Aguamiel, Pulque y Miel de Maguey
There are images of Mayahuel in the codices of the Aztecs, part human & part plant, feeding her hungry and thirsty children from her body. Mayahuel is the spirit, or goddess, of the maguey, which has been around for centuries, built to survive droughts, providing aguamiel, pulque, agave syrup, fibers for clothing, food for animals, and more, to her people.
Hay imágenes de Mayahuel en los códices aztecas, parte humana y parte planta, alimentando de su cuerpo a sus hambrientos y sedientos hijos. Mayahuel es el espíritu o diosa del maguey, que ha existido durante siglos, sobreviviendo sequías y proporcionando aguamiel, pulque, miel de maguey, fibra para prendas de vestir, alimento para animales, y más, para su pueblo.
Cristina Orcí Fernández, an activist in educating local people on the benefits of planting and working with this accessible plant and its products, took us to a local farm where aguamiel is harvested by Soledad Rodríguez and her family.

We learned that aguamiel, or honey water, is harvested from the maguey when it is 12- 14 years old. The tlachiqueros, or maguey workers, first remove the thorns from the leaves so they can climb up onto these beautiful beasts; next, the heart of the plant is extricated. The hollowed out space begins to weep, as liquid seeps from the sides, filling the empty space. For the first week, the liquid is too al-
Nos enteramos de que el aguamiel se extrae del maguey cuando éste llega a los 12 o 14 años de edad. Los tlachiqueros, o trabajadores de maguey, primero remueven las espinas de las hojas para poder subirse a estos hermosos titanes, y seguidamente, desprenden el corazón de la planta. The maguey will produce 3–8 liters a day for about 4 months. In warm weather, the liquid will be scooped out, and the sides scraped, three times a day. A stone is placed over the hole in between gatherings to keep insects and animals out.
El maguey producirá de 3 a 8 litros al día durante unos 4 meses. Con buen clima, el líquido será sacado y los lados raspados tres veces por día; una piedra será colocada sobre el agujero a fin de mantener alejados a insectos y animales.
Contemporary studies have shown that aguamiel and pulque contain all 22 amino acids, including the 9 essential ones, making it a complete protein. It is also alkalizing, and has vitamin B & C, iron, potassium, magnesium & phosphorous. Amazing!

Pulque is a fermented and slightly alcoholic drink made by adding aguamiel to a base of pulque, kind of like making yogurt by adding yogurt to milk. So the molecules of pulque have been passed down since the time of the Aztecs, carrying forward the tradition of many generations. Even up until a few decades ago it would have been found on many dinner tables in San Miguel, before sodas and beer became ubiquitous.

Las moléculas del pulque se han transmitido desde la época de los aztecas, manteniendo viva una tradición de muchas generaciones. Incluso hasta hace unas décadas, se habría podido encontrar sobre muchas mesas a la hora de la cena en San Miguel, antes de que los refrescos y la cerveza se volvieran omnipresentes.

mezcal When things are bad, mezcal, when things are well, as well! “Para todo mal, mezcal, para todo bien, también.”

There is some confusion about, and indeed overlap between, mezcal and tequila. Tequila is technically a mezcal, as mezcal is the broader name for distillations of agave, but in this day and age, there are many distinctions. For example: as per current regulations, mezcal is bottled in Mexico, and must be made from 100% agave*, unlike tequila, which can be cut with other alcohols and bottled out of the country.
Hay cierta confusión acerca de, y de hecho superposición entre, el mezcal y el tequila. El tequila es técnicamente un mezcal, ya que mezcal es un nombre que abarca todas las destilaciones del agave. Por ejemplo: según la normativa vigente, el mezcal se embotella en México y debe ser 100 % de agave*, a diferencia del tequila, que puede mezclarse con otros alcoholes y embotellarse fuera del país.
Also, tequila must be made, in part, from Blue Agave, whereas mezcal can be made from any of 28 different varietals of maguey, Espadín and Tobalá being the most common.
Además, el tequila debe hacerse en parte, de Agave Azul, mientras que el mezcal se puede hacer de cualquiera de las 28 diferentes variedades de maguey, Espadín y Tobalá siendo las más comunes.
Both are made from the heart of the agave, or what is known in the U.S. as a Century Plant, surprisingly not a cactus, but a member of the Lily family. It is harvested one time only, usually when the plant is a minimum of 5 years old (depending on the type of maguey), unlike grapes vines that keep giving.
Ambos están hechos del corazón del agave, o lo que es conocido en Estados Unidos como el Century Plant, que sorprendentemente no es un cactus, sino miembro de la familia de los lirios. The true beauty and value to most mezcal production is that it is still artisanal, made in small family palenques by traditional method, mostly in the state of Oaxaca. Here, the piñas, or hearts, are roasted for three days in a deep, rock-lined pit. This roasting process is what gives mezcal its distinctive smoky taste. Once roasted, the piñas are mashed by hand with

clubs or with a stone wheel pulled by a horse. Next it’s fermented in large wooden vats of cedar, pine or juniper. Commonly fermented without starter, the process takes 10-20 days. Copper or clay stills are used for distillation, the choice greatly impacting the taste. Some mezcals are distilled once, others two or, rarely, three times. At this point, different finishing processes are available. A “joven” or “blanco” is left alone, ready to enjoy. A resposado will be rested in an oak barrel for up to a year, an añejo will be aged a year or more. To create a pechuga or especial, a turkey breast, herbs and fruit are placed between the steam and the pipes, smoothing out, and adding to, the flavor. To create curativos or infused mezcals, after distillation the alcohol is soaked in herbs or fruit. Mezcal is traditionally served room temperature, and drunk from a jícara, or carved gourd cup. Bottles can sell for $20 - $200 USD. *In this article, and in my research, agave and maguey are used interchangeably, although technically, agave is the Genus, maguey the Species. Después, la masa se fermenta con sus propias levaduras en grandes tinas de madera de cedro, pino o sabino. Este proceso dura de 10 a 20 días. Alambiques de cobre o barro se utilizan para la destilación, afectando en gran medida su sabor. Algunos mezcales se destilan una vez, otros dos, o en raras ocasiones, tres veces. En este punto, hay diferentes procesos de terminado. El “joven” o “blanco” está listo para disfrutarse en dos meses. El reposado descansará en barrica de roble por un máximo de un año; un añejo se almacena por un año o más. Para hacer una pechuga o especial, una pechuga de pavo, especias y frutas, se colocan entre el vapor y las tuberías, suavizando y complementando el sabor. Para crear curados o mezcales de infusión, al alcohol se le agregan hierbas o fruta después de su destilación. El mezcal se sirve tradicionalmente a temperatura ambiente y se bebe en una jícara o una taza de guaje tallado. Las botellas se venden entre $20 y $200 USD. *En este artículo y en mi investigación, la palabra agave y maguey se usan indistintamente, aunque técnicamente, el agave es el género, y el maguey la especie.

It includes coffee, juice or fruit salad, an entrée and a buffet filled with savory and sweet treats from tapioca pudding, cheeses, flan, olives, granola and more. You can have brunch everyday of the week here, with a complete buffet or by ordering a la carte. To our utter delight, we ordered the beef liver smothered with crispy bacon and sautéed onions. The liver was tender, the whole dish wonderfully flavorful.

Brunch also includes a juicy and colorful fruit plate with two beignets, and a breadbasket with delicious spicy corn muffins.

La AZOTEA Above and Beyond La Azotea is a hip bar and lounge offering refined international tapas. This is a no-kid zone, adult only enjoyment of refreshing cocktails, great ambient music and exquisite food with various views, including westward over the desert (great for watching sunsets). We enjoyed a Pink Ginger Martini with fresh ginger, cucumber, a touch of blueberry juice, and both regular & mango vodka. Next we tried the refreshing Drink Chus with lemon, orange, cucumber and gin. The tapas menu includes some incredible creations, including Galician Octopus, Seared Tuna, and Filet Mignon with Roquefort, and the stellar Jicama Taco. There is incredible detail and complexity to these dishes. The latter is made with a pure jicama wrap, fried leek, a breaded and fried shrimp, chili piquin and a tamarind and chipotle dressing. The result is fresh, sweet, spicy and crunchy hitting all the marks for delicious. In addition to all the above, the wait staff offer impeccable service, catering to your every need, often remembering returning customers’ regular drinks and names.

Often these days were, and are, celebrated with festivities. The food Karen is making is, indeed, a celebration of her exceptional talent. Karen emphasizes the value of high quality, fresh ingredients. The acquisition of fresh fish, seafood and other ingredients takes her to Mexico City weekly. Thousands of people from various San Miguel neighborhoods dress in colorful costumes and with masks, bending genders and mocking political figures. Marchers dance and celebrate their way from the Church of San Antonio to the Central Jardin, tossing ridiculous amounts of candies along the way. All you single ladies: if you want St. Anthony’s help finding you a partner, you must keep his image upside down, make a prayer, then wait until he brings your beloved to you!

Galería MiTOS gallery Art with Meaning This gallery opened in March with an exhibit by Antonio López Vega, a career artist from Ajijic. Antonio trained with well-known muralist Pinto in the 1970’s, and taught at Bellas Artes for 15 years. The works relate to the Legend of Michicihualli, or the creation of Lake Chapala and Ajijic, and the opening included a reading of the legend in both Spanish and English with a cello and violin accompaniment. This kind of multi-modal happening is what Mitos is all about. Curator Melissa Eidson will host events in the space where art, music, poetry and performance can be in dialogue; where creativity is alive. Stop by any Friday evening for wine or coffee and inspired conversations about art. The gallery is close to the Jardín Principal in a lovely old convent. Exhibits will change every 1-2 months, with a permanent collection of works by López Vega.

A natal chart is a recording of the location of all the celestial bodies at the time of birth (of a person, nation or situation). A natal chart is a Map. Contemporary Mexico’s “birth” is considered to be September 28th, when the Act of Independence was signed. Interestingly, in Mexico’s natal chart both Venus and Jupiter are in the 7th House. This, according to astrologer Monica Garciadiego, indicates a certain inevitability that Mexicans would be very involved with their neighbors to the north, its natural trading partner, many, in fact, living in that neighboring country. One of the most popular tools for understanding present situations and challenges for a person or a country is called a transit chart. This chart reflects the current position of planets and celestial bodies relative to the natal chart. Spring Cleanse In Traditional Chinese Medicine, Spring is the time of the liver and an ideal time to recommit to your health with a cleanse, new exercise program, or new dietary program. As we move towards the hot season you might find yourself naturally eating more salads, leafy greens and juices. If you want to do a cleanse, cut out all processed foods, meats, and grains. Eating just fruits and vegetables for 3 to 10 days will give your body a much needed rest. To focus more specifically on the liver and gall bladder, follow this diet and add a morning liver flush drink by juicing one to two limes or lemons, adding one tablespoon of cold-pressed, organic olive oil, and a small amount of garlic or ginger. Blend this and add to fresh orange juice or water. Drink first thing in the morning, followed by one to two cups of hot tea made from fennel, anise, and/or fenugreek seeds. Wait two hours before eating. And don’t forget to move!! Liver congestion, characterized by allergies, headaches, stiff achy muscles, anger, or depression is best relieved by aerobic exercise.

feldenkrais A Learning Method Moshe Feldenkrais became known in the U.S. in the 1970’s, when he was invited to to the Esalen Institute in California to share his particular somatic, yet scientific, method. Feldenkrais work is not specifically intended to manage pain, although that can be an outcome. Practitioners are often referred to as teachers, and sessions are called lessons. The work is more about students being invited, through specific lessons and suggestions, to break habitual patterns of movement and thinking, resulting in empowerment and consciousness around how we “organize” our bodies and minds. Feldenkrais himself said that his work developed out of “looking for a way to find an equilibrium between gravity and the Central Nervous System.” The work is gentle and subtle, yet profound. One can feel a sense of expansiveness and well being after doing a lesson. Going to a group class is like opening a present; you never know what will happen. According to Feldenkrais, if you practice his method,“Whatever you’ll do, you’ll end up doing it better”

5 de mayo May 5th, or the Cinco de Mayo, is celebrated more in Mexican communities in the U.S than here in Mexico, at least in the state of Guanajuato, although children do have off from school. It commemorates the date of an early victory by underdog Mexican forces against the French troops, who were double in number, in the city of Puebla in 1862. In the U.S. it has become a day of festivities to celebrate Mexican pride and culture. The Mexican troops were lead that day by General Ignacio Zaragoza, who was born in Texas when it was still a part of Mexico. It is often confused with Mexican Independence Day, which is actually on September 16th, and occurred 50 years prior to the Battle of Puebla. Parades this day see marchers dressed as both French troops, with an empty bottle of wine poking out of their back packs, or Mexican troops, both sides armed with machetes and old fashioned rifles. There’s smoke and shouting as fake battles are fought, ultimately with the Mexicans winning.

El Cinco de mayo es más celebrado por las comunidades mexicanas en Estados Unidos que aquí en México, al menos en el estado de Guanajuato, aunque los niños gozan de un día feriado en la escuela. Se conmemora la fecha de la primera victoria de las fuerzas mexicanas contra las tropas francesas, que nos doblaban en número, en la ciudad de Puebla en 1862. En Estados Unidos se ha convertido en un día de festividades para celebrar el orgullo y la cultura mexicana. Las tropas mexicanas fueron lideradas ese día por el general Ignacio Zaragoza, quien nació en Texas, cuando todavía era parte de México. En EE.UU. a menudo se confunde con el Día de la Independencia de México, que es en realidad el 16 de septiembre, y ocurrió 50 años antes de la Batalla de Puebla. En los desfiles actuales, es posible ver a los participantes disfrazados de ambas tropas, la francesa con una botella de vino vacía asomando de sus mochilas, y la mexicana, armada con machetes y rifles anticuados. Hay humo y gritos mientras batallas falsas son peleadas, con las tropas mexicanas ganando en la última instancia.

mineral de pozos Haunting Allure This little town has got something special going on. The buildings have been sun bleached over decades, leaving it looking like dried desert bones from a Georgia O’Keefe painting. But there is new life in these bones, especially since 2012 when Pozos was declared a Pueblo Mágico.
We picked up a map, available in most of the local stores, and decided to visit the ruins of the Santa Brígida mines. On the way out of town, we stopped at the newly built Tourism Center, but found no one there. Surely this will become an active center, as it houses a bike shop and the town’s only ATM.

Workmen are busy fixing up the main square, the streets and many houses. On weekends you can wander around visiting art galleries and shops, having a choice of places to eat, and hotels where to spend the night.
At the mines we took many pictures, and spoke to an elderly gentleman with missing teeth and a blind eye, who told us he was the last surviving miner. Leaving him with a generous tip, he shared rich information about his experiences.
We finished up our very pleasant day with an excellent coffee (made with a real Italian coffee machine) and homemade pastry at Café de La Fama, upstairs and on the corner of the main square. Be sure to greet Arlette, the friendly Italian/Mexican owner of this new addition to town.
We did an afternoom excursion, and were left wanting more time to enjoy this magical town. We started at Galería 6 on the main square (Jardín Juárez). This art store/gallery is run by Nick Hamblen and his partner ManRey, who also run the stylish B&B nextdoor, El Secreto. The grounds are exquisitely charming, built among the ruins of what used to be the barracks for town livestock. Arte y Diseño de Pozos is one door down, and offers a wide range of jewelry & accessories. The owner and long-time resident Eva Helena Axelson, recently opened Restaurant 325 and Su Casa hotel.

Once back in town, we drove to Venado Azul on Centenario Street. Luis Cruz Martínez, a native to Guanajuato, runs this amazing instrument shop. Luis’ passion for pre-Hispanic music inspires him to create rain sticks, didgeridoos, flutes, various kinds of drums, stone marimbas and more. He and his crew use local materials,

Evocador Atractivo En esta pequeña ciudad siempre sucede algo especial. Los edificios han sido blanqueados al sol durante décadas, dándoles el aspecto de huesos secos sobre el desierto en una pintura de Georgia O’Keefe. Pero hay vida nueva en estos huesos, especialmente desde 2012 cuando Pozos fue declarado Pueblo Mágico. Hay obreros arreglando la plaza principal, las calles y numerosas casas. Los fines de semana puedes pasear y visitar galerías de arte y tiendas, con una variedad de lugares para comer y pasar la noche.
Conseguimos uno de los mapas disponibles en la mayoría de las tiendas locales y decidimos visitar las ruinas de las minas de Santa Brígida. A la salida de la ciudad, nos detuvimos en las nuevas Oficinas de Turismo, pero no encontramos a nadie. Sin duda, éste se convertirá en un activo espacio, ya que alberga una tienda de bicicletas y el único Cajero Automático de la ciudad.
Hicimos una excursión de un día de duración, y nos quedamos con ganas de haber tenido más tiempo para disfrutar de este mágico lugar.

En las minas tomamos muchas fotos y hablé con un señor mayor a quien le faltan varios dientes y un ojo, y nos dijo que él era el último minero sobreviviente. Dándole una generosa propina, compartió una vasta cantidad de información sobre sus experiencias.
Terminamos nuestro agradable día con un excelente café (hecho con una auténtica máquina de café italiano) y repostería casera en el Café de La Fama, en el segundo piso de la esquina de la plaza principal. Asegúrate de saludar a Arlette, la amable dueña ítalo-mexicana de reciente arribo a la ciudad.
