For Advertising Information Call 954-667-3237 • We’ve all used chalk throughout our lives, but what exactly is chalk anyway? It’s a porous form of limestone, composed mostly of calcium carbonate. It usually forms underwater on the sea bed from the gradual accumulation of tiny calcite plates and marine organisms. England’s White Cliffs of Dover are the most famous deposit of chalk, although large quantities are also found in Denmark. Today’s blackboard chalk used in classrooms is actually a manufactured substance made from gypsum, which is calcium sulfate. Some chalk is formed from talc, which is magnesium silicate.

To some, it’s a community of 11,000 inhabitants in France’s Chantilly Forest, 24 miles (38 km) northeast of Paris. To others, it refers to the handmade bobbin lace made there beginning in the 1600s. This intricate lace is made from silk with complex flower patterns woven from continuous silk thread. For hundreds of years, the fabric was usually black and often used for mourning wear, as well as shawls, veils, and umbrella covers. In 1958, J.P. “The Big Bopper” Richardson released the chart-topping song “Chantilly Lace,” which spent 22 weeks in the Top 40 and became the third most-played song of that year. The following year, the 28-year-old Bopper was tragically killed along with Buddy Holly in a plane crash while on a new tour. • Geoffrey Chaucer is widely known as the Father of English Literature, and is considered the greatest English poet of the Middle Ages. He is best known for The Canterbury Tales, a collection of 24 tales about a group of pilgrims traveling together from Southwark to Canterbury Cathedral. The tales were more than just stories – they represented a satirical picture of English society and the Church of England. In addition to his literary achieve-
ments, Chaucer was also a philosopher, alchemist, astronomer, and diplomat. Upon his death in 1400, he became the first poet to be interred in the Poet’s Corner of Westminster Abbey. • If you’re having trouble sleeping, try brewing a cup of Anthemis nobilis, more commonly known as chamomile. It’s known to fight insomnia and act as a muscle relaxant. And just as Peter Rabbit’s mother gave him chamomile tea because he wasn’t feeling well, many claim that it eases a stomach ache. Some mothers put it in a baby’s bottle to reduce gum inflammation during teething. Others use it in cream form to relieve the pain of bug bites. However, chamomile is not for those allergic to ragweed, as the two are from the same plant family. • In 1609, French explorer Samuel de Champlain happened onto a lake situated near the present-day border between Canada and the United States, spanning across Vermont, New York, and Quebec. Lake Champlain is about 400 feet (120 m) deep and was used as a water passage between the St. Lawrence and Hudson Valleys. Samuel de Champlain claimed that he saw a monster in the lake 5 feet (1.5 m) long, “as thick as a man’s thigh, with silver-gray scales a

dagger could not penetrate.” The explorer wrote that the monster had 2.5-ft. (0.76 m) jaws with sharp and dangerous teeth. His story is backed up by claims of the Native Americans in the area. The monster tale has found its way into the naming of sports teams and mascots, most notably, the Vermont Lake Monsters and their mascot Champ, that state’s minor league baseball team. • During medieval times, knights protected the front of their war horse’s head with special armor, some which added hinged cheek plates. This armor was known as chamfron.
• World-renowned fashion designer Gabrielle “Coco” Chanel came from very humble beginnings, born to a peddler and a laundress in 1883. When her mother died 12 years later, Chanel’s father put her and her two sisters into an orphanage run by nuns. They never saw him again. During her six years in the orphanage, Coco was taught to sew, a skill that shaped the remainder of her life. Before her clothing career, she was a nightclub singer, but in 1910, financed by her current love interest, she opened her first shop in Paris. In the 1920s, she introduced the legendary Chanel suit and the timeless “little black dress” as well as her signature Chanel No. 5 perfume. By 1935, her company had over 4,000 employees. TIME magazine has included Coco Chanel on their list of “The 100 Most Influential People of the 20th Century,” the only fashion designer to receive this honor. • There are about 22,000 species of chalcid wasps, but entomologist estimate there may be anywhere from 60,000 to 500,000 more species of this insect that are yet to be discovered. The tiny 3-mm chalcids are a friend to the gardener, acting as a natural method of controlling garden pests such as aphids and cutworms.

NOTEWORTHY INVENTORS: PATRICIA BATH Although the name Patricia Bath is not well-known, her invention has provided sight to thousands of people around the world. Tidbits’ focus this week is on this brilliant ophthalmologist who was a pioneer in cataract surgery. • Patricia Bath was raised in Harlem by her father, an immigrant from Trinidad, and mother, who was a domestic worker. Her father, a part-time newspaper columnist and former merchant marine, was also the first African-American man to work as a motorman for the New York City subway system. Her mother saved her salary for her children’s education, and gave Patricia her first interest in science when she bought her a chemistry set. • Patricia became interested in medicine after studying the life of Dr. Albert Schweitzer and his ministry to lepers in the Congo. At age 16, she had already been invited to attend a cancer research workshop sponsored by the National Science Foundation. • After graduating high school in just twoand-a-half years and receiving the National Science Foundation’s scholarship, she went on to a degree in chemistry followed by a medical degree, completing her residency in ophthalmology, the branch of medicine concerned with eye diseases and conditions. She was the first African-American to complete a residency in ophthalmology. • While involved in a fellowship at Columbia University, Patricia worked in the area of corneal transplants and keratoprosthesis, a procedure that replaces the human cornea with an artificial one.
• While working at Columbia, Patricia noticed that African-Americans seemed twice as likely to suffer from blindness than other ethnicities she was caring for, as well as eight times more likely to develop glaucoma. Concluding that this was due to the lack of access to good medical care, Patricia Bath developed a community ophthalmology system for those unable to afford treatment. • A move to California brought her to a faculty position at the University of California as professor of surgery and ophthalmology, as well as a position at the UCLA Medical Center as the first African-American woman surgeon. In 1977, she co-founded the American Institute for the Prevention of Blindness, an organization devoted to “protect, preserve, and restore the gift of sight.” • In 1981, Patricia began working on her famous invention, the Laserphaco Probe, and after years of research and testing, she received a patent for this device which uses a laser to vaporize cataracts through a 1-millimeter insertion into the patient’s eye. This enables the patient’s own lens to be removed and a replacement lens inserted in a nearly painless procedure. Her invention gave sight to individuals who had been blind for decades. • Patricia Bath is the first African-American female doctor to receive a medical patent. She continued work on the Laserphaco Probe and received additional patents on its innovations. In 2000, she was granted an additional patent for a method she developed for the use of ultrasound technology in the treatment of cataracts. Now in her 70s, Patricia continues to pursue her lifelong passion – the prevention, treatment, and cure of blindness.

Chapman was an eccentric person who frequently traveled barefoot, dressed in cast-off clothing, as he introduced apple trees in Pennsylvania, Ohio, Indiana, Illinois, and West Virginia. Although our image of Johnny Appleseed is one of him randomly scattering seeds wherever he went, he actually planted them in nurseries, constructing fences around the area as protection from animals. He entrusted the nurseries to neighbors, revisiting the area every two years to check on it. The world’s only Johnny Appleseed Museum is located at Ohio’s Urbana University, which claims to have a tree believed to have been planted by Chapman. However, an Ohio farm family also claims to have the only surviving tree on their property.

Mystery Bruise Appears, Vanishes As If by Magic DEAR DR. ROACH: I have just returned from seeing my doctor, and was told that the cause of what I experienced is a mystery! In the late afternoon, my husband and I were sitting at the kitchen table. He noticed that a bruise was forming on my right temple -- a dime-size purple mark, with a bump near the hairline. Over the next few hours the bruise grew larger, with red discoloration down the right side of my face, to the jaw. I had not been injured in any way, and it did not hurt! I called a 24-hour advice nurse, and was told I probably had broken a blood vessel. The next day, I called my doctor for an appointment, just to be on the safe side, but my doctor didn't have anything to look at. When I got up, all the bruising and discoloration was gone! She told me that there would still be some discoloration if it had been a broken blood vessel, so therefore it was a mystery. -- C.C. ANSWER: I agree with the nurse that it likely was a broken blood vessel, which can happen spontaneously to anyone. Once the blood is under the skin, it gets cleaned away by cells with enzymes that break down the blood. The color typically goes from dark red to green to yellow. This way, we can tell approximately how old a bruise is.

*** DEAR DR. ROACH: Are men less likely to wash their hands after using the bathroom (for any reason) than women? Are there any studies providing statistics? I "preach" hand-washing as the single greatest preventive for most illness. -- L.P. ANSWER: If you can think of it, it's probably been studied. In 2003, a study at a university found that after using the washroom, women washed their hands with soap and water 61 percent of the time, and men 37 percent of the time. Placing a reminder sign increased the rate to 97 percent of women, but only 35 percent of men washed their hands with the reminder, although 53 percent rinsed their hands without soap. Keeping hands clean reduces infection transmission to yourself and to others. Unfortunately, too often even doctors forget to wash our hands (only 65 percent of the time, in several studies). Our nursing colleagues are better at washing their hands. “Healthy Obesity” is a Myth The idea of obesity without health concerns is largely a fiction, according to a study published in the Journal of the American College of Cardiology. Researchers followed 2,521 healthy obese adults and found they were eight times more likely to develop chronic diseases over time, compared with non-obese individuals. Low-Carb Dieting Takes Another Blow People who consume more whole grains live longer, according to a new study from Harvard. Researchers analyzed the diets and mortality of more than 118,000 men and women from both the Nurses’ Health Study and the Health Professionals Follow-Up Study and found that, after an average of 25 years follow-up, more whole-grain intake was associated with lower death rates and that every whole-grain serving was associated with a 5 percent lower risk for death in general and a 9 percent lower risk for death from heart disease. New Review Finds Dairy Products Linked to Prostate Cancer High intakes of dairy products increase the risk for prostate cancer, according to a new meta-analysis in the American Journal of Clinical Nutrition. Researchers analyzed data from 32 different studies and found total dairy product, total milk, low-fat milk, cheese, and dietary calcium intakes were incrementally associated with an increased risk for prostate cancer. The Physicians Health Study, tracking 21,660 participants for 28 years, found an increased risk of prostate cancer for those who consumed ≥ 2.5 servings of dairy products per day, compared with those who consumed ≤ 0.5 servings a day. More Than Skin Deep "What is that?" This is what someone is sure to ask you at the checkout counter when you load your Jerusalem Artichoke, better known as a Sunchoke, on the conveyor. You'll proudly do a little promotional pitch for the vegetable. "You should try them. They're delicious! Like a cross between an artichoke heart and a potato." Like many tubers, sunchokes look a little strange. But when it comes to food, looks often can be deceiving. A sunchoke is the tasty, knobby root of a sunflower. Until recently, this native of North America was more popular in Europe than in the United States. The sunchoke is a hardy perennial that can grow in a variety of conditions, and is not frost tender. With water shortages and the growing cost of agriculture, farmers were looking for ecologically sustainable crops, and the sunchoke fit their needs. Sunchokes now are being grown both commercially and by home gardeners. Many small organic farms also are successfully growing sunchokes, so look for them at farm stands and farmers' markets (they resemble a ginger root). The crop does have its downside: It has a tendency to grow wild, and can be invasive, presenting challenges for farmers and backyard gardeners alike. As a healthy addition to our diet, sunchokes are a low-glycemic food, and possess a significant amount of protein. They also are rich in inulin, a natural fructose type of carbohydrate. Inulin is thought to be better tolerated by those with Type 2 diabetes. When shopping for sunchokes, look for firm, brown-colored tubers. If they're beginning to darken, they're not fresh. After you get them home, store in paper towels in a plastic bag in the refrigerator for up to two weeks. Don't wash your sunchokes until you're ready to use them, as moisture can lead to spoiling. Sunchokes have a thin skin and don't need to be peeled. Sunchokes are extremely versatile. You can use them in the same way you typically use a potato. They have a crunchy texture and are delicious raw. When roasted, their nutty flavor comes out. Steamed sunchokes can stand alone or mixed with other vegetables or to make a delicious soup. If you're using sunchokes in a creamed soup or puree and want to remove the peel for presentation color, pass them through a food mill or a fine mesh strainer.

ZESTY SUNCHOKE CHIPS • • • • •
2 pounds unpeeled sunchokes (also called Jerusalem artichokes), scrubbed Vegetable oil (for frying) 1 1/2 teaspoon salt 1/2 cup grated Parmesan (for vegans, substitute with Go Veggie Grated Parmesan Style Topping) 1 1/2 teaspoons minced fresh parsley
1. Fill a large bowl with cold water. Slice sunchokes into thin rounds (about 1/16 inch thick), immediately dropping into bowl of water to prevent browning. Rinse and drain 3 times to remove some of the starch for a crisper chip. Pat dry with paper towels. 2. Pour enough oil into large deep skillet to reach depth of 1/2 inch. Submerge bulb of deep-fry thermometer into oil; lean top of thermometer against skillet rim. Heat oil to 375 F. Mix salt, Parmesan and parsley together in small bowl, blending well, and set aside. 3. Working in batches, fry sunchoke slices until golden brown, 3 to 4 minutes, stirring occasionally. Using a skimmer, transfer chips to a wire rack placed over a paper-lined baking pan to drain. While chips are hot, sprinkle with the Parmesan and salt mixture. The chips won't be crispy immediately out of the fryer, so wait a few minutes for them to crisp up. Mound chips in bowl and serve. Serves 8. To bake the chips: 1. Preheat oven to 400 F. Line two baking sheets with foil and lightly grease with cooking-oil spray. Place slices in a single layer on the two sheets. Spray each slice with oil, then sprinkle salt on top. 2. Bake for 10 to 15 minutes. If they aren't golden brown and crisp, bake in 3 to 5 minute increments until done. Sprinkle with topping of your choice. Alternate toppings: For protein boost and enhanced “cheese” flavor: sprinkle chips with 1/2 cup nutritional yeast

HOLLYWOOD -- George Clooney isn't just resting on the laurels of his wife, Amal, being chosen as Barbara Walters' most interesting person of 2014. In addition to "Tomorrowland," in which he co-stars with Hugh Laurie and Tim McGraw, out May 22, he is busy producing (with partner Grant Heslor), the comedy "Our Brand Is Crisis," starring Sandra Bullock and Billy Bob Thornton. The answers: yes and maybe, although more trials need to be run. There were improvements in cholesterol, weight and blood pressure, all indicators for cardiovascular risk. One complication in the research is that there are different types of yoga, each with its own focus or purpose. The one thing any yoga can do is calm the nervous system and reduce stress, and that contributes to heart health.
Yoga for Your Heart It's been known for a long time that yoga improves overall health, but a recent study points to evidence that yoga also helps heart health. Researchers at Harvard University did a review of the literature, meaning they went back through past studies to see if there were any patterns. They screened more than 1,400 studies and winnowed them down to 32. These were examined further to answer the questions: Does yoga help heart health? Is it as good as walking for exercise?
The American Heart Association likes yoga as a means of relaxation and flexibility, increasing muscle tone and circulation, and agrees it could help prevent or improve heart disease. (It cautions, however, that it shouldn't be counted in the 150 minutes of weekly aerobic activity it recommends.) Yoga classes can be expensive. Your best bet is to check the local senior center, and if it doesn't have any classes, encourage the center to start some: maybe one focusing on flexibility and strength, and another on stretching and relaxation, and designed for seniors. Check with a cardiac rehab center for suggestions on yoga classes. Any yoga class you take should be designed for beginners. Here are some ideas to get you started: Ask your doctor before you start yoga, or any other program, to make sure it's right for you, especially if you have cardiovascular risk factors.
• Magazines and newspapers: Allow yourself three of each. When a fourth monthly magazine or daily paper arrives, throw out the oldest one in the stack.
Getting Rid of Clutter Whether you plan to stay in your home forever or sell it and move to smaller accommodations, getting rid of clutter can make your life easier and safer. Here are a few very good reasons to declutter: • Fewer opportunities to trip and fall. Consider what happens when a senior falls and breaks a bone: hospital, rehab and the question of where to go afterward. Can the senior go home and live independently again? Sometimes the answer is no. • Organizing makes things easier to find. • Clutter can be dangerous. If emergency services have to come to your house, will they be able to get to you? Or are pathways in rooms too narrow? Taken to an extreme, holding on to too many possessions can be called hoarding, and sometimes social services will step in to deal with it. Your best bet is to declutter long before it gets to that point.
• Keep incoming bills or correspondence in one spot, perhaps a basket or folder on the dining-room table, until you write checks or reply. • Instead of viewing it as an overwhelming task, work on decluttering for an hour a day. Sort clothes you don't wear anymore, tackle stacks of paperwork, make a list of items to give away or donate, such as memorabilia, books or tools. Then arrange for pickup of your donated items. • If things have accumulated on the floor, start there. • Ask for help if you need assistance with lifting or hauling things away. • On Jan. 27, 1785, the Georgia General Assembly incorporates the University of Georgia, the first state-funded institution of higher learning in the new republic. It wasn't until 1918 that the university began admitting women. • On Feb. 1, 1885, John Taylor, the president of the Mormon Latter-day Saints Church, goes "underground" to avoid arrest and continue resisting federal demands for polygamy. Taylor had at least seven wives. Although the Mormons wanted freedom from outside interference, they also sought the benefits of being a part of the United States. Inevitably, these two goals conflicted. • On Jan. 30, 1920, Toyo Cork Kogyo, a Japanese cork business, is formed. A decade later, the company produced its first vehicle and changed its name to Mazda. The Mazda-Go was a three-wheeled truck that resembled a motorcycle with a cargo-carrier at the back. • On Jan. 31, 1945, Pvt. Eddie Slovik becomes the first American soldier since the Civil War to be executed for desertion. Slovik was originally classified 4-F because of a prison record, but was reclassified 1-A when draft standards were lowered. First, confirm what kind of paint you used in the garage last summer by checking the label on the cans of leftover paint. It most likely was latex-based interior paint, but oil-based paint is still in use. The good news is, latex is the easiest paint to clean up, even when it's been dried on for some time. Don't use solvents like turpentine, alcohol, gasoline or anything else to clean latex, and don't listen to anyone who insists you use these chemicals. To clean latex paint off your brushes and rollers, fill a pail or utility sink with warm, soapy water. (Plain dish soap is fine.) Peel the plastic shopping bags off the brushes and discard them. If pieces of the plastic stick to the rollers or brushes, just leave them on, rather than potentially damaging

the brushes by trying to pry them off. Drop the brushes and rollers into the soapy water and let them sit for at least 20 minutes. Check to see if the dried latex is loosening up, being careful not to bend or tug at the bristles of the paintbrushes. If they're still stiff with paint, the bristles could fray or break. Keep soaking them, checking every 20 minutes or so, until the latex loosens from the bristles and roller sponges, and you can easily push it off the brushes. (If the brushes are still stiff or have bits of paint stuck to them, try soaking the bristles in boiling-hot white vinegar for about five minutes, then run a stiff nylon or plastic brush (never metal) through the bristles.) Rinse the soapy water off, shake or spin the rollers and brushes to get rid of excess water, and let them dry on sheet of newspaper or clean towels. Oil paint is a different matter. If you used oilbased paint and it has dried, you can try salvaging

the brushes by soaking them in mineral spirits or paint thinner for several minutes. Make sure the room is well-ventilated, and that you wear gloves and eye protection during this process. Roller sponges with oil paint dried on them may not be salvagable but if you need to pry them off the roller handles, apply mineral spirits or paint thinner to the ends to loosen the dried paint. Finally, store rollers upright and either hang brushes up or store them in a clean paint can, handles down and brushes upward. The Humane Society of Broward County and Broward County Animal Care & Adoption are teaming up for their fourth annual “Beat the Heat.” In an effort to prevent the births of potentially thousands of kittens in the upcoming spring and summer months, the shelters will be hosting “Beat the Heat” from February 2 – 6 and spaying and neutering cats for $15.00. The fee will also include a rabies vaccination and FVRCP booster. Felines eight weeks of age or older who are free-roaming, feral or lucky enough to have a home are eligible for this week long event, however appointments are necessary. The HSBC’s goal is to sterilize 350 cats and BCACA goal is to work with their veterinary partners and sterilize 150 felines. While kittens are cute, the fact is there are simply too many unwanted cats and not enough homes. Only with your help can we reduce the number of unwanted cats entering shelters. The HSBC is a private, non-profit organization supported by donations from people and companies who want to help us help the animals. The shelter receives no government funding and is not affiliated with any local or national organization with a similar name.
