The Chicken Chronicles Continue The greatness of a nation and its moral progress can be judged by the way its animals are treated. But great stories come out of great farming. —Joel Salatin When we first began the conversation to start our tiny, urban farm, never did we imagine how connected we would become to our flock of backyard chickens. The ritual of letting the chickens out of the coop and spreading the scratch has become my daily meditation. During my morning chores, I often find myself mindlessly noting how much the plants have grown, the smell of the earth and the number of songbirds that swoop down to steal away a few seeds. Each morning, Savannah who is our smallest hen and the pluckiest one of the bunch greets me by being the first one to jump off the roosting bar. As the runt, she endures the most of the bullying but she has learned that being the first chicken out of the coop gets the best sunflower seeds. I often hide a bit of scratch off to the side for her so she does not have to share with her sisters, Anna and Emily. These are the simple morning tasks that I find the most gratifying. What has not been simple this month is protecting our little flock from illness and predators. Charlotte
and Scarlett are our two oldest hens and we have aptly named them “the twisted sisters”. Charlotte is the largest hen in the flock and our most dependable bird and like her sister, Scarlett rarely gives us any concern. A few weeks ago, my husband Keith discovered Scarlett crumpled into a ball and unable to walk. He quickly examined her for injuries and thankfully, there were no wounds or signs of trauma. No amount of coaxing or tempting with treats could get her to stand and we were convinced Scarlett was a goner. Backyard farmers face the unique dilemmas. First finding a veterinarian that can provide avian care, second chickens are notoriously difficult to diagnose and third, how much money to spend on an animal that costs less than $5. Given the three scenarios listed, most farmers come to depend on each other and the internet for barnyard triage. With Scarlett safely resting in a special cage we use for quarantine, I received a bit of advice from our neighborhood expert Bryan and then I set out to try my hand at homespun avian first aid. It is quite ironic to come home with a bag of electrolytes and proteins that cost four times the amount we paid for our entire flock. We quickly administered the chicken Gatorade and provided new feed and our patient experienced a 100% recovery. We can now add dehydration to the list of chicken woes successfully weathered. Our little farm continues to surprise and delight us in ways we have not imagined. After a recent predator scare, we agreed on the potential benefits of temporarily housing the summer chicks in our formal dining room. Veterinarian of the Month Dr. Patricia Mattson came to Lakeland from Albnany, Georgia, her hometown. She grew up with a strong family background surrounded by hunting dogs and owned her own horse since the age of 10. She originally attended veterinary school with the goal of becoming an equine practitioner but opted for our small animal friends instead. She graduated from Auburn University College of Veterinary Medicine in 1993. After working for one year in Georgia, Dr. Mattson decided to return to sunny Florida where she worked for various clinics over the past eighteen years. She opened Companion Animal Hospital in 2009 where she strives to have a great facility with a caring and friendly staff.

MISSION BBQ Now Open In Lakeland
By Amy Sumerlin It was pouring down rain the night my husband and I ventured out to try the new Mission BBQ in Lakeland. We couldn’t believe our luck when we saw that there was an open parking spot right by the door. As we got closer, though, we saw that was reserved for “Veterans Only”. Despite the trek in the rain that was now required, it was just fine with us. PULLED PORK & PATRIOTISM
For the uninitiated (which I was), Mission BBQ honors service members, veterans and first responders – everywhere you look upon entry, you see photos of uniform-clad men and women sharing wall space with hundreds of patches representing military units, police departments and fire-rescue companies. Every day at noon, diners stand up from the wooden booths and workers pause from smoking pork and beef in the open kitchen while the national anthem plays. On May 21, Lakeland’s Mission BBQ was
the 65th location to open, and each one of them is privately owned by the pair who came up with the concept: Bill Kraus, a
former Under Armour marketing executive
and Steve Newton, a veteran of the restaurant industry.
The story goes that Kraus, and Newton,

and we were reminded that the American spirit is as strong as steel.”

I chose the Brisket ($8.79) – because I am
a firm believer that doing Brisket right – it’s often a tough cut of meat – is the sign of an awesome restaurant. I also added one bone of their spare ribs ($2.19) – and loved that purchasing it by the bone was an option.
As I walked toward the end of the counter,
I passed by one of their Managers, Deb
Johnson – friendly, perky, and intuitive: “First time here?” she asked, with a broad smile. “Everything is homemade, dry rub, smoked all night, no microwaves, no freezers.” The service was extraordinarily quick, and Johnson checked in on us again (and no, she didn’t know I was writing this article. Yet.) “Do you know about our sauces?” pointing to the choices on our table, which included Tupelo Honey Heat, a citrusy Florida option, and an Alabama white that might make Tuscaloosa’s Dreamland proud. When I asked about a vinegar-based sauce, she brought out a few more for us to try, including Carolina Vinegar. Everything we chose was just downright delicious – and I’ve lived in the South long enough to be downright picky about my barbecue. As expected, the Jalapeno and Cheese Sausage had quite a bite – but not so much that my mouth was on fire the rest of the night. The pulled pork – yes, I stole some from my hubby – was succulent, with just the right amount of smoky flavor. The rib? Fell off the bone as I was picking it up, which is just the way I like it. And oh yes, the brisket: That hunk of protein was tender, juicy, and flavorful – it passed my test. Before I could say no with all of the typical excuses, mostly time and money, he informed me that my dad offered to pay for my airfare as an early birthday present; a ticket to England and a ticket to Italy. My mom paid to have my passport card upgraded to a full passport as part of my birthday present as well. I mean, who could turn down birthday presents like that! As June finally approached and the days started ticking by, my trip was almost here. So much planning and packing plus keeping up with my work schedule. My friends that all travel to Europe and beyond on a regular basis were all so excited for me – many shocked that I was actually taking time off. In fact, I am actually taking 16 days; ten of which will be in Italy split between Naples and Positano. My brother plays International Travel Softball and as luck has it, one of his big tournaments is in Naples, Italy. As I write this, I am on my eighthour flight to England. History of Bartending As Far Back as the History of Beer Itself
By James Coulter Ever since man first started brewing beer, he has always downed a cold one after a long day, and serving him has always been a friendly face. For our 15th annual “Polk County’s Beloved Bartender” issue, let’s take a look back at the rich history of bars and the bartenders who tended them: THE EARLY BEGINNINGS
The history of bartending goes as far back as the history of beer itself, which first began being brewed in ancient Mesopotamia. The earliest record of beer-making appears on a 3900-year-old Sumerian tab-
let, containing a recipe for beer made from barley, along with a poem honoring the goddess of brewing, Ninkasi. With the creation of alcoholic beverages came the occupation of people serving them. Expert craftsman produced and served drinks as far back as ancient Greece and Rome. Throughout medieval Europe, most bartenders were alehouse owners and innkeepers. So rich they became producing and selling their own brews that their wealth rivaled that of most kings. “Bartenders and bar owners were considered members of the economic and social elite. They owned property and were recognized as part of one of the wealthiest trades of all time.” wrote Tony Sylvester,
Owner and CEO of ABC Bartending Schools. These brews were consumed in public drinking houses (or pubs), which became popular social places, especially for poets, politicians, and other intellectuals. This Old World tradition inevitably made its way to the New World, where it branched out west with the rest of country. THE OLD WEST
As Americans started moving west seeking fortune in gold mining and fur trapping, so too followed the bartender seeking fortune wetting said pioneers’ whistles. This westward expansion saw the establishment of the iconic saloon, the very first of which opened in 1822 at Brown’s Hole, Wyoming. While pioneers drank their fill out West, back in the cities, workers drowned their sorrows after a long day in the factories, while the rich elite reveled in their wealth through finer drinks at finer establishments. During this time, bartending became better defined as a profession. Servers not only offered beer and whiskey, but learned to mix them into fancy concoctions known as cocktails. Jerry Thomas, who served in countless bars across Europe and America until his death in 1885, published the first cocktail book, “The Bon Vivant’s Companion”, in 1862. “The book is so useful that it’s still in print today and includes dozens of recipes,” wrote Anna Archibald on Liquor. com. Unfortunately, by the turn of the 20th Century, the increase of alcohol consumption brought about an increase of drunkenness and crime, which in turn provoked a backlash from teetotalers and prohibitionists. This backlash would inevitably influence government legislation, eventually resulting in the 18th Amendment, prohibiting the production of alcohol. THE PROHIBITION ERA

While alcohol was effectively outlawed, its production and sale was only pushed into the hands of outlaws. said. Prohibition not only saw a rise in popularity of alcoholic beverages, but also inspired famous cocktails like Gin and Tonic and Long Island Iced Tea. Following the repeal of Prohibition through the 21st Amendment in 1933, alcohol returned to the limelight of the mainstream. Many old bars and lounges re-opened. With the return of alcoholic beverages came an increased demand for more bartenders to serve them. THE MODERN ERA
The end of Prohibition saw the beginning of the first bartending schools. “The Reading Eagle” in 1934 reported that “bartender schools are mushrooming in the manor of Tom Thumb golf courses a while back.” Also started were popular trends such as Tiki bars, which served exotic Polynesian cocktails like Mai Tais. These exotic drinks and bars were first created by Ernest “Don the Beachcomber” Gantt and popularized by Victor “Trader Vic” Bergeron. This time period also saw the creation of popular cocktails such as the margarita, cosmopolitan, and screwdriver. These legendary drinks have equally legendary origins, as their true origins remain wrapped in mystery and myth. The margarita, for example, has as many “inventors” as it has regular drinkers. The
most famous was Carlos “Danny” Herrera, who allegedly first sold the drink at his Tijuana restaurant in 1938. “What inspired him? A picky dancer, it seems. Restaurant goer Marjorie King declared she was allergic to all spirits except tequila, but didn’t like to drink the spirit straight. So Herrera worked around the prototypical tequila shot (which is taken with salt and lime) and threw together the margarita,” wrote Aliza Kellerman on VicePair. com. Regardless of how these cocktails originated, their popularity remain strong to this day, and will continue to remain for as long as there are bartenders to serve them. entertainment and lifestyle news. In 2004, the very first edition of our magazine had a very
humble beginning with the layout being drafted at a kitchen table. 15 years later, we still
fondly reflect on those memories with kind
appreciation and gratitude to the professionals and fans that made our dreams possible.
Over the last decade, we have covered
many amazing events and stories from around Central Florida but each year we look forward to publishing our Beloved Bartender edition. This contest is possible because of our loyal
readers and fans that take the time to acknowledge the hardworking industry professionals from this noble profession. If you have the
chance, visit each one of our nominees for an out-of-this-world experience and say thank
you for their continued professionalism. Polk
County is an amazing destination and we are blessed to have this group of talented professionals in our backyard.
We want to take a moment and reflect on
the success of the last 15 years. It is funny
to think if our contest was a human baby it would be driving with a learner’s permit.

4Number of years you have worked as a bartender? 18 years. 4What is the secret to your success? Just be friendly and outgoing! But mostly I just try to be as real as possible; I think people appreciate that sentiment. 4What was one of the best days of your life? There have been four… each of the days my children were born. 4How long would you last in a zombie apocalypse? Ha ha, hopefully I would last for a while. Give me a machete and I’ll be good to go! I’m a mom of four! 4If you could ask advice from any historical figure, who would it be? What would you ask them? Maybe Leonardo da Vinci. I want to know all his secrets. But honestly, for some reason I’d probably pick Elvis and ask him what I should put on my bucket list! 4If you had a theme song, what would it be? That’s hard! I love music - all music. If I am alone in the car with the volume turned up, it would have to be Love The Lonely Out Of You by Brothers Osborne. When at work or getting ready for the day, I will listen to Maroon 5’s She Will Be Loved. I listen to both artists every day. 4If you could write one new law that citizens had to obey, what law would you create? Explain why. Don’t be an a**! Life is too short to be rude and mean. 4When you have 30 minutes of free time, how do you pass the time? Eat something! When I’m bored I eat. 4If you were given one thousand acres of land, what would you do with it? I’d build a huge house with a wrap around porch and live my life with my family. 4What was your favorite fairy tale or epic fantasy growing up? I didn’t have a fairy tale or fantasy. I wanted to be a marine biologist but now you couldn’t pay me to go in dark water. 4What is the most hilarious childhood memory you can think of? The things that are hilarious now, I am pretty sure led to being traumatized as a child. My dad used to scare the crap out of us kids and I
HATED it, and for the record I still hate it! However, I do it to my kids now (just not as bad). I guess the apple doesn’t fall far from the tree. 4If you had one day left to live on the Earth, what would you do? I’d invite everyone I love to the house and hang out all day reminiscing. I would want to spend my last day remembering all the happy moments I have experienced. 4Tell us about your signature cocktail. I’ve been told I make a kick butt Bloody Mary! And I love turning people on to Italian margaritas. 4Any final thoughts? Just that the owner of Grape Expectations (Randy) is a great boss! We all love him. He is a wonderful person to work for and I am grateful!

Bartending never really feels like work because all of our regulars are so much fun. They have become family. 4What was one of the best days of your life? Oh, this is a tough one. I would have to say either the day I got my perfect dog, Sam or the day I spent in the Ubud Monkey Forest in Bali. 4How long would you last in a zombie apocalypse? I would last a long as my dog does, because he would definitely protect me. I’m not a very good runner so I would be pretty dependent on him. I would definitely be on the lookout for a guy with a motorcycle and crossbow, too! 4If you could ask advice from any historical figure, who would it be? What would you ask them? I would ask Mahatma Ghandi how he found the strength and perseverance to fight non-violently on the political stage. We could all use some advice from him. 4If you had a theme song, what would it be? Don’t Stop Believing by Journey! 4If you could write one new law that everyone had to obey, what law would you create? Explain why. Men and women should be paid equally. I think that is self-explanatory.
4When you have 30 minutes of free time, how do you pass the time? Either taking a walk with my dog or watching a show on Bravo with my dog. 4If you were given one thousand acres of land, what would you do with it? I would have a dog rescue! I have always been a dog lover and it breaks my heart to know that there are so many dogs out there that need loving homes. I would love to provide shelter for them. 4What was your favorite fairy tale or epic fantasy growing up? Beauty and the Beast! It is still a personal favorite. 4What is the most hilarious childhood memory you can think of? It would have to be when my mom had some friends over and I ran into a sliding glass door that I thought was open. It is surprising I did not break glass with how hard I hit the door! It was really my Mom’s fault. She kept such a clean house and it was hard to tell if the door was open or closed! 4If you had one day left to live on the Earth, what would you do? I would spend it with my dog and my loved ones. Preferably in Bali on Echo beach! 4Tell us about your signature cocktail. As I work at a wine bar, I do not have a signature cocktail. However, my favorite wine served at Grape Expectations is our Rodney Strong Sauvignon Blanc. 4Any final thoughts? I am so incredibly thankful for this honor! I would not be here without our wonderful and loyal customers!

Well, I have a “jacked-up” knee, so I can’t run. Actually, I’d rather be a zombie and eat people. 4If you could ask advice from any historical figure, who would it be? What would you ask them? I don’t want advice but I’d like to talk to George Orwell about his view of what is going on in the world. It would definitely be an interesting conversation! 4If you had a theme song, what would it be? Mazzy Star—Fade Into You. I really love the song! If you could write one new law that everyone had to obey, what law would you create? Explain why. On the first day of the month, everyone would have to send me $1. Why? Because it is a “do-able” sce-
nario and it would be freaking awesome! 4When you have 30 minutes of free time, how do you pass the time? It is “kinda” boring but I am usually playing one of the many games on my phone. 4If you were given one thousand acres of land, what would you do with it? I would use half for an animal rescue and the other half to grow legal medical marijuana. 4What was your favorite fairy tale or epic fantasy growing up? I know this is a tad bit strange but I really loved Hansel and Gretel. 4What is the most hilarious childhood memory you can think of? I cannot think of one but I have lots of embarrassing adult stories and I will not incriminate myself! LOL! 4If you had one day left to live on the Earth, what would you do? Super corny but I’d spend it with my hubby and my amazing family. It wouldn’t matter what we did! 4Tell us about your signature cocktail. It doesn’t really have a name, lol! Imagine the combination of raspberry vodka, Blue Curaçao, sour mix, all mixed together with a Grenadine sinker. 4Any final thoughts? I want to thank everyone who voted for me. 4Number of years you have worked as a bartender? 10 years 4What is the secret to your success? Loving my job! I truly enjoy the people I have met and making so many great friends. Working here really puts a smile on my face. We have the best conversations whether we are talking about the weekend or who won the baseball game last night… these people are my family. 4What was one of the best days of your life? Last year when I turned 28, I’m sure people that don’t know will ask after reading this article, but that day truly changed my life with a chance I will never disappoint or forget. 4How long would you last in a zombie apocalypse? HA!! Me? Zombie? NO WAY! Maybe 7 minutes, enough time to have a heart attack. I cannot run longer than seven minutes. 4If you could ask advice from any historical figure, who would it be? What would you ask them? It would totally be Ellen DeGeneres. I’d immediately ask her to let me come dance on her show to my theme song. 4If you had a theme song, what would it be? Ghost town DJ’s My Boo. A few years back it was the song for a social media challenge called the “Running Man.” All the college teams and police departments were doing it, so I put a little green tutu on and preformed. Now every time the song plays I still get asked to dance. 4If you could write one new law that everyone had to
obey, what law would you create? Explain why. Simply love your pets. They are just as important as children. Abuse cannot stand! 4When you have 30 minutes of free time, how do you pass the time? Well, if you know me, I’ll either be eating or checking on sports update. 4If you were given one thousand acres of land, what would you do with it? Invest! I would build a nice getaway area for vacations and invest the rest. 4What was your favorite fairy tale or epic fantasy growing up? Totally The Little Mermaid, if I didn’t watch it twice a day it wasn’t a good day. 4What is the most hilarious childhood memory you can think of? I was attending an arts festival and my mom ordered me a delicious fried churro covered with powdered sugar. I sat down to eat it and the wind picked up leaving me with a solid face full of powdered sugar. I started crying but my Mom laughed hysterically. 4If you had one day left to live on the Earth, what would you do? Travel. I’d wake up to a nice brunch in Hawaii with mimosas then fly over to Bora Bora to enjoy the beach for the day. I would end the day with a romantic walk in Paris while looking at the Eiffel Tower with my better half and feeling loved. 4Tell us about your signature cocktail. It is your perfect summer time cocktail and it is called a Cucumber Gimlet. The recipe is my secret! 4Any final thoughts? Come visit me at The Apple. For both our weekly regulars and first time customers, I do my very best to go above and beyond with a smile on my face. 4What was one of the best days of your life? Hands down, the day my son was born. He turned my life around for the better. He is my little man and the reason why I try so hard. I can’t imagine my life without him. When I’m not at work, he is the one I spend my time with. I would not have it any other way. 4How long would you last in a zombie apocalypse? Honestly, 3 seconds! I am lazy and I would not be able to run for that long. 4If you could ask advice from any historical figure, who would it be? What would you ask them? I would ask Meghan Markle how to find me a prince! Lol 4If you had a theme song, what would it be? I was named after the song Layla by Eric Clapton, so I “kinda” already have one. Ha ha, the song is played almost every time I work. 4If you could write one new law that everyone had to obey, what law would you create? Explain why. Actually, I have thought about this for a long time. In my opinion, every citizen should be required to work in the hospitality business. Some people don’t know what we as customer service providers, bartenders

and servers experience on a daily basis. It’s a hard job and not for the faint of heart. It would make our society better and more tolerable. Cheers to all of us in the hospitality industry! 4When you have 30 minutes of free time, how do you pass the time? My free time consists of naps, cleaning, and decorating my home. I’m obsessed with shopping at Home Goods and Hobby Lobby. 4If you were given one thousand acres of land, what would you do with it? I would build a home and farm for my grandparents. They have helped me through so much I want to give them a gift to show how much I appreciate everything they do for me. 4What was your favorite fairy tale or epic fantasy growing up? THE LITTLE MERMAID! No question about it. 4What is the most hilarious childhood memory you can think of? Oh my goodness! I have always been so embarrassed by this story. I was 2 or 3 years old and obsessed with peanut butter! I spread peanut butter over my entire bare body then got cold and put on my huge winter coat. I then sat on the couch and watched cartoons. There’s STILL a peanut butter stain on my grandmother’s couch. 4If you had one day left to live on the Earth, what would you do? I would bring all my family together and hang out by the bonfire with a couple beers and sing songs. They are the individuals I want spend my last day making memories. 4Tell us about your signature cocktail. Being a sports bar we don’t make many cocktails, but everyone knows my shot of choice is a nice cold Jameson Irish Whiskey with a pickle back. 4Any final thoughts? I want to be sure they have a fun experience each time they come into Brew Hounds. 4What was one of the best days of your life? There’s too many to pick just one. Most recent though, it would be the day I became Mrs. White! 4How long would you last in a zombie apocalypse? Oh crap. I wouldn’t last a minute. I’m definitely not cut out for survival situations. 4If you could ask advice from any historical figure, who would it be? What would you ask them? I’m big into British History. Chilling with Henry VIII would be amazing. I don’t know that I would pressure him with questions, I have a pretty head and I would like to keep it! 4If you had a theme song, what would it be? Happy by Pharrell. I am not sure that is my theme song but it gets me dancing when I am home alone. 4If you could write one new law that everyone had to obey, what law would you create? Explain why. I would take a page from Spanish culture and create a siesta law! I’d explain further, but I’m just too tired. 4When you have 30 minutes of free time, how do you pass the time? Reading a good book, or watching reality TV trash.
4If you were given one thousand acres of land, what would you do with it? I would build a huge ranch-style house, and let all my closest friends and family have a piece so they could do the same. Basically, I would have a crazy cult-like compound. 4What was your favorite fairy tale or epic fantasy growing up? That’s tough. I loved The NeverEnding Story, but I was a major Disney kid. I had all the VHS tapes and can still sing all the songs. Even as an adult, I will not miss a new Disney flick. I must confess…my entire room was decorated in Beauty and the Beast decorations. I identified with Belle, she was quirky and she loved to read. 4What is the most hilarious childhood memory you can think of? I was a part of the Missionettes, which is “kinda” like Girl Scouts but through the church. We used to prank our troupe leader. We were bad. I won’t get into all the details cause it’s too embarrassing. I will admit that we were total terrors, and that woman was a “legit” saint for putting up with us! 4If you had one day left to live on the Earth, what would you do? Hopefully it’s a sunny day and I-4 is clear. I would grab my friends and family and head straight to the beach! That’s definitely my happy place. 4Tell us about your signature cocktail. Taking road trips to Oklahoma and other states with my Mother. We enjoyed the trips by exploring antique shops, tiny restaurants and getting lost and laughing about it. 4How long would you last in a zombie apocalypse? I have previous military defense training so I would be tough and the zombies would not have chance. I also grow my own food and herbs so I would be a strong competitor. 4If you could ask advice from any historical figure, who would it be? What would you ask them? Abraham Lincoln. The first question I would ask President Lincoln was how did he have courage to change the world in 1863 by issuing the Emancipation Proclamation and abolishing slavery. I would also like to know if has any advice for reducing the violence and racism we are experiencing today. 4If you had a theme song, what would it be? Red, Red Wine by UB40. Ha Ha.
4If you could write one new law that everyone had to obey, what law would you create? Explain why. All Americans would have to spend a year in military boot camp before graduating. Maybe that year in boot camp would change how society views violence. 4When you have 30 minutes of free time, how do you pass the time? What free time??? If I had to answer… it would be cleaning. 4If you were given one thousand acres of land, what would you do with it? Plant a gigantic garden to grow plants for food and herbs. I would also try and use the land to save needy animals that are in search of a home. 4What was your favorite fairy tale or epic fantasy growing up? The NeverEnding Story is not a fairy tale, but I love the book and movie! Even as an adult! Come on… the movie featured a flying dragon dog! Who does not want one? 4What is the most hilarious childhood memory you can think of? No question!!! My sister buried me in the sand when we lived in Hawaii and I got sucked in and the fire department had to use a bulldozer to get me out. 4If you had one day left to live on the Earth, what would you do? Spend it with my family eating good food and cocktails. I would also spend the day thanking God for my wonderful life. 4Tell us about your signature cocktail. A Watermelon Lemon Drop topped with freshly cut watermelon and garnished with a lemon, sugar and salt rim!

I love being my “goofy-self” behind my bar and I enjoy making people smile and laugh. 4What was one of the best days of your life? Besides having my two gorgeous daughters. Dmitria and Jordan? Hmm. Hard one… I had the opportunity to meet Aerosmith 10 times. The band flew me to Colorado to go snowboarding. They are very amazing guys! When you walk into a room and Steven Tyler says your name, cause he remembers you…it is priceless! 4How long would you last in a zombie apocalypse? I would last till the end. I have a big enough arsenal right now to get at least half way through. Note to self…buy more bullets! 4If you could ask advice from any historical figure, who would it be? What would you ask them? First, Jesus himself! I would ask how to change this hate to love. Second, I would have a conversation with Lugwig Beethoven about his musical inspirations. Third, Henry Ford, of course, and ask him if he’s proud to see his name at all these great restaurants openings! And finally, I would ask Cleopatra to fully translate the hieroglyphics. I could go on and on! 4If you had a theme song, what would it be? The theme song from Jeopardy song often plays in my head as I wait for people to order drinks. This is a hard one…I have so many. We all have to help one another. People should not be homeless, hungry,
abused or alone. I wish I could save the world but I can’t do it by myself. We all need to be part of the solution. 4When you have 30 minutes of free-time, how do you pass the time? I cook, clean-up house and pay bills. I know…I am boring. Maybe do some sit-ups or walk my dog Rosie 4If you were given one thousand acres of land, what would you do with it? Hands down... make it into an elephant reserve. My whole life, I always said if I had the money and could save all the elephants, I would buy tons of land and let them live happily! I hope this dream comes true some day! 4What was your favorite fairy tale or epic fantasy growing up? My biggest fantasy is to find a genuine, humble, beautiful, hardworking and honest man who thinks I’m amazing! Lol! I’ll keep dreaming! 4What is the most hilarious childhood memory you can think of? I was about seven and I hooked up my Great Dane to my sled like she was a horse. She began pulling me around the neighborhood until she saw a dog down the road that she chased for miles. She was running so fast I had to hang on for dear life, over the ice ponds, corners and over snow banks. I even became airborne during that wild ride. Good times. Miss that dog. Sad question…spend it with my family and tell my daughters, to stay kind, keep love in their hearts, to not forget to stay happy, and laugh often. I make time to socialize with customers and try to make more friends. 4If you were given one thousand acres of land, what would you do with it? I would sell and make a profit. It is too hot in Florida to maintain a thousand aces of land! 4What was your favorite fairy tale or epic fantasy growing up? I always wanted to be a pro wrestler in the big league. That childhood dream led to my wrestling character El Guapo. My personal mantra is “shoot for the moon and even if you miss, you will land among the stars.” Thanks to my dreams and that advice “El Guapo” was born. 4What is the most hilarious childhood memory you can think of? My Dad would have me hit the weights in our basement after school. The movie Rocky had just come out and I was a big fan. After one of my workouts, I decided to try the Rocky egg trick. I ran up to my Dad with two raw eggs in a cup and said “Papi…look I am Rocky.” I quickly swallowed the eggs but I spit the whole thing right back up! 4If you had one day left to live on the Earth, what would you do? Throw a gigantic party to celebrate with all my friends and family. We would have a blast. 4Tell us about your signature cocktail. My favorite fairy tale is Cinderella. 4What is the most hilarious childhood memory you can think of? My sister and I are 2 years apart and she is the oldest. We both contracted chicken pox at the same time so mom let us run around in our “undies” all day. We wore matching white panties with ruffles on the butt. 4If you had one day left to live on the Earth, what would you do? I would go skydiving again because it is an awesome thrill! 4Tell us about your signature cocktail. My favorite drink is Liquid Marijuana. olk County natives Tenesha and Amanda Cargil are bringing their soulful voices to the streets of Nashville, with regular gigs at the Bluebird Café, Rippy’s and Honkey Tonk Central. The mother-daughter duo, known as Southerndipity, left the area one year ago to pursue country music full time. But they still take time to perform where they grew up. “It’s hard to stay away from your hometown,” Tenesha Cargil says. Whenever they are in the area, they perform at places like Tanner’s, Grove Roots, Fire and Leo’s Live. They also recently sang in the Florida Keys. Southerndipity mainly sings acoustic. Daughter Amanda, 17, plays rhythm guitar and they both

sing. They recently performed in Lakeland and sang original songs, as well as covers – from Adele to Eminem to Four Non Blondes – they can sing it all. They have released two albums filled with original melodies both country and Christian, which is where they started in their career. Tenesha began singing at 10 years old in church and her daughter sang on stage at the young age of 2. “When I was five years old, I told my grandma I was going to be a country singer,” Tenesha says. She also taught herself how to play piano. They switched from Christian music to country about four years ago and have had a good response. “We were born and raised with — Continued Page 32

Tenesha writes about heartache from a divorce and they continue to regularly create new music. Their Christian album is called The Morning Will Shine Bright and their contry album is Back to Our Roots. The mother-daughter duo’s third album should be out in a couple of months. Tenesha recently learned of an exciting opportunity for she and her daughter. The television show America’s Got Talent is interested in them performing. “They found us on UTube, so we should be on the show next season,” she says. “We want to go as far as we can. A have a lot of open doors so far,” she says. Southerndipity will be back in Polk County mid-July for a benefit to help a local boy battling cancer.
