Sweet Chin Music is a cover band that has the Jersey Shore home grown feel. The members are friends, band mates, and neighbors. They are a true “local” band, often performing at the same bars/clubs that they themselves frequent. Their sound is not what makes them unique; it’s that this group of “20-somethings” choose to play music from the 70’s and 80’s. Let’s start with the name Sweet Chin Music. Josh Shields, the drummer, fills us in, “the band’s name originally was “The Mash-holes.” Mash, which is a nickname of mine, and I’m sure with the word “holes” following up, you could figure out the rest on why we named it that. Of course at 21 years of age we thought it was hysterical, but really was just straight unprofessional. We also didn’t want to be the typical bland “John Smith Band.” So took some time, but finally figured it out. As a child, being an avid fan of Shawn Michaels the WWE professional wrestler, I thought; hey why not use his finishing move as our name. For those who aren’t aware, his finishing move is called “Sweet Chin Music.” I figured we are a cover band; we don’t need a serious name, just something clever. I then called Chuck and he laughed, and said “Yup, perfect.” That has been our name ever since, which

is cool cause over the last few years so many people will come up to us at gigs and say “Sweet Chin Music? Like Shawn Michaels? WOW that’s awesome!” All five members are from the same town in Monmouth County. They are Ray Hoffman, vocals, Joe Perrino, bass and vocals, Chuck Graves, guitar, Nick Berardi, keyboard and vocals, Josh Shields, drums. “The band pretty much grew up together”, Josh explains, “Our guitarist Chuck and I have known each other our whole lives. We met Joe in 6th grade when his family moved into town. Also around the same time, I met Ray who was in 8th grade and Nick who was in my gym class”. When asked about how long they have been performing together and how it started, Josh had this to say, “Technically the band has been around for a little over 5 years. The idea started around my sophomore year of college, I was playing football while doing a full-time unpaid internship so I had no time to work to make extra money. One holiday weekend, I brought my roommate home with me and we went out to The Boathouse to see my uncle’s band, The Joe Baracoa Band. After watching them drink beers, entertain a packed crowd and have fun, we thought, man, we should start a cover band at school to make some extra money. So it began. We started a band, learned a bunch of easy songs, and started reaching out to the local bars to hire us. Our selling point was that they could book us on a week night, and we guaranteed to pack their bar with our college friends. After proving to them we could pack the bar, and make them great money on a weeknight, we continued to play these bars 2-3 times a month for the remainder of college. I then brought the idea home, first calling my buddy Chuck as well as a few other members (who are no longer in the band), explaining to them how we could make extra money, meet girls, and drink To Advertise Call 732.995.1714

beers all while playing music. Of course they were sold and we started playing in the summer of 2011. Once August came around, we all went back for school and the band pretty much went dormant. After graduating in 2012, I decided to bring back the cover band. This time calling Chuck and we decided we need to get some new dedicated members who understood the magnitude of what we were doing, and what it could turn into. Then, after calling Ray and Joe, Sweet Chin Music was reprised. The rest is history”. Their playlist depends on the bar and or crowd. “We’ve been complimented on how we cater to all audiences of all ages. Some cover bands out there just play whatever they want at the bars. When you have 21 year old girls requesting you to play Tom Petty’s American Girl, you have to play it; it is part of the business. You can’t just go into a room and play a bunch of Rush covers; the crowd wouldn’t care at all”. A Plethora of PUMPKIN The popularity of all things pumpkin is in full swing. November brings in the heart of the fall, and with it a swarm of seasonal fall beers. Arguably the most popular of all the seasonal beers is the pumpkin ale, with over 400 different brews on the market. Pumpkin ales can vary widely in taste, color and alcohol content. Some pumpkin ales aren’t even ales, they’re lagers. Others don’t have any actual pumpkin in them. So what’s the story with the pumpkin beer? Pumpkin beer is an American story. The history of brewing with pumpkins starts when the Pilgrims arrived in the 1600’s. The malted barley they used for their beers in Europe didn’t grow wild in their new home. Desperate for beer, they used the native pumpkins as a substitute for the sugar source in their beer, and it worked beautifully. In fact it worked so well that after the American colonies started developing their new brew and barley became available, people still used pumpkins in their beer. The pumpkin imparted flavor, body, and it was local and cheaper. There is even a recipe for a pumpkin ale passed down from founding father, and brewer, George Washington.

Pumpkin beers are malty beers, light on hops that usually start as Red, Pale or Amber style beers. Modern pumpkin beers are more pumpkin pie than pumpkin beer. As I mentioned, some pumpkin beers don’t use any actual pumpkin, they use pumpkin spice. Pumpkin spice is a combination of ginger, clove, nutmeg, cinnamon, and all spice. It’s these flavors that are the popular trend. The difference in each brew is the combination of spices, sweetness, alcohol strength and how (or if) the brewer uses the pumpkin. Some brewers use real roasted pumpkin, others use canned pumpkin. The pumpkin itself contributes mild earthy flavors, but has a big impact on the mouth feel of the beer. • 1 part Jim Beam® Maple • 3 parts Apple Cider • 1 part Lemon Sour • Lemon Wedges Instructions Build over ice in a tall glass. Garnish with a lemon wedge and serve.
• 1 part Jim Beam® Straight Rye Whiskey • 1/4 part Simple Syrup • 3 parts Apple Juice • 1/4 part Lemon Juice • Garnish with Apple, Sliced Instructions: Measure and pour Jim Beam Rye, simple syrup and lemon juice into tall glass. Fill completely with ice and top with fresh pressed apple juice. Stir and serve. Garnish with a sliced apple.
Cranberry Cool
• 2 parts Cranberry Juice • 1/2 part DeKuyper® Triple Sec Liqueur • 1 1/2 parts Jim Beam® Original • 2 parts Lemon Sour Instructions • Build ingredients in order listed over ice in a tall highball glass. Garnish with a lemon wedge and serve.
Bardstown Sling
• 1 1/2 parts Maker’s Mark® Bourbon • 3/4 parts DeKuyper® Peach Brandy • 1 part Peach Puree • 2 parts fresh Lemon Sour • 2 dashes Peach Bitters • Garnish Nutmeg Instructions • In an ice-filled mixing glass add Makers Mark® Bourbon, peach brandy, peach puree, fresh lemon sour and bitters. Shake until well-blended. Strain into an ice-filled goblet. Garnish with freshly grated nutmeg. • Fresh lemon sour: Mix 2 parts freshly squeezed, filtered lemon juice with 1 part simple syrup.
Bourbon Squash
• 1 1/2 parts Maker’s Mark® Bourbon • 3/4 parts Orange Juice • 1/2 part Lemon Juice • 1 tsp Simple Syrup Instructions Squeeze citrus juices into a tall glass. Add simple syrup and pack the glass with shaved ice. Add Makers Mark® Bourbon and stir. Serve with a cocktail straw.
Bourbon Punch
• 1 liter Maker’s Mark® Bourbon • 1 cup Sugar, Granulated • 3 Lemon • 3 Orange • 1 liter Tea • 250 ml Champagne • Fresh Nutmeg • 2 ounces Chambord raspberry liquor (black raspberry liqueur) • 3 ounces cranberry juice Instructions - Peel the oranges and lemons, keeping the peels. Juice the oranges and lemons. Combine sugar and citrus peels in the bottom of a punch bowl. Muddle together until sugar starts to clump together. Let sit for about 2 hours (while not necessary, this does add a little complexity). Brew the tea for about 30 minutes, remove loose tea or tea bags and allow to cool. Add the juice of the peeled fruit, tea and bourbon. Stir. Top with champagne just before serving and stir gently. Top with freshly grated nutmeg and serve. If you can’t grate fresh nutmeg, don’t use the prepackaged powdered stuff. It will turn your punch into a paste. If fresh isn’t possible, garnish with citrus wheels or fresh fruit.
However, sometime around the Industrial Revolution pumpkins fell out of popularity and so did pumpkin beer. Then Prohibition crippled brewing in America, and pumpkin beer all but disappeared. It wasn’t until the 1980’s that pumpkin beer was brought back to life by Buffalo Bill’s Brewery in Hayward, California. Legend has it that Buffalo Bill’s recipe was based on George Washington’s but with a few tweaks. 14

Thanksgiving…
W
hen the leaves turn to orange, crimson and gold carpeting streets and lawns, when the wind picks up just a bit and you need a heavier jacket than you did just the week before, fall has indeed arrived and with it, the promise of the Thanksgiving holiday. Today our Thanksgiving holiday is all about the turkey, the stuffing, the vegetable dishes with rich savory sauces and a myriad of decadent creamy desserts. It’s about letting the tryptophan in the turkey do its work as we settle down to watch the Cowboys and Lions host adversaries on the gridiron. It’s all about families getting together. As we shop for the turkey, the cranberries, the ingredients for pumpkin, apple and coconut custard pies, and those yummy sweet yams and whipped potatoes, it might be nice this year to give a bit of thought as to what attendees at the very first Thanksgiving feast put into their hungry tummies as they celebrated what has evolved into a day steeped in tradition and family fun.
Thanksgiving then …
A trip back in time to what experts believe was the first Thanksgiving would bring us to the year 1621 when the Pilgrims landed at Plymouth Rock, Massachusetts.
After a rough winter, in which about half of them died, they turned for help to neighboring Indians, who taught them how to plant corn and other crops. The next fall’s bountiful harvest inspired the Pilgrims to give thanks by holding a feast. According to Internet sites, Pumpkin pie wasn’t on the menu because there were no ovens for baking, but they did have boiled pumpkin. Cranberries weren’t introduced at this time. Due to the diminishing supply of flour there was no bread of any kind. The foods included in the first feast may have included duck, geese, venison, fish, lobster, clams, swan, berries, dried fruit, pumpkin, squash, and many more vegetables.” Also consumed were wheat flour and Indian corn, peas, beans, onions, lettuce, radishes, carrots, plums and grapes. In addition, walnuts, chestnuts and acorns were also abundantly eaten at the time. History accounts are a bit sketchy and some even conflict a bit as far as what the Pilgrims drank during their Thanksgiving dinner. According to some, at the time of the Mayflower, water was not considered the safest liquid to consume. Beer was a much safer beverage than water. During the Mayflower voyage, the source of water

was beer and wine. The reason for beer’s advantage over water is that harmful microorganisms cannot live long in beer or wine.
The Thanksgiving feast became a national tradition -- not only because so many other Americans have found prosperity but also because the Pilgrims’ sacrifices for their freedom still captivate the imagination. To this day, Thanksgiving dinner almost always includes some of the foods served at the first feast. But, before the meal begins, families or friends usually pause to give thanks for their blessings, including the joy of being united for the occasion. Thanksgiving Day, currently celebrated on the fourth Thursday in November, has only been an annual tradition in the United States since 1863, when, in the midst of the Civil War, President Abraham Lincoln proclaimed it a national holiday. Prior to this, days of thanksgiving were celebrated by individual colonies and states. Thanksgiving was historically a religious observation to give thanks to God.
Thanksgiving now… Thanksgiving is a day when family & friends get together at home to celebrate the holiday. The timeline usually being: watch the Parade …watch football … eat …watch more football…dessert…nap … watch more football while snacking! Today, our choices for the Thanksgiving feast are endless. We can go for the traditional meal of turkey with all the trimmings and all the rich desserts. We also have at our disposal a plethora of lowcarb menus, diabetic menus, and dietetic

While Thanksgiving began as a band of Christian separatists sought a new home in the New World 400 years ago, today it has become a secular holiday that banks on all things American – a big meal, football and parades, topped off with competitive shopping. But for many, their ethnic and religious ties are inextricably linked to everything they do, including how they celebrate turkey day, or don’t. Even within the US, there are traditional variations. For example, Hawaiians use Thanksgiving as a time to celebrate the “mainland” traditions, but will serve a traditional plate of rice served with char sui or Chinese sausage could added to boost the flavor, reflecting its importance in Hawaiian family meals.

Thanksgiving also provides a unique opportunity for the roughly 50 million immigrants who now call America home to celebrate the U.S. tradition, but many have their own twists on the day. Different ethnic traditions surrounding Thanksgiving are almost as old as the holiday itself. Deeply influenced by Native American and Hispanic culture, repasts in the American Southwest may include turkey rubbed in ancho chile paste and cumin, served with cornbread and sweet potatoes instilled with green chilies and chipotle peppers. Pumpkin flan stands in for pumpkin pie. Polish cooks complement the main turkey course with pumpkin soup with

theater lore and legend. The Lyceum, George tells us with his snorting and misplaced confidence, is haunted by the tragic ghosts of Tennessee Williams and his sister, Serena Williams. Such mangling of references is typical of these two, though they certainly know their Steely Dan and the wit and wisdom of their idol, Alan Alda. They also know the Manhattan that was, and anyone who wants a crash (and burn) course in that island’s history need only see “Oh, Hello.” In mistily illuminated memory bites inspired by Billy Crystal’s “700 Sundays,” Gil and George take us through the decades of their existence there, mayor by mayor, from the 1970s onward. We develop a sense of how two friends, sharing a rent-stabilized apartment ($75 a month!), grew and flourished like mildew in a city they cherished for its dirt and dereliction. They summon their urban life with a novelist’s ear for the telling grotesque detail — in accounts of apartment building
lobbies where everything looks and smells like soup. And just so you know: There are lots of bad puns on tuna and even more jokes that qualify as politically incorrect, involving references to the Holocaust, the stars’ unseen Indian intern and dead celebrities. Consider that as a trigger warning, if you must, but I find it hard to imagine anyone’s taking offense. That’s because, like most good theater, “Oh, Hello” exhales the transporting joy of actors’ becoming someone else so completely and infectiously that on some level we become them as well and adopt whatever warped worldview they’re selling us. This means — just so you know — that this play will at least temporarily change the way you speak. So when you talk about this show, and you will, you will no doubt be pronouncing the last word of its title à la Gil and George. That’s “br’d-WAY,” and as long as they arethere, it’s the best little cesspool in town.

In her relatively short career, she has garnered quite a resume. She has, in short order; served in the Peace Corps, taught in the public school system, law school and finally stand-up comedy.

by Steve Ortlieb are mutual friends and he’s another lawyer turned comedian? You’ve gotta fill us in, did you guys work together or is this just a complete coincidence? JK: We never worked together in the legal world, however, through another mutual lawyer friend gone comedian; we were all brought together and performed together as Comedians at Law. We are group who performed at numerous shows with the draw being that we were lawyers, who also happen to tell jokes. There are a good number of lawyers performing in comedy because the law is SO MONOTONOUS; some of us need the jokes. NEED them! Haha!
Venues-NJ: I have to admit, you are the first comic I have yet to see in person and interview, but since we had so many mutual friends I decided to watch some of your videos and holy crap, you’re hysterical. And of course, who can’t love, “Does this dress make me look alone?” Normally I begin with the whole “where’d you start” thing, but I have to give you credit, how did you come up with this? Julie Kottakis: Stand up for me is sort of a narrative of whatever is going on at the moment in my life, which means my material tends to expire in a sense once I have moved on to new struggles or issues or experiences. At the time of “Does This Dress Make Me Look Alone?” I was adjusting to having become a solo mom and the fear that this choice to raise a kid alone would also mean choosing to be alone in other facets of my life. I decided to write a solo show, which was a compilation of stories leading to my current situation. I performed in the Fringe Festival in 2014. More literally, the idea of the dress making me look alone was a play on “does this dress make me look fat? My insecurity was not weight, but being alone. V-NJ: Okay, next. JK: I’m originally from PA and moved to NYC after my stint in the Peace Corps many years ago. I was teaching in public schools for awhile and decided to go for a career change, which of course means, going to law school! In the summer between my second and third years of law school, I decided to take a stand up class to just experiment with writing funny material, but no intentions of performing it. The last class was a show where I had to perform and I ended up doing well and never stopped. As for the acting, I’ve just taken to making videos on my own. I absolutely love doing them. Social media is a gift in that way. You can constantly put creative content out there and get an immediate response. V-NJ: The Peace Corps is a pretty bold thing to do, what made you decide to do that and where were you? JK: I was just out of college and wanted to travel and learn a new language. This is the time of year when we pause to think and be thankful for all we have, both materialistic and otherwise: family, friends and possessions. We gather around the Thanksgiving table and enjoy that which has been given to us. It is a time of reflection -- and heartfelt gratitude.

ESTORE… HELP WA But what about those less fortunate? There are tens of thousands of adults and children, in our state alone, who are not as blessed with the abundance we enjoy. To quote a recent statistic, 10% of the residents living in Monmouth and Ocean counties alone go to bed each night hungry. Now is the time to think about them. While we take pleasure in what we have, let’s reach out to those who have not. Within the three counties of Ocean, Monmouth & Middlesex, there are numerous charities that are extremely busy, especially this time of year, caring to the needs of those less fortunate. Food charities, clothing charities, medical charities, all geared up to serve the needs of the less privileged. But these organizations need help too. Among these charities in continuous need are: FoodBank of Monmouth & Ocean Counties (732-919-2600), JBJ Soul Kitchen/Red Bank (732-8420900), JBJ Soul Kitchen/Toms River (732-731-1414), Freehold Area Open Door (732-780-1089) and Eatontown Food Co-op ( 732-542-0882). These charities are always in need of monetary donations, supplies and volunteers.
