By Amy Sumerlin Photos by Chris Douglas I don’t cook on Friday nights. It’s a rule I’ve come to love, because Friday nights beg for “fun” food, and that usually means Mexican food, or pizza. Our search of this “fun” food will take us around the county, and this past Friday night, we landed in Auburndale, at Sal’s. New to Auburndale – But Not the Area Sal’s just opened the Auburndale location this past February, but had been in Lakeland since 2012, in a strip mall near the intersection of 540A and 98. EARLY START TO HIS CAREER He began his restaurant career, however, much earlier: Originally from Napoli, Italy, Sal Guardascione came to New York in 1991, but quickly made his way to North Carolina, where he had family – and a job. “I started in 1991 at my Uncle Vincenzo’s pizzeria, Elizabeth’s Pizza, in High Point, North Carolina,” Guardascione remembered. His uncle, who has since passed, had been in the business since 1950. Although young Sal started as a dishwasher, by the time he left Elizabeth’s – which Sal proudly told me is still in business in High Point – he was a chef with a number of specialty dishes of his own.

DINING THERE I was accompanied by mom and hubby that night, and when we arrived, we were greeted with live music (think easy listening oldies, the kind you sing along to) and – we arrived close to 5:30 – quickly found a place to sit, although tables started to fill in as the night went on. I was pleasantly surprised by the menu – I expected pizza, salad, and a couple of pasta dishes. Instead, Sal’s menu is that of a full-service Italian restaurant, where you can choose anything from Gnocchi Sorrento to Linguini Ciao Bella to Lobster Ravioli – which, by the way, is Sal’s personal favorite on the menu: “It’s my secret recipe,” he explained, proudly. All the pasta and specialty dishes are available in lunch or dinner portions, and I really like that you can choose which size, regardless of what time it is. Prices for those meals range from $8.99 to $12.99. The appetizer list, too, is impressive, offering everything from Caprese Salad ($7.95) to Steamed Clams ($9.99). The salad list is also wonderfully long and varied, listing several options that would normally make me exceedingly happy in my regular journey to avoid carbs. Next time I go, I will probably choose either the Antipasto Salad ($7.95) or the Salmon Salad ($10.99), just two of the ten options on that part of the menu. That day, however, I was going to eat carbs. I knew Mom would get pizza – she has become something of a pizza aficionado – so I wanted to choose something else, and I landed on the Hot Italian Sub ($7.76), one of 17! Choices on that part of the menu. We also ordered traditional wings ($6.95) to share. Hubby decided to go for the Spaghetti and Meatballs, dinner portion ($10.99), which came with a side house salad. And let me tell you about that salad. Hubby decided to push it my way, simply because he wanted to save all available room for the spaghetti he was awaiting. First, it was incredibly generous – for many light eaters, it could have been the entire meal. It was simple, featuring just lettuce, tomato, red onions, black olives, and copious amounts of mozzarella cheese. It was one of the freshest salads I have eaten outside my own home, and I scarfed every bit of it before my sub was delivered. We did not wait long on anything, and my sub was quickly placed before me. It was huge! Thankfully, it came already cut in half, and I knew immediately I would only be able to manage eating one of those halves. It was delightful: The bread, although I am admittedly not an expert,

was superb – tender and crisp at the same time – and filled chockful of ham, provolone cheese, salami, capicola, lettuce, onion, Italian dressing, and topped with two uber fresh tomato slices. Wondering about hubby’s spaghetti? The first thing I noticed was that his meatballs were the size of the Empire State Building, but he was even more impressed with the marinara sauce; he said it was one of the best he had ever had. As you may have guessed, the serving was more that generous – perhaps he should have just gotten the lunch portion – but this way he was able to take about half of it home. THE PIZZA And then there was Mom’s pizza. First, she had to decide which one she even wanted because the menu offers New York, Sicilian, Chicago, and Stuffed Pizza Options. “I can make any kind of pizza you want,” Sal explained. Under those options, you have more options and sizes (including what Sal called the “Biggest Pizza in Florida – 28 inches –”, available for $25 (with cheese; additional toppings are $5 each). “You’ll have trouble getting it in the car,” he said,
with a laugh. As for those toppings, there at least 30 to choose from. Mom decided on the New York Style Personal Supreme Pizza ($9.00) and, assuming it would be the Personal size she is customarily used to seeing, with a side salad. You already know about the side sale and as you’ve probably guessed by now, the Personal is definitely large enough to share. After eating her salad, she only managed one slice. (The rest of the pizza was happily devoured by all of us the next day.) DO YOURSELF A FAVOR And try Sal’s. If you’re thinking that Auburndale is too far away, they will deliver within a 10-mile radius. Now your only problem is figuring out what to get – and with whom to share it. One Year Later “This nation was founded on one principle above all else: The requirement that we stand up for what we believe, no matter the odds or the consequences. One year ago, I received an e-mail from my editor, Chris Douglas. He told me that one of our columnists, Brian Bruchey, was retiring, opening a position for a new monthly columnist. He asked me if I would take the position. I accepted, of course. Why wouldn’t I? I get to write about whatever I want—yes, whatever I want! As long as I avoid strong language, I have carte blanche to write about any topic. I’m half-convinced I could repeat the sentence “This is my column for the month...!” until I fill my 600word quota and Chris would still publish that column. (I’m kidding, of course!) So here I am, one year later, having already written twelve columns, and with complete freedom to write about anything; and yet I find myself writing about one topic: politics. This is ironic, as I don’t consider myself very “political.” I have some right-wing views and some left-wing views. As such, I consider myself an independent. I rarely talk about my politics with anybody else, not even with friends or family. Yet here I am expressing my views to complete strangers through a monthly column. So why do I write about politics if I’m not political? Simple. Because I don’t want to write about politics. Personally, I would like to write about anything else. I envied how Brian could wax poetically about whatever random thought was floating through his
head. I enjoy how Erica Smith can write essays on esoteric concepts by pulling random quotations. I would like to be like them and write about anything else. Yet I’m always drawn back to politics. I can’t help it. I turn on the television or look at my phone and see some news report about the latest dumb thing a politician said, or some tragic event that could have easily been prevented. I can try to avoid politics, but politics can’t avoid me. I feel I have to say something about it. Not saying anything would be admitting that everything’s normal. It’s not! Two years ago, an angry mob marched in Charlottesville carrying tiki torches, shouting “the Jews will not replace us”, and running over a woman with a car, all to protest the removal of a statue dedicated to the side of the Civil War in favor of slavery. This is not normal! We live in a world where not only the Amazon rainforest, but also the Arctic tundra—the negative-degrees-below-zero-yearlong Artic!—is on fire, and yet somehow people still think that global warming is a “Chinese hoax.” This is not normal. Our current president is a failed businessman who bankrupted countless businesses, including a casino, and who seems to believe, in his infinite wisdom, that hurricanes can be nuked away. This is not normal. I have the privilege to express myself through this column, and I wish to use that privilege to raise concerns about important issues. Why? Because the world is broken and in need of fixing. None of this is normal. This is not normal. And I refuse to accept it as normal. That is why I speak out. ichael Lubecke (LuBeck) has been playing music professionally his whole life. Ever since the late 60s/early 70s, he has had the opportunity to perform alongside big names such as Skid Row, Pat Travers, and The Wallflowers. Even after having “semi-retired” and moving from Chicago to Winter Haven, he performs at several venues within and outside of Polk County. He’s a regular at such places as Tanner’s Lakeside and Apple Lounge. As someone with an extensive, seasoned musical career, he knows

how it feels for up and coming performers to take to the stage and stand before a crowded audience. That’s why he started the Open Mic Night at Apple Lounge: to give newcomers an opportunity to test the musical waters. LuBeck has been hosting the open mic night at the Apple Lounge every Tuesday night for the past 5 years. “The showcases that I put together are designed for up and coming artists for them to hone their skills and their craft and add more songs to make that library of songs, build their confidence, and

get some stage time,” he said. In honor of 5 years of open mic nights, LuBeck will be hosting Applelooza at the Apple Lounge on Oct. 22 from 7 p.m. to 11 p.m. This musical event offers anyone willing to sing or play a tune, regardless of their level of experience, a chance to perform before a live audience. This year’s event will feature a diverse blend of new up and coming local musicians, along with several local pros, offering everyone a chance to support each other and their music while having an overall good time.
This year’s roster includes such local talent as Mickenzie Peisher, Travis Williams, Lance Williams, Wiley Christopher Widner, Adrienne Richards, Jim and Judy Taylor, Joey Foley, Rick Graham, Scott Hooker, and Keith Slover. Closing the show will be LuBeck’s band, “Iconic Opera”, which includes himself on guitar and vocals, Pablo Sabata on bass and vocals, and Matt Gehlsen on drums. “I give them the opportunity to get the feel of being relaxed,” LuBeck said. “I’ll be honest: many of the people who started doing this couldn’t end a song, but over

the last three to four years, these guys have been playing and their confidence is up.” Ever since he was young, LuBeck has loved music. He started as a drummer in the Naval Drum Bugle Core, and later worked for a prominent bass guitar company to endorse their products. Throughout the 80s, he had been gifted with the privilege of performing alongside many big-name musicians and bands. After living in Chicago and touring across the country for many years, he eventually settled down in Winter Haven eight years ago. Despite being “semi-retired”, LuBeck would continue to perform music at various venues throughout the county. He tours at least twice a month. His favorite venue is the Apple Lounge, while his most frequented venue is Tanner’s Lakeside, where he has performed once a month for the past six years. When he started open mic five years ago, he wanted a place where both amateurs who are barely wet behind the ears and old-time experts who have been around the block many times before can perform together, support each other’s endeavors, and enjoy each other’s music.
He knows that many newcomers are skittish about performing for the very first time. So he created open mic night as a judgment-free environment to test out their music to see what works and see what can be improved. “I am looking forward to the opportunity for the newer play-
thing. Even though this is my fifth anniversary hosting this thing, I want to make it about the support that has been given to the Apple Lounge and open mic night, and the musicians that come to support it, and the musicians who come to better their stage appearance. I

Q: What have been some of the more interesting locations you have investigated? A: I think that the Grand Hotel in Lake Wales is a real interesting paranormal hot spot. Every time that we have investigated the hotel, whether it be the premises or we went in, we always [found] really fascinating evidence. One of the most recent residential cases was at Indian Lake Estates. We had a client contact us, stating she was experiencing certain activity. We went out and did a total research on the location…Turned out it was linked to a gentleman who passed [away] there. Q: Have you seen any full body apparitions? A: Yes. We did an investigation at the Old Corinthian Church…in Frostproof. I have a device called a full thermal imager. It is able to see in very different temperatures. And we were able to see a full body apparition through the imager as well as orbs and other different types of entities that were out there.

Q: What do the spirits have to say when you talk with them?
Is there something strange in the neighborhood? Is there something weird and it don’t look good? Who you gonna call? Not the Ghostbusters. Instead, call Ghost Girls Inc. They’re afraid of no ghosts!
A: I really feel it is unfinished business. Let’s say someone commits suicide. That is the worst way you can die. A lot of people who do it come back because they feel they made a mistake, or they go back to the place where they committed the act to undo what they've done. A lot of time, it is unfinished business. They want to let their loved ones know that they are okay and that they love them. They want you to know they are there. Can you imagine being ignored and doing things to get people’s attention…and they acknowledge you and are interested in what you say? That is how paranormal investigations are. We allow the intellectual spirits to communicate to us through our technical equipment. It is absolutely fascinating.
Ghost Girls Inc. is a local non-profit group of professionals who have been studying and investigating paranormal activity throughout Central Florida. They may not have proton packs and P.K.E. meters, but they use other special equipment to track and communicate with ghosts. Since 2008, they have investigated several alleged hauntings in Polk County. They have studied major locations such as the Dixie Walesbilt Hotel and Rhodesbilt Arcade in Lake Wales and the Corinth Primitive Baptist Church in Frostproof. The leader of the Ghost Girls, Joley Robinson, provided some insight into their many ventures into the boundless realm of the supernatural. Here’s what she had to say: Q: How did you get started with investigating the paranormal? A: I had experiences of my own that were definitely profound, and it led me to an interest in the paranormal. I began studying and researching, and that is how it all began. I had experiences of my own, and it was profound to the point where I had to find out as much as I could.
Q: What kind of investigations do you go on? A: We have spent thousands of hours in investigations and research. We have spent years building our reputation and credibility. We probably get one to two cases a month. Some we refer to the Catholic Church for cleansing. The Catholic Church takes a serious position on things like this and are very helpful to families in need of their assistance.
Q: What do you do during your investigations? A: The investigation begins with our clients contacting us. We do the first interview with them to find out what is going on, what type of activity the client is having. Our next step is to do a complete research study on the property, building or home. We find out who previously owned the location and if there is any unusual happenings or events including deaths, murders, [or] suicides. Unfinished business. Every location has a history or story to tell. It’s almost like a puzzle piecing together the information to figure out why the location has activity. It’s fascinating because it all comes together with answers.

A: The Bible states there is a battle between good and evil. Every single day we are faced with that. Most people don’t see it…[but] there is a battle every day between good and evil. I think when it comes to the paranormal, there are different ways to approach it. We approach it with an analytical, scientific view. We come in with scientific equipment…and we either disprove or prove the haunting. Sometimes, it can be natural circumstances…but how we go into it, we go into it with a technical, scientific view. We do not supersede those bounds with conjuring anything…I am a devout Christian, and we pray before every investigation. We call upon God into our investigation. We know there is a fine line there that you can cross, and we know once you cross that line, you are entering a dangerous situation, especially with demonic and poltergeist activity. You have to be extremely careful. Q: What are your thoughts on people who don’t believe in the paranormal?
Q: What’s the next step? A: The next step is doing a technical sweep of the location to get a base line reading. Then we can set up a night investigation. It’s always best to do the night investigation close to or on a full moon. As you have heard, the full moon injects the atmosphere with energy and enables ghosts or spirits to communicate.
Q: Some Christians would worry that this line of work treads too closely to witchcraft or the occult. As an avowed Christian, how do you balance your religious faith with the supernatural?

A: There are some things that go beyond human comprehension. Some of those things people do not want to know anything about it. But over the years, the field has become more respected. 75 percent of Americans believe there are things that cannot be explained, and half of them have experienced paranormal experiences themselves. So what I would say to the naysayers is to be open-minded and research it…and find out there is more than meets the eyes. Spooky Polk County Sites Joley Robinson and the Ghost Girls have investigated many haunted places throughout Polk, and here are just a few of the more notable locations:
Frostproof Ghost Light If you ever find yourself driving through Frostproof late at night, consider stopping at the four-way intersection of West Bereah Road and County Line Road. Park your car there, wait patiently, and you might discover a mysterious light floating next to you. Since the 1950s, the Frostproof Ghost Light has been haunting that lonely road and confusing many residents. Some believe it to be the lantern of an old railroad conductor who died of a heart attack while waiting for an incoming train, a train he continues to wait for to this day.
Bereah Ghost Town Located between Frostproof and Avon Park, this ghost town was once a lively farming community that included a two-room schoolhouse, sawmill, and turpentine still. Most of the buildings have long gone. All that remains is
the old Corinth Primitive Baptist Church and cemetery. However, many former “residents” are rumored to remain there. Many ghost sightings have been reported near the old church and cemetery.

Historical Polk County Courthouse
The original haunted spot in Polk County. If you drive to the east side of North Wales Drive, you’ll find a strange hill. Park your car in neutral at the base, and watch as your car defies gravity by rolling upward. Legend has it the hill was the site of a great battle between an angry gator and an Indian chief. Since then, vehicles have been seen mysteriously rolling up it. Is this the vengeful spirit of the gator, or the chief trying to protect people?

Now the Polk County Historical Museum, the old courthouse once had many notorious criminals pass through its doors. As such, the former jail has been a gathering place for many malevolent spirits. Two of the most notorious are those of the Mann brothers, two criminals who were hung on a tree outside the courthouse for killing the town’s beloved sheriff. To this day, their bodies have been allegedly seen still hanging from that tree.
Since opening in 1927, the Dixie Walesbilt Hotel in Lake Wales had taken in many guests. Many have long checked out, while other “guests” continue to remain to this day. The historic hotel has been the site of many ghost sightings. A woman dressed in yellow is alleged to

39 Miles of Treasures Take a Tour of Scenic Highway While Shopping Yard Sales
By Elizabeth Morrisey Head out for a drive along the Ridge Scenic Highway November 2 and you might just find a gem or two hidden along the way. It’s the 13th annual 39-mile Scenic Highway Yard Sale where drivers can enjoy the rolling hills and stop to do some shopping. From Highway 27 South of Frostproof to Highway 17/92 in Haines City, one can stop at several locations where booths have been set up. “Our goal is to encourage people to drive the scenic highway,” says Jennifer Nanek, Lake Wales city clerk and representative for Ridge Scenic Highway Cooridor Management Entity. “We figured out a way to bring awareness and raise money. It’s gotten very popular.” Nanek says customers can buy just about anything – plants, household items, clothes, books, jewelry and baked goods. She expects thousands of people to drive the highway and shop. The scenic highway corridor travels through the historic communities of Frostproof, Hillcrest Heights, Babson Park, the Village of Highland Park, Lake Wales, Lake of the Hills, Dundee, Lake Hamilton and Haines City. Vendors can pay $10 to set up a table at an 30 OCTOBER 2019
official location which will be marked on a map. However, “unofficial” spots not marked on the map also show up. “We didn’t expect unofficial sites to also pop up,” says Nanek. But she says that’s a good thing. Pat Chernishkin, with Dundee United Methodist Church, says they are an official place to shop marked along the corridor. Ten by ten spaces in the parking lot can be rented for $15 and vendors can bring in any items to sell. “Everyone pitches in,” she says. “It’s a good community activity. We saw over 1,000 people last year.” This is the 4th year the church has participated in the yard sale. They were holding a festival and realized it was the same day as the yard sale so they decided to combine their event with the outdoor sale. After browsing through the church parking lot, head inside to cool off and grab some food while continuing to shop. The church holds its own fundraiser indoors and sells things, such as Christmas décor, books, crafts and other items. “The event gives the church an opportunity to meet more people in the neighborhood and let them know what services we can provide for those in need, says Chernishkin.
Maps for the yard sale can be found online and picked up at different locations along the way. The sale will run from 8 a.m. to 3 p.m.

Someone Has To Care... Climate change, saving the Earth, the cutting down (and burning) of our precious rain forest – all hot topics in the news on an almost daily basis. This is nothing new but, yet only small strides are being made. The anti-pollution campaign from 1971 featuring the Crying Indian saddened by the land being desecrated and polluted by people could have very well been a scene out of 2019…except for the fact that people would now call it “racist” and “insensitive” instead of just understanding(and hearing) the basis for the message: that we are polluting and killing our beautiful Earth. Pollution is not just an American problem, it’s a world crisis. Plastic bags, plastic straws, plastic bottles, Styrofoam packaging are just the tip of the garbage iceberg. I blame people for starting this cycle by being lazy! “It’s not MY problem” “It’s someone else’s mess to clean up” NO! It’s OUR problem. In my opinion, as with everything else, it all starts with how we are raised and taught as children. Yes, parents, it ALL starts with you. If your child keeping his room clean, being made to pick up their toys and helping clean up their messes helps begin the lessons of respect for one’s personal space and feeling pride in an accomplishment then please, let the teachings being. The simplest notions are the most powerful: lead by example. Make better purchasing choices, recycle, reuse, and pick up after yourself. I try to lead by example each day, from the choices I try to make while at the grocery store to taking my dogs on a walk. Recycling, yes, this has been a hot button for me for many years. I recycle as much as I possibly can, even though the city, county, state levels are accepting less and less items for recycling because “they aren’t making as much money”. How about the (recycling) department be considered non-profit? To me it provides a very important service for our na-
tion and should not be out to make a profit. How about requiring big business to use more eco-friendly packaging without all the (toxic) resins in plastics and dioxins that make up Styrofoam so that more items can be recycled? How about using more glass; like the good olé’ days? Glass is cleaner and can be used over and over. How about people stop throwing out their trash on the side of the road and in our water systems? Put your trash in the trash cans…hence the name. We are such a selfish greedy disposable ignorant society. I’m not sure how this epidemic can be rectified. People want to be paid $15 per hour to flip a burger but don’t want to go out of their way to pick up trash and put it in the proper receptacles. Big Business wants to continue to make millions – billions of dollars but don’t care what they are destroying in the process: people’s health, our planet only caring about their bonuses and bottom lines. Each day when I take my dogs for a walk, I always make it a point to pick up trash that others dump along the road. I recycle what I can and throw away the rest. Why some may ask? Because someone has to care. For the thousands that don’t care, the ones that are creating these problems, you must have the “Me’s” that do care. I don’t feel like I’m cleaning up after others; don’t get me wrong, it makes me angry, but I feel like I am saving the land, the lakes, the animals. It’s my small way to lead by example, maybe make someone think twice before dumping their trash which in turn helps destroy Mother Earth. What can you do to make a difference? Don’t just complain about it, do something about it. Be the leader in your household. Be the leader at work. Be the leader amongst your friends. Blaze is a calico female Domestic Shorthair mix. She is 3 months old. Blaze is a little shy at first but if you give her time she will become your best friend! She also is good when you give her a bath! Blaze would love to be able to find her Furever home!
NELLIE
Nellie is very loving and sweet. She is a little skiddish until she gets to know you and is nervous around sudden movements or loud noises. She would probably do best in a home without children.
ROSCO
Rosco is a brown male Black Mouth Cur mix. He is approximately 1 year, 3 months old. Rosco is a happy and hyper boy that loves to run in the yard. He doesn't like to be left outside alone or else he will dig. He has never been around other dogs but loves children of all ages. Rosco has a sensitive stomach and skin and needs an owner who will have time for him and his high energy.
KING
King is a male Labrador Retriever and American Pitbull mix. He is approximately 7 months old. He is a friendly and playful dog. He likes kids of all ages and othe r dogs as well. He is house trained and learning basic commands.

Veterinarian of the Month Devon Watts was born and raised in Winter Haven, Florida and lived there his whole life until he left to pursue a bachelors in Marine Biology at University of West Florida. His interest in animals has been present since a very young age and he frequently visited zoos and animal exhibits at any wildlife themed park in the area. He attended University of West Florida for his bachelors of science in marine biology with a focus on preparing for the possibility of vet school. While there he spent time working at the Pensacola Humane Society both as a volunteer and a kennel technician and one particular animal became ill and observing his treatment cemented his desire to pursue a career in veterinary medicine. He graduated from St. George's University in January of 2019 and has been practicing at Heart of Florida Animal Hospital since February. In his free time he likes to build and paint models for tabletop games, play games with friends and watch movies usually with his pothound Soursop close by.
