FAMOUS RETAILERS by Kathy Wolfe Where do North Americans spend their money? This week, Tidbits looks into the history of some of our most famous merchants. Part Two will appear next week. • In 1907, Herbert Marcus founded a new business in Dallas, Texas, with his sister Carrie Marcus Neiman and her husband. They had a large amount of money available to invest, and chose to open a top-quality clothing store, turning down an opportunity to purchase a franchise for a new fountain drink called Coca-Cola. Within a few weeks, the store had completely sold out of its merchandise, as wealthy Texans hurried to purchase the store’s stylish fashions. In 1913, a ďŹ re destroyed the store and all of its inventory. Seventeen days later, a temporary store opened, and in 1914, it was rebuilt, and remains the location of their agship store.

• In 1926, Neiman-Marcus became the nation’s ďŹ rst store to feature a weekly fashion show, held in Dallas’ Baker Hotel. Between 1942 and 1944, their sales ballooned from $6 million to $11 million. It wasn’t until 1957 that a store was opened outside the Dallas area, when they expanded to downtown Houston. • Founded in 1994, Old Navy had 500 stores by the year 2000. It was the first retailer to pass $1 billion in annual sales within its first four years in business. Old Navy is owned by Gap, Inc., whose founder was Donald G. Fisher, a 40-year-old real estate developer who became frustrated with his inability to find a pair of jeans that fit him. His successor Millard Drexler launched Old Navy, and named the store after a bar he had seen while walking in Paris. The first store opened in Colma, California, and within a year, 59 more stores had opened. In just

eight years, there were 842 stores. • Andrew Saks opened a clothing business in Washington, D.C. in 1867, and was so successful he began to expand to other cities. In 1902, he moved to New York and established Saks & Company on the corner of Sixth Avenue and 34th Street. When Andrew died in 1912, his brother took over the company, later joining up with Gimbel Brothers in 1922. In 1924, Saks Fifth Avenue opened, offering the finest expensive, upscale, sophisticated merchandise.

A silk top hat for President Calvin Coolidge was the first package out the doors. Saks soon became synonymous with quality and elegance. It became the first specialty store to expand across the country, quickly opening stores in Chicago, Miami, and Beverly Hills. Today, there are more than 40 Saks Fifth Avenue stores across the country. • One of the nation’s top ten retailers isn’t located in a store – it’s Amazon, the largest internet-based company in the nation. Founder Jeff Bezos founded the company in 1994, working out of his Bellevue, Washington, garage. He called his company “Cadabra,” but changed it to Amazon the following year, believing that Cadabra sounded too much like “cadaver.” He also want-

ed his company to start with the letter “A,” since it would be at the top of any alphabetized internet search. It started out as an online bookstore, but Bezos soon made up a list of the five products with the most potential, which included CD’s, computer hardware and software, videos, and books. Today, Amazon’s global headquarters take up 14 buildings in Seattle with annual sales of about $75 billion. • Rowland Hussey Macy opened four dry goods stores between 1843 and 1855, all of which, unfortunately, failed. Macy made the move to New York City in 1858 and opened a store on Sixth Avenue. His first day’s sales were $11.08 (about $301.47 today). Macy’s moved to a new store in 1902, a building that is now a National Historic

The annual Macy’s Thanksgiving Day Parade started in 1924, with its trademark giant balloons making their debut in 1927, with Felix the Cat as the first. By 1933, more than a million people lined the parade route. As popularity grew, more balloons were added – Mickey Mouse in 1934, Superman in 1939, Popeye in 1976, and Hello Kitty in 1976. High winds on Thanksgiving Day, 1997, pushed the Cat in the Hat balloon into a lamppost, with the resulting debris striking a spectator, fracturing her skull, and leaving her in a coma for a month. • Kroger’s, the country’s largest supermarket chain, got its start in 1883, when Barney Kroger invested everything he had, $375 (about $9,400 in today’s money) to open a grocery

• In 1978, John Mackey and Renee Lawson borrowed $45,000 from family and friends to open a small natural foods store called SaferWay in Austin, Texas (the name being a spoof of Safeway). When the couple were evicted from their apartment for storing food products in it, they decided to live at the store. Because it was zoned for commercial use, there was no shower stall, so they bathed using a water hose attached to their dishwasher. Two years later, John Mackey partnered with Craig Weller and Mark Skiles to merge SaferWay with their Clarksville Natural Grocery, resulting in the opening of the original Whole Foods Market on September 20, 1980. store in Cincinnati, Ohio. He had dropped out of school at 13 to help support his family when their dry goods store went bankrupt. He sold coffee and tea door-to-door until he was 20, when he became manager of a local grocery store. At 24, he opened the Great Western Tea Company and soon had four stores, later changing the name to Kroger’s. His success came by eliminating the middleman by providing as much of his own product as possible. In 1901, his stores were the first to bake their own bread, and three years later, they were the first to include meat departments in grocery stores. Years later, in 1972, Kroger was the first grocery store to test electronic scanners. Today, there are 2,600 stores in 34 states, generating annual sales of close to $100 billion.

Day, on May 25, 1981, the most damaging flood in 70 years devastated Austin. Whole Foods' inventory was ruined, and most of the equipment was damaged. The loss was approximately $400,000. Whole Foods Market had no insurance. Customers, neighbors, and staff pitched in to repair and clean up the damage. Creditors, vendors, and investors assisted in helping the store recover, and the store reopened 28 days later. Beginning in 1984, Whole Foods Market began its expansion out of Austin, first to Houston and Dallas and then into New Orleans with the purchase of The Whole Food Company in 1988. EDDIE BAUER Eddie Bauer isn’t just a well-known, profitable retailer at the mall. Bauer was an avid outdoorsman who started selling sporting goods in a tiny Seattle store, as well as a renowned inventor. Take a look at the history of this man and his accomplishments. • Born in 1899 to Russian immigrants, Eddie Bauer lived in a log cabin on Orcas Island, Washington, off the northwestern coast. Eddie learned to hunt and fish on the island at a young age. Dropping out of school after the eighth grade, he took a job at a Seattle sporting goods store as an errand and stock boy. Here he learned how to make fishing poles and lures, and how to refinish golf clubs and tennis rackets. By age 18, he was a department manager and was in charge of the front window displays. • At 21, Eddie branched out on his own, renting a tiny space for $15 a month, naming his business “Eddie Bauer’s Tennis Shop,” where he intended to string rackets during the summer, while still leaving time for his beloved hunting and fishing during the colder months. A brisk business enabled him to expand his shop the following year, to which he added equipment for fishing, trapping, and golfing. • Between 1934 and 1937, Bauer received more than 20 patents, including his first on a shuttlecock for badminton. In 1936, he patented the Skyliner, a down-filled jacket that was a huge seller. After experiencing hypothermia on a fishing trip,

Bauer patent the first quilted down jacket in 1940. • Bauer became famous in 1942 when the U.S. Army Air Corps commissioned him to create a jacket to keep World War II pilots warm at high altitudes, a parka that was to become known as the Bomber Jacket. Eddie Bauer also supplied backpacks, pants, and sleeping bags, which were standard issue for American troops. More than 50,000 flight parkas and 100,000 sleeping bags were sold to the armed forces. Eddie Bauer was the first independent company that the U.S. Army allowed to use their own logo on an Army-issued uniform. • After the war, Eddie Bauer created a catalog that was mailed to 14,000 soldiers who had worn his products during their service. His mail order business was an immediate success, and he added women’s clothing to his catalog. By 1949, the company had 125 seamstresses. • Over the next several years, Bauer continue to invent clothing for extreme weather conditions. During the 1950s, he outfitted several expeditions, including a 1953 climbing expedition to the top of K2 and several journeys through Antarctica. He developed parkas with a rip-stop nylon shell for climbers scaling Gasherbrum, the world’s 11th highest mountain. Jim Whittaker, the first American to reach the summit of Mt. Everest, was also outfitted in Eddie Bauer outerwear. • Eddie Bauer sold his interest in the company in1968 and retired, taking up dog breeding, and enjoying the great outdoors as he had his entire life. The company continued to prosper, partnering with the Ford Motor Company in 1983 to manufacture Eddie Bauer Ford Limited Edition vehicles.

• Within a year, Sears moved his business to Chicago. Badly in need of an assistant, he ran a classified ad in the newspaper for a “watchmaker with references who can furnish tools.” A young man named Alvah Roebuck answered the ad, and soon the pair, both in their twenties, established what would become America’s leading retailer. • The first Sears catalog was published in 1888, an 80-page circular that catered especially to farmers, who could purchase supplies much cheaper by mail than from their rural general store. Six years later, the Sears catalog was 322 pages, and offered bicycles, farm implements, furniture, saddles, sewing machines, and sporting goods. In 1905, a person could even buy an automobile from the Sears catalog. • In 1893, after six years in business, Sears’ annual sales exceeded $400,000. Just two years later that number had grown to $750,000. By 1941, annual sales were closing in on $1 billion. • In 1906, the first Sears Tower opened in Chicago, a 14-story structure constructed as part of their catalog facility. A large part of the company’s 22,000 employees were housed in the Tower. That building

still stands proudly in Chicago as part of the National Register of Historic Places, and is undergoing an extensive remodel. • The current 110-story Sears Tower opened in 1973, when the company was the world’s largest retailer, employing 350,000. At 1,454 feet (442 meters) it was the world’s tallest building at completion, a title it held for 25 years. It remains the second-tallest building in the U.S., and the eighth-tallest in the world. The building required 76,000 tons of steel, 2 million cubic feet of concrete, 1,500 miles (2,414 km) of electrical wiring, and 80 miles (129 km) of elevator cable. Sears sold the building in 1993, and today it is known as Willis Tower.

• From 1908 to 1940, Sears sold about 100,000 ready-to-assemble kit houses from 447 different housing designs. The kits were shipped by rail, with the average home containing 25 tons of materials and over 30,000 parts. In 1914, the price ranged from $550 up to $2,900. The top of the line home in 1920 cost $4,300. By 1940, when Sears discontinued the homes, there were still plenty of homes to be had for under $2,000. • In 1989, Walmart grabbed the title of America’s largest retailer. Tasty Stuffed Eggplant

Per 1/2 eggplant

A man who hated eggplant (or thought he did) once declared this the best meat he ever ate!

• 3 small eggplants, 2 1/2–3 inches in diameter • 1 vegetable oil spray • 1 tablespoon olive oil • 2 onions, chopped • 4 garlic cloves, minced • 2 bell peppers, seeded and diced • 1 1/2 cups chopped tomatoes (about 3 medium) • 3 tablespoons chopped fresh parsley • 1 teaspoon dried basil • 1/2 teaspoon salt • 1 tablespoon non-hydrogenated, dairy-free margarine • 1/4 cup chopped walnuts • 1/4 cup wheat germ • Preheat oven to 350°F. Slice eggplants in half lengthwise and scoop out insides, leaving a 1/4-inch shell. Place shells, cut sides down, in a vegetable oil sprayed baking dish and bake until they just begin to soften, about 20 minutes. Set aside. Coarsely chop eggplant flesh. Heat oil in a large non-stick skillet and add chopped eggplant, onions, garlic, and bell peppers. Cook over medium heat, stirring often, until eggplant begins to soften, about 10 minutes, adding a small amount of water if necessary to prevent sticking. Add tomatoes, parsley, basil, and salt. Cook over medium heat until eggplant is tender when pierced with a fork, about 10 minutes. Divide among eggplant shells. Melt margarine in a small pan, then stir in walnuts and wheat germ. Spread evenly over eggplant shells. Arrange shells in one or two baking dishes. Bake, uncovered, until shells are completely tender when pierced with a fork, about

Eggplant Lasagna Makes 8 servings Tender slices of eggplant take the place of pasta in this lasagna making it quite high in fiber. This recipe includes many flavorful and healthful herbs and spices, including oregano—a powerful source of antioxidants. This dish can be assembled ahead of time and baked just before serving. Serve with polenta or sourdough bread and a green salad. • 1 large eggplant • 1 teaspoon dried thyme • 4 cups sliced mushrooms (about 3/4 pound) • 3 garlic cloves, minced or pressed • 1 teaspoon soy sauce (optional) • 1/4 cup whole-wheat flour • 1/2 teaspoon salt • 1/4 teaspoon ground nutmeg • 1/2 teaspoon garlic powder • 1 teaspoon dried oregano • 2 teaspoons dried basil • 2 10-ounce packages frozen chopped spinach, thawed, or 4 pounds fresh spinach, chopped • 1 large onion, chopped (about 2 cups) • 1 1/2 cups water • 1 batch Simple Marinara, or 1 25-ounce jar commercial marinara • vegetable oil spray • 1/4 teaspoon ground black pepper • Preheat oven to 375˚F. Cut eggplant into 1/4-inch slices (there should be about 12 slices). Arrange in a single layer on a lightly vegetable oil sprayed baking sheet. Bake for 20 minutes, then turn and cook on the other side for 15 minutes. Eggplant should be tender when pierced with a fork. Remove from oven and reduce heat to 350˚F.

Spread half the marinara in a large casserole dish and top with half the eggplant slices. Heat 1/2 cup water in a large non-stick skillet. Add onion and cook over high heat, stirring often until all the liquid has evaporated. Add 1/4 cup water and stir to loosen any stuck bits of onion, then continue cooking and stirring until all the liquid evaporates again. Repeat this

process twice more. Reduce heat to medium and add spinach, basil, oregano, garlic powder, nutmeg, and salt. Cook for about 3 minutes, stirring often, until spinach is hot, and then stir in flour. Cook for 2 minutes stirring constantly. Spread half the spinach evenly over the eggplant slices. Heat remaining 1/4 cup water and soy sauce, if using,

in a large non-stick skillet. Add garlic and cook for 1 minute. Add mushrooms, thyme, and black pepper. Cook for about 5 minutes over medium heat, stirring often, until mushrooms are browned. Spread in casserole dish over spinach. Top mushrooms with remaining eggplant slices, remaining spinach, and remaining marinara.

HOLLYWOOD -- You'd think Italian fashion designers Stefano Gabbana and Domenico Dolce would be careful about what they say and do after being sentenced to 20 months in prison and fined nearly $440 million for income-tax evasion. Even though they're openly gay, they were quoted as saying, "You are born, you have a father and a mother, that's why I am not convinced by chemical babies, synthetic babies and wombs for rent!" Elton John, who has two children with his husband, immediately lashed out at them saying, "How dare you call my children synthetic. Your archaic thinking is out of step with the times, just like your fashions." He's called for a boycott of their products. *** Matt Damon, who went into outer space in the $700-million-grossing epic "Interstellar," is headed back to space in director Ridley Scott's 3D film "The Martian." The following week it will move to its regular time slot of 10 p.m. ET/PT. Based on Stephen King's bestselling novel, "Under the Dome" tells the story of a small town that is suddenly and inexplicably sealed off from the rest of the world by an enormous transparent dome. This season, Emmy Award-winner Marg Helgenberger will guest-star in an extended story arc, beginning with the premiere episode, as the town's inhabitants figure out the Dome's purpose and what it wants from them. *** Q: I loved "The Spoils of Babylon." When I spoke with the lovely Ms. Laurie about her books, I asked her about her reaction when she found out that "When" had been optioned for TV. Aside from sliding out of her chair, causing the person she was with to think she might be having a heart attack, she was nearly speechless. As she told me: "I'd had this streak of 24 books without a single bit of interest from anybody. And I thought, 'OK, fine. I'll just be one of those authors who just never gets optioned. No big thing, right?' In the book world, it's kind of like you haven't really made it until someone options your book, which is sad because we all write books. We don't write movies or television shows."

A: The second installment of "Spoils" will air on IFC this summer in the six-part miniseries "The Spoils Before Dying." Returning to the series in brand-new roles are Will Ferrell, Kristin Wiig, Maya Rudolph, Haley Joel Osment, Michael Sheen, Val Kilmer and many more. New additions to the cast include Chris Parnell, Tim Meadows and Emily Ratajkowski.

While Victoria is thrilled by the opportunities a "When" television series will afford, she's playing it cool. "However they envision it is OK by me. I'm perfectly happy with however that proceeds. I mean, this is just a great honor. Any way they want to include me is really amazing. It's one of those 'who knows if it's going to happen or not' things. I'm trying to remain as level-headed about it as possible."

ANSWER: The jury is out on which is more effective, if you compare good technique with one against the other. Both are effective at reducing bacteria on the hands.

*** DEAR DR. ROACH: After two years of seeing several doctors and being misdiagnosed and treated with wrong medications, my 27-year-old daughter has been diagnosed with psoriatic arthritis. Her joint pain has been constant during this time. What kind of long-term damage has been done during this time? -- A.F. ANSWER: Psoriasis is a common inflammatory skin condition, with well-known plaques -- raised red patches with silvery scales or flaked skin -- most commonly seen over the elbows, knees or on the back. Only a minority of people with psoriasis will ever develop psoriatic arthritis, but you have to have psoriasis to get psoriatic arthritis. Sometimes, the arthritis shows up before the skin lesions, making the diagnosis difficult. Unfortunately, damage to the joints can happen early in the course of psoriatic arthritis, but only an X-ray can show the extent of damage. Your daughter may need aggressive treatment. A rheumatologist experienced in psoriatic arthritis is essential.

Fruit and Vegetable Consumption Up, Plate Waste Down in School Lunches Fruit and vegetable consumption is on the rise with the implementation of the 2010 Healthy Hunger-Free Kids Act, which increased school lunch requirements to better meet the Dietary Guidelines for Americans. Despite concerns that the heightened requirements would lead to excess plate waste, a study published online in Childhood Obesity finds the new polices have led to significantly less plate waste in schools. Researchers monitored plate waste and food consumption at 12 schools annually before and after the new regulations took effect and found student selection of fruit increased by 12 percent, taking overall fruit consumption to 74 percent with a 9 percent increase for every added fruit item. Vegetable consumption increased by 20 percent. Total entrée consumption also rose by 13 percent, showing that more fruit and vegetable choices do not always lead to wasted food.

Fried Foods Increase Risk for Heart Disease Fried foods can increase your risk for heart disease by as much as 68 percent, according to an abstract presented by Harvard at an American Heart Association meeting this month in Baltimore. Researchers followed the diets of 15,300 doctors as part of the Physician’s Health Study for about three years. Those who ate fried foods up to three times a week saw an 18 percent increased

I was told that it is totally harmless and can be removed if it bothers me. Now I realize that I am somewhat concerned about it, as I had ovarian cancer two years ago. Can I really be sure it is benign without a biopsy? I don't want to find out in a few years that it is cancerous. -- S.R. ANSWER: A lipoma is a very common fatty tumor. They almost always are benign. If there is a suspicion of malignancy (called liposarcoma), an MRI scan can be done or a biopsy obtained. Surgery is seldom required, except for cosmetic reasons. I don't believe that you are at higher risk for this being the rare cancerous type simply because of your history. I would just recommend dutiful follow-up. 1. Lay down a plastic sheet or dropcloth to prevent oil drips and grass cuttings from staining the work area. 2. Disconnect the spark plug from the starter wire, remove the spark plug itself, and make sure the fuel cap is tightly closed.

A: Dull mower blades are pretty rough on your lawn, tearing grass rather than cutting it, which can turn the tips brown, weaken the grass and promote the growth of fungus.

3. Turn the mower on its side. Using a socket wrench, unscrew the center nut that secures the blade to the mower deck and any other connecting bolts or nuts. If the blade keeps turning as you try to loosen the nut, wedge a piece of wood between a blade and the deck. Remove the blade and brush off any dried grass clippings.

edge. You'll want to sharpen in the same direction as that angle. Run a metal file down the blade at about a 45 degree angle. Or, use a drill with a blade-sharpener attachment. 5. Once sharpened, check the blade's balance by hanging it from a nail (or buy a blade balancer at the hardware store). If one end of the blade tilts down much farther than the other, file away more metal on that side until the blade stays horizontal. 6. Reattach the blade to the mower, making sure the blades angle downward. Tighten as much as possible, bracing the blade with the block of wood. 7. Attach the spark plug and wire, and turn the mower upright. The Italian American Civic League of Broward The Italian American Civic League of Broward County located on Dixie Highway in Hollywood, celebrated its Installation of OfďŹ cers Dinner Dance on Saturday March 21st in front of a full house. In fact, extra tables were added in the rear of the hall to accommodate the overowing crowd. The members and guests were introduced to the new ofďŹ cers and then enjoyed an evening of good food and ďŹ ne entertainment supplied by the group Easy Livin. The new president, Daniel Guerrieri, Sr. is thought to be the ďŹ rst American born president in the Club’s 65yr. storied history. His boyhood friend of over 59 years, Anthony Siravo, was sworn in as Vice President. The other executive ofďŹ ces will be held by Rocco Maniaci as Treasurer, Arlene Barbieri as Financial Secretary and Mary Bober as Recording Secretary. The Club has been a landmark in the downtown area for many years. The Club prides itself on its friendly atmosphere and welcomes guests to its dinner dances which are usually held on the third Saturday of each month.
