ECLIPSE by Janet Spencer • On August 21, 2017, a total eclipse of the Sun will pass across the U.S. It will begin at 10:16 a.m. PDT, starting at the Pacific coast of Oregon, crossing 12 states, over an estimated ten million residents. At any given spot, the eclipse will last only a minute or two. However, the period when the Sun is only partly obscured will take much longer. It will exit over the Atlantic Ocean at Charleston, South Carolina at 2:47 EDT, exactly 93 minutes after it started. Everyone in the continental U.S. should be able to see at least a partial eclipse on August 21st.

• A solar eclipse is when the Moon blocks the Sun, casting a shadow across Earth. The word “eclipse” comes from the Greek “ekleipsis” meaning “fail to appear.” This is also the root of the word “ellipsis” which is the name for the three dots (…) indicating something has been omitted. • Imagine holding your arm fully extended and pretending to pinch the Moon between your thumb and forefinger. How big is it? The size of an apple? A walnut? Or a pea? Actually, it’s the size of a pea. Now imagine you’re looking at the Sun, trying to pinch it as well. How big is it? It’s also the size of a pea. And this is why the Moon is completely able to block out the Sun. The Sun is 400 times larger than the Moon, but the Moon is 400 times closer to Earth than the Sun. • The orbit of the Moon around Earth is elliptical, like an egg. When the Moon comes between the Earth and the Sun, sometimes it’s close to Earth, called perigee, and sometimes it’s farther away from Earth, called apogee. When it’s at apogee, the Moon appears smaller and so it can’t block the Sun completely. A ring of light appears around the circumference of the Moon called the annulus (from the Latin word for “little ring”), and this is called an annular eclipse. When it’s near perigee, the Moon appears relatively large, so it covers the Sun completely in a total eclipse. The eclipse on August 21 will be a total eclipse. Annular eclipses outnumber total eclipses 5 to 4. • If the Moon orbited Earth in the identical plane that Earth orbits the Sun, there would be a lunar eclipse and a solar eclipse every month. But the Moon’s orbit is tilted at a five degree angle, making eclipses less common.

• A solar eclipse happens only at the new moon. The Moon has to be between the Sun and Earth for an eclipse, and that only happens during the new moon. By contrast, however, lunar eclipses only occur when the Moon is full. (continued next page) …turn the page for more

Eclipse
Illinois and Kentucky. Other areas will see the eclipse for slightly shorter times.
(continued):
• The longest a total eclipse can last is 7 minutes, 31 seconds. The reason eclipses vary in length is because the Earth is not always the same distance from the Sun, and the Moon is not always the same distance from Earth.
• On average, any given point on the planet will see a total eclipse of the Sun about once every 375 years. But that’s just an average. Some places will see an eclipse twice in a single decade such as Carbondale, Illinois, which has a front-row seat for the 2017 eclipse, and an eclipse on April 8, 2024. • There are about 66 total solar eclipses per century. If you include partial eclipses of the Sun, that number rises to 238 per century, meaning an eclipse occurs about once every six months. Many are not visible, either because they track across the oceans, polar regions, or areas where the weather is frequently cloudy. • Most people see a lunar eclipse at one point or another during their lifetime. Far fewer have ever seen a solar eclipse. There are two reasons for this. First, when there’s a total eclipse of the Moon, it can be seen by almost half of the planet. Anyone who can look up and see the Moon at night can see a lunar eclipse. But the path of a solar eclipse is usually only about 100 miles (160 km) wide, because that’s the size of the shadow of the Moon. Only the people who are under that narrow path get to see the solar eclipse. • The second reason is that a lunar eclipse generally lasts for hours because the Earth is large and it takes a long time for the shadow of Earth to cross the Moon. But during a solar eclipse, the shadow of the Moon is moving at over 1,000 mph (1,609 k/h), and it’s only 100 miles wide, so it takes just a few minutes to cross any point on Earth. • During a solar eclipse, the Moon throws two different shadows over Earth: an inner cone-shaped shadow, and an outer funnel-shaped shadow. The inner shadow is called the umbra, after the Latin word meaning “shade” which also gives us the word “umbrella.” The umbra is completely dark and very narrow, never being more than 167 miles (268 km) wide. The umbra in the 2017 eclipse will be only 65 miles (104 km) wide. You must be underneath the track of the umbra to see a total eclipse. • The outer shadow, which is broader and less dense, is called the penumbra, from the Latin “paene” meaning “almost.” If you are standing under the penumbra, you will see only a partial eclipse. Almost the entire continental U.S. will be under the penumbra. • The 2017 event will last 2 minutes and 40 seconds at its longest, which will be just as it passes over southern
PREMIER
• The reason the eclipse will be shorter in Oregon than in Kentucky is because the umbra travels at different speeds in relationship to its position on the surface of Earth. The umbra travels at the rate of 2,100 mph in relationship to the center of the Earth. However, the Earth is also moving, rotating in the same direction that the umbra is traveling. At the equator, Earth is moving at 1,040 mph. But 40° north of the equator, which is in the middle of the U.S., Earth is spinning at only 790 mph. An umbra traveling at 1,100 mph at the equator would be moving at 5,000 mph near the poles. The closer to the equator an observer is located, the longer the eclipse typically lasts. The umbra will be moving at nearly 3,000 mph on the coast of Oregon, but only about 1,500 mph over Kentucky. • The length also depends on where an observer is standing in relation to the umbra, which is oval. The eclipse lasts longer for a person standing under the fattest part of the oval than it does for someone under the skinnier ends of the oval. • The eclipse on August 21 will be the first total eclipse of the Sun to be seen in the U.S. since 1979, unless you count the one that could be seen only from Hawaii in 1991. The eclipse in 1979 clipped only the Northwestern U.S. and the weather was mostly cloudy that day. The last time an eclipse occurred in the U.S. that spanned the entire continent was in the year 1918. But the next one will occur in 2024, traveling from Texas all the way to Maine. • From the moment when the Moon first begins cutting across the Sun, it will be about 75 minutes before totality is achieved. About 15 minutes before totality, the shadow of the Moon will be visible on the western horizon. As totality occurs, there will be many features to watch for: • When a ray of light from a distant star encounters the atmosphere of Earth, it travels through successive layers of hot and cold air, which bend and distort the light. This is what causes stars to appear to twinkle. During an eclipse, the same thing happens to the beam of light coming from the Sun. When there is only a tiny sliver of light still visible from the Sun, the light appears to shimmer and twinkle just as stars do. This is called shadow bands. Shadow bands are only visible for a few fleeting moments. It’s easier to see this occur if there is a large

white surface available such as the side of the building or even a big piece of white poster board. It will look like ripples on the bottom of a swimming pool. • As the Moon moves to cover the Sun, you may see a string of bright points of light around the circumference of the Moon. The Moon is not perfectly round. There are mountains, valleys, and craters on the surface. The light of the Sun shines through these cracks and crevices. These points of light are called Baily’s beads after an astronomer who described them. • You may also see what’s called the diamond ring effect, with one brilliant spot of light shining out from the circumference of the Moon, both as the totality begins, and then again as it ends. • Then the Sun’s corona appears, with sheets of pearly light fluctuating all around the darkened circle. “Corona” comes from the Latin word meaning “crown” or “garland.” • A total solar eclipse is not noticeable until the Sun is more than 90% covered by the Moon. Even at 99% coverage, daytime light looks like twilight. It is tempting for observers to look directly at the Sun when the eclipse is in progress. This is a stupid thing to do. • One percent of the Sun still shines about 4,000 times brighter than the full Moon. Permanent eye damage can result after 60 seconds of viewing the Sun. Even the smallest sliver of sunlight passing through the eyeball will literally fry the retina, causing thermal damage in the same way focusing sunlight with a magnifying lens will fry an ant. You won’t feel the burn and there will be no pain, but there will be a blank spot in your vision for the rest of your life, impairing your ability to read, sew, or drive. Lasers and welder’s arcs cause the same sort of damage. • Do not view the eclipse through makeshift items such as dark glass, silver candy wrappers, CDs or DVDs, or sunglasses. Although they make the Sun look dark, they do not block infrared or ultraviolet radiation that can permanently damage the retina and lead to blindness. The only time it is safe to look directly at the Sun is when it is completely obscured by the Moon. Use 14 grade welder’s glasses or inexpensive Mylar eclipse glasses available on the internet. • It’s easy to make a simple pinhole camera using two pieces of stiff cardboard. (Do not view the eclipse through the pinhole.) Leafy trees, woven hats, interlaced fingers, kitchen colanders, cheese graters, or any other place where tiny pinholes allow the Sun to shine through will cast crescent-shaped shadows. • When Dr. Peters of Hamilton College was asked what single item he would select for observing an eclipse the best, he responded, “A pillow.” Don’t forget to enjoy your eclipse.

* It was 18th-century American novelist and poet Herman Melville who made the following sage observation: "Of all the preposterous assumptions of humanity over humanity, nothing exceeds most of the criticisms made on the habits of the poor by the well-housed, wellwarmed, and well-fed." * Those who study such things say that the three subjects that spark the most arguments in a marriage are money, children and driving. Of course, any couple that has had to figure out a teenager's auto insurance costs already knows that. * Dogs can be xenophobic, too -those are the pups that are afraid of strangers. * You've heard of standing desks, right? These work surfaces -which are designed to allow people to stand rather than sit while accomplishing their tasks -- have become quite popular in recent years. Standing desks are not a new invention, however; they reportedly were used by such notable historical figures as Benjamin Franklin, Leonardo da Vinci, Thomas Jefferson, Virginia
Woolf, Oliver Wendell Holmes and Winston Churchill. * According to scientists, time can be measured more accurately than length. * If you're sick of naysayers, you might want to try becoming a yeasayer for a day. Yep, that's a word -- it refers to a person with a confident and positive outlook. (Note: It also can mean a yes-man – someone who agrees uncritically with others – but let's be confident and go with the positive definition.) * It's been reported that 16th-century English theologian John Wesley, founder of Methodism, never ate an evening meal. *** Thought for the Day: "We open our mouths and out flow words whose ancestries we do not even know. We are walking lexicons. In a single sentence of idle chatter we preserve Latin, Anglo-Saxon, Norse: we carry a museum inside our heads, each day we commemorate peoples of whom we have never heard." -- Penelope Lively (c) 2017 King Features Synd., Inc.

"Hickok" (as in Wild Bill Hickok), with Kris Kristofferson, Bruce Dern and Trace Adkins, hit big screens in July. The Hollywood Reporter observed in its review, "The innate superiority of the Hemsworth family gene pool is demonstrated by the low-budget oater." The film will be available Aug. 17 on DVD. Luke's next film, the sci-fi thriller "Encounter," with Tom Atkins (of the 1980 classic "The Fog"), will arrive Nov. 1. Chris Hemsworth has three Thor films in his future: "Ragnarok" (in theaters Nov. 3), "Avengers: Infinity War" (out May 4) and an untitled "Avengers" film (due May 3, 2019). He's also starring for Jerry Bruckheimer in his war drama "Horse Soldiers," in which he, Michael Shannon and Michael Pena are CIA agents in Afghanistan fighting the Taliban. Next up is "Winchester" (out Feb. 23) as Sarah Winchester, whose husband, William Winchester, treasurer of The Winchester Repeating Arms Co., and daughter died suddenly, three weeks apart, in 1881. She believed she was cursed, and that if she stopped building their house in San Jose, California, she would die. For nearly 40 years, she built rooms and staircases that led nowhere, until she became ill and the work stopped, at which time she died. In addition, she's co-starring with Keira Knightly and Morgan Freeman in Disney's live-action film, "The Nutcracker and the Four Realms," due Nov. 2, 2018. ing services such as Netflix, Hulu and Amazon Prime. A: Indeed it will, Ken. Season six of the hit procedural crime drama will return to TNT on Tuesday, Oct. 31, at 9/8c with 16 new episodes. This season, as Cmdr. Sharon Raydor (played by two-time Oscar nominee Mary McDonnell) grows accustomed to her new boss, Assistant Chief Leo Mason (Leonard Roberts), the detectives find themselves questioning their faith in the rapidly changing priorities of the justice system and their ability to reason through difficult changes in their personal relationships. They must learn to accept the necessity of risk, in all its different guises, as they prepare to face the inexplicable but increasingly undeniable return of Phillip Stroh (guest star Billy Burke). The cast also includes G.W. Bailey, Tony Denison, Michael Paul Chan, Raymond Cruz, Phillip P. Keene, Kearran Giovanni, Jonathan Del Arco, Graham Patrick Martin, Jessica Meraz and Daniel di Tomasso. *** Q: What is this talk I'm hearing about a "Karate Kid" series with Ralph Macchio? – Samantha F., Asheville, North Carolina A: It's not just talk; it's definitely happening. More than 30 years after Ralph won the Under-18 All-Valley Karate Tournament, he'll be back in the dojo as Daniel LaRusso in 2018 for YouTube Red's "Cobra Kai." Daniel's archenemy, Johnny Lawrence (with William Zabka reprising his role), has reopened Cobra Kai dojo in his quest for redemption. The 30-minute comedy received a straightto-series order for 10 episodes from the online streaming network, placing it in the big leagues with other stream-
Executive producers Josh Heald ("Hot Tub Time Machine"), Jon Hurwitz and Hayden Schlossberg (both of "Harold and Kumar" fame) also will write the script. In a joint statement, they said: "'Cobra Kai' will be a true continuation of the original films -- packed with comedy, heart and thrilling fight scenes. We can't wait to reignite the LaRusso-Lawrence rivalry." Susanne Daniels, YouTube's Global Head of Original Content, added: "If 'The Karate Kid' was Daniel's story, 'Cobra Kai' is equal parts Daniel and Johnny's story." *** Q: Can you tell me what Jonathan Groff is up to? I loved him on "Glee" and miss seeing him on my TV set." -- Linda T., via email A: This fall, you can catch the talented actor/singer/dancer/Broadway phenom starring in the Netflix original series "Mindhunter." Jonathan plays an agent in the FBI's Elite Serial Crime Unit who tracks down serial killers and rapists in the 1970s. In fact, he's responsible for coining the term "serial killer." The project is being produced and directed by David Fincher ("Zodiac" and "Seven"), so you know it's gonna be crazy-good and suspenseful and scary. Look for the series to drop Oct. 13 with 10 episodes. Write to Cindy at King Features Weekly Service, 628 Virginia Drive, Orlando, FL 32803; or e-mail her at letters@ cindyelavsky.com. SOCIAL SECURITY BENEFIT INCREASE?
HOW TECH SAVVY ARE WE? According to a recent Pew Research Center study, more and more of us are adopting technology in our lives. We're using cellphones, tablets, computers, the internet, social media – all of it. Here are a few of the stats Pew came up with: * Some 42 percent of us own smartphones, a number that has quadrupled in the past few years. Age plays a part, with 59 percent of the 65-69 group owning smartphones. When it's any type of cellphone (not just a smartphone), the number is significantly higher. * An average 67 percent of us are on the internet, but again, use depends on age. The 65-69 group comes in at 82 percent. Those with a college education rated a whopping 92 percent. Three-quarters of us are on the internet daily; once we get used to it, we apparently like it, especially for news and games. * Half of us have internet at home, and income plays a part in this. Those who earn more than $75,000 are significantly more likely to have internet access at home than those who have incomes below $30,000. * One-third of us are on social media, and one-third of us own a tablet. * In spite of the stats, not many of us feel confident when it comes to using all the new technology. Nearly half of us need someone to help set up the new devices we get. But that's OK. As long as we get help to hook everything up and install software, it doesn't matter where we get it -- whether it's the closest 15-year-old or the company's tech support. And when something new comes up, we can look it up on the internet.
Cross your fingers: We're likely to get a 2.2 percent increase in Social Security benefits for 2018. With the average monthly benefit of $1,360, the increase would average $29.92 per month. This is quite a jump, considering the pitiful increases of the past few years: 1.7 percent in 2012, 1.5 percent in 2013, 1.7 percent in 2014, 0.0 percent in 2015 and 0.3 percent in 2016. While 2011 was a big 3.6 percent, it followed two straight years of no increase whatsoever. What shall we do with our extra $29.92 each month? We could save our windfall for two months and buy a pair of walking shoes. We could pay for one month of
a no-contract plan for a cellphone. Or, we could keep our expenses as they are and stash the extra away for emergencies. An important change coming in 2018: The full retirement age for those born in 1956 is going up by two months, for a new age of 66 years and four months. If you file for benefits before then, you'll end up collecting reduced payments for the rest of your life. If you're just signing up for Social Security, here is a fact you should know: The benefits don't necessarily arrive on the first day of the month. If you planned to pay your rent or mortgage payment that day, beware. The day the benefits arrive depends on your birthdate, and will arrive on either the 2nd, 3rd or 4th Wednesday in a month. Go online to www.ssa.gov to see where you fall in the month. Search for Schedule of Social Security Benefit Payments 2018. Keep an eye on the news in October when the official Social Security increase for 2018 will be announced.

FOXY GRANDPA Q: I have a bisque figure of "Foxy Grandpa," which has been in my family for more than a century. What can you tell me about this character? – Betty, Santa Fe, New Mexico A: "Foxy Grandpa" was created by cartoonist C.E. Schultze. It was introduced in the New York Herald in 1900 and was an instant hit. The strip moved to the New York American in 1902 and eventually to the New York Press, where it remained until 1918. The cartoons triggered many products, including games, postcards, song sheets and bisque figurines. It even inspired a Broadway musical. Your figurine probably was issued in 1905 and is valued in the $50 to $200 range, depending on condition. *** Q: I have a biscuit jar that an appraiser identified as overshot glass. What is overshot glass? -- Mary, Illinois A: Overshot glass was developed during the 19th century. Pieces generally appear to be frosted or iced, an effect made possible when a gather of molten glass is rolled over a marver covered with crushed glass. Early pieces that I've seen are clear, but examples in color
Q: My grandma collected thimbles throughout the 1940s and '50s. Her collection is unique, since all of her thimbles promoted various political candidates. Her thimbles include ones issued during the Harding, Coolidge, Hoover, Eisenhower and Nixon campaigns. Are they valuable? -- Jon, Ohio A: After the 19th Amendment expanded women's suffrage throughout the country, thimbles emerged as campaign tools directed toward the new voting constituents. Most of the political thimbles I've seen in shops sell in the $10 to $25 range. *** Q: I have some 33-rpm LPs of Dean Martin, Perry Como, Al Hirt and others from this era. Where can I sell them? -- Jeane, New Mexico A: Most LPs -- such as the ones you mentioned -- sell for about a dollar each, sometimes less, sometimes more, depending on rarity and condition. affordablesalesandrentals.net • We speak Russian, Spanish, Portugese and Hebrew Texas and New Jersey have some sort of kindred spirit. We don't ever care about the price of gas, we don't mind talking loud, and you have to presume that we're packing heat. The person across the way started talking smack about Eli Manning and the Giants, and the Giant fans, in turn, returned fire about Tony Romo and Gov. Chris Christie, whom everyone in New Jersey hates. (There were no Jets fans in attendance because nobody ever talks about the Jets.)
If ever there was a more relevant irrelevant athlete in the history of sports, it is Pete Rose. Everyone remembers that kid in class when we were growing up who just couldn't seem to control himself or stay out of trouble but was the first guy you'd pick for your kickball team. Wherever Pete Rose went to school, he was that guy. Pete Rose manages to stay in the news, and he does it better than any other player with the exception of Jackie Robinson. Nobody sits around these days and talks about, say, Walter Johnson, George Sisler, Johnny Mize or Nap Lajoie. But we still talk about Pete Rose. The kid stays in the picture. The Philadelphia Phillies wanted to induct Rose into their hall of fame a week ago, and they had planned on passing out little bobbleheads of his likeness to all the fans in attendance. As per the norm, the deal didn't go down because Rose has some alleged NSFW issues. The Phillies had good intentions, but if there's anything Pete Rose does better than hitting a ball with a bat, it's staying out of halls of fame. I love Philadelphia, and I love Philadelphia fans. I can relate a story about the time I was in a very famous resort town in New Jersey, and one day, over ice-cream sodas, conversation occurred with a few darling tourists from Dallas.
2. Which Baltimore Orioles pitcher in the 1960s tossed shutouts in his first two major-league starts? 3. Which team ended the NFC's run of 13 consecutive Super Bowl victories? 4. When was the last time before the 2016-17 season that Valparaiso had a men's basketball coach who did not have the last name of Drew.
For dangerous fun, I pointed out one of the patrons in an Eagles hat and said to the Dallas fans to pay close attention.
5. Name the last No. 1 seed in the NHL playoffs before Chicago in 2017 to be eliminated in the first round.
"At least we're not EAGLE fans," I said with exaggeration, and like clockwork, within a microsecond, the Eagle fan's head shot up.
6. Who was the last American male boxer before Shakur Stevenson in 2016 to win a gold or silver medal at the Olympics?
"DON'T EVEN GO THERE!" In context, it wasn't a very genial reply, but it did beg my next question.
7. In 2017, Justin Thomas recorded the lowest-ever score for a 72-hole PGA event (253). Who had held the record for the lowest score?
"Go where? The Super Bowl? Where the Eagles will never go in your lifetime?" The barstool screeched across the floor. He tried to make a rush, but just like the Eagles front line he was subdued with ease, and the staff quickly punted him out the door. "See?" I said to the Dallas fan. "That's a Philadelphia fan. Half of that city will literally fight you if you talk smack about their team." And this is the town that won't stand by Pete Rose and toss around a little doll? I'm not in any way suggesting that the allegations regarding Rose are something to make light of, but they are just that -- allegations. We don't know what happened in his private life, but I think we all know far too much about Pete Rose's life anyway. And seriously, Pete ... Philadelphia didn't back you up? That's hall of fame stuff right there. We know you're the hit king, but after a while you have to admit that you've taken too many hits, too. Sooner or later you have to call the game. COMPANION ANIMALS AND FAIR HOUSING WILY BEAGLE THINKS HE'S HOUDINI DEAR PAW'S CORNER: My rescued beagle, "Fergus," is a dedicated escape artist. If I let him out in our backyard unsupervised, he will find a way under, around or over the fence in almost no time. Then I'm chasing him all over the neighborhood. I'm thinking of getting a higher fence, and in the meantime, I've changed the latch on the fence gate -- he figured out how to undo the old one! What else can I do? – Frustrated Dad in Houston DEAR DAD: Escape-artist dogs can be tough to reel in. And while neighbors may ask why you can't simply keep Fergus inside, I know it's even tougher to keep a high-energy, creative dog indoors when there's a big, beautiful world just outside the window. A multi-pronged approach is needed here. A higher fence and stronger latch are good solutions, but so is curbing that wanderlust. If Fergus isn't neutered, get that taken care of. It can dampen his tendency to wander, particularly if he's on the hunt for a female. He'll also need to be supervised every time he's outside. That means dedicating a good chunk of time to Fergus, as bringing your laptop out with you to work may not be an option – he'll likely pester you constantly to come and play. And you should. Play fetch, do some impromptu obedience training, and so on. Grab some items that will challenge Fergus. He's clever, so feed him using a "slow feeder" bowl that requires dogs to work through a grooved maze to get food. Give him toys that drop treats randomly when played with. But most of
DEAR PAW'S CORNER: I read your column with the question from Christine B. in Atlanta about her struggle to find pet-friendly housing. I am a director at a nonprofit housing provider, and previously worked as a fair-housing specialist in Nevada. I do not know Christine B.'s specific situation with her cats regarding whether or not she has a disability. However, I feel compelled to offer the following comments and tips regarding Reasonable Accommodations in rental housing under U.S. Department of Housing and Urban Development, which applies to all rental properties of more than four units where the owner does not reside on-site. In April 2013, HUD's office of Fair Housing and Equal Opportunity released guidance stating that any comfort, therapy or companion animal is considered a service animal. This is much broader than the more familiar ADA requirement defining a service animal as either a dog or a miniature horse trained to assist a disabled person with a certain task. Many people who suffer from depression and anxiety as well as those with physical ailments who benefit from their companion animals (cats too!) can request a Reasonable Accommodation from a landlord. Because they are considered service animals per HUD's guidance, landlords may NOT collect pet deposits, pet fees or pet rent from residents requesting this accommodation. I firmly believe that all tenants should be aware of their rights. -- Joscylyn H., Albuquerque, New Mexico DEAR JOSCYLYN: This is fantastic to hear, and I hope it helps Christine and others in her situation. Readers, if you have companion animals and want to learn more about your rights as a tenant, visit hud.gov for more resources. (c) 2017 King Features Synd., Inc.

Delight Vegetarians With Grilled Eggplant
GOURMET ON A BUDGET You easily can prepare delicious meals for your family and friends without spending a lot of money. My frugal relative runs a small gourmet catering business. She manages to put on high-end events with a low-end budget by planning carefully and shopping at discount stores for ingredients and supplies. Her freezer is her friend, because she often buys items on sale and then packages and stores them for later use. Her fabulous food and events are always beautifully presented without breaking the budget. Try these tips to save time, money and stress when making gourmet meals for your friends or family. * Compare brands and look at the cost of food per serving. If you'll use all of it, the economy size is often (but not always) a better price per serving. Bring a calculator to compare unit prices. (Sales tags often do not compute unit prices.) Generic brands tend to be the best deal, and they often are just as good as the name-brand items. * Where you shop may cost you money. Bulk food stores aren't always a good choice. You may be tempted to buy foods you don't need and can't store properly. * Buy canned, packaged non-food items and personal-care items from discount stores. You'll pay more for these at the grocery store. * Stock up on budget-friendly, often-used non-perishable or easy-to-freeze foods when they're on sale. * Nutritious foods are a better value. Foods high in fat and sugar -- like cookies, chips, doughnuts and soft drinks -- have fewer nutrients than fruits, vegetables, whole grains. Remember, the fiber in fruits and vegetables fills you up and keeps hunger away.
Gathering guests around the grill is an easy way to entertain and providing a barbecue menu that your vegetarian guests will enjoy is simple when using eggplant as the main course. Eggplant is easy to grill and can be used in a variety of ways to create a satisfying dish for your vegetarian guests. It's high in dietary fiber, magnesium, potassium and many antioxidants. Improperly prepared eggplant can be slimy or bitter, but if you prepare and cook eggplant correctly, it's delicious. And grilling makes it even more flavorful.

I like to first prep the eggplant using a salt-extraction method to remove any bitter liquid. This technique guarantees that the eggplant will be crispy and brown on the outside, and creamy and sweet inside. First, cut the eggplant lengthwise into thick slices, or you also can cut it into cubes and use them to make kabobs. Layer the pieces of eggplant in a colander and salt them generously. Place the colander on top of a bowl to catch the liquid the eggplant will give off.
1 teaspoon onion powder 1/3 cup olive oil 1. Clean the grill and lightly oil the grate with a foodsafe paper towel. Heat the charcoal or gas grill to medium-high heat. You'll know the grill is ready if you can hold your hand about an inch above the grill for 3 to 4 seconds.
Next, place paper towels on top of the eggplant. Then weigh everything down to extract as much liquid as possible. You can use heavy cans wrapped in foil, or a heavy pot with a few cans inside of it. Let the eggplant drain for about an hour.
2. Drain the eggplant and pat dry with paper towels or a clean kitchen towel. Lay the eggplant and the bell peppers on a large baking sheet or tray. Brush both sides of the eggplant and the peppers with olive oil, and sprinkle both sides with the Italian Seasoning, pepper, and the garlic and onion powders.
When you remove the eggplant from the colander, you'll notice that a lot of water has been released from the vegetable. This is a good thing. That means that if the eggplant had a bitter flavor, it has been removed. Rinse the slices and pat them dry with paper towels. Now your eggplant is ready for the grill.
3. Lay the vegetables on the grill. Close the lid if using a gas grill and cook until grill marks appear, about 3 to 5 minutes. Turn the slices over and cook until grill marks again appear and the vegetables are tender, about 2 to 3 minutes. Serve hot or at room temperature. Makes 8 servings.
You can serve grilled eggplant in a variety of ways -- as a main-course item in thick slices, along with grilled bell peppers or mushrooms; cut into cubes and served as part of a veggie kabob; piled on grilled slices of bread to make a panini; or tossed with hot or cold pasta. Any way you serve grilled eggplant, it's delicious!

THE CHEESE TRAP The Cheese Trap is a fascinating tour though all the things you never knew about America’s favorite addiction – and how to break free. If you’ve been looking to lose weight, tackle cholesterol, skin problems, headaches, joint pains, or respiratory troubles, or you just wanted to take an important step for the animals and the earth, this is the place to begin.
•Most cheese contains estrogens, because dairy cows are pregnant most of the year.
Some facts to know and share: •The average American eats 60,000 calories’ worth of cheese every year. •Two ounces of potato chips have 330 milligrams of sodium; two ounces of Velveeta have 800 mg.
The Cheese Trap also tells the bizarre facts about how cheese is made, why it smells the way it does, and how it affects your brain to keep you coming back for more.
•Typical cheeses are 70% fat, most of which is saturated (“bad”) fat.

ANSWER: Calcium oxalate is the most common type of kidney stone, so limiting dietary oxalate makes sense. However, increasing water intake, dietary calcium and potassium can help prevent kidney stones. It is paradoxical, but dietary calcium reduces kidney stone risk while calcium supplements increase kidney stone risk. Also, vitamin C increases kidney stone risk, so it's not recommended to take supplemental vitamin C. There are many places to find the oxalate content of food, starting with your dietician, but websites like www. lowoxalate.info and www.ohf.org have nice lists. There you can find many fruits and vegetables that have little or no oxalate, including broccoli, lettuce and cucumber. You do need to avoid spinach, beets and similar vegetables. As far as grains go, corn, rice and wild rice are good choices. *** DEAR DR. ROACH: An MRI shows that I have spinal stenosis. I have not improved with chiropractic care, electrical stimulation, medication (including hydrocodone, tramadol and a pain patch), physical therapy or three spinal injections. After the third injection did not help, I told the surgeon I would need back surgery, but he said I am too old. I am 76. Am I too old? -- H.S. ANSWER: Spinal stenosis is a back condition in which the spinal cord or nerve roots are compressed due to bony abnormalities. The pressure on the nerves can cause pain, loss of reflexes and numbness. Spinal stenosis is most common in the lower back, but it can happen in the neck and midback as well. It is seen more often in people over 60 and is the most prevalent reason for back surgery in people over 65. The MRI usually shows the compression on the spinal cord or nerve roots; however, the decision for treatment is made based on the symptoms, not necessarily how the back looks by MRI. You have had the recommended nonsurgical treatments, including several medications, physical therapy and injections. Consideration of surgical treatment is reasonable. When considering any therapy, the physician must consider the potential benefits and risks. The benefit of surgery is that it is more likely to relieve pain and improve function. There is a small risk of a serious bad outcome (death, worsening of pain or weakness). In general, the older a person is, the more risky the procedure. However, there is no absolute age cutoff of who can and can't get the surgery. The overall health of the person is more important than age. Younger people may be a bit more likely to see better improvements in walking after surgery. Back surgery shouldn't be undertaken lightly at any age. Get a surgical opinion -- and probably a second opinion -- before making a decision. Only the surgeon, with access to your MRI results and having completed a careful history and exam, can make an informed recommendation about your personal situation. The booklet on back problems gives an outline of the causes of and treatments for the more-common back maladies. *** DEAR DR. ROACH: For a young couple wanting a baby, is there any help available for a man with a low sperm count? -- N.N. ANSWER: Identifying the cause of a couple's infertility is often difficult. In one large study, 20 percent of cases were attributed to male factors, and 38 percent to female. In 27 percent, there were reasons for infertility in both partners, and in 15 percent of cases no cause could be found. Clearly, both partners need to be evaluated. Low sperm count isn't a diagnosis; many separate systems can be affected, all leading to reduced sperm count. Abnormalities in hormonal function, mechanical obstruction and testicular disease all are possibilities. Although many causes of low sperm count are untreatable, not all are. For example, elevated prolactin levels from a tumor or medication can be treated, leading to improved fertility. Low sex-hormone levels can be replaced. Many men are advised to wear boxer shorts, as high temperatures affect fertility, but it's not clear this is effective. Assistive procedures, such as intrauterine insemination, in-vitro fertilization and intracytoplasmic sperm injection (a single spermatozoa injected into an egg) can be effective, but these procedures are always expensive, rarely covered by insurance, not 100 percent effective and have a small increased risk of birth defects.
*** DEAR DR. ROACH: Is secondhand vapor (from the electronic cigarettes) harmful? -- B.S.B. ANSWER: While the evidence that secondhand smoke from regular cigarettes is harmful to people around smokers, causing increased risks of lung cancer and heart disease, the data just aren't clear about the vapor from electronic cigarettes. It is known that the vapor contains nicotine and potentially cancer-causing chemicals, but the amounts are much lower than with regular cigarettes. These chemicals can be inhaled by nonsmokers if close enough and possibly absorbed through the skin. Electronic cigarettes, also called vaporizers, may help people quit smoking. That's the only use for them that I would recommend, after which they should be eliminated. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. DAFFODILS Celebrate World Daffodil Day on August 25 by plucking a few facts about this cheery blossom. •Daffodils are also known as paperwhite, jonquil, and narcissus, and are members of the amaryllis family. The word “narcissus” has its origins in the Greek language for “to benumb,” referring to the narcotic properties of this plant. In Greek mythology, Narcissus was a beautiful youth who fell in love with his own reflection in a pool, and pined away, unable to leave the beauty of his reflection. According to the myth, the gods turned him into a flower. Narcissus lent his name to the word “narcissism,” a fixation with one’s own physical appearance and abilities. •Although there are close to 60 different species of wild daffodils, at least 13,000 types have been created through selective breeding, with more being created every year. •The plant has a leafless stem that will have one to 20 trumpet-shaped blossoms on top. Although the most familiar color is yellow, other varieties can be found in white, orange, green, and pink. The plant varies in height from 6 inches to 20 inches (15 to 51 cm).
Find All the Fun and Games Answers on Page 14! have a dog who likes to dig. •Because of the toxic sap in the stem, daffodils shouldn’t be arranged in a vase with other flowers unless the daffodils have been soaked in water for 24 hours. Re-cutting the stems will cause a re-release of the toxin. Florists often have an allergic reaction to the flower called “daffodil itch.” •It’s odd that although the stem and bulb are toxic, another substance found in the bulb called narciclasine has been shown to have potential to treat breast cancer. In addition, an alkaloid known as galantamine found in daffodils is proving effective against the symptoms of Alzheimers Disease. Even the ancient Romans cultivated daffodils for the sap they believed had healing properties. Ancient Egyptians used the juice of the wild daffodil as a cure for baldness. It’s not known whether or not it worked! •Although daffodils have been cultivated since ancient times, the name was not recorded in print until 1538. In 1623, William Shakespeare mentioned daffodils twice in Act 4 of his play “The Winter’s Tale.”
•Daffodils bulbs store all the nutrients necessary to develop the stem and blooms. Bulbs planted in the Autumn will blossom in the Spring, sometimes pushing their way through the snow. Daffodils can also be grown from seeds, which are round and black with a hard protecting coating.
•The daffodil is the national flower of the country of Wales, and the Welsh people wear a blossom on Saint David’s Day, March 1. Welsh legend claims that if you spy the first daffodil of the season, the coming 12 months will be filled with wealth. To these folks, it symbolizes new beginnings. The wedding cake of Britain’s Prince William and Kate Middleton featured 17 different kinds of flowers, one of which was the daffodil.
•The stem and bulb of a daffodil contain a toxic alkaloid designed to keep predators at a distance. Squirrels know better than to eat daffodil bulbs because of the poisonous crystals, but the bulbs shouldn’t be planted if you
•During Victorian times, the flowers were a symbol of chivalry. If you receive a bouquet of daffodils, it’s a symbol and happiness, good fortune, and hope. However, a gift of a single daffodil is said to predict misfortune.
