Una visita al tianguis ecológico en Santa Rosa Historia y fotos Por LI VALENZUELA “Que la comida sea tu alimento y el alimento sea tu medicina” es la frase que saluda a los visitantes que asisten al tianguis Itayata que funciona únicamente dos veces al mes por las mañanas en Santa Rosa de Lima, Tututepec, a una hora de Puerto Escondido en dirección a Pinotepa Nacional.

Para conformar este mercado, vecinos de distintas comunidades de la costa y montaña son guiados por el ingeniero agrónomo Eladio Reyes desde el año 1997 y junto a un equipo de colaboradores se les ha enseñado a producir alimentos y hortalizas utilizando abonos orgánicos y alimentos naturales, libres de sustancias químicas (pesticidas o fertilizantes) que luego son certificados por un comité que asegura la calidad de los productos.

A su vez se han preocupado por reintegrar esos valiosos consejos del pasado en medicina tradicional, semillas criollas o

comida típica y poner al alcance de los consumidores esta beneficiosa alternativa nutricional.

El día de mi visita los encontré fácilmente aunque estaban en un lugar provisorio, junto a la carretera, su coordinadora, la señora Yolanda Camacho Callejas explico que las oficinas de Ecosta Yutu Cuii estaban siendo remodeladas, pero pronto el tianguis regresaría a su lugar habitual ubicado en Privada de Lázaro Cárdenas, en la misma comunidad.

La coordinadora explico el desarrollo positivo que han tenido como organización desde que comenzaron cultivando en los traspatios familiares para abastecer el consumo personal, después ampliaron el intercambio de alimentos a nivel vecinal y una vez que la cosecha aumento de volumen lograron organizarse como tianguis, de esto hace ya más de un año y medio. Actualmente la agrupación está integrada por unas doce personas y las beneficiadas son, principalmente, grupos de mujeres de diversas comunidades, etnias y edades que han encontrado una manera interesante de fortalecer la economía de sus hogares.

Por ejemplo, elaboran mermeladas utilizando las frutas de la temporada, por eso varían los sabores según la estación del año, empacan sal de mar en la Pastoría, la flor de Jamaica proviene de Cerro Hermoso

(también cerca del mar) y el café se cultiva en la comunidad de San Vicente, hacia la montaña. En este mercado se comercializan productos corporales, plantas frutales, aromáticas y de ornato así como también animales criados sin hormonas artificiales, igualmente productos ambientales y artesanales, como el guaje o bulé que se extrae del bejuco, planta que crece tanto en Yolanda Camacho, coordinadora de Ecosla costa como en la ta Yutu Cuii. By LI VALENZUELA “Let food be thy medicine and medicine be thy food,” is the phrase that greets visitors to the Itayata open-air market held on two mornings a month in Santa Rosa de Lima, Tututepec, one hour away from Puerto Escondido toward Pinotepa Nacional.

To create this market, neighbors of the different coastal and mountain communities have been guided by the agronomy engineer Eladio Reyes since 1997 and with a team of collaborators have been taught to produce vegetables using organic manure and natural foods, free from chemical substances (pesticides or fertilizers) which are then certified by a committee that guarantees the quality of the products.

They have also worked to reintegrate these recommendations from the past with traditional medicine, local seeds or typical foods and make these nutritional and beneficial alternatives accessible to consumers.

Por LI VALENZUELA Se trata de una historia que sólo puede darse en ciudades pequeñas y alejadas de las capitales, que surge de la iniciativa de un grupo de connotados vecinos y valiosos idealistas que, en un momento dado, pensaron ampliar las únicas ofertas educativas disponibles hace 30 años atrás, cuando Puerto era habitado por unas 10 mil personas.

Conversando acerca del futuro de sus hijos, el grupo denominado “Amigos de Puerto Escondido” (organizador de las “fiestas de noviembre”), imaginó que sería bueno para la comunidad contar con una infraestructura educativa más versátil que preparase a los jóvenes para la vida universitaria evitando viajar a Oaxaca para obtener educación de calidad. Este patronato lo conformaban el Lic. Lorenzo Hernández Ahedo, Ing. Eduardo López Jones, Lic. Rogelio Conde Pineda, Lic. Enrique Pérez Luna, a quién consideran el “más inquieto y soñador”, por don Daniel Bramlett Lomelí y la señora Eva Peña Durón, según el documento enseñado por el ex director de la PREFECO, Ing, Erasmo Ventura Durán.

“Los niños fueron creciendo y no habían otras opciones más que el CONALEP (ofrecía un bachillerato terminal, o sea, los alumnos no podían entrar a la universidad, ahora sí) o la prepa Alejandro Pombo, que dependía de la UABJO, y era de carácter particular” recuerda el Ing. Remembering origin of “las prepas”

By LI VALENZUELA This is a story that can only take place in small cities away from the capitals, and begins as an initiative of a group of neighbours and idealists: they wanted to expand the only available education offered thirty years ago, when Puerto had a population of about 10,000 people.

In discussing the future of their children, the group named “Friends of Puerto Escondido imagined it would be good for the community to have a more versatile educational infrastructure that prepared young people for university and avoided the trip to Oaxaca for quality education.

A trusteeship was formed by Lic. Lorenzo Hernández Ahedo, Ing. Eduardo López Jones, Lic. Rogelio Conde Pineda, Lic. Enrique Pérez Luna, who is considered the “most restless and a dreamer”, Daniel Bramlett Lomelí and Eva Peña Durón, according to a document of the

former director of PREFECO, Ing. Erasmo Ventura Durán.

“The children were growing and there were no other options aside from CONALEP (which at the time offered a limited high school diploma, meaning the students could not enter university) or the prep school Alejandro Pombo, which depended on the UABJO, and was private,” recalls Ing. Elesban Toledo, father of three and one of the deputy directors of the Preparatoria Federal por Cooperación Puerto Escondido, PREFECO, an institution that started as an annex of the Preparatoria Emiliano Zapata for two years.

It was seen as being urgent to begin the new classes soon while official certification was in process, which occurred in June of 1988 and changed the name to “Preparatoria Puerto Escondido.”

registered students. At the start of the following year there were 53 students registered and this number has increased over time.

PREFECO has initiated over twenty graduating classes.

Although there were difficult times when teachers were not able to get paid, they continued working because their main goal was to “provide education to all of the children of this city,” says Ing. Elesban Toledo, one of the first teachers, together with Ing. Marco Antonio Chávez, Lic. Martha Reyes Carmona, Francisca Esther Iglesias, Lic. Enrique Pérez Luna, Arq. Emilio Bourguet de León, Dr. Ismael Alonso Toledo, Ing. Concepción Castro, the accountant Basilio Mendoza Bohórquez y Lic. Gabriel Suárez.

They were honoured at the 25year anniversary of the school in 2011.

Buffet Lucy: Vinieron por seis meses — en 1969 Comenzando el año 2004, el día 12 de enero abre sus puertas en el lugar ya de todos conocido como “Buffet Lucy” comida para llevar (aunque si lo prefieres puedes comer ahi), la Sra. Lucy después de trabajar 17 años en una farmacia de su propiedad decide dejarla y pasando un tiempo de inactividad, en la cochera de su casa pone una mesa con algunos platillos y un letrero con “comida para llevar” a la media hora de haber salido se acabó todo y así fue con los demás días, hasta que decidió junto con su esposo el Sr. Don Manuel abrir el establecimiento sobre carretera costera, abierto de Lunes a Sábado, a las ocho empiezan con desayunos y la comida a partir de las 12, si vas en jueves puede que haya o paella o cochinita pibil, estos platos los ofrece cada 15 días, son especiales, por que también hay sopa de verduras o pasta, cremas, tacos dorados, ensaladas, arroz y frijoles, sólo por mencionar algunos.

Don Manuel por muchos años trabajo para el entonces Banco de Comercio (ahora bancomer) vino a Puerto en el año de 1969, sólo por seis meses y eso dijo a su esposa Lucy, y se quedaron, ellos han sido téstigos del avance en este bello destino turístico, su hija de nombre también Lucy les ofrece su apoyo, ellos dicen que es se brazo derecho.

Ropa Vieja Lucy nos compartió una receta típica de su pueblo natal Tuxtepec, Ropa Vieja y aqui esta la manera de preparse: PASO 1: Ingredientes 1kg. de carne de res 1/2 cebolla 3 ajos Sal la necesaria 2 pimientas gordas 3 hojas de laurel Con estos ingredientes se pone a cocer la carne hasta que este suave, y se deshebra y reserva.

PASO 2: 6 jitomates 1cebolla 2 ajos 4 cucharadas de perejil 6 huevos 4 cucharadas de aceite Picar el jitomate, cebolla, ajo y freír en el aceite y sazonar, agregar la carne con una taza de caldo (del caldo donde herviste la carne), en un tazón revólver los huevos y agregarlos y por último el perejil, dejar cocinar hasta que los huevos estén listos y servir con arroz o frijoles refritos.

Buffet Lucy: They came for six months — in 1969

Ropa vieja, Buffet Lucy

Ropa Vieja Sra. Lucy shared with us her recipe for Ropa Vieja, a dish typical of her native town, Tuxtepec.

STEP 1: 1 kg of beef Half an onion 3 cloves of garlic Salt 2 large peppers 3 bay leaves These ingredients are cooked until the beef is tender. The meat is then shredded and set aside.

STEP 2: 6 tomatoes 1 onion 2 garlic cloves 4 tbsp parsley 6 eggs 4 tbsp oil Chop the tomato, onion and garlic and fry in the oil, and season; add the beef along with a cup of its broth. Beat the eggs and add them and the parsley. Cook until the eggs are done, and serve with rice and beans.

It was on the 12th of January 2004 that the doors opened at what is now well known as Buffet Lucy, Comida Para Llevar.

Sra. Lucy, after working for 17 years at the pharmacy she owned had decided to quit that business and take a break.

One day, on a whim, she put a small table in the garage of her home and set out various plates of food and a sign reading “Comida Para Llevar,” or “Take-Out Food.” Everything was gone within half an hour.

So Lucy continued until she and husband Don Manuel decided to open a restaurant at the corner of 2a Poniente and the Coast Highway, where Buffet Lucy remains today.

Open from Monday through Saturday, Buffet Lucy opens its doors at 8:00am, offering breakfast until noon, then lunch until the late afternoon.

A steady stream of customers arrives throughout the day, most taking their purchases with them but many remaining to enjoy the ambiance and eat their meals inside the restaurant.

A very popular dish at Buffet Lucy is the cochinita pibil, slow-roasted, pulled pork of Mayan origin, which is offered every other Thursday. Other great dishes include vegetable soup, pasta, tacos dorados, salads, and rice and beans.

Don Manuel worked for many years in the banking business, arriving in Puerto with Lucy in 1969 to work for Banco de Comercio, now Bancomer. It was only to be a six-month stay, but here they remained despite the lack of many services. They speak fondly of the days when beaches such as Puerto Angelito were pristine, untouched by palapas or other signs of human activity.

After a time Don Manuel quit banking and went into agriculture, growing peanuts and other crops for a number of years.

In the restaurant, their daughter, also named Lucy, is their “right arm,” working alongside her parents to satisfy the appetites of their many customers.
