n Saturday March 12, 2016, New Eyes for the Needy held their 8th annual Kids Rock for Vision benefit concert at Roxy & Duke’s Roadhouse in Dunellen. The show was sponsored and produced by the Chatham School of Rock and featured 25 students and alumni of the nationally recognized music performance school. “There are thousands of kids in this country whose families can’t afford something as basic, and critical, as a pair of glasses— something most of us would take for granted,” said Kate Parker, a Governor Livingston High School senior who co-chaired this year’s event with Millburn High senior Johnny Cleary and Madison High junior Brian Culligan. Thanks to everyone who participated, they were able to raise an amazing $7,000. All proceeds go to New Eyes For The Needy, a Short Hills-based nonprofit that purchases eyeglasses for those who can’t afford them. To make an online donation visit www.new-eyes.org.

ir Force vet and founder of King George Plumbing (KGP), Chuck DeTorres has been a stellar member of the community for more than thirty years. Committed to giving back, he participates in the internship program for special needs students at Watching Hills Regional High School, sponsors local little league teams and donates services to the building and maintenance of local sports facilities. Learning his trade on a nuclear missile base in Wyoming, DeTorres came out of the military and started his own plumbing business on King George Road in Warren in 1982. His company has since moved to Mountain Boulevard and expanded its services to include HVAC and electrical. His son Andrew has joined KGP, and together they remain committed to the high standards and dedication to community upon which the business was founded. Sixty Years of Family Fun

C

hatham Township’s own private Swim and Racquets club, the Noe Pond Club (NPC), celebrated its 60th anniversary last summer. Festivities continue with the publication of Noe Pond Club: 60 Years of Family Fun, written by Morris County resident William Westhoven in conjunction with NPC founders Bailey and Nancy “Taz” Brower. The 100+ page book is available at NPC and major retailers. NPC is located on property that has been in the Brower family since the mid-1770s. Bailey Brower is a direct descendent of Lewis Noe, a Revolutionary War officer and early settler of Chatham. In 1955, the Browers started NPC when they opened the three-and-one-half acre pond on their ancestral property as a family club. Today, second and third generations of families enjoy tennis, paddle tennis and a variety of water sports (including ice skating) on 18 acres. Focusing on family, NPC’s mission centers on creating “lasting memories for people of all ages.” Noe Pond Club is a nonprofit member club. For more information, go to www.noepondclub.org.

f you have already been daydreaming about the warm summer weather ahead then coincidently you have also probably thought about barbeques, pool parties and toasting marshmallows on an open fire. Outdoor living spaces have become synonymous with fun-inthe-sun and many home buyers view them as a necessity when purchasing a new house. Having the option to seamlessly move from the interior to the exterior of a home while keeping all the personal amenities you desire, is a truly priceless experience. Gone are the days where people spent considerable amounts of money to go to resorts just to use the pool. Now, families are creating

the backyard of their dreams by encompassing resort-style qualities with pools, fire pits, stateof-the-art outdoor kitchen appliances and water features that would soothe even the noisiest toddlers to sleep. But what goes into making a truly entertaining outdoor space? Is it the size of the space or the types of plants you use? Does backyard entertainment mean having a pool? Summing up what makes an extraordinary entertainment space can’t easily be narrowed down to one or two things. So here is a list of the top ten ideas for making your outdoor area a place you can entertain, relax and have fun this summer!


• Plants. Trees, shrubs, flowers, and grass all bring life and color to your entertaining space. Unlike most of the other items on this list, the plants in your yard can be changed according to the season which will create intrigue and nuances in your surroundings. Pick select areas in your outdoor space that you want to highlight and plant bold colored flowers or shrubs to rein in people’s attention. • Pool. Don’t let the naysayers make you doubt it…having a pool in your yard IS like having a little piece of your own heaven. Cool off, have fun, get exercise, it really doesn’t matter- pools are amazingly fun for kids young and old. • Fireplace. Constructing a fireplace or fire pit will allow you to entertain long into the night and throughout more of the seasons. A fire element can be used to brighten up a dark area, cook food, stay warm or keep the bugs away. • Outdoor Kitchen. By creating an outdoor kitchen you will be able to keep the entertainment going while you cook. Include a refrigerator in your setup and eliminate trips into the house. • Pizza Oven. Why go out for brick oven pizza when you can make it yourself! And pizza isn’t the only thing you can cook; use your brick oven as a grill and roast vegetables, cook meat or make a doughy dessert. • Outdoor Bar. Build a bar area into your outdoor kitchen or any space in your landscape and experience the feeling of living at a luxury hotel. • Dining Area and Seating. Create several areas in your space with seating and/or tables so that guests can feel comfortable and break off into groups for smaller conversations. Or, have the kids sit by the pool while you enjoy your soft, cushy chairs near the fireplace. • Pergola. Create shade from the sun and cover from the elements by building a pergola or pavilion. On hot summer days getting out of the sun, in between dips in the pool, can be a necessity. Give yourself a place to enjoy the beautiful weather out of the harsh rays. • Water Feature. If you want to relax, you need a water feature. Few things can drown out background noise like the trickling sound of a fountain. Establish an ornate or naturalistic focal point with a flowing waterfall or pond with aquatic life. • Landscape Lighting. Illuminate your outdoor space to make it useable and safe well into the evening hours. Spotlight an area where there is a water feature or create ambiance in a seating area to engage your guests. Jersey Girls Walk The Runway to Combat Pediatric Cancer

trutting across the runway for philanthropy never looked so glamorous. A local charity, Catwalk4Cancer, brings friends and families together in high fashion to raise money to fight pediatric cancer. In May 2012, 11-year-old Short Hills resident, Tallie Elisha, was diagnosed with acute lymphoblastic leukemia. She was treated at Memorial Sloan Kettering Cancer Center (MSKCC) in New York City and, after a two-year struggle, beat the disease. Witnessing her best friend’s courageous fight, Ashley Raz decided to help Tallie by taking a stance against pediatric cancer as part of her Mitzvah project. Taylor Cooper, a friend since middle school, joined the effort. By way of friendship, strength in numbers and courage, Catwalk4Cancer took a huge step forward. The charity fashion shows of Catwalk4Cancer feature children modeling the newest fashions from local vendors. Tallie, Ashley, Taylor and their friends have all walked the runway, showing that true beauty comes from the inside. Since 2013, Team Tallie has raised over $100,000, with a goal of reaching $250,000 in 2016. This year, Catwalk4Cancer has teamed up with East Coast USA Pageant and East Coast Starz, a premiere children’s runway and modeling agency. The Third Catwalk for Cancer fashion shows will take place on April 24 and May 13 to 15, all events at the Marriott in Whippany. Children ages 18 months to 17 years are invited register to walk the runway. Special apparel and accessories are being offered for sale; all proceeds benefit pediatric cancer research at MSKCC. Registration is $145, and includes couture clothing styled by NY stylist Stacie Fitzgerald, runway lessons, make-up, hair and professional photo shoot. Cancer-free today, Tallie says, “Together we will find a cure. We hope that someday childhood cancer will be as easy as a walk down the catwalk.”

hen Jay Winik wrote his instant classic book over 15 years ago, April 1865: The Month That Saved America, he was writing about the last month of the Civil War. Tom Valenti of Strip House Renowned Culinary Director Brings His Talents to Livingston By Rhonda L. Rivera, Photos by Dan Epstein

T

om Valenti, founder of famed NYC restaurants Alison on Dominick, Ouest and Cesca, is now Strip House’s Culinary Director. In addition to overseeing the kitchen, he is in charge of the food and beverage service for the Westminster Hotel in Livingston, in which the Strip House restaurant is located. Since taking the position in midNovember 2015, Valenti totally revamped the banquet menu and tweaked the already highly-respected fine dining menu, to much acclaim. Valenti “cooks to live.” When not behind a stove, he can be found fly-fishing in the Catskills. Asked why he chose to share the Branzino recipe with Vicinity readers, he replied that he wanted to “demystify fish,” and encourage everyone to enjoy delicious seafood at home. To make this dish have a “restaurant presentation,” he recommends scoring the Branzino so that the filets will cook more evenly and not curl up in the cooking process. In addition, he cautions against using black olives, as they can turn bitter when heated. While the typical “papillote” cooking method uses parchment paper, Valenti chose aluminum foil because it seals better and allows for multiple filets to be cooked at once. Valenti has his roots in French cooking by way of Ithaca, New York. Early on, he landed a position at the famous French Chef Guy Savoy’s restaurant in Greenwich, Connecticut. Savoy was so taken by the young chef that he sent Valenti to intern at his signature restaurant in Paris.

Branzino “Papillote Style” with Lemon and Olives Ingredients: 4, 6 or 7 oz. Branzino filets (can substitute any similar fish, such as snapper) 2 cloves garlic, sliced very thin 2T fresh parsley, chopped 1 lemon, peeled and separated into segments 2c assorted olives 2T fresh chives, chopped ¼ c extra virgin olive oil ¼ c dry white wine (can substitute water or chicken stock) Salt and pepper, to taste

Directions: Preheat oven to 325°. Line a baking sheet with aluminum foil, creating a “lip” along all four sides. Coat the baking sheet with the olive oil and white wine. Cut the Branzino filets in half and trim, if necessary. Score (make little cuts) the flesh side, then season the fish on both sides with salt and pepper. Place the filets, skin side up, on the baking sheet. Top the fish with the garlic and lemon segments. Scatter the parsley and olives around the baking sheet.

Cover the baking sheet with another piece of aluminum foil and seal completely. Bake for 20-25 minutes and check for doneness by gently lifting a part of one filet with a fish spatula. To serve, gently place desired portion of fish onto a plate. Pour the cooking juices and garnishes around the fish and top with chives. Complete the meal with rice, cous cous or orzo. Serves two.
