VITAMINS by Janet Spencer On February 5, 1915, the first experiment sponsored by the Public Health Department in order to prove that some diseases are caused by dietary deficiencies began. Researcher Joseph Goldberger consequently proved that the skin disease pellagra is caused by poor diet. Come along with Tidbits as we consider vitamins!

VITAL AMINES • In 1911, Polish scientist Casimir Funk theorized that diseases such as beriberi and scurvy were caused by a lack of substances he dubbed “vital amines.” This term was shortened to ‘vitamins.’ He was the first to prove that these illnesses were not caused by exterior factors but were simply caused by dietary deficiency. • Other researchers began isolating these vital amines, calling them simply “vital amine factor A”, “factor B” and “factor C” and so forth. The lack of factor A caused blindness; the lack of factor B caused beriberi; the lack of factor C caused scurvy; the lack of factor D caused rickets; the lack of factor E caused miscarriage, and so on. • At one time there were vitamins A through P. Subsequent research revealed many duplicates, so some were scratched from the list. That's why there is no vitamin F today.

ELMER'S DISCOVERY • In the early 1900s, Elmer McCollum was a researcher at the University of Wisconsin. He was trying to discover whether wheat, oats, or corn was the best feed for cows. His method was to feed three different groups of cows the three different feeds and see what happened. The wheat-fed cows went blind. The oat-fed cows gave birth to dead calves. Only the corn-fed cows were healthy. • Next McCollum switched to rats. He fed his rats a mixture of protein, carbohydrates, minerals, and fat. Then he made an important discovery: when the source of fat was butter or egg yolk, the rats remained healthy. But when he switched the fat to ol-

• The daily allotment of vitamin A is about .0001 ounce. Vitamins A, D, E, and K are fat soluble and collect in the body tissues rather than being flushed out. These are the vitamins that can be overdosed. Beef liver contains 60,000 IU of vitamin A in four ounces; polar bear liver, however, is about ten times richer than that.

VITAMIN D • Vitamin D acts as a catalyst to produce proteins that allow minerals to move through the intestinal membrane and into the cells. Without it, the disease called rickets causes the bones to soften and bend. • The misperception persists that vitamin D is present in sunlight. Actually, vitamin D cannot be formed unless it is activated by ultraviolet light. Therefore, sunlight does not contain vitamin D; it only activates it. Cats and dogs, when they lick their

fur, ingest body fat that has been irradiated on their fur. This serves as a source of vitamin D. • One school of thought holds that black skin evolved as protection against sunburn and skin cancer. However, other scientists feel that white skin evolved as a measure to allow enough ultraviolet light to pass through the skin in cold climates where people wear heavy clothing and their exposure to sunlight is limited.

• Vitamin E is necessary for reproduction. Many people have concluded that if a little vitamin E is necessary to reproduce, then a lot of vitamin E should really make you a Casanova. But vitamin E's role in reproduction is merely to prevent miscarriage and has nothing to do with sex or conception.

• Scientists wondered why Hindus, who are strict vegetarians, never suffered from vitamin deficiencies while living in India, but would come down with B12 deficiencies if they emigrated to Britain. It was found that their diet in India inadvertently contained insect parts that became mixed in with the food. But in Britain, where food control laws were stricter, there were fewer microscopic insect fragments in the food. In-

sects are rich in vitamins, including B12. • Beriberi was a perplexing disease, causing fatigue, then death. In 1894 Christiaan Eijkman began to study it. Certain it was caused by a bacteria or virus, he tried unsuccessfully to infect chickens. One group of chickens received injections of the beriberi bacteria, and another group did not. Suddenly, both groups came down with beriberi. Just as suddenly, both groups recovered. He was mystified. • He spoke with the man who fed them. Back then, brown rice was undesirable, and white rice (which has the hull and the germ polished off) was desirable. Chickens were normally fed undesirable brown rice. But when the supply of brown rice ran out, the chickens received white rice, and they got sick. When more brown rice arrived, they recovered. Eijkman concluded that white rice contains a poison which brown rice neutralizes, not realizing that brown rice contains vitamin B1 (also called thiamine) which wasn't isolated and named until 1926.

EARL TUPPER Who hasn’t stored food in Tupperware at some time? It’s become the word that stands for nearly any plastic container used for leftovers! Here are the facts on its inventor, New Hampshire-born Earl Tupper. •As a youth raised on a farm, Earl was a hard-working, enterprising young man who sold his family’s produce door-todoor. His father was a laid-back tinkerer without much ambition, and his mother took in laundry and boarders to supplement the family’s income. •Although intelligent and innovative, Earl struggled in school, barely graduating. He took correspondence courses after high school, including one in advertising. When his parents started up a greenhouse in Massachusetts, Earl urged them to be more assertive in marketing their products, but to no avail. •Earl carried a notebook of his ideas at all times, making illustrations of various gadgets as they came to mind. He had ideas for improved stocking garters, combs that would clip to a belt, pants that would maintain their crease, and a convertible top for a rumble seat, along with hundreds of other designs. He was tireless in his efforts to sell his inventions, but with very few results. He finally established a tree surgery and landscaping business, married, and settled down. • Tupper’s business prospered until the Great Depression, when lack of customers forced him into bankruptcy in 1936. What seemed to be devastating became the turning point in Tupper’s life. He took a job in a Massachusetts plastic factory, working in the manufacturing division of DuPont. • Within a few years, Tupper took his knowledge and experience from DuPont, and along with some used molding ma-

Tupper Company, concentrating his efforts on plastic kitchen utensils and other household items. •Tupper first marketed his products as giveaways, such as a plastic cigarette case with the purchase of cigarettes or a plastic glass free with a toothbrush. His breakthrough came with his “wonderbowl,” an airtight plastic container with a patented burping seal. His first line of kitchen items was comprised of 25 pastel-colored items, with every piece designed by Tupper himself. His wife, mother, and aunts were the testers of each item. •In 1946, Tupperware debuted in hardware and department stores. Two years later, he received a call from a Florida woman named Brownie Wise, who presented Tupper with an innovative idea, that of selling his products exclusively through home parties. The Tupperware party was born! Tupperware was withdrawn from retail stores, and Brownie became the vice-president of the company’s home party division. She was responsible for recruiting thousands of women into an exciting career in the 1950s. • Drastic changes came about in Tupper’s life in 1958. After eight years of Brownie Wise’s extraordinary success at the helm, Tupper fired her abruptly and without cause. Within months, he had sold his company to the Rexall Drug Company for $16 million. Shortly afterward, he divorced his wife, bought an island in Central America, forfeited his U.S. citizenship, and spent the remainder of his life in Costa Rica. • Within five years of the founding of Tupper Plastics, annual gross sales exceeded $5 million. At the time of Tupper’s death in 1983, Tupperware’s annual sales were over $800 million.

FINGER BOWL *** Q: I purchased an Amberina finger bowl in the hobnail pattern for $20 at an estate sale. I think it is at least a hundred years old and rare. How much do you think it is worth? -- Susan, Waco, Texas A: It is worth just about what you paid for it, according to "Warman's Fenton Glass: Identification and Price Guide" by Mark. F. Moran and published by Krause Books. Your piece was made for the L.G. Wright Glass Company during the 1970s. *** Q: You referenced a doll expert, Sara Bernstein of New Jersey, in your column earlier this year. I contacted her, and she refused to appraise several dolls that I have inherited. What gives? -- Barbara, Chesterfield, Missouri A: As I mentioned in that earlier column, identifying dolls can be frustrating, since so many have been made and manufacturer's marks can be similar. I recommended one of the better dolls books, "Blue Book: Dolls & Values" by Jan Foulke and published by Holly House Books. This is, without a doubt, one of the best doll reference books I have found.

SCURVY • French explorer Jacques Cartier and his crew were searching for a sea passage across North America in the 1530s when they spent the winter on the St. Lawrence River, where they became icebound. By the middle of February the crew was suffering with scurvy and were so weak they could not move from their beds. 25 out of 110 crew members were dead. • Cartier, who probably had been sneaking food from a secret cache, remained in good health. He was reluctant to have much contact with the local Indians for fear they would attack the boat after seeing how weak the crew was. • Still, while Cartier was out on shore one day, he ran into an Indian named Dom Agaya. Cartier had met up with this man several days earlier and had noted that he also was suffering from the onset of scurvy. Now, however, he was completely cured. • Cartier asked him what had cured him, and the Indian showed him how to cut branches and needles from a local tree (probably a cedar tree), boil them in water, and drink the tea.

• At first some of Cartier’s men refused the cure, but when one or two tried it, they immediately began feeling better. The rest of the crew soon rushed to join them, and within eight days they had consumed an entire tree and in so doing had cured themselves. • Still, although Cartier took samples of the tree with him back to France, the knowledge of the cure failed to make the rounds. Ten years later, another French expedition wintering at the same spot on the St. Lawrence seaway lost 50 of their 200 crew to scurvy.

SCURVY SCALLYWAGS • In earlier centuries, scurvy was a disease that struck sailors, prisoners, armies, and besieged cities. Victims got progressively weaker and eventually died. • In 1737 an Austrian doctor named Kramer noticed that army soldiers often got scurvy— but the officers (who ate better food) never did. He was the first person to make the connection between diet and disease. • Soon after, a Scottish doctor named Lind proved that citrus fruits would prevent scurvy. • Captain Cook was so impressed that he took limes on his round-the-world voyage, and lost only one sailor to the

disease. However, the British army remained unconvinced and didn’t start following the advice for another 40 years. • In 1794 the British Admiralty finally decided to try citrus as a preventative for scurvy. They sent an English squadron out with a full supply of lemons. When the ships touched port at Madras 23 weeks later, only one crewman had come down with scurvy— and he had traded his daily lemon juice ration for another sailor's rum. • After it was discovered that citrus fruits could cure scurvy, every Spanish sailor bound for the Americas was supplied with 100 seeds or young seedlings to be planted in the new land. Today's Florida groves began with trees planted in 1513 by Ponce de Leon. By 1800 scurvy was wiped out. • Because lemons were commonly called limes, English seaman eventually became known as "limeys." • Without vitamin C, the body cannot synthesize collagen, which is the adhesive protein substance that holds cells together. Without collagen, wounds cannot heal, old scars may open, and gums rot. The victim becomes cranky, apathetic, and dizzy. Joints and muscles become sore, bones grow brittle, legs swell, and bruises appear as tiny blood vessels rupture. Death occurs when the brain, the lungs, or the digestive tract rupture.

PATIENT FIGHTS DOCTOR'S ADVICE DEAR DR. ROACH: I am 95 now and take no medications. My primary-care doctor wants me to take aspirin, even just the baby aspirin, twice a week. Some of the supplements I take do have blood-thinning characteristics, and for that reason I am fighting the aspirin recommendation. In general, is it OK to refuse the recommendation of one's doctor? -- F.V. ANSWER: It is your body, and you have every right to make decisions about your treatment. However, you should be very circumspect about overruling your doctor, and you should be doing so for very good reasons. Your doctor has the obligation to tell you why he or she is recommending a treatment and what the downsides are from not taking it. You, on the other hand, are obliged to tell your doctor the truth. In your case, it sounds like you don't want to take the aspirin because you feel the supplements you are taking have a similar effect to aspirin. Very few supplements, if any, have been studied as well as aspirin has. Aspirin has a clear risk of side effects, especially bleeding, but most evidence shows that it reduces the risk of heart attack more than it increases the risk of bleeding. It also might reduce cancer risk. The higher the risk of heart disease, the better aspirin is, in terms of risks versus benefits. At 95, your risk for heart attack is higher than a 50-year-old's, and so it would be expected to have more benefit than harm. So while I

ANSWER: Abdominal pain, heartburn and belching are nonspecific symptoms that can be associated with many conditions. The most common would be GERD (gastro-esophageal reflux disease), gastritis and stomach ulcer. The combination of medications your doctor is treating you with is for the bacteria H. pylori, which can cause gastritis and ulcers. Eradication of the infection, which is very common, can heal ulcers and relieve symptoms. H. pylori can be diagnosed definitively by a breath test or a stool test, or by biopsy of the stomach. A blood test shows evidence of old infection, but it isn't completely accurate. Stomach cancer has vague symptoms as well, and requires a high degree of suspicion. Large Review Shows Weight Loss with Vegetarian Diets Adopting a vegetarian diet leads to weight loss, without calorie counting or exercise, according to a new meta-analysis published by the Academy of Nutrition and Dietetics. Researchers from the Physicians Committee analyzed data from 15 studies which included a total of 755 participants, 197 of whom were prescribed vegetarian diets and 558 a vegan diet for at least four weeks, and found an average weight loss range of 7.5 to 10 pounds. High-Fiber Diets Increase Lifespan A high-fiber diet might save your life. In a new meta-analysis published in the American Journal of Epidemiology, people who consumed the most fiber were 19 percent less likely to die during study periods ranging up to a decade, compared with people who consumed the least amount of fiber. Researchers analyzed 17 studies comprised of more than 980,000 participants and found that every 10 grams of fiber consumed cuts mortality risk by 10 percent. Fiber helps regulate cholesterol levels, lower blood pressure, and control weight. A diet rich in fruits, vegetables, and whole grains can help prevent chronic diseases including cardiovascular disease, type 2 diabetes, and certain types of cancer, thus lowering your overall risk of premature death. People who are obese consume fewer essential nutrients, according to a study published online in the Journal of the American College of Nutrition. Researchers compared diet records of 18,177 participants from the National Health and Nutrition Examination Survey (NHANES) Study. Although results showed most Americans consume inadequate amounts of various nutrients, those who are the heaviest, classified as obese, experienced up to 12 percent lower intake of vitamins A, C, D, and E and calcium and magnesium, compared with those who are categorized as normal weight. 2. Fruits and Vegetables of All Kinds: Most people don't come close to the recommended amounts suggested by the American Heart Association, which is four to five 1/2 cup to 1 cup servings per day. Try declaring one day a week a vegetarian day where all meals will be meatless, or look for meal ideas where the vegetable is the main player, like in stir-frys and salads, or bowls of fruit with grains and berries for breakfast.

Choose Healthy Fats and Cooking Methods: Fats are not all bad, but the most important thing you can do is limit your fat intake and keep your fats to those found in Omega-3 foods and vegetable-based oils. TOFU CREME AU CHOCOLAT WITH RASPBERRIES

Then there are the good guys, who have their charms and who claim to give us what's good for us, like red wine and chocolate. It's so easy to commit to one of them because they have what we want! But the truth is that when it comes to our heart, there are only a few true-blue choices we should stay with for the long haul. As confusing and abundant as the information is that says this or that is good for us, it all boils down to a few simple qualities that make a good match for heart health.

1. Omega-3s: These are the fatty acids that possess a good kind of fat that helps prevent clogging of the arteries. These are normally found in fish, however, Omega-3s can be found in tofu, nuts and flaxseed. Incorporate these foods into your weekly menus every chance you get.

1. Melt chocolate in microwave on medium power, or in double boiler. Stir in margarine until no lumps remain. In blender or food processor, blend tofu, stevia or agave syrup, coffee, vanilla extract and salt for 1-2 minutes, or until smooth and creamy.

HOLLYWOOD -- In the '70s and the '80s, I covered the Hollywood scene, first as a photographer, then as a photo-journalist, taking pictures and writing columns for magazines such as Photoplay. I covered the Hollywood scene every night of the week and saw things that later turned out to be significant. On many occasions, I saw Bill Cosby exit private parties, at nightclubs, in the company of stunning women. Since he was married, we were asked not to photograph them, and we respected his wishes. (Today, the paparazzi hunt for those kinds of photos.) On more than one occasion, the ladies looked falling-down drunk and needed to be assisted to his car.

All these years later, after nearly 30 women have come out publically, saying they were drugged, it appears we may have witnessed a crime in the making. The seemingly harmless viral video with comedian Hannibal Buress, which brought this scandal to light, is an example of the power of social media. But with this power comes great responsibility. We can no longer make harmless jokes at other people's expense without the possibility of dire consequences.

*** "Star Wars" fans are worried now that Disney is in charge of George Lucas' brainchild. He will not have any input into the $200 million film "Star Wars: The Force Awakens," out Dec. 18. What they do have at Disney is J.J. Abrams, who is writing, producing and directing the new film. The original cost $11 million and grossed $776 million.

CRUNCHY MICROWAVE PEANUT BRITTLE Classic recipes sometimes scare me off. Too many steps, too many risks for failure and too many pans to clean. No wonder I was thrilled years ago when my mom shared her easy technique for making peanut brittle. It all comes together in the microwave. Reduced to these simple steps without need for a candy thermometer, your family will enjoy the salty-sweet confection in no time at all. Just be sure to spread out the hot mixture thinly on a warm pan to ensure the "brittleness" when it cools.

2. In a 1-1/2-quart-size microwave-safe glass bowl, stir together sugar, corn syrup and salt until smooth. Microwave on high setting for 4 minutes.

6. Cool and let stand until hardened, about 30 minutes. Break into serving-size pieces. Store extra candy between sheets of wax paper in an airtight container.

3. Stir in peanuts. Microwave on high for about 3 minutes, or until light brown.

NOTE: You may substitute roasted cashews or almonds for the peanuts.

4. Stir in margarine and vanilla. Microwave on high for 2 minutes more or until peanuts are lightly browned and mixture is golden in color. Microwaves vary, so keep an eye on it at all times to ensure peanuts do not burn. Remove carefully, as syrup will be very hot.

1. “Butter” or spray a baking sheet with cooking spray. Warm in an oven just before you pour the mixture onto it.

5. Add baking soda and gently stir thoroughly. Immediately pour mixture onto the warm baking sheet. Spread evenly with a greased spatula.

A: You could buy an electronic stud finder at your nearest home-improvement store, but if you don't want to shell out $20 or more for a one-time picture hanging project, you can learn to locate wall studs without help. And if you still can't locate the studs, or just want the extra assurance, you can go ahead and buy a stud finder (preferably one that also has a built-in laser level, which is very convenient). Studs are usually spaced about 16 inches apart. This varies, however. Above doors and windows, studs may be doubled or tripled up to support a heavier load. But along a wall, they're pretty evenly spaced apart. That's helpful to know once you've located a stud, because you have an idea how much space is open on either side. Studs are always located in specific areas: in each corner of a room, on either side of the window frame, and

They also are typically next to light switches and outlets (a couple inches to the left or right) because electricians often attach the fixture's box to the side of a stud. I say "often" and "typically," because every once in awhile an outlet is just set into the drywall.

Because you're hanging pictures, and I'm assuming relatively light ones, it's more important for you to locate the spaces between the studs, rather than the precise width and location of each stud. (If you are hanging really large, heavy frames, the studs play a more important role.)

You can combine a couple of low-tech methods to locate the rough position of wall studs. The first is to simply tap the wall and listen. First tap on the location of a known stud (the corner, for example). Then tap the wall a few inches to the right or left. You should hear a hollow sound away from the stud. The area of the wall that has a stud should sound solid.

Once you've got a general location for the studs, you can measure and mark the spots where you want to hang pictures.

The second method is to measure 16 inches from the known stud. Tap the wall at the end of the tape; if it sounds solid rather than hollow, you know you're at another stud.

Trace the outline of each frame onto blank paper, cut them out, and arrange the outlines on the wall to figure out the layout ahead of time.
