by James Coulter What are you in the mood for dinner tonight? Pizza? Burgers? Burritos? Perhaps sushi or ramen? Can’t decide? None of your friends agree? Then drop by The Joinery in Lakeland and decide for yourself. With seven food vendors and a craft brewery bar, this modern food hall, located near Lake Mirror, offers a diverse selection from All-American burgers and fries to even ramen and “sushi burritos.” Whether you’re a vegan or vegetarian, gluten-free or dairy-free, The Joinery offers a little bit of anything and everything. “Everyone can have something,” said Jonathan Bucklew, the owner and founder. “And it is a place you can hang out for a long time and have a drink on the patio and enjoy the weather, and you don’t feel like you have to come in and eat and take off.”

Home Again

Jonathan and his wife, Sarah, previously spent 12 years traveling the road together. He played in a band. She worked for a software company. Together, they visited different places and ate at great restaurants. When they settled down in their hometown of Lakeland, they wanted to use their travel experiences to start their own business. They eventually decided on a food hall. The location they chose was previously owned by the Lakeland Brewing Company. Jon and Sarah both loved visiting the brewery. They used to sit on the patio and relax with a cold brew. They loved the setting so much they decided to use it for their new food hall and to incorporate a craft brewery into it. Their next step was to find aspiring restaurant owners to set up shop. That process proved harder than expected. “One of the hardest parts was to convince them to open a restaurant,” he said. “That was really challenging, but we brought in a lot of good eateries here who believed in the vision.”

Community Growth

Joining The Joinery allowed many local entrepreneurs to gain traction from potential customers outside of their venue. Laura Shannon opened Bloom Shakalaka as an extension of her event planning and design company, Ashton Events. For her events, she designed special floral designs that many clients requested for themselves. She set up shop in The Joinery to sell her arrangements. Despite opening two months before a pandemic, Bloom Shakalaka has now seen a steady increase in its business. They especially prove popular during major holidays like Mother’s Day, with many 6 MAY 2021

potential customers attracted by their seasonal displays. “The Joinery allows us to have a lot of community interaction,” she said. “It also fits our vibe that we have. We call our flower style funky and fresh, and we know that works well within their space. More than anything, The Joinery is something Lakeland needed, and it is fun to be a part of that.” Ryan Neal, the owner of Sabu Ramen, always had a passion for cooking. He especially loved Japanese culture and ramen. Both passions perfectly intertwined when he decided to open his ramen shop, one of the first of its kind in Lakeland. From tonkotsu to spicy miso, all of his ramen bowls are prepared from scratch. Ryan enjoys serving his food in a diverse environment, where customers can find anything that could tantalize their taste buds. He knows few people would walk into a specialty Asian-style eatery. So he appreciates being somewhere where people who would otherwise not try ramen can. “I think there is a lot of energy that it brings having multiple concepts, and I think it's just nice to be able to be in a place where people want to eat here,” he said. “There are a lot of picky eaters out there. They hear about the burger shop. They come in, and they see pictures of the ramen and sushi, and it helps expand their horizons and palettes a little bit, and ultimately leads people to try some things that they might not normally try.” Some vendors are run by locals, others by entrepreneurs out of town. Ferdian Jap, who runs Ato, lives in Tampa. His eatery, Ato, is an off-shoot of Zukku, a vendor he ran at local events and festivals. Ato serves poke bowls and sushi-ritos, sushilike wraps prepared from rice, veggies, and fish wrapped in seaweed like a burrito. He was inspired to create something similar to sushi that could be more easily enjoyed without sitting down with

chopsticks. He considered his food an excellent fit for The Joinery, especially after seeing how much passion the owners had for their establishment. “We believe in their vision and what The Joinery could be,” he said. “They did everything themselves, and we believe in that, their passion, and Lakeland. The city itself is growing. We believe in the area. That is what we wanted to do: we wanted to join in. It is an honor to be there.”

Rocky Start, Bright Future

The Joinery opened on Jan. 20, 2020. It closed 40 days later due to the COVID-19 crisis. The food hall eventually re-opened several months later. However, the lockdown forced one vendor, King’s State Coffee, to drop out. The vacancy was inevitably filled by Plenty. The current pandemic none withstanding, The Joinery slowly and steadily achieved popularity in the local community. When the food hall first opened, it experienced massive success, and since re-opening, it has begun to regain that same level of community support. After surviving a hard financial season, Jon hopes his establishment will only gain popularity. They plan on opening their craft brewery this fall. Overall, they hope to serve as a starting point for many aspiring business owners and a community gathering place for residents. “The reason we are coming back, and the reason people love coming to The Joinery, is because we are very community-focused,” Jon said. “This downtown location was really hungry for more unique small businesses, more artisan food experiences, a casual price point, a diversity of food options and fun atmosphere. I think the level of excellence that these eateries is in the food quality. I think it has drawn people into this space as well.”

– Achievement Academy’s 7th Annual “Top Chef of Polk County”. Participating Chefs’ Restaurants After much thought and consideration, Achievement Academy’s Board of Directors has decided to move the “Top Chef of Polk County” event from Monday, April 12th to Monday, May 17th. Due to COVID concerns, the location has changed from the RP Funding Center to participating chefs’ restaurants. This format will allow for a safe environment with only 25 guests per restaurant. We hope you will join us for a night of delicious food and fellowship while raising much-needed funds for children with special needs. Guests will enjoy a three-course meal that includes their chef’s signature dish accompanied by a wine or libation that complements the dish’s flavors. During the event, there will be an online silent auction. Achievement Academy will ask for each sponsor’s top three chef restaurant choices in hopes we pair you with your preference. A panel of judges will sample each chef’s creation the day of the event to award the “Top Chef of Polk County.” The chef who raises the most funds for Achievement Academy through their donated auction item(s) and online voting will earn the “Top Philanthropic Chef” award. I Am So Tired You know, I really hoped this year would be better. Considering how much 2020 was a raging dumpster fire—what with COVID-19, global warming, and the election—2021 had an extremely low bar to clear. Yet here we are: nearly halfway through the year, with a new president in office, and the world feels just as topsy-turvy as it was last year. I really wanted a fresh start. I wanted my column to be positive. I didn’t want to be yet another muckraking pundit who only complained about current events. Yet every month since this year started, something bad happened that compelled me to address it. In January, the Capitol was invaded by an angry mob because their Dear Leader lost the election. In February, Bruce Springsteen released a shmaltzy, tone-deaf Super Bowl Ad insisting “both sides” needed to “come together” and “meet in the middle”—even though one side clearly attempted to overthrow the government in a failed coup. And then, in March, some armed loser shot up several Atlanta spas, killing 8 people, mostly Asians. And then there was April. Where do I even begin? For starters, some GOP Congressmen had the bright idea to start an “America First” Caucus to protect “Anglo-Saxon political traditions” from “foreign citizens [being] imported en-masse.” (Coincidentally, “America First” was the name of a political group started in the 1940s by anti-Semitic Nazi sympathizers. But I’m sure that’s just a coincidence!) Then, following a nationwide trend of transphobic bills, our good old state of Florida proposed a bill that would force student athletes to undergo genital inspections if their gender was disputed. (The bill didn’t pass, but still.) And finally, not one, not two, but three—count them, three!—young people were shot dead by police: Daunte Wright, a 20-year-old black man; Ma’Khia Bryant, a 16-year-

old black girl; and Adam Toledo, a 13-year-old boy from Chicago, who was shot point blank after complying with a cop’s directive to put his hands up. Sigh. Why am I writing this? No. Seriously. Why? Obviously, because these monthly columns earn me money. But monetary gain aside, why else am I writing them? What’s the point? I could touch upon any of the aforementioned topics, elucidate how I feel about them, back up my sentiments with sound reasoning and citations, but in the end, why bother? People who already agree with me will simply nod their head while silently skimming my words. Those who disagree with me will ragequit after the first paragraph and send the angriest hate mail to my inbox. And even if, by some divine miracle, everyone agrees with everything I have to say, so what? Look, I have no illusion of grandeur. I know no one important reads my work. It’s not like some D.C. politician is going to read an op-ed in an entertainment magazine for a small Florida county and make an important decision based up it. I write something thoughtful and well-researched, it reaches a few hundred people. Meanwhile, Tucker Carlson can rant about Democrats replacing white voters with Mexican immigrants, or claim the COVID19 vaccine is a hoax, and his insane ramblings reach the eyes and ears of thousands of Fox News viewers. Meritocracy is a transparent lie. In the end, nothing I say is going to impact or influence the world. My platform doesn’t have that size or scope. It’s like nothing I say or do matters. Nothing is gained. Nothing is lost. Nothing changes. And I am so tired. So I have to ask myself: why am I doing this? Veterinarian of the Month Dr. Vargas received her DVM from Tuskegee University in 1994. In 1996, she established her AAHA accredited Orchid Springs Animal Hospital in Winter Haven, FL. In 2009, she began her studies at Chi Institute, eventually garnering certifications in Acupuncture, Chinese Herbal Medicine, Food therapy and Tui Na. She is also a fellow of the American Academy of Veterinary Acupunture. Dr. Vargas is pursuing her Master’s Degree in TCVM at Chi Institute, where she works as a Teacher Assistant and as a Lecturer for the Chi Latin America. She has also worked as a consultant for Disney Animal Kingdom. Dr. Vargas is also a Certified Veterinary Journalist and a prolific author of both scientific and motivational articles. Dr. Vargas has lectured at the World TCVM Congress (2015, 2016, 2017), AAVA Conference (2017), AVMA (2011), and the CbVMA (2017). She is a guest blogger for www. allthingshealing.com and a writer for Woman to Woman magazine and the Lakeland Ledger newspaper. Last year she contributed a chapter for Jack Canfield’s Amazon Best seller book “The Soul of Success”. She served as an AVMA Spokesperson for Hispanic market and has recorded many PSA’s and radio interviews promoting responsible

pet ownership. Her love for Traditional Chinese Veterinary Medicine manifested in her book: Alt-Vet: The Revolutionary Pet Care and Longevity Solution. She was honored by the American Veterinary Foundation as “America’s Favorite Veterinarian” in 2015. She lives in sunny Winter Haven, Florida, with her husband, two daughters and a menagerie of pets.
