The Surgical Option

THERE IS SO MUCH ATTENTION ON INJECTIONS TO TREAT FACIAL WRINKLES THAT SURGERY IS OFTEN AN OVERLOOKED OPTION. STAYCATION We love the idea of a staycation, but it seems like we never really make the most of what’s close! Change it up this summer by staying in one of Lexington’s many hotels, B&Bs and airbnbs. RAFTING AND TUBING There’s nothing better to cool you off during summer heat than hitting the water. Central Kentucky offers lots of opportunities to make a splash – from kayaking to boating – but we especially love tubing. It’s the perfect lazy afternoon activity!

TRY TIE-DYE This groovy hobby has made quite a comeback! TikTok has tons of amazing how-to videos with tips on ice dyeing, bleach dyeing, folding techniques and more. And if all of that sounds complicated, trust that tie-dye is the DIY project where there are no wrong answers!

SANDERS CAFÉ See the birthplace of Kentucky fried chicken! The newlyrenovated museum has interactive exhibits (as well as tons of selfie opportunities) for you to explore. It’s a wacky Roadside America experience. It also happens to be a working KFC, so you can dine in while you’re there.

LEXINGTON LEGENDS AND KENTUCKY WILD HEALTH GENOMES Enjoy the official sport of summer up close and personal! While the fun on the field is worth the price of admission alone, the promotions can’t be beat. From fireworks nights to fun giveaways, there’s a lot of entertainment happening down at the Wild Health Ballpark.

GET THRIFTY Lexington’s many antique malls and thrift stores offer tons of treasures just waiting to be discovered. It’s a great way to spend a summer afternoon indoors.

THE SHELL GROTTO The Headley-Whitney Museum offers a peek at beautiful bibelots and more, and that’s worth the $10 admission alone (children 12 and under are free). But it’s the Shell Grotto that makes us think of summertime. Added onto the grounds in 1973, the walls, floor and ceiling are covered with shells, coral and fossils. It’s an experience quite unlike any other in Kentucky.

BARBASOL CHAMPIONSHIP July 7-10 For golf fans, this is the ultimate event of the summer. This PGA Tour event at Keene Trace offers the chance to get close to the superstars of golf.

Simpson & Co. Painting Contractors: Mike Simpson knows a thing or two about running a successful business. Simpson & Company was formed almost 40 years ago when Mike was a graduate student at the University of Kentucky working to supplement his teaching stipend. He was painting part-time for a remodeling contractor during the housing boom of the early eighties. Popular subdivisions such as Hartland, The Woods, Andover, Firebrook, and Equestrian Woods were all under construction at the time, and Mike saw an opportunity. Mac Crawford of Crawford Builders recognized Mike’s efficiency and attention to detail which was lacking in the painting industry at the time and suggested he start his own company. He began to lay the groundwork and decided to suspend his graduate studies

A Family Business Built on Integrity

in June of 1983 to form the painting company that bears his name today, Simpson & Company Painting Contractors. Always one to “play by the rules," Mike still prides himself on trying to do things the right way. The size of the company has waxed and waned significantly since its humble beginnings when Mike worked every day alongside 3-4 other painters to build the business. In the 90s when things were booming, he employed upwards of 90 painters and had four estimators. Today, he has an employee pool of 25-30 painters and three estimators. The market has changed many times throughout the years, and the company has had to adapt to “boom and bust” cycles along the way.

Exterior Painting-To Paint or Not to Paint? This past year we have painted the exterior brick on several homes for the first time. The most common question we get is “will it be high maintenance?” The answer is no. Of course, the key to the successful painting of brick is predicated on proper surface preparation and the correct product selection. You must start with a clean surface free of dirt, mold, mildew, algae, and efflorescence. This may or may not require pressure washing. Often, a good scrubbing with a brush and detergent is all that is needed. We only pressure wash in extreme circumstances. The injection of water into various surfaces can do more harm than good on most houses. There is no substitute for a good old-fashioned “hand washing," which is how we prepare all our exterior repaint projects. Once the surface is clean you must determine whether a primer is needed before the finish coat is applied. If the brick is shiny or glazed in appearance, then an acrylic bonding primer is recommended prior to the finish paint application. If the brick is porous, no primer is needed if the correct finish product is selected. We use masonry coatings designed specifically to be self-priming for this application. Two coats minimum are necessary for adequate “film build” resulting in proper protection and adherence to the brick. Most people select a satin finish, which has a velvety look and is very pleasing to the eye. Various sheens are available, and the color selections are endless. If all the correct cleaning protocols are followed and the appropriate products are used it will be a successful project. Brick is just one exterior substrate that homeowners are painting. Simpson & Company is seeing many new homes being built utilizing wood and cementitious composite materials for the siding and trim. The correct preparation and product selection will keep these surfaces looking great for years to come.

goes someplace where he doesn’t recognize someone he knows. Having witnessed tremendous growth over the last 40 years, he remembers when most all arteries feeding into Lexington were still two-lane roads. He believes the city has challenges in the way commercial and residential developments grow and how they accommodate all the increase in traffic. His hope is that the requisite civil engineering plans are for the future and not just to meet the immediate accommodations.

Things to Keep in Mind When Considering a Painting Project: Mike suggests making sure the company is properly insured with general liability insurance and workman’s compensation insurance. This is designed to protect you as the homeowner against property damage or an injury to a worker while working on your property. Homeowners should only do business with a company that can demonstrate competency about surface prep and product selection. Finally, remember the “lowest” price is not always the “best” price. Regret over selecting a contractor that does not produce up to your standards remains long after the contractor is gone.

Caesar Dressing 1/4 c. lemon juice 2 cloves garlic, chopped 2 T. mayonnaise 2 tsp. Dijon mustard 1 tsp Worcestershire sauce 1 c. olive oil 1/3 c. Parmesan cheese, grated Cracked black pepper Combine lemon juice, garlic, mayo, mustard and Worcestershire sauce in a food processor or blender until smooth. On low speed, slowly drizzle in the olive oil, processing until thickened. Add the Parmesan, pausing until combined. Season to taste with cracked black pepper.

Tasty Croutons 3 T. olive oil 2 cloves garlic, chopped 1/2 French baguette 2 T Parmesan cheese, grated or shredded Preheat oven to 350F. Line a large baking sheet with parchment paper. Combine olive oil and garlic in a bowl. Press the mixture through a fine mesh sieve. Cut or tear baguette into bite-sized pieces and add to a large bowl. Add the oil mixture and Parmesan. Jelly Jar Vinaigrette We love a good recipe hack! This makes creating a sweet, flavorful vinaigrette a snap… and as a bonus, it helps use up the last of a jar of jelly! This is especially good with grape jelly, orange marmalade, raspberry jam, strawberry preserves or a hot pepper jam. The remains of your favorite jam or jelly 2 T Dijon mustard 2 T white wine vinegar 1/4 c. olive oil Salt and pepper, to taste To the almost-empty jar of jam or jelly, add the other ingredients. Unfortunately, so do bugs. Aside from the fact that approximately no one wants to spend the whole summer scratching itchy bug bites, there are practical reasons to avoid being bitten. Mosquitoes and ticks can transmit a host of serious diseases, such as Lyme, Zika, West Nile Virus or encephalitis. It’s important to protect yourself, your family and your pets from getting bugged by bugs. But it can be hard to know which products are best. We’ve rounded up some suggestions to help you tell these flying, crawling nuisances to bug off this summer!

Which Ingredients?

What About Other Stuff?

For many years, DEET was considered the gold-standard of bug sprays. Developed by the US Army in 1946, it has the benefit of being well-known. Many experts prefer picaridin, a synthetic compound derived from the plant that produces ground pepper. Studies suggest it’s about as effective as DEET. Picaridin was only approved for use in the US in 2005 (though it’s been used in Europe and Australia since 1998). The EPA has determined that like DEET, normal use does not pose any health concerns. But unlike DEET, picaridin has no odor, isn’t greasy-feeling and doesn’t harm plastics or synthetic fabrics (such as camping gear). Many people seek “natural” alternatives, from citronella to rosemary. If you want to go this route, be sure to do your research into its effectiveness. Many studies bring up concerns such as the amount of time these natural options remain effective, and most studies only take into account mosquitoes – don’t forget that you want to repel ticks, too!

You’ve seen all the gadgets; bracelets, necklaces, clip-on fans, candles, coils, mosquito swatting rackets and patio insect repelling… thingies! There's so much out there! Everyone’s always trying to invent a better, easier-to-use, portable insect repellant solution. But so far, the results seem to be a fairly mixed bag. Be sure to check reviews online from trusted sources before you put all of your eggs into a high-tech basket. What does work? While it's not a great option for high temperatures, covering as much skin as possible can help prevent most bites. Long sleeves, long pants, neck gaiters and gloves help. If you're taking a hike, pull your socks over your pant legs to prevent ticks from crawling in. Outdoor products that spray aerosol bug spray into the air seem to be effective. They work best for the nearby, immediate area – but experts recommend against using them in enclosed spaces. Also be sure to keep them away from pets and other wildlife. If you are in an enclosed area, citronella candles can be effective. Fans can also sweep carbon dioxide out of the enclosed area (a great excuse to finally install that porch fan you've been dreaming of!) "Bug zappers" obviously do work to kill bugs – but it requires them coming within smacking distance. There seems to be no truth to the claim that ultrasonic products will keep bugs at bay.

Spray or Lotion? Many insect repellants come in aerosol cans. This tends to provide the most even application – as long as the wind’s not blowing. Spray bottles offer less coverage per spritz, but it can be a little easier (or less likely to make everyone cough) outdoors. Insect repellent lotions help ensure even coverage, but they require you to get your hands dirty. You’ll want to wash the lotion off of your hands, which can be difficult to do if you’re camping or at a festival concert. (Lotions also have the benefit of being crowd-friendly!)

Skin So Soft Avon’s Skin So Soft was launched as a simple lotion. Over time, it gained a cult following. Its fans swear it works as an effective – and good-smelling – insect repellant. Never mind that studies have called into question its efficacy; fanatics hoard the stuff to ensure their supply never runs out. It’s gained such a mythical place as the go-to bug repelling lotion that Avon got tired of reminding people that it was never meant to be used that way. Instead, they took the approach of “if you can’t beat ‘em, join ‘em;” they launched a line of Skin So Soft Bug Guard products with added (scientificallyproven!) insect repelling ingredients. As for us? We believe! Several members of the TOPS staff swear by the OG.

There's a right way to apply bug spray! Follow the label instructions, but here are some tips for you. » Spray exposed skin and clothing. Don't bother spraying under clothing. » Don't apply around your eyes, mouth or nose. » If you're not sure if your skin is evenly covered, feel free to lightly spread the product with your hands. Wash your hands afterward! » Check the label to ensure it's not expired, which can significantly decrease the product's effectiveness. » Spray your kiddos yourself!

Avoiding Mosquitoes Research tells us that mosquitoes actually do pick on certain people more than others (I’m one.) But while you can't change your blood type, you can learn more about what bring mosquitoes to your door... and what things you can do to make yourself a little less appetizing. » Mosquitoes can see dark, bold colors more easily. Light, soft colors can help you avoid detection. » Love a warm weather beer? So do mosquitoes! Research has shown that they seem to be more attracted to people who had been drinking beer. » Just came in from a run? If you're breathing heavily, mosquitoes can find you; they can sense the carbon dioxide you exhale! They can also sniff out sweat and detect the heat your body produces. » Pregnant? You’re a prime target for hungry mosquitoes because your belly is a little warmer and you exhale more carbon dioxide. When you think of a Louisville Cardinals fan and a Kentucky Wildcats fan, you probably don’t imagine a loving husband and wife, but that isn’t the case for Will and Blair Flowers. Will was born and raised in Louisville, while Blair was born and raised in Lexington, giving way to their choice of who to root for when the big game comes on. The couple met through Bumble, a dating app where women have to message first, and with some playful banter, the rest was history. “We ended up talking on the phone for the first time on July 31, 2019, got engaged on July 31, 2020, and our wedding was July 31, 2021.” Blair explained. Their ceremony was held at Spindletop, with enough charm and history to match the couple’s traditional wedding details. “Personally, to me the ceremony is the most important part.” Blair said. “It has always been a huge goal of our relationship to keep Christ at the center of it and if anything, we truly wanted His love to shine through on our day.” Keeping true to their love for Christ, Blair was able to find a cross to display at the altar that her florist beautifully decorated with flowers. The bride also knew she wanted her unity ceremony to be different from her two sisters, and loved the idea of “A cord of three strands is not easily broken.” Rather than a traditional candle unity ceremony, Blair found an Etsy shop who could bring her vision to life. One of the couple’s favorite moments from their wedding day was their first look, though they didn’t originally know if they wanted to do one to stick to tradition. “We are so glad we ended up doing one - it was truly special and a moment neither of us will ever forget.” says the couple. Sticking to tradition, Blair incorporated many sentimental details into her and Will’s big day. “My something borrowed, old, and blue happened to be my garter that my Granny wore in her wedding to my Pappaw and they’ve been married for over 64 years. My great grandmother actually made the garter and that’s who I’m named after.”

Meeting on Bumble and frequently referring to each other as honey, many of the couple’s wedding details included bee-themed decor. “I made the stickers for our honey jar favors since we were “Meant to Bee”, bees love flowers, and we call each other honey!” Of course, with a name like Flowers, the couple also had to incorporate plenty of beautiful floral details. “My shoes had little flowers on them, my mom’s dress had flowers as part of the design, my bridesmaids wore flower earrings, our ‘Mr. and Mrs. Flowers’ sign was surrounded by flowers, even the perfume I purchased for my wedding had a flower on the top which made it even more perfect.”

The couple’s advice for other brides and grooms is to enjoy every moment, because it will be over in the blink of an eye. “I couldn’t have planned any of it without my amazing mom, our wonderful wedding coordinator Amberly, and my sweet hubby, Will. It was our favorite day and we both wish we could go back and relive it again!”

At

this time last year, Will Levis was still a relative unknown, even to his University of Kentucky teammates and coaches, after transferring from Penn State. The quarterback knew he had to tread lightly until he gained the trust of his teammates and coaches, but this summer, he’s clearly not only the leader of the team but the face of the program. “Certainly, I wanted to come in and be the starter and leader, but when I got here, I had not been named the starter even [though] was my goal. I just tried to lead by example and by being vocal,” said Levis. “Now I am a team captain and starter. I am more comfortable talking to guys directly because now I am the starter.” Not only is he the starter, but Levis is considered not just one of the best quarterbacks in the Southeastern Conference – but in the country. He’s mentioned as a possible first-round pick in almost every 2023 NFL mock draft and has seen his name listed No. 1 in the draft after completing 233 of 353 passes for 2,827 yards and 24 scores. He also ran 107 times for 376 yards and nine touchdowns. He was fourth in the SEC in touchdowns and in the top 10 in nine other categories. Former Kentucky quarterback Tim Couch – the No. 1 pick in the 1999 NFL draft – watched every UK game last season and was impressed with the progress Levis made. “At first, he was an inexperienced player with a lot of talent, but in the last four or five games, he played really good football,” Couch said. “That’s why his name is being mentioned in the first round. He’s got all the skills you want. He has a big arm and seems like a great leader. “He had not played a whole lot before he got to Kentucky. He went from an unknown guy to everyone knowing his name and being mentioned for SEC player of the year and

even the No. 1 pick in the draft. For some guys, that pressure could be overwhelming, but I think he will more than live up to all the expectations.” Levis readily admits he did not feel comfortable until midway through the 10-win 2021 season and then realized he was a “pretty damn good quarterback.” He also says it has been impossible not to see and hear the early NFL draft projections. “I don’t focus on things I cannot control, but just having your name mentioned like that is pretty cool. Mock drafts don’t mean anything, though. If we have a good season, individual recognition will come with that,” Levis said. “It always feels good when people say good things about you, but you cannot let things good or bad sway who you are as a person.” He didn’t get overwhelmed when he met legendary NFL quarterback Tom Brady at a charity golf event in Las Vegas in June that also included NFL quarterbacks Aaron Rodgers, Patrick Mahomes and Josh Allen. He went with his father and knew someone who had “connections” with Brady, who introduced them. “I looked up to him as a kid. I grew up in New England going to parades [after the New England Patriots won Super Bowls] and cheering for him,” Levis said. “I was rehearsing for what to say if I got to meet him. He has done so much for me that he could never imagine. It was cool to pay my respects.” That’s why he appreciates the attention he gets from UK fans, especially young fans, and will always sign autographs or pose for photos. “I remember how it feels to look up to an athlete, and to be that person now others look up to is amazing,” Levis said. “I always want to meet and connect with young fans. I will never take that for granted, and I will show as much love as I can for fans of all ages because that’s just the right thing to do.” •

B

eing born in Ukraine and raised in Moldova for most of her childhood, Viorika Kopets learned the value of dreaming big: “As a little girl growing up in the poorest country in Europe, I had a dream to open a space where I could have a cafe, bakery, flower shop, art studio, clothing store, and just all my favorite things in one place to share with everyone.” When she moved to Washington State in the US, those dreams continued to percolate and be influenced by the coffee scene. Viorika stated, “Growing up in Seattle, coffee wasn't just part of culture, it was a lifestyle. You hear a lot around the idea of community and coffee because it truly does come hand in hand.” It was in Washington where Viorika met her husband, Nik Kopets (born in Belarus), who shared her Eastern European background, her ambition, and her love for coffee. The two married, started a family, and daydreamed about starting a company that offered a great cup of coffee, but an even greater a sense of community. Upon moving to Kentucky in 2017 and experiencing the burgeoning coffee culture, Viorika and Nik knew they were in the right place at the right time. Moving forward with the business philosophy of “build it intentionally and they'll come willfully,” Brevedé Coffee Co. was born. The coffeeshop, bakery, flower bar, and boutique from Viorika’s childhood dream became a reality. Brevedé, is a play on the word brevity, which means “shortness of time.” It invites patrons to remember that every moment matters, so spend it wisely in celebration, conversation, and genuine connection. Located in the heart of the Distillery District, the space itself embodies a rustic yet modern design with farmhousestyle tables for larger groups, two-tops for intimate conversations, and couches for lounging and reading. Light from a wall, of windows as well as eclectic fixtures floods the space. A map of the world is displayed on one wall evoking

oneness. The effect is altogether hip and hospitable. Along with being a storefront, Brevedé is an event space that hosts both public gatherings and private parties with Viorika poised to help in every aspect of the planning. “My background is also in event planning and design, so it's natural that we are also an event venue,” she said. Despite the diverse offerings housed within Brevedé, coffee is at the core. To ensure their coffee is of premium quality, Brevedé has partnerships with Coava Roasters out of Portland, Oregon; Onyx in Arkansas; and Honest out of Franklin, Tennessee, as well as other roasters around the country who maintain the highest standards. Viorika explains, “All coffee beans come from overseas. Using roasters who are personally invested in those farms, and the people behind them, is our top priority. It's easy to get access to beans, but to go the extra mile for the farmers and personally be involved in raising the bar on the way the bean is grown and harvested—those are the roasters we invest alongside.” Prior to their current success, the road from dream to reality has not always been an easy one. They optimistically began preparation to open Brevedé in December 2019 by readying the space—a major task involving upgrading plumbing and electric, painting and pressure washing, building counters, choosing furnishings, and decorating. Everything was on schedule for May 2020, then came the pandemic; plans were put on hold. The couple managed to open with strict COVID protocols in place that September. An understanding of hardship, both from their youth as refugees and as new entrepreneurs, informs all they do. As important to the Kopets as dreaming big is giving big. The belief that “giving is the master key to success” has been part of their business and personal philosophy from the beginning. Viorika points out, “This is why this coffee shop isn't just a for-profit business; it's to profit with a purpose for giving back.”

To that end, the boutique inside Brevedé partners with both local and global non-profits to fight against issues like poverty and human trafficking. And, of course, the war in Ukraine is at the forefront of their minds and efforts. The family has started their own non-profit, sendmeministry. com. “We are fervently working to ease the hardship of Ukrainian refugees currently facing the horrors of war. It's our family and friends out there, even at a distance it really does hit home,” said Viorika. The Kopets are also raising awareness and funds to help Ukraine through fundraisers at Brevedé. In June, they hosted an evening of live music, charcuterie, European desserts, drinks, and a silent auction with guests from Ukraine appearing live through Skype to share firsthand the devastation they're living through. The Kopets find themselves perpetually impressed by the way in which Lexingtonians step up. Viorika said, “The hospitality, charm, and attentiveness of this area is truly a gem. Also the way people love and support local businesses and the rich history of the area.” Their own love of preservation with renovation led them

to choose a well-known home for their next location. According to Viorika, “We're so excited to partake in honoring and preserving the past while building the future by opening our second location inside the historic house of what used to be Janice's Interiors at the Saltbox on 859 East High Street in Lexington.” The coming Brevedé at Chevy Chase, which will open this summer, will offer not only their signature coffee but European desserts baked in-house, creative workshops, and an event venue providing full party planning packages with decor, florals, and a mobile coffee bar, which can go anywhere. The journey from overseas to the northwest coast to central Kentucky has been a challenging, exciting, and rewarding one—all culminating in Brevedé. For others considering opening their own business, the Kopets offer this advice: “Always go the extra mile and don't worry about people's opinions, especially those who've never done what you're doing. Worry about not doing what you are capable of, and the people who rise around you will prove that it was all worth it.” •
