From cigar collections to sneakers, ski gear to arcades, there’s a world within every Pinel et Pinel trunk. The luxury brand founded by Fred Pinel is known for imaginative iterations of the luggage; among his bespoke creations are a sneaker trunk for Michael Jordan, and another featuring a gaming arcade complete with Pac-Man and Space Invaders. We speak to Fred on luxury, his creative process, and what sets Hong Kong – home of the first Pinel et Pinel store in Asia – apart from the European market. What inspired you to turn trunks into a form of furniture? I don’t think I transform trunks into furniture. I think they’re made the same way. If someone wants a trunk for travelling, I’ll make it for them. If they don’t, I’ll do ‘furniture’, without wheels. Describe your design process. I take a shower. (Laughs) Once I do something, it’s very easy, because everything is possible. For example, a trunk for a small motorbike – if we want to do that, why not? Whoever says ‘no’ will not be able to do it. Because I’m still alive at the moment, I can create what I want. Everything is possible for me. How do you see Pinel et Pinel in the homes of Hongkongers? It depends. My clients have large spaces – they give me the details and I create a trunk for them. But they’re not the only market – if they prefer something smaller, we can do it. Small is still beautiful. What differences do you observe between the Asian and European markets? I think the difference is that in Asia, you are more colourful, preferring lots of bright colours rather than brown and black. The collection celebrates beautifully hand-embroidered materials and textiles, as well as the refinement and delicacy of past perfections. We have two main fabrics. The first one is Egyptian cotton. We also have satin, which is very light. Couture means to show and allow customers to think that the product was created just for them; it’s not branding. This new collection is dedicated to decorative designs inspired by the 17th and 18th centuries. We are moved by history, by painters, and by decorative arts. I also love being inspired by colours – we have one line inspired by gold and another inspired by silver. And the main goal of history is to rewrite and tell a different version of it. I love designing because it’s an old concept. It’s not just to create a bedding collection – my driving purpose is to create a new brand. My personal favourite is Octave, which has stronger lines and is all hand-embroidered. This line is inspired by the first design that Ernestine [Fremaux] created. Situated in a prime location in Sydney’s financial precinc t, proper t y management f irm Memocorp’s headquarters, housed within the prestigious 259 George Street, is nothing short of surprises. “The company was familiar with our work and they felt we would be ideal to lead the project,” says Hana Hakim, founder and design director of Melbourne-based interior design studio The Stella Collective, which is known for using light as its prominent design element. “Studies have shown that workspaces with natural light are beneficial for productivity and sleep quality,” she explains. “Apart from treating wellness as one of the office's guiding principles, we also needed to showcase the panoramic views of Sydney Harbour.” While curating an uplifting environment governed by ample light, Hakim conceived a meticulous design language that blends traditional values and modern aesthetics to reflect the property group’s care for employees and passion for reimagined constructions. “We created a handful of designated areas to give employees a choice in how they engage with their surroundings,” she says. “Formal and informal meeting areas are available for casual socialising or business purposes, or simply a space for one to unwind.” In fact, a holistic design approach isn’t complete without taking functionality and social impact into consideration – such as a commercial kitchen for employees to use during the day and for the company to host private events, a dedicated gym and yoga area, and a sunken lounge, just to name a few. 74 | HO≤E JOURNAL | SEPTEMBER 2018

When explaining the spatial strategy to the office, which spans more than 10,000sqft, the team’s painstaking effort in promoting a sense of purpose and belonging for the firm is made apparent in the exquisite details and overall design characteristics. “We followed a neutral palette and a timeless narrative to resonate with wellness and attentiveness, as seen from the custom lift indicator lights to the timber floor ventilation grills,” elaborates Hakim. “We also approached the office from a multidisciplinary philosophical perspective through engineering and cognitive practices by taking cues from high-end hotels, hospitality and spa design disciplines to execute a genuine wellness concept. The result is a place that supports productivity, workflow, company culture and social engagement.” Intricately connected to the innovative work environment is an aesthetic that’s precisely modulated but never cloying. Likewise does La Deux, the luxury furniture distributor alleviating some of this creative load by assuming the role of consultant as well. “La Deux is a platform. We’re not obligated to promote a specific brand – we promote design,” says principal Alan Tse. Since 2012, La Deux has been working with furniture designers abroad and interior designers at home, bridging the former to a wider audience and the latter to curated inspiration. “We’re very happy to bring interesting ideas to Hong Kong designers, to help stimulate their creativity,” says Tse, referencing a mix of styles and generations of designers all moving the industry forward. The lighting brand features lamps in every form, from pendants to wall fixtures to floor lamps, in quirky assemblies – such as the Aballs Chandelier – as well as the fantastical, including the Gweilo floor lamps, comprised of hand-sculpted sheets of acrylic bent like fabric and illuminated by LED strips. The spectacular creations are designed by a roster of creatives including Jaime Hayon, Stephen Burks, design duo Neri & Hu as well as interiors consultants Viveca Gonzalez and Shukri Girgis.

“Switzerland’s very famous for making watches, and to make watches, you must have a lot of very precise machinery and tools,” says Tse. “With this background, the way Swiss brand Röthlisberger cuts and makes furniture is among the most precise around the world.” Their collections are also some of the most beautiful and thoughtfully designed, marked by innovation and whimsy yet not without functionality and ease – as illustrated in pieces such as the Ovolo oak table, with curves and magnets in the right places, or Susi & Ueli Berger's Stack of Drawers, a pillar of boxes in diagonally-striped wood veneer. Named to encompass the classic and the contemporary, German brand ClassiCon features an expansive range of “products that are easy to adapt, and made with excellent craftsmanship,” describes Tse. Among their roster of designers are Eileen Grey – “one of the classics” – as well as Jader Almeida, German designer Sebastian Herkner, and architect couple Neri & Hu, to name a few. There’s no doubt about it: Aviva Duncan is a force of nature, both creatively and in person, where her statuesque frame fills the room with an unapologetic warmth and her effervescent, quickfire manner of speech. Naturally, the Australian interior designer’s home – which she shares with daughters Lucy, 9, and Mia, 14 – is every bit a reflection of her personality, with its riotous prints, colour blocking, and outsized artworks. Despite the surface details, however, the 2,800sqft apartment on Po Shan Road is a practical environment within which Aviva realises her mantra of ‘form follows function.’ Given the family’s love of entertaining, the dining room serves as the focus of the house, where guests settle around a 2.5-metre-long solid wood table that is often found decked out with various culinary delights, thanks to Aviva’s penchant (she is also a trained chef) for cooking up sumptuous feasts. Visitors are free to wander around the apartment’s open plan. “I don’t do things like close off little areas – I try to keep it an open flow just because we have so many people passing through,” says Aviva. There’s another benefit to the wide interior: her itch to experiment and redecorate the abode is more easily satisfied, and marks from her frenetic creative energy are abundant. “Personally, I also love the feeling of a high ceiling, so I experimented with the walls where I painted the bottom half of the wall a darker tone and the top half a lighter tone. Meanwhile, the floor is largely covered in an assortment of statement-making rugs. The most prominent design in the living area – a geometric monochrome graphic pattern – is of Aviva’s own creation, serving not only to dazzle guests upon arrival but also to cover up the old-fashioned parquet floor of the rental, and to add a general softness to the space. The versatility of a good rug shouldn’t be understated, Aviva emphasises: “A rug is something you take with you, so it’s not a waste since you don’t even leave it behind! Even if you move somewhere smaller, you can just have them recut.” Aviva’s focus on walls and flooring come together in her office, from where she runs her interior design consultancy. “I experimented doing the wall the same tone as the carpet to make it a bubble. I hate to think that I’m savvy or fashionable, but it’s a very modern thing. Art plays a major role in the Duncan household, even more so since Aviva completed a fine arts degree at the local campus of the Savannah College of Art and Design (SCAD). From the entrance foyer, the eye passes by a pop-art canvas by Australian artist Paul Davis (“I love LA and mid-century design, so the whole aesthetic just spoke to me about Hollywood Hills”), and a monochrome painting of an owl by Josh Yeldham, before settling on Aviva’s favourite piece hanging above an Eames lounge chair and ottoman – a photograph of a desolate church and a lone piano, by Hong Kong-based photographer Denice Hough. The art collection, Aviva says, will be her gift to her daughters and, she hopes, from her daughters to their grandchildren. “It reminds me of how important it is to grow up surrounded by visual [cues] and how it shapes you. Sometimes art is not even about how it looks. Achieving a perfect balance between fine design and personal touch is always a challenge when it comes to home interiors. Unlike hospitality, F&B and other interior design projects, an abode is inhabited 24/7 by the individual or family that owns it, and so should cater to their specific needs and personalities. When award-winning South African interior design studio ARRCC was commissioned to do the interiors for a stunning, two-storey house in the Double Bay suburb in Sydney, its designers were working with South African architecture firm SAOTA’s eye-catching shell as well as the clients’ brief for a space that would allow for ample entertaining and quality family time. “The overall design for the interior of the house is a contemporary approach that balances the clients’ requirement of formal social functions with more relaxed, casual living and small family gatherings,” says Mark Rielly, ARRCC’s director. The home is distinctive for its geometric elements and unusual layout, which seamlessly integrates the interior and exterior spaces, creating a number of airy entertaining areas. Upon entering the lobby, you’re immediately greeted by a winding staircase framed with wooden slats — which is also visible from outside thanks to the ground floor being completely transparent, allowing the family to enjoy the surrounding stellar views of the harbour. The floor-to-ceiling windows also easily connect the indoor living areas with the outdoor terrace and greenery. The upper floors, on the other hand, are solid, granting additional privacy to the bedrooms and powder rooms therein. The outdoor area is striking indeed. Flanked by a shimmering pool, the terrace is furnished with woven outdoor furniture by Paola Lenti, featuring blue and grey tones that mirror the interior spaces. Transparent glass dividers connect the terrace to the surrounding pool just as the floor-to-ceiling windows allow for uninterrupted views. Furnishings are sculptural, statement-making, and work harmoniously with the home’s palette and surrounding nature. ARRCC worked closely with the clients to meticulously select the artworks and artistic accents featured prominently throughout the abode: custom-made

brass discs created by local Sydney craftsman Andrew Earp grace the lobby, while a mirrored sculpture by Arik Levy adds impact to the open courtyard and a large foil artwork by Pae White takes pride of place in the living area. (The client came across the work in Los Angeles and was so taken with it that she requested ARRCC to source it specifically.) While the home’s colour palette is mostly neutral with plenty of light woods and grey tones, metallic accents and pops of bright blues and yellows abound, granting a playful, tropical touch to the space. “The clients’ favourite colour, blue, was added to the neutral palette to provide little bursts of colour that capture and reflect the hues of the waterfront,” says Mark. Glimmering glassware sits on coffee tables and is tucked among shelves, while lighting pieces are as sculptural as some of the artworks seen throughout the home. Chamber marble and glass feature pendant lights dangle from the ceiling in the stairwell, contrasting with the brass discs on the wall, while the abstract Polygonal Ring pendant light by Italian studio Henge hovers above the dining table. Ultimately, the most striking aspect of this beautiful home is how well the interior and exterior spaces complement each other, which is largely due to ARRCC taking ample inspiration from the home’s existing shell and surroundings to conceive of its design. “The location and contemporary language of the architecture influenced our approach to the interior spaces,” explains Mark. “Like the architects, the concept of barefoot luxury has allowed us to create a signature design aesthetic.” //

When Hong Kong-based architect Roderick Murray and his partner, Joyce and Lane Crawford president Andrew Keith, set out to purchase a property in their native Scotland, they had one goal in mind—to create a home. They found the ideal space, a 200-year-old Georgian house with a Grade A heritage listing, in Edinburgh’s New Town, a UNESCO World Heritage area. “We fell in love with the place when we saw it. It’s a grand Georgian townhouse without being too grand,” Murray recalls. The property, like many of its kind, had been converted into offices. However, the original structure and many of its features, including decorative plasterwork, were preserved behind boards and under carpeting. “They boarded up the floors, boarded over the fireplaces, boarded up the doors,” Murray says, “so it was all there. The bones of the place were great. We just had to get in there and make it a home.” Once they had the property in hand, Murray and Keith began what would be a two-year journey with local authorities and Historic Environment Scotland to ensure all the paperwork was approved. Then the couple took over the project management duties and put their ideas into action. “We had to pay respect to the Georgian house itself, but we wanted it to be a space that we could live in and feel comfortable in,” Murray says. That meant bucking convention and rearranging the layout. “In Edinburgh, there’s a plan that everyone follows. The kitchen and dining room are on the ground floor. There’s a drawing room to the front and then the bedrooms are elsewhere. We didn’t really want that. We wanted a large lounge kitchen and dining space. So the only way we could do that within the planning restrictions was to put it on the first floor.”

Murray’s approach to the layout, while seemingly unconventional, made complete sense to him. “A space is a space. Until you actually designate a function, it could be anything. So it’s got huge potential. You start thinking of it in terms of home, and what the spaces should be.” Colour was also a central aspect of Murray’s design, once again combining the couple’s shared experiences to make the space into a home. “It came from our travels. The summer before, we had been to Italy and Bhutan. In both those places you find shocking colour. The outside of the home also required work, including the installation of double-glazed windows designed for Georgian homes. “The building looked ugly; putting back the original windows made a huge difference to the outside of the building,” Murray says. “It went back to its original look. The old house looked like it had its teeth missing. You put back the windows and all of a sudden it became complete.” Murray embarked on a unique approach to designing each room— compartmentalisation. The new walls are short of the five-metre ceilings, reaching only as far as the picture rails and the 200-year-old creative plasterwork, giving Murray and Keith a contemporary feel within a Georgian space. Once the framing of the space was complete, Murray and Keith wanted to fill up the rooms in one go. They shipped over a large container of furniture and objets, blocking traffic in central Edinburgh for the better part of a day. “We created a framework and then decorated it in a style we liked, filling it with furniture and objects, things that were personal to us. And then it came to life again. It’s a mixture of styles and periods, but it’s also a mixture of things we like, things that we’ve collected. It’s a very comfortable and glamorous space to be in.” Keith and Murray hope to welcome family and friends to their new home soon. “We both have family who are overseas and come back to Scotland. As well as our home, we want it to be a family home.” The couple are looking forward to the final step—spending time to get to know the space together, starting with a return trip this summer. “We’re going back in June and are planning to spend time there so we can bed ourselves down. For the Shepherds, the house's cylindrical volume is one of its selling points, along with the spaciousness afforded by the ground-level terrace and the open rooftop. 滲透光線 對這個澳洲家庭來說，圓柱造 型設計和遼闊開揚的佈局是最 為吸引之處。連接地下的陽台 和頂層露台讓人與自然互相響 應，倍感舒適。
It takes a lot to build a house and, as most storied abodes will reveal, it takes even more to build a home. But generously high ceilings, voluminous natural light and views of the seaside aren’t a bad place to start, as Donna Shepherd would know. Located in Sai Kung, the three-storey dwelling she now resides in with her family brimmed with potential during its discovery. She recalls: “One of the biggest factors to purchasing the home was the unusually high ceiling in the living room,” which allowed for a 22-foot window to partially encircle the space, inviting light to the ground level’s open plan and into the kitchen. A spacious garden, along with a terrace on the rooftop and surrounding views of the sea, also did their part in winning over Shepherd and her husband. Relocating from Australia 20 years ago, the family now calls Hong Kong home. Over the years, Shepherd has kept herself busy by running home-related businesses, including the Wicka Designs furniture line as well as Antiques Zhuhai and Beyond, which organises shopping tours for antiques in China. Of her many ventures, her favourite is the current one, Prime Real Estate. “This allows me to do what I love best – finding great homes for people, including myself,” she says. “Many individuals cannot see the potential in a home and that’s where my forte is. HOMES | SAI KUNG This ability to find potential, paired with the patience and persistence to see a house live up to its own, is reflected in the Shepherd home – a space that would ultimately take two-and-a-half years to gut and renovate. While the kitchen was relatively easy, she says, the dining and living room proved a challenge; in the end, they resorted to building an additional wall to add definition to the floor plan, creating an entertainment space with a built-in surround sound system in the process, and importing furniture to match the layout of the living room. It may have taken longer than she envisioned, but for Shepherd, that’s just part of the process. “It takes time and dedication to find the right look,” she says. The result of both deliberate and organic efforts, the Shepherd home is distinctive and personal; the tastes, characters and stories of its inhabitants are evident. On the artwork in the dining room, for instance, Shepherd recounts a nugget from her husband’s childhood: “Shaun [Atkinson, the author of the work] and my husband grew up in the same social circle, and this particular piece of art, Dreaming Not Drowning, was gifted to Shaun’s aunt many years ago. HOMES | SAI KUNG one of two bedrooms – a gift from a friend. “The piece itself is so relevant to our home in Sai Kung, where many feral cows roam freely – including in our garden!” Another gift that finds a special place in the study is an antique desk, from a friend of Shepherd’s who moved away. “It’s one of those fabulous pieces that will stay with us wherever we go,” she says. ”I will always have fond memories of our time together in Hong Kong.” Meanwhile, the antiques cabinet next to it is the couple’s gift to themselves at the other end of a move, when they arrived in their adopted city. There are framed tiles on the rooftop that tell the tale of the family’s trip to Istanbul, while a piece in the master bedroom is put together by Shepherd herself. “I’m not really a good artist, but I know what I like and I can appreciate the talents of others,” she says. “I sourced the felt collections from the Philippines and, with the help of Artmen in Wan Chai, created a lovely boxed and framed piece.” A foot away, a headboard custom-made in Zhuhai anchors the master bedroom. The family’s individual characters find expression in the bathrooms, too. “It never occurred to us to go with a uniform look,” says Shepherd. “Each bathroom was designed individually. Our own bathroom was a combination of what my husband and I both like. He loved the ‘washed wooden look’ floor, and I wanted the feature tiles and to enhance the position of the bath. “MY STYLE ON PAPER IS GREY, AUSTERE MODERNISM – BUT COLOUR ALWAYS SNEAKS IN” It was through the very act of trying to leave South Africa that Barry and Anji Connell were drawn back in. The couple were holidaying there last year, having wanted to visit for some time. On the final day of a five-night trip, while en route to the airport, they decided to stop by the town of Franschhoek for a quick look around, having heard how lovely it was. Spying a property agency, the couple got out of the car to peek in the window. What they saw there was love at first sight – and the rest, as they say, is history. Franschhoek is a country town that’s less than a two-hour drive east of Cape Town, surrounded by stunning scenery that includes centuries-old vineyards and magnificent mountains. It’s also where the couple now spend three months of each year, splitting their time equally between their various homes – they have properties in Hong Kong, London and North Norfolk, England. Anji works on the go as an interior architect and garden/landscape designer, so it comes as no surprise that the newest home in Franschhoek is full of style and character, both inside and out.

“I like to think I create homes to suit my clients; however, I do like to push the boundaries and help them to push theirs, especially if they are living away from their ‘real’ home,” says Anji of her design style. “I encourage them to do something a little different.” This description also relates to what she’s done with her own home in Franschhoek. Although she states that she prefers a clean, minimal home, her South African property is far from that ideal. “My style on paper, or in my head, is grey, austere modernism – concrete, metal, glass, minimal furniture, with no signs of life,” she explains. “But colour always sneaks in.” The Franschhoek home is striking, in particular for its bold use of colour. But it’s perhaps also a reflection of its setting. “Location does affect the aesthetic: Hong Kong is urban and minimal, and London is more modern and eclectic, while the Norfolk beach house is more homely,” she says. So how would she describe the South African home? The aesthetic of the house’s previous inhabitants was “French country style,” and that partly made Anji fall in love with it. But although she was tempted to keep the furnishings as they were, in the end, she decided to do the design her own way, sourcing various pieces from South African furniture brand Weylandts and others from Hong Kong, ultimately creating what she describes as an “uncluttered, inviting, comfortable living space with a bit of African flavour.”

This flavour that she identifies is delivered mainly through the various artworks that punctuate the space, most of which were sourced from Franschhoek’s many galleries or from Cape Town; they include pieces by South African artists such as Richard Scott, Karin Miller and Ralph Ziman, as well as paintings by others from around the world including Gavin Turk, Gary Stephens and Andrzej Urbanski. The artworks are complemented by Anji’s expert splashes of bright hues here and there, particularly in the furnishings – as can be seen in the yellow velvet dining room chairs; the large, bright pink-painted tree; the vintage yellow armchair; and the living room bar cabinet in striking blue, white and red. There are quirkier artworks, too. Anji sought out two South African street artists via Instagram, Wayne Bks and Ana Kuni, who she commissioned to create something for the home. Their mural work now appears in one of the bedrooms and on one wall of the verandah. And the art continues outdoors. By the swimming pool, a sculpture – by South African sculptor Marieke Prinsloo-Rowe – of a girl in a diving pose appears almost ready to jump into the inviting waters. “We fell in love with it on sight and felt instantly that it would be our mark on the garden,” says Anji. “She’s a beauty.” With much more planned, including transforming the office into a fourth bedroom, it sounds like Anji still has plenty of opportunity to make marks on this elegant African abode. //

It took me approximately one full minute to fall in love with Amanoi. Stepping off a short, direct flight from Hong Kong, and after a subsequent 75-minute-long drive along a winding coastal highway, our contingent had been well-primed by the passing verdant scenery, ready to be awed upon arrival by the five-star resort’s vaulted entrance staircase and the staff in their breezy bleached Vietnamese tunics. However, it wasn’t until a beaming attendant handed me a welcome drink – a fragrant, ice-cold ginger beer made in-house – that my mind was truly made. Indeed, it would take a hardened soul to resist the charms of Amanoi. Deriving its name from the Sanskrit word for “peace” and the Vietnamese word for “place”, the resort’s location – between the 29,000-hectare Núi Chúa National Park and a pristine marine reserve on Vietnam’s south-central coastline – all but guarantees tranquillity. Contrary to the popular perception of Vietnam as a sweltering tropical country, the national park’s unique microclimate delivers dry, balmy Mediterranean weather and a generous 250 days of sunshine per year. Designed to make the most of the abundant sun, Amanoi’s 16 villas and 13 free-standing pavilions were conceived by renowned luxury hotel architect JeanMichel Gathy to be minimalist, highly symmetrical and open to the surrounding nature, all the while paying homage to traditional Vietnamese architecture with their gracefully sloping eaves. Peeking out from the ridgeline, their blue-grey roofs resemble monastic hideouts clustered around the grand Central Pavilion, which contains the main restaurant, library and lounge bar. Given Amanoi’s emphasis on health and wellness, the 20,000sqft Aman Spa is a sight unto itself. It sits on the shore of a lotus lake, from where a yoga pavilion juts out into its centre and plays host to morning fitness classes – a meditation session here, while listening to nothing save for birdsong, does wonders for the soul. The complex offers an array of half- or full-day treatments to shape you into your best self, including such arcane-sounding options as pranayama breathing, reiki and craniosacral therapy.

Health pilgrims should consider the Wellness Immersions, which involve a pre-trip consultation with the spa director who then tailors a holistic programme of dietary, exercise, relaxation and spa treatments based on Asian medicinal practices. The programme is carried out in one of two specialised 1,850sqft Spa Houses featuring a marble-clad hammam and a Russian-style banya sauna respectively. Two benign spa attendants inhabit the latter, eager to alternately subject your body to steamy lashings using imported sheafs of oak leaves and icy plunges into a cold-water pool that induce minor cardiac arrest. The result? Pure corporeal bliss. The service at Amanoi is world-class: ever-attentive and never caught without smiles on their faces, the attendants lightly flit to and fro in their conical nón lá hats, always ready to offer a lemongrass-scented wet towel or a banh căn rice pancake for afternoon tea. They play a hand in arranging various memorable excursions from a moonlit blessing ceremony conducted by a shaman of the Cham ethnic minority, to a candlelit dinner in the redolent home of a local village chieftain. For the more adventurous, the resort also offers sunrise hikes to the nearby Goga Peak, while a range of water sports can be enjoyed at the picture-perfect Beach Club. It’s easy to become envious of the staff in any luxury resort, who take for granted what paying guests travel far and wide to experience. Having helmed Tosca at the Ritz Carlton Hong Kong since 2013, Italian chef Pino Lavarra possesses a wealth of experience around the globe that has shaped his gastronomic technique to exceptional heights. Bringing with him accolades and prestigious recognition, including the title of 'One of the Best Chefs in the World' by the American Academy of Hospitality Sciences, two Michelin stars for Rosellinis, which he led from 2001-2003, and Tosca's one Michelin star, Pino is a culinary force to be reckoned with. Undoubtedly, he possesses the perfect personality to create a glamorous meal for any occasion. "My way of plating is very glamorous and it's also my personal trademark," Pino explains. "Glamour is a lifestyle as it's very conceptual. You have to be open to beauty and style. I enjoy food design and I love working with colours – to mix and match." In line with this theme, Chef Lavarra has prepared the Langoustine Salad, followed by the Risotto Sepia, the Beef and Eggplant and a Chocolate Mousse to polish off the beautiful experience. which is lighter than using butter or oil, and preserves the purity of its flavour. Meanwhile, the salad is a representation of Italy throughout the long summer and utilises the best seasonal ingredients. "The gazpacho is based not only on tomato but also with a lobster bisque," he says. "For the risotto, bell peppers have been used so it's still very refreshing." Continues Lavarra, "It's important to invoke all the senses of your guests. When a dish is brought to you, the most important sense is how it looks – although by the time you’ve swallowed your food, taste is really the last sense that is experienced. For example, once you bite something like the langoustine, you experience the crunchiness of it; as a chef, the most important creation is flavour, because if it looks beautiful but tastes terrible, then you fail. Some people say that visuals don’t matter, or some may call it a success when it looks unappealing yet tastes gorgeous. The Beef and Eggplant arrives looking like a plate of art to illustrate his point, and Lavarra notes this is a favourite on the menu. "There's eggplant and anchovies in this dish, which I've used to balance the fattiness of the wagyu beef," he says. The Chocolate Mousse is the perfect ending – beautiful, rich and unique with ice incorporated inside to keep the dessert chilled. "There's also some yoghurt inside the mousse so that its acidity cleanses the palette. Mousse has to be cold in order to taste good and this immediacy invites diners to another bite," he explains. Despite helming one of the best restaurants in Asia, Chef Pino Lavarra is not content to rest on his laurels. "I never stop to rest because I get bored. I love creating and I love to share my emotions through food. My goal is to keep getting better and to achieve the best results, to travel more, be inspired and be continually motivated.
