n the cooking school “Sazón” at the Hotel Casa Sierra Nevada, the chef Emmanuel prepared this dish for us, based on the classic turkey, creating a sophisticated fine dining delight. This craft work causes the meeting between appetite and contemplation taking you to a crossroad where the taste and aesthetics coexist measuring their exquisite power of seduction.
The turkey is presented on a pumpkin puree; the fill is made with juicy 16 THIS SAN MIGUEL DE ALLENDE
ground beef, with nuts, raisins, blue barriers and almonds. All these ingredients are prepared with meat scented and cranberry. The garrison is fried rosemary leaves of bougainvillea. In his cooking classes, the chef Emmanuel will teach us how to do this and many other Christmas recipes. The warmth of the entire team at Sazón will transmit some home heat in this coming winter. he chef Donnie Masterton, founder of “The Restaurant”, invites us to his place with this spectacular dish. The icing for the roast duck has orange juice, brandy, honey, pomegranate, chicken broth, fresh thyme and balsamic vinegar. This seasoning is made in a first step by boiling pomegranate, orange juice with the brandy and honey. When the mixture is reduced, the balsamic vinegar is added and cook for 2 more minutes.

Este condimento de granada se logra en una primera fase, haciendo hervir el jugo de naranja, con el brandy y la miel de abeja. Al reducir esta mezcla, habrá que bajar el fuego, para después añadir el vinagre balsámico, y cocinarlo por 2 minutos. En una segunda etapa, las semillas de granada se licuarán con el tomillo
y el caldo de pollo por 10 segundos. El líquido obtenido, debe ser colado para después agregarlo con la reducción del brandy, hasta obtener una consistencia melosa. Esta deliciosa sazón, la podrás encontrar en The Restaurant. Cocina de gran turismo, para celebrar esta navidad.

ste es un platillo yucateco por excelencia en navidad. El pavo ideal para la cena es de seis kilogramos. Un ingrediente básico en la comida de la península de Yucatán es el Recado. El nombre de este singular elemento, proviene de la palabra “recaudo” y significa condimento.

his is for excellence a Yucatecan Christmas dish. A Six kilograms turkey will be perfect for this dinner. A basic ingredient in the Yucatan peninsulas food is the “Recado”, the name of this unique element comes from the word “recaudo” that means seasoning.
El Recado negro es una herencia de la gastronomía maya, se obtiene mezclando diversas especias. Su sabor es ahumado, y su tonalidad negra se debe al asado de los chiles secos.
The black Recado is a legacy of the Mayan cuisine, it is made by mixing various spices, and the black color comes from the dried chiles roast, the flavor is smoky.
El uso de este condimento es muy amplio en la comida yucateca. Para su elaboración se utilizan especias como clavo, pimienta negra, orégano, comino, ajo, semillas de cilantro y vinagre.

l Pato a la naranja es tradicional en épocas decembrinas, pero en Rattle no todo está escrito. Ramón Tapia es un rebelde chef, a quien le gusta romper paradigmas en la cocina. Para lograr un dorado especial en la pechuga del pato, Ramón colocó cada pieza con la piel hacia abajo en
la sartén, y esperó a tener un resultado uniforme. El sabor lo enriqueció bañando cada trozo con la grasa desprendida de la jugosa carne por poco más de cuatro minutos. La salsa de frutos rojos tiene como base vino tinto, con ralladura de jengibre y naranja. Esta mezcla al re-

he duck a l’orange is a traditional dish in celebration times, but not everything is written at the Rattle. Ramon Tapia is a rebel chef who likes to break paradigms in the kitchen. To achieve a special golden duck, Ramon put the piece on a rack in a pot in the oven, and waited to have a uniform result. To enriched the taste, he soak it with the juice that was dropt by the meat for over four minutes.

Arte, cultura y leyenda Con la pintura taurina de Juan Antonio Ruiz, nuestro pensamiento podría viajar a La Cueva de Altamira, en Santillana del Mar, España. La relación del toro y la humanidad, quedó plasmada en estas cavernas desde la Edad de Piedra. Juan Antonio ha vivido la tradición de los toros desde niño, en la plaza de toros Oriente, de San Miguel de Allende. Su gusto por la pintura y la fiesta brava nacieron con él. En su obra, la expresión profunda del toro puede apreciarse a detalle. Los programas y los carteles de las corridas, fueron el primer contacto de Juan Antonio con el arte taurino. Al estar frente a las obras de pintores como Ruano Llopis y Pancho Flores, nuestro invitado confirmó su vocación. Ruiz estudió pintura en Bellas Artes de San Miguel, y Diseño Gráfico en la Universidad de Guanajuato.

Juan Antonio grew wrapped in the bull traditions since his childhood at the “Plaza de toros Oriente”, San Miguel de Allende. He was born with the taste for painting and bullfighting. In his work, you can see in detail the profound expression of the bull. His first contact with art was through the programs and posters of bull-
fights. Standing in front of works of the painters like Ruano Llopis and Pancho Flores, our gest confirmed his vocation. Ruiz studied painting at “Bellas Artes” in San Miguel, and Graphic Design at the University of Guanajuato.

de muertos y alebrijes” of dead and alebrijes” “De Muertos y Alebrijes” es el titulo bajo el que se desarrolla la ecléctica colección que unifica el arte clásico de día de muertos (como lo son las catrinas) y de la técnica de la cartonería, los Alebrijes. La idea que la exposición persigue, es por un lado honrar el día de muertos (2 de noviembre) y por otro celebrar también las personas que nos acompañan en vida. Es por esto que el espacio Galería Alebrije, abre sus puertas y convoca a participar en este evento a artistas de diversos estilos y lugares de origen. “Creo que el éxito de el artista, no reside en su individualidad, sino en la colectividad. Mientras más personas expresan el mismo discurso, mas veracidad y fuerza toma la idea del mismo. Entre artistas no existe competencia, pues la obra de cada uno es creada por su propia y única mano. Si no nos apoyamos entre los que tenemos las mismas inquietudes, ¿quien nos apoyara?”. Mario Oliva. El alebrije, es una criatura conformada por 2 o mas animales, es decir 2 o mas seres, que unidos dan como resultado a una nueva criatura, este es el sentido fundamental de la exposición “De muertos y Alebrijes”, la unión entre aristas para seguir fomentando el lenguaje de las artes.

“Of Dead and Alebrijes” is the umbrella name for the eclectic collection which unifies the classical Day of the Dead’s art, i.e. the catrinas and the papiermache technique, the Alebrijes. The intention behind the exhibition is on one hand to honor the Day of the Dead, and on the other, to celebrate those who share their life with us. That’s why the space at Alebrije Gallery opens its doors to call on a diversity of artists with different styles and backgrounds to partake of this event.

The alebrije is a creature consisting of two or more animals or beings which through their juxtaposition give birth to a new one, a Mexican version of a chimera. This is the basic meaning of “Of Dead and Alebrijes”, the unity among artists to keep fomenting the language of the arts.

En lo que hace a las técnicas, predominan las pinturas al óleo sobre triplay, seguidas por las escultopinturas en madera tallada y pintada con acrílico, las esculturas en madera y los grabados.

ederico Correa El lienzo lleva las huellas de sus dedos, la obra plasma el mensaje de su alma. El renacer de la humanidad en un entorno desolado, puede apreciarse en la obra “The Sea is a Puddle, The Fish have Vanished”, de Federico Correa. La cerca representada en la parte superior de la pintura, evoca al muro fronterizo del norte, un viejo conocido del autor. La barca fuera del agua alude a la devastación natural, al estar encallada entre sombrías tonalidades. Los árboles secos bordeando el incipiente río, hacen pensar en La Divina Comedia; el terror del infierno y la belleza del paraíso en una sola obra. El azul del agua en este cuadro, asemeja la esperanza en el fondo de La Caja de Pandora. Un hombre con la cabeza inclinada lentamente se levanta, reflexionando antes de tomar una postura erguida, para mirar hacia el futuro, con pleno respeto por la vida.

fence, which Correa knows from his childhood. The boat out of the water refers to the natural devastation, being stranded between dark shades. The dry trees bordering the rising river, makes me think of the Divine Comedy, the terror of hell and the beauty of paradise together in one single work. The color blue in the
water in this art work seems hope in the bottom of Pandora’s Box. A man with bowed head slowly rises, reflectin before making an upright posture, to look to the future, with full respect for life.

La libre exploración de técnicas en sus creaciones, ha llevado a Josefina a experimentar con telas de colores transparentes, que permiten observar una imagen detrás de otra, y así complementar una figura ante los ojos del espectador. The free exploration of different techniques in her creations have taken Josefina to experiment with transparent colored fabrics, this way you can see an image over another, and in this manner to complement a figure for the viewer’s eyes. This proposal is explored by the artist with various items and materials. While watching the images painted in sequence, we could be transported to 1895, when the Lumiere brothers showed their first movie to the public in the Salon Indien du Grand Café. Josefina undertook this form of expression when she came to San Miguel de Allende. So, luck is on her side.

La Ruta de Tierra Adentro, es la más larga de toda América, mide 2 mil 900 kilómetros aproximadamente, y parte de la antigua Casa de la Moneda en la Ciudad de México, hasta Santa Fe, Nuevo México, en los Estados Unidos de América. Trazado en el siglo XVI, el extenso sendero también es conocido como la Ruta de la Plata, en virtud a que fue construída principalmente para transportar plata en bruto y procesada durante la conquista.
The Tierra Adentro route is the longest of all America, measuring around 1.801 miles. It begins at the Santo Domingo Plaza in Mexico City and ends at Santa Fe, New Mexico in the United Estates. The extensive trail is also known as “la Ruta De La Plata” ( the Silver Route) because it was built mainly for transporting raw silver for processing during the conquest in the sixteenth century.

El 1 de agosto de 2010, la UNESCO declaró a la Ruta de Tierra Adentro, como Patrimonio Cultural de la Humanidad, por representar una obra maestra del genio creativo del hombre y por ser una manifestación del intercambio de influencias, en un lugar específico con una cultura determinada, donde florecieron la arquitectura, la tecnología y las artes. Al pasar por la ciudad de Guanajuato, San Miguel y Querétaro, la ruta se hace muy interesante, porque pasa por tres zonas declaradas Patrimonio Cultural de la Humanidad por la UNESCO. Con ello, el camino y los destinos, nos permiten un viaje constante por distintos patrimonios de la humanidad. Este es un privilegio digno de fomentar y disfrutar. El camino más largo de América, fue utilizado entre los años 1598 y 1882. En el trayecto existen antiguos hostales, edificios religiosos, impresionantes haciendas y diversas construcciones creadas en el tiempo del auge minero. Hoy existen instituciones de México y Estados Unidos, destinando recursos humanos y económicos, para investigar y difundir información sobre la ruta. The Silver Road Cultural Heritage of Humanity by the UNESCO, because it represents a masterpiece of human creativity and a manifestation of the interchange of influences in a specific place with a specific culture, which flourished the architecture, the technology and the arts. As it pass through the cities of Guanajuato, San Miguel and QuerĂŠtaro, the route gets very interesting, because it goes through three areas also declared World Heritage Sites. This is a privilege worth promoting and enjoying. The longest road in America was used between 1598 and 1882, along the way there are ancient hostels, religious buildings, impressive ranches and various buildings created in the time of the mining boom. ste puente del siglo XVI, forma parte de la Ruta de Tierra Adentro. Su estructura de piedra, permitía hasta algunos años, el paso de todo tipo de transporte. La razón de su clausura, fue el ancho de la vía, el cual por ser estrecho ocasionaba muchos percances. En toda la región, es conocida una historia trágica ocurrida en el antiguo puente. En el año 1575, Fray Francisco Doncel y Fray Pedro de Burgos, se dirigían a San Miguel con dos imágenes de “El Cristo de la Conquista”. Justo en el puente, los dos religiosos fueron atacados y perdieron la vida, a manos de un grupo de indígenas chichimecas. En el Puente del Fraile, las leyendas urbanas cuentan que es común encontrar velas consumidas de distintos colores, oraciones escritas y restos de fogatas. Sin embargo, es difícil ver personas a la luz del día realizando estas actividades. Los autos dejaron de transitar por el puente, y ahora por él viajan los misterios. El angosto puente llegó a causar muchos accidentes por las noches. La razón más probable, es el reducido espacio para los automóviles. Pero hay quienes dicen, que se debían a las apariciones de los frailes.

A BRIDGE WITH HISTORY
T
his sixteenth century bridge is part of the “Tierra Adentro” route. Just a few years ago this stone structure allowed the way to all kinds of transportation. The reason for its closure was the width of the road, which was to narrow and caused many accidents. There is a tragic story known throughout the region that occurred in the old bridge. In 1575 Fray Francisco Doncel and Fray Pedro de Burgos were heading to San Miguel with two images of “The Christ of the Conquest”. Right on the bridge, the two priests were attacked and killed by the hands of a group of Chichimeca indigenous. Urban legends say that in the Friar’s Bridge is common to find different colored candles consumed, written prayers and remains of fires. However, it´s said that no one has seen anyone performing these activities. The cars stopped transiting the bridge, but now travel through it the mysteries. Although the reason for so many accidents at night was the narrowness of the bridge, some say they were a result of the friars’ apparitions.

En ellas podrás conocer el proceso de extracción de estas piedras semipreciosas, y su transformación de una roca en bruto a una exquisita joya. El color verde de la vegetación, contrasta con el intenso color de las minas. La forma de explotación del ópalo, ha creado impresionantes grutas rojas. Paisaje, extracción y artesanía, se conjugan en este mágico lugar, lleno de leyendas e historia. La calidad de los ópalos se distingue por la pureza de sus cristales, los cuales dan su capacidad de irradiación. Los ópalos se pueden encontrar en colores negro, gris, blanco, marrón, púrpura, amarillo, naranja, verde, azul verdoso o incoloro. En México se produce la variedad de ópalo de fuego, además de otros colores. A 5 minutos de Tequisquiapan, se encuentra la comunidad de La Trinidad, sus habitantes viven del producto de las minas. Por su antigüedad y sus enormes dimensiones, el más emblemático de los fundos es La Carbonera. En toda la región hay un uso popular, el cual dice: “todo lo que encuentres es tuyo”. Las piedras de ópalo brillan en cualquier lugar. Esto despertará tu instinto de explorar.

equisquiapan is a nature tourist destination that offers many attractions to enjoy, like the opal mines, that are a major destination where you can learn the process of extraction of this precious stone and its transformation from raw rock to an exquisite jewel. The color green of the vegetation contrasts with the rich color of the mine. The way of exploiting the opal creates impressive red caves. Landscape, the extraction and crafts are combined in this magical place full of legends and history. The quality of the opals is distinguished by the purity of its crystals, which give its irradiation capacity. Opal can be found in black, gray, white, brown, purple, yellow, orange green, blue-green or colorless. In Mexico there is the variety of fire opal, among other colors. The community La Trinidad is located 5 minutes from Tequisquiapan, its most emblematic farm is La Carbonera for its age and its vast size. The Trinidad inhabitants live from the product of the mines. Throughout the region there is a popular saying which says, “Everything you find is yours” opal stones shine everywhere, this will awaken your explore in.

oco antes del año 1868, inician los trabajos de exploración de la mina El Nopal, en Guanajuato. Esta obra minera, nos invita a conocer la historia y a sentir la fascinante sensación de internarnos en la tierra, y así conocer los secretos del ambiente entre la profundidad y las paredes de piedra. En la Mina el Nopal, hay visitas guiadas para los turistas que desean una experiencia de aventura. Actualmente pertenece a la Universidad de Guanajuato, y en ella se genera un ambiente cosmopolita, por el gran interés que despierta esta ancestral forma de extracción, la cual fortaleció a la corona española durante La Conquista. Este antiguo fundo minero ubicado al noroeste de Guanajuato, sobre la carretera panorámica, ha servido para realizar representaciones teatrales en el marco del Festival Cervantino y diversas actividades culturales. La historia de una época de pujanza y desarrollo económico, empezó en esta mina. Ahora como recurso turístico, el viejo predio sigue brindando una oportunidad para contribuir a la reactivación económica de la región. hortly before the year 1868 initiated the exploration of the mine El Nopal in Guanajuato. This mining work invites us to discover the fascinating history as well as to feel the sensation of going into the ground and get to know the secrets of the atmosphere between the depth and the stone walls. In Mine El Nopal there are guided tours for tourists who want an adventurous experience. The mine now belongs to the University of Guanajuato, and it generates a cosmopolitan atmosphere by the great interest in this ancient form of extraction which strengthened the Spanish crown during the conquest. This old mining site located at the northwest of Guanajuato, over the panoramic road, has served as theater for plays during the Cervantes Festival and various cultural activities. The story of a time of strength and economic development, began in this mine. Now as a tourist resort, the old property still provides an opportunity to contribute to the economic recovery of the region. El platónico dualismo entre lo inteligible y lo sensible, parecen entenderse en la actividad del diseño. Por ello cuando alguien muestra su creación hoy, nos está enviando señales de lo que viene. El diseñador trascendente, se reinventa sin dejar de ser él mismo. Las ramas de un árbol podrán adaptarse mejor a un ambiente cambiante, si están bien aferradas las raíces.

on Antonio es una institución en el manejo del vidrio y los metales. Su abuelo Ausencio y su padre Eleuterio, le enseñaron este bello oficio, donde la tradición sigue su curso y en el camino se reinventa. La escuela de la familia Llamas es muy importante. De esta casa de extraordinarios creadores, han salido reconocidos artesanos de Guadalajara y Taxco. En el taller familiar, Antonio inició haciendo faroles. Posteriormente con el apoyo de su esposa, Teresa Arellano, inició un taller con historia propia.

n el taller de Alberto Ordoñez Castillo, los elementos parecen creados para estar unidos. Vidrio, plomo, cobre, zinc y metal, son trabajados como en un telar. La integración es magnífica en cualquiera de sus creaciones, las formas pueden tener una estructura sencilla o compleja. La creatividad va de la sobriedad de un vitral sin color, hasta una espectacular obra cromática. Las dimensiones no son un obstáculo en Vitrales Ordoñez. Entre sus logros más destacados cuentan con un vitral de 25 metros de largo, por 8 metros de ancho. Este proyecto fue terminado en un tiempo récord de 5 meses. Esta obra monumental, se encuentra en el corporativo de Caja Libertad, en la ciudad de Querétaro.

25 meters long and 8 meters wide. This project was completed in a record time of five months. The monumental work is in the corporate Caja Libertad, in the city of Queretaro. In the picture we can see a stained glass with beveled pieces, putting them together with copper, as an element in a glass dome, mounted on a stainless steel frame, with subtle touches of colored glass.

ace más de 18 años, Abeck León emprendió una nueva historia creando vitrales. Su primera obra es esta imagen representativa de San Miguel Arcángel, la cual está expuesta en su tienda. En esta pieza se utilizaron 3 técnicas: Cooper floid, grisalla y esmaltes. El gusto por hacer vitrales surgió de una inquietud personal. En su familia, Abeck es el primero en desempeñarse en este bello oficio. Abeck también domina la técnica de vitromosaico, biselado, vidrio a alta temperatura y burbuja. Entre sus trabajos más complejos, Abeck tiene un magnífico vitral, instalado en “Rancho El Girasol”, el cual diseñó para la familia Alemán. Se trata de un carrusel con un paisaje de girasoles en el fondo.

ore than 18 years ago, Albeck León overtook a new story creating stained glass. His first work is this representation of the Archangel San Miguel, which is exposed in his shop. In this piece he used three different techniques. The interest in making stained glass started as a personal interest, in his family Abeck is the first working in this beautiful craft. Abeck also mastered the art of vitromosaico, beve-
led, high temperature glass and the bubble technique. One of his most complex works is a stained glass of a carousel with a sunflowers landscape in the background, is installed in “Rancho El Girasol”. Albeck designed it for the German family. The excellent performance of the technique in Albeck’s work is surprising. Is a pleasure to visit the store to appreciate all its variety.
