INGREDIENTS: (continued) PREPARATION: The razor clams: • 15g rishiri-kombu • 900g low-calcium mineral water • 40g white soy sauce (shiro shoyu) • 500g live razor clams, purged in several changes of fresh water The oysters: • Native oysters (1 per portion) The final sauce: • 800g reserved ‘sea’ • 200g juice from reserved oysters • 30g white soy sauce (shiro shoyu) • Table salt • Freshly ground black pepper
For the oysters – clean the outside of the oysters with cold water. Using a short, wide-bladed knife, carefully open each oyster, transferring them and their juice to separate containers. Strain the juice through a fine sieve and use this to wash the oysters. Place the oysters in a clean container, then strain the juice once more and add it to the container. Cover and keep refrigerated.
The sea urchins: These need to be prepared as near as possible to serving in order to maximise their fragrant floral character. 1 urchin yields 3 portions – 2 ‘tongues’ per person. • Live sea urchins To serve (per portion): • 10g reserved ‘sand’ • 1 level tsp reserved fried shirasu • 1 reserved ‘seashell’ • Reserved ponzu • 2g fresh Codium spp. seaweed, washed in several changes of cold water and separated into pluches • 2g reserved hijiki seaweed • 2g reserved pickled dulse seaweed • Reserved razor clams, thinly sliced • 1 reserved oyster • Reserved sea urchin ‘tongues’ • Reserved final sauce (at room temperature) • 10g soya lecithin • 10g sodium caseinate trimmed samphire (approximately 3 x 5cm pieces per portion) 112
For the razor clams – wipe the kombu using a damp cloth, then place in a pan with the water. Heat to 60°C/140°F and hold at that temperature for 1 hour. Remove the pan from the heat and add the white soy sauce. Set aside until cold. Preheat a water bath to 65°C/149°F. Place the razor clams, in their shells, in a single layer in sous-vide bags. Add just enough of the kombu infusion to cover the clams, then seal under full pressure. Cook immediately for 4½ minutes in the water bath. Transfer the bags to iced water. When thoroughly chilled, remove the clams and discard the shells. Cut away the entrails and reserve the ‘tubes’ in the fridge until needed.
For the final sauce – place the ‘sea’, oyster juice and white soy sauce in a container and adjust the seasoning as necessary. Cover and refrigerate until needed. For the sea urchins – rinse the sea urchins under running water to wash away any mud or debris. Using kitchen shears, cut around the top of each urchin to reveal the orange ‘tongues’ inside. With a small spoon, carefully remove these from the shell and place on kitchen paper. Finishing and presentation – place the ‘sand’ on a plate and use a rigid card or spatula to shape it into a vertical strip about 2cm wide. Sprinkle the shirasu on top. Toss the ‘seashell’ in the ponzu and place on the ‘sand’. Toss the Codium seaweed in the ponzu and drain on kitchen paper. Place in a pile by the edge of the ‘sand’. Place separate piles of the hijiki and dulse seaweeds on the sand in the same manner. Drizzle the ponzu over the seafood pieces, then place them on top of each pile of seaweed. Place the final sauce in a container, add the soya lecithin and sodium caseinate, and foam the mixture using a hand-held blender. Spoon around the seafood to resemble the ocean crashing on to the beach. Garnish the dish with 3 pieces of samphire and drizzle a bit more ponzu over the top. Serve with the iPod. �

Think ‘design’ and you tend to think of a visual medium. Heston Blumenthal believes eating is a multi-sensory experience and it is all of our senses that influence the perception of taste and flavour.
DESIGNER FOOD
Ironically, it was a problem of generating enough heat from his stoves that first introduced Blumenthal to the powers of science. He talked to some physicists from Bristol University, and this led to fruitful investigations into areas as disparate as fragrance, history, magic and sound design. At the heart of his food is a fascination with multisensory perception and how the brain influences our appreciation of food. 109
His researches have fed his extraordinary fertile imagination. Only he could create nitro-poached aperitifs, crayfish ice cream, snail porridge and salmon poached in liquorice. But far from being gimmicks, these dishes at his Fat Duck restaurant in Bray have been accorded the coveted 3-stars from Michelin, a perfect ‘10’ from the Good Food Guide and, in 2005, the title of simply ‘the Best Restaurant in the World’. But Blumenthal does not only cook for the elite. He has also recently presented a series of Channel 4 bringing his own unique brand of ideas to improve the food in the NHS, a cinema chain, British Airways and even the Royal Navy. THE INSIDE GOES OUTSIDE THE OUTDOOR LOUNGE
For too long, enjoying the outside has involved something of a compromise. No matter how good your garden furniture, you can never quite get that cosy, plump, curled-up comfort that comes with a beautiful sofa or a favourite armchair. That’s why a company called Gloster has caught our eye. Because with their outdoor lounge furniture ranges, they have found a way of taking the indoors outside. In the process, they’re transforming patios, terraces and gardens into outdoor oases of living, lounging and relaxing. It’s a demanding brief, replicating interior comfort in an external setting. And it starts with a basic question: what about the weather? Gloster have succeeded in combining innovative design and pioneering cushion technology that means outdoor lounge products can actually be left outside. In fact, they can live outside all year round, and you don’t even need to cover or protect them. Climatic practicalities aside, the concept also requires high-quality, modular sofa systems that are flexible enough to fit almost any size and shape of outdoor space.
On both counts, the outdoor lounge triumphs and it’s small wonder that big sofa landscapes are a major trend for the 2011 season. Simplicity is key here: highly modular seating units provide the building blocks for each of the three outdoor lounge collections - Club, Cloud & Bloc. It means you can integrate all kinds of units together, exploring almost limitless design possibilities. The colour palette for 2011 season features monochrome dominance in natural colours such as taupe, grey and sand, with white and black still going strong. Individual accents can be created by using scatter pillows and accessories. These are either matched in colours and patterns to create an elegant, minimalistic style, or highly contrasting colours and patterns to create a vivid, fresh and interesting look. Either way, fresh air has come to upholstery. Settle back into outdoor lounge for the summer.
In the last edition of the UBER magazine we introduced you to the fantasy world of tree houses. Now designers, Blue Forest, have gone one step further.
Living it, up BLUE FOREST

No matter how grown-up we think we are, there is something about a tree house that brings out the six year old in us. Actually, when you’re talking about the work of Blue Forest, ‘tree house’ doesn’t quite do them justice. They can also design entire living spaces up in the air and love nothing more to allow their clients’ imaginations to run riot. That’s why last year Center Parcs in Nottingham beat a path to their door. They wanted something that people would talk about, be inspired by and, of course, pay to enjoy. No pressure there, then. In April 2010 Blue Forest and construction partners Jessops Construction got to work, with the challenge of developing three luxurious sustainable tree houses at Center Parcs’ Sherwood Forest location.
CENTER OF ATTRACTION As visitors this year will discover, the result is extraordinary. Each tree house offers a remarkably spacious 170m2 of living space. Indeed, each offers no less than four double bedrooms – each with their own en-suite bathroom – as well as an open plan living space and a kitchen.
And there’s more. A dramatic stroll along a canopy-level walkway takes you to a satellite tree house ‘entertainment pod’ complete a home cinema system, pool table and fully stocked bar. The main tree houses also include a number of exterior decks and balconies providing fantastic views of the forest, as well as a hot tub, sauna and an outdoor dining area for guests.
AN ENVIRONMENTAL MASTERCLASS Externally, the tree houses’ simple, rustic woodland feel is in perfect keeping with the light-touch impact they have on the environment. They are constructed in a variety of natural materials, including rustic timber boards and cedar shingles. Combining these in a non-uniform manner gives the tree houses an elegant yet natural finish and ensures that the structures blend in beautifully with their surroundings. Tree houses are also less demanding on the ground that supports them. They need very little foundation work and fit into the surrounding environment with minimal impact on the local habitat. At Center Parcs, where concrete pile foundations were needed, they were located with full regard to tree root systems.

ONE OF THE MANY KEYS TO THEIR SUCCESS IS THE WAY THEY WORK IN PARTNERSHIP WITH THEIR CLIENTS. The brief Like good designers in any field, Barnes Walker begins every project with an intensive period of looking, learning and listening to the client. The team encourages the client to provide clippings, photographs, materials – anything that helps to convey their thinking. This first stage also includes meeting the client’s Architect and Interior Designer. From there, they visit, photograph and survey the site. Where appropriate this may include a digital topographical survey, and tree and ecological surveys.

The response Now the creative thinking can start. Back in the design studio, the team reviews the brief and starts work on initial sketches. The designs are then refined and worked up into full colour presentations, often with mood boards, 3D models, computer generated imagery, materials and finishes. Revisions follow until the client is entirely happy with the concept. Then the project can swing into action.
Barnes Walker also works with the client in choosing every element of the garden. This may involve nursery visits; hand selecting shrubs and herbaceous plants; and sourcing special topiaries and stone paving. They also handle special commissions for features such as sundials, garden sculpture, water features or summerhouses. On site Once the contractors arrive, the team also makes regular site visits to make sure the design is being interpreted correctly. The positioning of plants; lighting; irrigation; build quality – no detail escapes them as the plan becomes reality. Barnes Walker offer a ‘one stop shop’ design and build service which reduces paperwork, is often more convenient for clients and results in a tighter control on quality.
Making it happen At the outset Barnes Walker would consider if there are any planning or listed building issues to consider. If so, the team will prepare the necessary submissions and reports. A suite of drawings may also be needed if the project is to go out for tender. Detail is everything here, right down to the last coping stone and lighting fixture.

A LISTED COUNTRY HOUSE IN KNUTSFORD, CHESHIRE Once a working farm, these stately gardens were created by Barnes Walker for this refurbished country house on the outskirts of Knutsford. The main house was extended and the associated barns were converted into new dwellings. A series of beautiful formal family gardens, with semi-mature trees, imposing topiary and instant hedging created the look of an established garden. Colour-themed herbaceous borders, a tennis court, orchard and outdoor entertaining spaces, hand selected topiary and specimen shrubs all combine to create a magnificent setting for the refurbished hall. The main picture above was taken immediately after the project was completed and shows the extraordinary transformation from the site’s agricultural past.

A ROOF TERRACE IN MANCHESTER CITY CENTRE The client was keen to breathe new life into the under-used roof spaces of this prominent Manchester building. Barnes Walker created three roof terraces: one large space as a relaxation area for staff, and for corporate functions, and two private terraces adjoining directors’ offices. The result is totally contemporary and creates a seamless extension to the offices themselves. Cloud box and yew topiary provide year-round structure, enlivened with changing seasonal displays. Theatrical lighting adds drama and prolongs the terrace’s use at night.

FAMILY GARDEN, NEWCASTLE A transformation project both inside and out, Barnes Walker designed and project managed the exterior work for a family in Newcastle. The gardens were dramatically reappraised to include formal gardens to the front and sides of the house. A Knott garden framed with flowering borders replaced a previous misplaced water feature. Barnes Walker also manipulated the garden’s levels to create an outdoor entertaining space, children’s play features and a summerhouse.

A CONVERTED FARMHOUSE IN MOBBERLEY, CHESHIRE This quintessentially English farmhouse had been painstaking restored and the client wanted the same design rigour applied to the garden. Barnes Walker designed and oversaw the implementation, with dry stone walling and intricate paving details softened by cottage-style planting.

The first time you heard the name ‘McLaren’, it was probably belted out by the legendary voice of Formula 1, Murray Walker. And indeed, this extraordinary racing team has garnered an extraordinary depth of knowledge on the Formula 1 circuits around the globe. But, off the track, McLaren’s record is every bit as remarkable. In 1992, they launched what was to become the world’s most critically acclaimed supercar: the hand-built McLaren F1. It was the brainchild of Ron Dennis and Gordon Murray and each was hand-built to be the ultimate road car – complete with a central driving seat. For a staggering 13 years it would be the fastest production car (at 240mph), as well as one of the rarest; so few were made they still command prices of up to £2 million. They followed this in 2003 with the world’s best-selling luxury supercar, the MercedesBenz SLR McLaren. And now in 2011, perhaps the most exciting development yet: a range of sports cars that will mark a new dawn in high performance on the road.
The first of three models to be built over the next six years is the McLaren MP4-12C, a car bristling with innovation derived directly from their Formula 1 expertise. This is coupled with a revolutionary chassis architecture and a total focus on efficiency. Departing from their hand-built era, McLaren plans to produce up to 4000 cars a year, challenging the world’s leaders in automotive technology, just as they have on the track. “We’re building more than a car, we’re building a brand” declares Ron Dennis, McLaren MD.
INTRODUCING THE CARBON MONOCELL It was 30 years ago that McLaren pioneered the use of carbon composite construction. It was a lead which others quickly followed. They were also the first to bring carbon fibre to road cars (in the McLaren F1), and created a carbon fibre chassis and body for their SLR. Now they’re going one step further: the 12C embodies the advantages of carbon composite (light in weight, high in strength / torsional rigidity, longevity) – but as a one piece moulding. Never has a carbon fibre chassis been produced in this way. This carbon MonoCell is the heart of the car. It delivers not only dynamic benefits, but engineering opportunities that form the basis of the car’s unique character. Its much narrower structure also contributes to a more compact car that is easier to position on the road and is more rewarding to drive.
NOT TRENDS. TECHNOLOGY The 12C has the highest specific power output in its class, as well as astonishing power- and torque-to-weight ratios. Indeed, it delivers the highest horsepower-to-CO2 ratio of any car with an internal combustion engine. It will also change the way we think about supercars. Its form is defiantly different from the current vogue for sexy angular lines (think the Lamborghini Gallardo, the Bugatti Veyron or the Pagani Zonda…). In fact, some see the McLaren as visually sober, but that misses the point. Every line and curve is there for a purpose: for design purity, efficiency and performance. This is a timeless classic, and a design that will endure long after the current trends are drawing wry smiles in museums. No, it’s the sheer joy of driving on which this car will be judged. McLaren’s FI drivers are usually cocooned away from any PR mayhem, but they couldn’t hold back former World Champion Jenson Button. He was nothing short of desperate to show off the capabilities of this remarkable car at the recent press launch at a Portuguese circuit. And this is the man who has owned a Bugatti Veyron and a Ferrari Enzo, both world title supercar contenders. He said: “Nothing will turn like this, nothing gets me as excited on a circuit like this. I could drive this all day.” No supercar he’s owned has the direct response of the 12C. The Proactive Chassis Control system along with the radical new suspension and brake steer technology offers ground breaking handling and allows the car to corner phenomenally quick. And McLaren’s forensic focus on ‘occupant packaging’ offers new levels of comfort and everyday usability.

DESIGN: EVERYTHING FOR A REASON What is the essence of great car design? A car that simply demands to be looked at as it passes by? Not at McLaren. Whether you look at any of their Formula 1 cars, or the now-legendary McLaren F1, the priority of every line, surface and detail is included with a job in mind. It is then beautifully styled to create not a ‘flash’ car, but a timeless one. That’s why in years to come the 12C will still communicate its engineering - rather than fads - through its styling.
The 12C’s body has been styled to support sector-leading levels of downforce which in turn leads to unrivalled lateral grip and stability. The car also manages air flow to support McLaren’s performance and weight targets. For example, placing the radiators adjacent to the engine keeps the car narrow and reduces weight. But it also results in a huge challenge of ensuring ample air flow to the radiators. That’s why you see dramatic air scoops and integrated turning vanes. At the same time, the designer ’s skill has come into play by creating air scoops that recall the McLaren logo (as do other features around the car). Just two ‘pure’ lines flow round the car. When integrated with several dramatic convex and concave surfaces, they present a car that looks compact, low and beautifully proportioned.
MCLAREN FROM THE GROUND UP Remarkably, every part, switch and button on the new 12C has been created for this car. Not a single item has been sourced from another manufacturer’s parts bin. It is, quite literally, every inch a McLaren, and all that means in terms of performance, style and the driving experience. The 12C is powered by a bespoke McLaren ‘M838T’ 3.8 litre, V8 twin-turbo engine producing around 600bhp. The shift is a McLaren seven speed Seamless Shift dual clutch gearbox (SSG). And while this car is unquestionably and unashamedly quick, McLaren has written a very broad definition of ‘performance’. Much more than just speed, it means focusing on dynamics including in-gear acceleration times; braking performance in all conditions; and efficiency of power delivery combined with the lowest possible fuel consumption and CO2 emissions. By any standards, the launch of McLaren’s first road car for some years is a major event. The Daily Telegraph has already described it as “a stunning debut for a supercar that’s arguably more practical than its rivals.” The car becomes available – in limited numbers, naturally – from May 2011. The price tag? A surprisingly reasonable £168,500.

At UBER we’re passionate about every facet of design, right down to the knobs, handles, catches and accessories. But the larger the project the more difference we can make in creating a stunning, cohesive whole. One such case is Huntington House in Surrey. Here, a design-loving owner – and a capacious 17,000 sq ft of living space – means our designers have a delicious challenge: to give full rein to their creativity while maintaining an eagle eye for detail. Wrought iron balustrading is a recurring theme here, bringing a fine sense of understated elegance to this beautifully proportioned country residence. It makes a proud statement at the gates, and also imbues the ‘Juliet’ balconies with a touch of romance. Both sets of ironwork were traditionally forged by artisan Peter Weldon by hand and worked
using centuries-old methods of the traditional blacksmith. They have also been galvanised and painted to acknowledge another age-old tradition: the British weather. Stairway to heaven This craftsmanship continues inside, too, throughout the internal area of the house in the central staircase. Here the wrought iron work is further enhanced by the antique bronze of another key expert hand, to reflect the delicate silver leafing in the ceiling finishes. In contrast to the understated elegance of the upstairs main reception rooms of Huntington House, the initial proposal for the downstairs basement leisure rooms offers a complete change of tempo to appeal to a more international style of entertaining...

SHAKEN AND STIRRED. WHAT IS A BASEMENT, IF NOT FOR A BAR? This is design at its most full-on; dazzling, extravagant and with a real sense of hedonism and fun. THE BAR: Curvaceous and dramatic, the structure is shaped like a Viking ship’s hull, with under-lighting and the nickel footrest also accentuating this striking form. THE SURFACE: The highly polished feel of the granite bar reflects everything around it, giving an ‘infinity’ ambience – especially when you look upwards to the backlit mirrored canopy. There are champagne chillers concealed within the cosmic black-honed granite, and the bar is wrapped in snakeskin leather-look which also clads the wall panels. THE WINE CELLAR: A tortoise shell marble backlit fascia extends the bar feel by echoing the design of the bar canopy. The wine shelving to the side and the wine cellar behind is scalloped to accommodate each bottle neatly. THE SPIRIT COLUMNS: More visual drama, with the columns sitting on a slowly rotating motorised platform. Blue light reflects up and down directly through the mesh shelving, refracting colourful light as it illuminates the liquor bottles and casting a tableau of shadows. AND THERE’S MORE: Top up that fizz and wander through to explore the rest of the downstairs has to offer including a bespoke pool & spa, treatment rooms, dance floor and fully equipped gym.

In 2009 this unique watch by Patek Philippe sold for €535,000.00 Sometimes, it takes the power of a community to create a force for good. When that community is a roll-call of the world’s finest and most prestigious watchmakers – you have a powerful force indeed. The reason they come together is to unite in a fight against a particular form of muscular dystrophy: ‘Duchenne’. This debilitating neuromuscular illness affects one boy in 3500. Indeed, throughout the world around 250,000 children, teenagers and young adults are affected by this disease.
In 2011, the watchmaking community will hold the fourth ‘Only Watch’ auction. The previous auction in this bi-ennial event raised vital funds which were channelled to 15 scientific partners and their teams. These included some 90 researchers and clinicians in 5 countries (United States, France, Italy, United Kingdom and Switzerland).
Each auction gathers more momentum, and the collection will first embark on a world tour with stops in Asia, the United States and Europe. The auction catalogue will also be made available and iPhone and iPad apps to generate the widest possible participation in the event.

It is shaped with a single block of stone with the same approach as stone crafting. The stone pieces are beautified by the refined creativity of Matteo Thun, a pioneering master of eco-sustainable design. The combination with Swamp Kauri wood was conceived to pair stone with another material – which likewise has many thousands years of history – for a truly unique final product. Kauri is a beautiful and particularly rare fossilized giant tree that grew some 50,000 years ago. These thousand year-old trees are extracted whole from mud beds in New Zealand’s swamps without needing to cut a single tree. Kauri is used to make counters in which the semi-recessed wash-basins are set; the bathtub is inserted in a large Kauri counter, leaving the wood surface with a natural finish to keep the material’s unique quality and history alive. The Neutra Duo collection includes wash-basins in two different heights, a monolith, a shower tray, a bathtub and a variety of wooden shelves.

TIRTA-ENING (CLEAR WATER) Reminiscent of old Javanese homes TirtaEning is dominated by a 91sq metre principal COMO Shambhala suite with a Japanese water garden featuring a private waterfall. TEJASUARA (SOUND OF FIRE) Constructed with 1200 tons of island stone Tejasuara is a bold, primitive-style residence, with tribal cloth furnishing and black bamboo beds and a fire pit burns beside the infinity pool, which overlooks fields of lemongrass. WANAKASA (FOREST IN THE MIST) Wanakasa is set amongst the trees, the pool’s semi-circular edge echoing the bend of the Ayung River that lies 100 metres below. This was always going to be a contract of contracts: the opportunity to design, create and build one of the most exciting wellness facilities in the most prestigious of surroundings. It was awarded to our friends at Cheshire Wellness, and it isn’t hard to see why. The Mere Golf Resort & Spa has set new standards at every turn. Already a sought-after wedding and conference venue, a luxurious 5-star hotel is now being built and is scheduled to open in 2012. Outside, Mere’s golf course is one of the practice courses for the Open Championship. Originally created in the 1930s from 150 acres of Cheshire parkland, it has been described as ‘the Wentworth of the North’. So when it came to creating a spa that would do justice to Mere’s ethos and passion for creating unique experiences for their guests, Cheshire Wellness was the natural choice. For more than 25 years they have been designing and building exquisite spas and pools in luxury hotels and private residences across the world.

Mere’s design brief was uncompromising. They wanted to create a destination spa in full keeping with the beauty and quality that permeates the location. They wanted something extraordinary that would push the design boundaries and be talked about and, of course, drive a major demand for memberships. Just to make things particularly interesting, they also had a firm opening date that could not be relaxed. The end result surpassed every expectation: an exquisite space that brings together inspired design, the finest in materials and true sense of luxury and well-being. Its features include: • Magnificent 20m deck level swimming pool with a grand stepped entrance and bespoke glass mosaics.

The room is dramatically accentuated by large format tiling and a vaulted ceiling. The up-lit water features shimmer light onto the ceiling enabling bathers to relax further whilst they enjoy an authentic soap massage. • The Steam Room a modern high temperature alternative to the Hamman, characterised by bespoke glass mosaics throughout and a cathedral style roof.
The Mere Spa ranks as one of the finest in the UK and is another example of the signature creativity of Cheshire Wellness. • The Caldarium inspired from the traditional Roman Caldarium bathing experience the Caldarium is a dry hot room invigorated with essences to give a unique atmosphere inside. Stone mosaics on the relaxing loungers, stone clad walls and recessed ceiling also enhance the ambience.
• The Ice Fountain in this especially created design feature, ice is released into a marble bowl from a concealed stainless steel pipe, and lit using blue LED lights. The ice is used to rub all over the body to cool down and contract the blood vessels, this is extremely refreshing and a natural cleaning method for the veins.
• The Experience Shower a sublime four programme cycle – Cold Mist, Caribbean Rain, Atlantic Ocean and Drench Shower – coupled with changing coloured lighting and essence injections of Icy Lime and Passion Fruit to endulge and stimulate the senses.
• The Sauna made in the most beautiful hemlock timber, the room has two-tiered benching. The room is softly lit from the walls and underbench units. The Sauna is said to introduce a fever like temperature to help reduce virus born infections.
• The Salt Room you are greeted by an illuminated salt block feature in a room adorned by shell mosaics. Breathe deeply: this atmosphere is created by salt particles in the air to clean and assist the respiratory system.
• Changing Rooms for client convenience the men’s and women’s areas mirror the sauna and steam rooms. Each also has a quiet wind-down area to help you fully relax.
Different space, different place One deliberate design decision was that the Mere Spa should not have a consistent ‘house style’. Every space has its own identity, so as you move from room-to-room there is a constantly refreshed feeling of individuality and discovery challenging one’s perceptions. UBER visits Rosso, the Manchester Restaurant of the Year 2010/2011. When you consider what he does for the ‘day-job’, there was only going to be one contender when the owner named his restaurant after a colour. Rosso, and not azzurro, is Rio Ferdinand’s Manchester eatery, where the Italian food on offer is sumptuous, stylish and simple. His first good move was the location. Rosso has been created from a fine Manchester edifice that is 114 years old, but Grade II listed. This former Victorian bank boasts pink granite, exquisite marble, stained glass windows – and, perhaps most memorably, two mighty domes. Rosso is all about the Italian essentials: from starters such as bruschetta and sizzling plump sardines; to steaming mains of tagliatelle, pollo caprino (chicken with goat’s cheese) and ‘giganti’ gamberoni (fiery tiger prawns). The wine list offers a robust selection of Chiantis, Valpolicellas and Barolos and, should you wish to extend the evening into stickier territory, Amaretto Disaronno, Sambuca, Grappa and much more awaits. FINER DINING Where is it written that ‘practical’ has to mean ‘boring’? A dining room (previous page) needs flooring that recognises its use – but Capitol Carpets of Chelsea gave this one a true air of luxury with Art-silk with a wool mix for durability, and a cut and loop double texture. This synthetic mix is the way forward: it has the look, feel and qualities of traditional silk but the practicality, durability and stain resistance of a modern day fabric. The colour also perfectly complements the dining chairs.
A DRAWING ROOM OUT OF THE MOVIES This splendidly large-proportioned room (right) was too large for standard sizes. The best solution was to go made-to-measure; although this sounds costly, it was actually more costeffective as there is minimal wastage. The result: a very special seamless carpet which has been hand-woven. It can then be custom-dyed and, in this case, the designers chose to complement the fabric on the sofa.

Adding to the brief the room also called for an acoustically good carpet since it doubles as a home cinema. The client therefore chose a dense pile that deadens the sound reverberations and aids the audio experience.
STARRING THE STRIPES Behind the wow-factor of this stunning zebra print (top left) lies some common-sense thinking. This carpet runs up the stairs and into a child’s bedroom. It therefore needs to be hard-wearing for the thoroughfare of the stairs and hall yet fun for the bedroom too, and cunningly patterned to mask any everyday marks. There were other options including leopard, crocodile, cheetah and antelope patterns – animal cunning at its best.
WHAT’S HOT (AND NICELY WARM...) Capitol Carpets of Chelsea has discovered a stunning new generation of synthetics. They pass every test when you’re looking for real luxury, but they’re also harder wearing. Also, if you have underfloor heating, ask them about carpets with lower tog ratings. They feel soft and snug, but let the warmth waft upwards.

For example, a seemingly small problem like a forgotten power point can quickly escalate into an unacceptable compromise in the location of equipment, or an unsightly workaround. That’s why NEST trains a practised eye over every planned socket, tap, fitting, shower, conduit, pipe and cable. They make sure that every component is where it should be and can function perfectly. Typically, this entails studying interior designers’ CAD drawings showing room and furniture layouts. It also requires detailed calculations: when a guest turns on a shower 30 metres and three floors away from the plant room, NEST makes certain he’ll receive the temperature, and the shower pressure, he’s expecting. A WINDOW TO THE PAST AND FUTURE What marks out a beautifully crafted home from an ordinary one isn’t just a question of dramatic design statements or exquisite furnishings and fabrics. Rather, it’s a dedication to getting the tiniest details right; details that may only catch the eye weeks or even months after you’ve lived with them. It’s a concept that Woodscope understands perfectly. Whether it’s a door architrave, a run of skirting or the sill of a window, none of these is ordinary in their eyes. Each demands and receives the same care – a lipped finish here, a radius edge there – which, together, combines to create a stunning home that’s the result of skill, standards and love. Below are two projects that show Woodscope’s obsession for getting the details right. Project 1: A project which engaged both Woodscope and UBER – and a good example of paying real attention to the basics. Woodscope purposedesigned four individual architraves (2 of which are illustrated left) so that each is in perfect proportion to the varying heights and widths of the doors and windows. Even the plinth at the bottom of each door frame was scrutinised; this led to an extra lip edge being added to give a bespoke air to the finished article. Woodscope even took the step of making their own raw materials. In this case creating their own ‘pre-sandwiched’ wood to remove any chance of architraves suffering from warp.
Project 2: There’s a lot we can learn from old skills – and much we can enhance with carefully applied new technology and materials. The brief was to meticulously restore this Grade II listed house, carefully preserving all the original detailing of this statuesque Victorian gem. The client also wanted a large extension, marrying the best of traditional skills with all the advantages of leading edge machine technology. A particular challenge was the windows. The originals were metal, of an intricate design which featured very thin glazing bars. In those days, single glazing was not only state-of-theart but had a hand-blown finish. Today, and regardless of energy efficiency or noise, the strict Grade II listing did not allow traditional double glazing for this type of window: the glazing bars were too thin to hold the thicker glass. It was also not aesthetically desirable for such a beautifully intricate design. Fortunately, the team at Woodscope relish a challenge: in this case, to satisfy both the Grade II requirements and the owner’s wish
for 21st century eco-efficiency. The first task was to replicate in wood what had gone before: the same intricacy and thickness (or rather, thinness) of the listed windows. The next challenge was to scour their contacts to find the impossible. They not only needed a very different type of double glazing which met the thinness criteria, but which also gave the impression of having been hand-blown. This quality, and the way it refracts light so beguilingly, is redolent of glass produced in Victorian times. Amazingly, the answer did exist in the form of a remarkable new superthin double glazing called Slimlite. Because it is filled with krypton and xenon gases (instead of the traditional lighter argon) it is even more effective at reducing noise and boosting insulation. It is also so slim it is virtually undetectable as double glazing. Its overall appearance satisfied the planners, delighted the owners – and everyone was happy.
