What is this love affair with kitchens that so many of us share? Maybe it has to do with the romantic notion of cooking in a kitchen that fuels your imagination with possibilities and choices. How will it feel to cook at that stove, work at that counter or stand over that particular sink? Where will you keep your spices, favourite china or those platters that are so hard to store? Can you imagine serving up snacks at that counter or lingering over Sunday brunch at an old-fashioned table right in the centre of your kitchen? So many details to work out. But in the end... it’s the look and feeling of one singular kitchen that most of us fall in love with. I’m about to start designing a personal kitchen for us, something I haven’t done for many years. This time, it’s for a circa-1930s lakehouse we recently bought. The plans are in for permit, but the area where the new kitchen is going to live shows as a big, empty space on the drawings. I’ve been saving the design of the new kitchen for the very last because it’s the best part of the project, and the vision for it has been tumbling around in my head for months and isn’t quite dry. That’s what it’s like for me. Ideas swirl around and are edited down, then expanded, then edited, over and over again, until, finally, I can see the finished room in my head and imagine myself in it. Should it be a “scullery kitchen” with Plain English painted cabinets? Or maybe an unfitted Nordic-style modern country kitchen with lots of pale wood? Or a French-inspired classic kitchen? Over the next many months of construction and decorating, I’ll be writing about it, plus we’re filming a video series to show 10 H&H MARCH 2020

you the nitty-gritty of winterizing a grand old cottage and helping it come to life, ready for the next 100 years. In this issue, I swooned for the green lacquered Englishstyle kitchen by designer Jack Creasy, especially the china display wall. I loved the airy style of the white kitchen by Tanya Krpan, but it was the Scandinavian-style kitchen by Heidi Caillier that made our cover. Why? Because it has so much heart. The cabinets, hardware and counters are classic and beautifully detailed. Traditional, yes, and yet this kitchen does not feel one bit stodgy. The mid-century-style modern dining area is fresh and crisp, and can’t you just see yourself eating breakfast there? We could. In case you’re wondering why I’m writing the Editor’s Page... yet again.... Can I just say, thank heavens for our amazing team of senior editors led by Alice Lawlor and Kimberley Brown. And it’s so great to have Stacy Begg back running our house shoots again. These are just a few of our creatives who, together with their teams, keep the content flowing day in and day out, and it’s a good thing they do because, just when I was enjoying your letters congratulating us on finally having an editor-in-chief from the West, Emma was lured away to a big new job in a different industry. That was depressing, to say the least, but I’m over it now, and I’m looking forward to a great year ahead and shaking things up to keep us fresh and, hopefully, just what you’re looking for. I recently read “A Mindful Retreat” in the January issue of H&H. Great article, but please tell the homeowner that heavenly bamboo is an invasive species of plant that chokes out other vegetation and spreads quickly. It’s native to Eastern Asia and poisonous — birds that eat its berries can become very ill. Alternative plants that produce berries: Oregon grape, the viburnum species and various species of holly. — LESLYE GLOVER, Stratford, Ont. I encourage your magazine to showcase art made by Indigenous peoples and residents of the North. However, you shouldn’t support the “harvesting” of animals for commercial fur. There’s no cruelty-free way to obtain fur, and steel leghold traps and snares are still commonly used. There are other ways we can support our northern neighbours. — A. LESKO

Bouquet Upgrade From her Brooklyn flower studio, floral “it” girl Amy Merrick has styled blooms for Kinfolk and Rifle Paper Co. shoots. In her new book, On Flowers, Amy shares tips for giving an inexpensive grocery store bouquet a fancy flower-shop spin. Artisan Books, 2019, $53. 1. Banish cellophane. Instead, choose a decorative paper to match the mood of your flowers. 2. Remove rubber bands and separate stems, recutting each stem to a slightly different height. 3. Crisply fold a rectangle of your chosen paper in half, so it’s three-quarters of the height of your bunch. 40 H&H MARCH 2020

4. Place your flowers so that they’re roughly level with the top of the paper and the stems are exposed at the bottom. 5. Grasp the paper and stems with one hand and roll the paper so it wraps the bouquet, using your other hand to stabilize it. 6. Tie the wrapped bouquet tightly with a pretty ribbon or fancy string.

Getting kids interested in gardening is easy, according to garden blogger Donna Balzer. Start by buying ginger rhizomes (or roots) with a developed growth bud at the grocery store. Next, let children place the root into a container, spooning in potting soil until only the green tip shows. “They take a full summer to grow, but the plant is so pretty and the leaves, when crushed, smell like ginger,” says Donna. The ageless style of Belgian master designer Axel Vervoordt.

Text by WENDY JACOB | Photography by LAZIZ HAMANI ot many designers can lay claim to starting an entire movement, but designer Axel Vervoordt is credited with kick-starting the mania for the pared-back Belgian farmhouse look. There is nothing superfluous about his spaces; every item is carefully considered, and quality reigns supreme. As a consequence, it’s tricky to carbon-date a Vervoordt design — there are no “tells” to fix it firmly in a specific decade or style, a talent that’s amply illustrated by his latest book, Axel Vervoordt: Portraits of Interiors. Axel counts Kanye West and Sting among his high-profile clientele, which is ironic since, as a teenager in Belgium, he preferred classical music to the Beatles. “We live in an era of real news versus fake news,” says Axel. “The real thing is what matters and what lasts — think of the music of Bach or Mozart.” According to The Hollywood Reporter, Kanye tapped Axel to design his Hidden Hills mansion in California (Kim Kardashian West calls it a “minimal monastery”), forming an unusual high-powered pairing. We asked Axel about his life in design and what the future holds.

Q&A HOUSE & HOME: Your mother taught you to appreciate humble things. How has that informed your work as a designer? AXEL VERVOORDT: She taught me to see the beauty in things that are natural. I think it’s important for people, especially creative people, to learn the value of humility. My father was a horse trader, and when he came home from the meadows, he often brought butterflies or wildflowers for my mother, who preferred these to bouquets from a shop. SEE SHOPPING LIST

“Instagram is like a gift that you create and share with a group of friends who like similar things. I only post photographs that inspire me. H&H: What’s your starting point when designing for clients? AV: I start with the architecture. If it’s interesting, I may want to restore it, bring it back to its old glory and find a way to appreciate and feel the proportions. I try to get to know my clients and find solutions that will help them live better. I feel useful if I can help people discover things. Often art plays a crucial role as a way for us to feel things and discover something profound about ourselves. H&H: You never see a TV screen in an Axel Vervoordt interior. How do you deal with tech in the home? AV: I prefer that televisions are placed in a separate room that is used only for that purpose. I always think of the books I need to read or the music I’d rather be listening to. Or even not doing anything at all; it’s important not to forget the beauty of silence. H&H: What do you see on the horizon for design in 2020? AV: One of the trends I think about is consciousness. People are very aware of the sense of now-ness. To live today, to live now. I think the trend is

to make things that last. Think of Cycladic art, or early Greek and Egyptian art. Egyptians always wanted to make art that could last for an eternity. That’s one reason why their work continues to be an inspiration. Isn’t that what we’re also looking for today? H&H: How have your mentors influenced you over the years? AV: I’ve had many mentors, and the important lessons they taught me are: be real, be honest. Never do superficial things. Accept things as they are. Be knowledgeable, but don’t show it too much. Continue studying until the end of your life. Never stop learning. For me, the most important thing is being useful. I’m 72 years old now, and I want to be useful to others every day. My happiness is tied to this idea of usefulness.

BENEATH Diana Hamm on why Dil Hildebrand is a Montreal painter to watch.

THE ARTIST: Dil Hildebrand creates bold mixed-media works that are bright and full of energy. Winnipegborn, Montreal-based Dil holds an MFA from Concordia University. Inspired in equal parts by Henri Matisse and architecture, his pieces have a three-dimensional presence, inviting the viewer to share the space. THE WORKS: In 2006, Dil won the RBC Canadian Painting Competition. For many artists, this is the career highlight that puts them on the Canadian art map in a big way. While Dil was thrilled with the accolade, it was at this point that he chose to take his painting in a completely different direction. Moving away from more traditional landscape-based oil painting, Dil was ready to start something new. His practice now is characterized by space and colour, something he didn’t feel he could achieve with oil alone. What draws me into his work are his constructions of layers. In The Wolf howleth (2017), for example, he starts with an acrylic panel (which looks like a large sheet of glass), and first paints it with large, sweeping, bright blue SEE SHOPPING LIST

acrylic paint. His use of a water-based paint allows for the strokes to have different consistencies that, in turn, change the saturation of blue through each stroke. After this, he layers another acrylic panel on top. This top layer is where he paints the white border, and then uses the surface to collage nylon fibre (a material often used in wallpaper), sand and more paint. This layering of the panels is crucial because it creates depth when looking at the work. There’s a tangible three-dimensionality to it, which plays with the nature of art being both an image and an object. Dil’s interest in architecture is paramount to his work, given the way he treats space and depth, and how this relates to someone physically interacting with a painting. “For me, a painting hanging on the wall is itself an element of architecture,” he says. “I always incorporate visual depth into my work, which I think of as an invitation for viewers to imagine themselves entering it somehow.” By treating works like a window or a door, the viewer is physically interacting with a picture rather than passively looking at it. In Modus (2019), one of his latest paintings, Dil has started to work with figuration again. He uses photography as the bottom layer, and the painted green layer on top acts as a barrier to cross. We are invited into the underlayers and want to reach the trees that are hidden beneath. Dil’s process is very performative. “Painting is a type of theatre; the frame is the stage, and what you put in it is the show.” I love this idea, particularly as he spent some time doing set and theatre design between his degrees. This time was formative in his work as, when you think of the painted backdrops on a set, they perform the same role as the underlayers of his paintings. The difference between background and foreground pushes this idea of his work as architecture and a space to occupy. What makes these works so appealing are the forms and colours that he uses. The shapes really show the influence that artists such as Matisse, Sigmar Polke and Richard Diebenkorn have on his work. In the piece The Frog croaketh (2017), all the elements added to the top panel have been cut out and painted by hand. The imperfections of straight lines and the pencil markings add a personality to the shapes while the bright orange, yellow and green make a bold impression. His work is cheery yet thoughtfully complicated, which is a tough balance to achieve. COLLECTING: Dil has shown internationally, including in Beijing, Cologne, London, New York and Auckland, and, of course, throughout Canada. He’s been the recipient of distinguished awards and residencies, and his work is in major public institutions such as the Montreal Museum of Fine Arts, Musée d’art contemporain de Montréal, the National Gallery of Canada and the Canada Council Art Bank. His work is also in corporate collections including RBC, TD, BMO and Osler, Hoskin & Harcourt. His work starts at $3,000 for small pieces.

SEE IT Dil is represented by Pierre-François Ouellette art contemporain in Montreal (pfoac.com). This fall, he will have his first exhibition opening in Western Canada at VivianeArt gallery in Calgary. His latest exhibitions include sculpture, which is a natural yet exciting progression from the wall-based works he’s been doing.

Designer Luke Havekes gives his 1980s condo a luxe update with authentic materials, art and custom furniture.

HEN LUKE HAVEKES went shopping for a house in Montreal, he wasn’t expecting to end up with a 1980s condo. But when he was shown a 1,500-square-foot space with great bones and a killer layout, he just couldn’t say no. “It has a big, proper vestibule and a huge centre hallway,” says Luke of the fourth-floor flat that gets a nice dose of afternoon sun. “I hate when you enter a condo and see the kitchen — this layout gives the feeling that you’re in a small house.” He also liked the postmodern building and upscale Outremont neighbourhood. But still, the decorating was stuck in the ’80s. After liberating one bathroom of its almond-coloured bidet and party-sized Jacuzzi, and stripping out the wallpaper

and wall-to-wall carpeting, Luke began the process of reimagining the condo he had gutted to the concrete. The right materials were a key part of the master plan. “I didn’t want anything synthetic, like plastic or faux wood,” he says. Instead, the condo is filled with authentic materials. A richly veined marble backsplash has transformed the kitchen. Elsewhere, Luke added oak, walnut, silk and wool for a layered effect. “Real things are beautiful and elegant — that is luxury,” he says. Quality custom furniture adds to the opulence. In a corner of the living room, a curved bench upholstered in pale mustard fabric by Loro Piana adds a fun, sculptural flourish. The same goes for the coffee table, with its squat base made out of balls and squares in Carrara marble. SEE SOURCE GUIDE

These unique creations play perfectly with Luke’s iconic, vintage pieces. But the beautiful assembly would be a bust if the lighting was an afterthought. Luke is allergic to recessed lighting in main living areas (he describes it as “acne on the ceiling; it’s never flattering”), so the condo is lit with either sconces or cove lighting for a warm, ambient glow. All the better not only to see the best side of his friends but also his treasured belongings. “I collect art when I travel,” says Luke of the pieces from Spain, Mexico City and Berlin. He keeps the more rustic art in his country home (featured in H&H, September 2019), where they feel more appropriate. He’s glad to finally be able to showcase the city pieces in one space. “Now my collection has room to breathe.” And what better place than in a condo that’s as carefully considered as the art, where no element is random and only the best will do.

HOUSE & HOME: Let’s start with that colour: hello green! JACK CREASY: The colour’s like an emerald that just draws you in. The first thing our client said was, “I’m thinking of a green kitchen!” She’s averse to anything that’s white or grey: every room in her house has colour. A white kitchen just wouldn’t work. I focused on her style and felt I could be bold and a little daring.

An awkward side entrance was reconfigured to accommodate this new china pantry. For the upper cabinets, Jack selected rippled glass for a vintage feel.

H&H: What was on your clients’ wish list? JC: They’d renovated their home several years earlier. It freshened things up but didn’t resolve any of the underlying problems in the kitchen: SEE SOURCE GUIDE

functionality, layout and storage. The kitchen was also open to the family room and had a mudroom, and that didn’t work with their lifestyle. They often host large dinners and cocktail parties for 50-plus, and she wanted to use her 12-foot-wide hallways as she had done when living in New York. Now, guests can mingle in her wide hallways, and she can close the butler’s double-swing doors to the kitchen during parties so guests won’t hear the caterers. H&H: How did you customize the space for them? JC: This kitchen is truly a bespoke experience and uniquely tailored. Formal without being uninviting, the space has elements of brass, and the heavily veined marble was sourced from an Italian stone retailer, Antolini. My client loves fine china, and her husband collects vintage Tiffany and Christofle flatware, so I designed a marble-framed china storage wall that lets them display and rotate her collection. The grand scale gives it a luxurious feel, and it also provides a place for serving trays.

H&H: What’s special about the range? JC: The Lacanche range is in Anthracite enamel; we felt the jet-black colour would offer too much contrast. But if my clients want to switch it up down the road, they can change the covers and order new enamel fronts in a bold orange, powder blue or stainless steel.

DETAILS: 342 square feet split between a main kitchen and second hidden prep area for a family who loves to entertain in Vancouver’s Douglas Park HOUSE & HOME: What was the starting point for this kitchen? TANYA KRPAN: We wanted it to be fresh and light. In Vancouver, it gets grey and dark in the winter, so we wanted lots of windows and a really bright look all year round. We didn’t want to do an all-white kitchen, though; the custom-stained white oak cabinets add warmth. 58 H&H MARCH 2020

H&H: Why did you add a second kitchen? TK: A second kitchen is popular here in Vancouver; I’ve done many houses with that plan and have one myself. It’s awesome for entertaining. If you’re prepping or cooking pungent foods, all that messy stuff happens in the second kitchen. The prep kitchen keeps the main area looking its best all the time — it’s open for socializing and laying out pretty food, which a lot of people like. It's perfect if you have a caterer because you can close it off. H&H: What’s in the prep kitchen? TK: A second full-size range, and a sink and filtered boiling water dispenser for tea. On top of adding the prep kitchen, I kept the look clean in the main kitchen by integrating a large basin sink, dishwasher and pullout recycling and garbage drawers in the island. H&H: What materials make this kitchen unique? TK: We wanted the island to be a real feature, so we selected a white stone that’s not a typical veiny marble; it’s more crystallized. When you see it up close, it has a lot of depth. The back countertops are the workhorses, so they’re engineered quartz. I really like how the pendants — with the hits of black on the cord, the clear glass above, frosted ribbed glass below and the brass accent — connect all the pieces: the finishes tie back to the hardware and plumbing, linking everything together.

DESIGNER: Architect Andrew Curtis of RobitailleCurtis DETAILS: 437 square feet for an artist’s family of three in Westmount, Que.

HOUSE & HOME: How did you keep the home’s traditional elements when designing this modern kitchen? ANDREW CURTIS: This house had a lot of personal history. Our clients’ family had lived in it for the past 60 years. The beautiful old stairway was always here, but all the panelling, stair treads and handrails came from a Golden Square Mile mansion that was being demolished. Our client’s mother rescued it from a dumpster and reinstalled it herself in this house — and she did a great job! Our goal was to update the old parts of the house while respecting the existing character and integrity. The traditional wood panelling played off the modern design nicely, so we were certain to keep it. H&H: What did your client want to change? AC: The house was cold and drafty and, like most families now, they live in their kitchen and wanted it warm and cosy. When our client first 62 H&H MARCH 2020

“OUR CLIENT REQUESTED A STREAMLINED, EFFICIENT WHITE KITCHEN, WHICH CAN SOMETIMES FEEL TOO SLEEK AND COLD, BUT, HERE, IT’S BALANCED BY THE WARMTH THAT THE NATURAL The existing blackboard paint wall creates WOOD BRINGS”— Andrew Curtis a dramatic backdrop to highlight a new approached us, she requested a streamlined, efficient white kitchen, which can sometimes feel too sleek and cold but, here, it’s balanced by the warmth that the natural wood brings. She also wanted to address the kitchen’s limited counter space while retaining the smaller eat-in area near the panelled staircase. H&H: How did you achieve those goals? AC: We were able to gain square footage in the kitchen by shrinking the too-large formal dining room by almost 50 square feet. That space was then dedicated to the kitchen, making the room more appropriately scaled. We moved the cooktop to a new island and created more work space. All the new cabinets and countertops are custom made from an Italian laminate-like material called Fenix, which has a beautiful matte quality and the contemporary look our client wanted. We also moved the pantry from underneath the wood staircase to underneath the main stairway, where a powder room was also added.

H&H: How did you integrate the new kitchen with the dining area? AC: A double-sided peninsula serves as a transition piece, creating a spatial separation even though there is visual continuity. On the kitchen side, it’s more utilitarian; on the dining room side, it’s used as a sideboard or buffet for entertaining. They wanted the dining area to be open and connected to the kitchen but still feel separate. H&H MARCH 2020 63

“Oh, you know, it needs a little bit of help,” joked Sarah and Adam Cooper of the property they had just purchased — a gorgeous but dated 135-yearold clapboard house in Toronto that still had its original horse barn in the garden. The Coopers are good friends; my husband, David, had taught their eldest, and they’d vacationed with us in Portugal, so the idea of helping them turn the house into a home was both exciting and slightly nerve-racking. After all, renovations test even the strongest bonds, and this project would be particularly tricky because the house had a historical designation. Plus, the ask was ambitious: double the square footage, and replace an ’80s kitchen extension with a new twostorey addition to create more room for Sarah, Adam and their four boisterous, hockey-loving boys, Josh, 14, Ben, 11, Noah, 9, and Sam, 6. But I knew 68 H&H MARCH 2020

that keeping my six clients happy would be a fun part of the job. Challenge well and truly accepted. Architecture firm Bldg Workshop was called in to navigate the ins and outs of that historical designation and design the addition. Together, we worked on removing interior walls, like the one dividing the living and dining rooms, to help the space feel fresher, brighter and less formal. Opening up the layout was important, but so was letting the space keep as much of its original quirky charm as possible. The key became balancing old and new. We replaced the original windows with custom sash windows, and brought in modern floor-to-ceiling windows for the new addition. The oak dining room table has a modern, utilitarian feel and expands for large family gatherings. A minimal Swedish chandelier is a more dramatic version of the fixture in the adjoining living room. each room, ran a handsome wire-brushed oak floor throughout and replaced any curlicued plaster medallions that were lost in the demolition with equally decorative new ones. By selectively stripping back and simplifying rather than totally gutting the place, we created a livable home that would survive kids, a dog, hockey equipment and everyday life, while still feeling true to the history of the house. I love how unexpected colour can add weight and drama to a room — I wanted to bring that feel to the kitchen. Blue, the family’s favourite colour (Go, Leafs!), was just the ticket for the island cabinetry, which, through careful space planning, we managed to size at a spacious 17 and a half feet long. A trip to The Door Store, Toronto’s storied architectural salvage emporium, led us to our first fab find: a trio of vintage milk glass pendants to hang above the island’s seating area. The family room is anchored by a custom leather sectional that will just look better with age, no matter how battered it gets, while a smashing vintage cane chair we scored at Bettencourt Manor and had upholstered in CONTINUED ON PAGE 108 72 H&H MARCH 2020

FOR ONE SEATTLE DAD, there had always been something magical about childhood weekends spent at his Scandinavian grandparents’ cabin. It was warm, welcoming, cosy: a big hug of a place. But it was oh-so stylish, too, with its simplicity, spare hand and abundance of light. So, when it came to overhauling his midcentury modern bungalow into a new home for himself and his two young children, it made sense to take his design cues from there. He shared his vision with local designer Heidi Caillier, who is known for her love of vintage and expertise in mixing styles.

The masculine vibe of the home resonates in the living room, where textural earth tones on boxy custom sofas ground the space. A cosy vintage Moroccan rug is the height of hygge. For Heidi, the Scandinavian aesthetic represents a unique take on modern style. “There’s something about it that feels a bit masculine, which was nice for this project,” she says. “We just went with it; it’s simple but thoughtful.” In this 1,300-square-foot house, the Scandi-chic appeal is referenced in light tones, minimal or no window coverings and a mix of warm, natural hues and materials. It had to feel right for the house’s age and not overly cottagey; a nod here and there was perfect. Painted board-and-batten on the kitchen and powder room walls captures the casual feel they were after, but it’s offset by luxe finishes, refined art and menswear-inspired textiles throughout. “We wanted to keep the palette soft and neutral — nothing that pops too much,” says Heidi. The only touch of drama comes from the bold black light fixtures and accents. “The Scandinavian palette drove the whole plan.” After poring over inspiration photos with the owner and sharing Pinterest boards, Heidi swung into action. Only one wall came down during the sixmonth renovation, which created a larger opening between the kitchen and dining room. A window was swapped out for French doors to flood the small space with natural light — another tenet of this design style. And if something is on the walls, it’s been thoughtfully chosen. “We went with a mix of pieces that felt collected combined with a large photograph by local artist Paul Edmondson in the dining room,” says Heidi. main bathroom have a luxurious look and feel. Naked wood accents and furniture warm up the space, along with textural linen upholstery and soft rugs. One of the biggest challenges was the furniture arrangement. “In this house, you walk straight into the living room, which is tricky because it’s small and narrow,” says Heidi. To remedy this, she played with various layouts to find the most natural one. “I wanted to create a conversation area that also felt loungey.” Her client was over the moon with the end result. Heidi’s mod take on his grandparents’ cabin style mixes warm and fuzzy nostalgia with a cool, contemporary design, giving the family a place that’s rooted in history but looks squarely to the future.

I

IN 2014, WHEN NIAMH TALLON AND CIARAN GOOJHA FIRST bought their 1940s-era ranch-style home in Eagle Harbour, a seaside community nestled in West Vancouver, B.C., they were drawn to its original details, charm and history, and its proximity to the ocean. But the home’s mishmash of additions over the years meant disjointed spaces and a pastiche of previous owners’ visions. The family moved in anyway and lived there for four years. “It was only when we lived in the house for a time that we began to find it dysfunctional,” says Niamh. “We both work so hard, and I really wanted to come home and find joy in my space.” Niamh and Ciaran researched online to look for a designer, and Pure Design Inc.’s Ami McKay made their short list. “At our initial meeting, Ami was warm, fun, personable and really engaged with our vision,” says Niamh. “She understood that we wanted to mould our home into a more livable space while maintaining its natural elegance.” As it turns out, Ami also happened to live nearby. “We kept crossing paths,” adds Niamh. “We’d bump into each other at the grocery store or

the liquor store and she would always say ‘Hi!’ so warmly — we just clicked.” Once on board, Ami learned that Niamh wanted respite and calm from the demands of work, while Ciaran, the main chef in the family, wanted to entertain at home. They also adored the ocean and the outdoors; they owned a boat and often spent time on the water with their children, Amelia, 10, and Zachary, 5. With the owners’ style — warm and modern with subtle beach motifs — in mind, Ami first addressed the home’s challenges. There were unsightly floor-to-ceiling wooden posts dividing the kitchen from the living room. An engineer confirmed that the posts were only decorative, so they were removed to create an airy great room. The next step was to lighten the dark palette with all-over white and replace the almost-black-stained wood floors with white oak planks. The now bright envelope was ready for Ami’s fresh coastal vibe and a modern layering of furniture and art. “These homeowners lead highly stressful lives, so we created an environment that’s elegant, unfussy and cosy — SEE SOURCE GUIDE

but not rustic — to come home and relax in,” says Ami. The house’s original details shine through, including a river rock fireplace surround and hearth in the living room, lush natural landscaping outside and big windows in the kitchen that bring in abundant natural light. For added privacy, Ami designed an eight-foot-long quartzclad kitchen island with a lowered portion in white oak that serves as an intimate eating area for the family. “Now we can eat in our pajamas!” says Niamh. The kitchen and adjacent living room are the hub of the home but also a graceful stage for hosting. “We purposely avoided creating seating at the island to encourage guests to settle in to our living room, but we still wanted them to be close to share the cooking experience with us in the kitchen,” says Ciaran. Postrenovation, Niamh adeptly sums up the makeover’s impact: “It’s changed our lives. We love to entertain and there’s always a small community around, so it’s the perfect house for that. But it’s also a calm oasis when it’s just the four of us.” A sea change, if you will. 86 H&H MARCH 2020

The Ultimate Mac and Cheese SERVES 6

PREP TIME: 40 minutes TOTAL TIME: 70 minutes Pockets of extra-melty Fontina and salty prosciutto on top are the secret to taking a classic dish over the edge. Omit the prosciutto and serve with a green salad if you're feeling vegetarian! 500 g gomiti (large, ridged macaroni) or other short-shaped tubular pasta ⅓ cup unsalted butter ½ cup chopped onion 1 tbsp chopped garlic ⅓ cup all-purpose flour ½ tsp cayenne 1 tbsp Dijon mustard 4 cups whole milk, warmed (3%) 4 cups grated aged white cheddar cheese (340 g) Salt and pepper 1 cup diced Fontina cut into 1 cm cubes (115 g) ½ cup grated Parmesan 1 cup fresh breadcrumbs 2 tbsp olive oil 3 slices prosciutto, chopped (55 g), optional COOK PASTA 1. Preheat oven to 350°F. Bring large pot of salted water to a boil over high heat. Add gomiti and cook according to package directions until al dente. Drain. MAKE CHEESE SAUCE 1. Heat butter in pot over medium heat. Add onion and sauté for 2 minutes, or until softened. Add garlic and sauté for 1 more minute. 2. Add flour and cayenne and cook, stirring constantly, for 2 minutes to cook out floury taste. Add Dijon mustard and stir to combine. Add milk, a little at a time, and stir constantly, until sauce is smooth and milk is fully incorporated. Bring to a boil and boil for 1 minute, or until thickened. 3. Remove from heat. Add cheddar, a handful at a time, and stir until melted and incorporated. Season with salt and pepper to taste. 96 H&H MARCH 2020

BAKE PASTA 1. In pot, combine sauce and cooked pasta (yes, it will seem like there is way too much sauce), then scrape into 9" x 13" or similar-sized casserole dish. Evenly sprinkle in cubes of Fontina. 2. In bowl, toss Parmesan and breadcrumbs with olive oil until moistened. Add prosciutto, if desired, and use fingers to break up any clumps. Sprinkle topping evenly over pasta and bake for 30 minutes, or until sauce is bubbling.

ASSEMBLE PASTA 1. When pasta has cooked through and cooking liquid has reduced to sauce, add remaining dried mint and chicken, season with salt and pepper, and toss to combine. 2. To pasta add half of halloumi mixture and stir to incorporate. Sprinkle in remaining halloumi mixture and fresh mint, and toss until just combined. Serve with lemon wedges to squeeze over top.

Baked Rigatoni with Sausage and Ricotta SERVES 4 TO 6

PREP TIME: 15 minutes TOTAL TIME: 30 minutes Our version of this simple dish incorporates rotisserie chicken, a bit of mellow garlic and a boost of lemon zest. If you’ve never grated halloumi before, you may be surprised by how nice an addition it can be to a pasta dish. 6 4 500 4 1½

cups sodium-free chicken stock garlic cloves, sliced g whole wheat spaghetti tsp dried mint, divided cups finely grated halloumi (about 120 g) Grated zest 1 lemon (preferably organic) 3 cups shredded rotisserie chicken Salt and pepper ⅓ cup julienned fresh mint 1–2 lemons cut into wedges to squeeze over top

PREP TIME: 20 minutes TOTAL TIME: 50 minutes Simple marinara sauce, browned sausage and dollops of ricotta combine to create this deconstructed lasagna. Classic comfort food without all the effort! 500 g rigatoni 1 796 mL can whole peeled Italian tomatoes (ideally San Marzano) 2–3 anchovy fillets packed in oil, drained 2 large garlic cloves 6 large fresh basil leaves 1 tsp dried oregano 2 tbsp olive oil 300 g Italian sausage, casing removed, crumbled 2 cups cherry tomatoes Kosher salt and freshly ground black pepper 1 cup ricotta 1 cup finely grated Parmesan, divided 1 cup grated mozzarella 3 tbsp torn basil leaves, for garnish

COOK PASTA AND PREPARE HALLOUMI MIXTURE 1. In wide sauté pan, add chicken stock and garlic, and bring to a boil. Let boil for 5 minutes to reduce slightly. 2. Add spaghetti and fully submerge in liquid. Boil for 11 minutes, or until al dente according to package cooking directions (if liquid evaporates too quickly, just add a little boiling water to pan). 3. In small bowl, combine 2 tsp dried mint, halloumi and grated lemon zest. Reserve.

COOK PASTA AND PREPARE SAUCE 1. Bring large pot of salted water to a boil. Add rigatoni and cook for 14 minutes, or until al dente. Drain, reserving ½ cup of pasta cooking water. 2. Preheat oven to 400°F. In food processor or blender (or use an immersion blender), combine canned tomatoes, anchovies, garlic, basil and oregano, and process until nearly smooth.


SAUTÉ SAUSAGE AND CHERRY TOMATOES 1. Heat oil in large, ovenproof frying pan over medium heat. Add sausage and sauté for 5 minutes, stirring to break into small pieces, or until nicely browned. 2. Add cherry tomatoes and sauté for 1 minute, or until skins have split. 3. Add puréed sauce and bring to a simmer. Cook for 2 minutes to bring flavours together, and season well with salt and pepper.

Salt and pepper 142 g box baby cooking greens mix (spinach, kale, Swiss chard)

ASSEMBLE PASTA 1. Add water to sauce to add moisture, and stir to combine. Add rigatoni to pan and toss to coat, being sure that some sausage and cherry tomatoes are on top.

MAKE SAUCE AND GREENS 1. Heat oil in large skillet over medium heat. Add shallots and sauté for 4 minutes, or until lightly golden. 2. Add garlic and ginger, and sauté for 1 minute, or until just beginning to toast. Add ground coriander, cumin, turmeric and chili flakes, and sauté for 30 seconds, or until fragrant. 3. Add carrot juice and bring to a boil. Simmer for 4 minutes, or until thickened. Add coconut milk and simmer for 2 more minutes, or until thickened and flavourful. Season with salt and pepper, to taste. 4. Add greens and simmer for 2 more minutes, or until just wilted.

TOP WITH CHEESE AND BAKE 1. In bowl, combine ricotta and ½ cup of Parmesan and, using spoon, dollop mixture on top of pasta. Sprinkle with mozzarella and remaining ½ cup of Parmesan. 2. Bake for 22 minutes, or until cheese has browned in places and sauce is bubbling at edges. Let stand for 5 minutes and sprinkle with basil just before serving.

¼ cup smoked or toasted unsweetened coconut flakes, for garnish COOK PASTA 1. Bring large pot of salted water to a boil. Add tagliatelle and cook according to package directions until al dente. Drain, reserving 1 cup of pasta cooking water.

Golden Tagliatelle and Greens SERVES 4

PREP TIME: 20 minutes TOTAL TIME: 35 minutes This vibrantly sauced pasta has the flavours of a coconut curry and a secret base of carrot juice. If you can find smoky coconut chips (sometimes called coconut bacon), it’s a great foil for the sweeter elements. 400 g tagliatelle ¼ cup virgin coconut or olive oil 1 cup diced shallot 2 tbsp chopped garlic 2 tbsp chopped ginger 1 tbsp ground coriander 2 tsp ground cumin 2 tsp ground turmeric 1 tsp chili flakes 1½ cups carrot juice ¾ cup coconut milk

ASSEMBLE PASTA 1. Place tagliatelle in skillet and toss to combine, adding a bit of pasta cooking water, as needed, to loosen. Top with toasted coconut flakes and serve.

Orecchiette with Tuna, White Beans and Radicchio SERVES 4 TO 6

PREP TIME: 25 minutes TOTAL TIME: 40 minutes This recipe makes the most of quality jarred white beans and tuna, and gets a boost from sweet fennel and bitter radicchio. 500 ⅓ ¼ ½ 1

g orecchiette cup extra-virgin olive oil cup coarsely chopped garlic tsp chili flakes small bulb fennel, trimmed and chopped (about 2 cups)

150 g jar Italian tuna in olive oil (drained, oil reserved) 540 mL can white beans, drained and rinsed 1 small head radicchio, cut into ribbons ½ cup chopped Italian parsley (packed) Salt and pepper COOK PASTA 1. Heat large pot of salted water on high heat. Add orecchiette and cook according to package directions until al dente. Drain, reserving about 1 cup of pasta cooking water. SAUTÉ FENNEL 1. While pasta is cooking, to large sauté pan add olive oil over medium-low heat. Add garlic and chili flakes, and cook gently for 2 minutes, or until garlic is lightly golden. 2. Add fennel and sauté for 7 minutes, or until tender and lightly browned. Add tuna and white beans, and stir to break tuna into chunks. ASSEMBLE PASTA 1. Add drained pasta to sauté pan and gently toss to combine. Add radicchio, parsley and ½ cup of pasta cooking water, or enough to loosen. Add reserved oil from tuna jar for extra flavour, if desired. Season well with salt and pepper, to taste.

Brined Oyster Mushrooms 450 g oyster mushrooms (about 8 cups) 2 cups water 2 tbsp kosher salt 4 cups ice 1 tbsp fresh strained lemon juice 2 sprigs thyme Kewpie Mayo 3 large egg yolks 1½ tsp Dijon mustard ½ tsp kosher salt ¼ tsp MSG (optional) 2 tbsp unseasoned rice wine vinegar 1 cup canola oil Tonkatsu Sauce ⅓ cup ketchup 1 tbsp plus 1 tsp Worcestershire sauce 1 tbsp plus 2 tsp tamari or soy sauce 1 tbsp packed brown sugar 1 tbsp sherry ½ tsp minced fresh ginger ½ tsp minced garlic Togarashi Spice Mix 2 tbsp toasted white sesame seeds 2 tbsp toasted black sesame seeds 2 tbsp toasted, crushed nori flakes 2 tsp Korean chili flakes 2 tsp cayenne

BRINE MUSHROOMS 1. Separate mushrooms and trim stem ends. 2. Heat water and salt in small pot over medium heat, stirring until salt is dissolved. 3. Transfer to medium bowl and add ice, lemon juice and thyme sprigs. When ice has melted and brine is cooled, pour into sealable bag, add mushrooms, squeeze out air and let sit in refrigerator for 24 hours. MAKE KEWPIE MAYO 1. In medium bowl, combine egg yolks, Dijon mustard, salt, MSG and rice wine vinegar, and whisk until uniform. 2. Add oil very slowly while whisking until totally emulsified, pale and thick. Refrigerate until ready to serve. MAKE TONKATSU SAUCE 1. In pot over medium heat, combine ketchup, Worcestershire sauce, tamari, brown sugar, sherry, ginger and garlic, and bring to a simmer. 2. Turn heat down and simmer on low for 10 minutes, or until flavours have combined. Strain and refrigerate until ready to serve. MAKE TOGARASHI SPICE MIX 1. In small bowl, mix together sesame seeds, nori flakes, chili flakes and cayenne, and store in container with tight-fitting lid until needed. FLOUR AND FRY MUSHROOMS 1. In shallow bowl, combine rice flour, cornstarch, baking powder and salt, and stir with fork to blend. 2. In medium pot, heat 2" of oil over medium heat to 350°F, or use deep fryer. 3. Remove mushrooms from brine and, working in batches, dredge heavily in mushroom flour and fry for 2 minutes, or until golden brown. Place on paper towels to drain. 4. On plates, spread Kewpie Mayo and top with fried mushrooms. Drizzle with Tonkatsu Sauce, sprinkle with Togarashi Spice Mix and garnish with cilantro seedlings.

When it showed up, Adam exclaimed with a wink, “If I sit in it, I won’t have to look at it!” He’s notoriously pattern-averse so, as a designer, to be trusted by clients to give a space personality with a quirky piece is always a thrill. Upstairs, the youngest boys, Noah and Sam, requested a shared bedroom, so we gave their twin beds a timeless look by painting them white to match the beadboard walls. Josh and Ben’s rooms received similar finishes. The eclectic principal bedroom features inlaid bone dressers that hint at Sarah’s Indian background. And for the ensuite, Sarah and I hit up vintage sources on Instagram and texted back and forth looking for the perfect mid-century modern credenza to transform into a vanity. I love the strong, sculptural lines of the one we settled on in the end (a gorgeous reject now sits in the dining room). Getting the mammoth Italian ceramic marble-look wall tile into the house was definitely heartstopping, but the result — layered with hex slate floor tile — was worth holding our breath for. It’s now more than a year since the first walk-through. Sarah has discovered a passion for thrifting and shopping for vintage finds that she won’t soon lose, and Adam, Josh, Ben, Noah and Sam still rib me on the time and effort it took to coordinate throw pillows. For me, the house looks its best when the kids are lolling all over the sectional, or when everyone is hanging out around the island with Yossi, their rambunctious goldendoodle, running laps. I’d like to spray my lower cabinets white and swap out my uppers for open shelving. How do I make this look good? — K.S., Calgary

Having your cabinets painted a new colour is an excellent way to update your kitchen! Opt for a bright white that will reflect light around the space. Replacing your upper cabinets with open shelving will definitely make your kitchen look airier, too. For a modern vibe, consider having your vent hood boxed in with drywall and painted to match your walls. Extending the box right to the ceiling will draw the eye up and create visual interest. Similar to the Inspiration kitchen designed by Whitney Williams, install two floating wood shelves on either side of the vent hood. The top shelf should align with the bottom of the hood, with the second shelf 12 to 18 inches lower. Then, continue the shelving on the window wall, stopping just shy of the window frame. The key to styling your shelves is to choose items that are both good-looking

and functional. For colour, try leaning a piece of art on a shelf. Next, swap out your backsplash for an off-white quartz or marble slab with veining. For a more affordable option, opt for ceramic or marble tiles. Install the slab or tile just below the height of the lowest shelf and then, behind the range, up to the vent hood. Consider adding two white and brass sconces on either side of the hood as decorative lighting. Additionally, you could have puck lights installed on the underside of the shelves to illuminate your work surfaces. Finally, to bring in some warmth, replace your cabinet pulls with brass versions and add wooden counter stools at the peninsula.
