Vacation My Butt As I have done in the past, I’m going to pull from my experiences from a vacation for inspiration in writing this article. I wonder if I could just say that I took this most recent trip for the sole purpose of writing this article, and then I could write it off as a business expense on my taxes. If you are reading this and you work for the IRS, please stop reading now, and forget you even saw this. As it goes, my wife wanted to take a mini-vacation, which sounded pretty good, but mini vacations don’t exactly come with mini costs. Actually, they come with many costs. In hindsight, I’d have to say my wife’s line of thinking is, “Hey, we’re only going to stay at a hotel for a shorter-than-usual time, so let’s stay at a more expensive hotel.” In our family, the typical rule of thumb is that she can spend what she wants, but I don’t want to know about it. Even if I suspect a room might cost $200 a night, I don’t want the confirmation. As long as there is no confirmation, there is still a chance (in my mind) that she got a really good deal somehow. My son is well aware of this rule, and being the nine-year-old punk that he is, he likes to have fun with it. If he happens to see the receipt at dinner, he will make sure that Daddy knows exactly what we’re paying. NOTE TO MY SON: Daddy is keeping track of stuff like this, and it will come back to haunt you later in life when you’re trying to impress girls. We started our “vacation” by going to spend the night with some of my in-laws. Seriously, this is how my wife wanted to start our vacation. I guess she figures it makes sense to stress me out to the maximum so once we get to our vacation destination, I will totally unwind and enjoy the time away so much more. The silver lining to this part of our vacation is that we didn’t have to pay money to stay in a hotel or for dinner. The next day, we made it to our destination, Daytona Beach. My wife booked a Hilton hotel right on the beach. That sounds expensive to me. I know it was expensive. Not feeling that relaxed-no-worries state of mind yet. When we arrived at the hotel, I immediately realize that it’s a Hilton.

Nothing against Hilton, but just the thought of my money going to someone like Paris Hilton makes me cringe. The only thing that could make me feel worse is if this was a hotel owned by the Kardashians. Our parking choices were this: pay to park on an unsecured lot a block away, or pay a little more for a secured lot on the hotel grounds and for valet service. My wife tells me it will be smarter to do the valet service. All I could translate was “Valet… we’ll have to tip”. I have to admit, being right next to the ocean is relaxing for me. I love the sound of the ocean, love the view, enjoyed the early morning sunrises. On the flip side, I do not like swimming in the ocean. The feeling of salt water drying into a sticky abrasive film on my skin drives me bonkers. And don’t even get me started on the fact that fish (and some people) pee in there. This being Daytona Beach, there was an abundance of women in the smallest bikinis known to mankind, and man those were kind to this man. It’s almost like going to Hooters without having to pay for lunch. Day three of our mini-vacation, and I’m starting to relax and enjoy the time away. Then she informs me that it’s time to leave. And of course, to get home, we have to drive on I-4. Welcome back stress. I did not miss you.

By Amy Sumerlin Jennie Harrison makes multi-tasking look easy. During one of our conversations, she took an order from a customer, filled it, and never missed a beat with our conversation. “They call me a ‘Jen’ of all trades,” she began, explaining that owning a café was definitely not her first career. A licensed massage therapist and aesthetician, she has “years of experience in both the body and beauty industries, and the restaurant/bar industry.” Healthy eating – and juices especially – became a focus for her after her mother was diagnosed with lung cancer in 2007. “We wanted her to eat as healthy as possible, but we had to travel out of town to go to juice bars.” Sadly, her mother succumbed to lung cancer in 2009, but this made her even more committed to eating healthy personally. So, in 2013, Jennie decided to combine this passion and the two industries with which she was most familiar, and she opened Bambu Body Bar. Opened in a small, 750 sq. ft. building on 2nd St SW in Winter Haven, Bambu offered juices, massages, and facials. It didn’t take long for Harrison to figure out that the demand was for the juices and, perhaps, even more healthy food options. “My customAPRIL 2018

ers kept asking for an expanded menu,” she remembered. “It was really too noisy in there for massages anyway,” she continued, “so we took out a wall and expanded the kitchen.” Immediately, Harrison added healthy soups and sandwiches to her menu. “I love to offer healthy versions of the sandwiches you remember from your childhood.” The expanded menu significantly increased demand, and Harrison knew it was time to make a move. “In August 2016, I was able to obtain a wonderful, historic location,” she said, describing the new location in Winter Haven’s Olde Towne Square. After six months of renovations, the 2500 sq. ft. location was ready for customers. With the move also came a new name to better represent the new operation: And Bambu Café was born. THE MENU

Bambu offers made to order juices, infused waters, and real fruit and veggie smoothies. If you want something a little heartier, chicken, egg, and tuna salads are made in house daily. Even the nut butters (peanut and almond) and the dressings – which are gluten free, of course – are made in-house, with no partially hydrogenated oils. “One thing that sets us apart is that our chicken is hormone and antibiotic free, and we use local, free-range eggs,” she explained. 8 APRIL 2018

Soups (including a number of vegan options) also are house made, with organic broths and vegetables; most are dairy-free and low sodium. For those of us in a hurry, Harrison recently purchased a new refrigerated case for vegan, gluten-free take and go options. You’ll also find a healthy dessert options, including chia pudding, and what Harrison called “little baby desserts”, and of course they too are vegan and gluten free. Eat at Bambu often? Grab one of their loyalty cards, which allow patrons to build up points for freebies and discounts.

Harrison plans to expand her hours of operation (she is currently open Mon – Fri, 10AM to 5 PM), and also hopes to continue expanding Bambu’s menu. When I asked when she plans

to expand those hours, she said, “Probably when I receive my liquor license, which I am working on now.” Yes, you read that right. “I plan to offer healthy, fruitand-herb infused cocktails and organic beer and wine.” Sign me up for that loyalty card. I didn’t need to make a special trip to Bambu for this article – I think of it regularly for lunch, whenever I am in the area, including about a week ago. And I admit: The first thing I think about when I plan to eat there is her Reese’s Cup smoothie ($5.00 for a small). That’s largely because I know that Reese’s Peanut Butter Cups – and let’s not even get started about Reese’s Easter Eggs – will be the downfall of my girlish figure. Thankfully, though, Harrison gives me a healthier-but-still-delicious option (her smoothie is made from banana, organic peanut butter, and chocolate almond milk). But I’m a big girl, and sometimes I go for more protein-packed options such as the chipotle tuna over greens ($7.50), because I enjoy its just-a-littlespicy taste, and the chipotle

up the entire body of selective exposure theory and begins to illustrate another powerful social media theory known as cognitive dissonance. Replace the words “cognitive dissonance” with “thought discomfort” and you have a basic understanding of the psychology behind the theory. As humans and communicators, we limit our exposure to thoughts and ideas that cause mental discomfort, preferring the safety of information that aligns with our adopted worldview. We seek to minimize our access to debate in an effort to reduce the possible emotional irritation and uneasiness. Science is predicting the motivation behind our behaviors with the same accuracy as the child in the story who shouts out “he has no clothes on.” Our current state of affairs boils down to one decision. We can continue to let special interest shape our narrative or we can allow the communication of new ideas and voices. The recent student marches are starting a conversation that is uncomfortable, and possibly even cognitively crippling for a few, but very necessary to positive change. Killing It In The Kitchen by James Coulter One Friday evening, in a small restaurant in Downtown Lakeland, more than a dozen people gathered to enjoy a combination of both saucy food and music. As patrons licked the sauce off of their barbecue ribs, they enjoyed saucy tunes licked from the guitar strings of an acoustic duo performing that evening. The two guitarists stood within the corner of the restaurant, illuminated with the low lighting of string lights hanging 10 APRIL 2018

from the rafters above. As the two played their music, they performed not only for the live audience in the restaurant, but also their virtual audience watching online via Facebook live stream. After each song, the lead singer, Billy Floyd, would discuss the food items prepared by the restaurant’s owner, Joel Vann, who helped showcase the food to the audience both live and online.

Such menu items ranged from boiled peanuts prepared with a special rub for five hours until golden perfection, to homemade potato salad prepared with chicken bouillon. The potato salad especially tasted so good that it made the other half of the duo, The Commodore, contemplate life, Floyd told the audience that evening. Such performances are common with the acoustic duo,

the Kitchen Killaz, which tours kitchens and restaurants around the country to perform music and highlight good eats. Floyd loves to play music. He also loves to cook and enjoy good food. But since he can’t do both at the same time, he does the next best thing, which is to perform music while others cook good food. Each week during their live stream show, Floyd and the Commodore will visit a culinary artist who will prepare food while the two perform music, with songs based on what the host likes or what they’re preparing. Even if the host isn’t interested in cooking anything, the duo will be more than willing to perform and have their traveling “Mad Scientist from Maryland” Dennis Cutter cook

something up for them. The show airs live, which means everything happens spontaneously and unscripted, so regular viewers never know what to expect with a different show each and every week. “Every Friday is a different kitchen, a different menu, a different host, and different music,” Floyd said. “So it is never the same show twice, and I think our experience has allowed us to operate on the spot, be able to make spontaneous decisions, and move the show forward in a positive way.” Floyd has been performing music for 20 years in the entertainment industry. As someone who’s resided in Davenport for six years, he’s performed in Polk County for nearly a decade. Wanting to escape the rat race and the need to compete with other bands for venues in Central Florida, Floyd turned to the internet for an escape with plans of utilizing social media as an alternative. This new venture into cyberspace began last August when he and his friends decided to

steam a musical performance live from random rooms in his house until finally settling for the kitchen. “We realized that when we played in the kitchen, we started getting a lot of people jumping in. And so we decided not to stop playing until we fell beneath 20 viewers,” he said. His band played for two and a half hours that night, and performed once again the following week in the same location,

which garnered them the name “Kitchen Killaz”, a name which has stuck with them ever since. Since then, the duo have been performing every Friday night from a different kitchen. What started as two close friends performing in the kitchen of their own house has soon grown into an internet sensation with shows streamed live from locations all over the country. Every show draws in two distinct audiences: a live audi-

ence, usually a small gathering of people who gather in person, and a virtual audience on social media who watch via their Facebook stream. By far their virtual audience has allowed them to remain as successful as they have been within the past year, as their regular viewers have formed almost a small community around them within the group chat, and has allowed them to go viral. “This was really never planned,” he said. “We never got this idea in our heads to be the Kitchen Killaz. We just play music, and we started to realize that we could build a community on its own.” Though Floyd never had real plans to start such a sensation, he does have great expectations to keep it going with more music, locations, friends, and even more fun times. 7 RIVERS WATER FESTIVAL At Haines City’s free 7 Rivers Water Festival you’ll learn about water conservation and protection May 5 at Lake Eva Park. “Our target is to reach 2,000 people each year in a coordinated, county-wide effort,” says Jacqueline Hollister, with Polk County Utilities. The purpose of the event is to allow participants to find their comfort zone for promoting environmental

Winter Haven will be focusing on cleaning up its Chain of Lakes on April 28. This is the 29th year for Project E.A.G.L.E. (Enhancing A Great Living Environment) sponsored by Keep Winter Haven Clean and Beautiful and the City of Winter Haven. Activities include collections of litter and debris in the water and along the shoreline. Volunteers will walk the shorelines as well as use kayaks and boats from 8 a.m. to 2 p.m. meeting at Lake Shipp Park. Torah! “We think this will be bigger and better than ever,” explained Carol Cali, Marketing Director. “The past, present, and future of aviation will be here...If you are a big aviation buff, there are tons and tons of planes.” This week-long event serves as the main fundraiser for the Aerospace Center for Excellence (ACE), a museum and education center located within the 25-acre Sun n’ Fun campus near Lakeland Linder Regional Airport. ACE hosts the Lakeland Aero Club, the largest high school flying club in the nation, as well as the Central Florida Aerospace Academy, which, a with Kathleen High School, provides classes and programs designed to inspire young aviators. Through such outreach programs, ACE reaches out to 20,000 youth and offers $30,000 in scholarships, which, over the past five years, have allowed 63 high schoolers to become private pilots and 18 to receive their Airframe and/or Powerplant (A&P) certification, thus helping inspire the next generation of fliers, Cali said.

learn the basics of seaplane flying. As such, more than 17,000 seaplane pilots from all over the world have earned their wings through Brown’s Seaplane Base in Winter Haven. For more than 50 years, the base along Lake Jessie has helped preserve the proud tradition of seaplane aviation, which was a personal passion of its original owner, Jack Brown.

A former fixed base (FBO) operator at the Winter Haven airport, Brown had a passion for seaplane aviation that carried on into his WWII military career, where he piloted such aircraft as the Grumman “Flying Boats.” His oldest son, Jon, continues his legacy by helping pilots obtain their seaplane rating for their license. “As much as this is a business, it is also a place where you will come as a stranger, leave as a friend, and know you are always welcome to return,” its website states.

I’ve had an Amazon Echo since Christmas, and I’ve only plugged it in once. Voice technology is the future--heck, it’s the present. I’m just going to have to get comfortable with a talking robot listening to my every word, eventually we all are. You can even stream your hometown country station 97.5 on your Echo. Just say “Alexa, enable WPCV.” Then, anytime you want to tune us in say “Alexa, play WPCV.” Within five years, everyone is going to be ordering hot wings while relaxing in their bed just by talking to an appliance (completely hands free). Your takeout order will be drone dropped to your doorstep, side of ranch and all! What a great time to be alive. The world changes--people change. Seasons Change; which is the title of Scotty McCreery’s new album that debuted at number one on the Billboard country sales chart back in March. Spring is here, and with it, rebirth and growth. Seasons Change signifies the turning point in McCreery’s career. His past struggles were, in part, due to recording songs that just didn’t fit who he is as an artist or a person. It’s important to remember that McCreery is only twenty-four years old. He was just sixteen during his season on American Idol. Despite being in the limelight for the past eight years, I feel we’ve been left wondering just who is Scotty McCreery? He finally got the formula refined and is hitting his stride after lots of trial and error--and a new record label. The time taken to develop his sound and persona is evident in this release. The entire album feels familiar, which radio loves. Genuine stories shine through. “In Between” is authentic, honest, and relatable, the best representation of McCreery yet. “Barefootin” is a shagging song. No, no, not like Austin Powers. Shagging is a term folks on the Carolina coast use for dancing on the weekends after an oyster roast (linen pants and floral patterned shirts are the pre-

There will always be country songs about where the heart is, and “Home In My Mind” delivers all the feels of a road weary McCreery. Scotty’s vocals are more refined, his Carolina twang dialed back a notch or two. He seems more confident, sure of himself as an artist and a man. Reminiscing, nostalgia, and longing for the good ole days are all central themes throughout the history of the genre. Country music is deeply rooted with romanticizing the past, but McCreery walks that line while embracing the future with Seasons Change. Veterinarian of the Month Dr. Dunham graduated from Ohio State University School of Veterinary medicine in 1976. He was one of only three students from Florida accepted that year. He has practiced in Ohio, West Virginia, and has been in Winter Haven since 1981. Dr. Dunham was born and raised in Winter Haven, FL. He is married with five children. His interests include tennis, biking and spending time with his family. He has owned four animal hospitals over his 30 years of practice. His current practice interests include dogs, cats, exotics, birds and reptiles.
