CELEBRATE AT A LOCAL MEXICAN RESTAURANT
What’s a better way to celebrate Cinco de Mayo than eating tacos and drinking tequila? Mexican food and drinks are as much a staple of the holiday as egg nog and ham is to Christmas.
Fortunately, there are plenty of Mexican restaurants across Polk County that serve authentic Mexican cuisine. And many of them serve drink and menu specials during Cinco de Mayo.
For example, Locorrito in Lake Wales often serves menu specials during the big day. And since they recently received their beer and wine license, they are expecting to start offering drink specials as well.
Meanwhile, at Plaza Mexico in Lakeland, they will be serving small house margarita specials for $6.25 and shots of house tequila for $4.99 during this year’s celebration.
Other local Mexican eateries include Abuelo’s Mexican Restaurant at Lakeside Village in Lakeland, Azteca D’ Oro in Winter Haven, and La Fiesta Mexicana Restaurant in Haines City. Check the sidebar for locations and operating hours.
CELEBRATE DOS DE MAYO
AT FIRST FRIDAY IN LAKELAND
Want to celebrate Cinco de Mayo early? Then come on down to First Friday in Lakeland to celebrate Dos de Mayo!
Yes, as the name implies, the event offers all of the festivities associated with Cinco de Mayo three days early on the Friday before.
Hosted by Downtown Lakeland during their monthly First Fridays event, Dos de Mayo will be offering live entertainment provided by the RP Funding Center. Festivities will include a live mariachi band, as well as drink and food samples
provided throughout Munn Park.
First Fridays, as the name implies, showcases more than 150 vendors during the market hosted on the first Friday of every month. More than 7,000 attendees from within and outside the city frequent the monthly event.
Eric Michaels, Marketing and Event Director, encourages people who have never attended to attend. Why? Well, first and foremost, because it’s free and fun!
“And it is just a great way to mingle on a Friday night,” he said. “We have eateries and bars that remain open late. So it is a great opportunity to grab some food and see what the various vendors and businesses are available here in Lakeland and Polk County. So, it is really fun, it feels like a small-town event, and yet it has grown to be this huge thing that still has its small-town feel.”
Dos de Mayo, as the name implies, will be hosted on Fri. May 2 from 6 PM to 9 PM at Lake Munn Park in Downtown Lakeland.

RACE IN THE 3RD ANNUAL MARGARITA RUN 5K
Some people choose to consume calories with tacos and margaritas on Cinco de Mayo (or rather, Drinko de Mayo). However, if you’d prefer to burn calories, then consider participating in the 3rd Annual Margarita Run 5k.
Hosted at Camp Margaritaville RV Resort & Cabana Cabins in Auburndale (361 Denton Avenue), this annual 5K Run and 1 Mile Run allows participants to jog around the scenic resort and adjourning and Lake Myrtle Park.
After sweating it out, cool off and refresh afterward during the after-party with some margaritas and live music entertainment provided by a DJ. And, of course, don’t forget: you also get a free t-shirt to show you went the mile.

Translates to "Fifth of May," is the celebration of the Mexican army's victory over the French at the Battle of Puebla on May 5, 1862, and while it's not a national holiday in Mexico, it's a significant event that halted the French advance and boosted Mexican morale, not Mexico's independence, which is celebrated on September 16. It's a cultural celebration, especially in the US, that honors Mexican heritage and pride.

The Ashley Gibson Barnett Museum of Art (The AGB) at Florida Southern College is excited to unveil Emma Holland as the Featured Poster Artist for its 2025 Mayfaire by-the-Lake celebration.
Entering its 53rd year, The AGB’s Mayfaire fine art festival is an annual Mother’s Day Weekend tradition and will be presented by Citizens Bank & Trust and The Ruthvens on the shores of Lake Morton in Lakeland from May 10 to May 11, 2025.
Each year, Mayfaire selects an artist who has exhibited at the festival to create a featured image. This artist is tasked with designing a timeless icon that will grace posters, T-shirts, and banners, capturing the essence of one of the region’s—and the country’s—premier art festivals. Emma Holland, this year’s featured artist, is known for her striking animal portraits and innovative mixed media techniques. Her work captures the essence of Mayfaire — and Lake Morton’s signature swans — through her signature blend of realism and expressionism.
“For 53 years now, the swan has become the symbol of Mayfaire, much as it has of Lakeland itself,” said Dr. Alex Rich, executive director and chief curator of The AGB. “With Emma’s unique take on our city’s storied avian emblems, we keep the tradition going and continue to champion the talents of both emerging and established artists.”
A celebrated artist based in Largo, Florida, Holland is best known for her captivating animal portraits, and her commissioned works are found in private collections across the United States. Her artistic range extends to portraiture and has earned her recognition as a member of the Portrait Society of America. Throughout her career, Holland has also won numerous awards in juried shows throughout Florida. She has also
studied at the Dunedin Fine Arts Center and Morean Art Center in St. Petersburg.
“We chose Emma Holland as this year's poster artist because we loved her unique style of capturing the swans on Lake Morton while incorporating the surrounding gardens,” said Joy Williams, Mayfaire coordinator. “Emma is a new artist to Mayfaire and we were captured with her vibrant colors and use of mixed media within her artwork."
For the 2025 Mayfaire by-theLake, Holland has created “Swan’s Special Garden,” featuring an elegant swan set against a lush green backdrop, adorned with roses and other delicate florals. Holland’s use of mixed media — including oil paint, acrylic, art paper, wallpaper, and colored ink — adds depth and texture to the work, making it a visually stunning and emotionally resonant centerpiece for this year’s festival.
Holland’s featured artwork will be showcased on all official Mayfaire by-the-Lake 2025 promotional materials, including posters, T-shirts, and other festival merchandise.

99TH ANNUAL EASTER SUNRISE SERVICE
Bok Tower Gardens Sunday, April 20
Bok Tower Gardens invites the community to worship in person at the 99th Annual Easter Sunrise Service on Sunday, April 20, at 7:00 a.m. with free admission from 6:00 a.m. to 8:00 a.m.
This year's service will feature a message from Reverend Mackay Smith of First Presbyterian Church of Lake Wales.
The 99th Easter Sunrise Service will feature special music performed by world-class cellist and Rotary International Peace Fellow Diego Carneiro. Diego is a celebrated Brazilian cellist, conductor, and peace advocate renowned for blending his passion for music with his commitment to global peace. A Rotary Peace Fellow, Diego uses his talent to foster global understanding and healing through his performances and music-related projects.
Bok Tower Gardens' Carillonneur Geert D'hollander will begin the celebration at 6:30 a.m. with seasonal compositions performed on the 60-bell Singing Tower carillon. Bagpiper Ben Pugh will perform the processional, and Dr. Jonathan Reed of Lake Wales will be the piano accompanist. The service will conclude with a carillon bell finale.
An annual tradition, worshipers are invited to experience the majesty of the sun rising over the horizon atop Iron Mountain. The Entrance Gate, Visitor Center, and The Shop at Bok will open at 6:00 a.m. Donations are encouraged.
Please note: shuttle service will not be available. Attendees are encouraged to bring personal wheelchairs or mobility carts. Dogs are also not permitted at the service; however, they are welcome to enter the Gardens after 8 a.m.
The Blue Palmetto Cafe at Bok Tower Gardens will offer an Easter Breakfast Buffet for $21 adults and $11 children (2-12). The buffet is
available for pre-purchase online at boktowergardens.org and served from 7:30 a.m. to 9:30 a.m.
The Easter Sunrise Service has been an annual tradition since April 17, 1927, making it the longest continuously running event at Bok Tower Gardens. Reverend G.W.R. Cadman formally dedicated the Sanctuary during the first service. The son of Gardens' founder, Curtis Bok, said the service "quite literally helps the sun get over the horizon on Easter morning."
After 8:00 a.m., general admission to the Gardens is $20 for adults and $10 for children ages 6-17. Members and children five and under are admitted for free. El Retiro will be open from 10:00 a.m. - 4:00 p.m., and tours of the historic home can be purchased for an additional fee.

I Don't Know How to Make You Change Your Mind

Once I believed the hardest part about being a writer wasn't writing or even getting people to read what you have written, but making them understand and believe what you have written.
Now, I know the actual hardest part about writing is realizing you can never make readers believe what you want them to believe, even if it were true without a shadow of a doubt.
Many aspiring writers want to know the secret of writing a flawless argumentative essay. They want to know how to use their writing to change another person's mind. And the sad truth is—you can't!
And what evidence did they have that dogs and cats were being eaten? None whatsoever! In fact, the entire moral panic was started by a single social media post written by a Springfield woman who admitted that what she wrote was wrong and unfounded.
And yet, that didn't stop Springfield schools and hospitals from receiving bomb threats. That didn't stop Haitian immigrants from being harassed. And it certainly didn't stop Trump and Vance from being elected, despite spreading a lie that was revealed to be a lie.
Or how about the rumor that schools were providing litter boxes in bathrooms to students who "identify as cats"? That rumor also spread like wildfire across social media.

You can write the most air-tight argument, back up every claim with proper citations, and rebuff every potential criticism or counter-argument. You can defend your opinion with logic, reason, and evidence. And yet, even then, you can never truly change another person's mind.
As the old saying goes: you can lead a horse to water, but you can't make them drink. Likewise, you can lead someone to a good opinion, but you can't make them think. Because unless that person is willing to have their mind changed, you can't change it for them.
Sadly, it seems too many folks are not only unwilling to entertain the notion of changing their minds, but they've vacuumed-sealed their brains to deflect any facts or logic that might cause them to consider changing their minds.
They're right. Everyone else is wrong. Case closed. (Or rather, mind closed!)
Take the last election, for example. So many people were sure that pets were being rounded up and eaten by Haitian immigrants. Even Trump and Vance claimed this was happening. "They're eating the dogs! They're eating the cats!"
And what evidence was there that students were identifying as cats and using litter boxes in school? Again, none whatsoever! Not a single photo. Not a single video clip. Not a single testimony from a student coming forward about their feline identity.
And yet, just recently, a Texas legislator introduced a bill called the FURRIES Act that would ban "non-human behavior" in public schools including the use of litter boxes. And all over a litter box that was never proven to have been used in an actual school.
How do you tell people dogs and cats aren't being eaten by Haitian immigrants? How do you tell them kids aren't using litter boxes in school? How do you tell them what they think is true isn't?
Again, you can't. They first need to care about the truth. And sadly, a lot of people don't care about the truth. You can't change their minds unless they want their minds to change. And sadly, many don't.
