The Chicken Chronicles, Part 3 HARVEST Love and eggs are best when they are fresh — Russian Proverb It may be hard for an egg to turn into a bird: it would be a jolly sight harder for it to learn to fly while remaining an egg. We are like eggs at present. And you cannot go on indefinitely being just an ordinary, decent egg. We must be hatched or go bad. — C. S. Lewis It may be the cock that crows, but it is the hen that lays the eggs. — Margaret Thatcher The thankful receiver bears a plentiful harvest. — William Blake It is hard not to feel a connection to the earth when you are the caretaker of a tiny flock of backyard chickens. Each day, you feel this gentle tug as the “girls” flutter about searching out forgotten scratch, errant bugs and the occasional prize worm. Writer Marjorie Kinnans Rawling probably describes it best with these lines from her novel Cross Creek. “We were bred of earth before we were bred of our mothers. Once born, we can live without mother or father, or any other kin, or any friend, or any human love. We cannot live without the earth or apart from it, and something is shriveled in a man’s heart when he turns away from it and concerns himself only with the affairs of men.” Since Marjorie also kept backyard chickens on her tiny farm in North Florida, I can’t help but think she wrote these amazing words while watching her flock. Like the two previous “Chicken Chronicles,” I am happy to report my husband Keith has mastered the art of hand feeding and each of our tiny chickens, Charlotte, Scarlett, Savannah, Anna and
Emily come running to him at the first sign of treats. Our little flock is thriving and we are now backyard farmers accustomed to the cycle of daybreak greetings, followed by afternoon snacks of sliced grapes and the final evening ritual of securing the coop. Our days now have a permanent construction thanks to the steadfastness of the girl’s internal clock. Perhaps this feeling of connectedness is more of a satisfaction that comes from the daily routine of caring for something so earnest and honest. And, the fact that they return to the coop each evening as the sun begins to dip like nature’s most dependable time piece. Our daily harvest occurs each time the nesting box is checked for eggs. Our flock leader Charlotte started laying without much fanfare and in fact, her first eggs were camouflaged by the coop’s pine shavings and much to our chagrin, it took three days to learn of her new skill. As backyard farming novices, finding those first three eggs was much like discovering a hidden treasure chest. Charlotte’s eggs are sublimely miniature with a golden hue and crack open to reveal a perfectly rich yolk. Now an old pro, she announces each triumph with an egg song cackle proclaiming her the queen of the coop and ruler of the roost. We just grimace and hope the neighbors don’t mind this unusual midday barnyard concert. It is good to sit back and enjoy the harvest of your labors even if it is only one egg a day. As caretakers, we revel in the responsibility of this new endeavor and impatiently wait for Scarlett to join the egg club. QUESTIONS OR COMMENTS info@todayandtonight.com

Polk Museum of Art Presents 3rd Annual Art Crawl
The Jingle Bell Classic races in downtown Winter Haven
Polk Museum of Art proudly presents the third annual Art Crawl, a one-day, outdoor art festival highlighting emerging and innovative artists living in and around Central Florida. Art Crawl will be held 9 a.m. to 4 p.m. Saturday, November 14, in the Museum parking lot. Admission is free. The juried art show will feature about 40 artists from a wide range of visual art media. They will sell most of their artwork for $350 or less, so that attendees who want to support local and emerging artists will find very affordable pieces for sale. A full list of accepted artists is available at http:// polkmuseumofart.org/artcrawl/. Attendees will be invited to vote for their favorite artist for the People’s Choice Award. In addition, the festival will include live music, food trucks, art demon-

strations and booths from other arts organizations. Bands scheduled to play are MrENC & Bump Galletta, DieAlps!, Meat Goats and Fount. Nomad Studio’s art bus, an outreach program, will be onsite to talk about their programs and allow people to paint their bus. Ink Screen Printing will be printing T-shirts. Demonstrations will include “explosionism” art by Drew Lausman, who uses fireworks to paint, and a mural project by Kimberly Wyant of KRaP Art Studio. Art Crawl is sponsored by MIDFLORIDA, Reitzel Foundation and Publix Super Markets Charities and is supported by Crowder Brothers Ace Hardware. Polk Museum of Art in Lakeland, Florida, is a private, not-for-profit organization dedicated to promoting the arts in Central Florida. The Museum is one of the Top 10 art museums in the State of Florida, an Affiliate of the Smithsonian Institution and the only art museum accredited by the American Association of Museums serving the 561,000 residents of Polk County. Museum hours are 10 a.m. – 5 p.m. Tuesdays – Saturdays; 1 – 5 p.m. Sundays; and closed Mondays and major holidays.
Put new laces in your running shoes. The Jingle Bell Classic races in downtown Winter Haven are Dec. 12. Runners, joggers and walkers can all have fun, maybe take home a trophy, and help the friends of The Winter Haven Public Library support the, what else, Winter Haven Library. A 10k race starts at 7 a.m., a 5k run goes off at 8:30 a.m. And for pet dogs that just seem to have too much energy around the house, there will be a 1-mile walkjog-run starting at 9:30 a.m. So children too young to run won’t feel left out; there will be activities for them in Central Park. Entry fees are $30 for the 10k, $25 for the 5k, and $20 for the doggie-jogwalk before Nov. 30. Two events are
$40 and all three cost $50. Runners can register at active. com. 10k and 5k races will be chipped-timed. All pre-registered runners will receive a T-shirt. Late entries cost $5 more. A T-shirt is not guaranteed. Pre-race packets can be picked up at the Winter Haven Public Library, 325 Ave. A, NW, on Dec. 10 and 11 and beginning at 6 a.m. race day. Awards will be presented to10k and 5k participants for Overall Male and Female; Overall Male and Female Masters; Overall Male and Female Grandmasters; and top three in each age group Male and Female.

PORCH I actually took a much needed OUT OF STATE vacation for some R&R!! While driving around the parkways in the mountains of Southwest Virginia, I scanned the radio to refresh my ears to some different country music…and I found it! There has been much controversy this year about women not getting enough air play on the radio, and if they do…it’s the same artists over and over. So I decided to feature five forgotten power songs by strong women. 1. “Whatever You Say” by Martina McBride - I have to admit that even I got sick of the “show off” vocals that tended to dominate most of her songs, but this song is just BAM in your face. If you are angry at your other half, this is definitely the more mature route to take, talking…instead of today’s country which has lyrics that mention kerosene and baseball bats (though I love songs too, a time and a place for everything). 2. “The Last One To Know” by Reba McEntire – There’s nothing better than 80’s long haired Reba music! This song was from her 1987 album of the same name, that she calls her “sadness album.” She had recently divorced her first husband and the songs that poured out on this album were the result of that divorce. I’m sure from the title of the song you can tell that it’s about a woman who was the last one to know about her other half cheating. 3. “Forgive” by Rebecca Lynn Howard - Rebecca was unfortunately a one hit wonder. Her voice is definitely undeniably magnificent. At the time this song came out, it was rare to hear a woman sing the words “So get you some things and get out!” Once again, another song about cheating...but about a woman who isn’t ready to just forgive 12 NOVEMBER 2015
and go on like nothing happened. Country Radio has been a male driven format for so long, that it was surprising to hear such a nondoormat song…and I love it! 4. “Burning House” by Cam – This is the newest song on my list…as far as it’s meaning, I have no idea. Don’t get me wrong, I have some thoughts of what the song “may” mean, but I try not to speculate on too many things in life. Her voice is just powerful, the music is so haunting and the production of the song is flawless. Perfection to my ears. 5. “Good As I Was To You” by Lorrie Morgan - Lorrie has one of my favorite voices of all time in country music. Not to mention that she’s about as down-home as you’ll ever find. She will admit to your face that her love life hasn’t been the best, but it makes for some GREAT music! After looking at my list of songs, you would think that I’m in a disgruntled relationship…haha, that’s far from the truth…I actually JUST got married on October 20th! I just know how I felt driving around those mountain roads and saying “OH I FORGOT ABOUT THIS ONE!!!” and cranking up the volume on the rental car. Fatboy! As I grow older, I continue to grow. That’s not a bad thing if I was growing wealthier, or healthier, or taller, or wiser. As I age though, it’s width. I’m growing wider. I’m no longer the lean, mean, love machine I’ve always told people I was. These days, I weigh in at about 200lbs…give or take ten pounds, depending on how much pizza I’ve
breakfast, lunch, dinner, snacks in between each meal, and snacks between snacks between each meal. I guess it wouldn’t be so bad if I ate nothing but cauliflower, cucumbers, and sweet potatoes, but I hate all of those, so I eat things pretty similar, such as pizza, cheeseburgers, and hot dogs. Close enough for me, anyway. You would think that with the way
Princess is about 3 years old. She is a beautiful calico cat and yes, she is a princess! She gets along well with other cats and likes everyone she meets.
DIXIE MAY Dixie May is a two year hound mix. She is a happy girl who is eager to please. Dixie May knows how to sit and shake hands and lie down when asked. She will make a great addition to any family.

recently eaten. When I was young, my mother use to tell me that I needed to slow down on how much I ate, because my metabolism would slow down in my 20’s, and I’d start gaining weight. By the time I turned twenty, I weighed around 160lbs, which wasn’t too bad. During my twenties, my mother use to tell me that I needed to slow down on how much I ate, because my metabolism would slow down in my 30’s, and I’d start gaining weight. By the time I turned thirty, I weighed around 185lbs, which wasn’t too bad. During my thirties, my mother use to tell me that I needed to slow down on how much I ate, because my metabolism would slow down in my 40’s, and I’d start gaining weight. By the time I turned forty, I weighed around 195lbs, which, okay...this was getting bad. I’ve always been told that it is good for a person to have hobbies. Unfortunately, eating is my favorite hobby. Exercise isn’t exactly ranked high on my To-Do list. Actually, the most exercise I get is probably the walking it takes from the booth to the buffet station. I do a lot of sitting in my job, which is bad. However, to me, it’s only bad because I’d prefer to be lying down on a comfy couch, watching cartoons. During the day, I eat often. I eat
I eat, I would have high blood pressure, high cholesterol, and the diabetes. Amazingly, I have none of those. To make things worse, I just read that eating bacon is just as dangerous as smoking. Cancer apparently, has never tasted so awesome as it does with bacon. I figure one of these days, I’ll have to take my figure more seriously. As it is right now, whenever the subject of my weight comes up, I tell people I still have clothes that I wore in my twenties. It’s true. Of course, I can’t wear any of them, but I still have them. In the back of my head, I kind of hope that maybe I’ll fall into a three month coma, and lose a bunch of weight. People warn me that the way I eat is slowly killing me, and they might be right. Problem is, it’s a nice, delicious, very gratifying, slow death. Heck, if eating Nutella caused people’s heads to pop-off, I’d still eat a whole jar of decapitation. Gooble Gooble Turkey
Turkey time is here. Whether you smoke it, deep-fry it, or simply bake it in the oven – I love turkey day. Of course it’s because I LOVE food but also because I love the tradition of it; the family recipes that we all grew up and must-have on the dinner table - whether good, bad or do-I-have-to eat-that crazy jell-o-ie funky colored salad that Aunt Hazel always brings. The holiday wouldn’t be the same without it. For me, my table from childhood isn’t complete without Turkey, Southern-style Dressing, Giblet Gravy, Chicken and Dumplings, (Homemade) Cranberry Sauce, Sweet Potato Soufflé, Broccoli Casserole, Deviled Eggs and Pecan Pie. As an adult, my taste buds have certainly evolved but on this day, many of these recipes stay the same. It’s a nostalgia kinda thing. My personal favorite Tom Turkey is traditionally baked in the oven basted in its own delicious broth creating a nice golden brown hue on top while also keeping it moist. Yummy! Must stay moist – dry turkey is the death of Thanksgiving dinner. Ain’t no amount of gravy that can salvage the sawdust taste when a turkey dries out. I will admit, that I’ve gotten quite good at baking the holiday bird. When time to go into the oven, I watch that turkey like a hawk. LOL :-) I do not let myself get sidetracked with other chores so setting the timer on my cell phone works best for me. No matter where I am in the house or what I am doing, when that alarm goes off in my pocket – run to check out the turkey. Time to baste and to move that bird around the oven in case of hot spots. This is done every 20-30 minutes. A perfect turkey comes out of the oven and gets to relax for another 20-30 minutes while he finishes cooking and resting. This is super important to follow before you carve up the star of the holiday meal. Since I try not to waste food, I use the turkey giblets and some of the broth in my southern-style gravy and the balance of the broth goes into the southern-style cornbread dressing to help flavor and keep moist not gummy. Cooking a big turkey for the holidays is great but the leftovers can be even better. Turkey carcass is frozen for later to become a turkey noodle
soup or just broth to freeze for use a later date. As far as the turkey meat, after a couple of leftover meals, it’s time to change that turkey into a different look. Last year, I found a recipe that I enjoyed for a quick lunch or easy dinner: Pulled Cran-Turkey Sandwiches (like pulled pork but with turkey). It’s perfect because you are using your turkey but it’s not that same old “casserole” that everyone makes. PULLED CRAN-TURKEY SANDWICHES 2/3 c leftover cranberry sauce (mine is homemade not canned) 3 tbsp ketchup 2 tbsp Worcestershire sauce ½ tsp smoked paprika 1/8 tsp salt 4 c shredded leftover cooked turkey meat ¼ c lower-sodium chicken broth (or use leftover broth from turkey, if so I would skip the extra salt in the recipe) ½ c mayo 4 burger buns, split and toasted 1 c shredded carrots Dill pickle slices for serving 1) In 2-qt saucepan, whisk cranberry sauce, ketchup, Worcestershire, smoked paprika, salt on med heat or until hot. 2) Meanwhile, in mirco-wave safe dish, combine turkey and the broth. Cover with vented plastic wrap and microwave high for 2 min. or until hot. 3) Add cranberry mixture to turkey until well coated. Spread mayo on buns; top each with the even parts of turkey mixture. On top of the turkey add shred carrots and dill pickles. Eat and Enjoy! Happy Thanksgiving! May You Enjoy Every Crumb with those Special People in Your Life. Before he opened in early 2011, the location was formerly Cecil’s BBQ and before that a convenience store. No stranger to the food business, Randy started out at the age of sixteen bussing tables, cooking, cleaning up, and anything else that was required. His first employment was at Lake Region Yacht & Country Club where he learned the business and acquired his cooking skills. Over the years, he worked at other establishments, including Miller’s Ale House and through three owners at the Saltwater Bar & Grill. The goal of being on his own and serving great food at a great price was always foremost in his thoughts, and he decided the time was right. “I decided to put it all together with my brother Aaron Harrison and open our own place. We decided to offer the same great taste customers would expect in a corporate restaurant, but with the prices comparable with a mom and pop shop,” he says and adds that Rachael, his sister is his right-hand operator of which he could not do it without

her. Randy says that Aaron drives a truck and spends time on the road. “But when he is not driving, he’s here.” “My idea was to focus on the customers and food…to open something small where I was able to bend over backwards giving the personal touch that’s missing in many larger restaurants,” says Randy. “People tend to forget about this, but they recognize it when it’s there.” He also wants his forty-seat eatery to be an establishment that caters to the citizens of the area…the locals who live and work here. “People stop by here for lunch, and in the evenings, they bring their families. With spotless wooden floors, comfortable booths and adequate tables, Randy’s is ideal for families and that’s what he likes. “This is my mission. My recipe for success.” Randy’s offers dine-in, fast serve carry out, and curbside service. To place an order or planning a large party, call them for a reservation. Ask about their special menu. Randy states that he is conscious of the needs and wants of his customers and is always looking for feedback on ways to better serve and please. He suggests for guests to “drop them a message” and tell them about their meal experience. The award on the wall indicates his efforts are being met: Best of Winter Haven for a Full Service Restaurant. When asked why he chose the family theme for his restaurant, Randy replied: “Family is really important to me. Without them, I am not sure where I would be today,” he says. “I opened this restaurant to take care of family, and at the same time to take care of other families.” The quote overlooking the dining area expresses his feelings. The Love Of A Family Is One Of Life’s Greatest Blessings. While there, ask about catering for events

Savory Salmon, Chicken Medley and Other Dog/Cat Food Flavors So who are they kidding? Dogs and cats aren’t reading the flavors on the labels, humans are. When you open the can, they all smell the same. That fragrance I believe is called, nasty. My little dog looks at me with very sad eyes if I try to feed him dog food. It’s almost as if he is asking, “Did I do something to displease you? Surely you can’t expect me to eat this. It’s dog food!” I look at the ingredients on the can and he’s right. It is dog food that I end up feeding to the neighborhood possum. Here’s what I really don’t understand though. I will walk that very same finicky eating dog and when we are outside, he will roll in roadkill and try to eat dead lizards and old chicken bones and the foulest of finds on the street. I tell him street meat is unacceptable for dining fare. I end up saying “spit that out” a lot. Perhaps if the dog and cat food people could come up with ways to make the flavors taste like things our animals really love they would eat it. I came up with some flavor suggestions they actually will eat as I’ve seen them do it. We will start with dogs: Mommy’s Favorite Pair of Shoes, Daddy’s Stinky Socks, Road Kill Innards, Lizard Gizzards, Whatever You’re Eating for Dinner, Cat Poop in the Park and Barf Bag Surprise. For cats the menu is more limited: Lizard

Gizzards (these are across the board Florida favorite for canine and feline), Mouse Brains, Dead Bird Soufflé and Fish Parts. This is what I have seen actual animals eat. For puppies, you can add Arm of the Sofa, and Expensive Rug flavors. For kittens, just milk. Kittens are smart. People are not so smart. We keep buying dog and cat food and feeding it to the buzzards who eventually find it in a landfill. Funny thing is, the only thing I can get my dog to consistently eat is a hot dog. I got brave and read the ingredients to those. It is not so far removed from the aforementioned list. Pork by-products, tripe, and mechanically recovered meat make-up the stuff we eat at ball games. Yuck! We are not so superior to our pets. If we like hot dogs (and if you don’t believe what is in them, Google it), how is that much different is what our pets eat off the street? COMMUNITY SNIPPETS Art+Food Party to Have Italian Flavor Polk Museum of Art’s popular series of art parties will take on the flavors of Italy at Art+Food, set for 6:30 to 9:30 p.m. Friday, November 13, at the Museum. MJ: What made you who and what you are? HANK LONGO: When I was 6 years old we moved from Long Island to Waterford, Michigan. My Dad was transferred to be the Director of the FBI Bureau in Pontiac. We moved to a fabulous place in the country. It was this huge hill, surrounded by miles around of connected lakes. I learned to water ski. It was a kid’s paradise with woods, apple orchards and fields. I loved making forts, swimming, diving from trees and wanted to be like Tarzan. We played baseball, basketball, football, had go-carts. In the winter, we would toboggan and snow ski. My creativity came to life, and my Mom, an elementary school teacher, let it blossom.

Professional Writer, Motivational Speaker PART ONE Did you ever turn around because you could feel the presence of someone? That’s what happened to me at the Derry Down Cosmic Music Festival. I noticed a man with a camera and asked if he was filming this for a documentary. I got his card, said our goodbyes and looked at his Website the next day. His experiences were so broad and mighty, I decided he was worthy of a two part article. Hank Longo is a professional writer, motivational speaker, old fashioned storyteller, new fangled video producer, former wrestler, snow skier and currently holds the world-ranked water ski jump record. He just got in the Ski Hall of Fame. But he does more than water sports. He built a log cabin in New Mexico 10,000 feet high in the
Rocky Mountains. He got there by show shoeing. He now lives here and is helping others reach their summits. Listen in. MJ: Has anyone called you a Renaissance Man? HANK LONGO: Yes, it’s flattering. The most flattering was an article Dick Youngblood wrote about me in the Minneapolis Star and Tribune. The article was about an educational program I created teaching 4th, 5th and 6th graders economics, using the Star & Tribune for students to pour over items that had an economic impact. The course was titled “An Educational Space Adventure in Economics. Mission: Gravity Makes The Earth Spin, But Money Makes The World Go Round.” The students pretended they were aliens from the Starship Econ, who traveled down to earth to study its economic climate. It was a follow up to a course I created on starting a small business “The Yummy Cookie Company and the Bicycle Dream.” At the time I owned a gas station (Longo Oil) and a car stereo shop (Sound Around Town). I finished designing and installing a custom car stereo system for the Rock Star Prince’s new limousine. I was the Midwest Region Water Ski Jump Champion had just set a world stunt record jumping over 14 MasterCraft Boats, on ABC’s “That’s Incredible”. Dick described me as “encountering the quintessential man of parts.”

MJ: Talk about your concept of enlightenment. HANK LONGO: It opens the shades on your vision. You don’t let things get in your way that keep you from pursuing your vision and passion. To create, you have to visualize. You need to get above the things that bog you down. Clearly visualize what you want. For example, I love to go to the beach when I want to write. At home, it’s impossible to get unleashed from mundane projects. At the beach there’s nothing to do but be fascinated by the ocean. That relaxes me spiritually and unleashes visions and creativity. MJ: What’s your current endeavor? HANK LONGO: My educational program “SOAR and Make Your Dreams Come True: Lessons to Launch the Success of Making Your Dreams a Reality Now.” It is a 16 lesson educational program that teaches how to visualize dreams and passions to make them reality. By completing all 16 lessons, the student creates a blueprint. The catch is you can’t give up! Thanks to Mrs. Gina Williams, the Principle of Winter Haven High School, I produced my video, teaching the program, with Mrs. Pam Mizelle’s Broacast and Journalism class. My goal is to get “SOAR” in as many schools in Polk County (and the world) as I can and teach how to live your passion. MJ: If you had to sum up what you do in ten words or less? HANK LONGO: Fulfill my dreams, help others fulfill their dreams, please God! MJ: What’s the cohesive core of your work? HANK LONGO: Passion! You have to love what you do. If you wake up each day making a living doing what you love to do, you’re not working; you’re living the dream. Believe in yourself! If you have passion for other people and care, you’re embraced by the people. You share your life with and create inner peace.
