What’s your appetite for change? How open are you to what’s new? Don’t worry, this is a judgment-free zone, and there’s no right or wrong answer. But I’ve been thinking a lot about the topic as we prepare this, our second annual trends issue. As editors, our job is to sort through the great, wide universe of stuff and select what we consider to be the best people, ideas, and products to share with you every month. It’s an imprecise process of looking over research and data, going to trade shows, and keeping a sharp eye on social media to see what’s trending. It was a challenge to distill all those choices down to a short list of the most useful and inspiring ideas we think you, our 32 million readers, will enjoy. We want to make you happy. But some readers are more open to the new than others, and that’s something we also keep in mind. As we make our magazine, we want to celebrate the diversity of our giant readership, from staunch traditionalists to those who love being in the know about the latest fad— even if they aren’t always going to necessarily participate. For me, the tolerance for change comes down to a push/pull between comfort and curiosity. Whether you gravitate to the same type of recipes made with ingredients you always have in your pantry (mine is lentil soup) or get a thrill from learning about a new recipe or sauce. (Zhoug anyone? See page 111. Come to think of it, zhoug on lentil soup sounds really good.) Sussing out and sharing stories about interesting people and ideas is what most of us editors like doing best. We love that you challenge us with a wide range of opinions on what you enjoy and what you dislike; that diversity inspires us to create a broader range of articles than we would if we were only trying to please ourselves. For every idea in this issue that one reader may not want any part of, another reader might cherish it. Change is inevitable. DOES IT COOK LIKE BEEF? The short answer is, yes, you can cook these plant-based products as you would ground beef. Look for specific tips on package labels and follow guidelines for freezing and thawing.

HOW DO THE NUTRIENTS STACK UP? Plant-based meat and 80-percentlean beef both contain about 20 g protein in a 4-oz. patty. But the similarities end there. Most faux ground meat has fewer calories and fat, none have cholesterol, and, unlike beef, the faux meats provide some fiber. hristina Bryant, founder of the bohemian home furnishings brand St. Frank, achieved a restful mood by enveloping her living room, right, in inky blue, which naturally recedes, and punctuating it with an equally saturated mustard yellow sofa that reflects sunlight for a warm glow. “Tones should be well-matched unless you want one to speak more loudly than the other,” says designer Consuelo Pierrepont, who worked with Bryant. Sue Wadden, director of color marketing for Sherwin-Williams, offers another approach: Use one color in one room and another in a visible adjoining space for a peekaboo effect. The yellow of the dining room, below, livens up the adjacent living room. In turn, a glimpse of navy walls serves as a resting point against the yellow. “Putting a big impact of color in spaces that you’re not in all the time, like a dining room, lets you bring bold color in without getting overwhelmed,” Wadden says.

A professional stylist with serious DIY chops, Brady Tolbert gives us a tour of his L.A. apartment full of black-and-white matchups and high-impact, low-cost projects.

rady Tolbert is not easily intimidated. The designer and stylist started as an intern on a project by world-renowned architect Frank Gehry. Then he worked for interior designer and blogger Emily Henderson’s company as creative director, a role he now holds for Bobby Berk, the designer on Netflix’s Queer Eye. But the most visible evidence of his intrepid nature is the black-and-white checkerboard floor he installed in the kitchen of the 1920s Spanish-style apartment he shares with his partner, Jason. “The whole project cost $50,” Brady says of the peel-and-stick vinyl tiles he laid on the diagonal. “And I did it in one weekend.” The new floor gave him the graphic impact he was looking for in a style that wouldn’t ruffle his landlord.

Brady’s trick to keeping black and white from feeling stark is to layer warm caramel, rust, and brass in a mix of textures. He played off the red brick in the firebox (made a focal point with tiers of pillar candles) with soft linen curtains, a shaggy rug, and a smooth leather and blond wood chairs.

Brady credits his parents for his crafty nature and fearless approach toward home improvement projects. “I was raised to be thrifty and creative. If you don’t know how to do something, you read about it and figure it out.” To that end, Brady has added basic electrical work to his repertoire. “One of the first things I did was swap out all the lighting. It’s a really easy way to make a big change,” he says. As a designer and creative director, Brady can’t help but constantly change around his furniture and accessories. But his shopping habits make that easy. “I shop within a cohesive palette of black, white, and cream with leathers and wood, so I know whatever I buy will work somewhere.” In this case, taking work home has definitely paid off. Put a kick in old socks or sweaters by covering holes with vibrant yarn. Darning is an easy-to-master technique; you can get through a pair of socks while watching a TV show.

To maintain the sock’s shape as you mend, place a darning mushroom or darning egg inside.

For wool socks, use wool yarn. For cotton ones, cotton crochet thread or embroidery floss works.

oral may be having a trend moment, but designer Heather Roberts is a longtime fan. She bought and stored this coralpattern rug for years, waiting for the right spot to use it. Now it lives in her family room, paired with watery blues and seafoam green pulled from the chinoiserie ottoman fabric, the launch point for the whole room. The palette flows because orange and blue are complementary colors. Although the rug and ottoman are boldly patterned, they work together because of their creamy backgrounds and contrasting scales. The fi nishing touch is more coral on the lampshade, pillow trim, and throw. “I do love a pop of color,” she says.

We surveyed 2,000 recent home buyers and 500 real estate professionals to see what’s taking flight in today’s home search. What we learned may surprise you.

We were curious: What are millennials looking for in their first home? What do repeat buyers want? What trends have changed and which ones haven’t? For our first Home Buyer Study, we tapped into thousands of recent buyers, as well as real estate agents in our Better Homes & Gardens® Real Estate network, to find out. Here’s how the wish lists of next-gen buyers can influence the hunt for your next nest and the sale of your current one.

TREND NO. 1

An intriguing number of survey respondents buying their first home (36 percent) picture themselves staying for more than 10 years. Does this signal a new view of the so-called starter home—the first house that people buy (and keep only a few years) to launch their homeownership? In some ways, yes. Typical starter-home buyers are now investing in higher-end homes. They want features traditionally associated with move-up buyers, such as good school districts and more square footage, says Annette Cicinelli of BHGRE Rand Realty in Westchester County, NY. “Move-up buyers now compete with first-time buyers,” she says. “And I’m seeing empty nesters looking into those smaller starter homes.”

First-time buyers say they spent an average of five months from research to closing; repeat buyers did it in four. Compare that to a 2012 National Association of Realtors report that found the process took first-time buyers only three months and repeat buyers two-and-a-half months. One possible reason for the longer hunt is the array of online property search sites. Agents say most clients use the websites to house hunt, which increases options but also expands the search time. In addition, 63 percent of all buyers report going online to educate themselves: reading articles, researching builders, signing up for newsletters, checking classified ads, reading blogs, and listening to podcasts. One-fourth of buyers reported also getting information from social media, such as Pinterest and Instagram. Another factor that can stretch the time frame is the loan process. That’s why agents consistently recommend getting preapproved. One proactive approach on the rise is ”people selling their current home and then renting or moving in with family so they can be as nimble as possible when the home they want comes on the market,” says Shannon Stumpenhaus of BHGRE Kansas City Homes in Kansas City, MO.

Buyers used to seek out fixer-uppers. Outdated kitchens and baths, unnecessary interior walls, old carpet that might be covering salvageable flooring— all were high on the wish list, say, 10 years ago. People could usually get homes with those problems at affordable prices then eagerly update and personalize them. Now more buyers want homes that don’t require a lot of work. In fact, our survey found that 52 percent valued purchasing either a newly built home or one that didn’t require any renovations or repairs before moving in. No doubt it’s an issue of not wanting to spend time and money. “People are more willing to do cosmetic upgrades, but they don’t want to deal with expensive and extensive One-fourth work,” Stumpenhaus says. On of first-time the no-thanks list: replacing the buyers roof or heating/cooling system, considered making structural changes, repairing drywall, and dealing renting, in part because with mold or termites. Even if they don’t want to take it would spare them on big-ticket repairs, there is almost costly repairs. no escaping some jobs. Eightyfive percent of buyers ended up in homes that needed at least some work. Agents say projects like painting, replacing or refinishing flooring, and swapping out appliances shouldn’t scare off buyers. And Stumpenhaus encourages buyers not to automatically reject a house for a bad kitchen or bathroom. “They may not have the money to do them right away, but those are things they can do later,” she says.

The heart of the home still gets to the heart of us. Buyers across the board told us that the kitchen was the room that most motivated them to purchase their home. What features do real estate agents say buyers are looking for? Islands are big, in more ways than one—room for seating, please. High-end appliances are in demand, as are specialty options, such as a wine refrigerator or built-in coffeemaker, and extra function. “People are asking for double ovens so they can easily entertain,” says Kerri O’Hara of BHGRE 43° North in Boise. When naming the factors involved in their purchase, repeat buyers focused on features (size and style, for example); millennial buyers said homeownership was a step toward financial stability and adulthood. About 65 percent of millennial buyers say they think it’s a good investment, along with a part of being an adult (40 percent), a way to put down roots in the community (40 percent), and a sign of being successful (31 percent). To maximize the investment, agents recommend buyers picture themselves as eventual sellers. They should consider: Is this a growing, active area? (It should be.) Is it the most expensive home in the neighborhood? (It shouldn’t be.) “People need to look at homes that are a good investment in case they need to sell,” Duncan says. “You never know what life changes are around the next corner that will necessitate a move.” ■

everal summers ago, I started experimenting with throwing a few homegrown herbs into the teapot. It started small with a sprig or two of mint or lemon verbena, but over the years my tea herb obsession has expanded, and now I grow dozens of herb plants solely for their drinkable properties. Sometimes I make a purely herbal hot tisane (a fancy French word for a beverage made from herbs instead of actual tea leaves). But being Texan, my refrigerator always holds a pitcher of iced black tea. I spruce mine up with lemongrass and tulsi one day or anise hyssop, lavender, and rose geranium the next. You can’t go wrong, really. The flavors live in such harmony that no matter the recipe, I’ve never made an undrinkable batch.

To make iced tea, pour nearly boiling water over two bags of black (or green) tea and add a tablespoon or more of fresh or dried leaves like mint or lemon verbena, a lesser amount of tulsi, and a pinch of lavender (too much can taste like soap). After a few minutes, pour into a pitcher and fill with water. For a noncaffeinated version, hold the tea, add more herbs, and let it steep a little longer. To make a single cup of hot tea, use one tea bag and a few pinches of herbs.

Tender perennials such as lemongrass, lemon verbena, and scented geraniums will grow year-round in warm climates. Elsewhere, overwinter them indoors as houseplants or grow as one-season annuals. n

I don’t fertilize my herbs because it can result in too much soft growth and a decrease of oils in the leaves. No oils; no flavor. n

DRYING AN D STORING You can dry herbs on drying racks or by hanging them in bundles. But I use an even simpler method: I lay the branches out in a single layer on dish towels covering a table for about a week. n

Once completely dry, hand-strip each variety’s leaves into a tin or a glass jar. Break up the stems, too, because they also hold flavor and scent.

Stored in a dry, dark place, dried herbs can last for a year or more, although they do lose flavor over time. n

Skip the fuss of rolling and crimping pastry and, instead, pull out your trusty sheet pan. A press-in-the-pan dough makes quick work of brunch for a crowd.

1. Preheat oven to 375°F. Grease a 15×10-inch baking pan. In a food processor pulse to combine flour and the 2 tsp. salt. Add butter; pulse until mixture resembles fine crumbs. Add ice water, 1 Tbsp. at a time, until dough just starts to come together. 2. Transfer dough to prepared pan. No rolling required: Press dough firmly and evenly into the bottom of the pan. (Egg mixture will cover any mistakes.) Bake 10 minutes. 3. Meanwhile, in an extra-large skillet cook bacon over medium until crisp. Before making a major commitment, designer Jessica Stambaugh layers (and relayers) fabrics, photos, and other items on a board to see how the colors and textures work together in each room.


t’s not every homeowner who dares to paint wood floors black, install chartreuse subway tile floor to ceiling, or choose cheetah print for curtains and a bedspread. But interior designer Jessica Stambaugh sees her Nashville home as a playground for exploring unconventional decorating choices and her love of color. “You gain decorating confidence by pushing the barometer, even if you mess up,” she says. To start, Jessica cracked open a box in which she’d been stashing bits of house inspiration while an apartment dweller in New York City. “If you’re always paying attention to what inspires you and collecting examples, when you go to decorate you’ll have something to draw upon.” Her box was heavy on Southwest influences—like a postcard from the Georgia O’Keeffe Museum in New Mexico—that guided her choices for paint, tile, and fabrics. That’s not to say every detail was ironed out in advance. She had to rethink a couple of paint colors, such as the vibrant mint green she painted her office that ended up being too saturated. In fact, she decided the whole space worked better as a guest room. “Often you don’t know exactly where you’re going in the beginning of a project, and you have to be ready to tweak things and say, ‘This isn’t quite right’—especially with color.” Risks and regroups are part of her process, which also hinges on modernizing vintage finds and hand-me-downs, deploying fabric in impactful ways, and contrasting soft colors with saturated ones. All of them go to the same goal: a personalized, comfortable, and soulful home. “I want things to feel natural and organically accumulated,” Jessica says. “I love a house that feels like you’ve always lived there.”

In the living room of her Nashville home, Jessica used a favorite bold flame stitch fabric as a table skirt rather than committing to it on a more permanent upholstered piece. She didn’t love the nailhead trim on the chairs so pried a few off in a discreet spot, liked the result, and removed the rest.

An inexpensive bright blue rug, a sunny yellow roller shade, and muted gray-green on the ceiling layer on color in less permanent ways.

Most ferns thrive in similar conditions: humidity and medium light. Mobee Weinstein, author of The Complete Book of Ferns, recommends placing indoor ferns near east-facing windows and cautions against overwatering. “Many people think that because ferns like moist air they need constant watering so end up killing them with kindness,” she says, adding that misting the leaves is ineffective. “Instead, try placing plants on a pebble tray that you fill with a bit of water or near a humidifier.” A few favorites for indoors:

This tells your body that it’s time to get tired and go to sleep, like a baby’s bedtime routine is designed to do, Brody says. GO TO BED AT THE RIGHT TIME For those with traditional schedules, that’s between 9:30 and 10:30, 11 at the latest. This is when much of the slow-wave stage of sleep happens, when your mind and body restore themselves, Mednick says. If you fall asleep at midnight, you’ll miss out on a lot of that stage even if you sleep eight hours.

TIME Experts weigh in on the pros and cons of pet nutrition trends. GRAIN-FREE Grain-free foods are considered by some to be healthier for pets. One theory is that undomesticated dogs and cats didn’t eat grains so grain-free food may be more easily digested and less likely to cause allergies or stomach issues. On the other hand, experts say that dogs have evolved to develop the ability to digest starches. So many vets are advising against a grain-free diet. “Grains aren’t necessarily good or bad per se. They can provide nutrients and are a good source of energy,” says John P. Loftus, Ph.D., D.V.M., assistant professor of small animal internal medicine at Cornell University College of Veterinary Medicine in Ithaca, NY.

NEW PROTEIN SOURCES Move over chicken and beef; pet food companies are introducing protein sources like crickets and buffalo. With an eye toward sustainability, even plant-based proteins like chickpeas and lentils are being used. One thing to know: Pet foods with novel animal proteins often contain a higher percentage of added plant protein, says Ken Tudor, D.V.M., holistic veterinarian and owner of The Well Dog Place in Claremont, CA. That may mean less of the nutrients found in animal protein (like taurine) that a dog or cat needs.

Even though studies haven’t confirmed whether organic foods are better for pets, there’s no downside as long as the food has the right nutritional makeup. The words “certified organic” on the label indicate that at least 95 percent of the ingredients are organic; “made with organic ingredients” means at least 70 percent are. What about added ingredients like probiotics and omega-3 fatty acids? They up the price but also increase beneficial vitamins, minerals, and nutrients, says Carol Osborne, D.V.M., veterinarian in Chagrin Falls, OH.

FRESH FOODS Although fresh pet foods (available via delivery services and in the refrigerated section of pet stores) may seem like a splurge given the prices, they can benefit pets. “Fresh pet foods usually have high-quality meat and are good sources of vitamins and minerals,” Osborne says. Because fresh foods are perishable, you’ll need to keep these items in the fridge or freezer. For any foods you choose, check labels for an endorsement from the AAFCO, a nonprofit regulating pet food quality. ■
