Welcome June, it is officially summer. That familiar heat and humidity that we all love will be here for the next few months. However, we have some great options for you to beat the heat. Come spend the day at the Chain Life Flotilla on Lake Eloise in Winter Haven on June 20th. With live music on a barge and hundreds of boats, it’s one of the best ways to stay cool. Don’t have a boat? How about a canoe or wave runner. It just needs to float to come party. June 1st starts Hurricane season. We all remember the Charley, Frances and Jeanne trifecta. Yes, I am proud to announce, we have made it through Day One of being the caretakers of three new Smith family members…Scarlett, Charlotte and Savannah…our brand new chicken companions. Our crazy chicken caper actually began years ago as the urban homestead craze was slowly making its way across the blogo-sphere. Post after post showed these adorable fuzz balls waddling about their designer coops enjoying the balmy breezes in a tableau of fabled farmland bliss. I imagined myself decked out in full Swiss Alps regalia tending to my flock like a modern day Heidi. I was hooked. However, the mere mention of our plan to have backyard chickens was met with such raised eyebrows and scowls from

our friends, we quickly abandoned all plans. However, the seed was planted and like most bird-brained ideas, the idea simply wouldn’t go away. Secretly, we began plotting our next move by bookmarking coop plans, making casual trips to Doty’s and even going to the extreme to rent a vacation home with chickens. All the while, we kept encountering strange looks and eye rolls when we talked of a future flock. We countered these disagreements with our firm rebuttal of “it’s just going to be two chickens.” Finally, our decision came down to an empty nest. With the loss of our precious puppy last year, our nest just wasn’t the same. Something has been missing these last few months and replacing Haley with another dog just doesn’t feel right. Despite all my friend’s “fowl” opinions, the next great adventure for us had to be chickens. It was “Mani-flock Destiny.” I had no idea finding our chickens would be such a difficult task. It took four separate trips to three different farms to finally settle on three tiny Cochin chicks. And, by the way, our strict argument to only purchase two birds has been swiftly amended as these are flock animals. Two chickens became three and if the advice from every website is correct… three quickly becomes six and soon your backyard is transformed into Chicken World. Supposedly, chickens are an addiction. My husband as already built our girls the “Taj Mahal” of brooders and their enthusiastic cheeping is quite frankly… the cutest thing ever. QUESTIONS OR COMMENTS info@todayandtonight.com

Veterinarian of the Month When Loren Nations graduated from Winter Haven High School in 1981 his dreams of becoming an influential veterinarian in a big city would follow many paths. After graduating from UF with his veterinary degree in 1991 he completed a medical and surgical internship at the Animal Medical Center in Manhattan, NY considered the Johns Hopkins of veterinary medicine. Instead of remaining in New York City he returned home to practice “big city” medicine with his mentor Dr. John Maxwell. Dr. Nations’ desire to help animals and commitment to practice at the highest level led to specialty board certification in canine and feline practice, one of only 425 ABVP diplomats in the country and 27 in the state. With this expertise, the practice has flourished into a seven doctor 24 hour emergency and critical care hospital, specialty referral center, and general practice. Dr. Nations has devoted his life to creating a center that will improve our pet’s lives for years to come. T&T MAG: How did you become interested in bartending? AND How long have you been slingin’ the drinks? JORDAN: I was asked to be a bartender 6 months ago. I was told I have the personality for the job. T&T MAG: ​What’s your customers’ favorite drink that you make (a signature drink)? JORDAN: Yuengling Draft and I have mastered the pour. No pink glittery smoke from this girl, unless you REALLY want me to. ​ T&T MAG: Tell us about your customers… JORDAN: My customers vary from “Been around for 80 years” to “May I see your ID?” ​ T&T MAG: When you aren’t working, what’s a perfect day off for you? JORDAN: Wake up, work out, then head to the beach- oh and work out. Did I say work out? ​ T&T MAG: ​What’s your favorite drink? JORDAN: Jack and Coke ​ T&T MAG: ​Who would be your favorite celebrity (alive or dead) to share an adult beverage with? And why? JORDAN: Anyone who could teach me something, make me laugh the whole time, or give me a secret to change the world. ..John Lennon meets Vince Vaughn? Sorry that is two, hard question. ​

JORDAN: I work in a restaurant/bar/golf club/catering facility which is open to the public and owned by best friend’s with some “unique” ideas. I never know what or who is going to walk through the door. T&T MAG: ​What’s your favorite music (in your iPod/iPhone right now)? JORDAN: It really depends on the day. Rock is always #1 to me. There are days where 90’s hip hop just really gets me pumped. T&T MAG: Where’s your hometown? JORDAN: Winter Haven, Fl. ​ &T MAG: What’s the craziest thing you’ve T seen a guy do or say to try to pick up a girl? And/or the funniest pick up line? JORDAN: There was once a guy who approached a girl insulted her following with “I have to bring down your confidence level so you don’t get a big head, plus girls love jerks.” Definitely did not work out for him Best pick up line so far would be “Do you like to cuddle?” T&T MAG: Best cure for a hangover? JORDAN: Keep DRINKING!! T&T MAG: Something your customers would be surprised to know about you? Do you have any hidden talents/hobbies? JORDAN: I’m really obsessed with animals. Just bring a puppy and I will be distracted from anything. Hidden talent? I can pogo for an annoyingly long amount of time. T&T MAG: When can people come by to see you at Scores @ Cypresswood? With the beginning of summer, in addition to the heat, brings us a new crop of bright eyed and bushy tailed new high school graduates, all sick of being cooped up in a classroom and ready to escape into the REAL world; no more homework, no more curfews and no more parent rules… and now the fun begins. My wish to Grads is that they enjoy this summer, the very last “free” summer of their lives. Get out and have fun with your friends. The next eight to ten weeks should be magical and carefree with fun-filled adventures, trips to the beach, hanging out with the “besties”, sleeping in late, staying up ‘til the crack of dawn and reveling in the accomplishment of completing the first phase of your life. This year, in particular, is special to my family with the graduation commencement for my nephew, Tyler. He’s such a good-looking, sweet kid with a good heart and a slightly reserved temperament. My wish for him, now and forever, is success and happiness. And don’t sell yourself short! Those that work hard get the rewards, those that slack are just the pimples on the ass of society. So, don’t be a pimple! Tyler is on a great path choosing to enter the Air Force. He was accepted with flying colors and starts his basic training the end of this year. We are all very proud! My advice to the new Grads… doesn’t really matter because most won’t listen since they think a high school diploma automatically makes them the smartest people in the world like a paper shield against the evil words that “old people” (A.K.A. anyone over the age of 28) are throwing at them. However, if I could time travel back to 1988, this is what I would tell young me; not about good or bad choices in life to change, but life lessons to help stay on track for (everyone’s) success.

• Get a proper education. College not for you? Then find a trade and get the training needed to succeed in the career path that you love. Don’t really know what you want to do? Then go into the military! They will train you to not only be good soldiers but good citizens. In addition, you will receive a free education and a guaranteed job with great benefits. • Start a savings account and a retirement account NOW. Find a reputable company with advisors to help you. This is the most grown up thing you can do for yourself and your future. Just take 10% of the money you earn or receive from gifts and squirrel it away with the help of professional guidance. Want to retire at an

early age? This is the way to achieve that goal.

• Pay yourself every time you earn or receive money. Give yourself 10% to blow on whatever tangibles that you want. You earned it, so think of it as the dessert at the end of a meal. • Create a financial budget and stick to it. Pay your bills on time and Do Not get consumed by credit card debt. Learn how your credit truly affects your whole life.

• Don’t let partying, good times and instant gratification make you stray from your path to a bright future. Remember, the “party” will always be there and so will all the expensive showy “toys”. Work hard to get the big rewards. • Your twenties are for finding your footing in this world. Finish your education. If you fall down, have a set back or decide you don’t truly like a career path, then get back up and start over down a new path. You won’t know until you try and don’t expect others to get success for you. • Your thirties are a great time to start a family, in my opinion, after you’ve sewn some oats and settled into your true career path.

• Create a “bucket list” and keep adding to it for the rest of your life. However, don’t wait until your forties, fifties or sixties to start experiencing and checking off your “bucket list” of hopes, dreams, desires and adventures.

• Not everyone can be a pro athlete, famous singer/member of a world touring band, actor or reality star. With the millions and millions of people in the world, only a very small percentage of people achieve these opportunities. So, if you are truly not the next Michael Jordan, Taylor Swift or Zack Efron recognize your passion as a hobby and move toward a career path which will give you the success and satisfaction you deserve. To all 2015 high school graduates, I welcome you into the real world. Don’t be scared to get out there explore and get your piece of the American dream. Cheers to the new crop of the best and the brightest. Your stars will shine bright. We can’t wait to see all that you achieve and discover as the newest and most productive members to our society.

Country, to Rock, to R&B…almost every wrapped up in one album. When I think of great country bands, one of the first I think of is The Zac Brown Band. Comprised of eight of the best musicians that you will ever find who plays everything from the mandolin, to the steel guitar, to the upright bass, to the banjo… true talent is The Zac Brown Band. Their skills definitely show in their live concerts…you truly have to just sit back and say to yourself “wow, I don’t know where they are going with this….but it’s GREAT!” “Jekyll + Hyde” has a few unexpected guests on it like Sara Bareilles and even Chris Cornell. The lead single off the album was called “Homegrown,” probably the MOST country song on the album, as mentioned earlier…it truly is a bit of madness all wrapped up into one CD. Their follow up single to that is called “Loving You Easy,” which is a bit tropical, a bit R&B. Two of my favorites on “Jekyll + Hyde” are the songs “Dress Blues” and “Junkyard.” “Dress Blues” is actually a cover song originally done by Jason Isbell. Zac has been performing this song live for a few years now, so it’s no shocker that he

finally included it on his album. The song is a hauntingly beautiful salute to a fallen solider and paints a picture of a small town military funeral. Typically, not my thing…but Zac nails it! “Junkyard” is just amazing. The musicianship in this song is incomparable to anything I have ever heard. It’s dark, complex, and just down right gritty. It’s about a child who lives with their abusive father, the junkyard man. I’m telling you, this album is DIFFERENT. It definitely shows that The Zac Brown band is so much more than just “Chicken Fried.” I would call this album the “Grammy” album. It’s artsy, it’s risk-taking, it’s unique. A lot of artists, when they hit a point in their career where they can finally call the shots, record an album like this. Are there a lot of successful radio singles on the album? No. But if you are looking for something to spice up your personal playlist, this is the album to download in its entirety. The Para-Commandos perform precision free-fall parachute demonstrations across the United States, informing the public about the Special Operations Command, it’s mission, and the great work being performed by the Special Operations Command’s Soldiers, Sailors, Marines and Airmen deployed to over 100 countries around the world. The team normally jumps from an altitude of 12,500 feet above the ground, freefalling approximately 2 miles and reaching speeds in excess of 120 miles per

hour wearing smoke canisters on their feet to make them visible to the public below. During their freefall, the members of the team maneuver their bodies like an aircraft to form formations in the sky. When the jumpers approach an altitude of 4,000 feet, they break their formation and glide in different directions, opening their parachutes approximately 2,500 feet above the ground. Once open, the members steer their parachutes and land one behind the other with precision accuracy in the landing area.

Thunder on the Ridge continues to be Polk County’s largest fireworks display while providing a full day of great activities and live music starting at 3 pm. Admission to the event is free, due in part to 22

Surveys, Ratings, Reviews, Feedback and Evaluations (This article may be recorded for quality assurance) Have you noticed how nice-butscripted everyone sounds these days? They are syrupy sweet and they fake sincerity. Maybe people are paranoid-nice because they know they are being reviewed, watched, recorded or monitored. How much is it costing us to have someone we are calling to be possibly monitored by a stealthy employee? It just seems so sneaky. This kind of monitoring should be limited to the CIA, TSA or NSA and we see how well they’ve done with that! Who would want such a horrible job as being a monitor, anyway? It’s not only an invasion of the employee’s privacy, it invades ours. If someone wants to be rude to me, I don’t need a monitor. We’re both consenting adults. I can be rude back if I want to, which I don’t. I used to tell them I’ll call back for someone less rude. Now they’re all so nice I feel like I’m talking to robots. I hear nice words, but the inflection is much like a Stepford version of a person. Ah, for the good old days when people were people and not machines. SIRI has more personality than some operators. At least you can talk back to her. I want the job that thinks of her smart-alec responses. There’s monitoring at its finest! Ebay feedback, Amazon ratings other invasions by email and phone to take a “short” survey is clogging up my email and voicemail. Their idea of a “short” survey is a long way from mine. I actually was dumb enough to answer an email requesting a customer question. Did you know if you purchased something people could ask you what you thought of it? Recently, a woman who worked in an airport coffee shop was desperately asking me to send in a survey about her job performance as being good (which it was) because her boss was nasty to her (which he was). I didn’t mean to monitor his meanness, but he was managing the coffee shop and the computer went down. He was yelling at her for selling coffee without a computer to monitor the sales. Crazy! She was carefully and manually adding up purchases while continuing to make money for the shop. He was furious. It was ridiculous. I will send a review in for her. She was doing her job when she didn’t have to and nice to people in spite of not having a register. That’s human! The most amazing of all these surveys is the fast food chains. Do we really need a survey for a fast food transaction? You drive up to an awful microphone, pay one person and get a sandwich in a bag from another. What’s to review about a drive-thru? Turn It Down! Imperial Polk County now has a new noise ordinance, so watch out! Or should that be, “hear out”? In case you missed it, the county did indeed pass a new ordinance that’s supposed to make people be a little more considerate, and keep their car volume down. Some people are for it, some people are against it. In a nutshell (or in this case, in a Smart car), if someone can hear the music in your car from fifty feet or more, then it is considered “unreasonably excessive” , and you would be fined $100. “Unreasonably excessive”… My wife uses that same phrase to describe my catcalls and grabby hands when I see her wearing, well, just about anything. Or nothing. Let’s say you’re driving through Wahneta, and you’ve got The Captain & Tennille playing in your Yugo, and the volume cranked up to eleven. Not everybody is going to appreciate great music like that, and they’ll be within their rights to call the Po-Po, and complain. The Po-Po will show up and say, “Is that Muskrat Love I hear? It is…it is Muskrat Love!” Said Po-Po will then walk to your car, and deduce the following, “Okay, I have a size 10 ½ shoe, I took twenty-three steps…that is exactly fifty-two-pointthree feet”. That’s citation-worthy right there. So, you are now the proud owner of a new noise ordinance citation. If it’s your first one, it will cost you about the same amount as a ticket to Disney World. If it’s your second offense, it will cost you the same as you and your Aunt Gertie going to Disney World, plus parking, and purchase of two Mouseketeer ears ($250). And, if you get popped with the noise ordinance three times, it’s going to cost you the equivalent of admission for four at Disney World, parking, four Mouseketeer ears, and one plush Chip (of Chip & Dale fame) doll ($500). As I said before, not everyone is happy with this new ordinance. Those people are the ones who you hear from a farther distance than an ambulance, a firetruck, and one motorcycle cop on a Harley Davidson…all com-

ing at you with their sirens blaring. The people against the noise ordinance have something in common: they love crappy music, that shouldn’t be classified as music at all. It’s just loud bass rattling every single plastic piece on their car. I’m not singling out rap music. I hear it with country

music too. Even some rock tunes occasionally. I have never, ever, ever heard Celtic Woman blaring from a car fifty feet away. Never has someone pulled up to the light next to me and I thought, “Dang, I wish that knucklehead would turn down that John Denver song!”. Good people like good music. Bad people love bad music, and want to make everyone else feel bad too, apparently. I’m tired of having a nice moment in my car ruined as my Barry Manilow song is drowned-out by the twang and yeehaws coming from Jimmy Joe’s pickup truck that’s riding higher than Bok Tower, or having every organ in my body vibrating loose because some dude named “G” has the bass cranked-up all the way in his 1988 Monte Carlo…to the point where you can’t even hear words… you just hear. BVVVV-BVVVBOWVVVV-BBBBBZZZ. It’s like braille for music. So, play that funky music white boy! Just not too loud…or I’ll call the Po-Po. — Brian “Cranking Neil Diamond” Bruchey

By Loren Spangler Photos By Chris Douglas Situated on the shores of Lake Shipp, the original Harborside was a fish camp with bait & tackle for sale, a dock for boats, and several efficiency apartments where guests and fishermen could stay. The clapboard restaurant at the water’s edge was called “The Bait House”. Their menu specialty was smoked mullet, hot sauce, and crackers. Over the years, the quaint eatery became known as “Gary’s Harbor Side.” Featuring a dining room built out over the water where patrons could view boats entering the lake, the restaurant grew in popularity. Then, James Bronkhorst and Ray Hollock bought the restaurant from owner Billy Joe Watson and renamed it Harbor Side Seafood House & Oyster Bar. Guarantying their continued success for some of the best food in Winter Haven was Richard Dumont, “Chef Richard”, who had been the chef at Harbor Side for nineteen-years. After closing in 2010, Frank and Manny Papadopoulos bought the restaurant and entered into a seven-month demolition/rebuilding project. Afterward, they opened the new, two-story Harborside in December 2012. Two years later the restaurant was resold to restaurateur David Spinogatti, who came to the table with great vision. “I bought the property because of how close the restaurant was to the water. That unique feature

was grandfathered in,” he says, adding the open view lakeside and chain-of-lakes canal locale was perfect for him. “Because Harborside operated for so long and was very well known, it has great value.” Spinogatti started his career as a dishwasher. He continued on, doing every job available (including becoming a chef), and has twenty-years of hospitality industry experience working with upscale clients in New York and Central Florida. David is a graduate of the globally recognized Johnson & Wales College of Culinary Arts in Providence, Rhode Island. Having a goal of offering fine cuts of aged meat and fresh fish, both cut daily, he compliments his culinary success with a selection of succulent oysters. Harborside’s innovative know how is a-sure-to-please occurrence to all who visit. Chef Richard has also joined the NEW Harborside’s kitchen as a part time chef. Guests can dine in the large, impressive dining room or outside on the open-air lakeside patio. There is also dockside seating, and all areas offer a spectacular sunset view across Lake Shipp. While enjoying the lake through towering windows or listening to live entertainment (Friday night @ 7:30 pm and Sunday @ 4 pm), the dining ambiance is hard to beat. Harborside has something for everyone. Arrive by car, boat, bike, jet ski, or seaplane. Before opening for business, Spinogatti remodeled the inside for better access, added a private dining room, and made it acoustically quieter. “Since we butcher our fish and meat fresh on site, we expanded the kitchen area to give our people more space. For connoisseurs of beers, Harborside increased the number of draft choices from eight to sixteen and added an upscale selection of wines on tap. “Wines stored in kegs stays fresher,” says Spinogatti. “The focus at Harborside is the water,” mentions David, adding that the décor is pleasing to the eye as well. Customers notice the comfortable seating, sails across the ceiling, and a fresh seafood viewing

Harborside serves quality oysters from Cedar Key, FL, Suffolk, VA, Apalachicola, FL and Westport, CT. “We sell lots of oysters and like to give our guests the very best options when available.” Considered a Winter Haven landmark for seaplanes, pilot Jim Herzburger and his wife Karen fly their seaplane down from Ocala. “Seaplane pilots are always looking for places to fly. Formerly a Florida State level Correctional Officer for fifteen years and part owner of a car-wash, she always wanted to own her own bar. When the opportunity presented itself, she was ready. “I was having a beer at a bar not far from here and was asked if I knew anyone who wanted to manage and run the place. ‘Yes,’ I replied, ‘me.’” Cindi changed the previous name to “Shady Cove Bar & Grill” and operated it for a while, but, she wanted more. “I had been thinking of moving…going on my own with my own place. Then, this building became available.” So, she brought the name “Shady Cove” with her, moved in, and began remodeling. Previously, the space had been a beauty shop on one end and an ice cream parlor on the other. Cindi opened things up by removing a wall, built a bar, and combined the ample footage into one unit. On

FLORIDA OUTDOOR SCULPTURE COMPETITION

5 Questions with Adam Justice, Curator of Art at the Polk Museum of Art By Mary Joye The sculptures have changed as they do every spring. It’s always a wonder to see what pops up out of the grass in Winter Haven’s Central Park, Lemon Street in Lakeland and downtown Sebring. Adam Justice, Curator of Art at Polk Museum of Art, spent some time with us about the process of this community project that enhances the visual environment. Every year I report on the work itself, but I thought it might be fun to hear from an insider about this prestigious outdoor competition. T&T MAG: How are contestants chosen? ADAM JUSTICE: Exhibited sculptures 38

are chosen from a pool of nationwide submissions. Each artist is permitted to submit up to three sculptures. Once the deadline is past, members from the museum staff and arts community meet with representatives from the three cities involved to score and rank each individual sculpture. After tallying the initial scores, the top 36 sculptures are reviewed and distributed among the three locations based on criteria involving space, installation logistics, and general interest from city representatives. Although only 30 of the 36 are chosen, we always retain two sculptures per city as alternates in case some pieces are unavailable by the time of installation.

T&T MAG: What are the judging criteria? ADAM JUSTICE: Each sculpture is scored by the jury of museum, arts community, and city representatives. The scoring system includes a scale from 1 to 7, with no one allowed to use 4 (everyone has to be on one side of the scale or the other). Criteria related to the creativity and originality of each sculpture is taken into consideration. But, installation logistics, safety concerns, and spatial requirements are also discussed. T&T MAG: You added Sebring not long ago. Tell us about that. ADAM JUSTICE: Two years ago representatives from the City of Sebring asked to meet with me and Claire Orologas to discuss their participation in the Florida Outdoor

Sculpture Competition. Last year was their inaugural year and they chose five sculptures to exhibit. This year, they had an increased budget to work with and chose nine sculptures. It’s been great to expand the Florida Outdoor Sculpture Competition and Sebring has been so open and easy to work with. They truly have a vision for Sebring and are eager to incorporate the arts as an important part of that vision. We are so happy that we can assist them move toward seeing that vision into fruition. Adding Sebring has also allowed us to expand the sculpture competition beyond Polk County, allowing us to more broadly emphasize the beauty and importance of public art. T&T MAG: Lastly, talk about the exchange of the myriad of artists being represented from their states to ours. ADAM JUSTICE: We have a nationwide prospectus that goes out every year. We always receive submissions by artists from all over the country. Not only is it rewarding to help connect our community with changing exhibitions of public art, but it is equally rewarding to connect our audiences with artists from around the country. It is always exciting to see how all of the artists ultimately incorporate aspects of their own regional aesthetics into their work.

T&T MAG: Anything else you’d like to add? ADAM JUSTICE: Although the Polk Museum of Art organizes and facilitates the Florida Outdoor Sculpture Competition, we

certainly couldn’t do it without the dedication and support from Lakeland, Winter Haven, and Sebring. The representatives we work with from those cities, the citizens, and the community as a whole, really make all of this possible. And we admire their dedication to cultural enrichment by providing and supporting public art. Please take a stroll or a drive to see these unique visions that will only be here for a year. You will appreciate the work it takes to transport and transform these exhibits. Along with the Polk Museum of Art, sponsors such as ENVISORS, Polk State College, Chastain-Skillman, Kerry and Buffy Wilson, Six/Ten, The City of Winter Haven, Food Partners and more make this all possible.
