on one side of the elevator core, and direct access to the multi-functional breakfast space on the other. All of the spaces are connected internally, with a pool table and restroom area serving as a transitional space between the bar and the breakfast area. A few short stairs rise to the main bar area, designed as a warm and inviting space for congregating. The bar is further articulated by several smaller pockets of adjacent lounge space, providing options for more intimate gatherings.
The bar leads through to the dining room of Bivouac, designed with a warm ambiance highlighted by rich marbles, velvets, and hardwoods. Ambient light provides playful reflections on strategically-placed vertical mirrors and amber glass panels, while lighting fixtures custom-designed by Atelier Zébulon Perron, in partnership with Lambert et Fils, create optimal settings for both daytime and nighttime operations. The restaurant is further characterized by leatherupholstered banquette seating designed for comfort, and expansive windows overlooking the city’s vibrant Quartier des spectacles, with views of Place des Arts and the Montreal’s Contemporary Art Museum. The restaurant also features an open concept production kitchen, framed by two chef’s tables, that also services the collective F&B operations of the connected spaces.
“It involved every aspect of construction to build this project from scratch, and we are proud of the way that it has all come together,” notes Zébulon Perron.
“In the end, we were able to design multiple spaces that smoothly transition into one another, with a variety of nooks, seating formations, and ambiances for every type of gathering.”

Palazzo Bertarelli, one of the most charming late Art Nouveau buildings in Milan, historically the home of Touring Club Italiano, the Italian national tourist organization, is now Radisson Collection Hotel Palazzo Touring Club Milan, a 5-star hotel that stands for modern tourism perfectly in harmony with the city. The architectural and interior redevelopment and restoration project, led by Studio Marco Piva, took inspiration from the concept of travel and focused on three main areas: restructuring the monumental façade, repurposing the inside space, and paying meticulous attention to interior design details. The result is fluid, dynamic, uninterrupted space that creates a flawless connection between interior and exterior; the rooms of the eclectic building assume a new connotation thanks to the careful selection of materials and choice of new technologies.
Eikon Evo, Vimar’s exclusive series of devices, fits perfectly in this historic context sensitive to today’s constantly evolving needs. The scrupulous attention
to detail introduces elements commonly associated with travel, such as the decorative lighting’s circular shapes suggestive of the globe, which recur throughout; the use of leather on all headboards, reminiscent of train carriage seats; and metal inserts and details such as the Eikon Evo series, which has taken inspiration from the shape of suitcases. Designed to be noticed, with dimensions that stand out unobtrusively on the walls thanks to ultra-thin profiles and new colours and combinations, the Eikon Evo series enhances buttons and controls with a total look frame that spells luxury. The devices installed are perfectly visible and arranged in an orderly manner throughout the facilities: on the elegant leather headboards, on the stylish bathroom marble panelling, and in all common areas. Cover plates feature precise geometry and one single colour, Total Look absolute black aluminium. The perfect combination of precision technology and impeccable craftsmanship, available in a variety of materials and prized finishes, from stone to glass and from leather to metal and corian, Eikon Evo cover plates blend in seamlessly with the environment, creating an original look, with unique stylish details, customised symbols and laser engraved logos for bespoke projects.
Conceived for the comfort of guests who travel for both business and leisure, the 89 elegantly and modernly furnished rooms and suites are characterised by high ceilings and herringbone smoked oak floors. The Presidential Suite, once the Touring Club Council Hall – a 105 sqm room with
private balcony overlooking Corso Italia – is certainly worth mentioning. The passage to the rooms evokes a train carriage throw a series of doors with linear dark wood panelling on both sides of the corridors. This is certainly an innovative project in the hotel world and one that perfectly marries with all those elements that bring to mind the experience of travelling, and therefore the Touring Club Italiano, regenerating memories to create the new Traveller’s Home.
For example, the lobby maintains original features such as the names of the founding members engraved in stone; soft and comfortable seating is arranged in a large welcoming space. What used to be the Touring Club Italiano bookshop is now Bistrot Bertarelli
1894 Milano, a multifunctional lounge bar, breakfast room, bookshop and travel agency, featuring predominantly dark wood with eye-catching metal details: a book boutique, a place to explore for a culinary and cultural trip. Last but not least, the wellness area in the basement, with a small gym and SPA, a space enveloped in natural wood tones that welcome guests in a relaxing atmosphere.
“Living the present while preserving the past and planning the future. This approach has guided the entire process of enhancing the entire building of Palazzo Bertarelli to accompany its elegant and sophisticated soul on a journey into the twenty-first century.” Says Marco Piva.
This vision is shared by Vimar, who with its forwardlooking approach and the experience that allows it to blend history with innovation, continues to explore new ways of shaping the future of design.

- YOD GROUP -
This project, by YOD Group, involves the transformation of an iconic Lviv pastry shop that has been in existence since 2000. Cukiernia is located on the first floor of a historic building in central Lviv. The venue is popular among locals and well-known to tourists, attracted by the discreet aristocracy of the presentation, and the exceptional quality of the intricate confectionery made according to old recipes.
Work on the project began with a search for new meanings and symbols for Cukiernia. It was important not only to update the design, but also to rethink the general concept and to boost the iconic brand with fresh energy. At the same time, it was important to preserve the DNA of the place, delicately defining the continuity of tradition as one of its core values.
The main approach in this project has been to work with monomaterials and to play with nuances. The interior combines two key materials and several auxiliary ones. The main ones are marble and a unique eggshell plaster, with light wood and noble brass being the supportive ones.
Italian marble, in a warm creamy brownish color palette, covers the horizontal surfaces of the interior - the floor and countertops. The caramel veins in the natural pattern of the marble echo the theme of caramel or cream in layered cakes. Interaction with natural stone gives guests a feeling of fullness and luxury at the touch and sound level.
The walls of Cukiernia are covered with a unique material based on eggshells, created specifically for the project. After all, eggs are one of the key ingredients in the pastries that are present in almost every item on the Cukiernia menu. One of the Ukrainian poultry farms donated more than a ton of shells to create the egg plaster.
The shell was thoroughly washed, dried, and crushed to the required fraction to be mixed with a special glued base. Multiple experiments led to finding the best degree of grinding, formula, and application method. It was important to make the eggshells visually guessed on the wall surface, while also avoiding excessive relief and abrasiveness so that
guests’ clothes would not catch on and their hands would not get screeched by accidental touches to the walls.
Another challenge was the shade of the material. The eggshells from the poultry farm were white, and the interior required a warmer shade. The venue itself came to the rescue, with the confectioners of Cukiernia, who continued to operate during the project preparation, collecting brown shells from the eggs, which they used in their confectionery. 1,300 kilograms of white shells, mixed with 200 kilograms of red shells, created the desired tone of the plaster.
The space of Cukiernia consists of three halls. The first one, through which guests enter the place, has a multitiered display case with confectionery. Visitors can walk around it and look at the assortment of cakes, cookies, and pastries before making their choice. There is also a staircase to the second level, with wooden banisters with a dynamic rounded shape.
The second hall has a bar island, structurally resembling the design of the showcase from the first hall. Next to the bar counter are chairs of the Ukrainian brand Woo.
The third and largest hall accommodates several seating options, including small tables for one or two people and a long communal table. A significant disadvantage of the space was that it did not have much daylight. To visually fill the halls with air, designers used a light color palette and laconic arched niches-windows that connect adjacent halls. The laconic pendant lamps by Spanish brand Aromas del Campo support rounded outlines of the arches and furniture.
Time-tested bentwood chairs remained from the former interior of the Cukiernia. They have been restored and partially painted white, like cookies glazed with icing. They also left the wooden bases of the old tables, supplementing them with round marble tops. The massive antique cabinet next to the communal table supports the theme of traditions. This unique piece of furniture from the Lviv Secession period came to Cukiernia from the private collection of the venue’s owner.
“We aimed not just to update the space of the iconic pastry shop, but also to give it a fresh interpretation. We wanted to disassemble the Cukiernia brand and reassemble it, reinforcing its quality and nobility with new visual manifestations,” shares Volodymyr Nepiyvoda, founder of YOD Group. “That is how we came to laconicism, monomaterials, and eggshell bio-plaster. The result is an airy and emotionally comfortable interior that does not distract attention from the main product – the legendary Lviv pastries.

In 1986, the UK’s first McDonald’s drive-thru changed convenience forever, offering a groundbreaking way for customers to grab meals without leaving their cars. This innovation inspired other big brands to adopt drive-thru systems, paving the way for a surge in demand for reliable serving windows. Soon, schools, receptions, and transport offices recognised the value of serving hatches for added security and privacy. By 2020, the COVID-19 pandemic highlighted their importance even further, as businesses needed to keep people out of buildings while still providing efficient service.
The challenge, however, lay in finding a window system that could withstand heavy use while remaining easy to operate. We encountered numerous setbacks while testing different materials and designs. It wasn’t easy, but we were determined to create a solution that would meet the demands of high-traffic environments like fast-food restaurants and reception areas.
After extensive trials and invaluable feedback from customers, we developed a serving hatch and drivethru window system that is durable, secure, and easy to install. Our innovative windows lock automatically for added safety, are robust enough to handle daily use and are designed for effortless operation. These features make them ideal for cafes, coffee shops, schools, and takeaway restaurants.
Our drive-thru windows have become a trusted choice for leading brands such as McDonald’s, KFC, Five Guys, Zizzi, and Krispy Kreme, as well as offices and reception areas across the UK. These windows not only streamline service but also boost turnover by improving efficiency. For cafes and coffee shops, they open up a new avenue of business, making it easier to serve fast items like tea and coffee while maintaining customer satisfaction.
For offices and reception areas, our windows enhance privacy and security, giving staff peace of mind when dealing with visitors. They also help maintain temperature control, creating a more comfortable workspace. Takeaway restaurants, on the other hand, benefit from quicker transactions, particularly with home delivery drivers, leading to increased revenue.
We are proud to be the UK’s leading manufacturer of serving hatch and drive-thru windows, customdesigned to fit any building. Whether you’re looking to enhance your business efficiency or improve your reception area, we have the expertise to deliver the perfect solution.

- NORMAN COCKTAIL BAR -
Inspired by the bygone era of Normandy’s Romanesque architecture, Norman is Studiio Dangg’s interpretation of the modern-day bar, allowing for an entrancing experience. Norman is predominated through elements that subtly, but entrancingly capture light on their mildly reflective surfaces, weaving the theme of capturing oneself as a moving element. This aligns perfectly from outdoor to indoor, from the point one experiences the façade till the time they are seated indoors.
The massive fifteen feet high ceilings compliment a very tapered plan. The corners and asymmetry of the spatial extent were used such that the fitout was turned inwards in order to construct an encounter where every seat would get a view of the bar. Mimicking the polar night, the deep blue palette injects the intimacy that dictates the atmosphere
of the space. At the entrance, the façade is inviting with its reflective, chrome-plated fins, laid across the exterior in a parametric fashion. This allows for every movement to be captured, and thrown back as a distorted reflection, akin to the glimmer of light caught in the deep blue seas of the Northern Hemisphere that the Vikings were historically known to traverse.
The ridge-like form on the ridges of the wall depicts the ebbs, and flows of a Viking castle tucked into a mountain is represented through the asymmetrically curving wall paneling that is yet again a deep blue in a satiny finish, creating a contrast of a much softer perception of a wall that feels as if it is unceasingly moving along with you. This is enhanced by the mirrors on the ceiling organically flowing along the walls, creating an endless interaction with the reflection. Abutting it, a grid of moldings is scattered across the ceiling, which are then broken with a shallow dome in the center, housing a screen, and accommodating the modernity of a high-energy bar. This introduces the second focal point in the space.
The moldings are a modern take on and are reminiscent of the Frieze detailing found typically in Normandy’s cathedrals. The backlighting of the moldings detaches it from the actual ceiling surface, making it appear suspended in air, consistently creating an allure that one can’t help but pay attention to. The varied forms of arches pay homage to the Norman arches that largely affected Romanesque architecture. Between the arches sits the DJ console, creating yet another focal point for the patron’s attention to oscillate across the space – almost compelling them to take in every corner with every gesture.
Introducing yet another arched form with more rectilinear proportions, heavy moldings frame the bar back. It is a wall of glass bricks laid atop a surface of brass sheet, creating a warm glow as the light hits it, akin to light playing on water. The undulation in the glass bricks injects yet another surface that subtly but entrancingly captures movement on its mildly reflective surface, continuing the theme of constantly capturing oneself as a moving element in the space. The bar front is elevated from the floor with a high brass skirting, making it appear floating. Norman as an experience is heavily guided by subtle elements that are stretched across space, weaving a singular emotion in multiple places.

The hospitality industry is constantly innovating to enhance guest satisfaction while managing costs and environmental impact. One standout solution is the Valiryo Body Dryer, a groundbreaking device designed to elevate the post-shower experience while offering significant benefits for hotels, spas, and other establishments.
By addressing two key challenges—bathroom humidity and sustainability—Valiryo creates value across guest experiences, operations, and environmental stewardship.
Excess humidity in hotel bathrooms can damage fixtures, warp wood, rust metal, and promote mold growth, driving up maintenance costs and compromising hygiene standards. Valiryo Body Dryer tackles this issue by using 27 air diffusers to circulate dry air, reducing relative humidity and preventing condensation.
This innovative approach extends the lifespan of bathroom fixtures, reduces maintenance expenses, and keeps spaces cleaner and more hygienic. Guests also enjoy a warm, dry environment post-shower, free from dampness and fogged mirrors, leaving a lasting impression of comfort and care.
Towel management—washing, drying, and replenishing—is resource-intensive. Valiryo streamlines operations, lowers utility bills, and significantly reduces a hotel’s carbon footprint. This also frees up valuable storage space and cuts clutter.
Adopting Valiryo further supports environmental efforts by reducing water consumption, detergent use, and CO2 emissions associated with laundry processes. These savings align with the growing demand for sustainable tourism while benefiting hotel bottom lines.
Valiryo Body Dryer is adaptable to any hospitality setting, from boutique hotels to large resorts. While savings depend on room capacity and occupancy, the potential for cost and resource reduction is considerable. For a personalized analysis, visit Valiryo’s website (www.valiryo.com) to request a tailored savings report.
By addressing humidity challenges and reducing towel dependency, Valiryo Body Dryer offers a compelling combination of comfort, sustainability, and efficiency. Hotels can lower maintenance costs, enhance guest satisfaction, and embrace a greener future—all with one smart innovation.
Sustainability is essential in hospitality, with guests demanding eco-friendly practices and governments enforcing stricter regulations. Valiryo Body Dryer supports these goals by minimizing towel dependency, which reduces water, energy, and labor costs. www.valiryo.com

A new gastronomic oasis unveiled in Bruges, with interiors and branding by WeWantMore.
A new restaurant on the ground floor of Hotel Portinari is a design and branding response to the ever-changing restaurant landscape in Bruges.
Dark hues, a play of light and unusual textures inform a new Bruges restaurant, Cult, designed by Antwerpbased studio WeWantMore.
Launched by renowned sommeliers Luk De Rooze and Kees Dobbelaar, Cult space brings their love of wine and grilled meat to a new concept and location.
Portinari, the city of Bruges and its well-known painters, such as Hans Memling who painted a portrait of Tomasso Portinari, were the inspiration behind WeWantMore’s design for this new restaurant.
The result is a dramatic setting with an intense play of chiaroscuro: strong natural light that contrasts with a dark interior enriched by interesting textures. The veranda is light and intimate, and the bar in the back adds drama.
“When Luk and Kees approached us to design Cult, we wanted to create something people would remember and want to come back to again and again. The design teams – both on the interior design side and the branding side – wanted to create a space with high drama that was also restrained in a very Belgian way.” Nancy Cool, Interiors Design Director at WeWantMore.
In the bar, a burgundy red volume above the bar sets the scene. The bar itself is a proof-point of luxury with dark veneer, velvet fabrics and leather detailing.
The marble countertop has dark red veins, referencing the meat dishes served in the restaurant. Subtly lit wall panelling upholstered in tactile cow hide offset wine-coloured sofas.
Through arched doorways cleverly clad in reflective steel, the veranda is dedicated to diners and flooded with natural light. The play of light continues with a steel-clad waiters’ station that cuts the space in two.
As well as the interior, WeWantMore was responsible for the branding of Cult. Sharp colour contrasts, moody lighting and the play of red tones dominate the photography. The logo is created with sharp lines as though it was cut by the ultrasharp cooks’ knives. The typography chosen is LL Bradford offering a wide variety for informal but also very serious usage.

As we begin the new year, hospitality businesses are already looking ahead to the top emerging trends of 2025 and how they can best reinvent themselves this year. We at Alliance Online have spent time researching the top emerging trends within hospitality and predict the following three to feature heavily this year.
Mexican cuisine is emerging as a vibrant trend in hospitality, capturing the spirit of authenticity and celebration. Characterised by bright and bold colours, both in décor and culinary presentation, this style brings a lively energy to dining spaces. The rise of “street food” style eating resonates with diners seeking casual, interactive, and shareable experiences.
Authentic and diverse menu items, such as tacos, tamales, and fresh salsas, showcase the depth of Mexican culinary traditions while catering to adventurous palates. Tequila and tequila-based cocktails, including classics like margaritas and innovative infusions, are central to the experience, offering an engaging way to explore Mexico’s rich beverage culture. This trend encapsulates a sensory feast that appeals to modern diners looking for both comfort and excitement.
Turkish cuisine is gaining traction as a refined and contemporary trend in hospitality, moving beyond its well-known association with kebabs to showcase
its rich and diverse culinary heritage. Emphasising muted, soft colours in décor and plating, this style creates a calm and inviting atmosphere that highlights the warmth of Turkish hospitality. Communal-style eating is central, encouraging diners to share and connect over beautifully arranged spreads.
The best way of incorporating this into your menu is with traditional dishes like mezes, gözleme, and slowcooked stews, while allowing space for customisable dining experiences with a variety of side dishes and extras to enhance the meal. This approach not only redefines Turkish dining but also appeals to modern diners seeking a curated yet interactive culinary journey.
The emerging Back to Nature trend in hospitality reflects a growing desire for venues that foster relaxation, connection, sustainability, and inclusivity in harmony with natural elements. Featuring natural and soft earthen tones, these spaces create a calming ambiance that feels welcoming and grounded. With a focus on a casual and relaxed atmosphere, these venues cater to a diverse clientele, blending the warmth of traditional coffee shops with the sociability of bars.
The rise of hybrid venues – day bars serving both hot drinks like artisanal coffees and teas, alongside a curated selection of alcoholic beverages – offers versatility for any time of day. Emphasising inclusivity, these establishments are designed to be family and pet-friendly, encouraging community engagement and making them ideal for gathering in a serene, nature-inspired setting.
Alliance Online have identified the above three trends as ones to watch for 2025. We as a business have multiple ranges and products which can help your business embrace and showcase the above concepts into your venue. As all three ranges demonstrate, there will be a big onus on communal dining so ensure you are stocked up with crockery and serveware to help facilitate this trend.

In 2018, a Barclaycard study found that 1 in 20 customers walked out without paying their food or drink tab, and in the current climate, the numbers are increasing. The hospitality industry has been plagued with dine-and-dash since the cost-of-living crisis and the pinch on everyone’s wallet. A few bad apples leaving a bar, pub, or restaurant without paying can cost the venue hundreds, if not thousands, of pounds every year.

Does your hotel have Propress on its radar?
If not, it’s time to check Propress MINI, our handheld steamer, into your hotel. The Iron Age is over; there’s no need to clutter your guests’ storage space with a cumbersome iron and board.
Established in 1980, Propress is the original steaming brand supplying shops, soft furnishers, hotels, and resorts — removing creases in fabric wherever they appear. Our steamers are the highest-quality, longestlasting, and most reliable on the market.
In hotels, professional steamers have traditionally been used for housekeeping, banqueting and events, to provide a five-star freshening and anti-creasing touch to staff uniforms, curtains, tablecloths, and chair covers. (Steaming even kills bed bugs and their eggs almost immediately.)
Propress MINI can be used on a variety of clothing, from suits to dresses, and even delicate fabrics. It’s so versatile, it can be used vertically, for hanging fabric, or horizontally on bed linen and upholstery.
Guests often look to remove creases from clothes when unpacking or after a few days’ stay, especially those travelling for business or individuals attending events where wrinkle-free clothing is important.
Coupled with its ability to treat delicate materials, the Propress MINI is ready to go in just 45 seconds, making it a match made in heaven for wedding attendees. As the old saying goes: “Steam if you want to go faster!”
The Iron Age Is Over
• More wardrobe space without an ironing board
• Easier to use and more guest friendly
• Projects a contemporary image for your hotel
• Less damaging to clothes.

Nestled amidst the natural beauty of the Bergamasque Alps and Lake Iseo, the Collina Luxury Relais is the only 5-star hotel in Valseriana. Perched on a panoramic hilltop, in one of the most privileged areas of the Clusone plateau, just a few kilometres from Bergamo and the ski resorts of Colere and Monte Pora, it is the ideal place to regenerate body and mind. The project, resulting from a renovation of the existing volumes, designed to blend in seamlessly with the surrounding environment, while at the same time meeting the needs of a modern accommodation facility with some new extensions, aims to strike the perfect balance between tradition, innovation and contemporary design.
Upon arriving at the hilltop, guests can park their cars in the new car park, equipped with photovoltaic canopies and electric vehicle charging stations, and then be welcomed by the hotel staff in a completely underground space and cross a tunnel lined with flowers and climbing plants. From this
point, guests reach the first body of the facility, developed horizontally to provide architectural continuity to the wonderful indoor and outdoor pool, surrounded by an immaculate lawn with a solarium and panoramic views. In the basement, the spa, connected to and also accessible from the outdoor spaces, is equipped with saunas, steam room, sensory showers, and relaxation rooms. A bar and restaurant with sun-drenched terraces overlooking the splendid Val Seriana complete the first architectural body, the beating heart of this splendid retreat.
A genuine paradise immersed in a forest, a perfect synthesis of luxury, sustainability, and high technology, in full respect of the environment. Natural and locally sourced materials create a seamless connection to the surrounding landscape:
from reclaimed wood to Ceppo di Grè or lake stone, as well as glass, to create large glazed façades, to blur the lines between indoors and out. Every system in this facility is designed to be highly energy efficient, making it as self-sufficient as possible. Geothermal cogeneration harnesses the Earth’s natural heat to produce electricity.
And it is precisely within this eco-conscious environment that Vimar’s Linea wiring series fits in. Designed with a sustainable approach, by replacing conventional fossil-fuel based plastics with plastics from recycled and renewable sources, thanks to optimised production processes and the use of FSC certified eco-sustainable packaging, a more than 80% reduction of CO2 equivalent emissions produced can be recorded, saving more than 500 tonnes of CO2
each year. Installed in the total look black version, with axial and home automation system controls, connected to the KNX hotel management system for automated control of curtains, roller shutters and lights, Linea fits in with its clean-cut and unmistakable design, adding another touch of sustainability to the environment. Absolute flatness, focused on total alignment between the connector block and the cover plate, with a sleek and light-weight profile that discretely protrudes in any area of the hotel: on the wooden walls of the guest rooms, in the bathrooms, and in all the communal spaces. The cover plates and controls have been customised to elevate the identity of the project: at the “Collina Relais”, the series has been engraved with the facility logo and the buttons have been customised thanks to an extensive library.
Designed for the comfort of those who want to experience an immersive stay in the surrounding forest, the 12 rooms and suites, furnished in contemporary Alpine Style, are characterised by natural colour combinations and an extraordinary attention to detail, through the use of antique woods,
glass, natural fabrics, stone, and marble. Guests can choose between 5 romantic independent wooden chalets, with Jacuzzi and private garden, or among the 7 suites located in the villa, which preserves its original volumetric and structural space, and is located in front of the main wing, dedicated to services.
A truly unique experience of sustainable luxury, powered by Vimar’s positive energy. Guests staying at the “Collina Relais” can experience the harmony of nature and nurture, thus improving their physical and mental well-being.
