Coat the boiled lasagna with olive oil so it doesn't stick together, and let cool. While the pasta cools, very thinly slice the *fontina cheese in 1 inch (2.5cm) strips.

Mix the red pasta sauce, cream, and a pinch of nutmeg together. Coat the bottom of the baking dish with this sauce. When the pasta is cool enough to handle cut in half lengthwise. Lay a pasta length on a board and then add a thin 1-­‐inch (2.5cm) layer of ham and the cheese. It is not necessary to cover the whole piece; it should be somewhat sparsely placed. Then lightly roll the pasta, from the shorter side.

Add the pasta rolls to the dish, with the open side of the roll at the top and bottom of the dish. Arrange the pasta so it is evenly spaced in the dish and loosen any rolls if needed. After adding all of the rolled pasta "roses" to the baking dish, top with the remaining sauce and freshly grated Parmesan cheese.

You may refrigerate it to bake later at this point. If you are baking right away, preheat the oven to 180 C/ 350 F / Gas Mark 4 and bake about 20 minutes or until lightly browned on top. If you are baking it from the refrigerator, let it come to room temperature before baking.

Cornish Pirates open Falmouth’s NEW state of the art gym

Merchants Manor appoint new sales manager

Players from Cornwall’s top rugby squad officially opened Falmouth new gym space on Friday February 7.

Experienced sales and marketing professional Tiffany Bailey has joined the team at Merchants Manor in Falmouth.

Cornish Pirates players Kieran Hallett, Peter Joyce and Luke Jones and the teams’ conditioning coach Frank Sanderson joined with the team at Merchants Manor hotel to celebrate the official opening of the state of the art fitness hub.

As well as more than five years’ experience in hospitality, sales and management, Tiffany, 28, brings a wealth of Falmouth knowledge to the newly created sales manager position having worked at Fal River for almost two years

During the opening the players were put through their paces by Technogym master trainer Dan Hodge on the town’s only Kinesis One resistance training system - a world acclaimed total body work out.

Commenting on her appointment, Tiffany Bailey, sales manager at Merchants Manor, said: “I’m thrilled to have been appointed at such an exciting time for the hotel.

The new Wellness Centre is now open to non-residents and features all new top specification training equipment as well as being the first in Cornwall to install the mywellness cloud technology – an innovative system that seamlessly tracks gym users’ fitness training. Experienced personal trainer and lifestyle coach Brenton Doble is heading up the new Wellness Centre and is available for creating bespoke fitness programmes for gym goers. Commenting on the opening Brenton said: “It was great fun to get players from the Cornish Pirates along for the official opening and they enjoyed putting the new equipment through its paces. After month’s of hard work refurbishing the new gym space and installing the new state of the art equipment its great to now be in a position to welcome people through the doors.” The Wellness Centre at Merchants Manor on Western Terrace is kitted out with Technogym equipment - an official supplier to The Olympics, Ferrari, The Football Association and Rafael Nadal. At the same time as working out, fitness goers will be able to individually watch TV, surf the web, play music or even play games on the cardio machines. The new gym complements the hotel’s existing leisure offering: a 12m indoor-heated swimming pool, sauna and hot tub. The opening is the next stage in the ongoing refurbishment schedule at Merchants Manor. The hotel’s owners, Nick Rudlin and Sioned Parry-Rudlin, have already completely transformed the downstairs public areas tastefully modernising it into a true country house hotel.

After undergoing such a major refurbishment, developing its wedding offering and launching a new wellness centre, I’m really excited to be tasked with growing Merchants Manor’s presence locally and look forward to meeting existing and new customers.” Merchants Manor owners Nick and Sioned Rudlin bought Merchants Manor in 2012 and have undertaken an extensive refurbishment project that has redefined both the business and leisure offering. Nick said: “We have been at the helm of Merchants Manor for over a year now and with the majority of the refurbishment work now complete we felt it was the right time to bring in an experienced sales manager to help us promote our complete offering.” As well as 39 bedrooms and renowned chef Dale McIntosh at the helm of the hotel’s food offering, Merchants Manor, previously known as the Green Lawns, has a flexible events space which can cater for up to 200 guests.

st For many the New Year is a dim and distant memory. For Trescobeas Surgery April 1 is our New Year and it promises to be a challenging one with much new work to do. Our First Task is to replace Dr Philip Burnett, who has decided to retire. Dr Phil’s contribution has been immense and as one of the founders of the surgery his will be big shoes to fill. We hope to have a replacement partner in place shortly. The New Year always brings many new Government initiatives. There is a big drive to reduce admissions to casualty (A&E) and the new 24/7 Non Emergency NHS 111 line supports Falmouth Minor Injury Unit, Cardrew walk in centre, Serco Out of Hours and Trescobeas Surgery in providing an alternative to A&E. However GP’s have been asked to even more. Foremost is a named, accountable GP for all people over 75. As care is delivered by a wide range of public and private providers the exact details of this responsibility is not yet clear. GP’s will have to monitor and report on Out of Hours services and actively manage the most vulnerable patients. At Trescobeas we already appreciate the importance of doing this and dedicate time to scrutinising and checking all those discharged from Treliske. Trescobeas Surgery will also be expanding its on line services (booking appointments / access to medical records), doing more Health Checks, rolling out the Friends and Family test to comment on our performance and relaxing our Practice boundaries to allow people outside Falmouth, but working in the town to register. On top of that we could get a Care Quality Commission (CQC) inspection as well. Happy New Year!!

See websitem for ight full termsn and conditions. winds ot seem, on the face of it, the best time to venture out anywhere but from the moment we looked in through the door of Rick Stein’s Fish Restaurant on Events Square in Falmouth we were pleased we had braved the elements. The restaurant is light and informal with high and regular seating that promotes the family friendly atmosphere. The outlook on to Events Square would normally be bustling but we were content to watch the fairy lights dancing in the high wind as the masts of the boats in the marina tilted and swayed. All the staff were very attentive and we were shown straight to the table of our choice. Leigh, the manager, welcomed us and soon we were settling down, taking in the atmosphere, drink in hand. I chose Chalky’s Bark a Skinners Brewery ale developed in conjunction with Rick Stein. The unusual addition of ginger into the brew made it a very pleasant beverage My wife chose an elderflower presse which she found crisp and refreshing. We decided on the 3 course set menu at £19.95 which offered three choices each of starters, mains and dessert. For my starter I chose Thai fish cakes with a sweet and sour dipping sauce. A generous portion duly arrived and proved to be truly delicious. I also had the opportunity to sample my wife’s starter, Amritsari fish – fried sea bream in chickpea batter. On to the main, my wife choosing plaice goujons with a mixed salad while I chose Classic cod and chips cooked in beef dripping with mushy peas. Now it seems that people either love or hate beef dripping but I have to say that I found the batter light and crisp and the chips equally so with the fish cooked to perfection within. The mushy peas were delicious and the tartare sauce tangy, a perfect accompaniment to the meal. Once again I had the opportunity to taste my wife’s meal and I have to report that the plaice with its delicate flavour was allowed to reach the pallet unchallenged by the other flavours. Both deserts proved to be a fitting conclusion to the meal. My apple and cider, cake dense and full of flavour accompanied with an ample portion of clotted cream while my wife’s sticky toffee pudding was light and wonderfully sweet and presented with a generous scoop of Cornish ice cream. In conclusion our trip out proved to be well worth while and I should like to congratulate and thank all the staff for making our evening a memorable one. Dave and Lynn Benson 14th February 2014

Marie Curie Cancer Care in Cornwall The Marie Curie Nursing Service Cyclists are being invited to take part in the 2014 Great Daffodil Bike Ride in aid of the Marie Curie Nursing Service in Cornwall. Cyclists will set off from Bissoe Cycle Hire and ride along the old tramways cycle route to Portreath on Sunday 2nd March. The riders will be greeted with hot and cold drinks before making their return journey. Entry is free but we ask everyone to raise as much money as possible remembering that for every £20 raised this will fund 1 hour of Marie Curie Nursing Care in the community. Cyclists will be travelling from all over Cornwall to support the event which is being organised by the ladies of the Truro Fundraising Group.
