hen George and Ginette Grapsas purchased the Florham Park Diner in 1991, it was just a small luncheonette with six seats at the counter and two tables. Since then, they have expanded the diner twice–doubling the space in 2003 and tripling its size in 2014. As a thank you to the diner’s loyal customers, the Grapsas Family will host a 25th Anniversary month-long celebration in August. “We’ll have 25 days of promotions during August and it will be a month of fun, prizes, giveaways and contests,” said Vicki Grapsas. “This is more of a family restaurant now. It’s a meeting place for the town. Our motto is ‘Where Good Food and Good Friends Meet,’ and we always run the diner from that perspective. Chatham Resident Raises Awareness for Autism

S

ixteen-year-old Chatham resident Grace Rubacky participated, along with friends and family, in the Spring Lake 5 mile race held on Memorial Day—in the name of “Team Henry” and Autism Speaks. Before the race, Grace had sent a note out to supporters stating, “With having a brother, Henry, who is autistic, it really has had an impact on my life. Not only does Henry enjoy life, he puts a smile on everyone’s face. I want to be able to give back and help the millions of other families who are connected with autism as well.” Her father, Michael Rubacky, formerly of Upper Montclair and mother Annie, could not be prouder of the impact she is having on increasing the awareness of this disorder.

The team is close to raising their goal $10,000 this year. Even though the race is over, the fight to help those with autism is not. Autism Speaks is a leading autism science and advocacy organization, dedicated to funding research into the causes, prevention, treatments and a cure for autism; increasing awareness of autism spectrum disorders; and advocating for the needs of individuals with autism and their families.

BF: Explain the statement “When it comes to food, you are what you think?” NL: We all understand, “You are what you eat.” This perspective is actually the lowest level. Because food is energy, the highest perspective is, “You are what you think.” When we approach food like this, what is the meaning? Let me use the apple as an example. Most apples take at least five to six months to mature. During that time, they accumulate Qi (CHEE) or energy; otherwise, they wouldn’t grow. They accumulate Qi from sun, wind, rain, cold winter energy, hot summer heat and more. They have to cooperate with what is in their environment—including insects and birds. Energetically, this information of an apple’s cooperation with nature is encoded within the physical object we eat. It depends on how we want to think about the

apple—physically or energetically. Opening our consciousness and understanding of the apple’s interrelationships is the highest level of understanding. In today’s culture, we believe what we eat is the most important thing, but that’s not the whole truth. Everything in the body is interrelated. If your stomach, liver and kidney don’t cooperate well, your digestive system won’t have enough energy to process what you eat. Consequently, you won’t get the nutrition you need. Everybody is under stress; it’s the No.1 emotion that disrupts liver function. If your Liver functions poorly, your digestive system will be impaired. Everyone thinks they can take vitamins and supplements to stay healthy, but if the body can’t digest them, the result is expensive urine! BF: What can people do to change their thinking? NL:. Each of us is a child of the Universe—born with the wisdom to heal ourselves. Deep down we have to believe this is possible and to not immediately rely on outside factors. Most people search the internet for answers. I tell my patients to search their “innernet” (to look inside themselves) for real answers. Maintaining emotional balance is more effective than controlling eating patterns. Stress is a powerful vibration that affects liver function and prevents it from performing properly, including working with other organs to absorb nutrients. Today, 90% of illness and disease are

associated with liver dysfunction. While physical stress might come from actions performed on the job; emotional stress comes from having a demanding boss, constant deadlines, conflict with co-workers and more. Yes, exercise helps relieve stress, but it takes energy. The best way to alleviate stress is through deep breathing. Simply close your eyes so you can go within, in terms of conserving Qi or energy, it can be better than going to the gym. Taking a hot bath is also effective—a hot bath with classical music and a glass of champagne can lower stress well. —In our culture, Master Lu says the liver is the most important organ to keep in balance. And, excessive stress is the number one factor affecting whether it functions properly or disrupts the healthy functioning of other organs, especially those involved with digestion. —Food is a powerful healing ally and has been prescribed by TCM practitioners for millennia for many conditions.
