The Great Eggcase Hunt in Falmouth 2014

Commonly called mermaids’ purses, these are in fact the eggcases of rays and dogfish which are members of the shark family (elasmobranchs). The most common rays around Cornwall are Thornback, Spotted, Small Eyed and Blonde, whilst the egg laying dogfish are the Lesser Spotted (catshark) and the Bull Huss (nursehound). Eggcase Hunts are a valuable way for the Shark Trust to gather data on these fish and anyone can join in. SWANPOOL BEACH Saturday 29 March was a cold day and only the hardy were walking on the beach. In spite of this we had two thornback eggcases brought in for identification from Maenporth and Gunwalloe. We photographed these and sent the data off to the Shark Trust. Sunday was far more pleasant, and there was a steady Ros talking with a young hunter stream of people from young children to adults taking the leaflets and starting a new interest of eggcase hunting. There were also colouring sheets, word searches and mazes based on eggcases for children to take away with them. Michelle O’Connor, a local John talking with a group

community artist and friend organised the sculpting of a dogfish in sand and was helped by a succession of children and hindered by a succession of dogs.

We have also been Eric w ith his shark crash helmet invited to a local primary school to give a talk and introduce the children to rays and dogfish as well as some activities based on fishing. The Children’s Centre has adopted a donkey from the Flicka Foundation in Mabe, using money raised from the Christmas Carol service. Bertie is a very rare French breed which is one of the largest and most endangered breed of donkey, more so than white rhinos and giant pandas. The breed is naturally hairy and their fur is left to grow into dreadlocks reaching down to the floor. For the baked custard: 1 ltr whole milk ½ tsp vanilla extract 6 eggs & 2 egg yolks 150g caster sugar ¼ tsp freshly grated nutmeg

For the rhubarb: 500g rhubarb, cut into 4-­‐5cm lengths 120g caster sugar 100ml water zest of 1 & juice of 2 oranges To make the custard, preheat the oven to 200°C. Fold a clean tea towel over a couple of times and put in the base of a roasting pan. Place a 1.5 litre ovenproof dish on top, making sure it sits flat. Gently heat the milk in a saucepan until it’s steaming (don’t let it boil). Put the eggs, egg yolks and sugar in a large heatproof bowl. Stir gently together. Try not to form too many air bubbles. Take the milk off the heat and stir in the vanilla. Gradually pour the milk onto the egg mixture,

stirring gently. Strain the mixture through a sieve into the ovenproof dish. Scatter the nutmeg over the top. Boil a kettle of water. Put the roasting tray with the ovenproof dish in on the middle shelf of your oven. Pour the boiled water into the roasting pan to reach halfway up the sides of the dish and form a water bath. Reduce the oven temperature to 160°C (don’t worry about the tea towel -­‐ it has water covering it, so won’t be a fire hazard!). Bake for 45-­‐50 mins, or until just set but with a wobble. The custard will carry on cooking when you take it out of the oven, so don’t let it overcook. Carefully remove the ovenproof dish from the water. Leave to cool slightly while the rhubarb is cooking, or make in advance, leave to cool to room temperature, then chill in the fridge for a firmer texture. For the rhubarb, once the custard has cooked, turn the heat up to 200°C. Put all the ingredients in a baking dish, one that can fit the rhubarb in a single layer if possible. Cover with foil and bake for approx 15 mins, or slightly longer if the rhubarb stalks are very thick. Halfway through, remove and toss to make sure the rhubarb cooks evenly.

An exciting collaboration of two of the south west’s finest chefs will take place at the Merchants Manor Brasserie in Falmouth this May. The Brasserie’s award-­‐winning head chef, Dale McIntosh, will be joined by the much-­‐acclaimed regional favourite, Tom Scade from Blunos in Bath. The pair will be combining their talents and serving up an exclusive menu for one evening only on Bank Holiday Monday, May 26th. Diners will be able to feast their way through six sumptuous courses accompanied with live music from The Grace Notes. The finest locally sourced ingredients including Tregothnan venison, Falmouth crab, Warren’s beef and Tregassow Farm vegetables will all play their part in this flavoursome menu. The talented duo, who have both been recognised for their skills and expertise in regional awards, will deliver three creative dishes each. The dishes will include Dale’s tribute to Tregothnan Estate’s deer. Dale will recreate all the flavours of the field with solely Tregothnan produce to accompany the beautiful venison. Tom will recreate Martin Blunos’ famous signature sweet dish, ‘egg n’ soldiers’. This unmissable evening is being hosted by the owners of Merchants Manor, Nick and Sioned Rudlin, in the Brasserie. The revamped restaurant, open to all, boasts one of Falmouth’s most sought after menus and offers a welcoming atmosphere complemented with a stylish lounge and bar. Dale, a three-­‐time finalist and winner of the Cornish Challenge, is a recognised name in Cornwall and has established his reputation working in many of Cornwall’s favourite restaurants and gastro pubs including The Pandora Inn and Bustophers Bar Bistro. Tom, who has won several regional awards including Taste of the West’s South West Chef of the Year, started his career working at The Ritz Hotel London. He will be known in Cornwall for his time heading up the kitchen at Tides and the Mariners in Rock before recently moving to two Michelin starred chef, Martin Blunos’ new restaurant, Blunos, in Bath. Commenting on the special evening, Dale said: “I’m looking forward to welcoming Tom to the Brasserie’s kitchen and having the opportunity to combine our culinary experiences to create some really exciting dishes.” Early booking for this one off event is advisable. Friends of Tregoniggie Woodland

We are a new, friendly volunteer group who are helping to maintain and revitalise Tregoniggie Woodland with the support of the local authority. To achieve this we need more help. Tregoniggie Woodland runs from Bickland Road, next to Falmouth’s football ground, to the bottom of Longfield, and is sandwiched between Conway/Venton Road and Tregoniggie Industrial Estate. We hold regular work parties on the second and fourth Saturday of each month (weather permitting) 10am -­‐ 12 pm. We meet at the Venton Road entrance (at the two bridges over th th th th th the stream). Next work parties: Saturdays -­‐ 26 April, 24 May, 14 & 28 June, 12 & th 26 July. We’d love to see you there, for one or more if you can make it. Please bring a stiff broom, spade and a rake if you have them and wear suitable footwear as it can be a bit muddy. Look out for the notices in the woods which tell you what we will th be doing.
