why is there new national curriculum

and what does it mean?

Changes in the national Curriculum are a result of government attempts to raise standards and place a greater emphasis on core subjects like numeracy and literacy. Although the new curriculum is intended to be more challenging, the content is actually slimmer than previously, focusing on essential core subject knowledge and skills such as essay writing and computer programming. How did you become involved with the Spinnaker tower?

I’ve had the privilege of working with some of the Spinnaker team previously, and I was invited to cook. Knowing Portsmouth having been here before I jumped straight in. It’s an awesome place. tell us about your up-bringing …

I grew up on my parents hill farm producing dairy and meat – It was a tough life, but a good life. I drove my first tractor at 13 and lambed a sheep on my own at age 9, it was a fantastic experience. What did you grow up eating?

Food as girl growing up was just good wholesome farm fodder. Meat, veg and pudding. My mum was a great cook, but as a journalist by trade she wasn’t a natural in the kitchen. I think that’s why I got more involved in cooking. When did you learn to cook?

I learned to cook at around age 12, I think the first thing I made we’re some buns or a cake – something like that.

You’ve worked in some of the finest hotels in the world - which sounds glamorous, have you ever had the chance to enjoy the glamour?

Very much so, in as a much as we had some amazing guests. We had Michael Jackson stay, and Barbra Streisand. One day I was working in the kitchen and who walked past? Cher and four body guards coming in the back entrance to the hotel. Once when I worked overnight – years ago there was an awful storm in London – I was given the penthouse of the Dorchester because there were no other rooms. I never heard a thing and woke up to fallen trees and the calm after the storm. I thought that was glamorous. talk to us about bbc’s Great British Menu, how did you become involved in that?

First of all, you’re asked to be involved in The ‘Great British Menu’, you don’t apply, so it’s an enormous privilege, and it was the hardest thing I’ve ever done. It’s extremely demanding. There’s a lot of strong competition. Who has been your greatest rival?

Oh very much so. I was there three years. One of the three I’d rather forget, but the other What is your favourite cuisine? two I did well so I was really happy. My biggest I love fish and game. Regional food. In Portsmouth rival was a guy called Colin McGurran. He got a the seafood is awesome, in Yorkshire it’s lamb, dish in the banquet two years in a row. People like Daniel Clifford, Tom Aikens, Tom Kerridge – what a guy – those chefs are amazing. You’ve traveled the world with your career. What’s been the most enriching experience?

I would say from a world stage, working in Australia. When I went out there I had no expectations. It was great work for a chef, you only worked eight hours a day which for a chef is like half a day! I had a great experience, it was good weather, I learned to scuba dive with sharks, I climbed ayers rock, I did some nuts stuff, but it was also a great place to be chef.

Who do you look up to?

I look up to young chefs who are really pushing themselves. Those who look after their team, no matter where you are. Too many chefs are about their egos, and not about the food these days. Would you like to see yourself more in the public eye? Your own tV show or presenting a cooking program?

What will be will be. I don’t believe TV or cookbooks are the measure of success, but If it comes along that would be great. Where are you most at home? in the classroom, on tV or in the kitchen?

In the Kitchen every time. What was your most prestigious award?

The gold medal in the Salon Culinaire, an award for teaching young chefs or a bronze medal in Yorkshire Chef Of The Year. Everyone loves a takeaway, what’s your favourite?

In an age of the health obsessed and body conscious, most of us tend to only focus on what the scales say, losing sight of what’s going on inside our bodies. Salt is one of the main offenders to our health that often gets overlooked. With a recommended daily adult intake of roughly 6g, It’s important to know exactly how much salt we’re getting in our diet and more importantly, how to reduce it. 42

Avoid salt heavy groceries it’s easy to think of salt mainly as a seasoning that we grind over our meals once they sit all plated up and ready to devour. But those pasta sauces, cured meats and fish that we stock up on at the weekend are all packed with salt. Having a little knowledge about which foods contain more salt than advised will go a long way to reducing the risks associated with it. if raised blood pressure and increased chances of heart disease and stroke don’t sound like a fun time to you, it might pay to check the labels next time you’re doing the weekly shop. try opting for less processed foods and swapping out some of your favourite sauces and spreads with a less salty option. When cooking pasta, choose a fresh tomato sauce instead of a cheesy one, especially those with added ham or bacon pieces. go for a vegetarian or plain cheese pizza instead of a meat feast which all contain added salt. Having to read the labels on all the items you buy may sound a bit over the top, but eventually you’ll get a sense for all the foods rich in salt and know which areas you need to cut down on.

The trouble with takeaway We all love a take-away from time to time, but it isn’t just the calories we need to watch out for. There’s a reason they taste as good as they do and one of those reasons is the amount of salt they use. pizza is full of the stuff. The dough, toppings, cheeses and sauces all contain salt, so be cautious about what you order. And if you do go all out, try ordering a smaller size. When having an indian or Chinese, take the plain rice over any fancy pilau or egg fried which both contain added salt. Better yet, save some money and cook your own rice at home.

Cook fresh One of the easiest ways to control the amount of salt in your diet is to cook more from scratch. now for those of you with busy work schedules and little time to create a culinary masterpiece every night, try cooking a homemade meal just one more night a week and notice the difference, not just with your health but the way you feel. Always taste your food as it’s cooking to avoid adding too much salt and wherever possible substitute salt for other seasonings, like herbs, chilli powder or black pepper. Also take note of ready made stock cubes which are very high in salt. sometimes half a stock cube is more than enough to make your dish really pop.
