Originally created as a medicine for its digestive properties, Crème de menthe is a mint cream liqueur which is often served in cocktails as an after-dinner drink. The liqueur is a staple ingredient in popular cocktails including the Grasshopper and Stinger, two drinks which we assure are much more delicious than the names sound.

PINA COL ADA
Pineapple, coconut and cream, a delightful trio of flavours that blend together to create a cocktail that’ll leave you longing to feel the sun on your face and the sand between your toes. The renowned Puerto Rican cocktail is so popular that its history is contested by three bartenders who all claim to have made the first. It starts with 1952’s tale of Ramon Monchito Marrero, who was asked to create a signature drink for the Caribe Hilton Hotel that captured the flavours of the island. From this, the next story stemmed that his colleague Ricardo Gracia tweaked Ramon’s recipe to a version more alike today. However, if you believe the plaque which commemorates its creation, the final tale is for you and you’ll need to visit the Barrachina Restaurant in Old San Juan who claim Ramon Portas Mingot made the Pina Colada and gave the cocktail its name. Pina Colada means strained pineapple in Spanish and refers to the freshly pressed and strained pineapple juice that was originally used in the drink.
The original rum from Dead Man’s Fingers, the spiced expression is a blend of rums from Trinidad and Barbados with flavours of caramel and vanilla complementing our truly excellent Mai Tai.
DEAD MAN’S FINGERS COCONUT RUM
A variation of the original Spiced version, Dead Man’s Fingers coconut Rum combines the delicious coconut flavour with juicy mango, runny caramel and citrusy lime peel to make a tropical treat for our Pina Colada.
ORANGE LIQUEUR
A cocktail essential, orange liqueur is made by maceration and distillation of bitter and sweet oranges or tangerines adding a zesty kick to our Mai Tai.
LEMON JUICE
Regardless of the cocktail’s creator, there’s no doubt surrounding the Pina Colada’s popularity. Named the UK’s top cocktail in 2015, you’ll be hard-pressed to not find a Pina Colada on any bar menu and catch a glimpse of the typically elaborately fruit garnished drink.
Arguably the most used citrus juice in cocktails, Heron Valley’s Lemon Juice is the perfect cocktail companion for this month’s refreshing drinks.
Our Pina Colada features Dead Man’s Fingers coconut rum to add an alcoholic twist to the coconut flavour mixed with pineapple and lemon juice to add texture and a tropical taste sweetened with sugar syrup!

Cornwall was the birthplace of Dead Man’s Fingers Rum, the house spiced rum created at the renowned Rum and Crab Shack nestled in St Ives Harbour. Bar owner Neytha Hayes and co-founder Chris McGuire decided to launch the rum shack inspired by a night enjoying premium rum Diplomatico Reserva Exclusiva from Venezuela and quickly went from opening the bar to launching their own bottle of rum in 2015, influenced by their love of Cornish culture.

The rum is named after the folklore Dead Man’s Fingers tale, when local fisherman used to refer to a crab’s feathery gills as ‘dead man’s fingers’ due to the belief that if these were consumed the person would die. The skull motif on the bottle is in reference to the last man who ate the ‘dead man’s fingers’. Aiming to reflect Cornwall heritage in the rum’s taste, alongside paying homage to the Diplomatico Reserva Exclusiva rum that started it all, the rum includes a blend of rums from Trinidad and Barbados that is aged for three years with final flavours from the coast including the Cornish staple saffron cake. Since its launch, the rum has gone onto win numerous awards for its delicious taste as Dead Man’s Fingers expanded their range into new flavours including their newest Hemp Rum. D R I N K S TA G R A M M E R / O T H E R The Royal Dick is a quirky bar decorated with artefacts from across the world including authentic vet school fittings, skeletons and an old operating table. Situated within arts-complex Summerhall in Edinburgh, the bar has the freshest gin in the city available on tap piped from the adjoining Pickering’s Gin distillery and beer fresh from the on-site Barney’s Beer brewery. If that’s not enough intrigue to entice you along, The Royal Dick will become one of the must go-to bars in Edinburgh this month as the world’s largest arts festival descends on the capital, with 300,000 visitors expected through the bar’s doors in August. Before the Festival takes over, we caught up with bartender Suzie Jachowicz to find out more. Working at The Royal Dick for 18 months, Suzie started her bartending career at Edinburgh’s Stramash, before moving to another bar in the capital, Akva, where she learnt her cocktail-making skills.

As she originally planned to go to vet school, it was a fateful moment when joining the team at the Royal Dick. “It seemed meant...It’s great working here,” she said. “I’ve always said this will be my last bar job because I don’t think anywhere else could be better...You never know who is going to walk through the door!” Speaking of the bar’s top cocktails Suzie rated the Negroni and Old Fashioned amongst the most ordered. However, it’s the bar’s in-house creation that’s claimed first place, “It was created as a sort of joke by one of the bartenders,” said Suzie. “Now we have a lot of people ordering the Buckfast Daiquiri every day. It’s a crowd pleaser and our top seller!”
