• In the 1600s, Ellis Island was the home of Mohe gan Indians, who called it Kioshk, or Gull Island. The 3.3-acre island was purchased in the 1630s by a Dutchman, who renamed it Oyster Island because of the large numbers of shellfish found on its beaches. During the 1700s, it was renamed again, this time to Gibbet Island, a term for a large upright post used as a gallows. The island was regularly used as a place to hang those convicted of piracy. • New York merchant Samuel Ellis bought the island in 1775, and built a tavern there to serve local fisher man. It changed hands again in 1808 when the state of New York purchased it, and used it to store ammu nition during the War of 1812. • The last hanging occurred in 1839. After its use as a munitions arsenal for the Union Army during the Civil War, the island was vacant for many years.

ELLIS ISLANDS (continued):

• It was decided during the 1880s that New York’s immigration station at Castle Garden, which had processed more than 8 million immigrants over a 35year span, would be replaced by a new facility on Ellis Island. Expansion of the island began by add ing landfill obtained by the excavation for New York City’s subway tunnels. The area doubled to more than six acres. • On New Year’s Day, 1892, the new Ellis Island Immi gration Station officially opened. Three ships hold ing more than 700 immigrants were waiting to pass through. The first person admitted was an Irish girl celebrating her 15th birthday, Annie Moore. In honor of her status, she was presented with a $10 gold piece. Close to 450,000 people would follow during the first year of operation. More than 1.5 million immigrants were processed during the first five years of operations. • Annie Moore arrived with her two brothers, all three unaccompanied minors. In 1907, a federal law was passed, prohibiting children arriving without adults. • Immigrants were closely checked by doctors for more than 60 diseases and disabilities that could disqual ify them from entry. Those suspected were marked with chalk and detained. A contagious eye condition called trachoma was monitored very closely, with “TCâ€? chalked on the jackets of those suspected. “Lâ€? was used for lameness, “Sâ€? for senility, “SCâ€? for scalp problems, “Gâ€? for goiter, and “Xâ€? for those with a suspected men tal defect, among several other possible disabilities. While 80% of immigrants successfully passed through in just hours, many were detained for days or even weeks. Free meals were provided, usually beef stew, po tatoes, herring, baked beans, stewed prunes, and bread.

from the rigorous physical exams. • Although many chose to remain in New York City, others traveled by barge to New Jersey, where they boarded trains for other destinations across the United States. • Five years after opening, with 200 immigrants on site, a fire broke out in the main building, a huge three-storied structure, resulting in the roof col lapsing. There were no injuries, but all immigration records dating back to 1840, including those from Castle Garden, were destroyed. Within six months a new fireproof facility opened, with more than 2,200 people processed on its first day. • By 1903, additional space was needed, and two ad ditional islands were created using landfill. By 1906, Ellis Island had grown from its original 3.3 acres to upwards of 27 acres. About 90% of the area did not exist in 1800. • The price for an immigrant planning a trip to Amer ica varied from $12 to $60 per person. Many families saved for years to make the journey. • During World War I, immigration declined dramati cally. The United States began establishing embassies worldwide and a large number of immigrants were processed in their home countries rather than going through Ellis Island. The 1915 total of immigrants was 178,416, but by 1918, the number had dropped to only 28,867. In 1917, the facility started operation as a U.S. Army hospital and a detention center for enemy aliens. • A literacy test was introduced in 1917, and all those over age 16 who could not read 40 test words in their native language were denied admittance. • In 1924, an immigration act limited total immigra tion to 165,000 per year, and fixed quotas from spe cific countries.

• Those immigrants traveling first-class were exempt

• As mass immigration declined into America, and the Great Depression caused more to leave the coun try than to arrive, the buildings began to fall into neglect and abandonment. During World War II, part of the island was used to house suspected Nazi sym pathizers and enemies of the state. • From 1925 until 1954, only 2.3 million immigrants were processed. In November, 1954, all 33 structures were officially closed, and the island was declared government surplus property. A Norwegian mer chant seaman, Arne Peterssen, was the last person to pass through immigration there. • In 1965, Ellis Island became a National Park Service National Monument; however, it didn’t open to the public until 1976, when 50,000 people toured the island. Six years later, President Reagan initiated a fundraiser for private investors for the restoration and preservation of the facility. The $156 million project was completed in 1990, and the Main Arriv als Building was re-opened to the public. Millions of immigrant arrival records were made available to the public in 2001, enabling visitors to trace their ances try in the restored Hall. More than 30 million visitors have toured Ellis Island since 1990. • Out of the original 33 structures on the island, 29 are still closed, waiting to be restored. • Several well-known immigrants were processed through Ellis Island over the years, including cos metics icon Max Factor from Poland and actor Cary Grant from England. The Trapp Family singers of “The Sound of Musicâ€? fame came through from Austria. Athletes Charles Atlas, Knute Rockne, and Johnny Weissmuller also were processed there. At least two well-known criminals came through the station, gangster Lucky Luciano from Italy, and Ger man Bruno Hauptmann, later convicted of kidnap ping the Lindbergh baby.

Amazing Plants

ORCHIDS In honor of National Orchid Day on April 16, Tidbits passes along these facts about the fascinating family, Orchida cea. • Orchids are the largest family of flow ering plants, with about 28,000 differ ent species, (almost five times the num ber of mammal species), with more still being discovered. They are also one of the oldest flowers in existence. Fossil ized pollen from an ancient orchid was discovered on the back of a bee encased in amber in a mine in the Dominican Republic. Orchids grow naturally every where in the world, except in extreme ly cold climates and in the desert. • Orchids have bilateral symmetry, in other words, the two halves are mirror images of each other, similar to the hu man face.. • The flowers of some orchids last only a few hours, while other varieties pro duce blooms that survive six months. Some plants can live up to 100 years. The unusual Bulbophyllum nocturnum orchid, discovered in 2011, blooms only at night, and only for one night. • Orchids produce the smallest seeds in the world, about the size of a particle of dust, and visible only under a microscope. Each seedpod contains up to 3 million seeds, how ever, only a few will devel op into a mature orchid plant. • Climate affects the size, shape, and tex ture of orchid leaves. Those that grow in a dry climate have thick leaves covered with wax. Those growing in a warm, hu mid area have long thin leaves. Some varieties have no leaves at all. • The world’s smallest orchid spe cies has flowers measuring just 2 mm wide. The petals are trans parent and just one cell thick.

The Giant orchid grows up to 8.2 ft. (2.5 m) across. • Did you know that the vanilla plant is a member of the orchid family? This climbing orchid produces the bean from which the vanilla flavoring is extracted. Spanish explorer Hernan Cortes discovered vanilla on the Gulf Coast of Mexico in the early 1500s and named it “vainilla,” translating “little pod.” • The people of China have been using the orchid for its medicinal properties since 2800 BC. The plant is said to cure headaches, fever, and coughs, as well as accelerating the healing of wounds. The ancient Aztecs dried orchid roots in the sun, ground them into powder, add ed water, and used as a strong adhesive. • Many orchids have a unique way of tricking insects into pollinating them. The reproductive parts of several types are shaped and colored to resemble the kind of insect they hope to attract. The bee orchid contains a petal that looks like a female bee, and even produces a smell similar to that of the female. This attracts the male who be comes covered in pollen, then flies off to find another orchid he thinks is a mate, thus ensur ing pollination of the species. • Pollination of or chids is so special ized, if a particular insect becomes ex tinct, the orchid it pollinates will also become extinct. • Folks living during the Victorian era between 1840 and 1910 be came enamored with orchids. Some even traveled around the world seeking specific variet ies. A shipment of a rare variety could bring up to $80,000 at that time.

HOLLYWOOD — Glenn Close — currently re-creating her award-winning portrayal of Norma Desmond in the Andrew Lloyd Webber musical "Sunset Boulevard" on Broadway — has six films in the pipeline. First up is "Guardians of the Galaxy 2," opening May 5, followed by the comedy "Bastards," with Owen Wilson, Ed Helms and Oscar-winner J.K. Simmons, on Dec. 22; the sci-fi thriller "What Happened to Monday," with Willem Da foe; the romantic comedy "Wilde Wedding," with John Malkovich, Patrick Stewart and Minnie Driver; "Crooked House," with Max Irons, Gillian Anderson and Christina Hendricks; and "The Wife," with Jonathan Price, Chris tian Slater, Max Irons and Elizabeth McGovern, which started filming Nov. 21 in Glasgow. Six films in one year, and Close just turned 70. *** After the success of "Whatever Happened to Baby Jane," Bette Davis was Oscar-nominated and Joan Crawford wasn't. But Crawford went to the four other nominees and offered to accept their award if they couldn't attend. When Anne Bancroft won for "The Miracle Worker," Crawford accepted her award and Davis fumed. When Robert Aldrich signed her to star in "Hush, Hush, Sweet Charlotte," he waited for the ink to dry before telling her she'd be starring with Joan Crawford again. Davis was fu rious and said, "The best time I ever had with Joan Craw ford was when I pushed her down the stairs in 'Whatev er Happened to Baby Jane'!" Many years later, Davis told me, "I saw a scene in the script for "Hush, Hush, Sweet Charlotte," where I had to douse her with water. I asked Aldrich to shoot that first because it was complicated, and I was right, I couldn't get it right from 6 a.m. to 6 p.m., and by the end of the

day, Crawford was taken to the hospital with pneumo nia. I called my friend Olivia de Havilland and told her I was sending her a script. She replaced Crawford." I told Bette I'd seen Crawford when she made her first public appearance in the lobby of a theater. She posed for us for 15 minutes using a pay phone as a prop, saying, "Hello, Hello?" When she saw we were done she said, "Why, it's Bette Davis" and slammed the phone down. Davis was furious and asked, "Was that when she looked like 'Clarabelle the Clown' in that gold lame outfit? I nodded, "Yes," and she said, "She thinks she's had the last word!" *** Bruce Willis is taking on the reboot of the Charles Bron son "Death Wish" (1974) franchise, with Sylvester Stal lone as one of the producers. The original spawned four sequels, as did Willis' "Die Hard." It certainly helps if you have a "Death Wish" to be able to "Die Hard"! (c) 2017 King Features Synd., Inc.

Elliot Gould Timothy Kuratek/CBS

Q: Whatever happened to the TV series "Doubt" with El liot Gould? It appeared on CBS several months ago. I watched a few episodes and it just disappeared. —Val erie M., via email A: CBS pulled the legal/suspense drama — which also starred Katherine Heigl, Steven Pasquale and Laverne Cox — after just two episodes due to low ratings. There are 13 episodes in the can for the series, but as of this writing there has been no word as to if/when CBS will air the remaining 11 episodes. *** Q: Is "Nashville" off the air permanently now that Con nie Britton's character has died? If not, where can it be found? — Barbara E., Knoxville, Illinois A: "Nashville" will return to CMT after its hiatus with the back half of season five. And exact midseason premiere date has not yet been announced. Joining the cast are Rachel Bilson ("The O.C.") and Kaitlin Doubleday ("Em pire"); however, what roles they will play in the ensem ble piece is still a mystery. While we are all sad about Rayna James' death, the show has a slew of other talented actors and singers with in teresting storylines, and I can't wait to see how they'll be resolved. How will Juliette's new career in gospel music go? And who is the father of Scarlett's baby, Gunnar or Damien? In more "Nashville" news, CMT also announced that it has been picked up for a 16-episode sixth season. *** Q: I have been enthralled by ABC's "Time After Time" and can't wait to see what will happen next, but I haven't seen it on the schedule these past few weeks. Will it be

back? — Gina R., via email A: I also love this show and was heartbroken to read that ABC decided to pull the series (for the dreaded "low ratings") after only five episodes. So many unanswered questions. Will H.G. Wells (Fred Stroma) ever capture Jack the Ripper (Josh Bowman)? Will H.G. and Jane (Gen esis Rodriguez) live happily ever after? Will Griffin (Will Chase) and Brooke (Jennifer Ferrin) successfully get re venge on Vanessa (Nicole Ari Parker)? We'll just have to imagine our own endings, I suppose. *** Q: Will "The Night Manager" be back for another season, or is this a one-and-done kind of series? Lee F. in Georgia A: Although intended as a one-off series, there has been talk of a possible season two. The BBC (which originally produced and aired the series in the U.K.; AMC is the net work for us Americans) told "The Hollywood Reporter": "The Ink Factory, BBC and AMC are in the early stages of developing a potential second series of 'The Night Man ager,' but nothing is definite yet, and we have nothing to announce." Director Susanne Bier also confirmed that a script for a possible season two was "slowly being adapt ed." So there is a ray of hope in those statements, and you can bet I'll have my fingers crossed for more of the spy drama. One-third of victims are not on the Do Not Call list, which can limit sales calls. More than half receive at least one call a month about investment sales. Over 40 percent of victims are considered "active traders," those who make five or more investment decisions in a year. Nearly half have invested two or three times in some thing that turned out to be worthless. To view the study, go to the AARP website (aarp.org) and put "AARP Investment Fraud Vulnerability Study" in the search box.

JUST WHO ARE VICTIMS OF FINANCIAL FRAUD? AARP conducted a study to look at financial fraud vic tims based on psychological mindset, and behavioral and demographic characteristics. One notable result was that victims tend to look at the accumulation of wealth as an important life achievement, more so than average investors who had not become victims. Some results of the study: Most victims are over age 70, male, conservative, very religious, married, with a col lege degree and with income over $50,000 per year. They keep their eyes open for investments. One-third had not checked out a broker before making an investment, and victims are likely to make investments with people they don't know, such as in response to an email, phone call or TV ad, with telephone being the most frequent.

The best way to protect yourself against any type of fraud is knowing what to look for. For lots of informa tion on all types of fraud, go online to AARP.org/Fraud WatchNetwork. On that webpage you can sign up for Watchdog Alerts. It's free, and you'll get email warnings about the latest scams and tricks. AARP also has a fraud watch hotline: 877-908-3360. If you've been a victim of fraud, be sure to call and tell them. The more they know about the types of scams out there, the more information they can pass along.

RETIREMENT STUDY IS AN EYE-OPENER Are you ready to retire? Do you have enough money? Have you given it much thought? The Employee Benefit Research Institute just published the results of its 27th survey about financial readiness to retire.

After

* Many of us are stressed out about retiring, but we're not taking steps to get ready. One third of participants worry about money. Half think they'd be more produc tive at work if they weren't stressed about the financial aspects of retiring. * Only 60 percent say they've saved for retirement. Forty percent have tried to work out the numbers and even fewer have tried to calculate their expected Social Se curity benefit and likely monthly financial needs or ex penses. Less than 23 percent have spoken to a financial adviser, and only 10 percent have a plan. The number of people who are confident about having a comfortable retirement is lower than last year. * Only 37 percent are confident that Social Security will continue to provide benefits, and the same number have low confidence that Medicare's current levels will continue. According to the survey, 80 percent of those who have already retired are more confident about having a com fortable retirement. Per a government pamphlet ("Top 10 Ways to Prepare for Retirement"), you'll need between 70 percent and 90 percent of your pre-retirement income to maintain your current lifestyle. If you're stressed about the financial aspects of retire ment, knowing is better than guessing about how you might fare. A financial planner can look at the figures and tell you the facts. If nothing else, call Social Security to ask about your likely future benefits (1-800-772-1213). To view the study, go online to ebri.org and look for the 2017 Retirement Confidence Survey. It's an eye-opener.

Here are a few things its research revealed:

DEAR DR. ROACH: I have peripheral neuropathy symp toms in my feet. I am borderline diabetic and keep it un der control by eating right. Also, my legs are weak, and I am doing exercises. I was taking the drug Reglan for a couple of months. During the time I was taking it was when I started to have these leg problems. Could this be a side effect of the Reglan? -- G.D. ANSWER: Diabetic neuropathy is a complication of longstanding diabetes, especially if it has been poorly controlled. Occasionally, it can show up seemingly early in the course of Type 2 diabetes, but this is thought to represent a delay in diagnosis in otherwise asymptomat ic disease or in those who have ignored symptoms. The symptoms of diabetic neuropathy usually begin with numbness, and later on pain and tingling of the feet. Weakness, when it happens, generally comes later on. Metoclopramide (Reglan) is used for nausea and vomit ing, especially after chemotherapy, and is used to stimu late the stomach emptying in people with diabetic gas troparesis, which is a type of neuropathy of the nerves to the stomach and intestines. Many or most diabetics with gastroparesis also have diabetic neuropathy. How ever, metoclopramide should not be given for more than eight weeks due to the risk of tardive dyskinesia, a serious disease of motor control, especially in the facial muscles. Although tardive dyskinesia can cause symp toms in the limbs, weakness would be unusual, and tar dive dyskinesia would be very unusual if you took the Reglan only for two months and have stopped. I think it is unlikely that either diabetic neuropathy or the Reglan are causing the muscle weakness. There are many kinds of neuropathies, and all (or nearly all) are more common in people with diabetes. I would revisit your doctor to try to find out more about why you are having leg weakness. READERS: Diabetes has become epidemic in North America. The booklet on it offers insight into its diag nosis and treatment. STRETCHING HELPS EASE SPINAL STENOSIS PAIN DEAR DR. ROACH: My wife suffered from spinal steno sis. She had a cortisone shot, which helped for 90 days. She had regular physical therapy meetings. She was in constant pain, but insisted on playing tennis (against her doctor's wishes). Then, we happened to vacation for a month in Florida, and one of the offered activities was a "stretch" workout. She insisted that she wanted to try it. After the very first time she thought she felt a little better. She went to sev eral more sessions, and finally asked the trainer what she could buy to keep it up at home. The trainer suggested a stretching DVD. It takes about

an hour to complete it, and she now does it three times a week. She plays hard tennis five days a week, hasn't complained about pain since 2010, and hasn't needed any physical therapy, either. I continue to be amazed. Certainly this kind of therapy can't hurt anyone, since you do it only to your personal comfort levels. Perhaps you might mention this type of therapy in your column sometime. It worked miracles for us at virtually no cost. — R.M. ANSWER: Spinal stenosis is caused by pressure on the nerves at the level of the spinal column. Physical ther apy is one effective treatment, and one I always rec ommend prior to considering surgery. I thank you for taking the time to point out that gentle stretching can help, probably by opening up the spaces in between the vertebrae to allow the nerve more room. The booklet on back problems gives an outline of some causes of and treatments for the more-common back maladies. Readers can order a copy by writing: Dr. Roach — No. 303W, 628 Virginia Drive, Orlando, FL 32803. En close a check or money order for $4.75 U.S./$6 Canada with the recipient's printed name and address. Please allow four weeks for delivery. *** DEAR DR. ROACH: We recently lost a dear relative to cholangiocarcinoma. He had served in the Navy in Viet nam. The probable cause of his cancer was from a para site, a river fluke, which is common to that region. The diagnosis came way too late to save his life. How can veterans be tested or diagnosed early enough for a pos sible successful cure? Are there any current tests avail able? — J.A.E. ANSWER: I am sorry to hear about your relative. Chol angiocarcinoma is cancer of the bile duct, a rare cancer. Liver flukes are a risk factor, and so is a condition called primary sclerosing cholangitis, a condition associated with ulcerative colitis. The cancer is rare but highly le thal, because by the time symptoms show up, the cancer usually is advanced. Also because of its rarity, screening for the cancer in a general population won't be effective. However, for peo ple at high risk, such as those with PSC or a history of liver parasites, at least one study has shown that screen ing with a blood test (CA 19-9, CEA) or by endoscopy can be effective. It would be reasonable to speak with the expert taking care of this problem, usually a gastroenter ologist, about screening.

PRIME CUTS The last few weeks of March, the first few weeks of April ... these are the prime cuts for sports fans. You have two leagues — the NBA and the NHL — wrap ping up their regular seasons, hopefully with a little dra ma and playoff implications. The two best champion ship tournaments in all of sports are being played — the NCAA basketball tournaments and The Masters — and hope springs eternal for the entire nation as baseball teams break camp and head off for their home openers.

At no time are there more sport fans on equal footing, more engaged in the goings-on of their favorite team or sport.

cording to the failing BBC News, wears the "shortest skirt on campus." What's everybody so upset about? The guy plays golf for a living.

I never liked the "March Madness" moniker. It's only madness if you think that anybody outside of Duke, Kansas, North Carolina or Kentucky can win the men's tournament. These play-in games are a joke, but I guess it's all that some students will ever really have in terms of feeling the electricity of a national audience. It's not like Red Bank State or Twizzler Tech is ever going to cut down any nets ... it's just better than the programming alternatives for the night. And you have to hand it to the ladies, they have really done a great job marketing and presenting their game. The past year has been the first where I've heard very serious discussion and praise of the women's game, and that's a great thing.

The Masters is the finest tournament in the world and one of the greatest things humans do on Earth when it comes to sports. It's a place where the best come to shine, where people behave — ever heard of anyone get ting in a fight at The Masters? — where there isn't a cell phone (calls are free), not a speck of garbage, and food and beer are inexpensive (and tasty). The entire world outside of the National could be on fire and nobody on the grounds would know until they exited the front gates. We need more places like Augusta in the world.

And please, do not weep for Sergio Garcia. Far from the "lovable bridesmaid" the fake news media have been making him out to be — this tough-luck Spaniard who never wins anything — we can finally stop with all of that nonsense now that he has won the finest cham pionship in all of sports — The Masters. And he's won plenty, something like 30 tour wins, and he's about to marry Golf Channel personality Angela Akins, who ac

More teams make the NBA and NHL playoffs than do not. Think about that for a moment. It's absurd, but not when your team makes the playoffs (and if they don't, you feel terrible). It's good to have the Canadian teams back; it just feels wrong when they're not playing the game that gives their lives so much purpose. That said, I think this finally is going to be the Washington Capitals' year, providing they get past the Penguins and Rangers, and beat the Blackhawks in the finals. On the hardwood, you'd be nuts to bet against Stephen Curry and Golden State, but as long as LeBron is on the floor, there's al ways a chance for Cleveland. And of course the Cubs will repeat. Good things come in pairs! Mark Vasto is a veteran sportswriter who lives in New Jersey. (c) 2017 King Features Synd., Inc.

Get back to the basics with Sherry's training. You need to reinforce three primary commands: come, sit and stay. Work with her every day in a quiet setting. She must come the first time you call; she must sit the first time you tell her to; and she must stay in place until you give the command to come. Give her lots of praise and a little treat only when she does these correctly. (Do not scold her or get frustrated if she doesn't respond quickly -- just be patient and positive.)

DITCH THE SHOCK TREATMENT DEAR PAW'S CORNER: My little dog "Sherry" barks like crazy every time someone knocks or rings the bell. I've been trying to teach her to stop by using a spray bottle of water, as well as a sonic training device. So far, it's just not working at all. What can I do? -- Janet P., via email DEAR JANET: One of the reasons I rarely recommend tools like spray bottles or sonic trainers is because own ers often rely on them as a primary means of behavior modification, rather than a last resort. Barking at the door is a common behavior for dogs -- to them, it's their job! So, when an owner suddenly spritzes a dog as it's rush ing to the door, or zaps it with a sonic noise, it's very confusing and even traumatizing. These methods are de signed to "shock" your dog into outright stopping what they're doing. But that doesn't help them understand what you actually want them to do.

Between training, when someone knocks at the door, command Sherry to come when she starts barking. When she gets to you, have her sit down before you an swer the door. Once Sherry responds well to basic com mands, you can add the command "quiet" to her reper toire.

CALMING A FEARFUL DOG DEAR PAW'S CORNER: My little Schnoodle, "Daisy," hates noises, thunder, firecrackers and more — but only in doors. We can be outside and have large trucks go by with air brakes squealing, and she doesn't care. But or dinary house noises, like windows creaking, have begun to bother her recently. Last year I got a new front door and it really cracks and creaks in the afternoon when it gets hot. She is petrified of this, shaking and panting the entire time. Please help, as we are at our wits' end. — Pam, via email DEAR PAM: If the issue started over the past year, have the veterinarian check her out thoroughly. Not just her hearing and sight, but for any underlying conditions.

While Schnoodles are less prone to certain health con ditions of their parent breeds (poodle and Schnauzer), they could still suffer from inherited conditions. Accord ing to the AKC, autoimmune thyroiditis is one possibili ty; behavioral changes like excessive anxiety are among the symptoms of this condition. However, even completely healthy dogs can develop a phobia to noise, perhaps because they attach a nega tive experience to a specific noise. In that case, TLC and training can help, along with medication if needed. Talk to the vet about Daisy's noise phobia and work out a treatment and training plan, if possible. For ex ample, use anti-anxiety medication for a time to help Daisy stay calmer, but then begin replacing meds with positive-stimulation training. This is done by making the sound that causes anxiety, but giving Daisy a favor ite treat or praise each time the sound is made. There's more to it than I have room to explain here, so consider working with a trainer to help Daisy handle that creaky door. Send your tips, questions or comments to ask@ pawscorner.com. Asparagus should be crisp and firm, not limp or wrin kled, with tightly closed tips. Dull colors and ridges in the stems are an indication of a lack of freshness. The stalks should not be limp or dry at the cut and of uni form thickness.

ASPARAGUS IS PERFECT FOR SPRING RECIPES Nothing says "spring is here" like a beautiful bunch of crisp asparagus. While asparagus is available year-round, it's much better when purchased locally. Asparagus is easy to select and prepare, and comes in a variety of vibrant colors including green, violet, purple and white. It also grows wild and is commercially avail able fresh, frozen and canned. The stalks range in size from colossal to small. Various types and colors of as paragus can be used without any noticeable difference in the taste, so mix and match colors and sizes for visual interest.

ASPARAGUS RISOTTO Makes 4 servings Use a mixture of yellow and red tomatoes in this dish to give it a festive look. 6 cups Vegetable Broth, divided 2 tablespoons oil 1 small onion, chopped 2–4 garlic cloves, thinly sliced 1 1/2 cups dry arborio rice 1/2 cup dry white wine 1 pound fresh asparagus, trimmed and bias cut into 1-inch pieces 1 juice and zest of 1 lemon 1/4 cup + 1 teaspoon extra-virgin olive oil,* divided 2 tablespoons shredded fresh basil, divided 1 tablespoon chopped fresh tarragon 1/2 cup chopped tomato 1 salt, to taste 1 white pepper, to taste Heat broth over low heat. Have a ladle handy.

If you're planning to use the asparagus on the same day, rinse it under cool water and pat the stalks dry with a paper towel. Smaller stalks can be broken or cut at the point where the stem naturally snaps. Peeling the end of thicker stalks with a paring knife or a vegetable peel er removes any woody stems and can be done up to 2 hours before cooking. Place the prepared asparagus in a plastic bag in the refrigerator to stay crisp until ready to cook. Fresh asparagus should never be washed or soaked be fore storing. If the asparagus is bound with a rubber band, remove it, as it will pinch and bruise the stalks. Asparagus can be stored for up to two days if the stalks are trimmed and placed upright in a jar with about an inch of water in the bottom. Cover the asparagus with a plastic bag and store the spears in the refrigerator. Asparagus cooks in minutes and can be prepared steamed or boiled in the microwave or oven. It tastes delicious hot or cold, and it also freezes well if blanched first in hot water. Asparagus is a nutritional powerhouse. One-half cup of cooked asparagus contains significant amounts of folic acid, vitamin C, potassium and beta-carotene. It's also a heart-healthy food, and a natural diuretic.

than one-tenth of the rice brown. Add wine and cook, stirring, until the rice absorbs the liquid. Add 1 cup of the broth. Reduce the heat to medium. Cook, stirring, until most of the broth is absorbed. Do not allow the rice to brown or stick to the pan. Continue adding the broth, 1 cup at a time, and cook until it is nearly all ab sorbed. When adding the last cup of broth, add the as paragus. When the broth is absorbed and the asparagus is just ten der, remove the skillet from the heat. Stir in the lemon juice, half the zest, 3 tablespoons olive oil, 1 tablespoon basil, tarragon, and tomato. Mix gently so the asparagus doesn't fall apart. Add salt and white pepper to taste. Divide the risotto among four large, shallow bowls. Gar nish with the remaining basil and top with some lemon zest. Drizzle a teaspoon or so of the olive oil. Serve im mediately.

This versatile vegetable works well as a room-tempera ture appetizer, blended into a soup, as a flavorful side dish, the main ingredient in a colorful salad or as part of a main course like my recipe for Lemon Chicken with Asparagus. SESAME ASPARAGUS Makes 4 1-cup servings The secret to delicious asparagus is cooking it until it is just tender. It should be bright green and still retain a bit of crispness. Be sure to use "toasted" sesame oil which is dark and very flavorful. 1 pound fresh asparagus 1 teaspoon toasted sesame oil 1 tablespoon Sesame Salt Trim ends off asparagus, then steam until just tender, 3 to 5 minutes. Place in a serving dish and sprinkle with sesame oil. Toss to coat, then sprinkle with Sesame Salt. Per 1-cup serving Source: Healthy Eating for Life for Children by Amy Lanou, Ph.D.; recipe by Jennifer Raymond, M.S., R.D.

*For a lower-fat version, skip drizzling the final dish with additional olive oil. Per serving (1/4 of recipe)

Heat oil in a large, wide skillet over medium-high heat and sauté the onion, garlic, and rice. Cook, stirring con stantly, until the rice begins to brown. Do not let more

DIABETES April is Defeat Diabetes Month – the right time for Tid bits to share information on this metabolic disease that affects close to 420 million people worldwide, about 8.3% of the adult population. • Diabetes occurs when there is too much glucose in the blood. As food is digested by the body, sugar (glucose) enters the bloodstream as a source of fuel for energy. The body’s pancreas produces insulin, with insulin’s role to move the glucose from the bloodstream into muscle, far, and liver cells. • A diabetic’s body cannot move the sugar from the blood into the cells because the liver makes too much glucose, because their pancreas does not make enough insulin, or the cells do not respond to the insulin that is produced. • Type 1 diabetes is the result of the pancreas’ failure to produce enough insulin. Sometimes this form is known as “juvenile diabetes,” because it usually develops in childhood or adolescence, and those people require in sulin injections for life. • Type 2 diabetes is often referred to as “adult-onset di abetes.” Cells fail to respond to insulin properly, with the most common cause excessive body weight and not enough exercise. About 90% of cases of diabetes are Type 2. It can frequently be controlled with lifestyle changes and weight loss alone. A low-carb diet and one very low in saturated fats may enable those people to maintain near normal blood glucose levels. • Between 3% and 9% of pregnant women will devel op gestational diabetes, a condition that arises when a woman without diabetes develops high blood sugar levels during pregnancy. The condition resolves itself after the baby is born in 90% of the cases, but leaves the mother with an increased risk of developing Type 2 diabetes. • A glucose meter is used to measure blood sugar lev el. Because food, exercise, medications, stress, blood

pressure, and other factors affect the level, the blood is tested several times per day. The first glucose meters for home use were introduced in 1981. Today continu ous monitoring systems have a disposable sensor that is placed under the skin for several days. • Blood from the fingertip presents the most accurate blood sugar level readings. The ideal range for blood sugar is 80 to 100 milligrams per deciliter. • Diabetes contributes to several other health risk fac tors, including heart disease, stroke, kidney failure, cat aracts, glaucoma, and nerve damage to the feet. Patients can also develop gum and teeth problems because of high blood sugar. The disease at least doubles a person’s risk of early death. • Although not to be used alone in the control of dia betes, some natural remedies have been shown to help lower blood sugar levels. Cinnamon has been shown to stimulate the production of insulin in the pancreas. Clinical trials indicate that a few edible mushroom spe cies, including Reishi, Maitake, and Agaricus varieties, have the ability to lower blood sugar as well. • It’s important to recognize the disease’s warning signs – frequent urination, extreme hunger and thirst, extreme fatigue, blurry vision, slow healing of cuts and bruises, and a tingling, pain, or numbness in the hands and feet. • Several well-known people have been dealing with Type 1 diabetes for years, including actress Halle Berry, singers Nick Jonas and David Crosby, and athletes Billie Jean King and Chicago Bears quarterback Jay Cutler.

* In 1994, a man named Robert Puelo started cursing and shouting at employees in a convenience store. When the employees (understandably) threatened to call the po lice, the man stole a hot dog and ran out. The police were called, and upon arrival, they discovered Puelo outside the store, unconscious and turning purple. Paramedics were called, but by the time they arrived, it was too late; the man had choked to death on his stolen sausage.

* It was Founding Father and renowned polymath Ben jamin Franklin who made the following sage observa tion: "Patriotism is supporting your country all the time, and your government when it deserves it." * It was beloved poet William Wordsworth, best know for helping to launch the Romantic age in English liter ature, who made the following sage observation: "The best portion of a good man's life is his little, nameless, unremembered acts of kindness and of love." * The world's largest bird, the ostrich, may not be able to fly, but that doesn't mean its wings are useless. As the fastest bird on land, the ostrich uses its wings for bal ance while slowing down and making turns as it runs at speeds of up to 45 mph.

* Those who study such things say that when a man and a woman who have been romantically involved break up, the pair are more likely to remain friends if it's the woman who initiated the split. * You might be surprised to learn that light doesn't al ways travel at the speed of light. In fact, light has been recorded traveling as slow as 38 mph. * Those looking for a new, somewhat more relaxing line of work might want to consider becoming air farmers. Yes, that is an actual job title. Since 2015, the British company Aethaer has employed air farmers to "harvest" air in jars at locations all over the British Isles — large ly in rural areas, away from roads and their attendant pollution. This pure British air is then sold for $115 per bottle, mostly to consumers in China, where cities are plagued by unprecedented levels of pollution.

* Everyone, it seems, has a patron saint — even those oft-reviled professionals, dentists. Images of Saint Apol lonia show her holding a molar in one hand and an enormous pair of pliers in the other. * If you're both a lover of books and a travel junkie, then the Tolstoy Train is just the holiday for you. On this luxuriously appointed train — complete with a library — you can take a 14-hour overnight journey between Moscow and Helsinki, Finland, traveling through pine forests, rolling hills and quaint Russian villages. * Pepsi-Cola was introduced originally in 1898 with the far less appetizing name "Brad's Drink." * Those who study such things say that when a woman's husband dies, the length of her remaining life does not seem to be affected. When a man loses his wife, though, his lifespan decreases — unless he marries again. *** Thought for the Day: "Success isn't how far you got, but the distance you traveled from where you started." — Steve Prefontaine
