According to Jose Manuel García, it is never just one of these things, but the special something that comes from all of it together, including the company you’re with and the personal connection you feel to the place you’re going. García is Operations Director at the Grill & Garden in Los Senderos. The food concept is captured in the name: grilled steaks, vegetables and seafood plus herbs, greens & vegetables from the garden. The staff is tending an onsite organic garden where they actually grow some food for use in the restaurant. To help people engage with the abundant natural beauty and each other, José has made the bold decision not to offer Wi-Fi. You are invited, instead, to dine under the big sky, far from commotion of town, to hear the birds and relax. Whether with a romantic partner, a group of friends, or the whole family (kids and pets are welcome).
Volviendo a las raíces ¿Qué es lo que más recuerdas de cenar fuera de casa? ¿El vino, algún exquisito platillo, la decoración? Según José Manuel García, no es sólo una de esas cosas, sino un algo que resulta de su conjunto, incluyendo la compañía con la que se está y la conexión personal que se siente hacia el lugar que visitas. García es Director de Operaciones del Grill & Garden en Los Senderos. El concepto de su comida se refleja en el nombre: carnes a la parrilla, verduras y mariscos, además de especias, verduras y vegetales de su huerto. Su personal tiende un huerto orgánico local, donde realmente cultivan comestibles para su uso en el restaurante.

Casual Elegance Bu’i, the inviting new restaurant at Otomi, offers an excellent opportunity for a leisurely yet elegant, open-air dining experience. The food is simple, fresh and nicely done. You are welcome to gather with friends at any number of outdoor tables. Enjoy the food and a glass of wine while taking in the view of the reservoir, adjacent green fields and big desert sky. Kids are welcome and will be entertained for hours with on-site bicycles, a grass volleyball court, croquet and horseshoes. The menu includes ceviches and soups, grilled corn on the cob with homemade mayonnaise, hamburgers, steaks and “Plates for Sharing”. The latter includes cauliflower au gratin, quiche, grilled mussels, oysters or vegetables and eggplant ragout placed on the table for you and your friends to share. Ask about the picnic basket option, where you can enjoy your chef prepared picnic anywhere on the property. Owner Daniel Estebaranz is also hosting the not to be missed Mesabierta, part of Enrique Olvera’s Mesamerica, at Bu’i in late March.

Sweet Water Catering Tasty Delights • Comida Rica
There’s a new catering company on the block, and they are rocking the healthy food scene. Saturdays you can find Jozé and Andrea at the TOSMA organic market selling out of their inspired non-gluten, dairy free desserts. Try the moist Zucchini Chocolate Cake (with coconut & almond flour), or the rich Raw Avocado Lime Pie with a coconut & nut crust, or their chewy Amaranth Chocolate Chip cookies. They make a point of buying from local, and whenever possible, organic, providers. Some of their products are for sale in local stores, including their non-gluten & dairy free Flaxseed Focaccia. Their youngest son was born with sensitivities to dairy, preservatives and gluten. Andrea researched alternatives to mainstream food options, and channeled her considerable cooking skills in this healthy direction both at home and professionally. For catering, the raw cauliflower ceviche is spectacular. All of their internationally inspired creations are tasty, fresh and made with love.
Hay una nueva empresa de servicio de catering en la cuadra, y están sacudiendo la escena de la comida sana. Los sábados, se puede encontrar a Jozé y Andrea en el mercado orgánico TOSMA vendiendo sus inspirados postres sin gluten y libres de lácteos, hasta agotar existencias. Prueba el rico pan de calabaza con chispas de chocolate (con coco y harina de almendra), o el suculento pie de limón, aguacate y miel con corteza de coco y nuez, o sus masticables galletas de amaranto con chispas de chocolate. Jozé y Andrea se aseguran de obtener insumos sólo de proveedores locales, y siempre que sea posible, orgánicos. Algunos de sus productos están a la venta en tiendas de San Miguel, incluyendo su focaccia de linaza sin gluten ni lácteos. Su hijo más pequeño nació con sensibilidad a los productos lácteos, los conservadores y el gluten. Andrea investigó alternativas para incorporar opciones a la comida, y dirigió sus enormes habilidades en la cocina hacia esa saludable dirección, tanto en casa como en lo profesional. Como ejemplo de sus delicias, el ceviche de coliflor cruda es espectacular. Todas sus creaciones de inspiración internacional son sabrosas, frescas y hechas con amor. Can there be such a thing as healthy sausage? Well, at The Good Food Café you can at least buy locally made, preservative free sausage. I spoke with Geneva Gray, co- owner of this new little eatery in San Miguel. Opening a “farm to table” café had been a dream of hers. Geneva envisioned offering American comfort food with local, good quality ingredients. And part of her American culture includes yummy things like bratwurst, kielbasa and sausage. Geneva buys the pork and natural casings from a local butcher, uses herbs from her garden and spices from the market. No preservatives, no nitrates. And a very hands-on stuffing process. For this reason the product is vacuum packed and immediately frozen for longevity. They currently sell 4 very delicious kinds of sausage: Spicy Italian, Sweet Italian, Ginger Sage Breakfast Patties, and Bratwurst A tip for cooking the links: simmer both sides first in a very small amount of water, then grill or fry to finish. ¿Existe tal cosa como una salchicha saludable? Bueno, al menos en The Good Food Café puedes conseguir salchichas sin conservadores, hechas con ingredientes locales. Conversé con Geneva Gray, co-propietaria de este pequeño nuevo restaurante en San Miguel. Abrir un café tipo “de la granja a la mesa” había sido uno de sus sueños. Geneva tuvo la visión de ofrecer comida americana preparada con ingredientes locales de gran calidad. Y parte de su cultura americana incluye cosas muy sabrosas como el bratwurst, las kielbasas y las salchichas. Geneva compra la carne de cerdo y la tripa natural con un carnicero local, utiliza hierbas de su jardín y especias del mercado. Nada de conservadores o nitratos. Y ella misma se ensucia las manos con el proceso de rellenado. Por esta razón, el producto se empaca al vacío y se congela inmediatamente para garantizar su longevidad. Actualmente venden 4 deliciosos tipos de embutidos: Italiana Spicy, Italiana Sweet, Bratwurst y Ginger Sage Breakfast Patties para el desayuno. Un consejo para cocinarlos: primero cuece ambos lados en muy poca agua, y se pueden terminar asando en la parrilla o friendo en el sartén.

What many of us love about living in the desert, aside from great weather, is the vast expanse of open sky. A great way to enjoy the majesty of our high desert town is to head up to the romantic lookout point on the hillside to the East, right on the Salida a Queretaro near calle Piedras Chinas. The view of town is framed by trees and flowering bushes (in March & April the gorgeous jacarandas are in bloom). Always visible is the growing expanse of town, the iconic Parroquia and the soothing distant mountains. It’s best to go in the late afternoon to enjoy all the shops and the artesian market before taking in a stunning desert sunset. You can find sweet treats, micheladas and many crafts for sale close by. A second spectacular lookout, from an even higher vantage point, is off the winding Caracol, but you’ll need to bring your own picnic, as there are no little shops nearby.

Lo que a muchos de nosotros nos encanta acerca de vivir en el desierto, aparte del buen clima, es la gran extensión de cielo abierto. Una gran manera de disfrutar de la majestuosidad de nuestro pueblo del alto desierto, es ir hasta el romántico mirador en la ladera Este de la Salida a Querétaro, cerca de la calle de Piedras Chinas. La vista de la ciudad está enmarcada por árboles y arbustos con flores (en marzo y abril, las jacarandas florecen bellamente). Siempre visible, es la creciente expansión de la ciudad, la emblemática Parroquia y las vastas montañas lejanas. Lo mejor es ir por la tarde para disfrutar de todas las tiendas y del mercado de artesanías, antes de contemplar una impresionante puesta de sol. Ahí cerca encontrarás dulces, micheladas y muchas otras cosas a la venta. Otro espectacular mirador, en un punto aún más alto, está al lado del sinuoso Caracol, pero tendrás que traer tus propias provisiones, ya que no hay tienditas cercanas.

Luthier • LAUDERO A Touch of Artistry • Un Toque de Destreza A luthier is someone who makes, and repairs, stringed wooden instruments like guitars, violas, and violins. It’s a dying art, as more and more instruments are mass- produced. There is only one school in Mexico where this craft is taught, only two in all of Latin America. San Miguel is lucky enough to have its very own luthier in town, Sergio Huerta, a graduate of the luthier school of the Instituto Nacional de Bellas Artes, and native of Queretaro. He has been making instruments for over two decades, and just recently moved his workshop to the newly renovated Centro Cultural Ignacio Ramírez “El Nigromante”, commonly referred to as “Bellas Artes”. The wood used for the face of these instruments, called the tapa, is usually imported from Germany where, Sergio tells us, the Germans planted a forest of Pino Abeto over 200 years ago, with the express intention of cultivating wood for instruments. And they waited 150 years before they began harvesting!

Un laudero es una persona que hace y repara instrumentos de cuerda de madera como guitarras, violas y violines. Hablamos de que es un arte en vías de extinción, a medida que cada vez más instrumentos se producen en masa. Sólo hay una escuela en México donde se enseña este oficio, y sólo dos en toda América Latina. San Miguel de Allende tiene la suerte de contar con su propio lutier, Sergio Huerta, originario de Querétaro y graduado de la escuela de laudería del Instituto Nacional de Bellas Artes. . Él ha estado haciendo instrumentos durante más de dos décadas y hace poco trasladó su taller al recientemente renovado Centro Cultural Ignacio Ramírez “El Nigromante”, comúnmente conocido como “Bellas Artes”. La madera utilizada para la cara de estos instrumentos, llamada tapa, por lo general ha sido importada de Alemania, donde, Sergio nos dice, los alemanes plantaron un bosque de Pino Abeto hace más de 200 años, con la expresa intención de cultivar su madera para construir instrumentos. ¡Tuvieron que esperar 150 años antes de comenzar la primera cosecha!

Hay muchos tipos diferentes de maderas nativas a México que pueden ser utilizadas para construir el resto del instrumento. México en realidad ocupa el tercer lugar en el mundo como país con la mayor diversidad de árboles (Brasil es el primero, después de la India).
There are many different types of wood native to Mexico that can be used for the rest of the instrument. Mexico is actually ranked third in the world for the country with the largest variety of trees (Brazil is first, then India). In addition to making instruments upon request, Sergio offers both group classes, through Bellas Artes, and individual tutoring. For a new student it might take one year to complete the process of making a guitar.
Además de fabricar instrumentos bajo pedido, Sergio ofrece tanto clases en grupo a través de Bellas Artes, como lecciones individuales. A un estudiante nuevo podría tomarle un año completar el proceso de aprendizaje.
Our talk with Sergio finished by touching on the ineffable qualities that make an instrument what it is. There is a coming together of the once live, raw materials and the expertise of the craftsmen. There is the constant tension of the strings, and subsequent, ongoing maturation of the instrument. This system of forces is created to express vibration, to convey energy in motion reflecting multiple layers of artistry: luthier, composer and musician. Sergio is fortunate to have an international clientele of musicians seeking out the unique qualities of his creations as a platform for their interpretations.

Nuestra conversación con Sergio terminó abordando el tema de las inefables cualidades que hacen de un instrumento lo que es. Hay una unión que se forma entre las una vez vivas materias primas y la experiencia de los artesanos. Existe una tensión de cuerdas constante, así como el subsecuente proceso de maduración del instrumento. Este sistema de fuerzas se crea para expresar la vibración, para transmitir la energía en movimiento que refleja múltiples capas de destreza artesanal: laudero, compositor y músico.

POLICÍAS DE BASQUIAT Jean Michel Basquiat (1960-1988) an American artist, was expelled from several schools for his innate rebelliousness. His world was the street where he felt free, where he met underground culture and the cruel world of drugs. His interest in painting began with drawing comics of his favorite subjects: Alfred Hitchcock, President Nixon, cars, wars, weapons and, especially, the head of the FBI, J. Edgar Hoover. He never went to any art school; his transition happened through graffiti. Su mundo fue la calle, donde se sentía libre; ahí conoció la cultura underground y el cruel mundo de las drogas. DOLPHIN MAN, GREECE

Long before stories were written there were tales that tell of the friendship between men and dolphins. The Greeks, in ancient times, were particularly fruitful in these kinds of stories. There are beautiful mosaics with figures of these intelligent animlas in more then one temple and palace. In Delos, for example, one can find the “house of the dolphins”, named precisely for its mosaics. In Crete, there is a palace whose facade is decorated with these marine animals.
Desde mucho antes que las historias comenzaran a escribirse, existen relatos que cuentan de la amistad entre hombres y delfines. Los griegos, en la antigüedad, son particularmente fecundos en este tipo de relatos. Existen hermosos mosaicos con figuras de estos inteligentes animales en más de un templo y palacio. A detail of the facade of the famous Paris cabaret, the Folies Bergere, which had its peak from the 1890 -1930. In the late twentieth century, as a result of the relative public disaffection of these shows, theater became used for operettas, comic opera, popular music, and acrobatics. The current façade is from the 1930s and Art Deco in style. Detalle de la fachada del célebre cabaret de París: el Folies Bergére, que tuvo su mayor esplendor entre 1890 a 1930, a finales del siglo XX. Como consecuencia del relativo desinterés del público por los espectáculos de revista, el teatro pasó a ser utilizado para operetas, ópera cómica, música popular, y acrobacias. La fachada es art déco y data de la década de 1930.

Detalle de un jarrón estilo micénico. Al principio de esta época, circa 1600 a. C., la cerámica que aparece está animada con motivos de elementos de la naturaleza. Después del 1400 a. C. esta cerámica fue la predominante. Estaba influida fuertemente por los estilos de la Creta minoica. Lo más destacado son las jarras de estilo palacial, jarras de almacenamiento muy elegantes, decoradas con llamativos motivos florales y marinos.

It was strongly influenced by the styles of Minoan Crete. Highlights are palatial style jugs, very elegant storage jugs, decorated with bright floral and marine motifs.

Reflected are the different behaviors or scenes of human beings in everyday life. Incidentally, the artist maintains that the human figure “is internalized, split and exposed, becoming a pretext for expressing a basically organic concept, close to the established order of nature.”

B’nai Or Cultural Richness • Riqueza Cultural The cultural group B’nai Or (Children of Light) has consistently been involved in the cultural life of San Miguel de Allende. This group formed organically more than three years ago, with the participation of renowned artists, musicians, poets, actors, art collectors and free thinkers who somehow identified with the concepts that were generated, and with the energy that vibrated in the group through their works. The way in which the group operates is through the different exhibition spaces that are at the Instituto Allende and the Calle de Jesus. These spaces have hosted excellent lectures, concerts by the group Los Profetas del Amor, and plays by the San Miguel theater group, El Tequio. They have produced various short films and made film presentations. B’nai Or has also been very active in various publications, with articles which express their views on art. They have published poetry, and most recently the book, “The Return of the Gods” by artist David Leonardo.

El grupo cultural B´nai Or (Los Hijos de la luz) ha estado constantemente participando en la vida cultural de San Miguel de Allende. La manera en la que el grupo B´nai Or se desenvuelve, es a través de los diferentes espacios de exposición que se encuentran en el Instituto Allende y en la Calle de Jesús. Estos espacios han sido sede de excelentes conferencias, conciertos del grupo Los Profetas del Amor, obras de teatro de El Tequio de San Miguel, así como han producido diferentes cortometrajes y películas de sus presentaciones. También han tenido una participación muy activa en diferentes publicaciones, con artículos donde manifiestan sus conceptos sobre el arte. Han publicado poesía, y muy recientemente el libro “El Regreso de los Dioses” del artista David Leonardo.

Every Sunday, and some Thursdays, a dedicated group of hiking lovers meet at the Pemex on Salida a Celaya at 8AM to embark on a day in nature. First thing you should know, don’t be late! No reservations, just show up. Next thing: come prepared. Bring water, nuts, fruit or chocolate, wear a hat, comfortable walking shoes and long pants (even if it’s hot), and bring sunscreen. It’s also a good idea to dress in layers. Depending on the amount of folks who show up, a hike or two will be decided upon, and off you go! Car-pooling is the norm; cars not being driven stay parked at the Pemex station. Jock Ferguson, an intelligent and lively 72-year-old Canadian, spearheads this hiking community. He has been exploring the area around San Miguel for over 11 years, and knows over two dozen great hikes. It is incredibly rewarding to enjoy a gorgeous day in the natural environs while sharing inspiring conversation on the trails.

Él ha estado explorando los alrededores de San Miguel por más de 11 años, y conoce más de dos docenas de extraordinarias rutas para excursiones. San Miguel Holy Week • Semana Santa One of the most solemn celebrations in San Miguel is the Holy Week that begins with the pilgrimage, bringing the Señor de la Columna (Lord of the Column) from Atotonilco. The celebration includes fireworks and singing from church to church, ending at the Temple of San Juan de Dios.

CUBA FEST More Than Just Music • Más Que Sólo Música What began as a small annual gathering of artists and Cuban culture aficianados in SMA has since grown into a large and popular festival extending, this year, to include venues in Guanajuato and Dolores Hidalgo. Saint Patrick’s Day Celebrating Irish Culture and Heritage Celebrando la Cultura y Patrimonio Irlandes “If you’re enough lucky to be Irish... You’re lucky enough!” Every year, March 17th marks St. Patrick’s Day. It is a celebration for St. Patrick and the arrival of Christianity to Ireland, as well as Irish heritage and culture in general. Celebrants wear green clothes, and shamrocks abound. It is said that St. Patrick used the shamrock as a tool to talk about the doctrine of the Trinity in his teachings. The Irish are well known for their gift of gab, their wit and their love of drinking. U2, Guinness, Oscar Wilde, Samuel Beckett and James Joyce are some of the amazing things and people Ireland has produced. Not to mention their single malt whiskeys! Eating and drinking restrictions for Lent are lifted on March 17th, so lots of drinking happens on this day, as well as parades, the playing of bagpipes, laughter and step dancing. If you decide to buy a work of art while travelling internationally, the work will be carefully packaged in bubble wrap and shipped in a wood crate made specifically for the journey. It is important to hang the piece so that it does not receive direct sunlight, as ultra violet rays can fade the colors over time. Other considerations are ambient temperature and humidity. Ideally, to preserve the integrity of the work, once established at beneficial levels, there should not be drastic changes. As René Parra so beautifully says, “a buyer of a work of art is acquiring a rosary of memories, of that moment in life, and in that place of acquisition.” It’s worth it.
