Mike Turinsky’s honest account of reacting to life’s stress and demands, with the familiar reasoning: ‘When I get through this situation, I will put change into place’ — is something I can totally identify with it. Read about the major life change he went through when his stress levels and work-life balance went askew, even as he struggled with two demanding jobs dealing with difficult issues—as chief executive of Young Life Trust and as Howick Local Board member. Addressing the journey within, Turinsky worked one step at a time on his mental, physical, emotional, and spiritual wellbeing, and even lost 30 kgs in the bargain! Talking about pivotal turning points, Allan Moseley made a
dramatic career change from training personnel in the airline industry for 21 years to, barbering! Making the switch was a close shave, literally. Just a month after he invested his life’s savings in the men’s grooming business, Covid struck. There was more than a year’s delay in the opening of BarberShopCo. However, the nightmare ended once the new business saw the light of day. Lucky for Allan, the men in town are the cool set/heroes—they have been busy playing catchup with women in the grooming department. In this issue, we’ve also featured our local contestant in MasterChef, New Zealand, the oh-so-enterprising Sieumuoi Hancock. Not many know that she, along with her childhood sweetheart (now her hubby) was the one who started the very successful Ronnie’s Café at the Botany Town Centre whilst she was at still studying at university; and later, she established the popular Hancock’s Cafe in Howick. They eventually sold both the businesses to focus on family life. The mother-of-two who loves
feeding people, shares some of her favourite recipes. For all you royal followers, I’m excited to announce that although we couldn’t be in London to meet the Queen during the glorious Platinum Jubilee celebrations, this particular issue will be travelling all the way to the Buckingham Palace! Cr Sharon Stewart, who hosted the Queen’s Platinum Jubilee celebration at Fisher House with men and women from east Auckland who have been recognised with Queen’s Birthday/New Year Honours, tells me that EastLife magazine – with the coverage of the celebration – will be sent to Queen Elizabeth II. Well, what can we say but Long Live the Queen! And, hope you enjoy leafing through our magazine, your Majesty!

PLATINUM JUBILEE CELEBRATION It was an event fit for the queen! Orchestrating the platinum jubilee celebration of Queen Elizabeth II was councillor Sharon Stewart QSM as she hosted a delightful royal high tea at Fisher House to honour the Queen’s men and women. The event held to celebrate the Queen’s service to New Zealand and the people of east Auckland who have dedicated their lives in service to the country, was meticulously planned. Guests included John RoyWojciechowski MNZM, Bruce Kendall MBE, Sergeant Gurpreet Arora MNZM, Graeme Leggat QSM, Rosa Chow QSM, Keith Ingram MNZM, Davinder Rahal QSM, Bernadette Pereira MNZM, Kit Wong MNZM, Harjit Singh QSM – mainly those who have got the recognition of the Queen’s Honour over the years. Standing tall was leading cancer drug researcher Sir William (Bill) Denny KNZM, who was made a Knight Companion of the New Zealand Order of Merit in recognition of his services to medical research in 2021. Sir Denny has spent his career which spans more than four decades improving the effectiveness of
cancer treatment drugs. Acknowledging the contribution made by people who have been awarded the Queen’s Birthday Honour /New Year’s honour was Member of Parliament, Simeon Brown who made a rather engaging MC for the special event.

Also spotted, former minister and diplomat Maurice Williamsom who is all set to contest the council elections this year. Val Lott accompanied by husband Allan added sparkle to the event in a shimmering gown. Also at the gathering was talented performer Niklas Hansen who sang a beautiful rendition of the Queen’s favourite song Flower of Scotland and God Save the Queen. A passage from the bible was read by Brown and a royal toast was raised by Ingram who served in the Royal Navy. The crowning glory was the cake, in shape of the Crown, cut by all the companions of order. All in all, a fitting platinum jubilee celebration organised by councillor Stewart.

Her Majesty the Queen is the first British Monarch to celebrate a Platinum Jubilee, marking 70 years of service to the people of the United Kingdom, the Realms and the Commonwealth. Queen Elizabeth II is Queen of the United Kingdom and 14 other Commonwealth realms. She was born on April 21, 1926 and is 96 years old.

Each July, Parnell hosts a mid-winter light sculpture at Heard Park with the goal of warming hearts, connecting friends and families to feel awe-inspired. This year’s light sculpture is Kohatu & The Sphere created by Fish Aberadi. Fish is a Hawke’s Bay artist working to enhance physical spaces and shift perspectives through the lens of his wood-based structures. The sphere in motion speaks directly to the underlying nature and order of the universe. Spheres in motion bend time, space and give us gravity. This piece seeks to replicate nature’s miraculous harmony that gave rise to consciousness.

Marin Burgess remembers the very first time she stepped into Howick Historical Village and fell completely in love with it. That was on March 8, 1980. Forty-two years later, as President of the Howick and Districts Historical Society, the village is still an integral part of her life, as she along with a dedicated board, fiercely safeguards its rich legacy. The Howick and Districts Historical Society that celebrated its 60th anniversary in June, is the owner-operator of the Howick Historical Village. FARIDA MASTER talks to Marin about her long-lasting relationship with the iconic village that captures Howick’s past and leads the way for the future.
The secret to your long-lasting love story with the historical village is... My paternal grandmother lived a very old-fashioned life which has been such a gift. I grew up spending a lot of time with her. The time spent with my grandmother taught me how life was lived once upon a time and the first time I stepped into the village it brought back so many beautiful memories. I used to churn butter, feed the chooks, make bread with my grandmother and of course it all fitted in perfectly with the Historical Village. It was like I never left. I was rooted in living history… Why do we rush around so much these days? The role of the Howick and Districts Historical Society has been… Large in my life—the Society is an important vehicle to protect its unique heritage and history for the community and ensure the stories of people live on. We hold extensive archives chronicling local history. As President of the Howick and Districts Historical Society, you must… Be fleet footed! Listen. Trust. Have a good Board. The Howick Historical Village’s involvement with the 175th Anniversary celebration of the arrival of the Fencibles in Howick in 1847 is… A wonderful opportunity for the Historical Village to let visitors experience for themselves how life was lived by the Fencible families who took the opportunity to come to New Zealand in search of a better life. As the first government sponsored immigration scheme their arrival 175 years ago almost doubled the European population of Auckland. Howick was the largest of the Fencible settlements with 804 people in three companies in 1848. The special events planned are… October 29: A picnic at St Johns in Meadowbank. This is such a privilege and honour as we will have access to rooms and spaces used by the Minerva and Sir Robert Sale Fencible families when they were invited to a welcome picnic just before they were taken by boat to Owairoa beach.
very small child. She grew up with all those influences and interests and now has a thriving career as a museum professional. I’m very proud of that and of her. The historical village is thrilled that new school (history) curriculum brings with it… A shift in focus to a more collective history. We have a fantastic opportunity to encourage students understanding of Aotearoa’s history and how it shapes our present day. We have begun to develop programmes that give voice to our diverse communities and their part in historical Howick. If you were reborn as a historical character, you would be… Mary Bumby. Mary Anna Bumby came to the Hokianga in New Zealand in 1838 and bought with her two skeps (hives) of bees: the first honeybees in New Zealand. She later married Rev Gideon Smales and lived in what is now East Tamaki. Mary’s
life was fascinating—it had adventure, tragedy, drama, and she was certainly no shrinking violet. Mary epitomises the pioneer spirit so evident, but often overlooked, in women of the day.
November 5: A luncheon at the Pakuranga Rugby Club with a visit to the Historical Village included in the ticket price. This event will sell out quickly.
The day job you enjoyed very much was… Working with the volunteers at the Auckland Cancer Society for over 20 years: the people who put their hands up to help people with a cancer diagnosis all deserve medals. People who volunteer lead very rich lives and invariably get back more than they give.
November 12: A Beach Picnic at Howick Beach – This is close to the actual landing date (November 15, 1847) with full tide at 11am. We plan a family fun day with a have-a-go theme with local cafes providing a ‘pack-a-picnic box’ to make it easy for people to join in. The Fencible families were bought to the beach by the Government brig, Victoria and found to their dismay only two sheds to accommodate the roughly 800 men, women, and children.
Any three people you would like to invite for dinner are… We’d need a piano – Beethoven for his glorious music and outrageous personality.
At 2.30pm that day a commemorative plaque will be unveiled in Picton Street followed by a Civic Service at All Saints Church at 3.30pm.

THE BEAUTY OF BROMELIADS Bev and Lester’s journey with bromeliads began nearly 30 years ago when Lester spotted a Tillandsia usenoides (Spanish Moss) growing on a pinecone. Fascinated by it, the couple joined the Bromeliad Society of New Zealand in 1995 to learn more, and now run a bromeliad and air plant nursery in Pakuranga. Bev Ching tells us how her garden bloomed into a green oasis.
“It wasn’t long before we were hooked and looking to move house where we could grow more bromeliads. We found a 1/2 acre flat section in Pakuranga with a large glasshouse (to Lester’s delight), also a large structure that had previously been an aviary, it didn’t take long for that to be changed into a shade house, with benches etc established. Next, we focussed on the garden. First, we planted queen palms, manuka and kowhai to give us the filtered light to grow bromeliads. Eventually the garden took the shape it is today. My love for other trees and shrubs like magnolia, rhododendron, azalea and vireya rhododendron have been planted around the garden pathways. We now have five shade houses, with different bromeliad genera in each (well mostly), housing our own collections of tillandsia’s and potted plants. One was solely Lester’s for his staghorn ferns, but

I asked nicely if he would put up some rails for my hanging plants. This is where we spend a lot of our time. Our garden, well, it’s just a garden. I have enough to keep me busy. Our time is spent mostly with the plants. I always spend part of the time in the garden working plot by plot. Like all gardens there is always tidying up to be done. Every three to four years I get that extra energy and change the garden around, with different coloured bromeliads, almost like changing annuals each year, otherwise I feel the garden always looks the same. That is the beauty of bromeliads, they don’t mind the change of position, so long as the conditions are right. It is nice to share the space with the native birds. We enjoy sharing the garden with others, meeting new people. The garden is always peaceful to come home to.” www.eastlife.co.nz

Sitting in a flash barber shop that looks out on the main street of Howick, there is a constant flow of yuppy as well as more mature customers and families walk in. It feels like men are a serious threat to women, in the grooming department. As a bystander at BarberShopCo, the upmarket barber shop, it’s interesting to note that practically every customer be it a 25-year-old hipster or a 65-year-old, grey-haired bloke walks away with a hair styling product and a moisturiser. Oh boy! Are men playing catch-up with the ladies in the grooming department?! Allan who greets every walk-in customer is interrupted multiple times during our interview, with clients wanting a consultation on the kind of product they should pick up. “It’s about the whole experience. Every person walks out from here feeling, looking and smelling amazing,” he says. “After 21 years with Air New Zealand, and a job I absolutely loved, I wanted to spend more time with my family. My job involved being away for a long period of time,” he says about trying to find a balance between his professional and personal life. www.eastlife.co.nz

“I was thinking of a career change but was humming and hawing about it. I have always been passionate about training and looking good. I weighed several options. Then a friend of mine opened a barber shop in Birkenhead. I was surprised because he was not a barber by profession. I called him and asked him how he did it. He explained that he had opted for a franchise of BarberShopCo. They have their systems and processes in place and are very supportive. “I knew I needed a lot of support and thought it wouldn’t hurt to have a chat to find out more about the business.” That was two years ago. One month after Allan left his high-flying job, Covid struck. To open a new business during unprecedented times with the virus shutting down the country, was a huge challenge. “We started building in January 2021 and hoped to open shop by October 2021,” says Allan about his tumultuous journey during Covidravaged times. Sadly, there was a material shortage, and the series of lockdowns didn’t help. “We finally opened in March 2022. That was a tough ride. Lots of sleepless nights,” he says of the hard times they faced. It was a close shave with destiny. Now it’s been four months since they opened shop, and there is a steady flow of clients. Allan is loving it. Taking us through the paces, he says, “We start with a consultation about the kind of cut they are looking for. Is there something new they would like to try? Or would they prefer to go with the same look? We also have a Look book that helps them decide on the style they fancy.”
Being a local, Allan says that having grown up in Howick he always felt that there was something missing when it came to going for a haircut at a barber shop. There was a strong desire to fill up the gap. “I always wanted to bring something that was well-designed, familyoriented, and upmarket with competitive pricing. We also offer a school and pensioner’s rate. One of the things that all our customers love is the hot towel treatment after the cut. It makes them feel relaxed and refreshed. A lot of our customers enjoy the deluxe shave. “As for the children, one of them spotted our barber give a kid a spiderman cut and then they all wanted the same!” he laughs. The father of two boys, three-yearold Xavier and six-year-old Xander, with another baby girl on the way, Allan says it is a great feeling when he watches fathers and son bond as they come in for a haircut together. Taking about mane dreams, Allan currently has five chairs in the spacious shop, manned by three skilled barbers. “Someday, I hope to employ five barbers. One for each chair,” he says wistfully. “While ours is the 25th shop in the BarberShopCo chain, and is the furthest out east, I’d also love to open another barber shop in the country, maybe in Christchurch. I want to offer a barbering experience they haven’t had before.” Lucky for him, it’s a personalised service that one can’t possibly avail of, online! eastlife | july 2022 |

BABY CARRIER: Managing luggage, coffee, gate details, tickets and food is complicated enough when travelling, so it’s worth getting a baby carrier and wearing your baby whilst you’re going through the airport. PACK ZIP LOCK BAGS: Babies can be messy. It’s worth having zip lock bags with you to easily clean up and dispose of any mess that your baby may make rather than waiting for a flight attendant to come around for rubbish. It’ll be easier to manage, and your fellow passengers will be pleased. PLAN YOUR AIRPORT TRANSFERS IN ADVANCE: Be sure to book your transfers to and from the airport in advance and specify that you will be travelling with a baby. By doing this you won’t have to hang around the airport waiting for transport with your child. Your journey will be smooth and quick.

She explains that meltdowns can be triggering for parents and that simple reflection exercises may help in those moments. In case you didn’t know, meltdowns are normal! If your child is losing it on a daily basis, then they are on the right track. Meltdowns are a normal part of a child’s development. Meltdowns occur when a child cannot make sense of or process, a situation or experience. And so instead they express through behavioural outbursts. Firstly, remember they are NOT doing this on purpose. Secondly, it has NOTHING to do with how good you are as a parent, (so, we can all dump our parent guilt here and read on). Tantrums are hard for ‘us’ as parents… When our children are dysregulated, it can trigger us and make us react in those moments.
In my experience, it’s the ‘parent’ that needs the most attention. In reality, our kids are a reflection of us. This can be quite confronting, I can imagine. Sometimes when I look at my son, I see parts of me I don’t want to accept… So next time you face your raging kid, ask yourself: Are you regulated? How is your energy? Are you present? Are you thinking how you are going to teach them a lesson? Because when we focus on teaching them a lesson, we aren’t able to be present. When we focus on their behaviour, it’s always going to seem ‘bad’ and we miss what’s happening beneath the behaviour.
The first thing to understand is YOU and your emotions, then the situation and then your child.
Check your tone + pace. A HIGHPITCHED tone and fast-paced words won’t calm you nor your child. Going s-l-o-w and using a soft tone will calm and reassure them. All of this takes practice. So, give yourself some compassion and love.
Usually, we’re quick to think that something is wrong with our kid, and we need to ‘fix’ them so that our problems go away.

IT’S ALL ABOUT THAT JAB Two questions veterinarians often get asked are ‘What are these vaccinations for?’ and ‘Does my dog really need another booster shot?’ In this column DR ADRI ROSSOUW of True Vets Ormiston explores some commonly occurring disease we should vaccinate our dogs against and explains why. Let’s start with the most infamous viral disease in dogs ... Parvovirus. Amidst the coronavirus pandemic, veterinarians were also experiencing a challenging Parvo outbreak. In recent years the Parvovirus has become more contagious. It can survive in soil for up to two years, and while it used to be a disease of unvaccinated dogs, we now see partially vaccinated dogs getting infected too! Parvovirus not only causes serious gastrointestinal symptoms, but it also weakens the immune system, making it harder for the dogs’ body to fight off the infection. The sad truth is that we lose countless dogs each year from this terrible disease. Next up is Leptospirosis, which is anecdotally known as a rural disease, but we have already seen quite a few cases at our city-based practice! Leptospirosis can be found in contaminated water sources. It can infect numerous organs including the liver, kidneys, and eyes and is contagious to humans too. We are currently in the middle of another outbreak! Canine Cough has been wreaking havoc in parks and other public spaces where dogs congregate. In most instances it only causes upper respiratory tract inflammation and the associated ‘goose honk’ cough, but it is highly contagious!
I think you will all agree that there are a few scary diseases out there that we need to protect our dogs against, but why all the fuss over booster shots? Puppies receive immune protection through their mother’s milk which counters the full antibody response to the vaccine. The duration of this immune protection will differ from one puppy to the next. Some might already have a weakened immune system at eight weeks whilst others will only receive the full benefit of the vaccination with the 16-week booster. For optimal protection against these diseases, the immune system needs a ‘yearly reminder’ through a booster vaccination to ensure that they can fight off the infection if they do get exposed. A bonus of yearly vaccinations is that veterinarians make use of the opportunity to do a thorough clinical examination on your dog to make sure your furry friend is happy and healthy.

Turinsky’s major life change Turning 45 was a critical moment in Mike Turinsky’s life. The chief executive of Young Life Trust and Howick Local Board member seriously questioned his lifestyle, rising stress levels, worklife balance and decided that things needed to change. Turinsky shares how he worked on his mental, physical and emotional wellbeing and even lost 30 kgs! In his own words...
Over the years, I have admittedly struggled to achieve sustainable life balance and health across all areas. I found myself reacting to stress and life demands, always thinking, ‘When I get through this situation, I will put change into place.’ But inevitably, it seemed like the ‘when’ never arrived. There is always a list of demands and situations lining up for us to react to and deal with. Often I found that things I was doing in the short run to cope, was having the opposite desired effect in the long run. I finally realised that it was my perspective that was off base, and I had to implement a whole life approach to living.

to dream about what I wanted the next 20-30 years to be. I wanted to change my posture and my ability to deliberately respond to the opportunities, demands and stresses that came my way. I also wanted to lead myself well so that I could serve my family and community out of fullness rather than deficit. I realised that I had let other things stack up and distract me to the point where I was simply surviving, not living. I started with things that would have the greatest long-term effects and were most in my control to change. I was already meeting with a professional life coach, so I had a heart-to-heart with him and then made my five-year-plan. I looked at all the health stuff including stress management, time management, sleep habits, my mental health, spiritual life and nutrition. My first focus was on my daily schedule and addressing the cause of my stress with the help of a counsellor. At the same time, I started working on getting better sleep. I found that it was all connected. When one area of health improved, it impacted other areas. I began drinking more water, doing breathing exercises, some simple meditation (mainly just walking alone or sitting at the beach in my car quietly before going home and trying to clear my head), improving my time management practices, amongst other things. I also started going on daily 15-20 minute walks just to lower stress, pray and help keep my head clear. www.eastlife.co.nz

My counsellor asked me to think about the different times and situations that contributed positively to my mental and spiritual well-being. Growing up in Alaska and the Pacific Northwest, I have spent a lot of my developmental years in the wilderness tramping, fishing, hunting, camping, and exploring. I can say that for my mental and spiritual well being, I gain a lot from those times.
I also started going on daily 15-20 minute walks just to lower stress, pray and help keep my head clear. I benefit from solitude and disconnecting from the modern world. It is amazing how humbling it can be sitting on the side of a mountain and being enveloped in the bush when tramping through native forests. There are many places locally in the East, across Auckland and on the North Island to explore. I also focused on doing things that reduced stress of my wife and kids, identifying their stressors, as we don’t live in a vacuum, we all affect each other. This was all an effort to improve coping responses and enhance the relationships with my family, and other significant people in my life. Our body creates stress hormones that should be in balance but we
don’t always have a lifestyle that allows for that. These hormones have a purpose in dealing with stress in the moment but should not be relied on for a long period of time. So, in 2020, I started riding my bicycle as another form of exercise and stress relief. Over that year it increased my fitness ability. It allowed me to focus solely on one thing, riding. This would give my mind time to rest whilst benefiting from some endorphin release. My overall health was slowly improving, and it was noticeable, how I dealt with stress. 2021 was my year of weight loss. I did some research and decided to do intermittent fasting. I have fasted numerous times for up to three weeks at a time for spiritual practice, so I knew that I was capable of fasting part of each day. I’m aware that not everyone can do that. Advice from your doctor should be included in any weight loss plan. With intermittent fasting, the body goes into ketosis after 12 hours of fasting. It is a form of the keto approach to weight loss. The number of fasting hours above 12 is the number of hours your body is in ketosis for that day. Your body will burn fat during that ketosis period. Then exercise burns more. There are three commonly used fasting times: 16 hours, 18 hours or 20 hours fasting. Research says that middle-aged men often respond best to the 20-hour fast and middle-aged women benefit most from 16-18 hour fasting. It means you have a period each day that you can eat. 20:4, 18:6 or 16:8.
Each day I fast from 8:30pm – 4:30pm. My sleep time is of course part of the fasting period. After each day’s fast I might eat a piece of fruit, and then have dinner with my family. I make sure I don’t eat anything after 8:30pm. My fasting schedule has been organised in a way that it has the least effect on my family. The first five days are the hardest. A natural side effect is often your brain becomes sharper and you feel more energised. After about two months, the weight started to come off noticeably, and during that time my energy picked up. The ‘lose it’ phone app keeps track of my food intake and my exercise. It also helps to set goals and keep track of your weight loss. I knew that if I didn’t make a drastic change, it was going to get more difficult to lose weight and get healthy. So, a more positive approach is that it’s never going to be as easy as it is today! My youngest son says that I have more energy these days and that I am more available to them than before. I have two jobs—Youth Development work and the Howick Local Board which are largely people-oriented. In these roles, I hear many difficult stories and issues. As I have achieved greater health and balance in my life, I have definitely been better able to process the things in a healthy way and be available. 2022 is my year of strengthening. 2023 will be my year of sustaining. eastlife | july 2022 |

Thousands of skiers at elevated risk of skin cancer Experts say new data showing New Zealand’s air quality is ranked as one of the world’s highest will contribute to an elevated risk of skin cancer for thousands of skiers this season. It was Sieumuoi Hancock’s love for feeding people, along with her husband’s power of persuasion that led her to apply as a contestant for MasterChef New Zealand, 2022. After several interviews and a tight screening process, the NorthPark resident couldn’t believe when she was selected from thousands all over the country. Having grown up watching her parents who established several French Cambodian bakeries, Sieumuoi says that by the time she was five she was sitting on the kitchen benchtop dipping doughnuts in cream, and at 10 years of age, she was an ace at piping cakes. The skilled MasterChef contestant, with an entrepreneurial streak, shares some of her quick and easy recipes with EastLife. Bon appetit!

I love Vietnamese spring rolls. They are crispy and a little chewy on the outside ber with a tasty pork, wood ear mushrooms and bean vermicelli inside. I remem t differen make would mum growing up eating this as a little kid all the time. My to variations with the filling, especially back in the early 80s when it was harder obtain some of the ingredients. However, these days all the local supermarkets have an extensive range of Asian ingredients. Give it a go.
VIETNAMESE RICE PAPER FRIED SPRING ROLLS (CHA GIO) (GF) Filling • 400g pork mince • 50g mung bean noodles (soaked in boiling water for 4 minutes then drained) • 2 carrots finely grated • 1/3 cup of wood ear mushrooms (rehydrate in water for 5 mins, chopped finely) • 1/4 cup finely chopped shallots • 2 cloves minced garlic • 1 tsp grated ginger • 1 egg white • 2 Tbsp fish sauce • 1 Tbsp vegetable oil • 1 tsp salt • 1/4 tsp black pepper • 1/2 tsp sugar
Wrapper • 20 dried large round rice papers • 1 tsp sugar • 2 cups warm water • Vegetable oil for frying • Fresh lettuce and mixed fresh herbs – mint, Thai basil, coriander and/or perilla leaves Nouc Cham sauce • 3 Tbsp palm sugar • 4 Tbsp hot water • 3 Tbsp fish sauce • 2 Tbsp rice vinegar • 3 Tbsp lime juice • 3 cloves garlic minced • 2 Tbsp red chilli
Sauce: Dissolve the sugar in water then add the remaining ingredients and adjust to your liking. I add some toasted crushed peanuts, finely grated carrots and chopped coriander to the dipping sauce just before serving. Fried spring roll: Combine all the filling ingredients together (except rice paper) and refrigerate for 1 hour. To prepare the wrapper – add 1 tsp sugar to a bowl of warm water (this trick will help achieve a more golden wrapper). Slide wrapper into the water for approximately 30 seconds. The wrapper will still be firm but will soften quite quickly. Place a log of filling on the wrapper and fold in the two sides and roll tightly into a log. Repeat for the remaining filling. Chill for an hour to let the wrapper dry out a bit before frying in 170°c oil for 5 minutes. To achieve an extra crispy wrapper, I double fry for a second time for another 2 minutes to get a great crunchy spring roll. Spring rolls are ready to serve wrapped in lettuce and herbs dipped in the nuoc cham sauce.

RICE VERMICELLI NOODLE SALAD WITH VIETNAMESE SPRING ROLLS (BUN CHA CHA GIO) (GF) When I’m making Vietnamese fried spring rolls, I like to have it as a salad also. It’s a light, tasty meal, and gluten free. The crispy spring roll pairs nicely with the soft rice vermicelli and fresh herbs. The nouc nam sauce mixed in gives it a lovely sweet, sour, and spicy kick. I have all the ingredients ready, and everyone just builds their own bowl. Super quick and easy. • Rice vermicelli • Fresh herbs – mint, Thai basil, spring onion, coriander and/ or perilla leaves. • Lettuce • Bean sprouts

METHOD Cook the noodles in boiling water. They start off hard and translucent and will turn white and soft once cooked. Drain and rinse in cold water to stop them from cooking further. CHOCOLATE AND ALMOND TORTE WITH DROPS OF CHOCOLATE GANACHE (GF) INGREDIENTS Torte • 200g butter chopped • 180g dark chocolate • 2 Tbsp Cocoa powder • 1 shot espresso or (1/4 cup boiling water and 1 tsp instant coffee) • 2 cups ground almonds • 4 eggs separated • 1 cup sugar Ganache • 150ml cream • 300g dark chocolate

Ganache: Bring cream to a gentle boil. Pour on top of the dark chocolate. Let it sit for a few minutes then stir until glossy. Put it aside to cool and thicken. Torte: Gently melt butter, chocolate, cocoa, and coffee in a saucepan until combined. Mix in the ground almonds and set aside. Whisk egg whites until soft peaks form. Put aside.
Whisk egg yolk and sugar for 5 minutes until thick. Fold chocolate mixture with the egg yolk and once combined, fold in the egg whites. Pour into a 22cm lined round tin. Bake at 160°c for 40-45 minutes. Once cake has cooled, serve with a dollop of chocolate ganache and whipped cream.

WISE BOYS, WISE GUYS When two brothers quit their jobs in 2016 to launch a food truck made from recycled materials, some may have said it wasn’t the wisest move! MALLORCA MAGIC T S U L R E D WAN Armchair travel with superyacht chef Jamie Neben as he sails in the Mediterranean. Mallorca is the largest of the Spanish Balearic Islands, sitting about 200km off mainland Spain in the Mediterranean ocean. With its stunning beaches, dramatic cliffs, and clear waters it’s no wonder it’s called the crown Jewel of the Islands. Mallorca boasts over 400km of hiking trails and is a bit of a cycling mecca with many big cycling teams training for the Tour de France. Sadly, with not much time to explore, I swapped the push bike for a scooter to explore the island. can be difficult at the best of times to navigate and park, in its maze of streets…. but the architecture is truly amazing, you’ll always be looking up. The city itself can be dated back to at least 2000 years when it was founded by the Romans. There’s a neat wine bar or tapas in practically every street you turn to. They even have one of the first and few remaining circular castles with a great view of the city (see picture). Don’t forget to check out the cathedral. (See picture). After a quick bite, I headed north. If you take the highway that heads up
the centre of the island it cuts a lot of time off the coastal trip.

My first stop was Mirador Es Colomer in the north-west of the island that offers a panoramic view. After that I headed to Sa Calobra Road or the Snake Road, dubbed as Spain’s most dangerous road and with over 50 hairpins and average gradient of seven per cent.
Provided you get a table reservation, I recommend visiting ES Verger a quirky restaurant known for its slow roasted lamb, made famous by Rick Stein who said it was the best lamb he had ever tasted.
I need to mention that most of the road has no centre line, and you share it with coaches, cars trucks and cyclists. (See picture) The picturesque Port de Soller known for its artisan ice-cream is worth a visit. If you are heading
