with Dan Richards
Skylark Golf and Country Club not only provides a manicured 18-hole golf course, but an award winning restaurant, sports bar, fitness facilities, spa and a picturesque venue for wedding celebrations and special events. But a little over a year ago it was a completely different story. Town and City catches up with Dan Richards, Managing Director, to talk about his journey so far and plans for the future. Dan richards first heard that the previous owners of the club, run by Quindell, were looking to sell through one of his previous business partners at local investment business, Just Develop it. With experience not only as a businessman, but as a professional golfer, Dan seemed like the perfect person to take over the club, but it was certainly not a venture he took lightly.
10
Autumn/Winter 2014/15
“I thought they were mad”, said Dan. “The club was really struggling from a badly deteriorating course and its reputation had suffered due to neglect of the facilities and lack of investment. However, I knew that with my background I was well positioned to take this on for Just Develop It and make it a real success. With their investment I knew I could achieve so much, so I agreed and on 1st September 2013 the business was ours.”

The process was anything but easy however starting with zero members and zero income, Dan and his team faced the prospect of turning a seriously dilapidated golf club into an accessible, affordable and beautiful environment. The first priority was the refurbishment of the reception area, bar and restaurant.
The next big milestone for the Skylark team was the beginning of the golf season in April. Dan was keen to build a ‘club’ and give golfers somewhere to go after their game to relax, have a drink and a bite to eat, so the Skylark pro-shop and sports bar were custom built on site and launched in time for the summer. This has been incredibly successful, not only with golfers but with local residents and visitors who want somewhere beautiful to go for lunch or just a drink.
Dan commented: “The facilities were pretty old and in need of modernisation, so we concentrated on the visitor journey and refurbished the areas we “The feedback from the golfers has been really would be using for festive parties. decluttering your home Time and again it’s important to re-organise our homes, but where do you start? Town & City are here with a few tips on to how to clear the clutter! be ruthless and only keep things you use regularly or desperately need and try not to be too sentimental. if there are letters or cards you just can’t part with, why not organise them into an album or book? bookcases are a great way to store your folders and albums in one place. Don’t just throw everything into the cupboard and quickly shut the door, use a rainy day to sort through it all. reduce the number of surfaces you have in a room to place things on, as this will prevent the build-up of clutter. Consider using the space under your bed for storage, but don’t just shove it under, try vacuum packing your seasonal clothing or using sealed under-bed 16

containers to keep things dust free. Alternatively, bag up your unwanted clothes and possessions and take them to one of the many charity shops, they’re always grateful for the donations. As well as sorting out the areas you can see don’t forget the places you can’t see every now and again, like your loft or garage. Despite the fact that garages are designed for vehicles, it’s more common for them to store our hoard, but how much of that ‘stuff’ do you actually need? There are only so many films you can watch on a rainy day, so do something productive. Choose a room, grab a big black bin bag and get to work. you’ll be amazed how good you’ll feel afterwards.

Online shopping is convenient and can open the door to millions of products that you can’t find on the high street. It allows you to browse endlessly from suppliers across the globe without wasting time on petrol or fighting your way through the crowds. It’s not all good though and despite the benefits, online shopping has one major downfall – it’s unpredictable. When scouring the internet it’s nearly impossible to judge if clothes will fit or whether the quality of a product is as described. So how can you shop with better odds on the gamble?
Size calculators
shopSmArt
This essential online shopping tool is often overlooked. most clothing websites include a size calculator that allows you to measure your body’s dimensions in order to determine the correct fit. Just remember, clothing sizes aren’t uniform; you may be a size 10 in one shop but a size 14 in another. When in doubt, it’s always best to check your measurements.
Reviews
to avoid disappointment it’s a good idea to read any product reviews. Whether it’s a pair of boots, an electrical appliance or a hotel, reviews can provide you with a range of opinions which will better inform your own decision to shop or drop. online forums are also a great guidance tool when it comes to spending, big or small.
Returns policy before you hit the ‘Checkout’ button it’s worth spending a moment to read the returns policy. How many days you have in order to return your goods before they no longer accept returns? Do you have to pay for the return delivery? A store’s returns policy can often help you make the final decision.
So armed with these simple tips, get shopping and enjoy! 18

Asked what he aims to achieve in his design, Jez comments; “For me, it’s about working alongside customers’ own ambitions to create extraordinary pieces of furniture that not only excite the eye, but also inspire them to think creatively about their own lifestyles and spaces”.
“In this sense, wood is an ideal medium to work with, as each piece of timber carries its own creative signature in grain and patterning.” essentially, I believe the art of good furniture making includes identifying the beauty held within a rough sawn piece of wood and bringing it to life with both function and form”.
Jez says there is an increasing number of people interested in to achieve this, Jez devotes commissioning unique pieces of much of his time to sourcing functional furniture, which are also timber. After all, he suggests, centre pieces in their work and “In order to produce extraordinary leisure spaces. “Discerning clients furniture, you must first begin are now looking beyond the with extraordinary wood”. standard, to ‘one off ’ pieces with ‘wow’ factor, which are essentially works of art in their own right.”
Jez partridge in profile does your family have roots in the wood business?
No, my Dad was the Vicar of Warblington and Emsworth for 35 years, and he still can’t put up a shelf to save his life. However, my grandfather made Spitfire wings during the War, and was a very talented craftsman more generally, so I guess I inherited some attributes from him. what’s been your biggest lifetime achievement to date?
Well believe it or not, I solo hiked 2,134 miles up the east coast of America in 1988. I walked the Appalachian Trail – a continuously marked footpath that winds its way through fourteen states from Georgia to Maine, crossing 420 mountains on route. It took me six months to walk, and I have to say it was a real challenge trying to mentally stay the course.

how do you come up with your design ideas?
I guess my design style is very organic, in the sense that I pick up a lot of influences from other walks of life. When I’m given a project brief, I don’t rush out and research it, but rather put it away in ‘Memory Two’ and before too long, ideas start coming – sometimes in the most ridiculous places. The idea for the ‘Cromarty Force Ten’ coffee table came to me when I was being sea sick over the rail of a yacht in a Force 9 gale. Another idea developed as a result of watching a friend dismantle the bellows of an old camera. Bizarre! so, where do you buy your wood?
Sorry, but I’m not going to tell you that. Us craftsman are a bit cagey about revealing where we source our wood, mainly because we want to keep the best bits for ourselves! What I would say though, is the likes of W L West in Selham near Petworth, and English Woodland in Cocking Gap, West Sussex, carry some really good timber. what is it that motivates you? what was your motivation in starting a furniture-making business?
I was a casualty of the economic downturn, when I was put down to a three-day week in my writing job. So, I was looking to do something useful with the other two days in the week, and thought why don’t I re-train in something I really enjoy? Wood was the answer for me, and I have to say even though the young lads on my course used to rib me for being ‘a fossil’, it was a breath of fresh air taking a mature attitude back to school. For the first time in my life, I actually wanted to learn. In fact, I‘d highly recommend it.
Aside from the look in my long haired Colonel’s eye when she hands me a pile of household bills? It has to be the expression on a client’s face (hopefully all good) when I reveal a finished product. The fact of the matter is I genuinely love what I’m doing, and if you can wake up in the morning with productive ideas buzzing around your head, you’re half way there.
where did you train?
I was lucky enough to re-train under Christian Notley and his team at Chichester College – it’s one of the best establishments in the UK to learn cabinet making. Over the past few years, Chi College has turned out some cracking craftsmen, not least of all George Callow, who won Gold for the UK at World Skills last year – World Skills being the equivalent of the Olympics in the trade world. 24

what are the downsides to the business?
Well, it has to be said, it can be physically demanding shifting heavy pieces of timber around all day, and sometimes I do feel all of my 50 years. There is also the issue of the capital outlay required to start up a small furniture business. This can prohibit market entry, unless you can negotiate the use of a bench in someone else’s workshop. what advice would you give to someone interested in becoming a furniture maker?
That’s a tricky one. I guess it would have to be: make sure you find yourself good training; always make it a policy to respect people you meet in the business – it’s a small industry, and trust me you will meet them again; also always follow your instincts, because they’re rarely wrong; and finally, the old adage ‘measure
twice, cut once’ is certainly applicable if you want to make any money in the business. Wastage is an important factor – I have a sign above the door of my workshop which reminds me daily ‘Assumption is the mother of all F*** ups!’; what is your next challenge?
Aside from bringing up my two children to be halfway responsible adults, it has to be making a success of this business. It’s tough out there, and sometimes you doubt whether you’ve actually got the minerals to achieve it – but you don’t walk 2,100 miles in one direction without learning something about staying power.

farewell food waste What do you see when you open your rubbish bin? A few mouldy apples, half a can of unused baked beans, last nights leftovers? We’re all guilty but did you know that the average family discards around £60 worth of food every month, with britains combined wastage adding up to 4.2 million tonnes of food and drink every year? So what can we do about it?
Freeze
Food diary
Temperature
For a week carefully monitor the food you’re throwing away. Are you constantly ditching leftovers or draining cartons of orange juice? prepare smaller quantities and buy less to better suit your needs. Adjust your habits to fi t your consumption.
Set your fridge to an internal temperature of 4₀C degrees or less to prevent food from spoiling too soon. Consider investing in a fridge thermometer to ensure things stay steady.
Organisation keeping your fridge organised is a quick way to reduce waste – it helps you see what you have and, more importantly, what’s about to go off. keep leftovers and half-eaten items in clear plastic containers and make an effort to use them before they expire.

Autumn/Winter 2014/15
Bubble and squeak once a week put together a ‘use-it-up’ meal using the foods that are soon to go bad. Th row fruit into a smoothie, use limp asparagus for a quiche or turn those wilted carrots into soup. Casseroles, smoothies and soups are ideal when it comes to less-than-perfect ingredients, so get creative.
Consider freezing left overs that you’re not planning to use in the next day or two. Store leftovers in individual servings to make thawing easier and freeze extra ingredients like tomato paste or broth in an ice cube tray.
Buy local keep in mind when shopping the distance your food has travelled before it hits the shelves, significantly reducing its lifespan. local produce, however, is often picked within hours of purchase which means you walk away with fresher, longer-lasting produce, also helping to support the local community.
With a few simple adjustments we can all benefit from a less wasteful lifestyle.

merlot
Zinfandel
Merlot is a medium to heavy bodied wine that is filled with rich, plum flavours and most popularly served during the autumn and winter months. Try serving with sharp, tangy cheese like Gorgonzola or a rich Cheddar and buttered crackers to balance the strong flavours in each.
This light and airy fruity blush wine is pink in colour and has a tangy after taste. It pairs beautifully with soft cheeses like Goat Cheese, Blue Cheese, Gouda and Feta, but also firmer, crisp cheeses like Asiago. It’s an ideal summer wine and great for those sangria evenings, or afternoons!
SAUVIGNON BLANC
A favourite among many, Pinot Noir can be a mid to full bodied wine that is bold and filled with black cherry and chocolate notes. Serve Swiss, Gruyere and Feta to enhance the experience.
Sauvignon Blanc is a great wine to serve especially during spring and summer months. It's light, citrusy and refreshing. Place sharp, smelly cheeses like Asiago, Parmesan and Festina next to your bottle and encourage guests to sip and snack so that the wine brings out the flavour in the cheese and vice versa.
Cheese and wine are a wonderful complement to one another, however some varieties go together better than others. Impress your friends with our simple guide to pairing cheeses that best complement the wine you’re serving.

ational a fragrant reminder perfume preference is a very personal matter. When giving as a gift, ideally try to find out what scent the recipient usually wears or favours and do a bit of research. if they like something light with citrus notes, presenting them with a heavy, floral scent may mean your gift ends up sitting unused on a shelf or is quickly passed on.
Thierry Mugler’s Angel Glamorama has just been launched in a striking limited edition refillable black star bottle with sparkling blue spangles. Exclusively available at Selfridges (including online) it is £65 for 50ml. www.selfridges.com.
We’re a big fan of Jo malone’s online boutique where the perfumes are helpfully separated into categories such as spicy, woody, citrus and floral, with advice for creating a custom made fragrance by wearing different combinations. However if you’re completely stuck we’re yet to meet any woman who strongly objects to the fresh and invigorating smell of Clarin’s eau Dynamisante.
Calvin Klein has brought out of range of classic fragrances over the years (Eternity and Obsession being just two) and their latest Reveal is set to become yet another. A fresh modern mix of pepper and sandalwood, 30ml spray is £37.50 from The Perfume Shop.
perfume isn’t always the cheapest option with some scents above the £100 mark, so if you are aiming for a more budget friendly gift, check to see if someone’s favourite scent has a matching deodorant or bath product which enables them to ‘layer’ their fragrance. When choosing a perfume for yourself, take your time. Don’t try to test too many at once or complete confusion may result! Avoid instant decisions too. perfumes develop over time so something you weren’t sure about at first sniff could turn out to be a winner 15 minutes later or vice versa.
And one for the tweenies … you’re bound to know at least one young girl who’d love a bottle of One Direction’s latest perfume offering You and I (their third to date!). Described as fruity and floral with mango and peony, buy it from The Perfume Shop, from £19.50 for 30ml. www.theperfumeshop.com.

making time for your
marriage
Maintaining your marriage can be difficult especially with young children at home. Life is absorbed with changing nappies, school runs, keeping the house in order and juggling careers. While these responsibilities are important, the glue holding a family together is the foundation of a solid marriage. Town & City is here with a handful of ideas on making time for your marriage and to having fun doing so.
DATE NIGHT Having a baby can change everything and when a couple brings a child into the family the focus often shifts towards the new addition. As children grow older family routines are often dictated by schedules, leaving little time for romance. like most things in our busy lives if it’s not planned, it won’t happen. take time to schedule a date-night into your calendar once or twice a month and use this as a time to reconnect and strengthen your relationship. Just like a flower needs water to grow, a relationship need nurturing with time spent together. SURPRISE SURPRISE Just because you’ve been together forever, it doesn’t mean you should stop being spontaneous. Surprise your partner by showing up at work and taking them to lunch, or dropping off an unexpected goodie bag filled with their favourite treats. on a smaller scale, don’t just text your partner the to-do list or pick-up schedules, but take the time to send a quick and thoughtful love note. 36
Autumn/Winter 2014/15
CANDLE LIGHT in the race to change nappies and run errands it can be hard for new parents to find quality time together. try using an intimacy candle to cue the desire for an intimate encounter. in the morning one partner will light the candle to signal their interest in intimacy that evening. During the day the partner who lit the candle is responsible for creating anticipation – perhaps by leaving a note or sending a fl irty message. being creative and focusing on closeness in marriage is essential to building your connection. MEMORY LANE Spend an evening together and go back to that restaurant where you had your first date or indulge in a nice bottle of wine and watch your favourite movie together. take yourself back to those special moments when you were head over heels in love to remind each other how much you care.
Raising a family can be a juggling act, but there is always time to invest in your marriage. Make communication, romance, intimacy and education a priority to strengthen your relationship, and in turn, your strong family values will impart upon your children creating a foundation for their own future relationships.

Since first appearing on our screens in 2010, Downton Abbey has become nothing short of a phenomenon, owing its success to a global appetite for its uniquely british brand of period drama.
“Some of it is quite risqué” Winning countless awards and accolades on these shores, the critical acclaim garnered overseas, particularly in the States, has seen a clutch of young british actors thrust into the limelight, with michelle Dockery – who plays lady mary Crawley – at the forefront. Dockery has starred alongside the likes of Cate blanchett, keira knightly, Jude law and eric bana in such films as Hanna and Anna Karenina, but admits nothing has taken hold of the public imagination quite like Downton. “It just seemed to catch on with people, and continues to,” she tells Town & City, discussing the programme’s unstoppable popularity. “The show just ignited somehow. It was to do with the time period, along with it being a drama written about 18 different lead characters who you immediately knew what they were about and what their story was.” Her strong willed, sometimes ruthless portrayal of lady mary is a firm favourite among viewers, but has the actress learned anything from the character? “I’ve always admired her confidence. She’s very assertive, which I think was a trait of the aristocracy.” Dockery also admits the show’s costume has sparked a personal interest in fashion: “I’ve learnt a lot from the designers on the show about knowing what suits you, what colour is best. My interest in fashion has really been a result of the show.”

The costumes, meticulously designed by Susannah buxton and Caroline mcCall, is paramount in setting the tone for the show. michelle spoke of her character’s style in the new series, revealing “Mary is really on trend because she’s out of her mourning clothes. She’s not in black anymore, or lilac. There’s a very Chanel-like quality to a lot of the new clothes, and so for me it’s been great. I’ve got to wear a slightly more interesting wardrobe than last year!” As the time period has evolved on screen, so too have her dresses: “Some of it is quite risqué,” she smiles. “There are different shapes of dresses; lower backs and the ankles are well on show now. It feels like a very different show, looking back on the first series.” Having cut her teeth on stage starring as eliza Doolittle in pygmalion in 2007, period costume is something Dockery is well versed in. The talented actress, who doubles up as a jazz singer when not gracing the screen, has been nominated for three consecutive emmy awards, as well as a prestigious golden globe for her work on Downton; not a bad return for a show with a lifespan of just five years. peer recognition has even extended to Hollywood’s elite: “JJ Abrahams has been on set. He really loves the show!” she revealed. “And Matthew Perry from Friends! Whenever we’re at events like the emmys you’re among people you’ve loved and admired for years and they’re coming over to you…it’s crazy.” She admits being overcome when one of her idols, edie Falco – who played an equally strong woman in The Sopranos – introduced herself at an awards ceremony recently. “She is, to me, one of the greatest actresses ever. She loves Downton and that meant the world to me,” michelle gushes. but the celebrity fandom doesn’t end there. britain’s royals are also said to be fans of the itv drama. “We know that they watch it and I bumped into Pippa and James Middleton at Wimbledon this year. They’re great fans of the show,” she reveals. Despite the hype around Downton, Dockery 52
Autumn/Winter 2014/15
assures the cast remain grounded. “We’re all very supportive of one another, and it’s become like a family. We’ve been doing this for five years, so if anyone’s in a play we try and get together as a group and see each other. It’s lovely to get to go as a cast.” The show features big names like paul giamatti, interspersed with relatively unknown british actors, and michelle stressed the importance of maintaining normality among the fanfare. “At the weekend, I don’t sit in my Downton Abbey dresses watching madmen. I actually have a tiger onesie that I was bought for Christmas one year so occasionally I’ll get that on!” she laughed. While a tiger onesie is unlikely to feature in the opulent wardrobe of lady mary any time soon, it’s refreshing to see a young actress – starring in the hottest tv show currently on air, no less – remaining humble, despite being touted as one of britain’s most promising on-screen presences. tHe NeW SerieS oF DoWNToN AbbeY iS CurreNtly oN itv .

We’re often quick to envy our naturally slim friends, yet there’s something to be learnt from those who manage to stay slim without dieting. believe it or not it’s simple daily changes, not crash diets or lucky genes that can make all of the difference. 54
Autumn/Winter 2014/15
It’s your world When perusing a restaurant menu do you simply accept what you see, or do you feel free to add a personal touch? There’s nothing wrong with asking your waiter or waitress to accommodate your preferences, whether it be to put dressings on the side, to switch chips for veggies or to leave the bread. That being said, try not to order with the words ‘diet’ or ‘low-carb’ in mind. order what you feel will satisfy – if you fancy dessert or a cheese board, skip the side of mashed potatoes – not to cut calories but to save room! little changes like this can make a big difference.

Distraction Clear the plate it’s engrained since childhood to be thankful for what you have and finish everything on your plate, yet is stuffing yourself to the brim really helping anyone? in fact this ‘rule’ may be doing more harm than good. it’s better to leave it if you're feeling full and keep the leftovers than to force down food your body doesn’t need.

Turn your nose up Do you ever find yourself eating things you don’t even like? it may look good at first but after that first bite, pause – are you really enjoying it or is it fl avourless and unsatisfying? if the answer is the latter it doesn’t make sense to keep going. by resisting those foods that aren’t enjoyable you can cut out mindless eating and help avoid weight gain.
in our fast-paced world we've become excellent multi-taskers, as you munch away while on the phone or in front of the tv you may not realise how much you’re consuming. When we eat mindfully we eat less, so set a goal to eat at least one meal every day distraction-free and take time to enjoy your food with family or friends. Not only will you feel slimmer and more satisfied, sharing meal-times can help build stronger relationships.

healthy eating habits The majority of parents strive to keep their children fit and healthy, but how do you decide when it’s okay to indulge and when to say no? teaching healthy eating habits to children can be difficult, but not impossible if you persist. We’re here with a few handy tricks.
for kids Lead by example Children learn from what they see and if they see you eating sweets or salty snacks all the time, they’re likely to want the same for themselves. Create a healthy diet for yourself and your children will take notice.
Variety Serving the same three dishes all the time is likely to create a disconnect between your children and healthy eating, and they’re likely to get bored. encourage them to try new foods by making it fun; sing rhymes or create a game.
Special occasions everyone should be able to enjoy a piece of cake at a birthday party or a few sweets on occasions but don’t go overboard, let your children know that treats are ok, but not all the time.
Dining out Healthy eating when dining out can be difficult and you can’t control the ingredients used within the dishes.

Some of the healthiest options, however, include restaurants with local cuisine. For something more exotic, Thai food generally uses fresh meats and vegetables without too many unhealthy additives like sugar, salt and mSg.
Healthy snacks Snacking is sometimes frowned upon but it doesn’t have to be bad, simply ensure the snacks are healthy. keep small, healthy snacks on hand – these can include nuts, fruit, cheese, fresh juice and vegetables. Always beware of nuts if they’ve not been introduced before as some people can suffer serious allergies and everything, as always, should be given in moderation.
Start early get your children onto a healthy eating path by starting as early as possible. Whether this means eating healthily when you’re pregnant, making your own baby food or providing deliciously healthy after-school snacks. Start now!
Trust your children know when they’re hungry and how much they should eat, as long as you’re sure they’re eating for the right reasons and just not out of boredom. trust them to make the right choices and if you follow these steps they’ll begin to learn how to keep a healthy diet forever.

a new uk tour for the nations favourite play!

Alan Bennett’s multi award-winning ‘The History Boys’ will return in 2015, visiting the Kings Theatre, Southsea from 22nd –25th April as part of a major new UK tour. This brand new production is presented by Sell a Door Theatre, who recently presented the hugely hilarious and successful, ‘Avenue Q.’ Widely hailed as one of the greatest theatrical events of the last decade, ‘The History Boys’ is a hilariously funny and exceptionally moving play about the true purpose of education. Bennett’s comic masterpiece was voted the nations favourite play in a recent national survey conducted by English Touring Theatre to celebrate their 21st birthday.
Autumn/Winter 2014/15
Winner of over 30 major awards including the Olivier and Tony Awards for “Best New Play”, ‘The History Boys’ is the story of a group of bright, funny and unruly sixthformers in pursuit of sex, sport and a place at university. Their maverick English teacher is at odds with the young and shrewd supply teacher, whilst their headmaster is obsessed with results and league tables. Staffroom rivalry and the anarchy of adolescence overflow, provoking insistent questions about history and how you teach it. Their A Levels may be over, but their true education is only just beginning. Casting is yet to be announced, but the play enjoys an illustrious history in helping to launch the careers of many of its 2004 original cast members including James Corden and Dominic Cooper. David Hutchinson, Artistic Director of Sell a Door Theatre said today: “We are delighted to be launching our 2015 season with the UK revival tour of the nation’s favourite play by one of britain’s most cherished playwrights. Sell a Door prides itself on engaging young adults in live theatre, and our partnership with english Touring Theatre subsidising free tickets will allow hundreds of first time patrons to see this critically acclaimed play.”
As part of their commitment to growing audiences and increasing access to regional theatre, English Touring Theatre are delighted to be able to support the winner of the “Nations Favourite” play by giving away 100 pairs of free tickets to ‘The History Boys’ throughout the 2015 tour. Applications are open to anyone who has never attending their local theatre before.
