Red Velvet Cupcakes 1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9-inch round pans. 2. Beat 1/2 cup shortening and 1 1/2 cups sugar until very light and fluffy. Add 2 eggs and beat well. 3. Make a paste of 2 tablespoons cocoa and 4 tablespoons red food dye; Add to creamed mixture. mix 1 teaspoon salt, one teaspoon vanilla extract and one cup buttermilk together. Add 2 1/2 cups flour to the batter, alternating witht the buttermilk mixture, mixing just until incorportated. Mix soda and vinegar and gently fold into cake batter. Don’t beat or stir the batter after this point. 4. Pour batter into prepared pans. Bake in preheated oven until a tester inserted into the cake comes out clean, about 30 minutes. Cool cakes completely on wire rack. 5. To Make Icing: Cook 5 tablespoons flour and milk over low heat till thick, stirring constantly. Let cool completely! While mixture is cooling, beat 1 cup sugar, butter, and 1 teaspoon vanilla until light and fluffy. Add cooled flour mixture and beat until frosting is a good spreading consistency. Frost cake layers when completely cool.

Food’s For The Holidays One of the biggest problems around the holiday season is trying to figure out what to serve besides the traditional foods. All the way from appetizers to desserts it can be a hard decision. We are here to help you make that decision just a little bit easier and figure out what a few of your choices may be. First we will obviously start off what comes first at a holiday dinner, the appetizers. A very important part about a great appetizer is having it be something you’re guests can snack on easily while they wait for the meal to start. A great appetizer that your guests have probably never had before is the delicious baked cranberry jalapeño dip. Although it may sound like something to be skeptical about this is such a delicious dish which is guaranteed to be gone before the meal is ready. You can find the recipe for this scrumptious dish on our recipe page. Now onto the perfect side dish for your perfect meal. A great side dish must be delicious but not outshine the whole meal together. Another great dish which will most likely be a first time for your guests is the stuffed acorn squash. This dish is just as yummy as it is appealing to the eye. “ I never ate winter squash as a kid, in fact I made sure to avoid it around the holidays but first trying this I was mind blown,” said Jessica Hoock. Lastly we move on to my favorite part of the meal, the dessert. When it comes to desserts I don’t see any basic rules, just make sure it’s delicious.

Food’s For The Holidays Conclude your meal right. One of my favorite holiday desserts is a winter spice raspberry hand pie. Feature Recipes Baked Cranberry JalepeĂąo Dip:
1. Heat oven to 350 degrees F. 2. combine 10 slices cut into 1/4th inch pieces and 2 tablespoons of jarred jalepeĂąo in a bowl and mix well. 3. Place two 2 cups frozen cranberries and 2 tablespoons sugar in a different bowl; toss to coat. Gently stir cranberries into cheese mixture.
4. Spread mixture into 1-quart casserole dish. Bake 30-35 minutes or until bubbly around edges. 5. Serve with Baguette, if desired.
Stuffed Acorn Squash: 1. Preheat oven to 450 degrees F. 2.Place halved and seeded acorn squash face up in baking dish. 3.In each half place 2 tablespoons butter, 2 tablespoons brown sugar, 1 cup stuffing mix, 3/4 cup chicken broth, salt, pepper, garlic powder and onion powder. Wrap each half tightly with aluminum foil. 4. Bake in preheated oven for 60 minutes, or until squash is very tender.

Feature Recipes Winter Spice Raspberry Hand Pie:
1. Combine 12 ounces raspberries, 1/2 cup sugar, 2 tablespoons honey and 3 tablespoons water in a small saucepan over medium heat. Simmer for 30-40 minutes, stirring frequently until mixture has thickened. Allow to cool to room temperature. 2. Preheat oven to 350 degrees F and line baking sheets with parchment paper. 3. In a small bowl whisk together 1 egg and 1/4th cup if milk then set aside. 4. Gently roll each round of pie dough between two sheets of wax paper to even out any cracks or creases. Cut twelve six-inch rounds, re-rolling scraps as needed. Use remaining dough to cut out desired shapes using pie crust cutters or cookie cutters. Place a generous mound of raspberry filling in the center of six of your small rounds leaving half an inch of dough exposed around the perimeter. 5. Brush the exposed dough with egg wash and top with additional small round of pie dough. Press the back of a fork around the edge of the entire round to seal the dough around the filling. Cut three small slits in the top of each hand pie. Using egg wash as glue, attach a festive cutout to each hand pie. 6. Transfer hand pies to prepared baking sheets and brush with a light layer of egg wash and sprinkle with coarse sugar, if desired. 7. Bake at 375 degrees Fahrenheit for 18-20 minutes until golden brown. Serve warm or transfer to a wire baking rack and allow to cool completely before storing in an airtight container. 11
