• What do eggs, bacon, oatmeal and toast have in common? They’re all jentacular, that is, pertaining to breakfast.

• Some of our body parts have pretty unusual names. For example, the groove on your upper lip under your nose is known as a columella nasi. That bony bump on the side of your ankle is called a malleolus, while the bony tip of your elbow is your olecranon. We’ve heard of a curlicue, but what’s a purlicue? That’s the little web of skin between your thumb and forefinger. And how about your armpit? It’s officially known as an oxter. Ladies often pluck their glabella, that little flat area between the eyebrows.

• The loqu- root of many words comes from the Latin for “to speak.” Those on the witness stand are supposed to be veriloquent, speaking nothing but the truth. The preacher in the pulpit is sanctiloquent, speaking of sacred things. A politician is often flexiloquent — evasive and vague. Do you jabber idiotically? You’re being stultiloquent! Likewise if you’re inianloquent, you’re speaking foolishly and saying silly things. And we all know people who are longiloquent, in other words, remarkably long-winded.

• Do you know the difference between innocuous and noxious? An item that is innocuous is not injurious to your health, while something that is noxious will cause harm.

HOOVER DAM Stretching across the Colorado River on the border between Arizona and Nevada towers the magnificent Hoover Dam, providing power to residents of Nevada, Arizona and California. Follow along and learn more about this Eighth Wonder of the Modern World. • Construction on the dam began in the midst of the Great Depression in 1931, at a site about 25 miles (40 km) southeast of Las Vegas. The first step was to divert the roaring Colorado River away from the construction

highway from San Francisco to New York City or a 4-footwide (1.2-m) sidewalk around the Earth at the equator. The dam is as thick at its base as two football fields laid end-toend — 660 feet (201 m). • An average of 3,500 workers labored on the project daily, with the all-time high of 5,218 workers one day. Seven years were allotted for the construction, but the project was completed in just under five, at a cost of $165 million. • Although it was finished long before the deadline, it certainly wasn’t without its pitfalls. period in the exceptionally hot summer of 1931, daytime high temperatures averaged nearly 120° F (49° C), resulting in the deaths of 16 workers. The final death total for the entire project was 112. • The first person to perish on the Hoover Dam project was a surveyor named J.G. Tierney, who drowned while scoping out the ideal site, nine years before the groundbreaking. Ironically, Tierney’s son Patrick was the last to die, perishing exactly 13 years to the day later, while working on the dam’s construction.

Wallis Simpson wasn’t strikingly beautiful or especially brilliant, but she was a clever, determined woman who almost single-handedly changed the course of British history during the 1930s. Born Bessie Wallis Warfield in 1896 in Baltimore, she dropped her first name because it sounded too bovine, and then set out to reinvent herself. With wit and a sense of style, she charmed her way into the social circles of the upper-class elite and earned a reputation as an almost unstoppable force when it came to getting what she wanted. As Wallis once wrote, “It was not quite enough for me to be ... the life of the party or to spend my existence merely taking part in good conversation. I wanted more out of

In 1916, Wallis married Lt. Earl Winfield Spencer, but the marriage was dissolved a decade later. In 1928, while in London, she married Ernest Simpson, an American-born Briton, and through his connections she met Edward, the Prince of Wales, at a party in 1931. As Wallis mesmerized the Prince, their growing romance was problematic. For starters, Wallis was a divorcee and still very much married to Simpson. The relationship between Wallis and Edward became very public in 1936, the year of Edward’s accession. Wallis obtained a divorce, and the King made it clear that he intended to marry her, even if it meant giving up the throne. Give it up he did. Wallis and Edward were married in a small ceremony in France in 1937. One of Edward’s major disappointments was that his wife was never accepted by the Royal Family. The Queen Mother never mentioned her by name, only as “that woman.” Many books have been written about Wallis Simpson and the sensational “romantic story of the century.” Things are, however, never quite as they seem, and that is why the story of the Duke and Duchess of Windsor remains so fascinating. On the plus side, your glass jars don’t have to be perfectly clean, nor your cans crushed, in order to take them to the recycling center or drop curbside if your community has a plan in place. • “To freshen stuffed animals, dampen a cloth with a solution of 1 cup vinegar and 3 cups water. Wipe outside fur thoroughly, being careful not to soak it. Secure in a delicates bag or tie inside a pillowcase, then put in the dryer at low heat until completely dry. FAMOUS CHEFS Hey, what’s cookin’? This week, Tidbits teaches you about a few famous chefs of our era. In the words of Julia Child, “Bon appétit!” • Julia Child didn’t have aspirations of becoming a famous chef. After graduating from Smith College, she became a copyrighter in the advertising department of a home furnishings firm, followed by several more years writing for publications and working in advertising. During World War II, the 6-foot, 2-inch (1.88 m) Julia was classified too tall to enlist in the WACS or WAVES and went to work as a typist at the OSS, the predecessor to the CIA. Before long, she was doing top secret research in the Secret Intelligence Division. After the war, she married a fellow OSS employee Paul Child, who introduced Julia to fine cuisine. When Paul’s job took the couple to Paris, Julia and two friends began teaching cooking, while developing a cook book. The 734-page “Mastering the Art of French Cooking” was released in 1961 and quickly became a best seller, one still in print today. Twenty more titles followed. She debuted

on television in 1963 with “The French Chef,” earning the first-ever Emmy Award for an educational program. The cover of Time magazine featured her in 1966, dubbing her “Our Lady of the Ladle.” • Scottish-born Gordon Ramsay is famous for his hot temper and coarse language on the television series “Hell’s Kitchen.” But his abilities as a chef are top-notch, with his London restaurant voted as that city’s best for eight years straight. He has also authored 21 books.

• Rachael Ray didn’t get her cooking education at a culinary institute; in fact, she herself states, “I have no formal anything. I’m completely unqualified for any job I’ve ever had.” Perhaps it helped that her family owned four restaurants. Ray’s first job was at Macy’s candy counter, and she moved up to the fresh foods department. Her “30-Minute Meal” simple recipes appeal to busy consumers everywhere. Ray insists she is not a good baker, because it calls for measured ingredients, while she prefers approximating amounts, such as “half a palmful.”

• Austrian-born chef Wolfgang Puck learned to cook from his pastry chef mother. After immigrating to America at age 25, he worked as a chef for two years in Indianapolis before making the move to Los Angeles. He published his first cook book at age 33. Puck’s first Spago restaurant opened on the Sunset Strip the following year. He now has 19 restaurants. The Beverly Hills Spago has been on the list of the Top 40 restaurants in the United States since 2004. Puck cites macaroons as his absolute favorite food. Had he not chosen his current profession, he says he would have liked to have been an artist.

• Chef Emeril Lagasse, owner of 12 restaurants and author of 15 best-selling cook books, specializes in Cajun, Creole and Portuguese cooking. He learned bread and pastry baking as a teenager, working in a Portuguese bakery in his Massachusetts home town. Although Emeril was offered a full scholarship at a music conservatory, he chose a culinary university, traveling to Paris following graduation to practice his trade. Settling in New Orleans, he purchased the famous Delmonico Restaurant, one of America’s oldest restaurants. He has since expanded into three other cities.

1 bunch or bag fresh spinach 1 mango, peeled and cut into bite-size pieces 1 large English cucumber, peeled and sliced 6 green onions, thinly sliced 1/2 cup chopped fresh basil 1 juice of 1 lime 1/2 cup seasoned rice vinegar 1 freshly ground black pepper, to taste Wash and drain spinach, tear into bite-size pieces, if necessary, and put into a large serving bowl. Toss mango, cucumber, green onions, and basil in a medium bowl. Add lime juice and vinegar and stir to mix. Arrange mango mixture on spinach and sprinkle with black pepper. Mango adds a healthy dose of beta-carotene to this refreshing salsa. Beta-carotene is a powerful antioxidant which helps stop free radical damage, and it’s found in most orange-colored fruits and vegetables. Serve this colorful salsa with Black Bean Chili and Baked Tortilla Chips. 1 large mango, or 5 ounces frozen mango, thawed and chopped 1 large tomato, chopped (seeds removed if desired) 1 tablespoon finely chopped jalapeno pepper, or 1/2 teaspoon crushed red pepper 3 tablespoons fresh lime juice, or to taste 1/4 cup finely chopped fresh cilantro 1/4 teaspoon salt, or to taste To prepare the fresh mango, peel it and use a sharp knife to cut flesh off pit, then cut it into 1/4-inch cubes. Or, use the “porcupine” method (see note). Place diced mango in a medium mixing bowl. Add remaining ingredients to the mixing bowl with the mango. Stir to combine and let stand 15 minutes to allow flavors to develop. Stored in a covered container in the refrigerator, leftover Mango Salsa will stay fresh for up to one day. common trigger foods are avoided. Pain-Safe Foods Pain-safe foods virtually never contribute to headaches or other painful conditions. These include:

A Natural Approach to Migraines Research has shown surprising links between migraines and food. Certain foods can cause migraines, while others can prevent or even treat them. Coffee, for example, can sometimes knock out a migraine and foods rich in magnesium, calcium, complex carbohydrates, and fiber have been used to cure migraines. Some reports suggest that ginger—the ordinary kitchen spice—may help prevent and treat migraines with none of the side-effects of drugs. The herb feverfew also effectively prevented migraines in placebo-controlled research studies. A migraine is not just a bad headache. It has a characteristic pattern, usually involving just one side of your head. It is a throbbing pain rather than a dull, constant ache, often accompanied by nausea, vomiting, and sensitivity to light and sounds. See your doctor to evaluate your headache, especially if headaches are new for you, are unusually severe or persistent, or are accompanied by any of these characteristics: fever a change in your strength, coordination, or senses neck or back pain a chronic run-down feeling with pain in your muscles or joints drowsiness difficulty thinking or concentrating progressive worsening over time the headache awakens you from sleep the headache follows head trauma Find Your Migraine Triggers In 1983, researchers at the Hospital for Sick Children in London reported their results for 88 children with severe, frequent migraines who began an elimination diet. In this group, 78 recovered completely, and 4 improved greatly. In addition, some children who also had seizures found that their seizures stopped. The researchers then reintroduced various foods and found that they sparked migraine recurrences in all but eight. In subsequent tests using disguised foods, the vast majority of children again became symptom-free when trigger foods were avoided. Migraines returned when trigger foods were added to the diet.1 Since that time, additional research has confirmed that dietary factors can trigger migraines in children and adolescents.2 Anywhere between 20 and 50 percent of adults experience a reduction or elimination of their headaches when

Common Triggers Common triggers often cause headaches in susceptible people. Just as some food sensitivities manifest as a rash on your skin, migraine sufferers have a reaction in the blood vessels and nerves. Here are the common food triggers, also known as the “Dirty Dozen,” in order of importance: dairy products* chocolate eggs citrus fruits meat** wheat (bread, pasta, etc.) nuts and peanuts tomatoes onions corn apples bananas * Includes skim or whole cow’s milk, goat’s milk, cheese, yogurt, etc. ** Includes beef, pork, chicken, turkey, fish, etc. Certain beverages and additives are also among the worst triggers, including alcoholic beverages (especially red wine), caffeinated drinks (coffee, tea, and colas), monosodium glutamate, aspartame (NutraSweet), and nitrites. Foods that are neither on the pain-safe list nor the common trigger list should be considered possible, but unlikely, triggers. Almost any common food, other than the painsafe list, has triggered migraines in an isolated individual in a research study, so they cannot be considered completely above suspicion, but they are far from the most likely culprits. If a Migraine Hits If a migraine occurs, try the following: Although caffeine can be a migraine trigger for some people, for others it works as a treatment. The dose is one to two cups of strong coffee at the first sign of an attack.

Have a starchy food, such as rice, potatoes, crackers, or bread. Yes, wheat products are migraine triggers for some people, but if you can tolerate them, they might actually help. Some people find that they actually crave starchy foods during migraines and that digging into toast, crackers, pasta, potatoes, or other starchy foods reduces the headache or nausea, and can even shorten the attack. Experience will tell you whether these foods help. Fresh powdered ginger, 500 to 600 milligrams (about 1/4 teaspoon), in a glass of water has been helpful in anecdotal reports. It can be repeated every few hours, up to about 2 grams per day. Calcium might be able to treat migraines as well as prevent them. Researchers reported a case of a woman who was able to stop an early migraine by chewing 1,200 to 1,600 milligrams of elemental calcium.4,5 Again, avoid the temptation to get calcium from milk, yogurt, or any other animal source. They cause much more trouble than they are worth. Lie down in a quiet, dark room, and sleep if you can. Use hot or cold compresses, and massage the blood vessels at the temples. Cars are cars and like any mechanical instrument mine decided to crash and burn. The alternator and computer system decided they had had enough. Of course this didn’t happen on a Sunday, it happened on a Monday when I had to get to work. Luckily for me I didn’t have to get in until 10 in the morning, which gave time to either call AAA or make a conscious decision. I made a conscious decision. I dusted off my mountain bike, who I fondly named the “Big Easy,� grabbed a t-shirt and peddled to work. This is where things got interesting. I work 2.6 miles from my house, so a bike ride to work is easy, weather permitting. Yet the odd thing is I am a commuter like all of us. On my normal commute to work I stop for a cup of coffee, and then head off to the office. My office only being a short distance away I leave myself fifteen minutes to get from work to coffee to office. So

--Note the time of day that the room feels hottest, and note the position of the sun. Closing the curtains on windows that don’t have an air-conditioning unit can reduce the amount of sun-generated heat in the room. --If you have a ceiling fan, even in another room of the house, use it to your advantage. Reverse the direction of the fan blades (the switch is located on the metal housing for the fan blades) so that air is pulled up by the fan rather than pushed down. Cool air normally sinks, so the fan will stir that air and make the whole house more comfortable.

--Make sure the air-conditioning unit is clean, including the coils and the intake filter on the front of the unit.

here I am on my bike, riding in the tropical heat and quite honestly cursing. Yet I got to the office, had to wash off a bit and change, but all said and done it took the same amount of time plus 5 minutes to change. So I began to think. “What is five minutes? I can get exercise, meet more of my neighbors, get some sun and enjoy what the tropics have to offer.

The bus can save you in a pinch (i.e. either a leg cramp or a rain storm) • Buy a ventilated hat that blocks the sun from your face • Follow the same rules of the road that cars do (safety is the first priority when riding on the roads in southeast Florida) • Though not required by law a helmet is always recommended So I began peddling and am not looking back.
