the endocrine struggle Ever wake up stuck to the pillow? Lethargic, head achy, thinking you’re getting a cold and feeling really grumpy about it? Is this a common feeling?

The Endocrine System sends messages all around our bodies to keep everything ticking along nicely. Two of the most important glands are the Adrenals. These triangle-shaped glands sit on top of the kidneys and produce our fight or flight response. It’s the burst of adrenaline when we’re nervous or excited that gives us butterflies in the belly. With today’s routines many of us are living off adrenaline. The noisy alarm clock first thing in the morning, the rushed breakfast, the traffic jams, the deadlines at work, the coffee hit, the gym work out and the school run. All these things produce an adrenaline response. Our adrenals aren’t supposed to be on the go all the time like this and after a period of time the adrenals become exhausted. The glandular system works together like an orchestra, if the adrenals become tired this has a knock on effect. The pineal gland which controls sleep (by producing the hormone melatonin and our happy hormone serotonin) struggles and we can’t sleep and we begin to feel low and depressed. The thyroid gland which governs metabolism struggles and we start putting on weight as well as feeling tired and emotional. The thymus gland which governs the immune system struggles and we suffer colds and viruses. The pancreas which processes sugar struggles and we start craving the food we know we shouldn’t be eating. The ovaries or testes struggle and a woman’s monthly cycle goes all over the place and sex drive decreases. These are just some of the symptoms that are caused by ongoing stress on the adrenals.

but what can we do? Here are six top tips to get your endocrine back into balance. Eat well
Sleep in the dark
It’s so easy to eat rubbish when you’re stressed especially when your pancreas is demanding it. Start the day with protein rather than carbs to avoid the sugar highs and lows throughout the day and make sure there are lots of greens on your plates
The pineal gland responds to light so make sure you turn off all Tv and stereo lights and sleep in the pitch black.
Cut the caffeine Caffeine is a stimulant which triggers an adrenaline response as well as being a diuretic which uses water in the body rather than hydrating it.
Stop running If you’re stressed and functioning on adrenaline all day long, a run at the gym is going to make things worse. go for a swim, do some yoga or go for a nice stroll.
Relax Turn off the Tv which stimulates your mind and have a bath, read a book or do absolutely nothing. It’s so important to rest your body especially when things are crazy.

Autumn colour is well on its way with foliage, fruits and berries gradually transforming our landscapes into a rich colour palette of yellows, oranges and reds, lasting well into November.

Hinton Ampner Hinton Ampner is brimming with shape and colour all year round, but in autumn it’s particularly vibrant, thanks to hundreds of exotic dahlias in creams, yellows and oranges, hot pinks and deep magentas. “I love the dahlia, not just for its stunning appearance but also for its incredible versatility,” says John Wood, Head gardener. “They can look good in pretty much any location and at Hinton Ampner they’re planted to fulfil certain roles. In the leafy Dell, they punctuate the large foliage plants for a really dramatic impact; we’ve got a rich tangerine called ‘David Howard’ and the bright yellow ‘Yellow Hammer’ and ‘Moon Fire’. In the Yew
Garden we’ve planted the deep red ‘Bishop of Auckland’ which offsets the large dark leaves of the Canna plant.” At the entrance to the dell is another treat – ‘forest pansy’ Cercis Canadensis, which heart-shaped leaves take on a fiery red, turning to warm yellow in autumn. dahlias can also be seen in the walled kitchen garden where you’ll find colourful pumpkins and squashes, as well as a rich variety of autumn fruit and veg, watched over by Hinton’s scarecrow. from the back of the house gaze out over parkland littered with yellow and gold foliage from ancient oaks and beeches, interspersed with the deep red hues of norway maple.

The Vyne In the ancient woodlands surrounding this former Tudor palace beeches and oaks mingle with sweet and horse chestnuts to present a glorious canopy of rich autumn foliage. lime, cherry and whitebeam produce a palette of lemon-yellow and strawberry-red.
Mottisfont The gardens of this former priory are ablaze with colour from stately plane, oak and beech trees. One of the stars of the show is the hornbeam, which explodes into a canopy of orange and scarlet. The garden’s two tulip trees come into their own in autumn, as their acid green summer foliage turns a magnificent pale gold. The ancient woodland surrounding the gardens is lit with the oranges, yellows and reds of sweet chestnut and beech foliage. The woods are also home to plenty of fungi including the lilac-purple of the amethyst deceiver and the fairytale red and white-spotted fly agaric.

Sweet gums will often start to colour in late summer as their leaves turn a deep black crimson colour. Then as autumn progresses, the leaves change and go through a kaleidoscope of colours from golden yellow, crimson, amber and red - a breathtaking sight.”
New Forest The new forest commons of rockford and Ibsley are beautiful areas of wilderness and woodland to explore in autumn. unique landscapes of woodland, heathland, mire and grassland encompass spectacular views, and golden foliage displays from silver birch, beech and oak, as well as yellow gorse flowers. look out for incredible shapes and colours from the myriad of fungi that appear at this time of year, from ruby-red fly agaric, to honey-coloured bracket fungus.

Teenage Kicks Early years believe it or not your music tastes can be traced right back to the womb. As you develop as a baby during the end of the second trimester you start to hear. While the sound of your mothers voice or hearing music may just be muffled noises, there is science to suggest it increases the heart rate, and is a calming soothing influence. Although at this early stage you’re unable to distinguish between mozart and morrissey, you can still recall the same sounds when they’re later played. An association is made which is reinforced as you grow up, meaning your parents tastes in music are hugely significant in your early years. 28

The most influential years of our music tastes are our teens and early twenties, a time that corresponds with gaining independence, dating and discovering ourselves. The ‘teenager’ as a concept was born in the sixties where the new younger generation created their own rules and image that was a far cry from their dowdy post-war parents. With more leisure time and disposable income than ever before, music was crucial in this movement. rock and roll was born celebrating all that was good with being young. It ripped up the rules and redefined an era. This trend continues today with the mainstream music aimed squarely at the young and influential, continually pushing the boundaries of what came before.

Holding back the years What was once considered revival music has now spurred an entire industry. The original ‘baby boomers’ of the fi fties and sixties may have grown up in the last fi ve decades, but they refuse to get old. like fashion and the four seasons, everything eventually comes full circle and judging by the popularity of the most recent stadium tours bands like The Who, rolling Stones, Elton John and rod Stewart they are testament to this. wild venison casserole Marinated venison:
place all the ingredients into a large casserole dish with a lid, making sure the wine is still warm when you pour it over. Cover and allow to marinate overnight. place into a colander and allow to drain for a minimum of two hours until completely dry, reserving the marinade.
Accompaniment: Sauté the diced meat in the rapeseed oil, a single layer at a time, until golden for approximately six minutes. place in a colander to drain any fat. return the fat to the pan, add the diced vegetables from the marinade and cook until caramelised. place into the colander with the meat and drain. 32

Then add the browned flour and salt to the sauté pan and gradually add the wine from the marinade, stirring constantly to avoid lumps. Simmer for 30 minutes and then pass through a fine sieve. reduce the sauce down until there is about 450ml, and move to one side.
• 1.350kg of diced venison shoulder • 1.5l of red wine (reduce by half) • 1 pinch of black pepper • 1 bay leaf • 1 thyme sprig • 3 juniper berries, crushed and chopped • 150g large onions cut into 2cm dice • 75g carrots, peeled and roughly chopped • 55g celery, cut into 2cm dice accompaniment:
• 1 pinch of black pepper • 1 bay leaf • 2 sprigs of thyme place the venison, mushrooms and cooked • 50ml rapeseed oil vegetables into a clean casserole dish, add • 2 tsp salt the sauce and cover with a well fitting lid. • 25g strong white flour, Slow-cook overnight (at least 18 hours) at browned for 8 minutes 70°C. Then serve in chunky bowls with in the oven at 220°C creamy mashed potatoes and extra • 25 button mushrooms braised winter vegetables if desired. • 20g unsalted butter

boudin blanc with wild mushroom and leeks Morel sauce: begin by soaking the morels in 2 litres of boiling water for two hours. Then remove the soaked morels, lightly squeezing them dry and put aside for the garnish. Strain the juices through a muslin cloth to remove any grit and reserve for the sauce. next, sweat the chopped chicken wings in butter for 10 minutes until a light blonde colour. Add the button mushrooms and sweat for a further 5 minutes, then add the boiled sherry, morel juice, double cream and seasonings. Simmer for 40 minutes, then pass through a fine sieve. Add the cornflour and reduce on high heat until the sauce has thickened.
Accompaniment: On a gentle heat pan fry the boudin in butter until golden all over (reserve the pan). next, cut the boudin into chunky slices and pan fry further to a golden brown on the cut sides. Then cook the leeks in boiling salted water for three minutes. Sauté the mixed wild mushrooms and season with lemon juice, salt and pepper. After that, add the morels and heat through, then re-heat the morel sauce until piping hot. divide the boudin between 4 shallow bowls. Scatter the mushrooms and leeks around the boudin, add the sauce and some fresh chopped chervil and serve whilst hot.

• 60g dried morel mushrooms • 100g button mushrooms, cleaned and diced • 400g chicken wings, chopped into 2cm dice • 40g unsalted butter • 165ml Fino Dry Sherry (boiled for 10 seconds) • 500ml double cream • 1tsp salt • 1 pinch of finely ground white pepper • 1 pinch of cornflour
accompaniment:
• 360g boudin blanc (ask your butcher to procure for you) • 240g leeks, washed and trimmed into 8mm slices • 160g mixed wild mushrooms, cleaned • 100ml water • Salt and pepper • 1 fresh lemon • Fresh chopped chervil Autumn/Winter 2015/16

Ingredients • 300g of good all butter shortcrust pastry • 250g unsalted butter • 150g icing sugar • 50ml Calvados • 200ml double cream • 115g caster sugar • 10g strong white flour • 10g ground almonds • 4 medium free range eggs • 6 Braeburn apples

Start by lightly greasing and lining a large tin with the shortcrust pastry (around 3mm thick). prick the pastry base all over to prevent air pockets forming underneath, then chill for 20 minutes to avoid shrinkage.
next, melt the butter, add the icing sugar, then the Calvados and set aside. lightly beat the eggs and mix together with the double cream, caster sugar, flour and almonds. Then pre-heat the oven to 220°C, putting a fl at pastry tray on the shelf to heat. peel, core and chop the apples (about 8 segments per apple), then toss in the Calvados butter until thoroughly coated.
Arrange the apple segments in the pastry case in concentric circles, overlapping the segments as you go. place the tart onto the pre-heated pastry tray and bake for 10 minutes. reduce temperature to 200°C and cook for a further 16 minutes until the pastry goes golden brown and the apples are caramelised. next, pour the custard mixture into the tart tin and bake for a further 10 minutes until the filling has just set. remove from the oven and let cool for an hour.
To finish, remove the tart from the ring, cut into 8 generous slices, dust with icing sugar and enjoy with vanilla ice-cream.

ballet formed in 1981, The russian State ballet of Siberia has become established as one of russia’s leading ballet companies. under the artistic directorship of Sergei bobrov, leading dancers from across russia have forged their skills and artistry performing an expanding repertoire of new works and exceptional productions of timeless classics. The soloists and corps de ballet are superb, delighting audiences with their breath-taking physical ability and dazzling costumes as each storyline unfolds to the live accompaniment of the russian State ballet Orchestra of Siberia. The company comprises over 40 dancers and 30 musicians.
Commenting on the tour, Sergei bobrov said “It’s always a pleasure to bring the unique traditions of Russian Ballet to British audiences.
