Letter to Our Readers
It’s a warm summer day. You’ve been looking forward to an afternoon of sun and a refreshing splash of water. However, you just not ready for “another day at the beach.” Our writers have been busy researching some alternative venues for pleasure. In this issue, we offer a listing and details on NJ Area Water Parks, a change of pace to visit and enjoy with friends and family. Learn more in this month’s main editorial feature. In the mood for a waterfront dining experience with an appeal to virtually everyone? Try Martell’s Waters Edge in Bayville. This facility offers casual fine dining, dancing and entertainment by top local NJ bands at their tiki bar, but its claim to fame may very well be its ability to shine as a premier wedding venue overlooking Barnegat Bay. Learn more in this month’s Restaurant Profile Meet a Central NJ area cover band lead by the self-proclaimed “tallest nj njmusician on the Jersey Shore”! Ned S E U N E E N U E SRyerson (6’10”) and the Groundhogs play songs that everyone loves to sing along to. Whether n it’sja solo acoustic njor full-band show, aS good time is E

guaranteed. This issue’s Band Profile will provide more interesting details. What’s brewing? The answer, according to our contributor Bill the Brewer, a ton of new brews and styles. Take a few minute to read this issue’s All That’s Beer feature and learn what’s in store for beer lovers. The road to comedy is not an easy path. Take Tim Dillon, a standup comedian interviewed this month by our contributing writer Steve O. In their conversation, Tim states, “by that time I had sobered up, came out of the closet, and was pretty much financially ruined. I found myself as a juror on a murder trial.” Read how this led to a career in comedy in this issue’s Comic Relief. Okay, that it for now. The weather is good, summer is still with us, and there’s so much to experience and enjoy out there. Go for it.

artell’s Water’s Edge in Bayville has something for everyone, including casual fine dining, dancing and entertainment by top Jersey rock bands at the tiki bar, but its claim to fame may very well be its ability to shine as a premier wedding venue. And, for those who dream of a waterfront wedding, this beautiful place overlooking Barnegat Bay is the stuff dreams and wishes are made of. General Manager of the venue, Ed Brannagan believes the reconstructed Martell’s Water’s Edge is “Ocean County’s premier year-round wedding venue.” And, waterfront weddings, both small and large, are this venue’s specialty. “You have a great view of the bay here,” Brannagan said. “We are located right over water. You can’t get a better view in Ocean County. If you want to get married on the water, this is the best place to be.” artell’s Waters Edge restaurant, tiki bar, and catering hall is under the Martell’s Tiki Bar umbrella of Point Pleasant Beach and was reconstructed from the ground up in 2012-2013after it was destroyed during Hurricane Sandy. What couple can resist the romance of a wedding ceremony overlooking the bay in a private waterfront garden, amongst family, friends, cool breezes and the timeless ripples of water? Even if the weather doesn’t allow for an outdoor waterfront ceremony, the elegantly appointed banquet room offers spectacular panoramic views of the majestic Barnegat Bay from every seat of the venue that welcomes weddings both large a small. The wedding coordinating team, headed up by Events Coordinator Jenna DeSantis, will help plan and orchestrate the wedding of your dreams. DeSantis sees you through the process, from beginning to middle to end, along with Executive Chef Kristopher Greene and Brannagan. Martell’s Waters Edge ensures that the bride and groom get the special attention they deserve. Your wedding will provide forever memories and your guests will enjoy the elegance of the venue’s decor paired with the creative talent and skills of award winning executive Chef Kristopher Greene, to provide the ultimate waterside wedding experience. “Our culinary team combines the freshest ingredients with innovative flair to prepare a waterside meal that caters to meat lovers, seafood lovers,
gluten-free and vegetarian lovers as well,” Brannagan said. Greene is a Culinary Institute of America graduate and AAA Four-Diamond recipient, which “acknowledges chefs that have experience in distinctive fine-dining and develop menus that reflect a high degree of creativity, quality and complexity,” according to Brannagan, who adds that Greene was a James Beard nominee in 2012, which is the “The Oscars of Food.” Referring to Greene’s culinary creations, plating and presentation, Brannagan said his dishes are, “amazing.”

BY CLARE MARIE CELANO Brannagan refers to Martell’s dining as, “casual fine dining.” “You can wear shorts and be comfortable and casual, or dress up. But you don’t have to dress up to enjoy casual fine dining,” the general manager says. Enjoy a casual meal on the outdoor deck and leisurely watch the boats go by. Or, dance the night away at the tiki bar with some of the Jersey Shore’s hottest bands. If a more elegant night out is on your list dine in the casual second story dining room overlooking the bay. Spend the night enjoying live entertainment at the tiki bar as the sun sets and the nightlife heats up. Mike Konopka is Ned Ryerson of the Groundhogs, the self-proclaimed “tallest musician on the Jersey Shore.” Standing at 6-feet-10, he is not the actor from the movie, Groundhog Day. What’s Brewing?
The brewery boom has produced a climate that is extremely competitive right now, and brewers are pushing out some amazing beers as a result. There are literally hundreds of new beers with unique ingredients, innovative brewing techniques and recipes that are far outside any style guidelines. These are great days for the adventurous beer drinker, but it begs the question, what is a beer style? Beer can be simple yet complex. The four simple main ingredients (water, barley, hops & yeast) have been used for hundreds of years. The complex kaleidoscope of beer styles is a product of how we treat these ingredients and the imagination of the brewer. When the barley goes through the malting process it is kilned, or “cooked” at a low temperature. How long the maltster lets the grains kiln produces a huge assortment of flavors, from doughy to roasted or burnt. Hops grow in wide variety as well. Like grapes, the variety of the hop and where it grows has a large influence on its flavor. The same can be said for the yeast. Each yeast strain is different and produces its own characteristics in the beer. 16

Summer Olympic Cocktails
ibations
by Bill “The Brewer”
I hope you made it through the July heat wave OK, New Jersey. The dog days of summer are upon us. It’s certainly heating up in the world of craft beer too. New Jersey had quite a few beer festivals in July, all of which seemed to grow from last year and there were a ton of new brews to try.
EENNUUEESS
Beer styles were first born out of location and limitations. Hundreds of years ago, brewers couldn’t afford to ship in ingredients from across the globe. They brewed with what was around them. The Pilsner beer style started in the city of Pilsen, where the water, yeast, malted barley and hops in the area where perfect for brewing this particular style of beer. The same could be said for stouts and the United Kingdom and assortment of other beer styles. As people traveled they wanted to take their familiar beer recipes with them, and so the styles of beer spread. Traditionalists set guidelines to these styles to ensure their precious recipes were not forgotten, and remained true. Brewing competitions created an even stricter standard of what a beer style should taste like. Today this is regulated by a non-profit organization called the Beer Judges Certification Program. But, with brewers trying to stand out, they are pushing the boundaries of what their beer “should” taste like. They are creating exciting new concoctions with new flavor combinations.

Immigrants encountered such opinions frequently in the late 19th century, but this one isn’t typical: Now holding a torch in New York Harbor, she’s the subject of “Liberty: A Monumental New Musical.” Earnest, sentimental and intermittently charming, this family production offers a slice of American history that here tastes mostly like apple pie. Whether the show engages you will partly depend on how easily you accept a walking, talking statue. Children should have no trouble suspending their disbelief, but they may be confused by the script’s tendency to treat its central character as a human one moment and a metal monument the next.
I often wished that Dana Leslie Goldstein, who wrote the book and lyrics, had told her story solely through a W A Yheroine. flesh-and-blood Instead, officials ask Liberty, as she’s called, whether she has skills or education; later, Francis A. Walker, a bureaucrat and one of the show’s real historical figures, tells her, “I’m afraid the government isn’t in the habit of giving away pedestals to every statue that gets off the boat.” Adapted from “Lady of Copper,” a briefer musical that Ms. Goldstein wrote with Jon Goldstein (her brother) and Robert Bruce McIntosh, “Liberty” concerns the arduous quest to obtain funds for the statue’s base. France presented the work as a gift; the United States agreed to provide the pedestal. But during a recession, the country was none too eager. When Liberty (Abigail
nj
ENUES
Shapiro) tells the xenophobic Walker (Brandon Andrus), “You can’t put up a wall,” you may think you’re hearing political conversation from 2016, not the 1880s. The strengths of “Liberty” include its songs (Mr. Goldstein wrote the music), which range from propulsive pop to an acerbic tango to a humorous duet of immigrant one-upmanship (“We Had It Worse”). It also has a winning star in the teenage Ms. Shapiro, who brings pure conviction to her peculiar role. Under Evan Pappas’s direction, the rest of the cast is largely impressive, too,
especially Emma Rosenthal as Emma Lazarus, whose poem “The New Colossus” helped promote the statue, and Mark Aldrich, whose parts include Joseph Pulitzer, the newspaper magnate who waged a fundraising campaign for it. But “Liberty” is at its best when it goes beyond the starryeyed patriotism to explore a more somber history. Samuel Ferguson (the excellent C. Mingo Long), son of a slave, reminds Liberty that his forebears didn’t immigrate by choice. When Liberty crushes his ancestors’ shackles beneath her feet, she evokes an America some are still waiting for. If this “off-Broadway” production at 42West in NYC sounds appealing get your tickets now as the lastperformance will be Sept. 04, 2016.

E N UES nj
nj E N UES Over the years I’ve seen many U E S EN comedians both live, and via video, thanks to the internet. Through some of my friendships, I’ve been introduced to many comedians I might otherwise know nothing about. It was through these connections that I was led to the comedy of Tim Dillon. As he has said of himself, “… by that by Steve Ortlieb time I had sobered up, came out

of the closet, and was pretty much financially ruined. I found myself as a juror on a murder trial. During the trial one of the jurors said “You have a talent for making people laugh. Try standup comedy”, and a week later I did. The first time, it went somewhat decently and it was a thrill to be doing something I had always wanted to do. I knew I wasn’t going to stop.” We were lucky enough to get Tim to slow down long enough for a short talk.
Tim Dillon
They would yell at me. I ruined people’s vacations. It was a nightmare for everyone involved. V-NJ: What’s your process? Do you write and work off a loose script or do you practice in front of a mirror and just remember your stuff? TD: : I go to the stage with an idea that’s funny and I try to make it funnier through talking. I do write certain things down but rarely a fully formed joke. I will maybe write a few words or phrases on a paper before I go up there, but I generally find a funny angle by talking.
V-NJ: What do you have upcoming in the area and where can we find your schedule? TD: Schedule is on Facebook (Tim Dillon) and Twitter (TimJDillon). Website will be up soon. I have club dates in NYC including the Stand Comedy Club, Stand Up New York, Caroline’s, Empire City Casino August You can learn more about Tim by going to his Facebook page at https:// w w w. f a ce b o o k . co m / Ti m - D i l l o n Comedian-415911818480794/ and I also highly recommend his Tumblr page at http://timdillontalks.tumblr.com/.
Venues-NJ: : For starters, tell us a little of your early years. I know you have a supportive grandmother who was a huge help, and not just financially. Not everyone has that kind of support. Walk us through the teen years to your first stand up? Tim Dillon: I started in comedy after being a juror on a murder trial. I thought everyone in the room had found their calling, even the murderer. But I wasn’t happy selling mortgages. So I started stand up. My grandmother was very supportive. She would lend me her car to go and do gigs on the road. She was definitely my biggest supporter. She always reminded me that I was doing what I loved, if and when I complained about money. She came to see me perform recently and said “It was fine”. She was always very honest. V-NJ: You’re pretty outspoken about this profession being a “calling”, and one that can take many years to make what one would call real money. Do you have any side jobs to help you get by during the lean times? TD: In the early years I sold copiers, then I became a tour guide on a double-decker bus. The tour guide job in particular helped my comedy by making me spend all day on a microphone. I would yell at tourists. 26

Editor’s Note: This column is being repeated to reinforce Venues NJ’s commitment to both our readers and our advertisers and potential advertisers. As a reader, you look to Venues NJ as a resource for timely information on the subjects of dining & entertainment. As a proprietor of a restaurant, bar, pub or entertainment venue, we offer you an editorial environment dedicated 100% to the subjects of dining & entertainment. This is what we have done for the past four years and this is what we will continue to set as our mission.
ESTORE… HELP WA Whether it be a product, a service or a thing, to be useful or meaningful, “it” should have a main purpose or focus in order to be understood and helpful. Something that exists, but has no understandable or has no long term purpose is often referred to as a gag or a fad. In the hospitality business, a restaurant, bar or pub establishes its existence or presence by presenting itself as a venue with a definitive reason d’être. This is expressed in its variety of offerings, while always fitting to its main focus. Examples: an Italian restaurant is not going to be serving Shepherds Pie; a Japanese restaurant does not offer kielbasa as a main course. The business establishes itself as a venue offering a specific collection of ethnic offerings and builds its brand accordingly. In the publishing business, most successful media establish and present themselves with a main focus so that the audience knows what to expect and reacts accordingly. News organizations are expected to present the latest news; sports media bring us a wide variety of major sporting events, etc. Some publications do widen their scope and offer “lifestyle” information. But, that’s how they present themselves and that’s what their audience expects. Venues NJ has established itself strictly as a dining & entertainment medium and is being offered through multi-media outlets and platforms as such. That is our main focus and the information we provide, both in our editorial features and advertising messages is exactly what our audience have come to expect. The staff at Venues NJ has dedicated itself to this main focus and we will continuous to do so …. because our readers have told us that’s what they want and that’s what they expect from us. We hope you agree and we promise to continue offering timely information on these two areas of interest: Dining & Entertainment.
