Symbolism associated with the color red is full of opposites. We think of it as the color of love — red roses, Valentine’s Day and Cupid — but it is also the color of danger, hate and the devil. • According to psychological research, people of both genders find those of the opposite sex more attractive if they’re wearing red. Men wearing red appear more powerful to women, as well as higher in status and more likely to succeed. In a University of Rochester study, men were shown identical photos of the same woman. In one, she’s in a blue dress, and in the other, the dress is digitally altered to red. Consistently, men chose the photo of her in the red dress as more attractive. • Other research indicates that red can keep us from doing our best on important tests. During experiments, those who saw a flash of red before the test were impaired in their performance, perhaps because they associated the color with mistakes and failures, as errors have been traditionally marked in red on school papers. Studies also show that red elicits the strongest reaction of all colors and can actually stimulate energy and increase blood pressure, respiration, heartbeat and pulse rate. • Most Americans have probably seen the U.S. flag countless times without knowing what its colors mean. The red stripes symbolize “courage, hardiness and blood shed from the brave men and women who fought for America,” while the white stripes stand for purity and equality. The blue field represents justice, perseverance and vigilance. • Before the days of synthetic dyes, the shade of red known as crimson was produced by using the dried bodies of the kermes insect. This bug is found in the Kermes oak tree, which grows in Mediterranean countries. Crimson is not only the official color of Harvard University’s athletic team, it is also the name of the team itself. Likewise, the University of Alabama’s 19 varsity sports teams adopted the name Crimson Tide in the early 20th century. • A poem entitled “Warning” inspired the formation of The Red Hat society, a social group founded for the purpose of “fun, friendship, freedom, fulfillment and fitness” for women over 50. The lines “When I am an old woman I shall wear purple, with a red hat that doesn’t go and doesn’t suit me” gave the original group of 18 their signature hat idea. Within seven years, there were 40,000 chapters of the group worldwide. The Society has an online store, a magazine and more than 70,000 registered members who believe “silliness is the comedy relief of life.” The first red hat, which had been a birthday gift to one of the charter members, has been donated to the Smithsonian Museum of American History.

• An abundant amount of iron oxide on the surface of Mars gives the planet its red color, hence its nickname, the Red Planet. The fourth planet from the sun, Mars is the only planet whose surface can be seen in detail from Earth. • In China, red is the symbol of good luck and fortune, and a bride traditionally wears red and walks down a red carpet to her groom, who lifts her red veil. When the couple’s children are born, well-wishers gift them with red eggs. During Chinese New Year, homes are decorated with red, red clothing is worn, and unmarried children are given red envelopes filled with “luck money.” Feng shui is an ancient Chinese method of organizing our spaces to achieve balance, harmony and good fortune. Devotees of feng shui recommend painting your home’s front door red to invite prosperity. • Bees can see all bright colors except red. Consequently, red flowers are usually pollinated by butterflies, birds and wind. • Your blood is red because it contains the protein chemical known as hemoglobin. Bright red in color, hemoglobin contains iron, which makes it a superb medium for transporting the oxygen and carbon dioxide essential for the body’s functions. • The word red has found its way into many terms and phrases in the English language. When you’re really angry, you’re seeing red. And lots of things can cause you to see red: going through a lot of red tape (having to endure excessive paperwork or requirements to complete a process), or having your checkbook in the red, meaning it is below balance. Taking the red eye? You’re on an overnight flight. There’s not much recourse if you’ve been caught red-handed, because you’re clearly guilty. That might cause you to become red in the face or extremely embarrassed. Has someone given you poor advice? Guidance with no value isn’t worth a red cent. Now and then, we’ve all received the red carpet treatment, when we’ve been made to feel special, and we’ve all had redletter days, which were important, memorable or joyful. After such days, many folks like to paint the town red, meaning they go out to celebrate! • Restaurateur Bill Darden’s first restaurant wasn’t a Red Lobster, but rather The Green Frog, when he was just 19. His first Red Lobster came along in 1968, opening in Lakeland, Florida. The chain now operates close to 700 locations throughout North America, with average annual sales per restaurant of $3.9 million.

EIFFEL TOWER

The national symbol of France welcomes nearly seven million visitors every year. Follow along and learn more about the Eiffel Tower, one of the most recognizable structures in the world. • Paris was chosen as the site of the 1889 World’s Fair to mark the 100th celebration of the French Revolution. The city solicited ideas for a unique entranceway to the area. Gustave Eiffel’s company submitted the winning design, although it was Eiffel’s employee Morris Koechlin who actually designed the Tower. • Ground was broken in January of 1887, and over the next two years, two months and five days, 300 workers on wood scaffolding assembled more than 18,000 pieces of iron, holding them together with 2.5 million rivets to form the openframed structure. Gustave Eiffel was adamant about safety precautions, and as a result, only one worker died during the construction. • At the time of its completion, the Tower was, at 986 feet (300.5 m), the tallest structure in the world, surpassing the previous record-holder, the Washington Monument. For 41 years, the Eiffel Tower kept that title. But in 1930, New York City’s Chrysler Building exceeded the Tower’s height. • Gustave Eiffel engraved the names of 72 notable French scientists and engineers on the side of the tower in 23.6inch-high (60-cm) letters, just under the first platform; there are 18 names on each side.

• Nicknamed La dame de fer, or the iron lady, the Tower was finished at a cost of about $1.5 million, which translates to about $58 million in today’s dollars. By the end of its first year, the Tower had recouped about 75 percent of its initial cost.

• About seven million people visit the Eiffel Tower each year, making it the most visited paid monument in the world. Since its opening, it has welcomed 250 million people from every corner of the world.

• The Tower was not well-received by Parisians and was frequently referred to as the “eyesore.” The structure’s building permit allowed it to stand for 20 years, after which it was to be dismantled. However, in 1898, it was determined that the Tower was valuable as a radio tower, and it was saved from demolition. • There are 347 steps to the first level of the Tower where visitors can dine at the fine restaurant Le 58 tour Eiffel. Another 674 steps bring climbers to the second level, location of the swanky restaurant Le Jules Verne. If climbing to the top of the Eiffel Tower is on your bucket list, this is one item that you can’t check off. Tourists can only climb as far as the second level, with access to the summit by elevator only. At the top, on a clear day, visitors can see 42 miles in every direction. • In order to protect the Tower from oxidation, its iron surfaces are repainted about every seven years, 18 times since its 1889 opening day. All the painting is done by hand by 25 painters over an 18-month period. About 50 tons of paint are used, along with 1,500 brushes, 5,000 sanding disks and 1,000 scrapers. The Tower’s color has changed occasionally over the years, starting with redbrown, progressing to yellow-ocher and chestnut brown, and finally ending up with its current bronze color.

• Tie-dyed T-shirts became a craze in the 1960s, and the introduction of screen-printing provided the opportunity to create shirts bearing artwork, slogans and advertising. Screen-printing uses screens as stencils, with ink directly imprinted onto the fabric. A different screen is required for each color. Today’s digital printing is much easier, eliminating the need for separate screens. Much like an inkjet printer works with your computer, digital printing allows multiple colors to be printed directly onto the shirt. • The Smithsonian Institute is home to the oldest printed T-shirt, a campaign shirt for New York Governor Thomas Dewey’s 1948 presidential bid against Harry Truman. • The term “blue collar” worker came about from the popularity of the color blue for the durable shirts of manual laborers. Because most office workers were attired in white shirts, that term evolved to identify those who work in office or professional environments. The color distinction has expanded to include a socio-economic class difference. Surveys indicate that when a group of individuals in dress shirts enter an area, a person in a white shirt will be interpreted as the “boss” over those wearing colored shirts.

Foods to Avoid

How to Eat Right to Reduce Stress During times of stress, we often turn to traditional “comfort” foods such as macaroni and cheese, pizza, and ice cream. Ironically, these high-fat foods are usually the worst possible choices because they can make us feel lethargic and less able to deal with stress. Not only that, but stress can drive up our blood pressure and raise serum cholesterol levels, wreaking havoc on our arteries and increasing our risk of heart attack. The best solution? Low-fat, high-fiber, carbohydrate-rich meals with plenty of fruits and vegetables. They soothe us without sapping our energy and give us the nutrients we need to boost our immune system. Here’s a guide to which foods reduce stress and which foods make it worse:

High-fat foods: Fatty foods such as meat or cheese dishes and many baked goods thicken our blood which in turn makes us feel tired, even lethargic. This is clearly not a good way to reduce stress! Even just one high-fat meal can increase our risk of a heart attack. Caffeine: Many of us deal with a stress-induced lack of sleep by turning to coffee, tea, and colas. Unfortunately, caffeine stays in our systems longer than many realize. Cutting back on caffeine can help with both sleeping problems and jitters. Sugar: As a carbohydrate, sugar tends to calm us. The problem with sugar is that it’s a simple carbohydrate so it enters and leaves the bloodstream rapidly, causing us to, in effect, “crash.” On the other hand, complex carbohydrates such as pasta, beans, and lentils, the starchy parts of foods soothe without bringing us down.

High-fiber, carbohydrate-rich foods: Scientists believe carbohydrates cause the brain to produce more serotonin, a hormone that relaxes us. And lots of fiber is helpful in preventing late-night binging. Some examples of healthy comfort food include baked sweet potatoes, minestrone soup, or sautéed vegetables over rice. Fruits and vegetables: Chronic stress can weaken our ability to fight disease. By upping our intake of antioxidant-rich fruits and vegetables, we can boost our immune system. Women’s Health Initiative Study Shows Modest Diet Changes Yield Modest Results On February 8, 2006, the Journal of the American Medical Association published three articles reporting the results of the Women’s Health Initiative (WHI) Dietary Modification Trial. The study included 48,835 women, and tested a diet that aimed to reduce fat to 20 percent of energy and increase vegetable and fruit consumption. After 8.1 years of follow-up, the cardiovascular effects of the diet change were minimal. Low density lipoprotein (LDL, or “bad”) cholesterol fell 2.7 mg/dL and the risk of coronary heart disease fell by 3 percent while risk of all cardiovascular disease (including stroke and coronary heart disease) fell by 2 percent. Neither result was statistically significant.1 For breast cancer, risk was 9 percent lower in the intervention group, although this result did not reach statistical significance. One exception was for progesteronereceptor-negative tumors, for which the risk decreased by 24 percent.2 For colon cancer, the risk of incidence decreased by 3 percent with a 9 percent decreased incidence of polyps (which are often precursors to cancer).3 Some have taken the result to be a setback for low-fat diet advocates. However, the study confirms the findings

of several others: Modest dietary changes yield modest results. The WHI diet is reminiscent of the dietary changes advocated by the National Cholesterol Education Program, a dietary shift that reduces fat to no more than 30 percent of calories, with less than 7 percent of calories from saturated fat and less than 200 milligrams of cholesterol per day. White meat is favored over red meat, but the diet includes as much as six ounces of meat per day. This diet has been shown to reduce LDL cholesterol concentrations by only about 5 percent.4

The flaw was in the diet design. By attempting to construct a “low-fat” diet that included animal products, the researchers were left with an impossible challenge. The leanest beef derives about 28 percent of its calories from fat. The leanest chicken isn’t much better at 23 percent fat, and even low-fat milk ranges from 24 to 35 percent total fat. Fish can vary in fat content, but all have cholesterol and more fat than is found in most foods from plants.

Diets that go further achieve far better results. Studies with vegetarian diets have shown LDL reductions of approximately 15 to 20 percent.5,6

The women participants were asked to reduce fat to 20 percent at which level “it was presumed that . . . intake of saturated fat would also be reduced.” However, their intake of red meat, fish and poultry, the major sources of saturated fat and cholesterol in the standard American diet, remained nearly unchanged.

Moreover, the WHI diet yielded poor compliance. While the low-fat group was to have a total fat intake of 20 percent of calories, the group averaged 24 percent after the first year and 29 percent by the study’s end. For comparison, the average American consumes about 33 percent of calories from fat (NHANES III, 2000); little difference from the WHI intervention.

A growing body of scientific evidence has shown that people on low-fat, plant-based diets have dramatically lower rates of cancer, heart disease, and other chronic illnesses than meat eaters. And while a modestly low-fat diet will yield modest results, a truly low-fat diet—that is, a vegan diet, without added fat—can be an effective and powerful tool for reducing cancer and heart disease risk.

Dramatic differences in cancer risk have been noted in international comparisons where dietary differences were far greater than those in the WHI.

Treatments Do Exist for Hepatitis C DEAR DR. DONOHUE: I believe I read in your column about something that can be given for hepatitis C. My doctor says there isn’t any treatment. Will you please advise me? -- Anon. ANSWER: Chronic infection (lifetime infection) happens to about 80 percent of those infected with the hepatitis C virus. Worldwide, the virus infects 170 million people. In the United States, 3.2 million are infected. Of the chronically infected, close to 20 percent will develop either liver cirrhosis or liver cancer. It takes 20 to 30 years before signs of such complications become apparent. Predicting who benefits from treatment, therefore, is not an easy task. Perhaps your doctor said you would not benefit

“A Better Life” best actor nominee Demian Bichir has acted in his native Mexico since he was 14 years old. His first American film was “In the Time of the Butterflies” in 2001, with Selma Hayek. In 2008, he starred with Benicio Del Toro in Steven Soderbergh’s “Che.” He also appeared in the fourth, fifth and sixth seasons of the Showtime comedy “Weeds” as Esteban Reyes, and last year in a little-known film, “The Runway.” While the two French actors haven’t announced any new projects, Bichir has Oliver Stone’s “Savages” with John Travolta, Blake Lively, Uma Thurman, Selma Hayak, Emile Hirsch and Taylor Kitsch due out in September. Known as the father of the movie Western, he helped define the role of the movie producer and made films that were both influential and important. “War on the Plains� (1912) was one of the first films to feature real Indians as actors, and two of his productions, “The Italian� (1915) and “Civilization (1916), have been selected for preservation by

the United States Film Registry. Ince was born into a theatrical family in 1882 in Newport, R.I., and soon became involved in the profession, appearing in several stage productions including “For Love’s Sweet Sake� (1906), where he met his future wife, contract actress Elinor “Nell� Kershaw. In 1911, Ince was offered a job that took him to California,

and after establishing himself in the film community, he leased a tract of land in the Santa Monica hills. Soon he had earned enough to buy the property and build his own studio. “Inceville,� as the property became known, was the prototype for the first major California studio, featuring a complete roster of actors, writers, managers and a production people, all working on site. After selling Inceville to Western actor William S. Hart, Ince joined D.W. Griffith and Mack Sennett to form Triangle Studios, which eventually became MetroGoldwyn-Mayer in 1924. His biography by an archivist with the Library of Congress is filled with unexpected surprises: Ince played an important role in creating the first Asian stars in Hollywood, and he was not afraid to address such issues as spousal abuse, the changing status of women, religious hypocrisy, love inside and outside of marriage, and the challenges of an everchanging modern world. Turning the compost will reintroduce air into the pile and help restart the process. If there’s a lot of extra water after turning, pour off some, but not all of it. There’s also the possibility that rain or snowmelt got into the tub. If you don’t want to punch drain holes in the bottom of the tub (most apartment managers frown on compost water stains on their patios) you should loosely cover the tub with a tarp so that air gets in but water does not.
