a word from the
Goodbye winter, hello spring!
I seem to gravitate towards stressful situations, like moving house for example. I’m not a fan of moving house - but on the very morning this magazine is delivered for circulation I find myself doing exactly that. Meeting with printers and coordinating distributors to ensure all 10,000 copies of your favourite magazine find their way from the warehouse to you in one piece. A big ask on a good day, but on this particular occasion juggling two young kids and a house full of removal men adds a little extra fun! It’s reminiscent of the last time I moved house, when my wife decided to go into labour with our first born. As the furniture was disappearing the poor girl was playing musical chairs, but instead of music we had, well, you can imagine! I’m just pleased spring is on the horizon. A new year, a new home, and of course another great new issue of Town & City Magazine. To celebrate the last few years we’ve pulled out a couple of our best features and mixed these up with the usual fi x of entertaining, informative articles, so put your feet up and enjoy! Reykjavik, Iceland (Northern Lights Delight) Fast becoming a tourist hotspot, Iceland has seen record number of visitors over the last five years. Its natural attractions seen in TV shows like Game of Thrones are all the more breathtaking in winter, and make for a memorable break; whether soaking in the geothermal Blue Lagoon spa, exploring the geysers and Golden Circle tour, or discovering the capital. Try a pint or two in the Viking Brewery (alcohol was banned until as recent as 1989), or book a whale watching cruise and if you’re really lucky witness the Aurora Borealis across the night sky in all its glory.

The vibrant ‘Butterflies in The Glasshouse’ exhibit returns to the Royal Horticultural Society Garden Wisley from 13 January–4 March. Drop in for a tropical retreat this winter. More than 50 species of exotic free-flying butterflies will inhabit the Tropical Zone of the cathedral-like Glasshouse for this eye-catching exhibit. The special guests will showcase their magnificent colours, patterns and form amongst lush-tropical plantings, such as palm trees, bananas, bromeliads and climbers, as well as aquatic plants that thrive in the warm jungle pool. New species of butterflies such as Graphium doson and Papilio paris, will be joining vibrant favourites for 2018, such as Morpho peleides, Kallima inachus and Siproeta stelene. The Graphium doson is a black tropical butterfly with pale blue semi-transparent central wing bands that are formed by large spots and is widespread throughout Southeast Asia. Papilio paris, the Paris peacock, is a striking species of swallowtail butterfly found in the Indian subcontinent and Southeast Asia. Pick up a spotter guide on arrival to identify the ones you have seen.
For those visitors keen to become butterfly experts, explore the family-friendly Education Zone. The interactive area will spark imagination and enable visitors to learn all about the intriguing life cycle of a butterfly. To mark the launch weekend on 13–14 January 2018, visitors will get the chance to decorate butterfly willow sculptures before they go on display and children can enjoy face painting. cooking Many oils are beneficial for your health, when drizzled over a salad or consumed in capsule form for example, but some of us are using the wrong oils in the ways such as cooking. The heating of some fats can cause their molecular structures to change drastically. Town & City is here with a few tips on the best oils to cook with, and which ones should always stay at room temperature.

Oils suitable for cooking coconut oil Almost all of the fatty acids in Coconut oil are saturated, making it very resistant to heat. When the oil is at room temperature it stays a semi-solid form, once heated it turns to liquid. Th is explains why you are only able to find it in jars instead of bottles. Coconut oil is well known for improving cholesterol and killing bad bacteria, this is because it’s rich in Lauric acid. Cooking with this oil will also leave you feeling fuller for longer, so that plus the fact it speeds up your metabolism, means it’s an incredible oil for weight-loss. butteR Butter has a bad reputation for being very unhealthy when consumed in large quantities, and rightly so (everything in moderation and all that). Coating your bread roll with lashings of butter day after day isn’t a good idea, however, cooking with butter is. The best fats to cook with are saturated and monounsaturated. Butter is made up of 51% saturated fats, therefore making it perfect for cooking. olive oil Th is Mediterranean oil is a strong favourite among foodies. 76% of the fats in Olive oil are monounsaturated, and 14% are saturated, making it another good choice for cooking. Th is oil has been linked to reducing the risk of cancer, type 2 diabetes and heart attacks. Studies have also shown that it can fight osteoporosis, a horrible disease that causes bone tissue to become fragile. 18

Oils to avoid when cooking sunfloweR oil It sounds like a healthy choice, but Sunflower oil is actually very bad for you. Especially when cooked at a high temperature. The omega-6 acids in this oil cause infl ammation, resulting in an endless list of physical and muscular problems. Pretty much all packaged and processed foods will contain Sunflower oil. Stay away! coRn oil Corn oil is predominantly made up of polyunsaturated fats, especially Omega-6, these fats should not be used when cooking at high temperatures. Studies have shown that this fatty acid is linked to the growth of cancerous cells and tumors. People also tend to overeat foods that contain corn oil, causing obesity and a whole host of health issues. sesame seed oil Another oil that is high in polyunsaturated fats and low in saturated fats. In fact, most seed or nut based oils are high in polyunsaturated fats, and therefore not suitable for cooking at high temperatures. However, they are very good for you when consumed at room temperature. Drizzle them over your dinner for a much needed hearty boost.

outside in A recent report lists three key trends shaping the way we live our lives, with 49% of home-owners saying natural materials in their homes makes them feel better. The report reveals how Lagom is the Scandi lifestyle trend taking over this year from ‘Hygge’. British homes are transforming into centres of homely wellness. As we move into the post plastic age, health and wellbeing is no longer just a matter of what we eat and drink and how often we exercise. Today, Brits are turning their backs on disposable, desirebased buying and cheap synthetics, in favour of more thoughtful purchases that offer a combination of personal and planetary health and wellbeing benefits. Seeking the holy grail of 'Homely-Wellness' through home design and build, a new 'Window on the World' research and trend report by The Wood Window Alliance reveals three key trends that are currently impacting the way we live our lives: 24

Put simply, ‘naturally happy’ is not just a matter of individual psychology and attitude. 49% of home-owners state that having natural materials in their homes makes them feel discernibly happier than when surrounded by artificial materials, with one in three planning to bring more natural materials, and 27% planning to increase the amount of natural fibres into their homes this year in a bid to improve their quality of life.
Nurture through nature – bringing the outside in Only 10% of Britain’s children play in nature compared to 40% in 1985. Increasingly, because of the way we live (urban environments, lack of outdoor space, technology keeping us chained to screens etc.), it’s not only children who are becoming disconnected from nature, adults are also increasingly spending most of their time indoors, with a host of academic research revealing debilitating effects on wellbeing and health both for humans and their living environments. When it comes to going green indoors, 46% are planning to increase the amount of plants and flowers in their homes this year in a bid to improve their connection with nature.
Plastic purging and wood for good It seems that the desire to stem the tide of plastic in our lives (and in our oceans) has spread beyond the bag, with one in four homeowners actively planning to decrease the amount of plastics in their home this year, while 46% state they are conscious of the impact of synthetic materials on the natural environment and one in three conscious of the impact of synthetic materials in general on their wellbeing. When it comes to the most desirable, timber is cited by 67% of homeowners as the material they would like to have more of in their home.

Many of us comfort eat to get through the winter blues, but we may find that our jeans are feeling that bit tighter and our waist is disappearing, by the time we get into spring. So what can we do to help shift those extra pounds? Our experts share their top tops… Eat little and often Try to keep your blood sugar levels and energy levels stable by eating something every three hours. Eat breakfast, lunch and dinner plus a snack mid morning and one mid afternoon, with no longer than three hours between. Try not to eat carbohydrates after 6pm. This will stop those roller-coaster highs and cravings for sweet foods. Because your blood sugar isn’t allowed to drop, your body will no longer have to ask you for a quick fix. As the blood sugar steadies, so will the mood swings.
Detox your kitchen, car and desk If you find yourself polishing off a whole packet of cookies, it may be time to eliminate them from your living space. Processed foods can be highly addictive, so why torture yourself by keeping them within arms reach?
Don’t eat on the run It gives your body the message that time is scarce, you are under pressure and stressed. Furthermore, your digestive system will be less efficient. Make a point of sitting down and eating your food as calmly as possible.

Skip the fad diets Fad diets, especially those that miss out whole food groups, may work temporarily but are usually too difficult to maintain for more than a couple of weeks.
Hydration is key Often when we think we’re hungry we’re actually thirsty. Drink a glass of water and wait 20 minutes before reaching for a snack.
Spend an extra hour in bed! Studies have shown that a lack of sleep may cause us to eat 300–400 more calories the next day. And in order to keep energy levels high we tend to choose sugary or starchy quick fixes. Just one extra hour of sleep each night can increase leptin, the hormone which suppresses appetite.
Don’t cut out all fat Fat is an essential part of our diet and should not be avoided. We need to eat the right kind of fats: oily fish, nuts, seeds and seed oils in order to obtain essential omega 3 and 6 fats which are necessary for our health. What we should be avoiding are the processed fats found in junk food and bakery products.

By having a relaxing bath, taking a walk or watching your favourite programme, you can lift your mood in a natural and healthy way.
Clear the kitchen space Clear the kitchen space immediately after cooking. If food isn’t left out, you’ll be much less likely to go back for seconds.
Snack on a handful of almonds a day Almonds are rich in protein and healthy fats, giving you the energy boost you need whilst balancing blood sugar. Th is snack is exactly what we need to prevent carbohydrate and sugar cravings.
