EDITOR’S NOTE We are extremely happy to celebrate another great year of fun stories, awesome photography, exciting events and tasty adventures. I would like to thank you for making us a part of your world each month! This spectacular issue marks two important milestones – the 12th anniversary of our most anticipated annual feature – Polk’s Beloved Bartenders and our 11th year of publication. The top 10 bartenders have merged. We know the hospitality industry can often be a thankless profession and we want to thank you to Polk County’s valued service professionals for their amazing accomplishments. The last 11 years has been a whirl wind of craziness and fun. We have scoured our county for fun, food and fabulous events. There is something magical about opening a handwritten letter both for the writer and the recipient. The gentle tug of the envelope followed by the feel of the paper in your hands and the faintly sweet smell of dried ink is one of life’s simple pleasures. I can remember the pure joy of receiving a letter in the mailbox addressed only to me. My family is quite formal so as a child, all envelopes were either addressed to “Mistress” if for me and “Master” for my brothers. How can one not be enchanted by an envelope that is addressed so magnificently? Sadly, the practice of written correspondence and travel cards is being lost to the digital world where Facebook posts and email is swallowing the whimsical world of fine stationery, fountain pens and postcards. Our grandparents understood the gift of a well-crafted note sent home
sharing each highway attraction and roadside wonder with a written memento of the adventure. Almost as if frozen in time, the memories found on vintage postcards are a window in era so different from our crowed world of mobile phones and tablets. A simple postcard was a powerful connection that kept family and loved ones tethered, regardless of the physical distance. We have instant communication tools at our fingertips, yet we are more distant than ever. I have made sending postcards to my niece and nephew my personal summer improvement project. For the last two months, I select a card each morning from the stack of empty postcards thrifted at an estate sale, and I write a quick note. I find myself simply enjoying the ritual of addressing the card and affixing the stamp. During my recent business trip to California, I was more thrilled by handing my precious postcards to the front desk to mail than seeing the Hollywood sign. We have lost this magical tradition and it is time to bring back the tradition. A postcard is a tiny gift of your personal journey. You can’t hang an Instagram or Snapchat on a bulletin board or tuck a digital screenshot into a book to be found later like a tiny hidden treasure. Veterinarian of the Month When Loren Nations graduated from Winter Haven High School in 1981 his dreams of becoming an influential veterinarian in a big city would follow many paths. After graduating from UF with his veterinary degree in 1991 he completed a medical and surgical internship at the Animal Medical Center in Manhattan, NY considered the Johns Hopkins of veterinary medicine. Instead of remaining in New York City he returned home to practice “big city” medicine with his mentor Dr. John Maxwell. Dr. Nations’ desire to help animals and commitment to practice at the highest level led to specialty board certification in canine and feline practice, one of only 425 ABVP diplomats in the country and 27 in the state. With this expertise, the practice has flourished into a seven doctor 24 hour emergency and critical care hospital, specialty referral center, and general practice. Dr. Nations has devoted his life to creating a center that will improve our pet’s lives for years to come. W
e took to Polk’s “high seas” for our incredible 12th edition of Today & Tonight Magazine’s Beloved Bartenders Contest. For the first time ever, the cover was photographed completely on the water using two ski boats and the very talented photography skills of Mike Potthast from Potthast Studios. This amazing shot could not have been accomplished without two of Florida’s most talented skiers, Shaune Stoskopf and Howard MacCalla of the world famous Cypress Gardens Water Ski Team. The time honored tradition of Polk’s Beloved Bartender feature started with the very first edition of the magazine. Over the past decade, the magazine has collected more than 20,000 votes from dedicated readers wanting to give back to their favorite hospitality professionals. Bartending can often be a thankless job and this contest is one of the ways we are giving back to the men and women who work hard each day to provide superior customer service in their noble profession. Our readers are simply awesome when it comes to recognizing excellence and we thank you for taking the time to salute the best of best. To celebrate 2015, we presented The Class of 2015 Beloved Bartenders with 15 slightly offthe-wall questions designed to demonstrate their quirky sense of humor and unique life perspective. When it comes to discussing spirit animals and imaginary friends…these gifted professionals were great sports. However, through these wacky conversations, we were able to sketch a colorful portrait of their personalities, talents and aspirations. Polk County is so lucky to have such an exceptional group of hospitality professionals. #1 for the Second Year in a Row! • What was the highlight of your week? About two weeks ago my fiancé Jac and I bought our dream home on the Chain of Lakes. It is a “fixer-upper” that requires a lot of attention and we can’t wait to make it ours. The renovation is hard work and stressful at times, but the end result will be well worth the headache. • What personal passion project are you working on right now? This is the theme of my life right now. I only do the things that I love doing. I really enjoy waterskiing full-time at Legoland where I am the Show Director. I love spending my evenings at the wine bar where I have made many good friends, I’m in the process of moving into my dream home, and I’ve recently begun a venture designing and creating custom furniture in our home workshop. • What’s your biggest fear and why? Losing a loved one. Family is the most important thing in the world. • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? When I was a little kid, I wanted a monkey as a pet. I now realize that’s not feasible, but I still “kind of” want a pet monkey. I have never thought about this until now, but definitely a sea lion. They are intelligent, athletic, always seem to be playing, and perform in front of people. I also love the water, lake or ocean. • What was your best Halloween costume and describe why it is your favorite? My dad always made me the best Halloween costumes. I think my favorite was the upside down man. The legs were arms and the arms were legs and it actually looked like a person walking around the street on his hands. • What was the best birthday gift you ever received? A couple years ago, for my birthday, my family went on a cruise to the Bahamas. The cruise was great, but more importantly it was the first time I got an opportunity to spend time with my sister’s husband (boyfriend at the time) and get to know him. That meant a lot to me. • What is one thing you couldn’t live without? My beautiful fiancé, of course. • What memorable lesson did you learn from your parents? Two of the most important lessons are to be kind to everybody and to understand the value of hard work. If you’re going to do anything, whether it’s work or play, do it right. There is no sense in cutting corners. • If you could spend an hour doing anything, what would it be and why? Waterskiing…No question, it’s my favorite thing to do. • If you had an imaginary friend, what would his/her name be? This question has me completely stumped. I truly have no idea. Can I get back to you on that? • What is the craziest, most outrageous thing you want to achieve? I’d love to sail around the world in my own boat one day. • What smell brings back great memories and why? Sawdust. Whenever I’m woodworking or messing with something in the shop, it reminds me of the time I spent with my “Gramp” in his barn “building” things as a boy. Those are
1st great memories and great lessons. • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. A picnic. I love being outdoors any chance I can get. I am not a fancy restaurant kind of guy. • If you could learn the answer to one question about your future, what would the question be? All I want to know about my future is that I keep doing the things I love and don’t get caught up in life’s trivial things. • Describe Your Signature Drink? I like a big, bold Cabernet. My favorite staple drink at the wine bar is Woodwork Cabernet. We’ve such a great, diverse list of wines that it is difficult to choose, though!

My highlight of the week was spending time with my favorite person in the world…my dad on Father’s Day. • What personal passion project are you working on right now? My personal passion right now, and all the time, would be singing. I sing all the time, that’s why my nickname at Mojo’s is “Songbird.” I’ve been working on a couple of new songs that I have written. Mojo’s offers Karoke every Thursday night and I am the host and sing! • What’s your biggest fear and why? My biggest fear is heights. I’m so clumsy, so being up very high and knowing I could slip or fall. It’s horrible! • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? If I could have…and be…any animal in the world it would be a panda because they are so loveable and sweet. • What was your best Halloween costume and describe why it is your favorite? My favorite Halloween costume so far would have to be when I dressed up as a “cereal killer” and hot glued a bunch of mini cereal boxes to a shirt and stuck spoons in them. It was pretty funny!
• What was the best birthday gift you ever received? The best present I have ever received is a necklace that was my grandmother’s. • What is one thing you couldn’t live without? I couldn’t live without my family. • What memorable lesson did you learn from your parents? My dad has taught me several memorable lessons but one that stuck with me the most is “don’t worry, be happy.” He has said this phrase to me since I was little kid. Life is too short to be anything but happy. • If you could spend an hour doing anything, what would it be and why? I would be kayak fishing with my Dad! • If you had an imaginary friend, what would his/her name be? His name would be Bob! • What is the craziest, most outrageous thing you want to achieve? I want to become a famous country singer. • What smell brings back great memories and why? One smell that brings back memories is the smell of rain. It brings me back to when I was young and picking pecans with my Grandmother. • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. A picnic in the park because it is the little things that matter the most! • If you could learn the answer to one question about your future, what would the question be? I don’t want to know the answer to my future. Better to let life just play out. • Describe Your Signature Drink? I have a couple of signature drinks but my favorite is the Songbird. It is Malibu Rum, pineapple juice, sweet and sour mix with a splash of grenadine and lime juice. It is a perfect cocktail for some fun in the sun!

• What was the highlight of your week? The highlight of my week is on Sundays. Sunday is the day that I get to unwind, relax, and spend some quality family time. I love it when my whole family is at home together…no matter what we are doing. We could be watching a movie or going to Busch Gardens or even just playing a board game, either way it’s all the same. We’re all together. • What personal passion project are you working on right now? I just started working out and eating right in order to get healthier. I’m only a beginner, so I can’t say I’ll be an Olympic lifter any time soon, but I’m making progress. • What’s your biggest fear and why? My biggest fear has to be sharks. Honestly, I don’t go to the beach as much as a true Floridian should and it’s all due to one experience. There was a time that I was “wade” fishing with a couple of friends, in chest high water, and noticed a fin between us and the shore. Of course, this may have very well have been a dolphin or something friendly, but I freakedout about it! Ever since, I am on high alert when at the beach. • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? You’re probably expecting me to give you an animal like a koala or a lion or something, but I would choose a dog. Dogs are my favorite animal, by far. If I were to have any spirit animal it would be a dog because they are fun to be with and they are very loyal. • What was your best Halloween costume and describe why it is your favorite? Weirdly enough, I never got into dressing up for Halloween but I love to joke around. One year, I did dress up as John Daly (a professional golfer). I stuffed my golf shirt with a pillow and walked around with a bottle of Jack Daniels.

Well there is always the basic food, water, and air, but honestly i just can’t live without my family and their support. • What memorable lesson did you learn from your parents? The one lesson that has stuck with me throughout the years is to love everyone the same no matter what. • If you could spend an hour doing anything, what would it be and why? Spending time with my daughter Page because she’s just like me. When we are together we have the best of times no matter what we do or where we go. • If you had an imaginary friend, what would his/ her name be? It would be Cyrus. • What is the craziest, most outrageous thing you want to achieve? I would like to invent something that everyone loves to use and can’t live without but I have no clue what it would be. • What smell brings back great memories and why? The smell of the men’s cologne Drakkar Noir brings back great memories. That scent brings me back to my days of middle and high school. I had the best time! • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. I would rather go out for dinner. There is just something about dressing up with someone and going out to a nice fancy restaurant. • If you could learn the answer to one question about your future, what would the question be? I want to know if aliens will eventually come and take over the world! Seriously though…I would want to know how my family would do after I passed, or when flying cars will finally be mass produced. It’s a toss-up. • Describe Your Signature Drink? I love it when a person walks up and asks for a drink, but they don’t know what they want. I usually ask some questions to get an idea of what they will like. Most of the time, the mix is different for each person. I just make it up, as I go. That’s my signature.

She is my most favorite thing in the world! She is three years old and amazing. They are already making homemade pasta and ravioli in her cooking class! • What personal passion project are you working on right now? We are always on the go, go, go so I am trying to slow down and enjoy life more. I want to take the time to watch the sunset or go horseback riding on the beach. We recently took a trip to Puerto Rico and I am learning to get out and experience life! • What’s your biggest fear and why? I am afraid of the dark! I don’t like the unknown so being in the dark is unsettling. You never know who might be coming! • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? I would have a pet horse. They are amazing animals that represent freedom and not having a care in the world. My spirit animal would be a white tiger. Customers often comment on my eyes and tigers have mysterious and exotic eyes. That would be our connection. • What was your best Halloween costume and describe why it is your favorite? Last year, my daughter and I had matching Little Red Riding Hood costumes. She loved it! Watching my daughter enjoy Halloween is now the best part. • What was the best birthday gift you ever received? My godson was born one day before my birthday. • What is one thing you couldn’t live without? I can’t live without my daughter, Brooklynne! One
look at her and everything is better! She is my world! • What memorable lesson did you learn from your parents? My parents always taught me to always be nice. You never know what a simple smile can do to make someone’s day better. • If you could spend an hour doing anything, what would it be and why? My daughter never had the opportunity to meet her Great-Grandmother. My Grandmother passed away when I was 15 and it would have been so special for her to meet Brooklynne. • If you had an imaginary friend, what would his/ her name be? This is so hard! My daughter has a huge imagination so she is always introducing me to her new imaginary friends. It took weeks for me to decide my daughter’s name. • What is the craziest, most outrageous thing you want to achieve? I am not a big fan of heights however, I want to one day conquer this fear and go cliff diving. It would have to be an exotic place with gorgeous blue water because it is going to take a lot for me to jump. • What smell brings back great memories and why? The smell of chocolate cake batter reminds me of my Grandmother baking cakes and letting me lick the wooden spoon. Wooden spoons and plastic spatulas also really bring back memories. • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. I am a “foodie” so enjoying a delicious dinner in a romantic restaurant would be fantastic. • If you could learn the answer to one question about your future, what would the question be? I don’t want to know the future. If you know what is going to happen in the future, you will act different. Knowing is not always the best thing. • Describe Your Signature Drink? My signature drink is a Smooth Criminal. It tastes amazing and features a lot of different liquors however the ingredients are top secret. You will have to visit me at Mojo’s to find out!

• What was the highlight of your week? There were so many! My son started his very first job, I met and spent Father’s day with so many great dads, celebrated a few birthdays, an anniversary, a friendship rekindled, a first date, a fourth date... but the highlight was probably on Father’s day and talking to my own Dad about being nominated for this contest. Love is such an amazing thing, and our conversation about this honor was awesome…he giggled... it was so sweet. • What personal passion project are you working on right now? Just being a good Mom! I am so blessed to have an amazing son. I adore him and I am trying to give him great days to remember. • What’s your biggest fear and why? Being misunderstood…it can happen so easily. Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? I would choose a giraffe as they are so graceful and beautiful. My spirit animal would be a horse, definitely, wild and free! • What was your best Halloween costume and describe why it is your favorite? I dressed as Cleopatra and that was fun! Channeling her energy was so much fun, awkward but fun! • What was the best birthday gift you ever received? I am a numbers person. Someone once sent me a break down of all the important numbers in his world that linked to my/our number of 7. The thought and
care behind this gift was the sweetest thing ever. It was a love note and a butterfly drawing. The note was such a loving gesture. • What is one thing you couldn’t live without? My Carmex lip balm. I am hooked! What memorable lesson did you learn from your parents? If you are going to do something, do it the best you can. • If you could spend an hour doing anything, what would it be and why? I would spend it with my nieces, as they are the most incredible people. They live up north and I miss them every day... being with them is magical. • If you had an imaginary friend, what would his/ her name be? Her name would be Emma! • What is the craziest, most outrageous thing you want to achieve? I want to be a modern day Mary Poppins! I was also named to the honorable mention list my first year bartending. • What personal passion project are you working on right now? My personal project…that not only am I working on but my fiancée as well, is trying to have a baby and planning our wedding. • What’s your biggest fear and why? My biggest fear, besides aliens is, making a big change for our future family moving back home to Luxembourg with my fiancée and her not liking it. • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? If I could have any animal what would it be… hmmm, I must say either a penguin or a giraffe. That question is a tough one. My spirit animal would have to be an elephant. I just can’t stop eating!!! • What was your best Halloween costume and describe why it is your favorite? My best Halloween costume had to have been the one from two years ago. I was a candy person. Took a bra, put royal frosting on it and put candy all over it. It took 2hrs to put it together and I didn’t realize how heavy it was going to be. Best part…I had snacks all throughout the night! • What was the best birthday gift you ever received? My best birthday gift I’ve received was a bubble machine for my party, but my birthday is next month, so we’ll have to see. • What is one thing you couldn’t live without? One thing that I can’t live without is food!!! I can’t say no to food.
• What memorable lesson did you learn from your parents? A lesson that I’ve learned from my parents is to never back down and go for your goals. • If you could spend an hour doing anything, what would it be and why? I would want to get together with my best friends Sheila and Sunny…like back in the old days of our “Sex and the City” friendship and catch up. • If you had an imaginary friend, what would his/ her name be? If I had an imaginary friend his name would probably be Ralph. • What is the craziest, most outrageous thing you want to achieve? The craziest, most outrageous thing I would want to achieve is leaving a footprint behind and changing the world’s outlook on racism. There’s too much hate in this world and people need to change. • What smell brings back great memories and why? The smell that brings back the best memories is the smell of freshly baked pastries. It reminds me of back at home. • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. I’d rather go on a picnic at a park with my fiancée. That’s more romantic than a restaurant because you can walk around afterwards and find some ducks to feed. I just need to remember to bring bug spray and extra loaves of bread for the duckies. • If you could learn the answer to one question about your future, what would the question be? If I could learn the answer to one question about my future it would be…when are we going to have this crazy, expensive child we have been trying to conceive for the past year. • Describe Your Signature Drink? My signature drink would have to be my version of a Red Death. Southern Comfort Peach, vodka, gin, lime juice, and orange juice. It packs a punch, but yet it’s smooth.

I don’t know if you’d call it a personal passion project, but it’s definitely a project. I’m currently working with both of my children on understanding the purpose of putting their clothes into their laundry baskets and not on the floor in front of it. • What’s your biggest fear and why? Spiders. Anything and everything that has to do with spiders…terrifies me. I have no idea why. It’s completely irrational. • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? Probably, a monkey for my daughter. She’s always wanted a monkey for a pet. I have to be honest, I had no idea what a spirit animal was or what mine would be. So, I researched spirit animals to educate myself, took 4 different online quizzes, and then spent a day asking my customers what they thought my animal would be. After much discussion, debate, and 4 different quiz results (tiger, whale, wolf, and deer), I’ve come to the conclusion that I don’t fit into any of the Spirit Animal categories. I’m my own special breed. • What was your best Halloween costume and describe why it is your favorite? My favorite costume would have to be the year I dressed as Dorothy from
the Wizard of Oz. It was my favorite because it resulted in one of my funniest “trip and fall/broken shoe” stories. I still have my broken ruby slipper. • What was the best birthday gift you ever received? For my 10th birthday, my grandfather made me a huge dollhouse. It is an amazing dollhouse that has been passed on to my daughter. • What is one thing you couldn’t live without? Music. I couldn’t go one day without it. • What memorable lesson did you learn from your parents? The importance of family. Both of my parents are big on family and raised me to know just how important family should be. ‘La Famiglia e Tutto’…. Family is Everything. • If you could spend an hour doing anything, what would it be and why? I’d read a book. I love to read and it’s my favorite kind of down time. • If you had an imaginary friend, what would his/her name be? His name is Sheldon. I’d like to win the lottery so I could spend the rest of my life traveling all over the world. • What smell brings back great memories and why? Every time I smell anise oil, I’m instantly 7 years old again and in my Grandma Mancini’s kitchen. Anise Oil was one of the ingredients that went into the Italian Pizzelles she would make every Christmas. • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. I’d go for a picnic in the park. I like the simplicity of it, plus I could take my shoes off. • If you could learn the answer to one question about your future, what would the question be? I would want to know if I successfully taught my son and daughter to be strong and confident. To know they learned to be grateful for what they have, and to never miss a chance to give back. The best birthday gift I’ve ever received was for my 11th birthday. My Aunt bought me the Technodrome for my Ninja Turtle collection. I played with that toy every day for a long time. I love TMNT to this day. • What is one thing you couldn’t live without? The one thing I could not live without is my children. They are my inspiration in life. Always have been, always will. A close second would have to be my iPhone and Apple Watch combo. • What memorable lesson did you learn from your parents? Well, I learned that the struggle is real. If I had an imaginary friend his name would be T Rex. He would also be a T Rex, because who wouldn’t want an imaginary friend that’s a T Rex, Right? The craziest most outrageous thing I would love to achieve would have to be skydiving and scuba diving, since I’m afraid of heights and the open ocean. I need to conquer my fears. • What smell brings back great memories and why? The smell of coconut oil suntan lotion always brings back great memories of my childhood in Miami. Being in Miami in the late 80’s and early 90’s was amazing. It was the birth of “Booty Shake Music” and “Bass”. I’m Italian so I can cook naturally and I would whip up something delicious and memorable. I also feel that a picnic is more of a personable environment between just you and the person you’re with. If I could learn the answer to one question about my future, it would have to be… if I won Polk’s Top 10 in Bartending. The suspense is killing me. Describe Your Signature Drink? My signature drink is called the Barringer Blue. It’s an exotic Caribbean drink that combines the flavors of Malibu Coconut Rum along with Blue Chair Bay White Rum, Blue Curaçao, pineapple juice, and a dash or two of sugarcane. The drink is garnished with a fresh cut pineapple, orange, and a sweet cherry. And, speared by a pirate sword, of course. Argh!

How Tracey Does The Beach
I am a 45-year Floridian, born and raised in Central Florida; some say we are now the 3% percentile of Florida residents that make up our hospitality state. Many come here to our state to bask in the warmth of our beautiful year round sun; enjoying all our state has to offer especially the many beaches around our peninsula as well as the thousands of lakes. These folks typically stand out from the residents by the bright lobster color of their skin – possibly enjoying our weather a little too much. I’ve love living the Florida lifestyle being in close proximity to the different bodies of water; ocean, lakes, springs. Once you’ve lived on the water, it is really hard to imagine living anywhere else. It’s so calming and peaceful. It’s been 20 years for me. Watching the wild life that also calls the area home is a favorite pastime of mine. Especially springtime when the new babies hatch and follow their mommies around until pushed from the nest to claim their own territories further down around the waterfront. My mom and step dad have lived back and forth on different coasts around Florida since I was 16 years old: Daytona to Ft. Pierce/Hutchinson Island to Homosassa to the Keys. Each year older I appreciate being around them and their “water” lifestyle more and more. It’s relaxing and fun and it’s a state of mind. However, the one thing I do not have in common with my mom and step dad or some of my dear (water-baby) friends is the way that they like to enjoy the water and how I like to enjoy my time in the water, on the water and by the water. Knowing how I love the water life style, you would assume that I am a bronzed goddess that loves baking on the beach in a teeny little bikini with sand glued to my butt cheeks and waves lapping against my feet. That sounds like a Sports Illustrated photo shoot, and NOT for me. I love boating on the Chain of Lakes but I must have my big floppy hat, sunglasses, plenty of sunscreen and a Bimini top to hide under from the sun. I cringe while boating around when I see others riding around in full sun always thinking how their brains must be frying like an egg on a sidewalk. I
also enjoy eating dinner in the cooler months around my pool, which is under a pool cage, but I don’t really swim in it. Guests enjoy the pool for summer parties, but not me. The ocean is awesome whether deep sea finishing, snorkeling, kayaking or just cruising the deep blue seas however beachin’ it is a whole other concept for me. Amenities are a must! Those that have witnessed the “set up” process are usually shaking their head in disbelief. It takes a few minutes but once I’m set and ready I know deep inside they are jealous of the awesomeness. Here’s how it begins: get ready for the beach, get in the shower to spray the first layer of sunscreen on, after it dries put on bathing suit then hat, glasses and cover up. Pack 2 coolers with the essentials: bottled water, lots of snacks, Captain Morgan, diet coke, lots of crushed ice, cups with straws so that the sand cannot get into the drink! Grab the beach bag which is always prepared for a water adventure (towels, 5 bottles of sunscreen, bug spray, lip balm, bottle openers, coozies, lip balm, hand wipes, hand sanitizers… you get the gest), two Coleman chairs that are also back packs, iPad, book/ magazines and most important MY pop-up cabana! The first time my mom and step dad saw me heading out to the beach from a beachside condo they rented for 3 months they were watching intently from their balcony to see how this circus would play out. My craziness to get set up on the beach. For them, they would just walk outside and walk down the beach, lay on a towel of set up in a chair, as would a lot of my friends, not me. But, each and every time, after I get set up, I know everyone is secretly jealous. Rain or shine, I am good enjoying my relaxing time on the beach. They know I am happy and content on the beach no matter what. I can stay in my little cabana happy as a little clam; no sun to burn me, no sand (dirt as I call it) to get on me and still I can enjoy the beautiful ocean… My Way. PORCH A consultant is someone who is a “professional” who provides expert advice to a company in a specialized field who is supposed to have vast knowledge in the subject matter. Yes, even radio stations have these people. There is a consultant by the name of Keith Hill who recently stirred up A LOT of controversy in an interview he gave with a country music publication. Some of his comments were: “If you want to make ratings in country radio, take females out.” ”Trust me, I play great female records and we’ve got some right now; they’re just not the lettuce in our salad. The lettuce is Luke Bryan and Blake Shelton, Keith Urban and artists like that. The tomatoes of our salad are the females.” Naturally, this ruffled a lot of feathers in the Country Music “henhouse.” Talents such as Martina McBride, Sara Evans, Miranda Lambert, Jennifer Nettles and more expressed their displeasure with Hill’s sentiments through various interviews and social media. Mr. Hill, was given the chance to maybe “soften up” his original comments, but replied with “If women want to get played on the radio, produce better records.” Oh and also, “There are a lot of uptight women” out there. This interview he gave was at the end of May, after I already submitted my June article to T&T Magazine, so this particular tomato has been “stewing” since then…so here we go. First of all, lettuce is water…very bland, very boring and little nutritional value; however, it does prove to be a great dietary fiber, allowing our bodies to expel waste. Am I calling male singers poo? ABSOLUTELY NOT! Just working with his lame analogy. Sara Evans said, “I’ve been very outspoken on this topic over the past few years and STRONGLY believe that there should be a better balance of the songs played on country radio,” Evans writes. “Our genre has a long history of incredible songs written and sung by amazing female artists. Could you imagine a world with no “Coal Miner’s Daughter,” “I Will Always Love You,” “For My Broken Heart,” “Wide Open Spaces,” “Independence Day,”

“Jesus Take the Wheel,” “A Little Bit Stronger” and SO many more? Those were all No. 1 songs on country radio,” she adds, “and are songs of substance that say something and that move people.” Something I found very humorous is that singer/songwriter Bridgette Tatum (writer of “She’s Country” by Jason Aldean) commented on my Instagram stating “if I am tomato, I’m makin’ A LOT of sauce!!!” As I type this out, we currently have a new female artist (Kelsea Ballerini) sitting at the top of the charts with her debut single, “Love Me Like You Mean It.” In the midst of a phase that people are calling “bro-country”…which songs basically have the same main idea: moonshine, cutoffs, tailgate… there seems to be a shift in listeners preferences. A little goes a long way, but I suppose when Nashville sees that something is working, they inundate radio with the same thing. What I am seeing on social media is that listeners want variety…and I know for a fact that is something that 97 Country WPCV strives to achieve more and more each day. I personally don’t believe in consultants, I believe in the simple strategy of “listen to your listener.” Balance is a tricky thing. I know this article might be all over the place, but there’s so much I want to say. As a female in the industry, I could tell you stories to make your head spin on how I have been talked to, talked about, and manipulated by some of my male colleagues. It is definitely a struggle every single day to prove that I belong here. I guess I will just end on this: Ladies…support each other, fight for what you believe in, hold your head high, teach our daughters that they can be anything they want to be, and most of all…believe in yourself, even if nobody else does.

Enjoy Boating, Fishing and Outdoors Adventures While Staying Cool and Dry at the Lakeland Boat Show July 31-August 2, 2015 The Lakeland Boat Show returns to the Lakeland Center for a second year with more boats, exhibitors and activities for attendees to explore. Boat dealers from as far away as Sarasota, Claremont, Dunedin, and Clearwater will display dozens of new boats. More than 18 boat lines will be represented. In addition, attendees can shop ATV’s, boating accessories, fishing gear, and more in cool, dry comfort. Attendees are encouraged to sit in on a session at the Captain Joe Fishing School. We provide the bait, tackle and line for these 22

hands-on seminars lead by expert anglers. Depending on the topic, participants rig lures, tie knots, or learn how to throw a cast net. “Reaction to our first show

would have to travel hundreds of miles around central and west central Florida to see all the boats and boat lines we are bringing to the Lakeland Center this year.”

Car Alarms, Warning Signals, Cassettes and 8 Tracks What do the above things have in common? They are all things no one listens to, ever. They’re useless. They are as useless as insurance we pay a fortune for in case something happens and we need an ambulance…and then no one will pay attention to the siren. Have you heard a car alarm? Yes…you probably have. What did you do? Probably nothing. Beep, Beep, Beep, Beep, Beep, Beep, Beep! Everyone is annoyed but no one is saying, “Gee, I wonder if someone is stealing a car and I should be a Good Samaritan and see if there’s something I can do to prevent a crime!” That’s not what happens. The thought process is more like this, “Is that my car? (2 second pause) No….so…I’ll ignore it. I don’t want to get involved.” No one cares if someone’s car is being stolen. No one would ever stop at a railroad crossing for the warning signal unless the big wooden barricade came down with the flashing lights…and even then, I have seen many a pick-up truck pick up speed and try to get underneath it while the bell is ringing. It’s like a sport. I admit I used to do this and then after seeing the movie “Fried Green Tomatoes” I heeded the warning signal. It took a Hollywood movie epic to get me to pay attention to warning sounds that have been around forever. Let’s move on to smoke alarms, ENTERTAINING POLK COUNTY FOR 11 YEARS!

We desensitized to negativity. A suggestion, if I may. People might respond to a positive sound. Perhaps instead of clanging, squealing, shrieking noises to get out attention why don’t these things play an annoyingly catchy happy song, such as “It’s a Small World After All” or the theme song from “The Flintstones” or anything that we remember as a good thing from our childhoods. People will look up. They will notice. They will heed. They will find and/or respect the source of it. Just don’t play it on a cassette or 8 Track! New exhibit at the Polk Museum of Art. This exhibition, The Moon Museum (1969): Apollo XII’s Secret Art Mission, was curated by Jade Dellinger in partnership with the Bob Rauschenberg Gallery at Florida SouthWestern State College to celebrate that first space art project. The Moon Museum was the brainchild of New York sculptor Forrest “Frosty” Myers, who invited a group of the most significant artists of the time, including John Chamberlain, David

Novros, Claes Oldenburg, Andy Warhol and Robert Rauschenberg to join him in contributing individual drawings. Myers collaborated with engineers at Bell Laboratories to transfer the images (using a then-cutting-edge photo-reduction technique developed for micro-circuitry) onto a handful of identical postage stamp-sized, paperthin ceramic wafers, one of which was secretly attached to the Apollo XII lunar landing LEM 6. It has remained on the surface of the moon for more than 45 years. This exhibition features one of the few remaining duplicates as well as vintage NASA press photographs, film shot by Apollo XII astronauts and related mission-flown artifacts. Bruchey Zoo My house is beginning to resemble a zoo. Thankfully, it doesn’t smell like one (except for possibly the day after my wife makes Taco cups for dinner), but the population of the home is taking on an certain Noah’s Ark feel…minus the forty days & forty nights of rain. We have our dog Sonic, the turtle named Buddy, and the hamster named Brutus. On occasion, we have played overnight hosts to many tadpoles, frogs, and lizards as well. I should be a little more specific regarding our pets names. Their full names are Sonic the Destroyer, Buddy the Quiet, and Brutus III. Sonic has been a part of our family longer than my son has been. In fact, when our son was born, my wife worried about the dog and boy getting along. I told her that Sonic was there first, so if there is an issue, the boy will have to find a new place. Sure I was joking (mostly), but giving your son away because the dog doesn’t like him isn’t the kind of thing you even kid about to a woman who is still fraught with hormones and emotions following the birth of their first born child. We got Buddy last July while I was driving my car on a dirt road, and I narrowly avoided making sudden turtle soup. Buddy was, and remains, the size of a golf ball. However, I wouldn’t recommend using him as a golf ball. He’d make a better hockey puck. I knew my boy would love a turtle, so I brought him home. The turtle’s parents might say I kidnapped their son and brought him back to my place to make him live out his life in a small tank, solely for entertainment purposes. I of course, would deny this, because there really isn’t much entertainment in watching a turtle sit in a tank. Brutus the hamster came to us at Christmas. Well, the truth is, Brutus 1 came to us at Christmas, but Sonic the Destroyer quickly lived up to his name. Let’s just say, Mommy and Daddy learned that the dog will go to great lengths to pull a hamster cage off of a high shelf, and play with the hamster.
So, Brutus II came to our family the day after Christmas. Less, than a week later, Brutus II died from the common hamster disease called Wettail (which is basically a prettier name than Diarrhea-Death). Apparently, wet-tail can be caused by stress. I can only imagine, Brutus II overheard our conversations about the demise of Brutus I. About a week after Christmas, Brutus III came into our lives, and we went to great lengths to make sure he (who was actually a she) stayed healthy and safe. In late June, we took a family vacation. Everybody but Buddy made the trip (Buddy made like the fourth little piggy, and stayed home); three humans, a dog, and a hamster, driving 1000 miles in an SUV. If this trip was a horror movie, the movie trailer would go like this, “In a world, where a happy family vacation goes horribly wrong…five family members would go to Ohio, only four would return”. The wrestling world would describe it as Brutus III vs Sonic the Destroyer in a Cage Match Battle Royale. My son has already asked for a new hamster, and we’ll probably give him one. We just won’t name him Brutus. Maybe Bath. My dog runs away from Baths. Brian “Give Him A Pet Rock” Bruchey

With the same innovative originality that existed in their previous restaurants, John and Debbie Tennick took the lessons learned and kept improving. Located in a Chain-of-Lakes setting with ample docking for mariners, customers can expect a great dining experience and a wonderful view. “Tanner’s” is named after their son. Before becoming Tanner’s Lakeside Restaurant & Bar, the venerable structure on the shores of Lake May has been known by many names including Shrimpboat Sally’s, Autumn’s Anchor, and most recently McGillicuddy’s. For guests who had dined at the Thyme Square Bistro (their first endeavor in 1998), Tanners One & Two (downtown Winter Haven, 2002-2011), and the exotic Blue Room adjacent Legoland (dinner-club-wine bar concept), will agree John and Debbie have outdone themselves this time. John Tennick is a native of England and was schooled in the French culinary arts. His degree in French cooking shows with offerings such as perfectly spiced Crawfish, Seafood Gumbo, and Mahi Mahi (blackened, pan seared filet topped with Creole butter sauce). years ago, but we had just opened Tanners downtown and felt like we didn’t have the resources to do both,” says Co-Owner Debbie. Over the years we looked at it several more times and were approached by Greg Gay and Philip Van Winkle, who had recently acquired the property. We all had the same vision…to create a casual, quality dining experience on the water. John and I talked and dreamed of what we would do if we had the opportunity, so we pretty much hit the ground running with the plan that had been formulating for years.” Tanner’s Lakeside opened for business in December 2014. Debbie says beforehand, many improvements had to be made. “We reinforced the building where it was needed and opened the inside up to take advantage of the beautiful view. The old dilapidated inside boat bar was removed. We kept the original pecky cypress bar, built on to it using pecky cypress that we luckily had reclaimed from a previous project (our home).” The next improvement at Tanners will involve the renovation of the beach area. “We plan to provide an outdoor space for boats to come and enjoy live music, food, drinks, volleyball, horseshoes, and corn hole. We also have plans to partner with someone who will provide tours of the lakes, give ski and wakeboard lessons, as well as standup paddleboard, and kayak rentals at that space.” The main dining room at Tanners gives their guests a view of the water and includes an outside, dining area unlike no other in Winter Haven. While there, check out the bar in the rear dining room that’s meticulously covered with pennies. “The penny bar was an idea that I had after seeing a photo of a kitchen floor. We had friends contribute and help lay the pennies. The original bar at the first Tanners location was made of copper so we thought using pennies would be a fun kickback to that bar,” says Debbie. “We are fortunate to be
supported by the people in our community who enjoy the new location.” The menu features innovative new items and favorites from other restaurants John and Debbie have brought with them. For instance, try their popular bacon flavored avocado dip…a favorite appetizer from the Blue Room. Note: There is plenty of space for Private Parties (large and small). Catering is also offered as well. Tanners Lakeside is a ten-thousand square foot, one-hundred fifty seat, restaurant with an (always fresh) seafood & steak ambiance. TAKING THEIR AUDIENCE ON A JOURNEY By Amy Sumerlin “Our sound has grown up,” Brian Sutherland explained proudly, as he walked me through the beginnings and development of the Brian Sutherland Band. Those beginnings, of course, are a tale of college friends who simply got together to jam. After Brian and Zach Rogers (electric bass, upright bass) performed once for a summer camp at Florida Southern—and were actually paid to do so—a seed was planted: They could perform fun music and make a living at it. Soon, they added a third member to their eclectic group, Adrienne Kneebone for vocals. The new trio clicked onstage and off, and were able to play jazz, country, pop, folk rock, or rock ‘n’ roll –which meant that they quickly began to schedule local jobs; their first gig was at Lakeland’s Red Door Wine Market in 2009. While their calendar soon became full, the 38
JULY 2015
group continued to look for ways to improve their already well-loved, across-multiple-genres sound, and they found the improvements by adding additional band members. Sutherland met violinist and pianist Jason Baker while playing in the area, and soon, Baker was a member of the band. “Adding the keyboard and fiddle really made for a great sound,” Sutherland remembered, “but we were still somewhat limited without percussion.” Those limits slipped away when they met Brady Springer, yet another Florida Southern student: “Brady was just a few years behind us,” Sutherland commented. With the five members in place, it was time to
come up with a really cool, new band name to make sure everyone understood the transition from the Brian Sutherland Trio…or maybe not. “To tell you the honest to God truth,” Sutherland said, laughing, “we just couldn’t come up with a band name. “Evidently, we’re really creative with music, but not with names.” The new group, which just replaced Trio with Band in its name, began rehearsing in December 2013, and soon developed their own, unique sound: “This style just emerged from jamming and grooving together,” he continued, “and once we got a couple of songs under our belt, we were tight.” In August 2014, the group, often referred WWW.TODAYANDTONIGHT.COM • FIND US ON FACEBOOK
to as the BSuthBand or just BSB, released their first full length album, which is available on iTunes & Google Play. Never one to turn down an opportunity to perform, BSB continues to book gigs from coffee shops and bars, to weddings and corporate functions, and everything in between. And happily for the group, the reach of those performances now extend well beyond Lakeland and Polk County – their upcoming July tour includes stops in Georgia, South Carolina, and Tennessee. “We’ve done four tours this year out of the area,” Sutherland said. Should you go to one of their performances, I can pretty well guarantee you’ll be pleased, because one of the group’s goals during a gig is to play for every patron there—“from Bach to Beyoncé and back” – including those artists plus more, even Tom Petty and Meghan Trainor. An audience will hear “a lot of music they know; a lot they don’t; and a lot that sounds familiar
